Editor's Letter ummer can be a frantic time. Holidays are looming and with them that sense of so much work to do but so little time left to do it in. Added to that the tyranny of ‘bikini season’ and the worry of children at home from school with no one to keep an eye on them and suddenly the idea of taking it easy over summer seems like an impossible one. he question is, will they sing? The tag line, ‘more than jam and Jerusalem’, leaves, in the inclusion of that one little word, ‘more’, a whole lot of room for singing. And, as I sit in the East Dulwich Tavern on a sunny Wednesday evening, nursing a glass of house white ahead of my first East Dulwich WI meeting, I couldn’t think of a more mortifying way to meet new people. For the uninitiated, WI meetings traditionally open with a rousing rendition of the hymn Jerusalem, which according to the WI’s website ‘marks its links with the wider women’s movement, and its commitment to improving the conditions of rural life.’ Problematically, I don’t know the words and I can’t sing; unless squawking while feeling incredibly

the fourth wave of feminism has galvanized new generations into online action through blogs such as The F Word, so these new WIs have attracted members who are keen to support their communities and who have been seduced by the gentle entertainments of shows such as The Great British Bake Off. ‘We don’t do anything by halves,’ explains Anna Gryce, who has been President of the East Dulwich WI for the past four years. ‘You could just run fairly straightforward meetings and talks, which are quite traditional and which definitely have their place, but we tend to go for big events so that we can involve local businesses.’ The evening that I join them, Anna and the committee have set up a sewing skills event in conjunction with local bespoke-fashion shop, The White Room SE4. ‘We’re expecting this one to be popular,’ explains Ciaran Dance, architect by day, head of membership at the WI by night. ‘We have to cap the events at sixty people, or it would just be too much.’ And it seems that she’s not exaggerating; by 7.15 the room is all but full (they’re a punctual lot, these WI-ers) with women who greet each other like old friends. From the outset there is a buzz of chatter and activity (though before the sewing skills intro gets going this is mainly centred on the buying and consumption of wine) and the group
self-conscious counts as singing? Part of the ‘new wave’ of WIs, which have opened in the last ten years, the East Dulwich branch has proven to be incredibly popular with current membership at 95, a waiting list that stretches into 2016 and the possibility of a Peckham branch on the horizon, to deal with demand. Much as

ranges in age from ladies in their twenties to some in their seventies. Most members that I speak to were drawn to the group for the same reason: to meet new people. And as a group, they do seem particularly sociable. Equally though many members, when they first heard about the WI were put off for the same reasons: they thought it would be too old fashioned, too staid, too much singing… ‘I wasn’t sure,’ member, Tricia Parry tells me. ‘I mean, the WI the way I knew it wasn’t my thing at all! But as you can see this is just fun, and the events are always interesting and really practical.’ Past events have included bread making with Brick House Bakery, wine tasting care of ToastED and a wellbeing taster evening that included advice from Push Studios and products from Dr. Boo. ‘We have one talk during the year, we do a history walk, we have an annual picnic at the Dulwich Croquet Club which is always really popular,’ explains Anna. And the singing? The bit I was so dreading? ‘No singing! God, no!’ she laughs. I breathe a sigh of relief.

hen Nurse Joanna Swarbrick walked through the gates of Southwark Military Hospital on April 3 1918, WW1 was in its final months. Battle raged on foreign soil and Miss Swarbrick, a 19-year-old volunteer nurse, was experiencing the fallout on the home front. A month after her arrival in the capital, the last German night time airplane raid caused devastation to London’s civilian population, but it was the allied forces that were to be Miss Swarbrick’s focus. She was one of 38,000 (mainly women) on Voluntary Aid Detachment (VAD) in hospitals around the country, providing invaluable bedside aid to wounded men from home regiments and also to those from as far afield as Canada and Australia. Between 1915 and 1919 the (as it was then known) Southwark Union Infirmary, which is situated on East Dulwich Road, where Dulwich Community Hospital now stands, was transformed into a wartime sickbay and renamed Southwark Military Hospital. It was temporarily crammed with 820 beds, with most of its existing patients moved to surrounding hospitals. In total 14,000 soldiers
entered its doors. 119 men were to die there and a memorial to them now stands in the hospital grounds – the first of its kind. Little is known about Nurse Swarbrick, only that she was born in Blackpool and obtained her certificates in home nursing and first aid through the Order of St John’s. Having worked previously in the 1st Southern General Hospital in Birmingham, which was also a military hospital, she took up her new post south of the river for one year before a transfer to Shepherd’s Bush. But it is the autograph books that she asked her patients to sign that now give us a lasting insight into the role of VAD nurses, attitudes towards them, and the men whom they nursed. Contained in the two leatherbound books, handed to the Imperial War Museum by her daughter in 1979, are pictures, poems, cartoons and comments that lay bare their experiences of a brutal war. A revealing poem signed simply by D Sheahan, 13th Battalion, Australian Forces details daily life in the hospital:
Here in D6 where men in sticks Think of awful curses, While limbs unsound, are cleaned and bound, And massaged by the nurses, There lives a tart: whose figure smart, Whose ways so sweet and clever, Makes me her slave, till the silent grave Will close on me forever. Another, a simple verse written by A.H. Ball of the 4th Division, asks Nurse Swarbrick not to forget him when he leaves her care:
Though oceans wide between us roll And distance be our lot, Though I may never see the morn, “Nurse” please forget-me-not. And perhaps most poignantly, Private H.J. Bowtell, of the 19th Battalion penned the following poem on the precariousness of life:
The world spins on if you live or die, The stars shine out if you laugh or cry, The sun will rise though you’ve said goodbye, So wherefore worry and wherefore fret, The man in the scythe hasn’t called you yet.

