C

hristmas is upon us and this year it has come around pretty fast. Or does it always seem that way? This year, I will be hosting Christmas Day for the very first time. So for me, all this magazine research for decorations, gifts, food and wine has been entirely useful for my own purposes as I plan my festivities. In this issue we are recommending the baubliest baubles, the quirkiest advent calendars, the most lavish foodie hampers and the finest turkeys, as well as seeking out gifts of all kinds. And on my list? I'm after a Kindle, a Smythson diary and anything cashmere, since you ask. We're not exclusively all about Christmas this month, though. Our interview with artist/

illustrator Marion Deuchars reveals that her drawings are not only characterful and pretty but they're also educational. Her newest activity book is 'art school in a book,' she says, so there's lots of scope for inspiration. We also focus on lovely art dealer Serena Morton, whose Ladbroke Grove gallery is full of surprises, and we round up the finest places to ice skate in our city. Anyway, I’m off to make a wreath. f art is the new religion then it’s rather apt that Arthill Gallery is located in a converted church in West Kensington. It may have been open for less than a year, but Arthill Gallery is fast becoming known for its inspiring roster of contemporary Asian and European artists, as well as its programme of lectures, artist talks and events. ‘Our main goal is to identify and represent unique, talented and authentic artists working today,’ says gallery director Michelle Song. Illustrator Marion Deuchars’ portfolio includes countless commercial projects as well as activity books for children. Absolutely meets her Interview Pendle Harte

A

rtist Marion Deuchars' CV spans everything from stamps to window displays, menu designs, food illustrations and book covers. In 2011 she published her first art activity book for children, Let's Make Some Great Art and its instant success led to two more. Her covers for Penguin's George Orwell novels won the V&A's book illustration award and her long-standing collaboration with Carluccios has made her work familiar to many. Born in Scotland, she studied at the Royal College of Art and now works from her studio in north London.

PENDLE HARTE: You have provided illustrations for everything from stamps to menus, via newspapers and book covers. How do you tailor your style to different needs? MARION DEUCHARS: A new commission is always an interesting challenge for me to make some new artwork. I like that I don’t always know what it will look like, that it will be a surprise in some ways. I have to think beforehand; should it be type-led? colourful?, serious? I try to produce artwork that I think suits the subject best rather than have a one-style-fits-all approach. I start all projects by playing with different materials as a way of coming up with ideas and direction.

There have also been some great contemporary exhibitions recently, Ai Weiwei and Carsten Holler to name a few. I try to get to as many exhibitions as I can. PH: What is your typical working day like? Walk the dog, walk the kids to train station, pilates class, walk to work. I

one, Art Play, is the most accessible of all my books. It’s based on how I approach all of my work, which is first and foremost to play. I think the process of making and doing is as important as the end result and this book tries to celebrate that. It’s a book for the very young and old. PH: How would you describe your style? MD: I use a lot of hand lettering, but I also love to draw and paint. I use mainly conventional materials like paper, pencil, paints, and scissors… It's always hard describing your own style, but I receive many comments about my 'effortless' feel – I work hard at that. PH: How did you come to be an illustrator? When did it start? I studied at Duncan of Jordanstone in Dundee. The first year was about trying everything

By the end of the year we had to decide what to specialise in and I chose the Illustration and Printmaking department as it seemed to be where my work was heading. PH: What is your favourite kind of commission? MD: One that takes me to a place I don’t know. Milton Glaser says that ‘we should work towards the unknown’ and I completely agree. PH: What other artists and illustrators do you like? MD: I love seeing the greats. London has had so many fantastic exhibitions recently, from Matisse to Hockney. I also love looking at ancient art like Aztec. The British Museum is an

average a 25 hour working week, which is never long enough but it’s all I can do if I want to achieve a nice work/family life balance. I work in a shared open plan studio with 24 other creatives. It used to be a Victorian shoe factory. It’s a nice place to go every day. I have lots of space and can make a mess. It’s nice to have lunch at a table that’s not my desk, it’s good to ask for advice when I need it. PH: What are you working on next? MD: I’m working on another picture book for Laurence King as a follow up to Bob the Artist, which will be released next autumn. We also have plans to make a number of Bob the Artist toys and gifts including Bob Dominos. 

