Editor's Letter ummer. It’s been a long time coming, hasn’t it? And even now every bright and beautiful day seems to be followed by two bleak washouts. So if not the weather (never the weather), what can we be sure of this summer? Well, first up: festivals. I can’t imagine a summer without that mingling of music, food and frivolity. And that doesn’t have to mean Glastonbury. South East London this summer will be abuzz with festival activity from a community-led grassroots festival in Crystal Palace, to a celebration of the arts in Camberwell. Massive Attack are set to play in Blackheath and Brockwell Park will be transformed into a family-friendly farmyard fête for the Lambeth Country Show. See our festivals guide on pg.16 for all the details. Festivals aside, what else can we be sure of? The races, and specifically, our outfits for them. Whether you’re heading to Ascot in June or Glorious Goodwood in July, you’ll

need a showstopper. Turn to pg.25 for this season’s top Ladies Day looks. All that festival-ing and racing is thirsty work, so we’ve also put a spotlight on the artisan beer trend currently sweeping South East London (because nothing says ‘summer’ better than a cold half of beer in the garden at home). So maybe the question we should be asking is, who cares about the weather? We’ll be getting out in South East London regardless, armed with sanguinity, and yes, just in case, an umbrella.

From 4 June Dulwich Picture Gallery Ben and Winifred Nicholson were at the forefront of the Modern British movement and produced some of the most memorable works of the period. lan Johnson MP will be appearing at All Saints Church, in an event coordinated by Dulwich Books to discuss his autobiography This Boy. Heralded by critics as a ‘beautifully observed, humorous, moving, uplifting’ work, This Boy provides an insight into the harrowing poverty of the politician’s upbringing in the late 50s and early 60s; from the absent father and two room tenement in North Kensington in his early years, to the death of his heroic mother Lily when he was just 13. OBJECT IN FOCUS Until 22 June Horniman Museum This exhibition seeks to illustrate Tibetan art and beliefs in one of the last areas where Tibetan Buddhism still flourishes – Ladakh. The figures on display were collected by British Envoy Thomas Douglas Forsyth in 1870 and depict Tibetan Buddhist deities, disciples, magicians and monks. These will be showcased alongside photographs taken in Ladakh in 2012 by Dr Louise Bacon and Dr Ken Teague, on display in Gallery Square. 100 London Road, SE23; horniman.ac.uk

ollowing six months as the Nina Stewart Artists-in-Residence, Julia Crabtree and William Evans present an unfurling installation, which continues their examination of the relationship between the body and the screen. At the film’s opening, Mark (Finney) is now a successful and wealthy architect and he and Jo (Hepburn) have been married for several years, although not entirely happily. Absolutely: What is The Friends of Dulwich Picture Gallery? Jenny Sweeney: The Friends is a separate charity established to support the work of Dulwich Picture Gallery. It was set up in response to a request from the Trustees of Dulwich College in 1954...In 1971 the Dulwich College trustees controversially sold Domenichino’s Adoration of the Shepherds to the National Gallery of Scotland. The move galvanised the Friends group into action, they launched lectures and concerts to raise money for the gallery. This set a pattern for The Friends of Dulwich Picture Gallery who now play a stronger and more diverse role than any other Friends groups that we know of. ABS: What are its aims? JS: The aims as stated in the constitution are ‘to advance the education of the public’ by ‘the preservation promotion, support, assistance and improvement of the Gallery and its collection...’ We give the Gallery some £250,000 each year and this comes primarily from membership subscriptions (we have around 6,500 members). Most people are unaware that Dulwich Picture Gallery receives no direct Government funding. That means that to answer the needs of the Gallery, we are fast on our feet, there is little bureaucracy, people get on and do! It’s refreshing.
B est of FRIENDS In 2014 The Friends of Dulwich Picture Gallery celebrates it’s 60th year supporting the Gallery. Here Jenny Sweeny, the group’s Chair, tells Absolutely what they do and how you can be involved.
ABS: What has been the most memorable event during your tenure as Chair? JS: The three years have been eventful. I took on the role halfway through 2011, our bicentenary year. Readers might remember Big Bang Day, which launched the bicentenary year in 2011 with a Gallery open day and a firework display as it got dark. Over 6000 people came to the Gallery. Jill Alexander, my predecessor organised that day and it really was spectacular. The year closed with a Gala dinner in the Gallery. We had a dining table for 120 people. It was a unique experience, to be sitting at a glittering table surrounded by amazing paintings, listening to a singer whose voice filled the entire gallery. ABS: What events do you have planned for the future? JS: For the 60th anniversary we have planned one prestigious event each season, 3 in the year. In March 2014 we held ART NOW in the Gallery and on 29 June we have Ian Callum, Design Director of Jaguar Land Rover coming to speak on ‘A life in Design’. He is also 60 this year! We believe that design equals art and Ian, who has designed such iconic cars as the Jaguar E-TYPE and the Jaguar F-TYPE (crowned

World Car Design of the Year in 2013), is certainly an artist. We will have 4 Jaguar cars on the Gallery lawn: an F-TYPE and most likely an E, D and C-TYPE. I hope every car lover from far around will be drawn to it! We also have a regular children’s event that afternoon. ABS: How do you decide what events to include on your programme? JS: Events evolve. We drop ones that don’t work and try out new ones. For instance we have recently gone into partnership with Dulwich Books for author’s evenings and sold out both Joanna Trollope and Margaret Drabble. The current author event is with Sarah Dunnant and is selling well. ABS: Do you have a background in the arts? JS: No, I have always visited art galleries, stately homes, etc. but I am not an art expert! I have, however, learnt a huge amount through my association with the Gallery. I am a consultant in personal develop