According to British Red Cross archivist Jemma Lee, VAD nurses stationed at home mainly helped with non-medical tasks, providing aid to already stretched doctors and nurses. ‘There is a lingering image of ‘butterfly’ VADs in starched white pinafores, which is understandable if you consider that their role was often to look after patients who were less seriously wounded and convalescing. A great deal of effort, for example, went into creating recreational facilities for patients, like painting and organising concerts, which might sound frivolous but was an important part of the rehabilitation of men who had

endured the horrors of the frontline,’ she explains. As well as working with convalescing soldiers, VADs also helped out in kitchens, offices, and linen rooms and on occasion were sent directly to the battlefields. ‘Our records suggest that the VADs were hugely respected for their devotion, including by the trained nurses who supervised them,’ adds Ms Lee. And although many of the letters and memoirs that we hold suggest [these] women were very stoic, they are not without allusion to the realities of war, whether [that be] helping to treat convoys of severely wounded men arriving with appalling mutilations or sleeping in tents in the freezing cold.’ Stephen Walton, senior curator at the Imperial War Museum says autograph albums such as the ones Miss Swarbrick collected often contain much more than just autographs and are perhaps a rather neglected source for the social history of wartime. ‘Whether Nurse Swarbrick had an eye on history we don’t know, but the notebooks she kept and that were handed to the IWM by her daughter provide a valuable insight into the men Miss Swarbrick nursed, their attitudes towards life and death, and their reflections on the brutality of war.’ Despite the best efforts of Absolutely Magazine the copyright holder of the material featured could not be established in this instance.

ICON ALEXANDRA JONES DISCUSSES BRITISHNESS AND BRANDS WITH BERMONDSEY-BASED DESIGNER ZANDRA RHODES
he first time that Zandra Rhodes and I meet it seems to be for quite idiosyncratic reasons: Southwold Pier is re-launching after a re-furb. To celebrate their new look, they are stocking a curated collection of Zandra Rhodes accessories and books. So, the PR company ask, would I like to meet her? At the pier? Well, yes, what a jolly way to spend a morning, I think to myself, at the seaside, in the company of a British fashion icon. The British seaside is having something of a resurgence and after visiting Southwold’s pretty pier, with it’s arcade full of homemade games (so far removed from the strobelit, sticky carpets of usual seaside fare) and trio of gourmet restaurants, it is easy to see why. What I come to realise, though, over the course of our chat, is that when it comes to Rhodes, there are no idiosyncrasies. It is all planned and thought out, it is all business. That’s not to say, of course, that she isn’t warm and funny. She comes across as rather sweet, actually, very attentive and keen to answer my questions. It is obvious, however, this she is savvy in a way that only someone who has been running her own brand for over thirty years could be. Rhodes came to prominence while spearheading the new-wave fashion scene of the seventies, working steadily through the punk era. In 1977, she designed a pink and black jersey collection with holes and beaded safety pins that earned her the moniker ‘Princess of Punk’, a moniker that has stuck with her ever since. That same collection was on display last year at the Metropolitan Museum of Art as part of the PUNK: Chaos to Couture exhibition. She lives the punk ethos in so much as her hair is shocking pink and her designs continue to bear out the abstract, anti-establishment feel of the punk movement. And yet, antiestablishment isn’t quite the right way to describe Rhodes. For one, she is a renowned royalist. After winning the prestigious title of Designer of the Year back in 1972, in

1974 she was made Royal Designer for Industry. She has continued to design for the royals – as well as a coterie of stars and celebs – ever since. She has even been quoted as saying that she would love to be made a dame, that it is one of her great aspirations. Rather than a rebel, then, I would say that she is a quintessential Brit: an eccentric, maybe and a patriot, definitely. ‘It’s nice to be stocked in places that aren’t London and I have so many fantastic memories of the British seaside,’ she explains to me. ‘Exactly like this, but a different coastline! We went to Seasalter, I’m not sure if you know it? But it’s really only the edge of the Thames, before you get down to the Isle of Sheppey. We had a bungalow at Seasalter and then a caravan at Leysdown and we’d stay in a boarding house in Ramsgate. They’re all the ones on the Kent coast and they seemed a long way away, though now I realise they’re actually only twenty minutes by car.’
Her collection at Southwold Pier, then, is one that aligns her brand with a very quintessential Britishness, a Britain of pastel beach huts, fish and chips and End of the Pier Shows. And Rhodes is someone who knows the power of a good collaboration, having worked with everyone from MAC to M&S. ‘I do everything I can to keep the brand image exactly as it should be,’ she explains. ‘It is a proudly British brand with a proudly British heritage. Selling in places like Southwold does a lot to keep us connected to that heritage.’ With such a vast back catalogue, though, how does she stay so focused? It can’t be easy to keep your fingers in so many pies? ‘We hope that the different pies are really all the same big pie!’ she says, simply. ‘I’m a textile designer, so if I design printed cushions, kaftans, shawls or scarves, they all fit in with the aesthetic. It’s all one Zandra Rhodes look.’ Rhodes has devoted much of her time in recent years to the setting-up and running of London’s Fashion and Textile Museum. To what degree does she think institutions such as this further the public’s understanding of fashion? ‘The

