ensemble. About 20 musicians will be pulling double- or even triple-duty at the event, which Redding calls “a moving, aweinspiring, passionate performance.” “The Garden Community Choir is a Winter Gardenbased chorus of singers who are passionate about making exciting, beautiful music together,” says Matt Heim, publicity director of the Garden Community Choir. The overlap extends to the community choir’s assistant director, Don Sowers, who directs the chamber choir. As for Sounds Like Chicken, it is a band of males that sings with the choirs each Christmas and spring, Redding says. “It is a fabulous group that is a lot of fun,” he says. “They sing a variety of serious and light music; they sing all genres.” Redding has extended the repertoire of his choir, as well, in part because of its broad diversity in ages. “The wonderful part about this ensemble is that we cover a wide variety of ages, 18 (and up),” Redding says. “It’s a beautiful vision of people in our

“The process is very important to me, because it’s more than just music,” Redding says. “It’s about relationships, getting people to think past their potential and affecting lives in the process, so that once we get to the concert, the audience is moved because the choir sings with total transparency of heart.” Tickets are for sale online at a cost of $15, with $12

They also get a little gift from Santa.” The Sing-along consists of a combination of members from the different churches in Oakland forming a choir. The members of the choir assist in leading the town’s residents, guests, families and friends in singing Christmas carols with musician John Starkovich, who volunteers his time every year to lead the songs, Gibbons said. The refreshments are for everyone’s enjoyment, with the ability to listen to music while laughing, talking, mingling and allowing the children to play, she said. “We will also have food trucks if the folks there want to get a little something to eat,” she said.

Christmas

ORIGINAL

‘Christmas by Committee: A Musical’ was written specifically for the theater’s holiday season and is influenced by Winter Garden’s history.

Competing with a crowded calendar of holiday productions throughout the arts scene in Central Florida, the Garden Theatre in Winter Garden is confident it can provide theatergoers something they have never seen before. They know this because the theater’s main December production,“Christmas by Committee: A Musical,” is an original work that was written just for the Garden Theatre for this occasion by local playwright Rob Winn Anderson. “We have, in every single one of our seasons since opening, made it a priority to feature either an original production or a world premiere or a regional premiere,” Garden Theatre Executive Director Alauna Friskics says.“So we were talking around the table and … I think it kind of just came up in the meeting, ‘Why don’t we see if

14

Rob would write us something. … Let’s just see if we can commission a piece of work.’” For Anderson, a veteran director, performer and playwright in the Central Florida theater scene who has worked with the theater previously on another original piece in the 2013-2014 season, last year’s “Alice Lost in Wonderland,” the opportunity to again start from scratch was a reminder of why he enjoys partnering with the Winter Garden-based group. “It’s very brave of a theater to take a chance on an original work that they know nothing about,” Anderson says.“It’s great.” Setting out to craft the script and music from scratch, Anderson had free reign so far as the project was concerned, with just one stipulation from the theater staff. “When they asked me to do

it, they really wanted me to be influenced by Winter Garden,” Anderson says. And so, the veteran playwright set out about that task and did his homework. “He went and spoke to several Winter Garden residents and historians and gathered stories from them,” Friskics says.“That’s where he started. … (He) really started to gather these rich stories of Winter Garden and has incorporated some of them into the show.” One of the unique elements of creating a production from scratch is how it can evolve in real time. What was originally going to be a piece focused on its heartwarming elements has, according to both Friskics and Anderson, morphed into more of a Christmas comedy. The characters are outlandish, as are some of the scenarios they encounter — although, Anderson notes that some of those are rooted in real things that happened in Winter Garden. Anderson has put together a diverse cast for this production, with performers ranging from high-school age to about 60 years old. Snagging the leading role of Amy, the young newcomer to the fictional town of Citrus Village who is trying to get the town’s annual Christmas show back on track, is Shelby Griswold — a teenager. “Vocally, she is just amazing,”

Anderson says of his leading lady.“She’s got great comic-timing. … She just kept bringing the right combination of humor and warmth and vocal ability (in the audition process).” Rounding out the cast is Reca Oakley as Mary Bee; Beryl Rochatka as Faye Webber; BambiEllen Fadoul as Patty Andrews; CK Anderson as Alex “Slam” Massey; David Chernault as Gus Campbell and Kevin Zepf as Mack Rayburn. Rochatka (“Music Man,” “Wizard of Oz”) and CK Anderson (“The Diviners,” “Biloxi Blues,”“Wizard of Oz,” “Hairspray”) are the sole performers who have previously performed on the Garden Theatre stage. The end product theatergoers will experience is an original, unique Christmas tale that is influenced and shaped by the very area they live in. “Rob has done a great job of really learning who we are as a community and connecting to that,” Friskics says. — Steven Ryzewski