I ran conferences for my professional association and so was used to organising events, which has really helped in the role as chair. ABS: What does your role as Chair entail? JS: I co-ordinate the running of the Friends activities and I pick up the flack. In my three years over 35 volunteers have joined the team and are playing a role in helping run the charity. We have extraordinarily talented people. Some are using their professional skills in IT, finance, law, managing organisations and people and some bring great networks of speakers, musicians and knowledge of different community groups. We are always looking for volunteers. I usually talk to them first, explain how the Friends work, find out what they like to do and put them in touch with the relevant member of the team. Anyone with a love of the Gallery and some spare time will find volunteering fun and fulfilling. ABS: What do you enjoy most about being Chair?
JS: Meeting so many people. Working in such a fantastic place. The Gallery gets a great hold on you. So many people tell me that they ‘love’ the Gallery. I understand. I do too. ABS: How long have you lived in Dulwich? JS: We have lived in Dulwich for 35 years, in three houses and have just moved to Crescent Wood Road, on the ‘outskirts.’ I love the greenness of the area. Our last two houses looked over parks and green space. Now we look into Dulwich Woods. We used to take the children walking in the woods from an early age. I like the feel of the village. East Dulwich has developed over the last 15 years and until recently it was mostly local shops with splendid ones like SMBS, regrettably some of the high street shops are beginning to arrive. For years Dulwich has been a well-kept secret. Not hyper fashionable, so not crowded. ABS: Any advice for someone interested in becoming Chair? JS: Come along and get involved!

OUT FOXED Hello, my name is Ilana and I’m addicted to East Dulwich. It’s chronic – to the extent that I feel uneasy outside of SE22. Yep, I get the shakes when I leave the confines of our neighbourhood.
I
used to love going to gigs. When I was 16 my parents thought I was sweet and sensible – but instead of spending my evenings with friends doing homework (like I said I was), I secretly hung out with Britpop D-listers in smoke-filled pubs in Camden. I wasn’t a groupie (not unless you count a drunken kiss with a member of Blur as significant, which I don’t) but I was in love with music – rock and indie and metal and punk – and my favourite part of the year was festival season. Back then (and we’re talking the late 1990s), festivals were places for real music fans. It never crossed our minds to plan our outfits and to think about ‘festival fashion’, and we certainly didn’t need magazine tips on what to pack. We chucked our clothes in our rucksacks, pitched up our tents in a muddy field somewhere far from London, and then drank watered-down cider as we stared up at our idols on stage. Those were the happiest days of my life. Fast-forward to festival season now and it’s all completely different. Maybe I’m looking at festivals with cynical, 30-something eyes, but the thought of going to an actual festival now leaves me cold. I wouldn’t want to be surrounded by girls in denim hotpants and Hunters who don’t know who the bands are. I’m fed up with how sanitised everything’s become: less about the music, more style over substance. At the risk of sounding old before my time, things just aren’t as good as they used to be. The last festival I went to was in the Cotswolds. We ate margaritas from the Pizza Express van, drank coconut water handed out by promo girls and then hung out with David Cameron, John Craven and Noel Edmunds in the VIP tent. It was a fun weekend, but it didn’t feel like a festival because it wasn’t about the music: music seemed to be at the bottom of the agenda for everyone (me excluded). I still go to gigs when I can face the journey from Camden to East Dulwich late at night, but I’ve given up going to festivals and I’ve made my peace with it. Festivals have changed for the worse … and it appears that I’ve grown up too – I’m no longer the 16-yearold kid who thinks sleeping in a tent is an adventure. And while I may not be sweet, I could definitely be considered sensible, and that’s cool with me: at the very least I don’t have to lie to my parents any more.

Finding the STRENGTH Alexandra Jones meets Leanne Spencer, founder of Recover Fitness, the personal training company that’s tackling more than just muffin tops Portraits LEANNE DIXON
I
n December 2012 researched conducted by Kings College London and the South London and Maudsley NHS Foundation Trust (among others) found that the prevalence of common mental health problems in South East London was twice as high as the English national average . City living, the study argued, had a profound effect on South East Londoners, a high proportion of whom were suffering from stress, anxiety and even depression without necessarily being able to verbalise their condition, or know how to tackle it. For Forest Hill local Leanne Spencer, it was stress. ‘I used to work in The City,
in sales. That lifestyle is very hedonistic,’ she explains when we meet for coffee on a bright Friday afternoon. ‘You’re not expected to drink three bottles of wine a night but you’re with clients and you are expected to drink if they do. ‘Added to that the pressures of selling. It was a lot, I was...snowed under, I suppose.’ It’s an interesting thing to hear from a woman who comes across as confident, at ease and quick to laugh. At the time though, for Leanne, exercise offered a much-needed sense of relief from the immense pressure of her work life. She found solace in aching muscles and burning lungs. And with the physical strength came also emotional strength, ‘I think that’s when I first
realised how important exercise was to me,’ she explains. It was a hard-won epiphany that came after many years of struggling to deal with the effects of her City lifestyle. ‘Back then I was using exercise to keep a balance and eventually a number of factors snowballed. I left my job and threw myself into exercise. I’ve never had a bout of what you could say was depression but from a personal perspective exercise was hugely beneficial for me at that time.’ Setting up Recovery Fitness, which specialises in helping clients to deal with depression, anxiety or stress through diet and exercise has been a labour of love for Leanne. ‘The mental health aspect of fitness is a little bit overlooked,’ she explains. ‘Both diet and exercise have powerful effects on the brain, on dopamine levels, on serotonin levels. And from a non-medical standpoint, just getting up and saying “right, I’m going to go for a run,” then actually doing it can be a big win for people who are very depressed or anxious.’ It’s certainly an interesting approach and clients often come to Recovery Fitness not to get beach ready but rather to find a new way to manage their condition. And though they offer no cures, Leanne explains that results are often very positive. ‘I met a client recently who, when I asked how the personal training was affecting her, said that she was trying new foods, which you might not expect to hear, but it’s because she was feeling more adventurous, which is indicative of where it was taking her mentally.’ That same client was very petite, explains Leanne, and as a result had found it difficult in the past to lift her baby. The physical strength that came with the training, then, made a very tangible difference to her life. Working with East Dulwich healthcare centre, The Vale Practice, Recovery Fitness takes a holistic view on personal training. Offering clients massages, nutritional therapy and osteopathic advice as part of their regular packages, the idea is to tackle anxiety, stress and depression on all levels of health, not just through fitness. ‘Most people aren’t looking for a cure, and we wouldn’t pretend to offer one, they just want someone to guide them and that we can do.’ For info contact Leanne on 07401 441 818 or go to recoveryfitness.co.uk