It is all planned and thought out, it is all business” whole idea is that textile designers are the Cinderellas of the industry,’ she replies. ‘People make an amazing printed dress or a Chanel suit from a lovely weave, but no one thinks of who is behind the textiles! We want to expand on and raise the profile of the textile business.’ As for her own business, Rhodes will always have high ambitions. ‘In 100 years time, I would like someone to discover me. Like Chanel, I mean after all her brand had died. Scent PATCHOULI IS MAKING A COMEBACK FOR 2014. HERE, ABSOLUTELY COLUMNIST LAWRENCE ROULLIER WHITE TELLS US WHY THIS IS PERFECT TIME TO REVISIT THE SUMMER OF LOVE
T
he sun may shine but it will probably rain, you may fall in love but you will probably fall in the mud. Whatever happens you can be sure of one thing this festival season – the unmistakable notes of patchouli will be present. Now synonymous with any outdoor music event, patchouli was first appropriated by the hippie counter-culturalists of the 1960’s. It was the scent of The Summer of Love associated with spiritual and sexual enlightenment and radical free-thinking. Patchouli was the redolent symbol of a social revolution, when the sun set on existing social mores and the world awoke to the dawn of a new consciousness: an age advocating the pursuit of pleasure and the power of the people. An era in which prejudice had no place, wars would be ended and peace would be given a chance. Sadly this liberal thinking left little time for liberal showering and, in the minds of many, patchouli was destined to be indelibly linked with other less attractive aromas. As such, patchouli as a perfume

ingredient has provoked many an upturned nose. Whether you love it or hate it, the history of patchouli and perfumery are so intricately, and literally, intertwined you will never be able to escape it. Patchouli leaves were used by Chinese merchants in the 18th century to protect their precious cargos of exotic silks from damage by moths along the Silk Road trade route to Europe via India. The fragrance of patchouli leaves, on fabrics affordable to only the European elite, became recognised as the scent of success. If you were powerful and Parisian you smelled of patchouli. Later the fragrance was added to scarves and shawls manufactured in France as a marketing ploy to increase sales of domestically produced products. Thus patchouli became a staple ingredient in perfumery and, because of its unique chemical structure which makes it a natural fixative, it has remained one ever since. With its characteristic combination of woody notes and brighter
green accords it has become an indispensible element of a whole genre of ‘chypre’ fragrances. Patchouli-prominent fragrances may still be an acquired taste but do not be put off by its inclusion, you will find patchouli hovering around the base or middle of some of the world’s most successful scents and today it is undergoing a revolution of its own; patchouli is once again causing quite a stir. May 2014’s Fragrance Foundation winner, Byredo, has devised a sublime way to wear scents this summer in the form of the company’s brand new roll-on perfume oils, which last longer in heat and are super portable. Byredo’s Oud Immortel (2) has a rich, woody, patchouli heart with sunshine top notes of limoncello, wrapped in a gauze of mysterious incense. Eleganza Luminosa (3) – Elegant Light – from Linari, is
patchouli at its best; buoyed with brilliant, bright bergamot and bolstered with a bouquet of freesia, rose, jasmine and iris. Quite lovely. 1969 from Histoires de Parfums (1) uniquely blends dark notes of coffee, chocolate and patchouli with a smear of sweet fruit. One can imagine being outside a Parisia café in that very year; you sip on an early morning coffee, bite on a croissant with confiture de pêches, and watch a gaggle of giggling revellers crash past your table on their way home, a trail of patchouli left clinging to the chill air in their wake. Psychédélique (4) from Jovoy also recalls patchouli’s more recent past with its heady and intoxicating psychedelic swirl of orange, lemon, lime, rose, amber and inky patchouli. CUCUMBER MAKI CRAB ROLLS ice-free sushi? We love sashimi (that’s just the raw fish), but you need to be able to access high-quality and super-fresh fish – something that most of us can’t really do. So, our Cucumber Maki Crab Rolls are a great faux option. They are perfect for entertaining and there’s no rolling technique needed either – it’s actually a pretty easy dish despite its creativity! This is a good way of using up leftover poached or smoked salmon. It’s also a nice way of eating the expensive treat of some crab as a little goes a long way once you’ve mixed it with the other ingredients. Avocado is a must and so is a mayonnaise. An old-school melon baller will give you an easier job and a neater finish.

• tamari • wasabi paste (or 1 tbsp tamari mixed into the paste with ½tbsp water) • a few slices of pickled ginger 1 Drain any liquid from the crab and put it in a bowl with the avocado, spring onion, mayonnaise, lime juice and a pinch of salt. Mix very carefully to avoid crushing the ingredients and then stir in the chilli, to taste. 2 Wash the cucumber and remove one end. Cut the cucumber into even 2.5 cm thick slices. 3 Use a small knife to carefully cut out the flesh from the centre of the cucumber, leaving just a few millimetres of flesh all the way around. We found the neatest way was to use a melon baller to scoop the seeds out, leaving the bottom of the cucumber intact. 4 Distribute the crabmeat mixture between each cucumber roll. Finish with a sprinkle of sesame seeds and serve with the tamari, wasabi or pickled ginger.