Absolutely meets Eric, the founder of Van Peterson Design, to discuss the last 34 years and what the future holds

in and Eric Van Peterson started their first business in Camden Lock Market selling vintage clothes, and eventually a few pieces of antique jewellery. They opened a glorified junk shop in Walton Street in 1982 selling Art Deco and Art Nouveau objet. ‘A lady came in one day and told me she had lost one of her flowered earrings and could I possibly make another.’ Eric explains. ‘My repair girl said, “We can make a mold of the remaining

earring”. We duplicated the earring, the customer was thrilled, and three months later I had dozens of earrings. I was so enthused I went on to make collections of my own jewellery and packaging.’ This was the beginning of Van Peterson Design. They have been designing their own collections for over 30 years now, and 20 years designing for Debenhams. Van Peterson has graced the pages of Vogue, Harper’s Bazaar, and Tatler, and their client list includes celebrities such as Charlize Theron, Victoria Beckham, Cara Delevingne, Helen Mirren and even Prince Harry.

amie Stevens comes from a family of hairdressers. He and his sister Tash work together at the salon that bears his name – and Tash happens to be married to the artistic director there, who also comes from a family of hairdressers. Can you keep up? 'Imagine what we're all like at parties,' says Tash. It's unusual to find quite so much extended family in one line of business, but you can tell that between them they know all there is to know about hair. I have come to the W14 salon in order to improve my negelcted locks and am lucky enough to be treated by Jamie himself. 'We're a bit different here – we don't start by asking people what they want,' he says, confidently. Instead he looks carefully at my hair and makes a diagnosis. It

needs to be shorter, for one thing. And I need to use more products, he instructs. After Tash ably applies two colours in foils throughout my hair, he casually snips away several inches, leaving me with a youthful, shoulder length cut. Before I go, he shows me how to use sea salt spray, how to blowdry my hair to prevent frizz, how to use tongs and how to make hairspray into a friend. What does your app do in a nutshell? USPAAH delivers spa quality beauty and massage treatments to your door within an hour. What motivated you to leave your job and set up your own business? I’d been working in the city as an investment banker for over 10 years and I constantly struggled to fit treatments into a very busy and stressful schedule. A couple of years ago I saw an opportunity to apply the concept of on-demand technology to the beauty and massage world, and create a service that would make the lives of busy Londoners less stressful. I was convinced that I could create a solution that was better than anything else on the market, and once I’d realised it was possible, that was all the motivation I needed.

Why was it important for your business to be launched as an app? Nowadays, your smartphone is the remote control of your life. For me, if we didn’t have an app, we might as well not have existed. Our purpose is to make the services we deliver easily accessible and on-demand. The best way for us to achieve this is through an app.

Why did you decide to focus on beauty? I focused my efforts on solving a problem I felt was common among stressed, time-poor Londoners. It just so happened that the problem was in the beauty and wellness services industry. What has been the hardest thing about setting up a business? From operations and management to admin, there are so many challenges one faces when setting up a business. But the hardest thing in my view is the emotional toll it takes on you and the incredible resilience you have to build to survive. Being an entrepreneur is like putting all your chips on red every day. It’s an emotional roller coaster, the odds are entirely against you, but if you win, you win big.

Why do you think wellness has become so popular in the last few years? As our daily lives become busier and busier, people are constantly looking for more convenient ways to maintain and improve their health and wellbeing. We’re all much more aware of the effects stress can have on our lives and anything that helps us reduce the impact, whether it’s a product or a service, is now more valuable than ever. How do you think smartphones are changing the way we consume beauty? Smartphones have completely revolutionised the way we interact with beauty brands. Consumers are now better educated about buying decisions,

Have you experienced any opposition as a woman in the world of tech? Any opposition? More like constant opposition. Close to 70% of the tech circle in London is comprised of men, both in terms of startups and VCs, so I’m constantly having to justify our business as something that doesn’t appeal to just "glam girls”. I’m almost always the only female founder in various networking events and I often have to rebut questions from investors asking what I’m going to do with the business once I have children, as though the two are mutually exclusive. What are your predictions for the world of beauty and wellness for 2017? In general, the trends continue to be towards innovation in personalisation of products and convenience of services for time-poor city dwellers. I imagine we’ll see more yoga and training on-demand, as well as consolidated access to various classes in private gyms around town, aka the ClassPass model. Where do you want to see the business in 5 years? Memories of home-cooked comforts are the inspiration behing this Nordic eaterie Wo r d s L u c y L a n d