Par for the COURSE When PGA professional, Scott Ephgrave and 9-handicapper Lewis Wilde tested their clubs at the renowned Dulwich and Sydenham Hill Golf Club they found a club that they could call home. Here Scott tells Absolutely why THE BASICS
The golf course was founded in 1894 and was designed by Harry Shapland Colt, who is widely recognized as one of the top course architects of all time. Situated on the slopes of Sydenham Hill, the club is well known for its outstanding views of London and for the natural beauty of its setting. The club professional is David Baillie who has been at Dulwich and Sydenham Hill Golf Club for over 25 years.
THE COURSE
Once ready to go, Lewis and I made our way round to the first tee, where there was a buzz around the practice putting green and chipping area and where local members and rivals were getting their putting stroke ready for the round ahead. After a few putts we were ready to go and came to the first tee, a superb opening hole. A par 3 of 236 yards from the medal tees. The keep of the course is a testament to the hard work of the Green Keeping team at Dulwich and Sydenham Hill Golf Club. The course was of the highest caliber and they have manicured a fantastic track to play. Every area was really well looked after, from the fast, smooth and true greens on every hole, to the beautifully cut fairways with the rough and fringes around the greens. With a number of superb signature holes, the course must be played to experience it properly. We couldn’t help but be amazed at the fact that this stunning golf course, which is framed
by mature trees throughout the 18 holes, is only five miles from the concrete and glass jungle of The City of London.

THE CLUB HOUSE
After Lewis and I holed our putts to finish up on the 18th and shook hands, we made our way to the ‘19th Hole’, Dulwich and Sydenham Hill Golf Club’s wryly named bar. Housed in the clubhouse, the panoramic views mean that you get a great feel for the course and beyond. The changing rooms, pro shop and all club facilities were immaculate and made us feel very comfortable. A traditional clubhouse which is perfect for anyone looking to feel at home in their club.
THE FOOD
The food at Dulwich and Sydenham Hill Golf Club is all freshly made from the finest ingredients by their catering
team. Serving traditional English fare, as well as snacks and sandwiches, the food needs to be good to keep your attention from that view! The three course Sunday lunch is particularly delicious, coming with all the array of trimmings that you could want, and the club also offers occasional dining evenings, which are popular with the guests and members alike.
VERDICT
I have been lucky to play and be a member of some top golf courses over the years and I can honestly say that for anyone looking for a golf club to join that has all the boxes ticked, Dulwich and Sydenham Hill Golf Club certainly did it for me. Top quality golf course, lovely clubhouse, friendly staff, great food, decent social element, unbelievable views from all over the golf course, all with that very important traditional feel to it.

LEEK AND GOAT’S CHEESE PICNIC LOAF Serves: 6
INGREDIENTS • 1 round loaf of bread, 20–25cm in diameter – any kind you like • 1 garlic clove, halved • 2 tsp Dijon mustard • 4 leeks, finely sliced, dark leaves discarded • 100ml olive oil • ½ tsp salt, plus extra to taste • ½ tsp black pepper, plus extra to taste • 5 sprigs of thyme, leaves only, chopped • 2 eggs • 150ml double cream • 250g soft, fresh goat’s cheese, crumbled
METHOD 1 Preheat the oven to 180°C/gas mark 4. Prepare the bread bowl. Slice across the loaf of bread to remove the upper third, then use your hands to pull out as much of the middle of the remaining loaf as you can, creating a crusty bowl. You won’t need this excavated bread for this recipe, so set it aside to make breadcrumbs. 2 Bake the bread bowl for 10 minutes, then, once it’s cool enough to handle, gently rub the cut sides of garlic around the inside of the loaf. Coat the inside with mustard – use the back of a spoon or, even better, a pastry brush, to help you spread it evenly. Set the hollowedout loaf aside and increase the oven temperature to 200°C/gas mark 6.

K N OW From satisfying sourdough to moreish muffins, GAIL’s first cookbook features over one hundred of the recipes which have made the artisan bakery a national favourite. Here, Absolutely gets a preview of a couple of its tastiest recipes.
3 To make the filling, toss the leeks with the olive oil, salt, pepper and thyme and roast them for 30 minutes until meltingly soft. Leave to cool, then drain off any excess oil. In a separate jug, make the custard by whisking together the eggs and cream, then season well with salt and pepper. 4 Begin to assemble the loaf: place the bread bowl on a baking tray and spread the goat’s cheese evenly on the base, then top with the leeks. Pour the eggs and cream into the bread bowl in three stages, waiting a few minutes each time before adding more. Once all the custard is added, carefully transfer to the oven. Bake for 10 minutes, then reduce the temperature to 170°C/ gas mark 3 and bake for a further 25–35 minutes until the custard is set. Check the custard is cooked by inserting a skewer into the middle; if it comes out wet, give it another 5–10 minutes. Leave it to cool for 45 minutes to an hour. It should look rather like a quiche, and you can slice it up to serve it in just the same way.
VARIATIONS: As long as you stick to the same measurements for the savoury custard (the eggs and cream), anything goes – think of your favourite quiche and reinvent it as a picnic bread pie. TO MAKE IN ADVANCE: This can be baked the day before you want to eat it. Reheat at 180°C/gas mark 4 for 10 minutes to bring it back to life before packing up and heading out on your picnic.

