RECIPES for November & December by

1 egg, 1 lb of mincemeat (with or without nutmeg, cinnamon… depending on your taste. You can also stir in 2 oz of brandy, although this is of course entirely optional – but very tasty).

Guy Fawkes Pumpkin Soup ou can either buy a fresh pumpkin for this soup or use the Y flesh from the Halloween one. Just scope out the flesh BEFORE you put the candle in it!!!!! Keep it in the fridge or freezer in a bag for the few days before November 5th This tasty soup is best served with warm, crusty bread.

Ingredients (Serves 6-8) 1kg fresh pumpkin, peeled and diced 50ml runny honey 75ml olive oil 500g onions, peeled and diced 4 bay leaves 5 sprigs fresh thyme, stalks removed 2 tbsp white wine vinegar 450ml hot vegetable or chicken stock 1⁄2 litre double cream Salt and freshly ground black pepper Crème fraîche to serve Preheat the oven to 180°C, 350°F, Gas 4. Put the pumpkin in a roasting tin and coat with the honey. Bake for 10-12 minutes until the pumpkin has softened and caramelised. Meanwhile, heat the olive oil in a large saucepan, add the onions, bay leaves, fresh thyme and white wine vinegar and fry gently for about 5-6 minutes, or until the onions have softened. Add the roasted pumpkin to the onions, then add the vegetable or chicken stock and bring almost to boiling point. Simmer steadily for about 20 minutes. Remove and discard the bay leaves, then stir in the double cream and bring the soup to the boil. Once the soup has boiled, remove it from the heat and whizz in a blender or food processor. Pass through a sieve or strainer then check and adjust the seasoning if necessary. To serve, reheat the pumpkin soup in a clean pan, then ladle into warm bowls and top with a dollop of crème fraîche. Serve round the bonfire either on its own or with fresh crusty French bread.

Peters’ Perfect Mince Pie 8 oz of softened butter, 1 lb of plain flour, 2 oz of icing sugar, 2 egg yolks,

ut the butter into little cubes, put the flour into a big bowl, and add the butter cubes. Now rub the butter into the flour until you get little crumbs of flour/ butter mix. Then add the icing sugar, and stir in. Add the two egg yolks and 4 tablespoons of really cold water. Knead the dough until it is soft and smooth, and allow to chill for half an hour while you preheat the oven to 200° Celsius. Sprinkle flour on your kitchen table top and spread out two thirds of the dough on it. Cut out 30 rounds (use a special cutter) with a diameter of about 2 ½ inches. Put them into bun tins, and fill them up with the mincemeat. Gather the rest of the dough, spread it out and cut out another 30 rounds, this time with a diameter of 2 inches. Slightly dampen the edges of the circles, put them on top of the pies and seal the edges. Beat the remaining egg, and use it to brush the tops of the mince pies. Bake in the oven for 20 minutes. Serve hot (or cold – they’re delicious both ways). Some Mince Pie Variations You can make some tasty variations on the traditional mince pie. Check out my ideas below: Mincemeat Filo Triangles Buy some ready to roll filo pastry, roll out and cut into squares (approx 10cm or 4' sides). Place a blob of mincemeat the size of a ping pong ball in the middle of each square. Brush melted butter around the edges of the square and fold across to make a triangular shaped parcel (a bit like a samosa). Cook following the instructions given for the filo pastry or until golden. Dust with icing sugar when cool. Meringue Mince Tarts Make the pies as in the traditional recipe above, but without the tops. While they are cooking make some of my quick microwave meringue balls as follows: 10oz icing sugar, sifted 1 egg white Whisk the egg white lightly. Sift the icing sugar into the egg white and whisk until you have a smooth paste. Roll the meringue into small balls and place a few on a microwaveable plate covered with kitchen roll. Microwave on high power for about 1 minute and 20 – 30 seconds. The balls will expand to create crispy meringues. When your mince pies have cooled, place a meringue ball in each one. Sprinkle with cocoa powder or finely grated chocolate as an option. Marzipan Mince 'Starts' Bake mince tarts as normal but again without a pastry top. Roll out some marzipan (or almond paste) and cut into star shapes. Once the tarts have cooled, place a marzipan star on each one. If you have the time (and the inclination), make some holly leaves with the remaining marzipan and some green food colouring and place a sprig in the middle of each star.

