May we have this dance? Regardless of whether you're from the farthest reaches of the globe, or from just down the road, you're very welcome to York this month. With the temperature steadily climbing higher, and the sun shining for longer and longer each day, you'll be able to explore and experience even more of this awesome city. One to thing to note: if you are visiting us from foreign lands and have very little experience of British folk, you've picked the

best month to visit. May is usually the month when the shackles of the winter are finally cast off for good, and we all go about in a happy mood, commenting on how lovely the weather is, stating that it has “turned out nice, eh?” If you stay as long as June, however, you may notice a change in mood. Visitors from warmer climes might see that a rise in temperature above what you consider 'fair' causes the average Yorkite to sweat heavily, whinge constantly, and regularly

utter “by 'eck, it's 'ot!” Don't worry, this is perfectly normal behaviour. But... May it is, and this issue of What's On has everything you need to have a cracking time in York. recipe of the month

Courgette & Asparagus Risotto It may be available all year round but right now It’s prime asparagus season and we’re determined to make the most of it. P.s this recipe is gluten free, enjoy! SERVES 6

Ingredients

• 6 tbsp extra virgin olive oil •450 g medium courgettes, thinly sliced • 400g fresh asparagus spears, tough stalks removed, cut 2.5 cm lengths • 1 medium onion, finely chopped • 2 garlic cloves, finely chopped • 1.2 litres chicken or vegetable stock • 400g risotto rice (Arborio or Carnaroli) • Zest and juice of 1 lemon • 1 tbsp finely sliced mint • 1 tbsp finely sliced basil • 50 g pine nuts, toasted • Salt and freshly ground black pepper • Finely grated Parmesan, to serve

Method

1. Heat the olive oil in a large

frying pan and quickly sauté the courgettes, seasoned with salt and pepper, until just tender. Transfer to a bowl with a slotted spoon. If needed, add another 1–2 tablespoons of olive oil to the pan, and sauté the asparagus until just tender. Add to the sautéed courgette and set aside.

2. Put the onion in the same pan, season with salt and pepper, and gently fry until it is soft but not coloured. Add the chopped garlic

and fry for a further 30 seconds.

3. Meanwhile, heat the stock to a

simmer in a separate, large pan and turn the heat to low.

4. Stir the rice into the onion

mixture over a low heat until all the grains are coated and the rice becomes shiny and translucent.

5. Start to add the simmering

stock, a ladleful at a time. Allow each ladle of stock to be absorbed before adding the next. Once all the stock has been added (this will

take 20–30 minutes), test the rice. It should be tender with bite.

6. Stir in the lemon zest and juice,

followed by the mint, basil and pine nuts.

7. Taste and adjust the seasoning, if needed, then stir the sautéed courgette and asparagus into the rice.

8. To serve, spoon into warm

bowls and serve with freshly grated Parmesan.
