n mid April, 60 classic yachts and a large following of cruisers and spectator boats gathered in the beautiful Caribbean harbor of Falmouth, for the 24th Antigua Classic Yacht Regatta. This event has long been established as the largest classic yacht regatta in the Caribbean providing some of the best sailing conditions of any regatta of its type in the world. For Panerai, the major sponsor, this is the first regatta in their “Classic Yacht Challenge” for 2011. With yachts ranging in size from the 24 ft David Boyd sloop “Springtide” to the 180ft Andre Hoek designed “Marie”, the line-up included every type of classic craft including 7 Carriacou sloops, built “down island” with an adze and a chainsaw, a salty, gaff rigged, Belgian fishing trawler and dainty lightweight modern classics. A total of 13 magnificent schooners, with clouds of sail provided some wonderful photo opportunities. The J class Sloops, “Velsheda” and “Ranger” provided some breathtaking moments when encountered close-hand. Once all 60 yachts were registered there was a lively welcome party Sponsored by our Gold Sponsor Mount Gay Rum and a “Red Hat Party”. between the 21 entries, all of whom had achieved a very high standard. The overall winner was “Latifa”, the beautiful 70ft canoe stern Fife yawl built in 1936. This was followed by the Single handed race, skippered by one sailor with an “observer” to help in an emergency. The winner was local boatbuilder Oliver Greensmith on “Springtide”. The results were given at a festive party on the Yacht Club Lawn with live folk singing. Over the next four days of racing, there was a variety of conditions which kept crews on their toes. For the first Race on Friday, the 20 mile “Old Road” course, the conditions were ideal for the first day out. With a gently 1012 knot breeze and a fair and flat sea the Spirit of Tradition class B, especially “Gaia” and “White Wings”, enjoyed some close racing. Saturday dawned with light winds and rain showers providing taxing conditions for all yachts, however it picked up to 10-12 kts again and a good race was had by all. Sunday’s famous “Cannon” race had plenty of wind and everyone had a good sail, including the 137ft gaff schooner “Elena” who stole the show weaving through the fleet with her towering jackyard topsail. The race was followed by the Parade into English Harbour, a restored Naval Dockyard from the 1700’s, which gave the spectators a good look at the fleet. Mondays race was abandoned when the winds went too light to finish the race. Tuesday was Gig Racing day at the Admirals Inn with cream tea’s on the lawn, followed by the awards ceremony in the evening. The overall winners were “Bolero” winning the Mount Gay Trophy for 1st Overall, and “Lone Fox” winning the top prize of the Panerai Watch. first visited the lovely island of Antigua in April 1998 when I arrived by sail with my husband Adolfo aboard our vintage S&S 33 footer, Viking II. We won that year’s Antigua Classics’ Concours d’Elegance and had the privilege of meeting and befriending Christian Chalmin, great supporter of the regatta at that time. Christian, through Boat International Magazine, had taken over the Concours d’ Elegance just a few years after its inauguration and thanks to the publicity his magazine gave to Antigua, the Antigua Classic Yacht Regatta soon gained worldwide recognition. Six years ago, Panerai became involved as Platinum Sponsor and their commitment and high level of professionalism can be perceived throughout the event. Officine Panerai kindly invited me to attend this year’s edition and I experienced firsthand their warm hospitality and great dedication to this unique venue. Antigua Classic Yacht Regatta is one of the most

emblematic and picturesque Classic Regattas in the world as it represents a rendez-vous for spectacular classic and vintage yachts coming mainly from Europe and the USA. After briefly reuniting in Antigua for Classics, they then sail back either to the New England Coast or the Med for their summer racing circuit. What makes Antigua Classics stand out from other similar events is the superb location and amazing ambiance that reigns throughout the whole week. As the ACYR organizers proudly and rightfully boast, “The sailing combined with Antiguan hospitality, plenty of rum, sunshine, and great camaraderie, in a friendly relaxed atmosphere, places the Antigua Classic Yacht Regatta, in a class of its own.” It was a pleasure to walk along Antigua Yacht Club Marina and Nelson’s Dockyard admiring all these classic beauties with graceful lines and gleaming varnish docked one by the other. Among the yachts registered for this year’s edition were the 42-metre Rebecca, designed by Argentinean German Frers, winner of the Spirit of Tradition category in 2010, and the Brazilian 29-metre Herreshoff schooner Atrevida. Mariella, the 1938 Fife and past winner of the event, made her traditional appearance with AYCM’s owner Carlo Falcone at its helm. Steve White from Brooklin Boatyard raced aboard the 1946 S&S Bolero which ended up winning this year’s Vintage Class. It was great to see

a run for their money! The crew consisted of women from all over. Most race on their home waters, lakes or bays and at least one cruises full-time on her own yacht. With careers in everything from healthcare administration to software designer, these women have come together to experience the thrill of racing in this renown yachting event. The first race showed off the scenic coastline of St. Thomas on a 22-mile windward-leeward course. With the steady tradewinds blowing between 12-15 knots, there was plenty of action and a few close calls as yachts started packed closely together at the line before spreading out. All the necessary tacking and gybing of the boat turns the crew into a hyper-focused team, everyone anticipating the next maneuver. For those on board the racing boats, serious attention was needed to avoid rocks, other boats and even the occasional ferry! When I commented on how relaxed and fun the experience was, Randee Fowler responded, “I’m glad to hear that. We work hard to make sure everyone enjoys themselves on the boat.” We were fortunate to have our ‘secret weapon’ in coach Suzette “Hau-oli” Smith - always calm, always respectful of the variety of skills and always positive. “We’re going to sail a broad reach, so I want you all to think about what has to happen next,” Suzette called out to us. “How will the sails be trimmed? Where do you need to be?” Her calm tones gave instant clarity and assured us that we did know how to do it. I have to give Suzette and SafePassageSailing big points. It’s not easy to take a group of strangers with varying degrees of experience and turn them into a welloiled racing team after just two days of practice. “By Sunday, something clicks in your head and you start to anticipate the next move rather than wait to be instructed,” one participant told me. “It’s too bad we’re not racing next week as well, now that we’ve got it!” SafePassageSailing lived up to its mission: “To provide opportunities for the intermediate to advanced sailor to participate in celebrated sailing events, around the U.S. and in international waters and to provide an exciting and