The Main
COURGETTE AND AUBERGINE CURRY A simple one-pot supper that is warming for the soul. Red split lentils provide a quick-and-easy creamy base without the need to soak them. The coconut and ginger have incredible immune-boosting properties and, as usual, we like to sneak nourishing homemade broth into all our cooking. With this fragrant curry, the bone broth is purely for the nutritional value, so you can afford to skip it if you don’t have any to hand (but please don’t be tempted to use stock cubes).
Serves 4 as a one-pot meal or 6 if served with a side dish
INGREDIENTS • 200 g bar of creamed coconut (use the oil for frying) or 2 tins of full-fat coconut milk plus 2 tbsp coconut oil or ghee, for frying • 2 large onions, diced • 2 thumb-sized pieces of fresh root ginger (about 80 g) – unpeeled if organic – grated • 6 large garlic cloves, diced • 200 g red split lentils, rinsed (no need to soak these) • ½−1 litre bone broth or water (use a little less if you are using coconut milk and depending on how thick or saucy you want your curry to be) • 1 large aubergine, chopped into 1.5 cm pieces • 4 large tomatoes, quartered • 2 large courgettes, diced • grated zest and juice of 1 unwaxed lime or lemon (avoid the bitter white pith) • 2½–3 tsp tamari or 2 large pinches of sea salt
• 1 tsp maple syrup • a handful of roughly chopped fresh herbs, such as coriander, mint or basil (Thai basil if you can get it)
METHOD 1 In a large wide pan, dry fry the peanuts or cashews for a few minutes to toast them, roughly chop and then set aside. 2 In the same pan, heat the coconut oil over a medium heat and fry the onion, ginger and garlic for 10 minutes until soft (don’t let the onion and garlic go brown).
Add the lentils, the roughly chopped coconut solids or coconut milk, and then most of the bone broth or water (a bit less if you’re using the coconut milk) and stir well. This should be enough liquid for the coconut solids to dissolve, but keep an eye on the liquid levels so that the lentils don’t stick and burn at the bottom. 3
4 After 6 minutes of cooking over a mediumhigh heat, add the aubergine and stir. 5 After a further 10 minutes, add the tomato, courgette, lime or lemon zest and the tamari or salt. Add more bone broth or water if you think your curry needs it. 6 After 6 minutes, turn off the heat and add the lime or lemon juice, the maple syrup and fresh herbs, then stir and taste. You might need a little more tamari or salt or lime or lemon juice to add sourness. 7 Top with the nuts and serve with watercress or your chosen side dish. If we’re having guests round,we like to serve our curry with some little bowls of extras (nuts, herbs, lemon or lime wedges and a bowl of tamari or sea salt) so everyone can help themselves to extra toppings, a handful of peanuts or cashew nuts.

The Dessert
PEA AND MINT ICE CREAM OR LOLLIES WITH CHOCOLATE A freshing treat for the summer that’s very easy to make. Instead of sugar and pasteurised milk, this ice cream uses coconut milk, probiotic yoghurt and plenty of sweet little peas. The frozen peas blend with the rest of the ingredients to make a smooth ice cream base in minutes. If you have a high-powered blender, then you can throw some fresh mint in there too − although you’ll always need to add a dash of mint extract as well, to get that super refreshing taste. We pour the mix into our ice cream maker and, an hour later, the ice cream is ready to go. For those without an ice cream maker, try our trick using an ice cube mould or half the recipe to make these cute lollies.
Makes 900ml ice cream
FOR THE PEA AND MINT ICE CREAM BASE • 350 g frozen petits pois • 1 tin of full-fat coconut milk • 150 g full-fat probiotic natural yoghurt • 4 tbsp raw runny honey • 1 tsp peppermint extract or 50g fresh mint leaves and a little peppermint extract too • a pinch of sea salt • a handful of cacao nibs, optional
FOR THE CHOCOLATE SAUCE • 50 g cacao powder • 80 g raw runny honey • 1 tbsp coconut oil
METHOD 1 To make the pea and mint ice cream base, blend all the ingredients except for the cacao nibs together until very smooth. 2 To make the chocolate sauce, measure out all the ingredients into a jug or small bowl and stir together, along with 9 tbsp hot water. 3 To make ice cream, place the pea and mint base into an ice cream maker and, following the manufacturer’s instructions, churn until you have ice cream. When it is ready, scoop the ice cream into bowls and sprinkle with cacao nibs and drizzle with chocolate sauce to serve. If you don’t have an ice cream maker, pour the pea and mint mixture into ice cube moulds and freeze. Pulse the frozen cubes in a food processor for a soft serve ice cream. 4 To make 12 lollies, make up half the quantity of pea and mint base and add about 4 teaspoons into the bottom of tall shot glasses or lolly moulds and pop into the freezer. After 20 minutes or more, insert a lolly stick into the pea mixture and pour some of the chocolate sauce around it. Repeat with the pea and mint base and finish with the chocolate sauce, freezing for 10 minutes between layers. Freeze the finished lollies for a further 2 hours, then enjoy. 5 Alternatively, mix the halfquantity of pea and mint base for the lollies with the chocolate sauce and pour into shot glasses. Insert the lolly sticks and freeze for at least 2 hours before serving.

