The Islamic Center of Orlando is growing, and it needs more space, starting with the center’s mosque. GABBY BAQUERO STAFF WRITER ORANGE The growth of the Islamic Center of Orlando has sparked a need to expand its facilities. Leaders for the center, located at 11543 Ruby Lake Road, currently are in the process for Orange County approval of a planned expansion. The organization plans to expand its mosque and build a large courtyard, community center, sports complex and charity clinic. Imam Tariq Rasheed, the center’s worship leader, said the construction project is needed because the community has grown, and the mosque has become too small to hold everyone seeking a place to perform their daily religious prayers. “On Fridays, we have about 1,000 people who come to pray,” Rasheed said. “Right now, the issue is that on Fridays, we have roughly 300 people praying under the sun

t costs her thousands of dollars each year to go on medical missions trips to a small, poor village in Haiti, but Windermere resident Lynn Johns has a good reason for doing so: It forever changes people’s perspectives. “Up until I was 50, I’d never

been on a medical missions trip,” she said. “If you show up in Haiti with a Band-Aid, they think you’re a doctor. There’s one doctor for every 35,000 people in Haiti. The women’s space upstairs also gets full, so the sisters who come late have to find a space for themselves. So, it’s become a real headache that’s been an issue for many years now.” The center plans to expand the mosque to a total of 23,000 feet, which would include separate entrances, praying areas, ritual washing areas, bathrooms for men and women, visitor gallery and conference room. Other facilities, including a 2,500 square-foot charity clinic, will help people of all faiths without health insurance receive needed medical attention and free food from a pantry. Their current food pantry operates out of a small portable

space, and Rasheed hopes the expansion will allow for a permanent space that gives them the ability to grow their pantry. The center also hosts interfaith activities, such as lunches, breakfasts and barbecues that welcome Jews, Buddhists, atheists and more to eat with Muslims and exchange views. The center currently hosts it in the school cafeteria, but the expansion project would allow it to host such activities in a new 22,000-square-foot community center. Also in the works is an 18,000-square-foot sports complex, complete with a gym, indoor basketball court and jogging track. The gym will be built in a way that permits Muslim women to work out in privacy. “Our community is very active and they like to go to gyms, but when they go to gyms

they face a serious issue and that is when the time for prayer comes — we pray five times a day — they need to find a place where they can pray,” Rasheed said. “The other issue is that with women, our Muslim sisters, they like to work out as well ... and in most gyms, there is no separate place for women and men, which gives them no privacy. So in this gym, there will be separate hours for men and women.” The center has been given approval by Orange County to clear the land, but full-fledged construction has not yet begun. Brazilian cousins create all-natural fruit bars Through their business, So Fruitty, Windermere cousins Cesar and Alex Frota offer what they call frozen “fruit on a stick.” BRITTANY GAINES STAFF WRITER

There is no concentrated fruit juice in the So Fruitty industrial kitchen. Instead, crates of fresh bananas, strawberries, mangos, coconuts and kiwis are shipped in each morning. The fruits are then peeled, sliced and blended with a splash of spring water and a dash of pure cane sugar before getting poured into popsicle molds. It’s a production process that makes owners Cesar and Alex Frota — Windermere residents — shine with pride. “It’s healthy but with good taste; it’s like eating the fruit (on a stick),” Cesar said. “That’s the big idea behind the product.” And these frozen fruit bars, called So Fruitty, are popping up in shops and grocery stores across Central Florida. The idea for So Fruitty began several years ago, when Cesar and his cousin, Alex, began brainstorming business ideas to come up with a healthy, post-workout snack.