PECAN BROWNIES INGREDIENTS • 170g butter • 200g very dark chocolate (at least 70 per cent cocoa solids), chopped into rough chunks • 100g dark chocolate (50 per cent cocoa solids), chopped into rough chunks • 45g cocoa powder (100 per cent cocoa solids) • 130g plain flour • 1 tsp flaked sea salt • 5 eggs • 200g caster sugar • 120g light muscovado sugar • 80g pecan halves • Make: 12 brownies
METHOD 1 Preheat the oven to 170°C/gas mark 3. Line a baking dish or brownie tray about 20cm x 30cm with baking paper. 2 Melt the butter and chocolate in a small heatproof bowl fitted snugly over the top of a small pan of gently simmering water, making sure that its base doesn’t actually touch the water. Stir carefully until melted and combined, remove the bowl from the pan and beat in the cocoa powder. Pour into a very large mixing bowl and set aside to cool slightly. Sift the flour into a bowl, add the salt and set aside. Whisk the eggs and both sugars together in another bowl, until the sugars have dissolved. Stir the eggs into the chocolate mixture, then fold in the flour, ensuring it’s completely combined to give a smooth, glossy batter. 3 Pour the brownie mixture into the lined baking dish. Scatter the pecan halves generously across the surface, and bake for anything between 15 and 30 minutes. When ready, a small crack will have formed around the edges of the brownie, and the centre will still be a little wobbly. A skewer pushed into the centre should come out with large, gooey crumbs on it, but not coated in wet batter.
APPLE CRUMBLE CAKE INGREDIENTS • 2 eggs, at room temperature • 180g caster sugar • 220ml vegetable oil • 200g plain flour • 1 tsp ground cinnamon • 1 tsp mixed spice • ½ tsp ground cloves • ½ tsp grated nutmeg • 1 tsp bicarbonate of soda • ½ tsp fine sea salt • 300g peeled, cored Bramley apples (roughly 3 apples), cut into 1cm cubes • ½ quantity crumble topping • Makes: 1 large or 2 small loaf cakes
METHOD 1 Butter two loaf tins about 19cm x 8cm, or one large loaf tin measuring 24cm x 10cm, then line with baking paper. Preheat the oven to 200°C/gas mark 6. Sift together the flour, salt, spices and bicarbonate of soda and set aside. 2 In a stand mixer fitted with the beater, beat the eggs on a low speed, then gradually add the sugar, beating all the time. Once all the sugar has been added, pour in the oil in a slow, constant stream and beat until you have a very thick, pale mixture – you’re creating an emulsion. Stop the mixer, add the flour mixture all in one go, and mix again very briefly until just combined. 3 Add the apples and fold them in with a large metal spoon until the fruit is stirred right through. Spoon it into the cake tin or tins, smooth the top, then sprinkle the tops with crumble. Place in
4 Leave the brownie to cool in its tin, then wrap the tin in cling film and chill overnight before cutting and devouring. This does demand serious willpower, but will give you the ultimate brownie – it’s worth the wait.

Bake the cakes for 40–45 minutes (for two small cakes) or 1 hour–1 hour 10 minutes for a large cake. 4 They are ready when risen, springy and when a skewer inserted into the centre(s) comes out clean. Leave in the tin until completely cool.
This cake is so moist that it will keep for 3–4 days without trouble.
CRUMBLE TOPPING INGREDIENTS • 150g plain flour • 100g salted butter, chilled and diced • 50g caster sugar • Makes: 300g
METHOD 1 Put the flour and butter in a bowl and use your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs. Add the sugar and continue until you’re left with large crumbles. 2 Spread the crumble out on a plate or baking sheet lined with baking paper and chill for at least an hour in the fridge, or overnight. Don’t cover – the cold air in the fridge will help to dry it out and make it even crumblier. It will keep for 3–4 days.

W Dining with DOHERTY Camilla Davies caught up with local chef Daniel Doherty, who after opening The Old Brewery in Greenwich has gone on to helm the legendary Duck and Waffle. With summer fast approaching, Daniel discusses fine dining and the pressures of big city culinary cuisine
ith the landscape of fine dining ever changing, Daniel Doherty believes that the expression itself should be abandoned. Rather, he’s in favour of a different culinary ethos. ‘I’d like to see the notion “fine dining” sort of disappear, so you’re creating forward thinking refined food but in a much more relaxed atmosphere,’ he muses. And when it comes to his own restaurant, Duck and Waffle, Daniel refuses to be drawn into a black and white definition. ‘Lots of people say, what are you? Are you British, are you Italian, are you whatever; we kind of create what we think is seasonal, creative food that people can enjoy and share whilst actively enjoying the view. I think from the start we didn’t want to be pigeon-holed.’ One thing this chef is intent on, however, is sourcing local ingredients, and supporting local businesses. ‘British food has had a rough time in the last 50 odd years where we’ve taken the direction of big supermarkets, that kind of thing. My parents still remember the time when they had a butcher, a baker, a fishmonger and there’s an element of that that can still be brought back, I think if restaurants do it then hopefully it encourages others to do it too.’ Deciding to train as a chef at age 16, and winning an elite scholarship to study at The Academy of Culinary Arts, Doherty quickly built a name within the industry. But being a professional chef is a tiring vocation – particularly when you’re at the helm of a restaurant open an astonishing 24 hours a day. Despite the pressurised work environment, Doherty still considers cooking at home one of life’s ultimate pleasures. ‘I fell in love with this industry because I love to cook, and to eat not because I wanted to run a 24/7 restaurant with 45 chefs. There is nothing better than cooking a meal and just enjoying what you’ve produced. Even if you mess it up, you realise what you need to do next time, you play around. I find cooking very relaxing, and doing it at home you know nobody is going to write about you, tweet about you, upload to Instagram and judge you.’