La tripulación estaba compuesta por mujeres de distintos lugares, la mayoría de la cual ya competía en sus lugares de origen y al menos una de ellas navegaba a tiempo completo en su propio barco. Con carreras tan diversas que van desde un puesto en la administración nacional de salud hasta diseñadora de software, estas mujeres se han unido para experimentar la emoción de competir en este reconocido evento náutico. Cuando comenté cuán distendida y divertida había sido la experiencia, Randee Fowler respondió, “Me alegra escuchar eso. Trabajamos duro para asegurarnos de que todos pasen un buen momento en el barco”. Tuvimos la suerte de tener nuestra ‘arma secreta’, la instructora Suzette Smith – siempre serena, siempre respetuosa de las distintas habilidades y siempre positiva. ailors come to Antigua for thrilling, adrenalin-pumping sailing and the competitors at the 44th Antigua Sailing Week certainly got what they came for. Virtually every day, big breeze and lumpy seas spiced up the action with 20 knots or more of wind being the norm throughout most of the week. It was a wet, wild ride upwind but with a sea temperature of 25ºC, a true labor of love. Big wind and big waves provided Antigua Sailing Week with some outstanding racing in glorious sunshine with those who could stay in control downwind coming out on top. Whilst Antigua served up some classic racing conditions, there were quite a few changes to the Caribbean’s oldest and most well known regatta. Antigua Sailing Week has undergone a change of guard this year with a new Regatta Organizing Committee. “The new team brings a committed, experienced group of sailors together to resolve the critical planning and strategy issues required for a successful event,” commented new Regatta Chairman, Ian Fraser. “Robust and constructive

debate surrounding boat classification, ratings, courses and other essential details has brought an exciting and invigorating atmosphere.” Many of the sailors who have been loyal to Antigua Sailing Week in recent years had an exceptional event. Peter Harrison’s Farr 115, Sojana had a tremendous week scoring six bullets to seal the award for Best Boat in the Regatta. “I have been coming to Antigua since 1995, it is like a second home to me”, explained Peter Harrison. “But I can never remember a better week - the crew has performed extremely well, a lot of them are old friends and that is so important.” Richard Matthews, owner of Oystercatcher XXVIII, has also been a loyal participant in past Antigua Sailing Weeks and he was back this year with his latest Oystercatcher, a brand new Humphries 54. After Race Day Two, Richard Matthews comment, “It was just champagne sailing today and a special one for me as it was the first race win in my new boat. Everything really came together today and I am delighted for all of the crew who performed so well.”

Local boats also did exceptionally well with Vincent White’s O’Day 35, Seal, scoring a perfect six bullets. “We are just a bunch of locals having fun. I think that the crew of Seal is living proof that anybody can come to Antigua Sailing Week, have a great laugh and also win.” Rick Gormley’s First 38, Elethea, also did exceptionally well with its first class win at Antigua Sailing Week to Rick’s delight! Other local boats battled it out on the water with very respectable showings over a wide range of classes. Away from the race course, the Event Village in Nelson’s Dockyard provided a comfortable atmosphere ashore where sailors and friends gathered daily to chat about the day’s event and enjoy some food, drink and entertainment. The Chivas Lounge also created a sophisticated chill-out environment where the sailors gathered for the Captains’ Cocktail party to relax and exchange a few stories. The party highlight of the week was on Tuesday night prior to Lay Day when Shirley Heights was jam-packed with over 2,000 people for an unforgettable concert by reggae
legend, Maxi Priest. For 25 years Shirley Heights Lookout has been the spot for some very special occasions and this concert must surely rank amongst them. After a week of superb racing the Antigua Sailing Week prize giving was held on Friday night in the Event Village. The buzz throughout the evening was about the positive changes that had been made on the water this year which, along with collecting a few trophies, put the sailors in a very good mood indeed! “We made a lot of changes on the water this year and the feedback we have received to date is overwhelmingly positive. There is still work to be done to continue to improve the event but we are encouraged by the enthusiastic response we have had from the majority of the sailors,” commented Kathy Lammers, Chairman of the Regatta Organizing Committee. Main Deck Although Ferretti 750’s wide salon maintains the structural line of the previous model Ferretti 731, it does feature a new layout, plunged in natural light that offers a cozy atmosphere created by the tones of the materials selected for the furniture and the bleached walnut, used for the first time onboard Ferretti’s yachts. Although the interior has two separate areas – living and dining area – the design manages to keep a harmonious conti-

To starboard, there is a pop-up system TV and an additional sofa that sits three people, followed by the stairs to the flying bridge. The dining area – separated from the living by wood furniture, features a tempered glass table and chairs for eight guests. The dining zone opens to an access area that connects galley, pilothouse, the exterior and the lower deck. The galley is located in a strategic position, between the dining area and the pilot house, in order to let the crew work without disturbing the guest’s privacy. Once more, the shipyard chose top Italian products like the fully-equipped Ernestomeda galley model, with glossy lacquered furnishing to enhance the light of this area. A sliding door gives access to the exterior. Located at the bow is the pilot house with dinette/charting zone and extendable table. On the lower deck, the Ferretti 750 cabins are distinguished by studied details: bulkheads, and walls are covered in light-colored fabric framing the windows, which allow in plenty of light. Interior Decor The timeless elegance of the Ferretti 750 comes from the perfect balance between a functional design which aims to achieve the highest level of comfort and the use of the best materials, with a prevalence of bright nuances of an ivory, beige and brown palette. The bleached walnut makes the atmosphere warm and elegant, and the interior is brighten up by colour contrasts of decorative details, like panels made in natural textiles, leather for the bead-heads and the special mixture of natural fibres created for some doors. Besides the natural light that dominates the atmosphere onboard, the shipyard has accomplished a very accurate illuminating engineering analysis to integrate the layout with the lighting system in order to obtain maximum comfort and relaxation. Motorization and Performance Ferretti 750 offers two MTU 2000 M92 1381 mhp or, upon request, 2 MTU 2000 M94 1623 mhp. With this last motorization and hard top version, the maximum speed is 33,5 knots.

he San Juan 40 arrived with Gatsby grace featuring curvaceous lines, brawn and the sex appeal to become a benchmark among gentlemen’s yachts. Built by Donald Campbell of San JuanYachts in Anacortes, Wash., designed by Greg Marshall, their boats were inspired by the graceful sheer of the Downeast lobster boats that have worked the coast of Maine. The SJ 40 is an evolutionary sportster, artfull from stem to stern with a high price tag and the delicate moves that exude an enduring design. “I stepped out of the mega yacht industry, and

