Recipe - Salad of soft quail’s eggs, black pudding & smoked bacon
This is such a wonderful salad. All the things that you love for breakfast but, somehow, more delicate and delicious. It is a perfect starter or lighter lunch, maybe with some crusty homemade bread (a hint of future recipes to come). This is very simple to assemble once prepared. Ingredients: 120g smoked bacon lardons (1cm square) 4 slices of good quality black pudding 12 quail’s eggs, 2 heads of baby gem lettuce 150g mixed baby spinach & wild rocket, 1 Avocado Salad dressing: 50ml extra virgin rapeseed oil, 1 tbsp red wine vinegar 1tsp lemon juice, ½ tsp Dijon mustard, Salt & pepper Method: First of all, mix all the dressing ingredients in a bowl and whisk together, then season and taste. Set aside. Remove the base from the gem lettuce and separate the leaves; wash and drain if necessary.
To soft boil the quail’s eggs you need a good sized pan of boiling water and also a big bowl filled with iced water to hand, as well as a slotted spoon or similar to remove the eggs from the boiling water. Bring the water to a rolling boil, gently drop the quail’s eggs in and promptly start a timer for 2 minutes, 40 seconds. As the time hits zero, be quick to remove the eggs and plunge straight into the iced water; leave for at least 10 minutes to cool. Remove and carefully peel the shell off starting at the bigger end and getting under the membrane. Rinse in the water to remove any unwanted shell. Fry the bacon lardons on a low heat to render the fat and crisp it up. Drain the fat and put the lardons on a tray with the black pudding cut into pieces. Peel and cut the avocado into pieces as well. Place the tray of bacon and black pudding in a hot oven for 5 minutes to heat and crisp. Place all the lettuce, avocado, warm bacon & black pudding into a bowl and add some dressing. Toss and place into serving bowls. Cut the quail’s eggs in half and add to the salad bowls. Spoon over a little more dressing and enjoy!

Cycle Circuit for the Community The Brooksbank Cycle Circuit was opened this summer on the Hammerstones site near to Brooksbank School, Elland. Costing £650,000 to build, it’s a fantastic new high quality facility open to all. The aim is not just to benefit cyclists at Brooksbank but also the whole of our community, promising safer cycling for all ages. And best of all, it’s on our doorstep! Mark Ragan, Director of community sport at Brooksbank, told us “We are really looking forward to seeing the track being used constantly by old and young cyclists alike. This is a great time for cycling - the sport is flourishing generally after the excitement of the Tour de France.” The circuit can be booked by clubs and groups for £30 per hour, assuming you have a coach to take the
session, or you can book a coach for an additional £20. Wednesday evenings from 6.30pm are starter drop in coached sessions costing £5. This is for those people who would like to ride safely traffic free and to improve their fitness. Stainland Spoilsports At the 1931 May meeting of the Parks and Allotments Committee of Stainland Council Councillors Noble and Sutcliffe moved that a notice be posted prohibiting the use of the recreation ground for the playing of golf or of the striking of golf balls or knur and spell or other similar games and that the said notice be posted in the window of the pavilion. Councillor Edwards opposed the motion. He said that the public had the right to use the public recreation ground and to use it as they thought fit. Whereas Councillor Crossley said that there was a danger to the public walking along the path through the rec. Councillor Sutcliffe said that it was their duty to protect the public and not just to provide for the few. The resolution was carried. One week later a letter, signed by ‘A Few Unemployed’, appeared in the local press. The correspondents lamented the council’s decision. ‘During the last few weeks we have been able to indulge in this innocent recreation as a diversion to hanging about the streets, reading the papers at the institute and wondering if our unfortunate circumstances will ever be improved.’ The letter reassures that the games ceased should anyone a “knur”
cross the path and that most practices took place during school hours therefore no children were in the vicinity. It concludes what is the rec for given that the funds to buy the land were raised by public subscription? You can imagine the sucking of teeth by councillors and officials as they read the newspaper. Perhaps this eloquent if provocative letter was written by local unemployed men then again perhaps someone, who wished to remain anonymous, felt strongly that councillors (some of whom may have played golf during the day at local courses) were denying access to public sports on public land. We’ll never know but the subject is not raised again. 1970 World Championship Whatever happened in 1931 was forgotten by 1970 when the district hosted the Knur and Spell World Championship on Tuesday 31st March. Competitors ventured from across the North (although favourite father and son from Sheffield were barred – no reason given) and over 600 spectators turned out on a bitter cold day. There was a cash prize of £200 plus a cup for the victor. Some failed to hit the knur far. All agreed that Fred Trueman, the former England cricketer but now trying his hand at knur and spell, was rubbish and lacked the knack. Those who managed to hit the knur into the distance had to wait until flat-capped officials located the little ball. One local predicted a controversial end ‘whoever wins will end up in that quarry and the heather there is a foot deep’. Eventually a chap from Colne, Lancashire won with a knock of 225 yards.