L

isa's launch coincided with Nordic nosh becoming firmly established on the global stage, but before the obsession with all things hygge took hold of the capital, Lisa departed for a new adventure – she’s currently selling hot dogs from a food truck in Chamonix, though not without leaving her restaurant in the capable hands of her Italian friends Daniele and Vincenzo, and Swedish manager, Hanna. The interior is effortlessly simple – whitewashed walls, bare lights hanging over the bar, white linen napkins and tea lights on the tables. The buzzy/noisy front bar area offers high tables and stools, and a live jazz band if you’re there the right evening (Thursday to Sunday), while the glassroofed rear of the restaurant is furnished with marble-topped tables and Scandistyle wooden chairs, several of which have sheepskin throws draped over them.

We started with a Made in Sweden (vodka, akvavit, cucumber, mint, ginger ale and sugar) and a sweet apple and elderflower martini, both in crystal glasses. Our starters of kåldolmar (a white cabbage roll with red lentils, mushrooms, onion, garlic and herbs), and smoked salmon served with crème fraîche, red onion and lemon were gratifying, if not

thrilling. Classic meatballs served with mashed potatoes, brown sauce, pickled cucumber, lingonberries hit the spot; the quinoa salad with spinach, green beans, pomegranate and goats cheese had a light piquant dressing; and a side of sweet potato chips with aioli was comforting. The recommended Swedish Mess – a gooey mix of banana, meringue and caramel – was perfect for sharing. Lisa’s probably isn’t the place to go for a quiet date (there was a boisterous party of Spaniards behind us) and its comfort food is pretty pricy (notably £17 for the meatballs). However, the restaurant clearly has a loyal following. ‘You’ve changed the menu,’ our neighbour exclaimed as he used his iPhone’s flashlight to read the menu in the dimly-lit room. It’s buzzing yet cosy. u

STARGAZY FISH PIE Ser ves 4 -6

I n g r e d i e nt s • 2 litres milk • 600g firm fish fillets (Salmon/Hake/ Cod), diced into 2cm cubes • 200g smoked fish fillet (smoked haddock) • 4-6 prawns • 2 hard boiled eggs, peeled and quartered • 1kg Maris Piper potatoes

• 2 tablespoons butter • Salt and pepper • 1 beaten egg • Cleaned langoustine heads to decorate finished pie Bechamel sauce • 500ml milk • 60g butter • 50g tablespoons flour • 2 tablespoons grain mustard M e th o d 1 To make the béchamel sauce: • First bring the milk up to a simmer in a small pot and set aside. • In another pan, melt the butter gently over

medium heat, then add flour and stir until the mixture is smooth. • Begin adding the milk a little at a time to avoid lumps. Keep adding milk and stirring until you have a creamy sauce. • Allow to cook slowly for 5 minutes and then add the grain mustard. Set aside. 2 Cooking the fish: • Gently heat the 2 litres of milk. Add the fish fillets and poach for 3-4 minutes. Add the smoked fish and poach for a further 3-4 minutes. Carefully remove the fish and set aside. 3 To make the mashed potato: • Pre-heat the oven to 200°C/Gas 6. Bake the potatoes until crispy and soft. • While still hot, scoop out the flesh, discard the skins and pass the potato through a drum sieve to remove lumps. • Heat the milk used for poaching the fish and fold 2 tbsp butter through potato mixture. Season to taste. 4 To make the pie: • Preheat the oven to 190°C/Gas 5. Butter a baking dish and spread a small amount of bechamel on the bottom of the dish. • On top of that spread the poached fish and quartered eggs. • Spread with the remaining bechamel. Top with the mashed potatoes, place the langoustine heads in the potato, and brush with an egg wash. Bake for 30-40 minutes or until golden brown and. ◆

