Nothing says summer like a crisp, cool salad on a hot day. Truth is, not only is salad wonderful to EAT on a hot day, it’s a joy to make as well because there is very little to no cooking involved at all. When done correctly (balancing the right greens with the right veggies and most importantly, the right dressing) salads can put a smile on your face while also filling you up as much as any entrée.
WHAT DEFINES A GREEN SALAD
WHAT EXACTLY IS A BOUND SALAD
Green salads are made from green vegetable leaves like many varieties of lettuce and vegetable greens like mustard or arugula (rocket.) A green salad is mainly lettuce and other vegetables. As soon as it contains protein, it becomes a dinner salad. A subcategory of the Green Salad is a Wedge Salad, made with a wedge of firm lettuce and a heavier, creamier dressing.
Bound Salads are those that are held together using a sauce or dressing like mayonnaise. Good examples of bound salads are potato salad, tuna or chicken salad and traditional ambrosia salad, held together by whipped cream.

LET'S START WITH GREEN SALADS
Success with green salad means matching the right base, or greens to the right dressing.Tender greens like butter lettuce, mesclun, or other leaf lettuces need to be matched with a salad dressing that won’t weigh them down. Light leaves mean a light dressing like a vinaigrette that is oil and vinegar based. Heavier greens like romaine lettuce, iceberg lettuce or kale can use either a vinaigrette OR can hold up to a heartier, heavier dressing, usually cream based, like blue cheese or Caesar dressing.
BASIC VINAIGRETTE RECIPE Once you start making home-made vinaigrette, I promise, you won’t go back! Freshly made vinaigrettes can be stored in an airtight container and then kept in the fridge for up to 2 weeks. They are a fraction of the price of those found in the store and 10x the flavor. So mix and match ingredients on the chart Stacey created for you and make up a few batches to always have on hand. A traditional vinaigrette calls for 1 tablespoon vinegar for every 3 tablespoons of oil. Personally, we like more vinegar and less oil and use a 1 to 2 ratio, but that’s up to you.
WHAT YOU WILL NEED Oil for your base Vinegar of choice Mustard for some creaminess, complexity and thickness A little sweetness that balances the acidity of vinegar (if desired) Seasonings for Flavor Dash of Desperation to balance it all out

CREAMY DRESSINGS THE BASICS Creamy dressings get their smooth, hearty, creaminess from yogurt, sour cream or mayonnaise. You can choose any style you like based on your preferences for fat, flavor and texture (regular yogurt will be a little less hearty and thick than Greek Style yogurt for example.) As with a vinaigrette, the starter recipe is very basic and easy and can be whipped up into a variety of flavors from mild to wild. These are incredibly delicious, will last in the fridge for up to two weeks and are fantastic not only as dressings for green salads, but for dinner style salads as well.
WHAT YOU WILL NEED Yogurt, Sour Cream or Mayonnaise for your base Vinegar of choice Mustard for some flavor complexity and to help bind the dressing together Seasoning for Flavor Dash of Desperation to balance it all out

BOUND SALADS WHAT YOU WILL NEED: Everyone LOVES a good potato salad, macaroni salad or coleslaw! They’re terrific as side dishes and quite popular, especially during the warmer weather. In my house, they’re not just popular, they’re expected! Each week, I’ll make a different family favorite and keep it in the fridge for all to enjoy. Here’s a few of my favorites:
4 C kohlrabi, sliced into matchsticks 1/4 C cilantro, chopped 1 tsp Stacey Hawkins Phoenix Sunrise Seasoning (or your favorite no-salt taco style seasoning) 1 tsp Stacey Hawkins Kickin’ Cajun Seasoning* (or garlic, salt, black pepper, cumin, cayenne pepper and onion) zest of 1 lime
CRISPY KOHLRABI SLAW
zest of 1 orange
In this crispy kohlrabi slaw, you can substitute ANY of the Stacey Hawkins seasonings and oils to mix and match a favorite that’s just right for you.Try Luscious Lemon Oil and Simply Brilliant or Citrus Dill. Another great variety is Roasted Garlic Oil and Tuscan Fantasy or Rockin' Ranch!
juice of 1 lime 4 tsp Stacey Hawkins Valencia Orange Oil (or your favorite oil and fresh squeezed orange juice) *If you want to keep the flavor very mild, use two times the Phoenix Sunrise seasoning and leave out the Kickin’ Cajun.
DIRECTIONS 1. Place all ingredients, except the kohlrabi & cilantro into a large salad bowl. Whisk to combine. 2. Add the kohlrabi to the bowl, sprinkle with cilantro. 3. Using two large spoons, pull the dressing up through the salad by placing the spoons at the bottom of the bowl and scooping the kohlrabi mixture upward. Keep tossing until fully coated. 4. Set aside for 15 minutes. Can make up to a day ahead of time and serve chilled.