The 40 sedan or flying bridge, are computer modeled with swooping sheer for spacious decks, a traditionally flared bow to shoulder aside seas and a fine entry with a sweet tumble home aft. The entire boat is cut by a five-axis computer controlled router creating the most precise parts in the industry The hull is Kevlar/E-glass and Corecell foam core, materials are vacuum-infused with epoxy vinylester resin to create a strong, void-free structure. A one-piece vacuum-infused composite deck and watertight bulkheads separate the hull into damage control zones with dedicated bilge pumps and a web of longitudinal and transverse composite stringers makes the 40 exceptionally rigid, lightweight and swift. Powered by a pair of Volvo IPS diesel engines, the 40 is faster than most high-speed commuters, yielding 30+ plus knots at wide-open throttle. The FB model weighs 18,000 lbs and

when cruising at 30 knots (1800 rpm), the boat yields a 350-mile range and 500 miles at 25 knot speed. A shallow 38-inch draft on a gull wing bottom with prop pockets, allows it to explore waters off-limits to most boaters. To maximize tracking, the boat has outsized rudders and a small keel. At the helm, a joystick control lets the boat walk sideways operating throttle and thrusters (bow and stern) with one hand. The 40 has a lower deck sheer than the 38 for increased visibility, and there’s more wedge to the aft section of the running surface to nudge the bow down at slower speeds. A small yard with a clear vision driven by a passion for design is an incubator of great ideas. There are many notable features on the SJ 40. The pilothouse’s increased headroom allowed larger windows, more daylight and natural ventilation flooding the below areas. The pilothouse features opening windows and a telescoping table to form a double berth for guest accommodation. The flat panel teak dash has controls for both bow and stern thrustors and a Stidd helm chair. The pilothouse also features a refer and sink enclosed by removable aft glass panels and a sealed door which produces a more civilized living area inside. The aft cockpit is isolated by a tempered door with removable port and starboard polycarbonate panels. This structure produces a quiet ride and keeps the interior cool with an air conditioning system, or warm when the night air is brisk. The 40 has a large cockpit with sun pads. A hatch, flush in the cockpit sole lifts hydraulically to access twin engines and generator protected by a fire extinguishing system. The built-in transom seat tilt forward hydraulically to reveal a RIB that inflates in a few minutes with the flip of a switch. he Bimini Biological Field Station, aka Shark Lab, is a facility, owned by Doctor Samuel Gruber, where shark research is conducted. People, especially students, come from all over the world to study sharks and learn about conservation of marine ecosystems. Volunteering there is indeed a great experience. It all begins with a bunch of classes. The staff teaches volunteers how to drive the skiffs, tie the appropriate knots, use the radios and different field equipment, and handle sharks. Different presentations about the projects carried out at the Shark Lab and about the species biology complete the training to make sure each volunteer understands what he or she is going to be a part of and makes the most out of it. After that, volunteers are all set, and the real fun begins! Volunteers are involved in various activities related to the sharks living around the island. Tracking, for instance, is used to study the lemon sharks’ movements and habitat use in Bi-

Each shark’s transmitter produces a different signal, which makes it possible to individually identify each animal. Photo monitoring is another activity that has to be carried out once a month. In order to assess habitat change over time, volunteers go in the field to take photos at specific GPS points and at different angles. Seining is also used to catch marine organisms, mostly fishes and invertebrates, at specific places to detect a change in prey abundances for the lemon sharks of Bimini, which could be linked to habitat loss due to human activities. chance to take a closer look at different species of sharks, including lemon, black-tip, nurse, and tiger sharks. Once sharks are caught, different measurements are taken and a Casey tag is placed below their dorsal fins, allowing researchers to identify them. Another activity carried out at regular intervals is the deployment and collection of SURs (Submersible Ultrasonic Receivers). These are devices anchored to the seafloor which record sharks passing by thanks to the beeps their transmitters produce. All the information collected can help better understand the species in order to propose appropriate conservation measures. In addition to the activities linked to the Principal Investigator (PI)’s study, other students can come to carry out their own projects. atamarans have gone through many design changes over the past few years. More companies are beginning to cater to the long-range cruiser rather than just for the charter market. One such company is Lagoon, well known for its extensive fleet of roomy sailing catamarans from 35 feet to 67 feet. Lagoon is building bigger cats for the luxury sailing market and introduced the L560 back in June of 2010, then brought it to the 2011 Miami International Boat Show for its U.S. debut. I accepted an invitation to test the yacht at America's largest Lagoon dealer The Catamaran Company, located in Fort Lauderdale. The new Lagoon 560 fills the gap between the Lagoon 620, flagship of the range, and the Lagoon 500 unrivalled 50’ blue water cruising catamaran with more than 130 units delivered in 2010.

Like all Lagoons, the L560 is designed by the Van Peteghem Lauriot Prévost naval architects firm, in association with the Lagoon R&D department. As for the interior, Lagoon has made the 560 its loveliest cat yet, with beautiful Italian designs by the famous Nauta Yachts design office. New to the team, Nauta Yachts Design has created esthetically pleasing, functional, comfortable interior spaces in terms of both ergonomics and style. Steady As She Goes Our test sail out of Miami on a perfect February day with lots of sun and a light breeze was certainly beautiful, but not the best way to put this cat through its paces, but as one of my fellow sailors remarked, “It doesn’t get much better than this!” The 12-15 knot easterlies made for a slow close reach heading out of Miami Beach. With the square-top mainsail (1377 sq.ft) and the furling staysail flying (484 sq.ft), we were able to achieve about 5 knots until we tacked and accelerated. Like most cats, this one prefers a broad reach. The L560 is clearly the kind of sailing yacht that you want to take on a long voyage, knowing full well that wherever your destination is, you’ll get there well-rested and in good time. A Huge Cruising Platform The cruising life conjures up images of tropical sunsets while anchored in crystal clear azure water, soft waves lapping onto sugar sand beaches and of course, a few of your favorite family or friends. 8-10 knots in a good breeze. All sail handling is done from the flybridge where winches are located on either side of the helm. New to the Lagoon fleet, the flybridge separates all the sailing work from the rest of the yacht. From this vantage point you can see sail trim easily through the clear sections of the bimini top and you have excellent visibility for navigating through coral waters. Handling the yacht from the flybridge is truly a breeze as the hydraulic steering was very sensitive. Once sails are set however, the crew can control everything from the salon nav station. This includes a truly innovative touch-screen controller for all the yachts’ systems. With the simple touch of a finger, one can turn on lights, check the batteries, tank levels, gensets, plus control the autopilot and engines. Located on two foldable panels (one for the electrical touch screen controller and one for the optional electronics) that recess into the shelving on each side of the mast post, all the electronics disappears from view once you’re done navigating your course. Getting there fast isn’t as important when you’re sailing in luxurious interior and exterior spaces that the L560 offers. There are so many places to relax - up on the flybridge with the skipper, down in the cockpit aft deck on the settee that spans almost the entire 30-foot beam, on the bow in the “front porch” or on the trampolines. With more than 25 years of experience and more than 2,000 boats sailing the seas, Lagoon continues developing new models and evolving the existing range. As I look for my own perfect cruising catama-