Gold, frankincense and myrrh

T

utilised in medicine for generations and is still used today to treat many conditions.

hese words are now part of our seasonal vocabulary, but are the items still around today? Of course, we know gold is, but what about frankincense and myrrh?

Frankincense and Myrrh are aromatic resins gathered from trees and it is said they were once more valuable than gold.

Gold holds a unique place in our lives for its numerous remarkable qualities; no other metal is as useful as gold. It's familiar to all of us as a precious metal used for jewellery and various other objects but did you realise that it was one of the first metals to be discovered by humans? For around 7000 years, almost every culture that has ever existed has revered gold and used it to symbolise wealth, power, beauty, permanence and triumph. From currency to jewellery, medals to medicine, this shining yellow metal has countless uses. Gold never tarnishes or rusts and can be melted and formed into remarkably intricate shapes. It can be pulled into extremely fine wire or hammered into thin sheets. A piece of gold just 5mm in diameter can be beaten into a foil sheet half a meter square and thread can be created that is delicate enough to use for embroidery. Highly efficient and reliable at conducting electricity, gold is used in almost every electronic device from televisions to mobile phones, computers to calculators. It's also used in aerospace projects due to its unfailing competence. Since 700BC gold has been used in dentistry for fillings and crowns because it is hypoallergenic and easy to mould. Gold has also been

Frankincense comes from the Boswellia tree and has been used for millennia for its medicinal properties - to promote healthy digestion and to cure skin problems. It is gathered from the young tree by scoring the bark with a knife, allowing the oozing sap to harden on the trunk before being scraped off into containers. The resin is still used in perfume, aromatherapy and, as the name implies, burned as incense. It is also employed as an insect repellent thereby protecting against mosquito borne diseases such as malaria and dengue fever. Myrrh comes from a tree called Commiphora which grows in North Africa. The resin is collected in a similar way to frankincense. Myrrh was used in traditional medicine as an antiseptic and antiinflammatory treatment. It was also made into incense and perfumes. Until about the 15th century myrrh was used in Egypt as an embalming material in mummies and formed a major part of the funerary rituals of the time. Today myrrh is used as an antiseptic in mouthwashes, toothpaste and cough medicines. Its pleasant scent is used in many modern toiletries and cosmetics as well as incense. An excellent insecticide, myrrh wood is used in building to repel termites and burning it helps keep mosquitoes away. Employed since before Biblical times, gold, frankincense and myrrh have continued to be useful and desirable and still remain in our lives in many ways.

hen you eat out on a regular basis as we do and you get to know the chefs of the pubs and restaurants that you frequent as I generally do, it is a great sign when you see them eating in the same places week in week out. This happens a lot when I eat in The Toad in Rhos on Sea. The food is great value for money and definitely lives up to Peter’s motto of “great restaurant quality in a pub environment” I can only say it as it is.

I do think we are very lucky in this area as we have lots of great places to choose from and if you are wondering where to go for a change then you won’t go far wrong to give the Toad a go. Pete did also say that he would like to thank his suppliers because without their great quality fresh produce they just couldn’t produce the quality end product they do. The Toads suppliers are Mermaids, The Orchard, Conwy Valley Meats, Nichol Hughes of Chester, and William of Flint.

