Obviously Thanksgiving is a very special time for family and friends to gather and give express their affection and respect for one another. Like many of you, I give thanks everyday for my life, my friendships and my life in the best country in the world. As I write this in October, I do not know the outcome of our annual celebration of freedom to vote for our leaders. Whomever America has chosen, no matter the party affiliation, I hope American’s will support them. It’s time to move our country forward, away from this pandemic and into prosperity once again. So to our newly elected or re-elected President, I hope you will take us willingly into the next four years with pride and love. Sunday the 1st of November ends Daylight Saving Time. November 3rd is Election Day. Our time to express our freedoms. The 11th is Veterans Day. Veterans Day seeks to honor and give thanks to all the men and women who have served and are serving in the US Armed Forces. Thanksgiving falls on Thursday the 26th. Helpful Tips for Winter Golf 1. Keep Your Hands Low Limiting the height of the followthrough will effectively reduce the height of your shots. The lower the hands, the lower the ballflight. Moving the ball back in your stance or choosing a stronger club and trying to swing easy are other ways to accomplish the same thing, but they’re less reliable and more difficult to execute. Instead, keep your hands low in the finish (compare the two photos at right), and the trajectory of your shots will be lower. 2. Give Your Spine The Forearm Make sure you’re on-plane at the top of the swing to guarantee solid ballstriking and increased accuracy. Notice in the photo at left how my right forearm is parallel to my spine, my left wrist is flat and my elbows and arms form a tight triangle. These are indications that I’ve rotated my shoulders into the backswing perfectly.
3. Use Your Body For Power Every good golfer knows that power comes from the body, not the arms. To learn to power the club with your body instead of your arms and hands, put the club behind the ball at address, with your body in a dead-stop position. Without taking a backswing, try to drag the ball into the air. If you’re a player who uses his or her hands to control the club, you’ll probably struggle at first. However, you’ll quickly find that once you start moving the club with your body, you’ll begin to get the ball in the air more consistently. This helps you turn fully through the ball on the downswing. This game was meant to be enjoyed. If you need further help, see your PGA professional for a lesson or two. It’s worth the effort!

Add remaining ingredients into a mixing glass with ice and stir until well-chilled. Strain into prepared glass over a large ice cube and swirl to incorporate smoke. Garnish with a thyme sprig and cranberries.

FOR THE CURRY: 2 pounds eggplant (about 10 medium Chinese or Japanese eggplant) 3 tablespoons olive oil salt, as needed 3 tablespoons ghee (or coconut oil if vegan) 2 cups diced yellow onion (from 2 medium or 3 smaller onions) 5 black cardamom pods, cracked 1 dried chile de arbol (or other medium-spicy chile), crumbled (more or less to your taste) 8 green cardamom pods, cracked 2 tablespoons coriander seeds 1 teaspoon black peppercorns 1 tablespoon ground turmeric 4 large garlic cloves, peeled and slivered 1 " chunk of ginger, peeled and cut into long, thin strips 1 pound ripe tomatoes (10 medium dry-farmed Early Girls), stemmed and diced 1 can full-fat coconut milk (13.5 ounce / 400 mL) 1/2 cup water a few handfuls cilantro leaves, chopped a handful mint leaves, slivered 1 pint whole milk (Greek)yogurt, for serving FOR THE RICE: 2 cups long-grain basmati rice 3 1/2 cups water, plus more for rinsing the rice 1 teaspoon fine sea salt ROAST THE EGGPLANT: Position racks in the upper and lower thirds of the oven and preheat to 400ยบIf using a long, slender variety of eggplant, cut them on the diagonal into 1-inch thick slices. If using a globe style eggplant, cut them into 2-inch square chunks. Pile the eggplant slices on a rimmed baking sheet and sprinkle with the olive oil and 1/2 teaspoon salt. Toss to coat with your hands. Spread the eggplant pieces on two baking sheets, and roast until golden on the bottoms, about 15 minutes. Use a thin metal spatula to flip the slices over, and roast until tender and golden, 5-10 more minutes. Remove and turn off the oven. MAKE THE CURRY: Heat the ghee in a large soup pot or dutch oven over a medium flame until it shimmers. Add the onion, black cardamom pods, and crumbled chile de arbol. Reduce the heat to medium-low and cook, stirring occasionally, until the onions are golden and tender, 10-15 minutes. Meanwhile, break open the green cardamom pods and shake out the black seeds. Combine these with the coriander and peppercorns in a clean coffee grinder or spice grinder and grind finely. When the onions are soft, stir in the ground spice mixture, turmeric, garlic, and ginger. Cook for a few minutes to toast the spices, then stir in the chopped tomatoes, coconut milk, water, and the roasted eggplant. Increase the heat to bring the curry to a simmer, then reduce the heat and simmer gently for 20-30 minutes, stirring occasionally. When finished, the eggplant should still hold its shape, but the sauce around it should be slightly thickened stew-like. Taste the curry, adding salt if you feel it needs it. It will thicken further if allowed to sit and cool. WHILE THE CURRY SIMMERS, MAKE THE RICE: Place the rice in a medium bowl and cover with cool water. Swish around for a few seconds, then drain off the milky water. Repeat this twice more; the water should be fairly clear. Drain the rice well and place it in a large, lidded saucepan with the 3 1/2 cups water and the salt. Bring to a boil over a medium-high flame, then cover the pot, reduce the heat to low, and let steam until the rice is tender and all the water is absorbed, about 15 minutes. If the rice is still crunchy, add another 1/4 cup water and continue cooking. Let the rice stand for ten minutes, then use a fork to fluff the rice. SERVE THE THINGS: Spoon the curry onto a platter and shower with the chopped cilantro and slivered mint, and serve with rice and yogurt.