As a company we’ve been going for two years now... It started with a festive market, which came about because Anna and I wanted to do something together. I’ve always been involved in the arts and have managed various projects like festivals and gallery shows on a freelance basis. Anna was becoming a chef and we realised that we wouldn’t be getting the opportunity to work together any more (that’s how we’d become friends). We’ve got such a big network around Peckham and there’s so much going on that we thought, ‘God, it would be fun to do something...’ Eventually we came up with the idea of a Christmas market. We’d been chatting to Nicky and Guy for ages, as all four of us have space at The Dye House. When we came up with the name Pexmas we were so excited, it’s really cheesy! It was a very sweet event, really schmaltzy but really fun... And it had style! Anna would be really cross if I didn’t say it was schmaltzy with style because it was so important to us that it was curated. While we were giving
people opportunities to showcase their work in the place that they live, it was all about quality. It was about creating something that felt like one cohesive event. Pexmas was so much fun that we decided to set up a company to do this on a regular basis... We quickly realised that we didn’t want to run a weekly or monthly market but rather to develop programmes that were multifaceted. Between the four of us we bring so much experience from the arts, education, film, architecture, cooking, food, literature and we know Peckham really well. What’s fantastic about what we do now is that we can bring all those elements together. We’re like a connection agency in the wider community.

coming and one artist will be doing perfomances in Khan’s Bargain. We’ve even got a pedal-powered smoothie maker! People will come and get a map from the central hub; on it we’ve included various shops, restaurants and cultural venues along the top of Peckham High Street, up and down Bellenden Road, up and down Rye Lane and up and down Choumert Road. It kind of creates a square around the central hub. There’ll be a tasting tour... People will be able to pay at the central hub, then they can go around and get some fantastic little morsels to
eat. Some places will even be making special products for the festival. The Cinnamon Tree Bakery, for example, are doing festival biscuits. It’s about getting people from East Dulwich to walk up to Peckham and getting people from Peckham to walk down to East Dulwich. It’s about creating those new pathways. We also mentor and sponsor a young person. We work with Livity who are a youth engagement agency. Young people pitch to us an idea for a market stall, and we work with them to bring their product to market. We also work to raise awareness and
funds for the Southwark Foodbank, as well as for Kids Company. We were asked by the Council to bid for the Nunhead Food and Culture Festival and we won it... So it will expand from just being a food market, like last year, into a full cultural festival. We’ll include lots of people and lots of different connections; as long as it’s local and brilliant, it’ll probably go in! We know there’ll be plenty to choose from.

Manuel’s Lucie Pearce heads down the hill to Manuel’s
A
s an SE19 local who resides on Gipsy Hill I normally turn right and go up the hill to The Triangle. This, as it turns out, has been to my detriment. Everyone in the area is well aware of the many restaurants and pubs in the central hub that serve delicious and multi-cultural cuisine. Yet Gipsy Hill, Crystal Palace’s lesser know neighbour, has its own small but perfectly-formed hub. Tucked away in this sleepy corner is Manuel’s. Easy to miss and quiet on entrance, Manuel’s is a relatively new restaurant and bar with a sizeable entertaining area downstairs. The décor is understated, with a few pictures dotted around on a yellow wall but with beautiful mosaic tiling giving the restaurant real character. We were greeted by Manuel himself, a young man with traditional manners. Attentive and knowledgeable, he made
easy conversation with diners throughout the night. We ate from the à la carte menu, the main focus of which was seafood and meat. To start we ordered the seafood soup and the scallops with lemon sauce and garlic spinach. The soup was incredibly flavoursome, with a generous amount of mussels, prawns and clams. A supremely fishy starter and if you like shellfish then I’d greatly recommend this dish, it was my favourite of the night. The scallops were also well presented, tender and tasty though they did include a healthy dose of garlic. No one will want to kiss you after but depending on who you’ve taken with you, that might be a small price to pay.
Service was not rushed, so we managed to help ourselves to a few servings of bread between courses; worth mentioning is the delicious walnut loaf. We came onto the mains and continued with the fish theme. The linguine with lobster again included a very generous amount of shellfish and was cooked in a rich tomato sauce. The seafood risotto was packed with incredibly fresh clams, scallops and mussels, and didn’t disappoint. Creamy and filling, it struck a perfect balance between the salty-sweet seafood and the rich, unctuous rice. The cake tray held an array of appetising treats, but after our first two courses it would have been impossible to even attempt. The homemade limoncello, however, sounded too good to refuse and indeed turned out to be a perfect end to the meal: sweet but tart enough to be refreshing. The low-key atmosphere is a blessing that shouldn’t be passed up, making for a particularly relaxing evening. And if the quality of the food and waiters’ charm continue as we experienced, Manuel’s won’t be low-key for much longer. So next time you’re keen for an evening out, I would recommend heading down to Gipsy Hill and seeking out Manuel’s, while you can still get a table.

FOR THE BATTER • 165ml lager • 80g self raising flour • Pinch of Cayenne pepper • Dash of soy sauce • Salt and ground white pepper. Pour the beer into a large mixing bowl and gently whisk in the flour until you get a smooth and silky consistency (you may need to add more or less flour). Add Cayenne, soy sauce and seasoning. Leave in the fridge till ready to use. This can be made an hour before needed.