Try a Duck & Waffle classic at home… ROASTED ESSEX BEETROOT / GOATS CURD / HONEYCOMB / WATERCRESS / SHALLOT DRESSING
SERVES: 6 • 20 Assorted baby beetroots, preferably heritage, and all the colours • 6tbsp Goats curd • Large bunch Watercress • 6tbsp of Shallot dressing (recipe below) • Honeycomb (recipe below) SHALLOT DRESSING • 4 Finely chopped shallots• 300ml extra olive oil • 100ml sherry vinegar • 2 table spoons thyme leaves HONEYCOMB
“It was nice to have a dish that wasn’t unanimously loved... food is subjective.” The most wearing aspects of running a restaurant such as Duck and Waffle are the practical implications of being open all hours. ‘At the beginning the senior team were having to cover a lot of strange shifts and weird sleeping patterns. Now we’ve found our feet and have systems in place with our teams, I think it’s more physical exhaustion from knowing that when you leave work at midnight, the restaurant is still open and you’re still going to serve up to 300 covers, and there’ll a lot industry people, a lot of other chefs judging you when you are supposedly sleeping. When you wake up in the morning you’ve got that stress of “Oh god, what happened last night!?” - but we’re doing alright.’ He may be a famous
chef, but his own food heaven is very down to earth. ‘I’m kind of old school English, I love a Sunday roast, with all the trimmings and treacle pudding with custard, a good old school English pudding.’ When we ask the chef his legacy meal –‘I’d like to be known for more than a bloody plate of food!’ – he opts for his signature dish. ‘I suppose I have to say the Ox Cheek Doughnut, it was nice to have a dish that wasn’t unanimously loved by everyone. There’s something cool in that food is subjective; you soon realise that not everyone’s going to love it!’ With the restaurant situated on the 40th floor of London’s Heron Tower, look out for Daniel at table number 63 …‘It’s basically a really nice booth in the corner of the restaurant that overlooks Canary Wharf, Tower Bridge, the Gherkin, all those iconic buildings,’ he says, proudly. Away from the workplace, the chef will be exhibiting his al fresco skills at June’s Taste of London foodie festival. With the five-day event hosting culinary master classes and LaurentPerrier champagne tasting sessions, if Ox cheek doesn’t spark your fancy then there’ll be plenty to suit any palette.
• 8tbsp golden syrup • 2tbsp water • 400g sugar • 5tsp bicarbonate of soda METHOD To make the shallot dressing, sweat the shallots in a pan with a spoonful of olive oil and the thyme leaves. Add the rest of the olive oil and the vinegar. Give it a good stir and leave to cool. Mix well before use. For the honeycomb, make a caramel by placing the golden syrup, water and sugar in a pan. Bring to the boil and when it’s bubbling and golden, add the bicarbonate of soda. Use a deep pan and be carful, as when you add the bicarbonate of soda, the caramel will rise up dramatically. As soon as it rises, pour into a baking tray lined with baking paper. Cool until hard, then smash up into small pieces. Take the beetroots and trim off the leaves. Wrap them in foil and roast at 160 degrees for until a knife goes in easily (approx. 45 minutes). Allow to cool and peel off the skin. Cut the beetroots into chunks and toss lightly in the olive oil and roast them in a pan to get some colour. When sizzling, add the goats curd sporadically around, then add the shallot dressing. Finish with a few shards of honeycomb. Dress the watercress in the shallot dressing, and serve on the side.

Fine China PRETTY, CHARMING AND PLAYFUL, ALEXANDRA JONES FELL IN LOVE WITH LOUISE WILKINSON’S DESIGNS BEFORE SHE EVEN KNEW THAT THE ILLUSTRATOR AND CERAMICIST WAS A CRYSTAL PALACE LOCAL PORTRAITS: LEANNE DIXON
L
ouise Wilkinson doesn’t seem like an illustrator. Or a ceramicist, actually. Those words, to me, conjure up images of a slightly geeky computer bod, blinking at a screen and quibbling over a millimetre space. Is that just me? Probably. Either way, when we meet, Wilkinson seems altogether something different. Something not quite so prescriptive as a designer, rather she seems more like an artist, a dreamer with a talent for drawing and a business plan. Softly spoken and smiley, we meet in Crystal Palace where she bought a flat four years ago, ‘before it became more than we could ever dream to afford,’ she laughs. She looks sunshinebright in orange and brings along a bagful of her work, which we spread across the table between us, much to the bemusement of the Friday morning punters in Brown & Green. Obviously they’re beautiful but more than that, the pieces that she creates are whimsical; they have a sense of playfulness and irony that seems uniquely British. ‘Yes I think that’s something that I wanted to invoke, I wanted them to have that Britishness, that particular sense of fun.’ To Wilkinson, who grew up in Yorkshire and studied Illustration at university, the homewares facet of her career is relatively new one. ‘I always wanted to illustrate children’s books, I loved The Very Hungry Caterpillar by Eric Carle and I used to like looking at old illustrated encyclopaedias. Those are the two things that jump out in my mind about being a kid.’ Much has been made of her upbringing in
the Yorkshire countryside, with most articles that I read about her citing this as the lifeblood of her work, the fount from which she draws her inspiration. Wilkinson, though, seems a little nonplussed by the suggestion. ‘Yes, in some ways,’ she concedes. ‘But really I love Japanese and Chinese prints, I love Scandinavian design, I’m inspired by the decorative arts. I love the work of Bjorn Wiinblad, of Matisse and Rousseau. I like to mix all these things with the geometric elements of graphic design, creating something more modern. There are so many places that I take inspiration from.’ After university she moved to London to work as a print and textile designer in fashion, an industry that she stuck with for 10 years before
“I liked the idea of making things that... you’d want to keep for a lifetime” moving into ceramics and homewares. ‘I always did my own things on the side, did illustrations for magazines and things. I suppose I liked the very white blankness of a plate. And I liked the idea of making things that are functional but also beautiful, that you’d want to keep [for] life.’ She had her first collection, ‘Maple’, fired onto fine bone china and – ‘just on an off chance’ – took it to the Best of British Design Open Call at Liberty of London. Painting 700 – 1900 and in Wilkinson’s work they had found a contemporary artist who could draw on Chinese traditions and add to them a fresh perspective. ‘I liked Louise’s designs for their playfulness and detail,’ explains the V&A’s Visual Manager Charlene Betteridge. ‘[I] loved the use of traditional blue in her ceramics. I’d been playing with the idea of using traditional china in the window displays and seeing how Louise’s tea cup and saucer appeared to take influence from the use of Willow Pattern, she seemed to be a perfect fit.’ The large-scale Perspex display did indeed feature elements of the Willow Pattern, turning the V&A shop into part of the story. And now that she has it back from the V&A, Wilkinson plans to sell the instillation, which is her largest piece to date. It’ll be available on her website, from which she sells much of her work, though she admits this part of the business has