“We run marathons and halfmarathons, so we wanted something truly healthy and natural,” Cesar said. That’s when the cousins tapped into their Brazilian roots. Having both grown up in Brazil, the two were surrounded by fresh fruits as a primary source of nutrition. “There is a raw juice culture in Brazil, but here, it’s more convenient to buy juices in the store,” Cesar said. “Now, there’s a trend of going back to more raw.” But it wasn’t until they met Renzy “Junior” Bernardina that the cousins’ idea of frozen fruit bars began to solidify. Under Bernardina’s culinary skills, they began concocting So Fruitty bars. “One of the key things is that we use fresh fruits,” Cesar said. “The texture, the taste — it’s unbelievable.” After three years of building their factory and business, they began production in February. Today, they’re up to 13 different flavors with several more set to be released this month. “We try to keep the characteris-

tics of each fruit,” Cesar said about the bars. “We respect the fruit.” The Coconut Joy bar is infused with pieces of coconut meat from whole, fresh coconuts. Mango Madness has the stringy consistency that is familiar to mangos, and the Strawberry Bliss is jampacked with vitamin C. But the bar that seems to be growing in popularity is Yummy Avocado. “Last year, avocado-flavored ice cream was a huge trend,” said CeCe Wilck, senior account executive with So Fruitty. And even through avocados are typically associated with guacamole, in Brazil, it’s a dessert, Cesar said.

It’s hard to get people to try the avocado bar, he said, but once they do, they love its savory, creamy taste. Because acquiring fresh fruit is a critical part of their business operations, setting up shop in Central Florida seemed like the best idea, Cesar said. “We use local fruits,” he said. “And in Orlando, it’s summer all year long, so we can have tropical fruits.” It’s all about producing a healthy product. “We want families to be comfortable letting their kids have one or two bars” Cesar said. “Because they know their kids aren’t having too much sugars.” Contact Brittany Gaines at bgaines@orangeobserver.com.

Using fresh fruits comes at a cost — everything must be done by hand. Each fruit must be individually peeled and cut for the blender; the mixture must be hand-poured into the molds; once frozen, they must be taken out, again, by hand. Only the last step — wrapping each popsicle in plastic — is done by a machine. “The process is a little bit more difficult and a little bit more expensive,” Cesar said. But the end result, Cesar said, is worth it. The bars are GMO free and gluten free. And nearly every bar, except the Coconut Joy bar, is under 100 calories.

The last trip consisted of a nurse practitioner, two doctors, three nurses and three volunteers on triage — including Johns, who is not in the medical field. “I am proof that anybody can go on a medical trip,” she said jokingly. “I’m just a mother and grandmother who can put on Band-Aids — that’s my qualification. In Haiti, that makes you a doctor.”

At least 300 to 400 people were waiting in line to be seen when they arrived, and over the course of five days, Johns’ group saw more than 1,200 people. The team worked for at least eight hours each day and saw many routine ailments, a few cases of cholera, many children with respiratory infections, a baby with hydrocephalus and a case of tuberculosis, among others. However, they were surprised to find that aside from some cuts and a couple of broken arms, there were not nearly as many stormrelated injuries as expected. “We set up in places that aren’t medical clinics,” she said. “They wait patiently; they’re very kind and appreciative, and we were surprised we saw very few injuries related to the storm. For them, if you give them ibuprofen, most of the time they tear up, and they don’t understand that it’s free.” Johns’ upcoming December trip is at capacity, but she will head out again in March 2017 and is collecting donations for that medical trip. They will need a large amount of basic first-aid supplies, such as Tylenol, ibuprofen, Neosporin and eye drops. The overall need for supplies, financial resources and medical personnel is huge, and Johns added that if people are willing to donate first-aid items she will collect them for the March trip, which leaves March 23.

Hurricane Matthew tore through Haiti in early October, destroying much of the progress Rebati Emmanuel and ESMI had made in the small village. In Haiti the structures are not up to hurricane code, and concrete blocks are made by hand. Tens of thousands of dollars’ worth of work was destroyed in a period of 24 hours. The only structure that remains in Emmanuel Children’s Village is a two-story home where the pastor and his wife take care of the more than 60 orphans. Johns said it is the building God told him to go to to ride out the storm. No one was physically hurt. “The heartbreak of it all is that what was completed is now devastated,” Johns said. “Matthew literally took it all away. It looks like a bomb went off; it’s terrible. When we say they have nothing, we’re not exaggerating. It was very hard for those of us who went on that trip because we thought, ‘How could they be happy? How could they be playing with rocks, running around in ripped clothes and being happy?’” But despite having nothing, the Haitians are some of the happiest

or two hours, the five men became artists. Soothing music filled the silence at SoBo Art Gallery while the men carefully swirled blue, yellow, brown and green paint onto a canvas. All five suffer from some form of Alzheimer’s disease or dementia, but the painting session required no memory recall. In fact, the class had been created especially for them. For several years, Elizabeth McKinney, board chairwoman for the Winter Garden Art Association, dreamed about creating an art class for people suffering from Alzheimer’s and dementia. Having taken care of her father for the last three years, she knew firsthand just how debilitating the mental disease could be. After discussing her idea during a Rotary Club meeting earlier this year, McKinney finally got the support necessary to turn her idea into a real class.