Pete Hammond took over the Toad in Rhos on Sea 6 years ago and has done a fabulous job, he has taken on young vibrant staff and he hasn’t been afraid to let them shine and bring their own personalities out and put forward their own ideas. This is very obvious as you get to know them i.e. his Restaurant Manager Emma Wright, she certainly leads from the front making sure all the staff are comfortable in what they are to do and what is expected of them. Then there is Wayne Roberts, The Head Chef. Since he has been with Peter at the Toad He has won the Best Pub in Wales for Camra and has just been put forward to best pub in the North West for Marsdens of which there is

W

e frequently hear how our metabolism affects us, from making us sluggish and lethargic if it’s too slow, to encouraging weight loss and a feeling of well-being when it’s working properly, but it is often spoken of in the same breath as exercise, which puts many people off trying to improve their metabolic rate. However, you’ll be pleased to know that there are other ways to boost your metabolism; that it isn’t only about fitness regimes. But the chances are, that once you have kick-started your metabolism, your increased energy levels will cry out for some exercise. Fibre: High fibre carbohydrates, being harder to digest than simple carbohydrates, can boost metabolic rates. Also, foods that are high in fibre are usually lower in calories and can also act as nonharmful appetite suppressants. High fibre foods include fruits, vegetables and wholemeal products. However, all things in moderation – don’t go overboard on fibre as it can lead to diarrhoea or other unpleasant side effects if taken to excess. Protein: Protein is essential for the growth and repair of the body’s cells, but most of us eat too little compared to our intake of fats and carbohydrates. Research suggests that 25% of the calories in protein are burned during digestion, which means your metabolism could be boosted by making protein a larger part of your diet. However, the same advice applies as with fibre – be sensible. Too much protein can place stress on vital organs, including kidneys.

Spice up your life : Spicy foods can temporarily boost your metabolic rate. Because your body’s temperature is increased, you burn more calories as your body attempts to regulate itself. Some spices, such as cayenne, are believed to increase the rate at which your body burns fat. As with fibre and protein, don’t overdo things, as too much spice can cause heartburn or even stomach ulcers. Vitamins: Vitamins and minerals perform a number of essential functions. To maximise your metabolism, make sure you take in the recommended daily allowance (RDA) by eating vitamin rich foods, such as fruits, vegetables, eggs, liver and nuts. This will help to keep your metabolic rate at its optimal level. Water: Dehydration can lead to a reduction in your metabolic rate, so do make sure you drink plenty of water each day. Drink more if you are exercising, to replace the body’s water loss. Alcohol: Alcohol has the opposite effect on the body to water, causing dehydration and reducing the metabolic rate. Alcohol in moderation is not likely to do much harm, but excessive consumption can cause vitamin deficiencies (and other non-metabolic problems). Caffeine: Caffeine, like alcohol, is dehydrating and can lower metabolism. If you drink several cups of coffee each day, why not try substituting one of two of them with water? As you can see, it is possible to boost metabolic rates through food choices. If you follow some (or all) of the above tips, you should kick-start your metabolism, burn a few more calories and improve your overall health.

Boxing Day from these various „boxes‟. Whereas gifts between those of equal status were given on or before Christmas Day, the following day was reserved for recognising those less fortunate members of society, whether employees or the generic “poor”. Boxing Day is also St. Stephen's Day, named for the first Christian martyr. His name lives on in the familiar Christmas carol, “Good King Wenceslas”. King Wenceslas was a Catholic king of Bohemia in the 10th century, and may well have started the notion of benevolence to the underprivileged on “the Feast of Stephen” when he helped the poor man struggling through the snow. So Boxing Day may have a very long history indeed.

oxing Day means something different to everyone. For some it‟s a day to spend relaxing at home after the mayhem of Christmas Day; children playing with new toys, adults recovering from an excess of food and drink. Perhaps for you it‟s the day to enjoy one of the many sporting events either on the television or in real life. For others it‟s a day to get out and about in the fresh air, perhaps going for a nice long walk in the countryside. More recently it‟s become a day for some serious „retail therapy‟ – as if the run-up to Christmas Day itself wasn‟t enough – with many queuing outside stores from the early hours of the morning in the hope of grabbing a bargain in the sales. But have you ever wondered about the origins of Boxing Day? Why does it have such an odd name? Many people have pondered this, and the truth appears to be hotly disputed. While it‟s a public holiday in Britain and a handful of Commonwealth nations, other countries don‟t recognise it at all. Boxing Day has nothing to do with disposing of discarded boxes, pugilism or returning unwanted gifts to the shops. Its origins lie in the practise of people giving a present to those who had worked for them during the year. Other theories postulate different beginnings, but the main theme running through them all is that of gifting those less fortunate than ourselves. From the lord of the manor handing out boxes of food, cloth and money to his servants, to the Churches opening their alms boxes to help the destitute, Boxing Day has a long history of charitable donations and seems to take its name

