Recipe - Salad of soft quail’s eggs, black pudding & smoked bacon

This is such a wonderful salad. All the things that you love for breakfast but, somehow, more delicate and delicious. It is a perfect starter or lighter lunch, maybe with some crusty homemade bread (a hint of future recipes to come). This is very simple to assemble once prepared. Ingredients: 120g smoked bacon lardons (1cm square) 4 slices of good quality black pudding 12 quail’s eggs, 2 heads of baby gem lettuce 150g mixed baby spinach & wild rocket, 1 Avocado Salad dressing: 50ml extra virgin rapeseed oil, 1 tbsp red wine vinegar 1tsp lemon juice, ½ tsp Dijon mustard, Salt & pepper Method: First of all, mix all the dressing ingredients in a bowl and whisk together, then season and taste. Set aside. Remove the base from the gem lettuce and separate the leaves; wash and drain if necessary.

To soft boil the quail’s eggs you need a good sized pan of boiling water and also a big bowl filled with iced water to hand, as well as a slotted spoon or similar to remove the eggs from the boiling water. Bring the water to a rolling boil, gently drop the quail’s eggs in and promptly start a timer for 2 minutes, 40 seconds. As the time hits zero, be quick to remove the eggs and plunge straight into the iced water; leave for at least 10 minutes to cool. Remove and carefully peel the shell off starting at the bigger end and getting under the membrane. Rinse in the water to remove any unwanted shell. Fry the bacon lardons on a low heat to render the fat and crisp it up. Drain the fat and put the lardons on a tray with the black pudding cut into pieces. Peel and cut the avocado into pieces as well. Place the tray of bacon and black pudding in a hot oven for 5 minutes to heat and crisp. Place all the lettuce, avocado, warm bacon & black pudding into a bowl and add some dressing. Toss and place into serving bowls. Cut the quail’s eggs in half and add to the salad bowls. Spoon over a little more dressing and enjoy!

County Alpacas October update It can be quite a wrench to sell alpacas, especially ones like Barnie. He was born back in 2007 on our farm and we have watched him grow from a small cria to the big strapping lad he is now. Both he and Olympic Flame (Torchy) will be taking up residence at their new home near York at the end of this month. I’m sure the odd tear will shed as we wave them off. Their new owners will be here this week having their basic alpaca handling course. It’s now time to knuckle down and start preparing the farm for Autumn and Winter. The barn is full of hay and the fields had their weeds sprayed for the last time this year. A few fence posts have been replaced to make sure we have no escapees. Although alpacas do tend to be home birds and never stray far from the field even if they get the opportunity. It’s also time to start dusting off your knitting and crochet needles as one of the country’s biggest knitting events is about to take place in Skipton. We will be there with our alpacas at Yarndale on 27th and 28th September at Skipton Auction Mart.

The big news is that our first shipment from Peru (Paddington is on his way to Yorkshire) will arrive this week with loads of new alpaca products. Saturday 27th September from 9.00am to 12.00 noon Friday 3rd October from 4.30pm to 7.00pm Saturday 18th October from 9.00am to 12.00 noon

The flu clinics are for patients who receive an invitation from the practice as they fall into at least one of the following groups:  Patients aged 65 and over  Patients who are pregnant  Patients who known to the practice to be carers plus the following “at risk” groups: Patients suffering with asthma, chronic bronchitis, diabetes, heart disease, stroke, TIA, kidney problems, liver disease, low immunity or progressive nervous diseases. Vaccinations during normal surgery hours will only be available after 20th October. Patients who have not received an invitation should not attend the walk-in clinics. They will not be vaccinated. If sufficient vaccine stock is available after at-risk patients have been vaccinated, other patients can attend clinics from mid November. Details will be made available in due course.

Technology

Theranos – Technology made useful To the casual observer, the most significant uses that technology and the internet have been put to are all social – the internet makes it much easier to buy the stuff we crave; social media makes it much easier to share our thoughts and experiences with each other every waking hour of the day. But the big changes have been going on behind the scenes, particularly in terms of database technology and cloud computing. One business that has made use of these developments to provide a service that offers both a social good and vast commercial opportunities is Theranos. Launched as a tech start up in 2003, it has attracted around $70 million in funding so far, much of it from some household names of the technology world, and is now poised to launch on the stock market in a multi-billion dollar IPO. What is it doing to get investors so hot under the collar? Theranos does blood tests – nothing very exciting about that you might think; we’ve been doing blood tests for decades, but the way that Theranos does them could lead to a dramatic improvement in the effectiveness of healthcare services around the world. There are hundreds of common blood tests that can be carried out and the results can determine if the patient has anything from Crohn’s Disease to Diabetes. Blood tests are also an essential tool in the early diagnosis of cancer. The current system for doing blood tests normally starts at the GP’s surgery or hospital. The doctor reviews the patient’s symptoms and comes up with a potential diagnosis of what is wrong with them; the blood test effectively confirms if the diagnosis is correct. A sample of blood is taken and put into a test tube. A paper trail is then created that links the sample with the doctor, the patient and the type of test required. Then the sample is sent to a central laboratory where the test is carried out and the results sent back to the doctor. The whole process is complex and time consuming and it is not unknown for the wrong results to come back to the wrong patient. More importantly, it is expensive so budget constrained doctors will often be reluctant to order a barrage of blood tests to confirm an early diagnosis.

By comparison, the Theranos system is a revelation. The doctor or a nurse uses a handheld testing device which can perform a battery of up to 30 tests on just one drop of blood. The device can perform hundreds of different tests as required and the results are beamed wirelessly back to the database that holds the patient’s medical records, where they are available to everyone who needs to see them. The benefits are immense. For starters, the cost of the tests is less than half that charged by the existing laboratories. In America alone it is estimated that the two main healthcare providers could save over $200 billion over the next decade. That’s before the savings in administration are taken into account. Then there’s the time saving; the results are available instantly rather than a week later. But that’s just the tip of the iceberg. Early diagnosis of cancer transforms survival rates and drastically cuts the costs of treatment. Early diagnosis of diabetes could save the NHS billions and transform the lives of those who suffer from it. It’s not just about money either; it’s about people’s health and happiness and about switching the ethos of health services from cure to prevention. The story of founder, Elizabeth Holmes, is an interesting one. She dropped out of Stanford at the age of 19 and used her tuition fund to start up the business. She successfully sold her idea to some very savvy investors and is now poised to become the first woman technology billionaire. Facebook founder, Mark Zuckerberg, is a multibillionaire and has had a film made about his life - and he just created a dating site. What does the future hold for Elizabeth Holmes?