t was a wet and rainy spring day when we first laid eyes on ‘Mascotte’, a 60ft 1904 Bristol pilot cutter. We’d been looking for a vessel to film whales in The Hebrides and a friend told us that ‘Mascotte’ might be available for charter. She seemed perfect for the job. Our adventure started with a spectacular five hour train ride from Glasgow to the village of Arisaig where Mascotte was lying at anchor. A few years before I’d sailed in this area conducting a marine mammal survey for the Hebridean Whale and Dolphin Trust, so I knew there were whales, we just had to find them. Generally, they tend to gather where there’s food, taking advantage of the long summer days, constantly eating to make up for the meager winter months. The majority of the whales found in the inner Hebrides are the Minke whales, but occasionally one finds Orcas, Fin whales and of course lots of dolphins and porpoises. The massive tide currents and shallow water makes it a very interesting place to navigate and sail. Fortunately there’s far less fog than the opposite side of the Atlantic where a cold current meets the warm land in the summer. The Hebrides enjoys the effects of the Gulf Stream so in the summer months, air temperatures are mild. The many islands with their spectacular scenery and few inhabitants, provide endless anchorages and protected coves a real paradise for cruisers.

n día lluvioso de primavera fue cuando vimos por primera vez al S/Y Mascotte, un Bristol pilot Cutter construído en 1904. Desde hace algún tiempo habíamos estado buscando un barco para ir a filmar ballenas en las Islas Hébridas de Escocia y un amigo me había comentado que se podría rentar al velero para este motivo. Nuestra aventura empezó con un viaje espectacular en tren de 5 horas desde Glasgow hasta el puerto de Arisaig donde el Mascotte se encontraba descansando. Hace unos años habíamos navegado en esta zona cuando realizábamos una prospección de mamíferos marinos para la organizacion “Hebridean Whale and Dolphin Trust”. Por esta razón ya teníamos una idea de donde podríamos localizar las ballenas, ahora solo había que encontrarlas. Generalmente las ballenas se congregan donde hay alimento, tomando ventaja de los largos días de verano, comiendo constantemente día y noche para recuperarse después del largo invierno cuando el alimento es muy escaso. Having provisioned for a week, we were ready to leave. The whole expanse of the Hebridean Islands lay, strung as a pearl necklace from North to South for us to explore. We hoisted the sails and pointed the bow south of Rum Island and headed west. It was a beautiful day and the forecast was good. In Scotland, you take the weather one day at a time, if not one hour at a time. The locals say, if you don’t like the weather, just wait a little and it will change. We took turns to keep a watch, look for the whales and sail the boat. The flat sea made it easier to look for spouts, fins or any movement on the surface of the water. It fascinates us to think where they’ve spent the winter. How do they navigate over hundreds or thousands of miles to come back to the same area every year in the summer? Scientists gather large numbers of pictures of their backs and caudal fin for photo ID which forms an important database. Having established that the individual animals return to the same spot every year, one can study population trends, numbers, behavior, and so on. We decided to sail where the wind takes us. Wherever there’s a favorable wind, that’s where we’ll go. Our first day took us to Canna Island, sailing south of Rum and Eigh, admiring the incredible scenery of the islands. There were many sea birds flying about, a clear sign that there’s plenty of food in the water. It’s wonderful to see so much life around you, with clean crisp air, bright skies, full sails and a flat sea. The dark high cliffs of Eigh Island were a strong contrast with the deep green of the vegetation and the blue sea. The afternoon brought high cirrus clouds (mackerel sky), a clear sign of a changing weather. After putting the boat in ship shape, we rowed ashore to have a look around and walked along the track, which followed the gentle curve of the harbor where we saw a rock chapel, the remains of a castle tower, Celtic

Aquí, las islas Hébridas disfrutan del efecto de la corriente del Golfo, lo cual hace que en los meses de verano, las temperaturas del aire y el mar sean más templadas. La mayoría de las Islas con su paisaje espectacular y pocos habitantes proveen de numerosas bahías protegidas y buenos fondeaderos seguros - un verdadero paraíso para el navegante. Zarpamos después de haber aprovisionado el barco para una semana, y nos sentimos emocionados de estar de nuevo en alta mar buscando las elusivas ballenas, con el gran archipiélago de las Hébridas frente a nosotros, el cual se expandía como un collar de perlas de Norte a Sur esperando para ser explorado. Izamos las velas y apuntamos la proa hacia el SW para pasar al sur de la isla de Rum. El día era precioso y el pronóstico era bueno, aunque en Escocia se aconseja tomar el estado del tiempo una vez por día como mínimo. Los locales suelen decir - si no te gusta el estado del tiempo, solo hay que esperar un poco y de seguro cambia!. Ya navegando, nos turnamos para hacer guardias, buscar a las ballenas y navegar el barco. Normalmente buscamos el soplido de la ballena en el horizonte cuando sale a respirar. La mar calma facilita mucho la localización de los soplidos, las aletas dorsales o cualquier movimiento en la superficie del agua. Me fascina imaginarme dónde pasaron el invierno. Cómo es que navegan cientos o miles de millas para regresar a la misma área cada verano? Los científicos recolectan un gran número de fotos del dorso y las aletas dorsales para foto-identificación, lo cual es una importante fuente de datos para su estudio. Habiendo establecido que los mismos individuos regresan al mismo lugar cada año, uno puede estudiar entonces la tendencia de la población, número de individuos, desplazamiento en la zona, etc. Nuestro primer día nos llevó a la isla de Canna,