All this seems to have been largely lost nowadays. Our modern day equivalent is the Christmas bonus or Yuletide tips, and Boxing Day is often spent shopping. Consumerism has taken over from charity. What does it mean to you?

CAN YOU HELP - Llandudno League of Friends

L

landudno Hospital

was built on land given by Lord Mostyn. Public subscription from local people raised the money to build and fit out the original building which opened its doors in 1939. There has been 71 years of care in the Community. With the advent of the NHS the building and its facilities were taken over by the new all embracing service, although some local residents still refer to it as „our hospital‟. The National League of Friends was established in 1949 to provide advice and support to the growing number of local leagues which are themselves autonomous. Each league currently pays an annual fee of £275 to National Office and are registered with the Charity Commission. The LLANDUDNO League was formed in 1976 by a small group of local people who wanted to improve facilities for the betterment of the patients. The annual subscription if only £1 or a life subscription of £20, but current annual subscriptions have fallen to only £72 from a high in 2007 of £217 - perhaps some of this latter amount coming as a result of rumours of cut backs at the Llandudno Hospital. HOW DO WE RAISE MONEY? … The quick reply is WITH DIFFICULTY! There are so many worthy causes seeking funds, and whilst the public is very, very generous they themselves have limits on what they can afford to give. Our biggest fund raiser is the Annual Summer Fair, we started a Christmas Fair in 2007. An Annual Street Collection which depends entirely on the weather. Collections occasionally at Asda and Tesco. A grant from Llandudno Town Council, plus legacies and donations. There is sometimes a comment from a passer-by - I am surprised you need to collect - the Hospital is funded by the NHS, which, of course, is only part of the story. SO WHAT DO WE DO WITH THE MONEY? - … Virtually all our meetings are attended by the Hospital Manager,

and she, tells us from time to time of various items of equipment that are needed, and items of what can be described as “patients comforts” e.g. Dynamap Blood Pressure Monitors, Pressure Relieving Mattresses, Tables & Chairs for the Day Centre, Bladder Scanners, ECG Machine, Refurbishment of Aberconwy Ward, £12,000 Held for the Bone Scanner Unit. Additionally every Christmas we have given money to Bodnant (until it closed) and to the Day Hospital, and on Christmas Day the Chairman and other Committee Members visit In Patients on the wards and give them each a small gift. The small Committee works well together, but with two exceptions, we are mainly in our 70‟s and 80‟s and need more helping hands, not necessarily to sit on the Committee but on Street Collection Day and at the Summer and Christmas Fair. We need to raise much more money in the coming year if the recommendations of the recent Project Board are agreed by the Minister and implemented eg if the Outpatients Department is to be modernised and remodelled, it is a fair bet we will be asked for a contribution. If you ever visit the Hospital you will see a Board on the inside right of the main doors detailing some of the gifts and equipment given by Friends over the past years. It would be lovely to see spaces on that Board filled with details of many more gifts and hopefully with help and generosity of the people of Llandudno in terms of not only finance, but their time and talents, we will be able to be fully committed to the support of Llandudno Hospital, its facilities, its patients and its superb Staff. Kia Sportage

journeys, the controls for the stereo and dual zone climate control are easy to operate and the dash layout is fresh and clean. The First Edition comes with aux-in for your iPod, a USB slot for other MP3 players and Bluetooth for handsfree calling. There’s even a reversing camera with screen built in to the rear-view mirror that works wonderfully. On the road, it feels like a big car, but despite this there’s surprisingly little room inside. The driving position is cosy and that sloping roof makes it feel like there’s little headroom.