SCALLOPS BAKED IN THE SHELL Ser ves 4

I n g r e d i e nt s • 1 carrot, chopped • 1 leek, sliced • 1 teaspoon vegetable oil • 2 scallops per person or 3 x ½ • 100g puff pastry • 2 egg yolks White wine sauce • 1 tablespoon olive oil • 100g shallots, sliced • 250ml Noilly Prat vermouth • 250ml fish stock • 250ml whipping cream • Salt and pepper • ½ tablespoon grain mustard • 1 tablespoon chopped dill

M e th o d 1 Preparing the white wine sauce • Heat a heavy-bottomed pan on top of the stove and add the oil • Sweat the shallots gently for 3-4 minutes • Add the Noilly Prat and the fish stock and continue to cook until the mixture is reduced and has a syrupy consistency • Add the cream, bring back to the boil and reduce again slightly • Season with salt and pepper, then pass through a strainer or sieve • Add the grain mustard and chopped dill 2 Preparing the scallops • Slip a thin sharp knife between the shells and cut through the large white muscle tab (the abductor muscle) to release one side of the shell • Pry open the shell and pull everything out • Using a spoon, neatly scoop out the meat • Separate the white meat from the outer skirt and roe (the skirt and roe can be kept for making sauces and they freeze well) • Rinse the scallops and keep them in the fridge on a paper towel. Rinse the shells and pat them dry.

3 Assembling the dish • Sweat the carrot and leak in the oil over a low heat. Season and cook until they are soft but not browned - allow to cool • Take 4 washed shells and divide the leeks and carrots between them • Cut the scallops in half through the middle, season and place 4 pieces on each shell • Cover with 3 tablespoons of white wine sauce and top with the other shells • Preheat the oven to 200°C/Gas 6 • Roll out the puff pastry and cut into thin strips • Place a pastry strip around each scallop to seal the two shells together • Using your fingers, gently press the pastry in place to ensure that the seal is tight and there are no holes • Brush with egg yolk and cook in the hot oven for -10 minutes until the pastry is golden brown 4 Serve • Remove the scallop shells from the oven and run a sharp knife all the way around the outer crust • Serve on a bed of seaweed or some rock salt mixed with a little water to stop the shells rocking about and let your guests open the shell themselves. ◆

here's always one present that trumps everything else on Christmas Day. Sometimes it's entirely by virtue of being bigger, or even just having the biggest box. Alternatively, it can be something spectacular, something that gets played with all day and maybe makes a lot of noise or surprises everyone. Previous winners have included electric train sets, Skalextric, the dreaded Furby. For us last year it was an enormous wooden sledge, wrapped in a box as big as a grandfather clock. This year, the money's on this Deep Space marble run. It requires no batteries and is virtually impossible to break but allows for hours of fun, first in the building of an elaborate 3D structure out of 176 wooden pieces, and then in the playing with it, mostly because it glows in the dark. I

t’s almost impossible to describe how bizarre a cruise around the

archipelago of Galápagos really is. Unlike a jungle safari or rainforest trek, the animals here are like actors, ready and waiting for their audience to arrive. Step off the speedboat onto one of these deserted islands, and within seconds you’re standing in between a sea lion and marine iguana, neither of them at all affected by the dozens of cameras pointed in their direction. With less than 250,000 people visiting the archipelago each year, this is the trip of a lifetime and it doesn’t disappoint with impossibly white sands, turquoise seas and black lava rock setting the scene for even more incredible animals. With many islands uninhabited by humans, it’s easy to believe you’re the first to walk the unspoiled land and discover what Metropolitan Touring like to call the Galapagos Big 15 (see sidebar). As the original inspiration behind Charles Darwin’s theory of evolution, explained in revolutionary work The Origin of Species, the volcanic islands are a constant source of mystery and

intrigue for naturalists and tourists alike. As a result, days spent aboard the Santa Cruz II ship start early with a 7am wake up call Ω unheard of while on holiday Ω but setting an earlier alarm to watch the giant sun rise up from the sea is a good idea. While the landscape is beautiful it’s the wildlife people come to see. While some of the animals are endemic to a particular island Ω such as the world’s only flightless cormorant that can only be found on Fernandina and Isabela Ω sea lions in Galapagos are so common the locals calls them dogs. Swimming with the adults and their pups around Santa Fé, however, is something I’ll never forget. Resurfacing from pacific, I couldn’t wipe the smile from my face - until I looked back down. There, right below me, were two white-tipped sharks. Even though they’re completely harmless, their jawslike silhouette still took my breath away. Thankfully for those who can’t bare the thought of swimming in the depths of the ocean, the Santa Cruz II has its own glass bottom boat so no one misses out. Back on land, the flat places of Española are particularly special. As