BOUND SALADS THE BEST POTATO SALAD EVER WHAT YOU WILL NEED 5 pounds Yukon Gold potatoes (ok to use russet if you can’t find them) 2 C Mayonnaise any variety (or Greek Yogurt) (or 1 C of each!) 1 T Stacey Hawkins Simply Brilliant Seasoning 1 T Stacey Hawkins Citrus Dill Seasoning 1 T Stacey Hawkins Rockin' Ranch Seasoning 3 T Apple Cider Vinegar (use 4 if using Greek Yogurt) 2 T Dijon Mustard 4-5 hardboiled eggs, peeled and chopped (optional if you must!) ½ C sweet red onion, diced 3 celery stalks, diced Salt and Pepper to taste (or even better, Dash of Desperation!)
DIRECTIONS 1. Cut the potatoes into quarters and place them in a large stockpot. Fill the pot with cold water until it is 1 inch over the top of the potatoes. Set the pot over high heat and bring to a boil. Cook the potatoes for 13-15 minutes, until fork tender.
The best potatoes make the best potato salad. Believe it or not, it really DOES make a difference in the overall taste and texture of your salad. Stick with the varieties that have the least amount of starch like red, new or fingerling potatoes which are the 3 most common. The next best are standard white or Yukon Gold. Stay away from russet (baking)potatoes as they are high in starch and crumble after cooking.
2. Meanwhile, in a medium bowl mix the mayonnaise, seasonings, apple cider vinegar and mustard. Stir until smooth. Then chop the eggs, celery and onions. 3. Once the potatoes are very tender, drain off all the water. Remove the loose peels and chop the potatoes into 1/2-inch chunks. It's okay if they are soft and crumbly. Place the potatoes in a large bowl. Gently pour the dressing on top and mix in the until it coats the potatoes well. Then stir in the eggs, celery and onions. Taste, then salt and pepper as needed. 4. Cover the potato salad and refrigerate for at least 4 hours. If you have time to make it ahead, it tastes even better on day two! Keep refrigerated in an airtight container for up to one week.

Chicken Salad, Tuna Salad, Ham Salad and Whitefish Salad are all brought to a completely different level of flavor when you add any of our seasonings to the mix! The traditional salads are made with mayo, and perhaps chopped celery and onion and in some cases pickle relish, depending on personal preference. We suggest adding 1-2 teaspoons of ANY of the Stacey Hawkins seasonings in your Summer Salad Kit to one cup of meat. Just sprinkle over the mixture as you’re making the salad and let it sit for an hour or so to let all the flavors meld together. We promise, you’ll LOVE it!

Sometimes you don't want to cook, or it's too hot to cook, or you just don't have it in you. I get it! And it's totally normal, and ok- don't beat yourself up. This can also be a time, however, when it's dangerous. Why? Because if you're hungry and you don't want to cook, you'll be tempted to eat things that either aren't on your program or that just aren't good for you. What's the solution? Have something already ready to go! That's where my Summer Harvest Chicken Salad Lean and Green Recipe comes in. You can throw this together in just a matter of minutes, often with ingredients you already have in the pantry and fridge. You could also plan ahead and just have a batch of this in the fridge for when you need it!
WHAT YOU WILL NEED 24 ounces (1 1/2 pounds) boneless, skinless chicken breast, cooked and shredded* 2 C raw veggies of your choice, chopped medium. I love celery, cucumbers, raw zucchini or yellow squash cubes, peppers and even tomatoes. Go for crunch and color!
4 T Reduced Fat Mayonnaise with Olive Oil *OR* 8 T Sour Cream and 1 teaspoon apple cider vinegar if you like a more "wet" style salad. 1-2 T Stacey Hawkins Citrus Dill Blend.
*You can use pre-cooked grilled chicken from a meal earlier in the week, store-bought rotisserie style chicken or even plain canned chicken in this recipe.
DIRECTIONS 1. Chop the veggies. 2. Add veggies, chicken, mayo and seasoning to a large bowl. 3. Using 2 forks, toss to combine thoroughly. 4. Season with Dash of Desperation seasoning or salt and pepper to taste. 5. Let sit for 20 minutes or up to overnight to allow flavors to develop.