On Nov. 21, the Winter Garden Art Association held its first class, called Paint a Memory, at the SoBo Gallery for Alzheimer’s and dementia patients. “It was all through word of mouth,” McKinney said. “We’ll start small and see how it goes.” Several sponsors stepped up to help pay for supplies. Edith Gendron, of the Alzheimer’s and Dementia Resource Center, and Jennifer Campbell, of Age Advantage Senior Care Services, provided support for the classes. Without the support from her fellow Rotarians and the community, McKinney said she might never have gotten her idea off the ground. “They made it possible,” she said. Gendron screened each person to make sure he could handle the class, and Campbell provided one of her licensed caregivers to help the men during the class. One of the primary benefits

of the class was to provide an activity to people suffering from Alzheimer’s and dementia that required no memory work. “Being out in society reduces confusion,” Gendron said of those who suffer from the diseases. “The key to keeping Alzheimer’s and dementia (patients) content is by reducing confusion.” And because the artistic part of the brain is deep within the brain, Gendron said, it is typically the last area to feel the effects of Alzheimer’s or dementia. During the Nov. 21 class, each man was tasked with painting a pear, but each painting looked different. Some pears were larger, some were smaller, some more yellow, others more brown. But for those two hours, the men didn’t need their memories. They could simply look at the sample painting and try to imitate it — they only needed to paint. The class wasn’t just about giving the men something to do. It also provided the men’s caregivers with two hours of freedom. For McKinney, this was one of the most critical parts of creating this class. Looking back on her time as a caregiver, she recalled just how taxing it could become. “Some days, I just wanted an hour to just stare into a cup of coffee,” McKinney said.

The class provided the caregivers with a peace of mind knowing their loved one would be OK while they ran errands or treated themselves. The men who attended the first class followed the directions Joan Gueran provided, and their paintings slowly evolved into pictures of pears. “This is the stuff I love,” said Campbell, as she watched the class. “It’s a feel-good thing.” Contact Brittany Gaines at bgaines@orangeobserver.coml.

HARRY FRED ROGERS DIED NOV. 27, 2016.

Harry Fred Rogers — May 1, 1930 to Nov. 27, 2016. Down the long road you went. Peace is now yours. Born in Wetumpka, Oklahoma, on May 1, 1930, to the late Omer and Koie Rogers. The first born of 11 children, Harry grew up working on the cotton farm, and after graduation, he enlisted in the U.S. Navy. In 1953, he married Dorothy “Dottie” Garrett. Together, they had three children while traveling and serving in the Navy for 21 years during the Korean and Vietnam wars. After retiring in 1968, he was manager for the KOA Kampground in Winter Garden until

becoming a postal carrier in 1972. He retired in 1995, enabling him and Dottie to travel in their motor home. He enjoyed woodworking and garage-saling as hobbies and worked part-time delivering medicine for the Medicine Shoppe until his health started to decline.

DP hoops Love-ing it With the Dr. Phillips football team making a deep run in the FHSAA State Playoffs and the Panthers boys basketball team absent four players who are a part of that team, the standout play of junior guard Daniel Love has been a bright spot as the team continues to dress only seven players. Against Leesburg Nov. 26 at the Metro vs. Florida Challenge, Love poured in 26 points and eight rebounds in a 69-55 victory for Dr. Phillips (1-1). Including two preseason games, Love is averaging 28 points per game, with a high of 36 against Lake Mary Nov. 17.