Wilkinson attended with low expectations. ‘I went quite late because I didn’t realise how popular it would be and ended up having to queue for hours.’ In the Dragon’s Denstyle interview, she met with Liberty’s Managing Director, buying team and a clutch of industry experts. ‘In the end I pitched for about five minutes and, yeah, they really loved everything! They said it was the best they’d seen all day...’ she says a little bashfully. That was in 2012 and by October of that year, Maple was stocked in Liberty. ‘I was always going to do it [the homewares] because it’s what I love to do, but it really just gave me more of a push.’ Since then she’s gone on to design a full window display for the Victoria & Albert Museum shop. ‘I met a lady from the V&A at a Midcentury Modern show and a few months later she contacted me as they wanted to commission a bauble for Christmas.’ At the time, the V&A’s big exhibition was Masterpieces of Chinese

My dream would be just to draw all the time; my work lives for a long time in my head and I’m always thinking of ideas. Then when I start doodling, it’s quite focused in a way, because I’ve thought about it so much. I guess it would be great to get to do that even more.’ As we wrap-up our interview, she explains that she’ll be spending the rest of the day packing orders, which, though tedious, is of course no bad thing. ‘I guess it means [that] things are going well. It can be tough doing the business stuff (my sister got the maths gene!) as well as keeping in touch with stockists, keeping on top of the admin, packing orders, running the website and all while doing the art…But I love it.’ In some ways, then, I was right in my assessment that Wilkinson doesn’t seem like an illustrator. She’s much more than that. In fact she’s practically a one woman ceramics empire.

Colourful and cultural, Leo Bear explores the gateway to the American art world: Miami
I
t’s the run-up to Art Basel Miami Beach, where collectors, gallery owners, artists and celebrities congregate to admire pop-up art installations and swap digits at swanky private parties, and I’m here to get a taste of what Miami has to offer the layman. I’m told more private jets land in Miami on December 3rd than anywhere else in the world – and that the incoming crowd are dropping more than $1m a night on works of art. In other words ‘it’s great fun; eight days of intense debauchery,’ says Philip Hoffman, CEO of the UK’s Fine Art Fund. ‘Make sure you take sunglasses.’ The thing is, I’m early to the party. Art season spans December to March (peaking in December) and it’s November – but nonetheless there’s a palpable sense of excitement in the air. At my hotel, The James Royal Palm, the staff are gearing up to host a cocktail-cumspa-lounge conceived by ex-Ralph Lauren creative Mark Cunningham. But before I dive into the art scene, I need to get my bearings. This is my first trip to Miami and I’m keen to explore my surroundings of South Beach. I start by booking an architectural bike tour with Dragonfly Tours. A couple of hours later I descend to the lobby and pray the tattooed man sitting in the corner isn’t my guide. He’s in surf shorts, mismatching Converse and has a braided beard. He springs up and introduces himself as John, my guide. He’ll be showing me all of Miami’s architectural wonders – and really he’s a wonder in himself. It turns out he used to tour with Nine Inch Nails but gave it all up because the crew lacked hygiene. Anyway, showing tourists around suits him and with John by my side, I begin to feel uncharacteristically ‘street’.

travel Miami is grit, glamour and gorgeous buildings. Freewheeling down Collins Avenue with the sun on my handlebars, I’m quickly seduced. Lined with lowrise pastel buildings decorated with coral from the Everglades, the traffic-free boulevards are dotted with palm trees, giving a laid-back campus-like feel to the area. South Beach reminds me of Westwood, a village-y suburb of Los Angeles known for its 1950s cinemas, grassy sidewalks and good-looking undergrads. John describes the architecture as ‘tropical deco’. I’m not sure if he’s made it up, but it’s apt either way. The city has certainly come a long way. In the seventies it was the cocaine capital of the world, notorious for cars blowing up by the side of the road and daylight shootings. Later came a spell as ‘God’s Waiting Room’, when kooky retirement settlements prevailed. Today it’s a breezy coastal paradise populated by hip outdoorsy types who skateboard to work. During our bike ride, we visit glorious art
“He used to tour with nine inch nails but gave it all up because the crew lacked hygiene” deco buildings including the Lincoln Theatre (now an H&M), the Jackie Gleason Fillmore Theatre and the Betsy Hotel. The tour is an education; new words start to enter my vocabulary like ‘eyebrow ledges’ and ‘ziggurats’ (the trademark stepped effect found on many an art deco rooftop). Along the way I consume my first-ever pastrami sandwich at Jerry’s Deli, an establishment that has remained unchanged since 1939 – booths, columns, chandeliers and all. We finish up on Ocean Drive outside the beleaguered Versace mansion. Recently acquired by the owners of the neighbouring property Hotel Victor, plans are in motion to convert the late fashion designer’s home into a jazzy ocean-facing restaurant. Not that Miami is short on great places to eat: Joe’s Stone Crab, MeatMarket and Catch (an outpost of the glamorous NY eaterie) are all hotspots well worth a visit. While the architecture is worth the airfare in itself, I’m actually here for the art. Home to an array of internationally renowned galleries including MoCA, Noma and the new fabulous Pérez Museum
designed by Swiss duo Herzog & de Meuron, I’m keen to see something truly unique to Miami. So I hail a cab to the Wynwood district. A short hop across the Julia Tuttle causeway and we pull up outside Wynwood Walls, a small, gated area devoted to street art and graffiti. It’s here that street artists such as Retna, an LA-based artist who counts Hermès and Louis Vuitton among his clients, flock to leave their mark. The result is an explosive mix of bold and distinctive murals. But there’s much more. The Walls lie at the heart of a wider ten-block area boasting great swathes of spray art, op-art and roll art – sometimes covering whole buildings – as well as more than 50 art galleries. A formerly stagnant area of vacant warehouses, Wynwood now sparkles with the kind of intrinsic attitude you find in New York’s Soho and London’s Shoreditch – but with a much more vivid colour palette thanks to the year-round Floridian sunshine. You can wander around solo or join a guided walking tour (these take place every other Saturday), and when your eyes need a rest, make a pitstop at Wynwood Kitchen and Bar, an al fresco Venezuelan café that does an excellent line in chicken empañadas. Of the galleries, the Rubell Family Collection, one of the largest private displays of modern art in the world, is a must-visit, and for emerging talent, try the Bakehouse Art Complex, a former bakery now home to 65 studios occupied by budding young artists. Here, you can buy something to take home or commission something original that won’t break the bank. What’s remarkable is that Wynwood’s ascension from down-and-out to downright cool has all happened in the
last ten years – stimulated in large part by the Miami Basel Art Fair. Offshoots of the fair now take place in Wynwood, generating a lot of speculation and hype, so it will be interesting to see how the area continues to evolve. Tanked up on art and architecture, I head back to the comparatively historic district of South Beach for some much needed R ‘n’ R. Most of the hotels on this 8.5-mile stretch of soft yellow sand have private beach clubs attached to them, and The James is no exception. Horizontal on a sunlounger admiring the breaking waves and buff bodies this town is famous for, I feel incredibly content. The Atlantic breeze mercifully muffles squeals from a nearby ‘bachelorette’ party and as a male model in bright-orange shorts brings me a hamper of fruit and Fiji water, I smile as I remember an earlier encounter with one of Miami’s most eminent gallery curators. Conrad de la Torre of Gary Nader Fine Art, who lives and works in Miami, told me: ‘Miami is the gateway to the American art world. If you want to do well, you have to come here… Where else can you hang out in five-star hotels and buy million-dollar pieces of art in shorts and sandals?’ And that pretty much sums up Miami. It’s very cool. Even for art novices like me.