• 200g white crab meat • 6 plum tomatoes, seeded and diced • 1 medium red onion, finely chopped • 2 tbsp white balsamic vinegar • 6 tbsp extra virgin olive oil • Juice and grated zest of ½ lemon • Salt and freshly ground black pepper To make the dressing, mix the oil, vinegar, zest and lemon juice together in a bowl. Add the tomatoes, red onion and white crab meat. Mix well and season. Leave to one side. Pour 6cm oil into medium-sized heavy-bottomed saucepan or use a deep-fat fryer. Heat to 160°C. If using a saucepan, please be careful as the oil will be very hot. Carefully dust the flowers in flour. Dip them in batter and fry until golden brown. Remove them with tongs and place onto kitchen paper to soak up excess oil. Season. To serve, spread the crab dressing in a large serving dish, placing the courgette flowers on top. ulti-tasking is one of the buzzwords of 21st century life. These days we always seem to be doing more than one thing at once – watching TV, checking emails, cooking dinner – and it’s the same for our homes. Increasingly rooms have to perform several different functions to accommodate the whole family, none more so than the sitting room. In my work as a professional organiser, helping people to make the most of their homes, this is the room I often find has to be TV/ music room, kids’ playroom and home office all rolled into one. Consequently it fails to fulfil one of its most important roles: as a place to relax. If that all sounds horribly familiar, don’t worry. With a little decluttering and some clever storage, you can have a room which works for you not just as a space for kids, or a space to work in, but as an area to relax in. First of all, step back and assess your family’s needs. You may not be able to fulfil your dream of a stylish oasis of calm all the time, but there are ways to reconcile the competing demands which the sitting room faces. So if, for example, the kids always end up playing there despite your best efforts to confine toys to bedrooms, then accept this, but on your terms. Choose some appropriate storage and then limit the number of toys allowed

downstairs at one time to whatever fits in it – toys can always be rotated as favourites come and go. That way, rather than ending the day hauling things back upstairs or spending your evening surrounded by a sea of coloured plastic, you’ll quickly be able to clear things away. There are plenty of storage units available specifically for toys but in a sitting room I think it’s better to go for something that doesn’t look like it belongs in a kindergarten so that you can easily transform the room back into an adult environment. In the evening you also want to forget the day job, but if your home office is also your sitting room that can be difficult unless you find ways to ensure that work isn’t always staring you in the face. Start by confining your work paraphernalia to one part of the room and then look for ways to hide it from sight. Desks with doors, such as this Neptune Chichester Deluxe Workstation from John Lewis (1, £2550, johnlewis.com), are great for concealing computers and files. A simple folding screen also works well. I like the selection from bespoke carpenters Jali (jali. co.uk), as they can be painted to match your room. TVs inevitably play a major role in today’s sitting rooms and with them comes everything from digi boxes to

DVD collections and, of course, the inevitable mass of tangled cables. Finding something that can neatly house all of this will immediately improve the look of your room. Or, if you prefer to hide the TV screen, Dormy House do a range of armoires specifically designed to hide away unsightly sets (thedormyhouse.com). Technology can be your friend when you’re trying to keep life simple. Loading old CDs onto MP3 players and creating electronic photo albums instead of printing hard copies can make a big difference. E-readers help too, but our attachment to books is strong. Few people are ready to give up completely the pleasure of reading from actual books and many find it difficult to part with them so book storage is an issue I come across frequently, particularly in the sitting room. If you need to pare down your collection, these are the key questions to ask yourself about each book. Do I love it? Do I need it? Is it valuable or of sentimental value? Is it a duplicate? Will I read it again? When? Am I sure? Once you’ve decided which books you’re going to keep, think about how

to store them. Freestanding bookcases come in all shapes and sizes. An original print is made when an artist works a design onto a surface, for example carving into a wooden block or using a sharp needle to etch onto a metal plate. The original image is then directly printed from the block, plate or screen, usually onto paper by means of a press or by hand. This process creates a series of prints known as ‘impressions’ which are then individually signed and numbered by the artist.
Limited edition original prints are produced in restricted numbers and this scarcity of supply can make them sought-after by collectors. Look carefully at the bottom of a print and you’ll notice two figures, the left one specifies the edition number and the right one shows how many prints are in the edition. For example a figure of 9/50 means it is the ninth print of a limited edition of 50 prints. A smaller edition is often worth more than a larger edition and artist proofs (the first few prints to be made) are seen as something of a collector’s item.
PRINTMAKING PROCESSES Visit any large printmaking studio and you’ll be stunned by the range of specialist equipment. Just as a painter has the freedom to choose between watercolour and oil paint, a printmaker can select from a whole range of different techniques. From silkscreens and engravings to linocuts and lithographs, taking the time to learn about different printmaking processes allow you to connect with your purchases that much more.

Throughout the process high squeaks can be heard and a sensation of mild pinpricks is felt, which, although not painful, isn’t necessarily relaxing – more of what you’d call ‘an active treatment’. merging from a £10m facelift, this charming 17th-century farmhouse hotel now packs an impressive spa punch. Two years in the planning, the groundwork has paid off: everything from the deeply comfy massage beds to the posttreatment sorbets shout ‘indulgence’. At the heart of the spa lies a generous relaxing-areacum-café dominated by a towering funnelshaped fireplace. Chess sets and cashmere throws add to the informal atmosphere, while a selection of ‘posh nibbles’ from the pastry chef ensure spa-goers don’t go hungry. Sticking to a British theme, treatments are by Temple Spa (a family-owned English brand), and for a touch of glamour, there’s an ultra-girly Veuve Clicquot nail bar. Therapists are trained by Pure Massage (so expect the best) and for something a bit different, there’s Rasul Mud therapy or an enriching ‘Mediterranean marinade’ facial available. One of the signature treatments is the ‘Silent Night Lavender Sleep’, which consists of two and a half hours of massage, scrubbing and foot rubbing, certain to settle even the most jittery of souls. I roadtested the lavender sauna, but it didn’t have quite as much lavender in the air as I would have liked. The salt-infused steam room and outdoor hydrotherapy pool, on the other hand, were fantastic. If you’re staying the night, expect to be spoilt rotten. Rooms are homely yet hi-tech – a tablet allows you to order fresh milk at the touch of a button – whilst in the communal areas, original flagstone floors, wood paneling and exposed stone hearths come together to create a most welcoming rural retreat. My favourite spot was the chic blue lounge just off the lobby – the perfect blend of Soho House meets mummy’s living room.