Meet the Sportage – a Kia that costs £20,777. We can hear that sucking of air through teeth from here – and we agree: Yes, that does sound a bit rich. But before you dismiss it out of hand, you need to know the manufacturer has form here. Take Kia’s recently launched Sortento SUV as an example. The BMW X5-sized model is selling out in the topof-the-range K3 specification – and that costs nearly £30,000. Suddenly the Sportage doesn’t look so over-priced. It helps that the new Sportage is a stunner though – it’s the first model completely penned by former Audi designer Peter Schreyer, and it shows. From every angle the Sportage looks great – the front is purposeful with LED daytime running lights, the side profile slopes with sashes and cuts in the right places and those alloy wheels really are gorgeous. The First Edition Sportage is available in just the one flavour: 2.0-litre CRDi with 4WD. That diesel unit is good for 134bhp and produces 320Nm of torque.

It’s also a little on the loud side – road roar from those big 18-inch alloys is quite high and we’re surprised it rides as hard as it does. You expect a 4x4 compact SUV like this to soak up the bumps more, but it’s actually quite jarring. Still the plus side is handling in the bends – the Sportage doesn’t roll like rivals when pushed. Kia dealers will only have 800 of these First Edition models to sell until sometime in November when the range expands. Incoming then will be a 1.7-litre diesel and 1.6-litre petrol – both of which will be sub -140g/km cars and will cost under £17,000. Kia predicts the 1.7-litre diesel will be the best seller. Despite the price and our minor gripes, we really do like the Sportage – it’ll sell on its looks alone and when the cheaper models arrive, buyers will snap them up. Kia is determined to move the brand further away from its budget roots and closer towards the ‘reasonablypriced premium’ market. And with cars like this new Sportage, few would bet against it. On the road our test car did feel a little wheezy as the revs rose, but the low down grunt was impressive. It hits 60mph in 10.9 seconds with the manual gearbox and will go on to 112mph. That six-speed box is pretty decent compared to rivals – the Peugeot 3008’s shift is like stirring a bowl of soup in comparison – with the Kia set-up precise and pleasantly notchy. Steering is well weighted, but can feel a little devoid of feedback at motorway speeds. We’re not so keen on the pedals though – they’re angled high and have a tendency to make your shin muscles ache. Inside the quality of materials has come on leaps and bounds. The seats are comfortable on long distance

Feeding the Birds

I

f you spent the year attracting birds to your garden by planting accordingly then you need to provide extra sustenance through the winter months to keep them alive while there is little natural food available. The more types of birdfeeders and foods you offer the more varieties of birds you will attract. A bird table will draw in most birds. All you need is a tray raised above the ground surrounded by a rim with a gap at each corner to allow drainage of rainwater. A roof is not necessary and avoid elaborate designs that are impossible to clean. Positioning a bird table is very important. Obviously you’d like to watch from inside the house so ensure that it is visible from a window. From the bird's point of view they need to feel safe and able to feed undisturbed so don’t put the table near heavy cover and fences where cats could lie in wait for them. A small bush or tree nearby is useful so the birds can use this as a lookout point before settling down to their meal. Some birds, such as blackbirds, thrushes and wrens prefer to eat on the ground. Although you can scatter the seed and other food around directly on the ground, for ease of cleaning you can buy low, large ground feeder trays. Hanging feeders attract smaller birds like finches, tits and sparrows. There are many models available including peanut holders and seed feeders. Seed feeders work on a hopper system with seed being dispensed in small dishes at the bottom of the tube. Water is vital to the survival of wild birds during the winter so provide fresh water and ensure it doesn't freeze over. There's a huge range of commercial bird foods available and what you choose depends on your budget and the birds you would like to attract. However household scraps and ‘ordinary’ ingredients can be used too. Options include uncooked porridge oats, dried fruits that have been soaked overnight, old bread, cooked rice (without added salt), any breakfast cereal and surprisingly, tinned dog or cat food - meat only though. Blackbirds and thrushes particularly like this as it provides a substitute for earthworms. Remember many birds are fruit eaters so bruised apples and pears can be placed around the garden for them to enjoy. There are a few things that you must never give to birds: milk, salt and desiccated coconut can all kill. Also, never use anything that is sold in a plastic net as these can be extremely dangerous with a bird’s feet easily becoming trapped causing serious injury. Remove the net before putting the contents out. If the food turns mouldy, it means you’re putting out too much for the birds to eat, so reduce the quantities and clear away any stale food immediately. Another drawback of feeding too much is that rats and mice will soon sniff this out and you will have unwanted nocturnal visitors. Unlike humans, birds need lots of saturated fats such as lard in order to keep their tiny bodies warm during the winter chill. Make your own ‘bird puddings’ using household ingredients. Mix lots of seeds and other ingredients mentioned above with enough gently melted lard to bind them together. Pour into coconut shells and hang up as they are, or create moulds from yoghurt pots with string inserted. Leave to solidify before turning out with the string embedded in it ready to hang. Once you establish a feeding routine and place, try not to change it as the birds will come to rely on you for their winter food. Supple-