Rodney Wells never strays far from his core message that he has been saying all season: The goal for the Panthers this season is to go 5-0 in the playoffs. District and regional championships are nice, but the program at Dr. Phillips has its sights set on the mountaintop. Still, after his team’s seasons ended in either the regional final or the regional semifinal in each of the past three years, Wells acknowledged there was some significance in his team’s 34-24 victory over previously unbeaten Vero Beach Nov. 25 in the FHSAA Class 8A, Region 2 Championship. The win advances the program to a state semifinal for the first time since 2012. “This (game) has been a hump for the last three or four years,” Wells said. “We lost three (playoff) games over the last three years by a total of five points — that’s been

Maybe it was being around his dad at the dinner table, witnessing firsthand the stress that goes with being a high-school basketball coach — or maybe it was just a player who never wanted to acknowledge that his playing career might end — but Trey Griseck never saw himself becoming a basketball coach. As a father-son, coach-player duo at Olympia High from 2009 to 2012, Mark and Trey Griseck combined for three playoff appearances and a run to the state-title game in 2009. Following that, Trey had APOPKA

a successful collegiate career at Saint Leo that ended this past spring. Opportunities presented themselves to play professionally overseas, but none included the ability for him to bring his young daughter and fiance along with him. So, faced with a dilemma on what to do next, Trey found himself coming around to a profession he had previously written off. “I never thought, when I played for him, that I would coach. the focus of these guys. We’ve been talking about doing the little things right.” The Panthers (11-2) did the little things well when it mattered. Senior quarterback Marvin Washington ran for two touchdowns and passed for another — all during a pivotal second quarter — and DP’s defense and special teams came up with big plays to preserve a 34-24 victory at Bill Spoone Stadium. “They (the Indians) were as good as advertised, and they were much bigger than I thought they were from the film,” Dr. Phillips head coach Rodney Wells said. “They’re a really good team.” Washington threw for more than 170 yards and was particularly efficient on third- and fourth-down situations for the Panthers. He helped direct the offense to touchdowns on each of its opening three drives as DP built a 20-10 halftime lead.

“The coaches told me all week to just take what the defense gives you and just read the defense,” Washington said. “I took advantage of that. The first half of the game, (the Indians) played zone, and they gave us the flats, so we took the short 5and 10-yard plays.” Awaiting the Panthers in the state semifinals is another undefeated program in Sanford’s Seminole High. The Seminoles (12-0) are back in the playoffs for the first time since 2012 and are making an appearance in the state semifinals for the first time since 2010. Averaging 38.4 points per game, including 41 points in a regional championship victory against Winter Park last week, the Seminole offense will do what it can to challenge Dr. Phillips’ defense. Wells, though, has emphasized winning games on Friday with work put in on Monday through Thursday throughout this playoff run and is optimistic

his team will not be defeated if it executes its game plan correctly. Griseck eager to learn craft BIG WINS FOR TITANS, PANTHERS AT METRO VS. FLORIDA The Metro Conference teams displayed an impressive turnaround last weekend at the Metro vs. Florida Challenge. After two years of being defeated handedly by their guests from throughout Florida, Metro teams won 17 of the event’s 22 games. Included in those winning efforts were significant victories for Olympia and Dr. Phillips. The Titans made one appearance in the event, defeating Lake Brantley 71-62 in the final game of the event’s first day Nov. 23. Dr. Phillips played twice in the event, on Nov. 23 and again on the event’s final day, Nov. 25. After falling to Osceola 69-49 on the first day, the Panthers bounced back to pick up an impressive victory 69-55 against Leesburg. In both games, Dr. Phillips dressed just seven players, because a handful of players are unavailable until the school’s football team concludes its playoff run. to not wanting to be away from the game he is so passionate about. “I just knew I couldn’t love anything else — I want to try and change kids’ lives,” Trey said. Since he left Olympia, Mark Griseck, who resides in Winter Garden, has joined the staff of longtime friend Scott Wiliams at Apopka High. When the two old friends caught wind of Trey’s newfound interest in joining the family business, they were elated — even if, at first, Mark tried to talk his son out of it. “(I said) ‘Don’t be a teacher and a coach — we don’t make any money, and it’s a lot of hours,’” Mark said. “Once you’re playing career comes to an end and you realize it’s over, you want to do something involved in it.” At Apopka, Trey has assumed several responsibilities as an assistant that include planning the team’s morning workouts, scouting opponents and working with the roster’s front court. Williams, who has coached state championship teams and is eager to revitalize the program at Apopka, said he has been impressed with his new assistant’s ability to connect with players. “He has a remarkable ability to connect with our young men, but yet draw a line — and that takes a lot of maturity,” Williams said. “He has an incredible servant’s heart.” The Blue Darters are off to a 3-0 start this fall, including an impressive win in their opener against Boone. It was in that game that