Years ago we’d attempted to anchor at Loch Scaveig but zero visibility in

We took turns to keep a watch, look for the whales and sail the boat.
a snow blizzard had made landfall impossible. This time we would be lucky. As we closed in on this captivating Loch, in all its glory, the breathtaking cliffs began to rise up before us. It was easy to see why this harbor is classified as one of the most beautiful in Scotland. Lowering the sails, we motored into the tiny cove. Thundering waterfalls were crashing down from the steep cliffs that surrounded us. A small group of seals were basking on the rocks, surrounded by the spectacular scenery. Although the mountains made the area seem vast, the actual cove was small, only leaving space for two boats. The approaching cold front indicated that strong winds were on the way, so we chose our spot with care! After a hearty meal that evening and with happy hearts, we turned in. Even though we hadn’t seen any whales, it had been another wonderful day. We woke at 3:30 am, conscious of strange movement and sounds. As I came on deck, I was alarmed to see the lee shore very close to our stern. I immediately glanced at the depth sounder which confirmed that we had been slowly dragging anchor for the last few hours. Re-anchoring in the middle of the night is never easy, but thankfully the white light of the Scottish summer nights made the task slightly easier. Once we’d re-anchored, Belinda and I clung onto the deck, admiring the thrilling scene. The wind was funneling strongly now, blasting down on us as the cliffs accelerated its force. Anchored in this tiny cove buffeted by roaring winds, waterfalls leaping off the cliffs, rain swirling in sheets, it was a real spectacle. The forecast was increasing winds and gale warning in the inside waters, and a storm warning in the open sea, so everyone was happy to stay put today. As the day advanced, the gusts got more violent as the wind accelerated down the walls of the surrounding mountains. Vicious katabatic winds came down thundering from the steep mountains. We now had Force 8 in the cove. Thanks to the coal stove in the salon, it was a good feeling to be cozy and secure at anchor, when outside was quite so wild. Escocia. Ya fondeados y después de poner el barco en orden, remamos a tierra a explorar un poco. Caminamos a lo largo del camino que rodea el puerto. Una capilla construida de pura roca, los restos de una torre de un antiguo castillo, ruinas célticas, una granja, una mansión y una minúscula oficina de correos. Era una escena verdaderamente cautivante, con los campos floridos, verdes como esmeraldas, y ovejas pastando por doquier. Más adelante y al final del camino llegamos a una hermosa playa blanca. Toda la isla emanaba una sensación de calma y tranquilidad contagiosa. Al día siguiente decidimos dirigirnos hacia el Norte, a la isla de Skye. Conforme nos aproximamos al Lock Scaveig y pudimos verlo más de cerca, con toda su grandeza y sus enormes acantilados, se nos hizo fácil comprender por qué este puerto está considerado el puerto más hermoso de toda Escocia!. Después de bajar las velas entramos a motor a la pequeña ensenada interior. Enormes cascadas descendían con gran fuerza de los escarpados acantilados a todo nuestro alrededor. Un pequeño grupo de focas posadas en las rocas de la entrada observaban con curiosidad nuestro barco. A pesar de que las grandes montañas le daban una sensación de grandeza a todo el lugar, ya dentro de la pequeña ensenada solo había espacio para dos barcos. La aproximación de un frente frío traería vientos más fuertes, por lo que escogimos nuestro lugar con mucho cuidado. Desperté a eso de las 3:30 de la mañana consciente de que el movimiento del barco había cambiado y los sonidos eran diferentes. Conforme subí a cubierta me sorprendí de ver la costa a sotavento tan cerca de nuestra popa. Al mirar la ecosonda confirmé que el fondeo había garreado durante las últimas horas. El viento había aumentado considerablemente y estábamos peligrosamente cerca de la costa. Volvimos a fondear inmediatamente. Conforme el día avanzó, las ráfagas de viento se hicieron más violentas, con el viento incrementando aún más cuando topaba con los escarpados acantilados. Teníamos ya fuerza 8. The two little pilot cutters were like match boxes tossing relentlessly on the churning seas. Up on the cliffs, the wind was even stronger. We saw several wild deer roaming nearby but quite wary of our presence. The scene was hypnotizing, the colors, the sounds, waterfalls, wild water everywhere. Pure magic! In the early morning of the following day, hail, torrents of rain and very strong gusts hurled down our little ship, but ‘Mascotte’ bravely held onto the shoreline and the anchor. All hell was breaking loose. As the front went over us, the sky turned very black and thunderous. As if by magic, the wind suddenly stopped, the sky

cleared and there was total calm. Quite eery after the last 36 hrs! Soon after, there was a change of wind, as expected to the NW. Time to get ready to put to sea. We headed south with a following wind with a very confused sea and squally conditions, but at least the wind was from behind. With all sails hoisted outside the Loch, we soon started to move. It was a thrill to be steering the boat with a following stiff breeze. We decided to sail to the island of Muck further to the south. Muck was very different from the last two harbors where we had been. Heavily agricultural, and a slightly abandoned feel about it. Despite the rain, we were still buzzing with talk of our amazing sail. Next day, the weather improved enormously and the sun was trying to break through. We decided to continue going south to look for whales near Coll. We knew that quite often one finds them N of the island. I had a feeling that we would see whales today. As we approached Coll, from up on the rig, we spotted our first blows in the distant. Everybody jumped on deck. It was a group of Minke whales feeding north of Coll. We headed towards them dropping sail as we approached to slow down the boat; the whales seemed unaware of our presence. The closest whale was a 20 ft minke. The conspicuous dorsal fin of the whale was clearly seen as she came up for air. Once we were close enough, we headed into the wind and stopped the boat. The whale curiously came to us to inspect. With one of us still on the rig, we managed very good views of the whale. She made two passes on us and continued with her feeding affairs. To see them so close is a real treat to the the senses. We hung around for a few hours admiring the

Acumulando las millas muy rápidamente, después de un par de horas estábamos en las cercanías de la isla de Muck y bien al sur de la isla de Skye. Decidimos entrar aquí a pasar la noche. Muck es bastante diferente a las previas dos islas que visitamos, más agrícola y con un general sentimiento de abandono. Al día siguiente las condiciones habían mejorado considerablemente y decidimos continuar nuestro crucero hacia el Sur en búsqueda de ballenas. Nos dirigimos hacia la isla de Coll donde sabía que se avistaban ballenas con frecuencia en su parte Norte. Yo tenía el presentimiento que hoy las veríamos. Conforme nos aproximamos lentamente a Coll, en la distancia detectamos los primeros soplidos de ballenas en el horizonte. Inmediatamente todos se asomaron a cubierta!. Eran varias ballenas Minke y nos dirigimos a vela hacia ellas. Una vez cerca, bajamos el foque y la trinqueta para reducir nuestra velocidad. Las ballenas continuaron alimentándose ajenas a nuestra presencia. A solo unos metros de ellas pusimos la proa hacia el viento, bajamos la mayor y paramos el barco para derivar. Una de las ballenas curiosamente se acercó para inspeccionarnos. Con uno de nosotros montado en lo alto del aparejo, pudimos filmar buenas tomas. Pasó dos veces abajo nuestro y tranquilamente se alejó nadando en la superficie. Ver una ballena tan cerca y tan tranquila en su medio natural es una experiencia que nunca se olvida. Su tamaño enorme y su cuerpo majestuoso resultaron impresionantes!. Nos quedamos a la deriva un par de horas con las ballenas alimentándose en la cercanía. Como se hacía tarde tuvimos que dejarlas y nos dirigimos entonces a la isla de Mull, una de las islas más grandes de las Hébridas. Entramos por el canal del NW de la isla, su Montaña Ben More de 966 metros a estribor. Con buena visibilidad, esta montaña resulta una excelente ayuda para la navegación. Un grupo de toninas pasaron cerca, pero a diferencia de los delfines, estas nunca juegan con la proa de un barco ya que son en realidad bastante tímidas. Una vez en Tobermory, el poblado y puerto principal de la isla de Mull, caminamos por el pueblo para buscar donde comer. Esta sería nuestra primera comida en tierra después de una semana. En realidad era casi el final de nuestra aventura ya que al dia siguiente tendríamos que regresar a Arisaig.
whales, but it was getting late. We headed towards Mull, one of the biggest Islands in the Hebrides. Entering from the NW side of the island, Mount Ben More towers to 966 meters high. With good visibility it is an excellent landmark for navigation. In Tobermory, the main town in Mull, we had our first shore meal in a week. In a way, this marked the end of our fantastic week, as the next day we had to return to Arisaig. With sadness but also very happy we entered the rocky harbor for the last time. What an amazing week it has been, exploring such a wonderful part of the world, and coming acquainted with the Minke whales. We did not see as many whales as I hoped, but at least we saw some. Later I was told that in July and August there were much more whales. Obviously they arrived later this year. A good excuse to come back next year again!
Al día siguiente, con un viento del Sur tenue y la corriente de marea a nuestro favor, enfilamos hacia el Norte. Como teníamos que arribar con marea alta, calculamos nuestra velocidad para llegar a la hora adecuada a la entrada del puerto. Con tristeza pero a la vez muy contentos entramos a puerto. Qué semana de navegación tan fabulosa, explorando estas islas y habiendo visto ballenas tan cerca!. En realidad no vimos tantas como esperábamos, pero para el resto de la tripulación fue la primera vez que las veían y algo que recordarían siempre. Se nota que aún no habían llegado a estas latitudes, en Julio y Agosto es más común encontrarlas, lo cual nos brinda una buena excusa para regresar el año próximo.

