PUT THE WOW INTO 2018 Christmas and New Year are joyously festive times which cheer up those cold, dark winter days. But there is just one downside – we are all tempted to eat and drink too much and, despite our best endeavours, most of us get a shock when we eventually pluck up the courage to check out our weight on the bathroom scales. In a strange way, it’s good that Christmas comes just before New Year because new year is a time when we all resolve to make all sorts of changes (for the better!) to our lives. There’s no point in dwelling on the food and drink follies committed in December, and perhaps it’s better to regard those delicious seasonal treats as something that were thoroughly enjoyable, but the rest of the year will see you exercising iron willpower as you attempt to lose those excess pounds. Embarking on a slimming regime by yourself is hard, especially if you are still preparing ‘normal meals’ for the rest of the family. That’s why you need the help of a professional – and you’re fortunate to have a nutrition and fitness expert in this area. Lynda Loakes has some 25 years’ experience in running classes and has helped thousands of her class members to achieve their goals of losing weight and, just as importantly, improving fitness. Don’t be put off, though, if your skills in the kitchen leave a little to be desired because Lynda’s recipes are simple and easy to follow, and time spent in preparation and cooking is kept to a minimum. Even better, the meals taste superb! Lynda is very aware of the challenge that losing weight presents. She has been there herself so is keen to offer plenty of support to others. Fully trained in all aspects of nutrition, she helps class members to achieve their goals in a friendly and caring way. Each class starts with a private, one-to-one weigh-in, followed by a motivational talk. The exercises that follow cater for all ages and abilities and include high intensity fat-burning, muscle strengthening and overall posture and fitness improvement. Each week’s class is different, and Lynda has a wonderful sense of humour which creates plenty of fun and laughter. Lynda also runs one-hour long fitness-pilates courses. Pilates exercises are not strenuous and are suitable for all age groups and fitness abilities. They aim to enhance flexibility, build strength and develop a strong body core which improves balance and co-ordination. So why not go along to one of the Work Out With Lynda classes. INGREDIENTS 225g cold butter, Diced 350g plain flour 100g golden caster sugar 280g mincemeat 1 small egg icing sugar to sust
METHOD 1. To make the pastry, rub 225g cold, diced butter into 350g plain flour, then mix in 100g golden caster sugar and a pinch of salt. Combine the pastry into a ball – don’t add liquid – and knead it briefly. The dough will be fairly firm, like shortbread dough.You can use the dough immediately, or chill for later. 2. Preheat the oven to 200C/gas 6/fan 180C. Line 18 holes of two 12-hole patty tins, by pressing small walnut-sized balls of pastry into each hole. Spoon 280g mincemeat into the pies. 3. Take slightly smaller balls of pastry than before and pat them out between your hands to make round lids, big enough to cover the pies. Top the pies with their lids, pressing the edges gently together to seal – you don’t need to seal them with milk or egg as they will stick on their own. (The pies may now be frozen for up to 1 month). 4. Beat 1 small egg and brush the tops of the pies. Bake for 20 minutes until golden. Leave to cool in the tin for 5 minutes, then remove to a wire rack. To serve, lightly dust with icing sugar. They will keep for 3 to 4 days in an airtight container.