After traveling through Italy, I fell in LOVE with fresh, simple food combinations that created a flavor explosion. Here, dried Bresaola makes for an amazing Lean and Green Recipe you’ll absolutely love. Hardly any work, this will become a favorite when you don’t want to cook or especially for impressing at a dinner party or brunch!
WHAT YOU WILL NEED: 4 C Romaine lettuce cut into bite-sized pieces 1 C cherry tomatoes, halved 2 9-oz. package Bresaola or Prosciutto Pinch Stacey Hawkins Dash of Desperation Seasoning FOR SALAD DRESSING: 4 tsp Stacey Hawkins Luscious Lemon Oil 4 tsp Stacey Hawkins Balsamic Mosto Cotto 3T white wine vinegar ½tsp dijon mustard

OTHER SALADS WE LOVE CUCUMBER SALAD WITH LEMON & DILL (TZATZIKI SALAD)
One of the greatest things about my friend Cornelius is that being 100% Greek, his influence (and taste) keeps finding its way into my food. Knowing how we all LOVE variety when it comes to our Lean and Green meals, I've gladly broadened my horizons over the last two years in the hopes of creating new recipes, ingredients and of course, fun. And who is more fun than the Greeks?
WHAT YOU WILL NEED 4 C fresh cucumbers, chopped or spiraled
1/2 C plain, nonfat or lowfat Greek Yogurt
1/2 Tablespoons Stacey Hawkins Simply Brilliant Seasoning
1 Tablespoons Stacey Hawkins Citrus Dill Seasoning
DIRECTIONS 1. Add the yogurt and spices to a medium sized bowl and using a spatula, combine well. 2. Prepare the cucumbers. If spiralizing, squeeze the excess water out of the cucumbers before placing in the bowl with the yogurt mixture. 3. Using tongs, gently toss the cukes and the yogurt, coating the cucumbers in the dressing. 4. Let rest for 15 minutes (up to overnight) before serving to let flavors develop. 5. Serve chilled.

OTHER SALADS WE LOVE SUMMER SALAD WITH POMEGRANATES & LEMON BALSAMIC VINAIGRETTE
The tangy, heart-healthy pomegranate is simply sprinkled over the top of the salad after everything is gently tossed in a ridiculously luscious lemon balsamic vinaigrette. Again, so easy to make!
WHAT YOU WILL NEED 4 tsp Stacey Hawkins Balsamic Mosto Cotto 4 tsp Stacey Hawkins Luscious Lemon Oil Pinch Stacey Hawkins Dash of Desperation Seasoning 1 tsp dijon mustard (read label- no sugar added) 6 C baby greens (here we used spinach) 4 T pomegranate seeds Grilled protein of your choice (we used chicken)
DIRECTIONS 1. Place first 4 ingredients in the bottom of a large bowl (big enough to hold the greens) and whisk together to make a smooth vinaigrette. 2. Add the greens and using salad tongs, "pull" the dressing up through the salad to coat. 3. Divide into 4 smaller bowls, sprinkle each with 1 T of pomegranate seeds , top with your protein of choice and enjoy!

Perfect for summer sides, for bbq’s and picnics and will travel just about anywhere, this recipe is satisfyingly crisp, crunchy and filling all at the same time. Oh, and 100% guilt free, no matter what program you are on!
WHAT YOU WILL NEED 4 Cups cauliflower florets 1 T (one capful) Stacey Hawkins Tuscan Fantasy Seasoning 3-4 T Lemon Oil 1/4 C apple cider vinegar
DIRECTIONS 1. Add all ingredients to a mixing bowl and toss to combine. 2. Let rest for 30 minutes, up to overnight to allow flavors to combine. 3. Store in the refrigerator in a covered bowl for up to one week.

This recipe is not only SUPER low in calories and has virtually NO carbs, but it's full of fresh ingredients put together in a new way and topped with thick, rich and oh-soyummy Balsamic Mosto Cotto.
WHAT YOU WILL NEED 8 C mixed lettuce (arugula, mesclun, butter, etc.) into 1" pieces 4 tsp Stacey Hawkins Roasted Garlic Oil 2 C portobello mushroom pieces 24 ounces (1 1/2 pounds) raw shrimp, peeled, deveined and tails removed (ok to use frozen) 1-2 T Tuscan Fantasy Seasoning or Garlic Gusto Seasoning or Mediterranean Seasoning 4 T Stacey Hawkins Balsamic Mosto Cotto
DIRECTIONS 1. Shred lettuce and divide equally among 4 plates/bowls. 2. Add oil to frying pan and heat over medium high heat 3. Add the mushrooms and saute for 3-4 minutes, until liquid just starts to release. (If using frozen shrimp, add them after 1 minute of sautéing the mushrooms. If not frozen, go to next step after 4 min.) Add the shrimp and sprinkle the mixture with seasoning. Saute for an additional 3-4 minutes until shrimp is completely cooked. 4. Set the shrimp aside to cool for a few minutes. (If you put super hot shrimp on top of the lettuce, it will cook the lettuce. Yuck.) 5. Divide the shrimp equally over the salad and drizzle with balsamic.