it hit the former star on the court that his new role was off of it — if only by a few inches. “After the first game ... it kind of really hit me that I’m on the other side of it — I’m on the other side of playing,” Trey said. Trey has learned plenty from his father and his college coaches over the years, but Mark thinks that his son starting his coaching career for Williams will also present an opportunity to learn from one of Central Florida’s top coaches. “The one thing Scott does so well is the emphasis on developing young men — we’re not in this to develop basketball players,” Mark said. “That’s the biggest lesson he’s going to learn from Coach Williams.” How long it might be before an opportunity comes along for Trey to become a head coach and build a program of his own is anyone’s guess. And when that opportunity comes along, Mark knows there will be another learning curve. “The basketball part and the practice part is the easy stuff,” Mark said. “The stuff you got to learn is how to do a purchase order and how to fundraise — that’s the stuff, when you’re a head coach, you’re like, ‘Whoa, this is a little different.’” Either way, the junior Griseck thinks he has found his calling in roaming the sidelines — just like the senior. “I absolutely think I’m going to do it for a very long time,” Trey said.

It’s beginning to look a lot like N

othing signals the start of the Christmas season quite like twinkling lights on trees and rooftops. And no two houses are exactly alike. From old-fashioned bulbs to lasers, styles vary across each neighborhood. But some homes are simply over-the-top, dripping in lights of all shapes, sizes and colors. The trick behind these jawdropping displays is a team of professional light installers — such as Light House Lighting Specialists — that spends hours — or even days — wrapping the home in Christmas cheer. Based in Dr. Phillips, Light House has been stringing up Christmas lights since 2008 and can use up to 100,000 lights on a single project. “We start talking to our clients in July, because you have to get all the elves on board to make sure that the logistics are in place,” said Light House cofounder Jay Cone. And with eight years of decorating experience, plus Cone’s extensive experience producing Disney’s Osborne Family Spectacle of Dancing

This year, it’s all about putting on a show, Cone said. “The big thing is self-programmable Christmas lights,” he said. “Everybody is going crazy over that stuff. And animated shows are starting to get really popular.” These days, instead of hunting for the most ornate Christmas light display in town, that hunt may include a search for lights that blink in time to Christmas music. And of course, LED lights are still the most popular. “Everybody wants to use LEDs,” Cone said. “We use primarily the five-millimeter, conical concave LED. It lets out a single light source, so it’s the brightest.” But everyone’s love of LEDs doesn’t mean incandescent bulbs are obselete. In fact, they’ve started to make a comeback, Cone said. “The big, old-style bulbs are coming back,” he said. “People want the warmth of the old bulb, so they don’t mind paying for it in

their electric bill.” But there’s one new trend of which Cone isn’t a huge fan — lasers. “I’m not a proponent of lasers, because it’s a cheap way (to decorate),” he said. “But if you shoot it in a tree, it looks really good. And now, they have motion and projectors, so that kind of thing is more of a cool, cheap theatrical trick.” On an average house, Cone and his crew string between 3,000 and 4,000 lights. For a homeowners association, they could string more than 100,000 lights, depending on the size of the project. “We have a high-end home in Celebration that we’ve won best in town and best in state for the last couple (of) years,” Cone said. “That’s an over-the-top house. If there’s a blank spot on the wall, we’re putting a light on it somehow.” When hanging Christmas lights, safety always comes first — especially if you’re stringing your own lights at home. “Know your ladder, know your footing, know your ability,” Cone said. “If you’re shaking going up the ladder, you shouldn’t be going up the ladder.” Cone’s second tip: Know the location of your power source. And of course, always expect at least one strand to stop working in the middle of hanging up the lights, Cone said. But for Cone, the installation process is all about the magic of Christmas lights. “There should be no stress when it comes to installation,” he said. “ You should enjoy doing it; it’s for Christmas.”