mentary feeding during the winter ensures the birds will be at their peak condition ready for breeding in the spring. Plus you get the benefit of watching beautifully coloured birds near your warm room.

Traditional Christmas Plants

C

ertain plants have always been associated with Christmas, to the extent that traditional carols are dedicated to them; "The Holly and The Ivy" and "Deck the Halls" are familiar to most of us. Modern Yuletide songs recognising mistletoe are also common, but did you know someone has written a ditty about another favourite Christmas plant, the poinsettia? "Percy the puny poinsettia Is hanging his bloom in dismay If they had just kept him wetta He'd be a houseplant today" Poor Percy! He suffered the fate most poinsettia's face at this time of year. They look so stunning and colourful for the first few weeks then fade fast, drop their leaves and end up on the compost heap. But with a little care, you can keep this beautiful plant for a long time, even encouraging it to flower again in time for next Christmas. It's usually central heating that causes the rapid failure of this plant. Keep the plant in a well lit area, away from draughts and at a temperature of between 13°C and 20°C, much cooler than most rooms. Move it to a cooler place at night, such as an unheated room, not outside. Overwatering and under watering will also cause your poinsettia to die. Wait until the top half of the compost is dry before watering thoroughly and never let the pot sit in water. In early spring, cut your plant back so each stem is about 10cm long. Keep the compost almost dry and place the plant in a cool, shady place. Early in May, start watering and repot the plant and new shoots should soon appear. Trim off all but four or five strong stems and treat as a normal houseplant for the next few months, feeding with a general fertiliser every month. Some people may be allergic to the sap, so take precautions by wearing gloves. Now comes the interesting part: poinsettias only flower when there is less than 12 hours of daylight, so you need to pamper this plant in order to encourage a repeat flowering in time for Christmas. Starting in September, the plant needs to be kept in total darkness for 14 hours a day. Either cover the entire plant with a black bin liner, or keep it in a cool, dark cupboard from early evening until the next morning when it should then be moved into the light again. Keep this up for eight weeks then bring it out and treat the plant as normal. Hopefully this will bring you a wonderful display of colour once again. We mustn't forget the other traditional Christmas plants though. Holly is a fabulous small tree for shady spots in your garden which will provide you and the birds with plentiful berries if you choose the right plant. There are male and female hollies; and it's the female that produces berries. To ensure berries, you need two or more trees, or choose a self-pollinating species which will produce berries without a male nearby. Your garden centre will be able to assist your choice and most plants are well labelled. Mistletoe is another matter altogether! This fabulous plant grows on a number of native British trees, such as apple, poplar, willow and hawthorn. If you are lucky enough to possess one of these trees you could try your hand at growing your own mistletoe.