the sole breeding ground for the entire population of the world’s waved albatross we stumbled across three of the giant birds performing their mating dance. Famed for their hilarious drunken waddle and intricate mating ritual, we watched on as we the male clacked beaks with both females; evidently the albatross men are just as indecisive as their human counterparts. The views found at Española are also the best with black lava rock and jagged cliffs creating a prehistoric landscape like nothing else. No sooner than we sat down on the rocks, a blowhole erupted in front of us; it seems there is no end to the wonders of Galápagos.

THE GALAPAGOS 15 Ecuadorian food highlights include lapingacho (fried potato cakes made with quesillo cheese, cooked on the griddle till golden, and served with chorizo and avocado). These are so good we’d rush to breakfast in hope that they were waiting but alas, they were a one-time thing. For lunch, the hearty locro soup is must-eat national dish. The warming and delicious potato stew is a classic corn, bean and potato soup that you top with avocado, cilantro and cancha corn nuts. To experience all Ecuador and the Galápagos have to offer, you logistically need nine days. We flew in to Quito

Step into CHARLES DARWIN’S SHOES and EXPERIENCE it all as he found it in 1535 and stayed in the beautiful 5* boutique hotel Casa Gangotena for two nights. Overlooking the Plaza San Francisco in the Historic Center, the mansion begins to feel like an extremely lovely second home. From here we flew to Baltra airport before boarding the Santa Cruz II. After four nights out at sea, we arrived at the Finch Bay Hotel which was a welcome return to dry land. This chic ecolodge is set on the beachfront of Puerto Ayora and has the most incredible pool so we made the most of the opportunity to relax and happily sat poolside with a mojito in hand. This is the way to travel for sure. While there’s no denying the entire trip was luxurious Ω with giant beds, wifi and a seemingly endless supply of pisco throughout Ω those onboard the Santa Cruz II still made it feel like we were one of the first to visit the archipelago. lanning a trip to China can be quite bewildering, albeit incredibly exciting. The difficulty is knowing where to begin. For me, the majestic capital city is a clear starting point; with its post-contemporary high-rise buildings and its ancient hideaways, it’s a study in contrasts and boasts treasures like the Forbidden City and Tiananmen Square. Next on the list is Shanghai, a buzzing metropolis gazing into the future. It’s a waterfront city taking China’s lightning-fast development to the next level with a jagged skyline on one side and charming Chinese heritage on the other. The contrast between these two sky scraping cities is remarkable. Shanghai, dubbed ‘the Paris of the East’ with its alluring skyline and ultra-luxe vibe, and Beijing with its rich heritage, Hutong lifestyle and electrifying pace. It’s among Beijing’s historic Hutongs where we begin our Waldorf journey. What was once the world’s most iconic hotel is now the most iconic portfolio of hotels. M

y property career began inadvertently when my brother got me a temp job at Douglas & Gordon during my university holidays, close to where I grew up in Barnes, south west London and also where he used to work. After I finished university, I started a longer six-week contract with them, a fortnight later I was taken aside and told that although I was frankly hopeless at paperwork, I clearly had the gift of the gab. I was offered a full-time role as a negotiator in the Battersea Park Lettings team where I hit my stride doing deals and loved being out of the office so much especially in such a lovely part of town. After a relatively short period and getting ARLA qualified I was promoted to manager of the team and was able to start establishing the skills that are so important in my role today. Thankfully, I also greatly improved my admin skills, although that is not my favorite aspect of the job! I stayed with the firm for a further six years before joining Strutt & Parker to head the Chelsea Lettings office in May 2013. Both my father and my brother are also