ithin a few minutes of being anchored, Melissa already knows to be on the lookout for her husband Will, who wastes not a spare second before he’s glistening across the clear blue waters outside St Lucia aboard his favorite new tender, a Yamaha FX Cruiser SHO personal watercraft. The couple, from Port Charlotte, FL, is half way into a three-week journey throughout the British and US Virgin Islands, and they’ve recently brought the personal watercraft on board as their primary tender. “Jumping from island to island aboard a personal watercraft has been a thrill like no other,” said Will. “I can move quickly, get into areas that other boats can’t, and see things on the water I just haven’t ever been able to see before.” While Will is fully invested into the WaveRunner as an alternative to more traditional dinghy tenders, Melissa is still getting used to the idea. “It’s a little fast for me, but I enjoy riding on the back when he’s driving,” she said. “It’s true that you can get into some pretty secluded areas with it too, so that’s a bonus.” High speed thrills and accessibility weren’t even the reasons for the couple’s switch to a personal watercraft tender. It had more to do with the space and weight savings that a personal watercraft offered compared to other types of tenders. For example their FX Cruiser SHO weighs just over 800 pounds and is only 11 feet long, yet it

It’s our secondary boat, and it should be fun and offer something that our primary boat can’t.” At Riva Yamaha in Pompano Beach, FL, one of the largest personal watercraft retailers in the world, owner Dave Bamdas concurs with the growing trend of personal watercraft as the perfect yacht tender. “The personal watercraft is both a practical tender and fun toy all in one. They are low cost, easy to maintain and a lot of fun to have on longer trips.” It also doesn’t hurt that the couple has a son and daughter in their early 20’s who already think the personal watercraft is as cool as their big boat. “We get to take the WaveRunner out to spots that few people have ever been on one before,” said Michael, 22. “Mostly, it provides us the freedom to get out on our own for a few hours with little hassle.”

Captain Mark Watkins who charters boats out of Fort Lauderdale, FL is also seeing more and more watercraft aboard his yachts. “You need the yacht to get you to where you want to go, but once you’re there, you want to jump on one of the WaveRunners to really experience your surroundings. And it’s hard to ignore the practicality of storing them on the boat. They are very easy to manage compared to many other tenders.” Tenders come in all shapes and sizes, and there’s not one solution that fits everybody. Think about your usage of the tender, and what attributes are important to you. The Yamaha FX Cruiser SHO, for instance, is one of the most stable PWC in the industry that is easy to board. nce again I find myself craning my neck in order to get a better view from the Zodiac as we race along the calm water of the Nicoya Peninsula back to the ship. Ahhhh, there she is! Her graceful hull and tall masts appear suddenly from behind a large rocky islet. This just never gets old. It seems that no matter where she anchors, this glorious ship is always a sight to behold. Our small group has just returned from a hot, but gratifying hike through the Curu Wildlife Reserve, one of the many highlights of cruising in this part of the world. This is an entirely different sort of cruise and one that is still unknown on most cruise lines. I had the pleasure of joining the Star Flyer one of the tall ships of Monaco-based Star Clippers cruises, in Costa Rica. Central America and Panama are two new destinations for this adventure/luxury cruise line. The Star Flyer was built in 1991 as the fulfillment of a lifelong dream by Swedish owner Mikael Krafft, and the first-ever classic sailing vessel that was purpose-built for cruising. She is a modern day

Nuestro itinerario de siete días nos llevó a lo largo de la costa del Pacífico de Costa Rica y hacia el norte a San Juan del Sur, Nicaragua. Las excursiones se enfocaron en paradas en tierras salvajes que incluyeron el Parque Nacional Santa Rosa en Samara y la Reserva de Curú en Puerto Carillo. eling with a group of 40-somethings and another group in their 70’s celebrating some grand occasion. About half the passengers are North Americans and half Europeans. I was pleased to find that most are repeat passengers. The Star Flyer provides pleasantly spacious accommodation and warm teak decks with plenty of space for relaxing. Her beautifully gleaming mahogany and polished brass embrace you all over. You’ll certainly appreciate the friendliness and enthusiasm of the Star Clippers’ hospitable officers and crew, who in my humble opinion are the best in the world! What’s on the Horizon Star Clippers has a new-build on the drawing board, with launch slated for spring 2011. The five-masted sailing vessel will be modeled after France II, which was launched in 1912, and will be the largest sailing ship ever constructed at 7,400 gross tons and 518 feet in length. The new-build will carry 296 passengers at double occupancy and 140 crewmembers. Unlike most other small ships, Star Clippers cruises are reasonably priced with economy cabins (97-150 sq ft) starting at just under $2,000 for a 7-day Costa Rica cruise to around $4,000 for the spacious owner’s cabin. Star Clippers continues to provide amazing landfalls on luxury vessels combined with excellent service, casual elegance, practically all-inclusive rates and interesting, off-the-beaten-path destinations.