Orange Prince (1984) Painting by Andy Warhol Orange Prince (1984) is a painting by American artist Andy Warhol, of Prince, the American singer, songwriter, record producer, multi-instrumentalist, actor, and director. The painting is one of twelve silkscreen portraits on canvas of Prince created by Warhol in 1984. These paintings and four additional works on paper are collectively known as the Prince Series. Each painting is unique and can be distinguished by colour. Orange Prince (1984) is considered an important late work referencing Warhol's portraits from the early 1960s, of movie stars and celebrity icons, such as Marilyn Monroe, Elizabeth Taylor and Jacqueline Kennedy. Art historian and Warhol expert Thomas E. Crow believes that Warhol's portrait of Prince shows much greater freedom of expression, as in the early portraits. This is especially evident when compared to Warhol's more 'factory-line' style of portraits from the 1970s onwards, which were mainly commissions. Southern Flying Squirrel For several years, a small group of volunteers in the Backyard Bird Watchers and Nature Lovers of West Neck have been monitoring several Bluebird boxes that we had installed on the Signature Golf Course. I am one of them. We have had Bluebirds, Chickadees, House Wrens, and Tree Swallows nest successfully in these boxes. This year, we were excited to discover at the end of the summer, that two of them had Southern Flying Squirrels making a home in them. Southern Flying Squirrels are common rodents in many parts of the country, but because they are nocturnal (active mainly at night), few people ever see them. I had never seen them in the wild until this experience! Southern Flying Squirrels are native in Virginia. They are very, very cute! Only 8-10 inches long from nose to tail, they might more appropriately be called “gliding squirrels” because they aren’t capable of true powered flight like a bird is. Flying squirrels glide. They have a special membrane between their front and back legs that allows them to glide through the air between trees. When a flying squirrel wants to travel to another tree without touching the ground, it launches itself from a high branch and spreads out its limbs so the gliding membrane is exposed. It uses slight movements of the legs to steer, and the tail acts as a brake upon reaching its destination. Flying squirrels can cover more than 150 feet in a single glide.
When I went to check on these boxes, I carefully opened the side of the first one and cautiously peeked in. Two huge, beautiful brown eyes gazed back at me. Then the squirrel, I am guessing the female, jumped out of the entrance hole and scurried across the ground to the nearest tree, climbed up, and disappeared around the other side. I turned on my cell phone flashlight and looked back inside the box, observing at least one baby squirrel. I closed the box. I walked over to the tree the adult squirrel had climbed and looked up, seeing nothing. I walked to the
other side and there, seemingly frozen in place, was the adult flying squirrel. She was almost perfectly camouflaged and if I had not seen her relocate there I may have missed her. Southern flying squirrels have thick, soft, glossy grayish to olive brown fur with white underbellies, and I am certain it helps protect them from many predators. Their known predators include hawks, owls, domestic cats, snakes, raccoons, and foxes. These squirrels mainly feed on nuts and acorns, especially those from hickory trees. They also eat berries, seeds, flowers, mushrooms, insects, bird eggs and dead mice. Each autumn, they may store up to 15,000 nuts to eat during winter, which they store underground or in tree cavities and crevices. We actually found where they were storing food in several of our Bluebird boxes last year! We are so happy that they decided to make West Neck their home! 13

A projected 54 million Americans may not have enough food to eat at some point in 2020, according to analysis from Feeding America.