Christmas Treats West Orange Style! ITCHING FOR SOME ITALIAN | TIRAMISU Stina D’Uva, president and CEO of the West Orange Chamber of Commerce, says this recipe came straight from Grottammare, Italy, via her Aunt Graziella. INGREDIENTS: 2 8-ounce packages marscapone cheese 1 cup sugar 4 eggs 1/3 cup or so, Kahlua 2 to 3 packages Savoiardi

cookies, available at Publix and Wal-Mart 8 ounces espresso 8 ounces water 2 to 3 tablespoons sugar Powdered cocoa

METHOD: • Prepare at least 8 ounces of espresso and combine in a bowl with the water and add sugar to taste. Let sit. • Separate egg yolks and whites and place in separate bowls. Whip up egg whites until they peak. • Add 1 cup sugar to the egg yolks, whip together. Then add marscapone and blend together. Add Kahlua and blend together. You may add more to taste, but don’t let it get too runny. Fold in egg whites. • For the final step, have ready a glass baking dish or other decorative dish that is at least 13-by-9. Dip Savoiardi cookie into watereddown espresso. Place side by side in baking dish until the bottom of the dish is covered. Take half the marscapone batter and spread over the cookies. Repeat this step so that you have two layers. • Cover and refrigerate for at least four hours or overnight. Just before serving, sprinkle entire top with powdered cocoa.

SEASON’S SPICE | NUTMEG LOGS Allison Olszewski, Winter Garden resident and wife of City Commissioner Bobby Olszewski, says this recipe creates a great treat at Christmas for sweet-tooth owners of all ages. INGREDIENTS: LOGS: 1 cup butter 2 teaspoon vanilla 2 teaspoon rum flavor 3/4 cup sugar 1 egg 3 cup flour 1 teaspoon nutmeg

FROSTING: 3 tablespoons butter 1/2 teaspoon vanilla 1 teaspoon rum flavor 2 1/2 cup powdered sugar 2-3 teaspoon cream or milk 1/4 teaspoon nutmeg METHOD: • For the logs, blend all ingredients and shape into small logs before baking. • Bake at 350 degrees for 12 to 15 minutes. Add frosting and decorate.

The holiday season is upon us, and that means, among other things, there will be plenty of entertaining to do as friends and family find their way to your home. And, if you’re going to have people over during the holidays, you’d better have some darn good holiday desserts that can knock their socks off!

Luckily, we’ve got you covered with some awesome recipes from your West Orange County neighbors! Enjoy these recipes and, if you try one and like it, let us know — email Sports Editor Steven Ryzewski at sryzewski@wotimes. com. — Steven Ryzewski

MELT YOUR HEART | MELTING MOMENT COOKIES Page Weibley, a chef from Oakland, says this recipe is a must during the holiday season, and it is easy enough that anyone can do it. INGREDIENTS: COOKIES: 1/2 cup unbleached all-purpose flour 1/2 cup cake flour 3/4 cup cornstarch 1/2 teaspoon baking powder 1/4 teaspoon salt 3/4 cup (6 ounces) pure Irish butter at room temperature 3/4 cup powdered sugar

1 teaspoon vanilla extract FILLING: 1/4 cup (2 ounces) unsalted butter at room temperature 3/4 cup powdered sugar 1 teaspoon vanilla extract 1/2 ounce dark bittersweet chocolate, melted (optional)

METHOD: COOKIES: • Position a rack in the middle of the oven. Heat oven to 300 degrees. Line two baking sheets with parchment paper. • In a medium bowl, sift both flours, cornstarch, baking powder and salt and set aside. In a large bowl and using an electric mixer on medium speed, beat the butter, powdered sugar and vanilla until smooth and lightened slightly in color, 1 minute. Stop the mixer and scrape the sides of the bowl as needed during the mixing. Mix in the flour mixture just until the flour is incorporated and a smooth dough forms. • For each cookie, roll a level tablespoon of dough between the palms of your hands into a smooth ball. Place the cookies on the prepared baking sheets, spacing them 2 inches apart. Use a fork to gently flatten the cookies to 1 1/4-inch disks and to make an impression of the fork tines in the top of each.