Overall, Ockenden Manor’s yoga retreats are well conceived and hugely enjoyable. You’re certain to come away feeling pampered and clearer headed. Our only quibble is the scheduled 9pm dinner times, which made rising for early morning yoga a bit of a challenge. ax intrantibus. Salus exeuntibus. reads the motto engraved above the entrance at Grayshott – ‘Peace on arrival. Health on departure.’ It’s a statement which really does ring true. Secluded and peaceful, Grayshott lies in the heart of the Surrey countryside, a million miles away from the hustle and bustle of London, yet just an hour’s drive down the A3. A historic country house that was once the home of Victorian Poet Laureate Lord Alfred Tennyson, Grayshott has been showered with awards over the fifty years it has been in business. Admittedly the rooms feel a bit dated, but we can pretty much guarantee you’ll spend little enough time indoors; you only have to look out of the window to yearn to be outside. Set amongst 47 acres of beautiful gardens and adjoining over 700 acres of National Trust woodland, it’s a haven for walkers and cyclists – bikes are available to hire from reception. The spa itself has a real health focus and their celebrated 7 Day Regime centres on the digestive system, getting back in shape so that your body can restore, renew and cleanse. But all the usual high-end treatments are also on offer, as well as a few off-beat options too. One of which is the Equilibrium Therapy, a slow, rhythmic massage of the body, face and scalp designed to release negative emotions and give relaxation and peace. Highly recommended

Long after your patience for being wrapped, plucked and primped has worn thin, the beauty of Linthwaite and the views of the surrounding countryside from the riverside terrace will keep you entertained. It attracts groups and caters well to them, but you might feel a little outnumbered if you go, as I did, for a quiet weekend with just one other person. The treatments themselves do make up for that: the therapists are bright, friendly and adept at creating a serene environment. The ‘beauty’ treatments were more accomplished than the massages: we sampled the Exotic Lime and Ginger Salt Glow and felt suitably squeaky-clean afterwards. The massages didn’t have quite the same impact; billed as ‘deep tissue’, mine felt a little limp. Titanic is perfect for a stylish, robe swaddled, hen weekend. School fees planning Funding school fees is one of the biggest financial commitments a family can make. As a result, it can be a source of considerable concern for some parents.

et even though the cost to send a child to an independent school has risen. A recent Census shows rise in pupil numbers to 508,601 in 2013 (ISC Census 2013).
Parents therefore continue to recognise the value that independent education can offer – but it isn’t getting any cheaper. Private school fees have increased by 3.9% in the last year (ISC Census 2013). Latest figures from the ISC show that the average fee at an ISC school was £4,765 per term. (Source: Independent Schools Council Facts and Figures 2013). Providing a good education can be one of the most valuable gifts parents or grandparents can give to children. While the financial implications can be daunting, the key to affording school fees is to plan as early as you can. Saving soon after a child is born gives ten years to build a fund for when they go to secondary school. Generally, parents looking to fund school fees fall into three categories – those who want to invest a lump sum, those who would like to spread the cost of fees, or parents wanting to set up a regular savings scheme to provide funds to cover future fees. There are several schemes available to help make school fees more affordable, and
an experienced wealth manager can draw up a bespoke investment plan that can be both tax efficient and flexible. For example, you could consider using your annual taxefficient ISA allowance. By investing the maximum amount permitted in an ISA and selecting funds run by full-time professional investment managers, a tidy sum could be accumulated in the space of ten years. For grandparents, trust* planning can be a useful tool if they wish to make provision for school fees and achieve Inheritance Tax (IHT) benefits at the same time. If they make regular payments from their income without reducing their lifestyle, then these gifts are not counted as part of their estate for inheritance tax purposes. Another option is to give a lump sum for their grandchildren’s education and provided they survive for a further seven years, the gift is free of IHT. Grandparents might also want to consider other solutions, such as life assurance, to help increase the funds created for grandchildren. This can be very useful when there is more than one child you wish to provide for.
With interest rates still at an all time low, and the country only slowly coming out of recession, it is important to make your investments work as hard for you as possible.

MIND HOW YOU GO AN ANCIENT BUDDHIST MEDITATION TECHNIQUE IS BEING PROMOTED IN OUR CLASSROOMS TO HELP STRESSED-OUT PUPILS, REPORTS AMANDA CONSTANCE

