INGREDIENTS Pork 1½ lbs (680 g) pork tenderloin 2 very thin slices prosciutto (0.5 oz/17 g) 3 to 4 leaves fresh sage 2 tbsp each: chopped fresh basil and fresh parsley ¼ tsp fennel seeds 1 clove garlic, pressed or minced Rub 1 tbsp extra-virgin olive oil + extra for basting 2 tsp chopped fresh rosemary 1 tsp grated orange zest ½ tsp each: sea salt and garlic powder ¼ tsp crushed red pepper flakes freshly ground cracked black pepper to taste Balsamic reduction sauce see recipe, page 37
DIRECTIONS Preheat oven to 400°F. Make a deep cut lengthwise in the centre of tenderloin, making sure not to cut through it, so it opens like a book. Layer the prosciutto on the centre cut, overlapping and folding where necessary. Scatter fresh herbs, fennel seeds and garlic over entire length of bottom half. Secure by tying the roast with butcher’s twine at 2-inch (5-cm) intervals. In a small bowl, combine all rub ingredients, from olive oil to black pepper. Work in the rub all over the roast. Spray a large non-stick skillet with cooking spray and set on high heat. Add pork tenderloin and sear for 2 to 3 minutes each side, turning to ensure all sides are browned. Transfer to a greased baking pan.

Pour ¼ cup water in hot skillet to lift pan drippings and pour them at the bottom of baking pan. Roast loin for 20 to 25 minutes or until internal temperature reaches 145°F. Add more water if liquid is drying up. Remove roast from oven, tent with foil and let rest for 5 minutes before removing string. Slice into ¾-inch (2-cm) round pieces. Serve with Balsamic Reduction Sauce – just a little
drizzle packs a whole lot of flavour. MAKE AHEAD Stuff the roast a day ahead, cover tightly with plastic wrap and refrigerate. Add the rub to the tenderloin just before roasting the next day. Prepare the balsamic reduction days ahead – it keeps for at least two to three weeks in the refrigerator.

DIRECTIONS In a small pot, combine vinegar, maple syrup, garlic and rosemary. Bring to a gentle boil, then reduce heat to medium-low. Simmer for 40 minutes, stirring occasionally, until mixture is reduced by half and mixture turns syrupy. Remove garlic and rosemary and drizzle lightly over meat roasts, grilled vegetables or salad. Stores for 2 to 3 weeks in the refrigerator. VARIATION Try this reduction over fruit, such as fresh strawberries, ripe cantaloupe or glazed figs.

INGREDIENTS 1 tub (1 lb/500 g) 1% reduced-sodium cottage cheese ¼ cup light (5%) cream 2 large eggs 2 tbsp granulated sugar 1 tub (1 lb/500 g) low-fat 2% vanilla Greek yogurt 1½ cups strongly brewed coffee 2 tbsp coffee-flavoured liqueur, such as Tia Maria or Kahlúa 33 to 36 lady finger cookies (savoiardi) 2 cups fresh or frozen raspberries 2 tsp unsweetened cocoa powder 1 square (1 oz/28 g) dark chocolate for grating and shavings
yogurt just until well blended. In a medium bowl, add warm coffee and liqueur. To assemble, use a glass trifle or round bowl. Begin the first layer by dipping lady finger cookies, one at a time, in coffee just until fully wet. Let coffee drip before placing cookies along the sides and at the bottom of trifle dish, cutting cookies to fit in between spaces. Scatter one-third of raspberries over cookies. Scoop out onethird of cream mixture and spread evenly over cookies/ raspberries. Repeat layers two more times. On the final layer, sift cocoa powder and grate chocolate evenly over cream. Garnish with remaining raspberries. Refrigerate for 2 to 4 hours before serving.

In a stand mixer fitted with a paddle attachment, beat eggs and sugar on medium-high speed until light and fluffy. Stir in the creamed cottage cheese mixture and

The Naccarato family held its annual fundraiser for the Robbie Foundation at Copper Creek Golf Course. The event raised more than $100,000 for SickKids hospital and the Make a Wish Foundation.

OUR CONTRIBUTION TO THE COMMUNITY
TMS seamlessly combines a flagship Montessori program for students from age 18 months to Grade 6, and an International Baccalaureate (IB) Programme for students from Grade 7 to Grade 12. The program focuses on more than mastering basic skills and knowledge, the students develop fully in academics, arts, athletics and citizenship. Starting at 18 months of age, TMS helps students to help themselves. Students develop confidence and higher level thinking skills necessary to make the most of whatever challenge they encounter. In TMS grades 7 through 12, individual student learning is globally benchmarked against other students in the IB program.
At all ages, our students learn to take action to make positive differences in the school, the community and the world. The Bayview and Elgin Mills Campuses are located in Richmond Hill. TMS is a member of CAIS (Canadian Accredited Independent Schools) and accredited by IBO (International Baccalaureate Organization), CIS (Conference of Independent Schools) and CCMA (Canadian Council of Montessori Administrators).

Richview Manor residents were treated to a evening of 1920s flavour with dancing and costumes. Thanksgiving and fall was the theme at Richview Manor as residents and staff enjoyed carving pumpkins and making crafts.
Celebrations and good food were par for the course at the official opening of the local Smiles First Dentistry, one of many in the GTA.

Mayor Steve Pellegrini, councillors and concerned citizens were on hand for Nobleton Tim Horton’s Smile Cookie fundraiser cheque presentation.
Good times were had at the grand opening celebrations of Nobleton Medical plaza, featuring Guardian Drugs, Nobleton walk-in clinic, Physiomed and an eye care centre. Mayor Steve Pellegrini was on hand to launch the new plaza.