Las Vegas is synonymous with sleaze and debauchery but Gemma Billington discovers Sin City’s desert oasis in the Mandarin Oriental
A
clammy, five-and-ahalf-hour coach journey through endless parched land and rocky hills and we find ourselves dumped in a car park behind a garish Walt Disney-esque castle. Excalibur Hotel & Casino is Disneyland meets Saint Basil’s Cathedral with a dash of tacky faux medieval fare thrown in for good measure. Well, that’s what you get for a $25 return from Downtown Los Angeles. It’s an awful building but the perfect emblem of where we’ve arrived; Sin City itself, Las Vegas. After 10 minutes of trudging our cases aimlessly through the desert heat we give up and take a taxi to the Mandarin Oriental, which is situated almost slapbang in the middle of the Strip. If Excalibur, The Bellagio, Caesars Palace and Paris are among the icons of the Strip, then the

travel Mandarin Oriental (MO) is the very antithesis of it; an oasis of tranquility and sophistication. You won’t find a single slot machine here, nor a sprawling seafood buffet. That’s not to say that you’re cut-off from the Vegas experience, only the sleaze and chaos of it. Ostensibly it’s an unusual addition to the Strip (and much younger than the others, having only opened in 2009), in that its discretion contrasts with the dominating, humungous hotel-cum-casinos. But its design, which incorporates the brand’s oriental roots and aesthetics, makes the 5-star hotel both subtle and spectacular. With girlish excitement my friend and I boarded the one-stop lift to the Sky Lobby located on the 23rd floor to check in. The floors are elegant black marble and the sumptuous tea room situated next to the reception is festooned with enormous, Japanese-lantern style lights and an intricate blue, red and gold carpet. Our room is impressive but sedate, with an enormous bed, plus remote controlled curtains that reveal a spectacular vista. It is here on the 19th floor, before we’ve even set foot in a casino, that I begin to develop a fondness for Vegas. It’s really quite beautiful in an urban and completely bonkers way. Traffic is six lanes wide either side (it’s near impossible to walk anywhere) and animated billboards pop up like mushroom – all vying aggressively for your attention. The blue canvas sky is never blemished by clouds, and it means that you can watch Las Vegas come to life, once the sun begins to set, for miles and miles – beyond the Strip and all the way to the barren desert and mountains. Slowly everything begins to light up (even the road markings are made up of bulbs),

WHAT TO DO
Unless you’re planning an excursion to the Grand Canyon, which is doable but only really if you’re staying for longer than a weekend, then I wouldn’t stray far from the hotel during the day. For one thing, the glittering decadence of the night before will reveal itself to be smoketinged and garish the morning after. Indulge the inevitable hangover with a lavish breakfast as only the Americans can do, and then hang out by the pool in the glorious sunshine. The MO has two pools, with views of Monte Carlo casino from one end and ‘New York’ on the other. It’s also on the same floor as the incredible spa, which I implore you to visit. It’s worth having a vague plan of where to go at night, baring in mind that it really is difficult to walk anywhere (even when everything looks so close) as the footpaths are suddenly cut off by malls that you have no choice but to walk through. There are endless live shows, casinos, buffets and every
kind of Vegas ‘must do’, and even for a gambling dunce such as myself, you can’t help but get into the spirit. Waitresses will (slowly) serve you free drinks at slot machines (you have to tip them amply, of course) and you can ease yourself into the gambling scene with machines that charge no more than 40 cents a pop. On our second night out we took a cab to Freemont Street, which is home to the famous Golden Nugget casino and is a less pretentious and more affordable night out than the Strip. Despite some preconceived scepticism (read: snobbery) I found myself keen to return to Vegas, and after two nights we had barely scratched the surface. However, the hangover we endured on that wearisome coach ride back to LA was the expected yet ultimate badge of honour of a Vegas weekend and, in the end, totally worth it. Until next time.

SCHOOLS ARE BENDING OVER BACKWARDS TO OFFER BURSARIES TO THE BRIGHT BUT BROKE. BUT, AS AMANDA CONSTANCE DISCOVERS, FINDING OUT IF THIS MEANS YOU IS AN ALTOGETHER TRICKIER QUESTION

our child is bright but you are broke, or at least you think you are. Does this mean a private education is out of your reach? Not necessarily. The good news is that private schools are offering more assistance with fees than ever before. The difficulty is in trying to work out if you qualify for any help. Susan Hamyln, Director of the Good Schools Guide Advice Service, says that, in the past few years, she has seen such an ‘explosion in demand’ from parents investigating bursaries that the GSG has now set up a dedicated Scholarship and Bursaries Service to help parents navigate a confusing system. One of the first questions she is always asked is: ‘Do we qualify for help?’ The answer, frustratingly, is that it depends. ‘What qualifies you for a bursary in London is different from the rest of