OTHER SALADS WE LOVE TANGY KALE SALAD
During summer there is nothing better than the abundance of fresh produce pouring into the farm markets. Recently, I picked up a big old bunch of kale-crispy, bright green blue and totally organic for a whopping… $1. I brought it home and turned it into this Tangy Kale Salad and my entire family scarfed it down!
WHAT YOU WILL NEED 4 tsp Stacey Hawkins Luscious Lemon, Valencia Orange or Roasted Garlic Oil 1/4 C apple cider vinegar (the good stuff with "the mother") 4C shredded kale (to make, see below) 1/2 T Stacey Hawkins Simply Brilliant Seasoning 1/4 C dry cranberries, orange segments or apples* 1/4 C chopped nuts (cashews, pecans, etc.) 1/4 C crumbled cheese (feta, blue, etc.)*
DIRECTIONS 1. Remove the ribs from the kale and pulse in food processor until shredded. Repeat until all the kale is done. 2. Add the remaining ingredient. 3. Toss, chill and serve! Serving Size is 1/2 C and this recipe yields about 4 C salad. Salad made of kale, dressing, seasoning and nuts is 1 Green, 2 Condiments and 1 healthy fat per 1/2 C serving. *Note: DO NOT add fruit if on Optavia- ok for transition, but not on 5 &1! But don’t worry, it tastes great even without the fruit becasue of the pop of citrus from both the seasoning and the oil.

OTHER SALADS WE LOVE LEMONY ROASTED BEET SALAD
I love red beets. Maybe it's my Russian heritage or maybe it's just because I truly LOVE things that are loaded with flavor, color and natural sweetness. Either way, beets are a truly great addition to any diet as they are delicious, easy to prepare and really, really good for you! Not to mention, they look gorgeous on the plate!
WHAT YOU WILL NEED 6 C red beets cut into 3/4" chunks 1 T Stacey Hawkins Luscious Lemon Oil 1 T Stacey Hawkins Simply Brilliant Seasoning 1 T fresh lemon juice 1/2 C crumbled feta cheese
DIRECTIONS 1. Turn on the oven to 425 degrees F. 2. Wash beets, trim tops and bottoms and using a sharp knife, cut into 3/4" chunks. 3. Place in a large bowl and drizzle with oil and seasoning. Toss to coat. 4. Pour beets onto a cookie sheet, making sure that they are only one layer thick and have some space inbetween them to ensure even cooking. 5. Roast for 20-30 minutes until the beets are fork tender. Remove from the oven and set aside for 5 minutes to cool slightly. 6. Place the beets back into a large bowl and toss with fresh lemon juice. Crumble cheese over the beets and serve.

OTHER SALADS WE LOVE COOL KALE & BOK CHOY SALAD WITH CREAMY RANCH DRESSING
Salad can be so much more than just traditional greens. This crisp, cool salad takes on a whole new world of delicious flavor and texture with the combination of baby bok choy and kale. These magical greens pair with home made creamy ranch dressing to make a lean and green recipe full of flavor, fun and flair.
WHAT YOU WILL NEED Salad: 3-4 C baby bok chop, washed and shredded 3-4 C kale greens, washed and shredded Dressing: 4 T light sour cream or low fat plain yogurt 1/2 C unsweetened almond milk 1 T Stacey Hawkins Rockin’ Ranch Seasoning
DIRECTIONS 1. Place greens in a large bowl. 2. In a smaller bowl or shaker container, place all the ingredients for dressing. 3. Whisk or shake to combine. 4. Let sit for 10 minutes to allow flavors to develop before serving. 5. Pour desired amount of dressing over the salad. 6. Toss to coat & serve!

And here is one more tip before we end this issue ... Chefs are known for having little secrets up their sleeves that take an ordinary ingredient and make it extraordinary. Ever take a bite of something at a restaurant that "looks" like something you've eaten before only to be surprised by the subtle difference in flavor? It's familiar ... but somehow different. As the tasty dish is rolling over your tongue, your senses become heightened and you wonder, "What IS this I'm tasting? It's just a salad but WHY does it taste so darn good?" Often, the mystery preparation isn't so secret -- it's a tiny spin on an everyday ingredient or technique that changes EVERYTHING. It often confuses your taste buds because, well, you weren't "expecting" it. (Hint -- that's the secret!) Meet one such staple of a chef's secret arsenal: char-grilled romaine. Made simply by cutting romaine in half, brushing with a little oil and charring over an open flame, charred romaine lettuce takes salad to a whole new level. By exposing the hearty greens to heat and flame, the fiber mellow, the leaves sweeten and the flavor of the greens takes on a new rich, complex taste. Once grilled, you can enjoy warm, or let them cool and serve with your favorite salad toppings and drizzle with a light vinaigrette OR a hearty, chunky dressing. You won't believe how tasty it is!
