HOW TO MAKE TOFU: A step-by-step guide.


Ingredients:

Vinegar, salt, soybeans

STEP 1: Prepare your soybeans by hulling them from their pods.

STEP 2: Soak your hulled soybeans for 8 - 12 hours.

STEP 3:

Finely grind your soybeans in a blender or food processor.

STEP 4:

Pour your blended beans (soymilk) into a large pot and bring it to a low boil/simmer. Stir to prevent burning.

STEP 5:

Once the soymilk begins to bubble, strain it through a sieve lined with cheesecloth into a different pot.

STEP 6:

Pour your coagulant mixture (2 parts water, 1 part vinegar, and a pinch of salt) into the strained soymilk.

STEP 7:

As soon as the coagulant is poured in, gently incorporate it into the soymilk by stirring the mixture up, down, left, and right. Never stir vigorously, as it could ruin the coagulation.

STEP 8:

Once a separation between coagulated soy curds and water becomes evident, stop stirring.

STEP 9:

Pour the coagulated soy curds into a tofu mold, lined with cheesecloth to strain.

STEP 10:

Once all coagulated soy curds have been poured into the mold, cover the top with excess cheese cloth and apply pressure with the lid of the tofu mold for extra drainage.

STEP 11:

To ensure even pressure while setting, place a heavy object, like a book, on top. Let sit for 30 minutes to 1 hour.
