IRISH COFFEE Joe Sheridan had the right idea when he first combined a robust Irish whiskey with rich black coffee to create the Irish Coffee Cocktail. This hot drink has long been a favorite in Irish pubs with a popularity that could be said to rival a great stout (as tough as that may be).

INGREDIENTS 1 ½ oz

Irish Whiskey

Strong Hot Coffee

1 oz

Brown Sugar

2 spoons

Lightly Whipped Heavy Cream

Pour the sugar then coffee into a warm Irish COFFEE GLASS or other HEAT-PROOF GLASS.

HORSE’S NECK The Horse’s Neck falls within the “cooler” category, a style of long drink that accomplishes exactly what it advertises. The drink—which gets its name from its long, loopy lemon twist garnish that curls along inside of the glass—is one of several classic drinks that devolved into a mocktail around Prohibition. RAMOS FIZZ Also known as a New Orleans Fizz, the Ramos Fizz was created in the late 1800’s by Henry C. Ramos in New Orleans. The cocktail became so popular that by the 1915 Mardi Gras celebration Ramos’ 35 “shaker boys” could not keep up with demand.

INGREDIENTS 1 ½ oz

Gin

½ oz

Lime Juice

½ oz

Lemon Juice

1 ¼ oz 2 oz 1 small 2 dashes 1 oz

Simple Syrup Milk or Cream Egg White Fleurs d’orange Cube Soda

DIRECTIONS 01

Place all of the ingredients except the club soda into a cocktail shaker.

Dry shake.

Fill the shaker with ice.

Shake vigorously again (more than normal to ensure the egg and cream are well mixed).

Strain into a chilled HIGHBALL GLASS.

Top with club soda.

FLORADORA The Floradora is a classic cocktail that you might not know, but you should know because it is a truly fabulous (and rather sexy) gin drink. It is semi-sweet, tall and refreshing, and beautifully pink. One might even call the Floradora the ‘original girly drink.’

Gin

½ oz

Lime Juice

½ oz

Créme de Framboise Liqueur

4 oz

Ginger Ale

1 garnish

Fresh Raspberry

DIRECTIONS 01

Pour the gin, lime juice, and framboise into a HIGHBALL GLASS filled with ice.

GIN MARTINI The classic dry gin martini is an iconic cocktail and one that should be on every bartender’s list of drinks to know. Though many martinis have been created, there is only one martini and few drinks can beat this simple recipe.

INGREDIENTS 2½ oz ½ oz 1 garnish 1 dash

Gin Dry Vermouth Olive Orange

DIRECTIONS 01

In a mixing glass filled with ice cubes, combine the gin and vermouth, pouring more or less vermouth to your taste.

Stir for 30 seconds.

Strain into a chilled COCKTAIL GLASS.

Add a dash of orange or Angostura bitters, if desired.

Garnish with olives or a lemon twist.