the country,’ says Hamlyn. ‘Broke in London is far richer than broke in Yorkshire.’ Bursaries are certainly more plentiful than they were. The recent census from the Independent Schools Council (ISC) trumpeted that more than one third of private school pupils now receive assistance with fees, the amount of relief rising by 5.6% in the last year. This is partly because schools are bending over backwards to justify their charitable status. As Barnaby Lenon, former head of Harrow and now chairman of the ISC explains, there has been a drift away from providing scholarships to bright children to providing bursaries for the less well-off. So what about Londoners; do the capital’s day schools offer decent bursaries, too? Hamlyn says the general rule is that the richer the
school the better the bursary, which is why the older public schools can seem extremely generous. Most schools make it clear that bursary applications are treated on a case-by case-basis. It’s not simply income that affects fees assistance but the value of your house, car, investments, even holidays. In collating what information is available into a central resource, the GSG has uncovered a huge disparity in provision. If you want a bursary at City of London School, for example, don’t bother applying if your gross household income is more than £45,000. Ditto Lady Eleanor Holles, where an income in excess of £50,000 is unlikely to qualify for assistance. In contrast, Godolphin and Latymer, once proud of its assisted-places scheme but now popular with the offspring of oligarchs, declares its threshold for bursary applications is £100,000. Most schools, such as Latymer, St Paul’s Girls, Dulwich College, King’s College School and UCS state that bursaries are offered on the basis of a student’s performance in entrance exams and interviews. And there’s the rub with bursaries. Applications for fee assistance can only be made after your child has been through the rigorous academic selection process. Only the most academically able will be offered a bursary. Hamlyn cautions that she frequently deals with the parents of a bright child who contact her with a view to getting a bursary but whose income renders them ineligible. Nevertheless, they put their children through the entrance exams for academically selective schools, only to find they don’t qualify for a bursary, can’t afford the fees, and the process has been in vain. ‘That’s an awful position to put a child in,’ Hamlyn says. ‘You must be very clear with your child that you are taking a chance and you need a good state school as a back-up,’ Hamlyn adds. ‘Be realistic about your child. Just because he or she is in the top 10% at their state primary, doesn’t mean they will cut it in some of the most selective academic independents.’ With independent education beyond most salaries, there is less of a stigma now on asking for help.

y career in property began whilst I was a general catering manager and running a large and busy wine bar – it’s also where I met my wife Helen! Many of my customers were local agents and whilst we were trying to buy our first flat in Putney, I mentioned to the owner of a new estate agency that I thought I could do a better job than many of the negotiators I had met during my search. After a boozy informal interview he offered me a career change on the spot, I started three months later and have enjoyed being in property ever since. After a decade in this career that took me from sales manager to director of a chain of 12 offices I decided that it was time to strike out on my own, so set up a new independent estate agency, Property In. With the Millennium looming in 2000, I felt passionately the industry was changing and we needed to promote web marketing and agency software. I decided the only way forward was to get back to what I loved doing: selling & letting houses. When planning and refurbishing the office in 2000 with my wife Helen’s help and support, we invested heavily in a vision that included an office that was warm and inviting, with a window not cluttered by details. We took on agency software that was ahead of its time for sales and lettings, which was fairly rare at that time. We made other changes too, taking advantage of instant emailing, text updates, moving window displays, constant and instant updating of our web page and the major property portals, client updates… the list goes on. Any industry is constantly changing and we aim to stay
at the forefront technologically, so that we provide the best possible service. I’ve been an estate agent in Dulwich for over 25 years now, 14 of which have been as the owner of Property In. Over that time we’ve made an effort not only to provide a service for the local community, but also to get involved and become a part of it. Our most recent project has been sponsoring the ‘Artists’ Open House’. I’ve watched the Artists’ Open House grow from a fledgling start-up with just 25 artists to a thriving attraction with well over 200 artists showing at over 150 venues. We are proud be one of those venues, each year turning our office into a popup gallery and this year exhibiting paintings by Annette Hamley-Jenkins and Jodie Glen-Martin, ceramics by Kristin Watt Bonar and Hope & Eden’s silk-screened homewares, unique toys and scatter cushions. To begin with, our relationship with the Artists’ Open House was born from a very simple synergy. Showcase TWO SIDES OF THE COIN Q. I’ve had a few valuations, but the prices vary significantly. How do I know which is the best to choose? A
. This old chestnut... unfortunately the answer is rather more nuanced thanyou might think. The answer to the question must, as ever, depend on the facts. The facts reflect the situation on the ground, so there is no one right answer. The approach to take must depend on the local market environment. In a strong and rising market- such as today’s, it would seem odd to go with a low valuation. That said, going with a very high valuation could also be the wrong option if it is patently unattainable. An important consideration is also the vendor’s own position. If you need to sell the property quickly, going with the most expensive valuation might not assist your cause, conversely, if there is no pressure on you to sell, and the market is strong, then it would make sense to go with a fuller valuation. As these brief illustrations demonstrate, there is no correct answer, merely approaches which reflect the specifics of a given situation. The conclusion must be that valuations are not an exact science, but if I was forced to answer the actual question, which in a piece like this, I suspect one should, I would apply the tried and tested middle ground theory.

. Comparable properties: Each agent should be able to provide with some similar properties they are marketing or that they have agreed sales on. This should provide a good basis to make your own comparisons on. Look at the comparable properties objectively – Make notes on how yours measures up. Does yours have a bigger garden, is it closer to the station, does yours have a better aspect, are the other properties in better condition or have a high end finish? (We all love our homes but this where the objective part comes in!) If the agent’s valuation is vastly higher than all comparables, then the chances are they may just be over valuing to try and gain your instruction. Timing: Look at the date the comparable properties came to the market and how long they were listed for. Your timeframes and own situation may have an impact at what level the agent advises you to pitch the property. Marketing: Photographs should be good quality, floor plans are a must and the agent should have a good online profile, giving your property the exposure it deserves. Although the marketing side does not necessarily support a valuation figure, it will contribute to how much interest the agent is likely to generate. It’s no surprise that poorly marketed properties are harder to shift! Lastly, go with your gut instinct (A good agent will use this regularly) if something sounds too good to be true, it often is!