YACHT CLUBS & SAILING PROGRAMS | CLUBES NAÚTICOS

here’s a little sailing club, nestled on the shore of the Lake Worth Lagoon in West Palm Beach, that has survived and flourished against all odds of changing times, changing economies, changing interests, but, always retaining its mission of encouraging sailing and promoting fellowship among sailors. Founded in 1966 as a paper club, in 1979 the club was incorporated with its mission statement: “To develop, encourage, and stimulate interest in sailing in the Palm Beach area, to promote fellowship and camaraderie among sailors in the area and visiting sailors, and by all possible means to promote the interests and pleasures of the members.” Club members were very active – no financial worries, lots of fun social activities, topnotch programs, great big boat regattas and cruising in the Bahamas. Two of the most popular regular race-cruising events were the Columbus Day regatta in Miami and the summer regatta in the Abacos. A “Gala Day’ each year included an ocean race, dinghy races, supper, moon light raft-ups and more. The Christmas party each year was potluck, BYOB at a member’s house – no charge!

Club members worked constantly to find a waterfront property to continue to grow their club. In 1995 an Intracoastal waterfront property became available – and after some friendly negotiating the club became the proud owner of a vintage 1920’s main house, plus a two-bedroom cottage, a two-story boathouse, with 2 acres on land and 1 acre under water. The club now has a full-service bar, modern bathrooms, an open-air deck for club and rental events, a beautifully landscaped beach area, small boat storage, floating docks, a boat ramp, outdoor cooking stations and more. A resident junior sailing program was introduced in the late 90’s. Every summer over 400 children are introduced to sailing at PBSC’s. In fact, graduates of the Junior Sailing Program have gone on to success as members of the US Sailing Opti Team and compete internationally. Commodore Matt Woods says, “We recognize that introducing children to sailing will keep sailing alive in the future. There is nothing like the learning experiences that children get from skippering their own boat.”
Each year the club hosts the Florida Laser Masters and Midweek Madness Laser Masters regattas drawing sailors from all over the world to West Palm Beach. The Palm Beach Sailing Club is a favorite destination for many sailors with its proximity to the Atlantic – the club is only a 15-minute sail from the ocean – where boisterous (but warm) winter sailing is enjoyed by all the Canadians! Big boat races are held monthly, culminating in parties and awards in various categories. In addition, the club holds the Washington’s Birthday Regatta (the longest continuing regatta in the United States), the Palm Beach Regatta, Memorial Day Regatta, Labor Day Regatta, Treasure Coast Laser Regatta, Turkey Day Regatta and the Hang-Over Regatta. Informal dinghy racing is held in Lake Worth Lagoon every Wednesday evening during the winter months and on Sunday afternoons during the summer. Continuing the tradition of the early years, programs of interest to sailors are offered monthly. Speakers have included Gary Jobson (an annual speaker for a number of years), Llwyd Ecclestone, Bill Koch, John Biddle, cir-

cumnavigators Bill Kimball and Donna Lange, Olympians Zach Railey, and Morgan Reeser, among countless other sailing notables, as well as many programs offering interesting and educational maritime topics. Social gatherings, while most often revolving around sailing, offer the armchair sailors lots of choices too. Dances and concerts, golf tournaments, bowling outings mix it up with full moon raft-ups, monthly ‘Sun of a Beach’ parties, Sunday brunches, Grill ‘n’ Chill dinners, pig roasts, bon fires, clambakes, wine tastings, Halloween costume parties, ‘Talk Like a Pirate’ parties, and any and every other fun event members and the social committee can come up with. Visiting cruisers are encouraged to anchor in the Lake Worth Lagoon and, for a nominal fee, use the club’s dinghy docks, shower facilities and WI-FI as well as to enjoy social events. The attitude amongst members is that sailors from other ports bring new energy and viewpoints into the club. From the cruiser’s perspective, a safe anchorage with a dinghy dock and friendly facilities in an area where dockage can be steep is a welcome and budget-friendly change. Members take advantage of the old Florida charm and laid-back ambience of this oneof-a-kind club. aving an efficient anchor aboard that offers good penetrating ability and holding power is of vital importance. It is something to consider before leaving port and not in the middle of a family cruise when the weather deteriorates and one’s boat starts dragging towards the rocks. As part of a lengthy test, and after gathering as much info as possible about the different anchor types being manufactured today, we wanted to sea trial this time the Spade, a new generation anchor that has been produced for nearly 10 years, and monitor its behavior and performance compared to a Bruce style claw in everyday anchoring situations, in as many different sea beds we could find in our extensive cruising ground. We have been able to check this anchor’s success under different circumstances and watch it come out of this test unscathed: from the sandy Bahamian banks, to Key Biscayne mud flats and through the Keys coarse sand coral surroundings; and thanks to the area strong currents, stiff trades and the eventual cold front that roars by putting a lot of strain on our ground tackle swinging our boats through

At first glance, the SPADE sits very graciously on the roller providing a tangle free installation and operation is also very easy to disassemble and allows to store it down below while on passage or to move it around. Efficiency of an anchor, we may say, is a function of both penetration and holding power and to ensure good holding, it must first penetrate as quickly and deeply as possible, regardless of the sea bottom type. Surely enough, every time we dropped the hook, I was delighted to see how little imprint the SPADE left on the bottom before completely disappearing into the seabed! Once set, the anchor must not break free if under bad weather conditions. This is a function of anchor stability and the shape and size of the holding surface. Having both the right penetrating ‘chisel like’ angle and the heaviest tip will allow for maximum penetration, even in difficult sea bottoms. After the first trials, it soon became evident that I was facing a superb new generation anchor that always positions itself correctly, turns with the wind and tide without pulling free, and offers good holding/gripping power and weight distribution. I was impressed to see that the SPADE, invariably and thanks to its shape, avoids to embrace large pieces of coral and doesn’t start a non-stop drag through the mooring field. The SPADE anchor adopts the right angle naturally by using weight distribution and an angled ballast chamber. This also positions 50% of its weight over the tip ensuring penetration even in difficult seabeds such as kelp. I have aboard a Bruce-style claw that has proven to be reliable and efficient over the years, and superior to most other anchors I have tried over time. A Bruce is a roll stable anchor that offers good grip and penetrating ability, and reasonable holding power. For a month I have tried the new Spade and compared it to my faithful oldie Bruce-type and I noted that the Spade performed slightly better. There are several factors that make a good anchor and all of them seem to be present in the Spade. It must dig in fast every time; bury deep; give the maximum holding power without dragging; offer a constant resistance to movement and hold despite wind or current shifts. If you happen to be in the lookout for a new anchor I recommend you check this option; you won’t regret it!