indfulness is having its moment. From stressedout City execs to A-listers, from US Marines to MPs, it now seems that everyone is practising this ancient art that has its roots in Buddhist meditation. So much so, that an all-party parliamentary group on mindfulness was launched earlier this year. Increasing numbers of schools, particularly those in the private sector, are already looking at mindfulness classes, which focus on teaching students meditation and breathing techniques. The reason for its popularity is clear; mindfulness has been scientifically proven as a treatment for anxiety and depression. Schools are turning to it as a useful tool, at a time when there is an alarming rise in pupils suffering from significant mental health disorders. Anthony Seldon, the pioneering head of Wellington College, is a passionate advocate of mindfulness. Seldon has introduced two-minute ‘stillness periods’ for pupils at
Wellington, while teenagers in Years 9 and 10 have a timetabled weekly mindfulness session. From September, both Wellington College and Wellington Academy will be committing to mindfulness, with teachers being offered an eight-week course developed by Professor Mark Williams of Oxford University. ‘With the decline in religious assemblies, the chance to be quiet and reflect during the school day is being lost, at a time when it is needed more than ever as young people experience increasingly frantic pressure in their lives,’ says Seldon. ‘This is severely damaging to the mental health of young people. In mindfulness, we have a powerful, scientifically-proven approach that can make a real difference, and which can be learnt by young people whilst still at school.’ So just what is it? Essentially, mindfulness is a meditation technique – a way of calming and connecting yourself by responding to your immediate surroundings and shutting out negative thoughts. At its most basic, it involves being still, closing
your eyes and paying attention to your breath. When your mind wanders, you bring it back. It is about learning to pay attention to the now, not worrying about what has happened, or might happen. Of course, mindfulness has been around for millennia but it has only been rigorously researched in the past few decades. It was the work of an American doctor, Jon KabatZinn, in the 1970s that pioneered the use of mediation to help patients with chronic pain. This prompted others to research the wider effects of mindfulness on depression; it has since been proven to be more effective than anti-depressants in treating bouts of recurring depression and, since 2004, mindfulness has been recommended as a treatment on the NHS. The idea of taking mindfulness into schools is even more recent and has been led in the UK by the Mindfulness in Schools Project (MiSP), which was founded by two teachers, in 2007. Richard Burnett is a teacher and housemaster at Tonbridge School, the first UK school to include mindfulness in its curriculum for all 13-14-year-olds, while his co-founder, Chris Cullen, was head of pastoral care at Hampton School in London. He now teaches mindfulness at Kid’s Company and the Guildhall School of Music & Drama. Burnett and Cullen had experienced the benefits of mindfulness themselves and wanted to bring it into the classroom. The result is a nine-lesson course called .b [stet] pronounced ‘dot-be’ – shorthand for ‘Stop, Breathe and Be!’ which is already being taken up by many of our schools. Independent schools in London which run the .b programme include Francis Holland School, South Hampstead High School, Hampton School, Queen’s Gate and Thomas’s London Day School, in Battersea. Laws told MPs: “We are very interested in promoting this and we certainly think that it is an area that merits consideration based on the evidence we’ve seen to date.” The MiSP claims the benefits of .b include ‘being able to concentrate and listen better, get on better with others, feel happier and calmer and cope better with stress and anxiety.’ Indeed, cofounder Chris Cullen claims that ‘after a mindfulness course, the structure and function of our brains are different’. Seldon puts it even more simply: ‘Every school in Britain could begin this journey back to sanity and self-control by introducing two minutes of stillness every day.’

I
f anyone had told me when I was young that I’d grow up to be an estate agent, I’d have put them right. I was destined for the stage: I played Alice at 7, Dorothy at 11, Liesel at 16 and Ophelia before leaving school. I was headed for Rada: Elizabeth Taylor, ‘eat your heart out’, I wanted her job. Somewhat of a de-tour then that I found myself at uni, first for a BA, then an MBA, then I fell into a job selling bonds in the city and was a Director at the age of 32. I enjoyed the environment and the day-to-day hustle, but the job paid hideously more than I felt was justified for the work that I did and I felt guilty (I know you don’t hear that very often). I didn’t create anything, I didn’t risk anything of my own and I didn’t go home every night feeling good about myself. At 33 I resigned and went to Drama School in search of a real challenge. I found a job that paid far less than I was worth (indeed I often worked for free and occasionally even paid to work!) and was a jobbing actress for 5 years. What the City had taught me however was a passion for sales. So when I stumbled headlong into a romance with James, soon after I began a love affair with the agency he’d just bought and put my sales skills back to work. You see James didn’t own just any estate agency, he’d bought Roy Brooks. Roy Brooks was a legend in his lifetime. He told the truth, whole truth, and even the unwholesome truth about the properties he advertised for sale. You might have heard of some of them: Filthy old house – fashionable chelsea – preserved as of architectural interest – God knows why. Providing you have enough patience…. The horrible patch of weed, refuse infected earth behind would make a lovely gdn – maybe. A gift at £8,550. Here on our own patch: £3,995 freehold. Antiquarian proudly offers his ghastly Peckham house. Almost innocent of plumbing, no bthrm – bodily ablutions confined to a couple of sinks and a canal at the bottom of the garden… His honest wit was not confined to the faithful
representation of houses. This particular ad went on to predict social trends that you will agree were mightily accurate… As the artists have already moved in to Peckham it is only a matter of time before they are followed by the fringe professions, Stage, Telly and Advertising -…then a dump like this will be worth well over £10,000. Move quickly. The characters for whom he sold property were regularly teased and parodied: Preserving a discreet silence about the great toes she has cut, fashionable lady chiropodist enthuses about her vic dble–frnted house… Or completely unknown famous racing drivers’s really beautifully restored residence… From 1950 until his death in 1971 his funny and outrageous advertisements graced the classified columns of both the Sunday Times and the Observer. He was loved by all the a-listers of his age, “Roy Brooks was to estate dealing what Gerard Hoffnung was to music – unique and irreplaceable” Humphrey Burton. So when the opportunity to revive and run Roy Brooks came along, I threw all my eggs into this veritable. Growth has been organic. We started with 5 people and are now 10. am pleased to report that all indications are that on balance the London Property Market has cooled. A welcome move from an unsustainable rising market to a buoyant one with positive growth where by vendors should see a greater choice of properties to buy which will assist in chain building and freeing up transactions.