• Bake the cookies one sheet at a time until the tops feel firm but do not darken, about 30 minutes. The cookie bottoms will be lightly browned. Cool the cookies on the baking sheets for 10 minutes. Use a wide metal spatula to transfer the cookies to a wire rack to cool completely. FROSTING: • In a medium bowl, use a large spoon to stir the butter, powdered sugar and vanilla until smooth. Stir in melted chocolate, if desired. • Turn half of the cooled cookies bottom side up. Use a thin metal spatula to spread a rounded teaspoon of filling evenly over the flat bottom of each. Gently press the flat bottom of the remaining cookies on the filling. Serve at room temperature. • Cookies can be stored in a tightly covered container at room temperature for up to 5 days.

SWEET TOOTH | HOLIDAY SUGAR COOKIES Mercedes Tamayo-Blackwell is the owner of The Cake Studio, cakestudioorlando.com, and an adjunct professor in the Pastry Arts program at Valencia College. These sugar cookies keep everyone happy for Mercedes come holiday time. INGREDIENTS: 3 cups all-purpose flour 3/4 teaspoon baking powder 1/4 teaspoon salt 1 cup unsalted butter, softened 1 cup sugar 1 egg, beaten

1 tablespoon milk 1 teaspoon vanilla extract (almond or lemon also can be used) Powdered sugar, for rolling out dough

METHOD:

RIVER RUN | BOURBON PIE The man behind the chain of 4 Rivers restaurants in Central Florida, including the location in Winter Garden on West Colonial Drive, also has a bit of a sweet tooth. Chef John Rivers, who features this recipe in his cookbook, The Southern Cowboy, says this go-to dessert is transcendent among everyone and the addition of a little bourbon creates “a smooth undertone of flavor that elevates the classic to a whole new level.” INGREDIENTS: CRUST: 6 tablespoons salted butter, room temperature 4 ounces cream cheese, room temperature 1 cup all-purpose flour FILLING: 3⁄4 cup light brown sugar 3⁄4 cup dark brown sugar 2 tablespoons salted butter, melted

4 eggs 1 cup light corn syrup 2 cups toasted pecan halves 2 to 4 tablespoons bourbon (depending on your preference for the strength of the bourbon flavor) WHIPPED CREAM: 1 cup sugar 1 teaspoon vanilla extract 2 cups heavy whipping cream

• Sift together flour, baking powder and salt. Set aside. • Place butter and sugar in large bowl of electric stand mixer and beat until light in color. Add egg, milk and extract and beat to combine. Put mixer on low speed, gradually add flour and beat until mixture pulls away from the side of the bowl. Divide the dough in half, wrap in waxed paper, and refrigerate for 2 hours. • Preheat oven to 375 degrees. Sprinkle surface where you will roll out dough with powdered sugar. Remove 1 wrapped pack of dough from refrigerator at a time, sprinkle rolling pin with powdered sugar, and roll out dough to 1/4-inch thick. Move the dough around and check underneath frequently to make sure it is not sticking. If the dough has warmed during rolling, place cold cookie sheet on top for 10 minutes to chill. • Cut into desired shape, place at least 1-inch apart on a greased baking sheet, parchment or silicone baking mat, and bake for 7 to 9 minutes or until cookies are just beginning to turn brown around the edges, rotating cookie sheet halfway through baking time. • Let sit on baking sheet for 2 minutes after removal from oven and then move to complete cooling on a wire rack. Serve as is or ice and decorate as desired. Store in an airtight container for up to 1 week.

METHOD: CRUST: • Process butter, cream cheese and flour in a food processor until dough just begins to form a ball. Flatten dough into a disk and wrap in plastic wrap. Refrigerate for 30 minutes or overnight. • Rub flour over a rolling pin to prevent sticking. Roll cold dough gently from center to the edge, maintaining a circle shape, rotating and flouring dough to make sure it doesn’t stick. • Fold dough in half, place in a 9-inch pie pan and unfold to fit pan. FILLING: • Preheat oven to 350 degrees. Mix together all ingredients in a large bowl. Pour into crust. Bake for 35 minutes (center of filling should be slightly soft). Transfer to rack and let cool 3 to 4 hours.