Nos ofrecieron una Spade Anchor a la revista YTM para que la probáramos y pronto resultó claro que nos encontrábamos frente a un ancla de última generación que siempre se posiciona en la forma correcta, gira con el viento y la marea sin soltarse y tiene buen poder de agarre/sujeción y distribución de peso. El ancla SPADE adopta naturalmente el ángulo correcto mediante la distribución de peso y una cámara de lastre orientada. A su vez, esto posiciona el 50% del peso sobre la punta para asegurar la penetración del ancla aún en lechos marinos complicados como en el caso de lechos de algas. Llevo a bordo un fondeo del estilo Bruce que ha demostrado ser confiable y eficiente, como así también superior a la mayoría de las anclas que he probado con los años. El ancla Bruce es un ancla de balanceo estable que ofrece buena capacidad de penetración y sujeción y un poder de agarre razonable. Durante un mes, probé la nueva Spade y la comparé con mi vieja y confiable Bruce y noté que la Spade tuvo un desempeño levemente superior. Existen diversos factores que hacen a una buena ancla y todos ellos parecen estar presentes en la Spade. El ancla debe enterrarse rápidamente siempre, debe clavarse profundamente, debe proporcionar el mayor poder de agarre sin garrear, debe brindar resistencia al movimiento permanentemente, debe aferrarse independientemente del viento o cambios en la corriente. Gold Rum Balls
Ingredients: 1 ½ cups confectioners’ sugar | 2 tablespoons cocoa powder | 1/2 teaspoon ground allspice | 1/2 cup Bacardi Gold 2 tablespoons light corn syrup | 1 ¼ cups finely crushed vanilla wafers | 1 ¼ cups finely crushed cinnamon graham crackers 1 cup finely chopped, toasted walnuts Directions: In a large bowl, sift together 1 cup of the confectioners’ sugar, the cocoa powder and allspice. Stir in the rum and corn syrup. Stir in the vanilla wafers and walnuts, and mix well. Place in the refrigerator to firm up slightly, about 30 minutes. (The mixture may appear crumbly and dry; this is O.K.) Place the remaining 1/2 cup confectioners’ sugar in a shallow bowl or dish. Scoop out portions of the chocolate mixture and press into 1-inch balls. Roll again in confectioner’s sugar. Place in an airtight container and separate layers with wax paper. Gets better over time as the flavours mix.
Grilled Caramelized Pineapple-Lemon Skewers
Ingredients: 2 cups Bacardi Limon | 1 cup Lemon Juice | 1 cup simple syrup | Turbinado Sugar | Pineapple | Red Seedless Grapes Directions: Mix Bacardi Limon, lemon juice and simple syrup. Remove outer layer of pineapple and cut into wedges. Place on a skewer with the red grape (decoration, a little color). Soak in rum mix overnight. Once grill is hot, dip the pineapple skewer into the Turbinado Sugar and place on the grill (be careful not to burn up the skewer). Grill until golden brown. The pineapple should be warm and soft, the sugar should be melted and kind of crunchy/sticky.
Coconut Shrimp Tempura
Ingredients: Raw peeled and deveined Shrimp | 1 cup Bacardi Coconut | ½ cup Pina Colada mix | ½ cup Simple Syrup 1 cup Tempura Batter | ½ cup Panko Bread Crumbs | ½ cup Shredded Coconut Directions: Mix Bacardi Coconut, Pina Colada Mix, and Simple Syrup. Put shrimps on a skewer and soak in Bacardi Coconut mix overnight (I fried the shrimp on the skewers). Heat oil or fry daddy to 350. Combine the Panko and Shredded Coconut. Dip Shrimp skewer into Tempura batter and then dip into the Panko/Coconut mix. Fry until Golden Brown, just a few minutes. For a simple dipping sauce mix shredded coconut with Pina Colada mix.

Trufas de Ron
Ingredientes: 1 ½ taza de azúcar impalpable | 2 cucharadas de cacao en polvo | 1/2 cucharadita de pimienta de Jamaica molida 1/2 taza de Bacardi Gold | 2 cucharadas de jarabe de maíz ligero | 1 ¼ taza de obleas de vainilla trituradas 1 ¼ taza de galletitas integrales de canela | 1 taza de nueces tostadas picadas finas Preparación: En un recipiente grande, tamizar una taza del azúcar impalpable, el cacao en polvo y la pimienta de Jamaica. Añadir el ron y el jarabe de maíz sin dejar de revolver. Agregar las obleas de vainilla y las nueces y mezclar bien. Colocar la mezcla en el refrigerador durante aproximadamente 30 minutos para que tome consistencia. (Está bien que la mezcla parezca seca y quebradiza) Colocar la 1/2 taza restante de azúcar impalpable en un recipiente poco profundo o en un plato. Tomar porciones de la mezcla de chocolate y formar bolitas de 2,5 cm. Pasar por azúcar impalpable. Colocar en un recipiente hermético y separar las distintas capas con papel manteca. Se vuelven más sabrosos con el correr de los días, a medida que se asientan los sabores.
Pinchos Caramelizados de Ananá y Limón a la Plancha
Ingredientes: 2 tazas de Bacardi Limón | 1 taza de jugo de limón | 1 taza de almíbar | Azúcar rubia | Ananá | Uvas rojas sin semillas Preparación: Mezclar el Bacardi Limón, el jugo de limón y el almíbar. Quitar la parte exterior del ananá y cortar en tajadas. Colocar en pinchos con la uva roja (como decoración y para dar un toque de color). Marinar en la mezcla de ron durante la noche. Una vez que la plancha esté caliente, pasar los pinchos de ananá por el azúcar rubio y colocar sobre la plancha (hay que tener cuidado de no quemar el pincho). Cocinar hasta que se doren. El ananá debe estar tibio y blando, y el azúcar debe estar derretida y crocante/acaramelada.
Tempura de Langostinos, Coco y Ron
Ingredientes: Langostinos limpios, pelados y crudos | 1 taza de Bacardi Coco | ½ taza de mezcla de piña colada | ½ taza de almíbar 1 taza de pasta de tempura | ½ taza de panko | ½ taza de coco desmenuzado Preparación: Mezclar el Bacardi Coco, la mezcla de piña colada y el almíbar. Colocar los langostinos en un pincho y marinar durante la noche en la mezcla de Bacardi Coco (yo freí los langostinos en los pinchos). Calentar el aceite o la freidora eléctrica a 175ºC. Mezclar el panko y el coco desmenuzado. Pasar los pinchos de langostinos por la mezcla de tempura y luego rebozar en la mezcla de panko y coco. Freír hasta que se doren, sólo unos minutos. Para realizar una salsa simple, mezclar coco desmenuzado con mezcla de piña colada.