I studied International Hospitality and Business Management at University and spent a year working abroad in Canada as part of my course in a five-star resort. I learnt a lot of people skills during that time, and I think there are lots of parallels to be drawn between the luxury travel and high-end property industries – it’s all about delivering the very highest level of customer care and making your clients feel looked after. My life outside work is certainly varied. Since last summer I have been mentoring at one of Her Majesty’s Prisons in London which I find fascinating and hugely rewarding. I have been assigned a prisoner who I meet up with once a week with the aim being that I offer him support and advice ahead of his release next year, so that hopefully it is less likely he will

reoffend when he leaves. When you work in the luxury sector, it can be very easy to lose perspective, and it makes a real change to spend time with someone who sees things from such an alternate view. It makes me appreciate what I have – and also allows me to recognise how special the properties I rent are. I don’t like my life just to be about work so am always putting myself through some random course or activity. Last year I qualified as a Reiki practioner, a treatment I find really beneficial for both body and mind, and I’ve also just completed my Day Skipper qualification with the Royal Yachting Association. In fact this week I have my RYA VHF exam ahead of chartering a yacht without instruction for the first time this weekend. I was lucky enough to grow up on boats, and on the weekends I love to get out of the capital and spend some time on the south coast. I find being on the water very therapeutic and the perfect contrast to my hectic work life based just off Sloane Square.Working in the fast-paced letting industry can be very demanding and sometimes stressful but all my extra-curricular activities help to keep me balanced and make sure I never get bored. More is definitely more. u

GENTRIFICATION Has gentrification had its day?

I

f you’re a Londoner, then you’ll be familiar with the signs of gentrification. Skips breeding like rabbits, old pubs going gastro, branded coffee shops on every corner and estate agents lining the high street. You can see it in so many places. Current hotspots include Balham, Streatham, Kings Cross, Kensal Rise, Canning Town, Hoxton, Stoke Newington, Elephant and Castle, Peckham Rye and central Croydon, according to Richard Rogerson, CEO of property consultant RFR. It wasn’t always like this. Those who aren’t millennials may remember when gentrification was short-hand for a neighbourhood inching its way out of poverty, and how only a decade ago the wealth differences between areas was less pronounced. But not now. Many young Londoners see gentrification as a consequence of social inequality, and politicians are taking note. This includes mayor Sadiq Khan, who said recently that there were ‘growing concerns’ about the phenomenon.

Many young Londoners see gentrification as a consequence of social inequality “Gentrification can be a bit of a dirty word,” says Nic Whitten, head of research at agent JLL. “The dictionary definition is ‘wealthier residents moving into an area, and the changes that occur due to that influx of wealth at the expense or displacement of lower income existing residents’, so you can see why some people aren’t keen on it.” But whether you’re hoping for more artisan bread shops and boutique housing developments, or conversely think gentrification should be banned, it’s worth considering how it works. WHAT IS GENTRIFICATION? irstly, there’s the organic kind. This occurs in areas on the fringes F of already wealthy ones as those who can’t afford to live in the prime streets move to adjacent zones, pushing up house

prices and changing the local retail landscape. It’s a process now taking place in Balham and Tooting, just down the road from fashionable Clapham, for example. The other kind of gentrification is by design, a model that Sadiq Khan is most worried about. It is created by large-scale new homes, often in partnership with the local authority. “Developers often get a bad reputation when they move into an area, so it’s up to us to reassure local people that we’re not coming in with a bulldozer to destroy their community and that we have a genuine interest in working with them to make places better,” says Rebecca Wakefield of developer Banda Property. Do house prices rise as gentrification set in? “We recently looked at nine big regeneration including Kings Cross, Elephant & Castle, Canning Town and parts of Ealing all of which have had at least 1,000 homes added by developments,” says Nic Whitten. “Our research shows that this lifted local house prices on average by 40.5% over and above the normal growth you'd expect, which was over a five-year period.” DO COFFEE SHOPS CREATE GENTRIFICATION? I don’t think people build coffee shops and then the customers come, it's the other way around,” says Nic Whitten. “You do get early retail adopters among the big chains who will try and get in early, but really the local high street adapts to the new locals’ increased disposable income.”

CAN ANYTHING BE DONE TO STOP IT? ne argument put forward by O Richard Rogerson of RFR is that local people should benefit from the new opportunities that gentrification brings to an area, rather than feeling they are victims of it, and that problems occur “when the community feels [the area] is changing beyond recognition,” he says. u
