EDITOR’S LETTER
S
ummer in west London officially starts when the Serpentine unveils its annual pavilion. Ever since the scheme begain – in the millennium year – the park has provided a temporary home for a different structure every year, and they have ranged from the comical to the bizarre, all of them surprising and none of them immediately identifiable as a pavilion. Last year there was a sunken mirrored circle, and before that there was a bright red spiky one; there have been balloon-shaped ones and climbing frame-style wooden ones, glass ones and ones that appear to float – and this, the 13th pavilion, is a bizarre, ethereal lattice of steel poles, a sort of large white matchstick sculpture that looks like a semi-transparent white haze. It’s not just that it’s one of the most important events in the architectural calendar, but the pavilion is a marvellous public space, somewhere where people of all ages can go and just be. Anyway, now that we know it’s officially summer, we are are free to focus on all the usual summer things, including, in this issue, important things like festival fashion and festival beauty, alongside a host of other wellbeing-related subjects such as our annual spa guide and our favourite local beauty haunts. We hope you enjoy the issue.

LIFE IS A CABARET
Miss Hope Springs – aka Notting Hill-based Ty Jeffries – is the ultimate glamour puss showgirl . Absolutely meets her maker
A
t first glance, Ty Jeffries is not what you’d call feminine. This landscape gardener-turned composer, lyricist and comedian is over six foot and muscular, with not much by way of hair. But give him a couple of hours and his alter ego Miss Hope Springs will emerge from a flutter of make-up, blonde wigs, floating gowns and false eyelashes (seven sets). She is the ultimate glamour puss showgirl – and has been for about 40 years. Jeffries’ piercing blue eyes come over all aflutter as he elaborates. ‘Miss Hope Springs is a nightclub cabaret lounge act of a certain age. She’s been going since the early 70s in Las Vegas, in a not very
glamorous venue called the Starlight Lounge. She’s not a has-been, she’s a still-mightbe, in her mind. Hence the name, really.’ Miss Hope arrived in London reeling from the tragedy of her husband leaving her ‘for a 27-year old bubbly blonde called Carlos.’ Not that Jeffries has ever been to Vegas. ‘She’s entirely a figment of my own imagination,’ he says. ‘She’s not a pastiche, she’s an hommage to all those women of a certain age in showbusiness.’ Jeffries sees himself as ‘a bit like Dustin Hoffman’s Tootsie – I had to create my own diva because just weren’t the acts around to sing the sort of songs that I do.’ Jeffries’ father was the
late Lionel Jeffries, the actor famed for his unforgettable adaptation of The Railway Children, which he wrote and directed, as well as his role in Chitty Chitty Bang Bang and many other films spanning the 1950s to the 1980s. Ty had an amazingly starry childhood, with family friends including Fred Astaire, Diana Dors and Roald Dahl. So, tired of being a songwriter who had had many songs in the charts (for artists including Elton John and Chaka Khan) but never an actual big hit, he ‘put all his skills together and added some floor-toceiling glitter’. Now he not only writes and performs the show, composing, singing and playing the piano, but he
also does his own makeup, makes his own costumes and even does the lighting and choreography too. Miss Hope has been performing for the last three years and won the Brighton Fringe’s Best Cabaret award before moving to Brasserie Zedel, where she takes to the stage every Sunday evening. And Ty? You can spot him drinking coffee on Golborne Road any day. Though without the wig, he says, ‘people say I look like Adele’s sister.’

have a Natural Trumpet, a Cornetto, a Hurdy Gurdy, Lutes and Lyres. Some are new to me – I studied drama, not music, and I’m not an early music specialist. For me, it’s all about the connections between music and drama. What was the starting point for you? First you read the play, of course. And obviously the director will have something in mind. Here, Eve Best said: ‘I don’t know what I want, but I know that I want bagpipes.’ Had you ever worked with bagpipes before? No. You have to accept the drone. It is incredibly Celtic. So then what? I looked at the cast. The three witches are very exotic – one of them is half Nigerian, half Scottish and another one is Turkish – they’re a real mix. So I gave
them lots of styles, with North African elements and exotic touches. The music – especially for the matinees when you don’t have any darkness – needs to create a sense of doom. How do you know when you’ve finished? We’re doing more previews than usual, so we’ll still be evolving until press night. Until then the director can still cut things out, which for the composer can be like losing a limb. You have to be brave enough to leave it as late as you dare, but then the music does need to be ready for the band. Are you pleased with it? I think so. But you’re always a bit worried! TOIL AND TROUBLE West London’s Olly Fox is the composer of The Globe Theatre’s Macbeth, opening this month. Absolutely met him to find out why music is at the heart of this production There’s not usually any music in Macbeth is there? Admittedly it is one of Shakespeare’s least musical plays, but it’s part of the Globe tradition for music to help the narrative. You have to remember that there are no lights and no sound designer so it’s music that makes the atmosphere – it sort of takes on the role of lights, by closing in on a character, say.
So is composing for The Globe a very particular task? Yes! The sound reverberates off the wood so you need to get it right. There are no faders and you can’t mix it, so if you get it wrong you’re very exposed. You need a big percussion and we’re using a very eclectic range of instruments for this production, for the good reason that they’re loud. Some are 500 years old. We

CUPBOARD LOVE Highlights from eminent fashion editor Suzy Menkes’ legendary wardrobe go on sale at Christies this month. Absolutely has a preview

idely respected by fashion people all over the globe, Suzy Menkes has not thrown a single piece of clothing away since 1964. And when she decided to auction her collection, the people at Christie’s knew that ‘this was not going to be a wardrobe full of fashionable black uniforms.’ Menkes herself explains: ‘Being a maximalist by nature, I have always been drawn to print.’ The fashion visionary’s 80 lots span the biggest names in fashion from Ossie Clark and Emilio Pucci to Yves Saint Laurent and Christian Lacroix, including dresses, skirts, tops and accessories. The star lot of the sale is an Yves Saint Laurent cocktail jacket from his 1980 collection Le Soleil, estimated at £1,000-£2,000. Menkes says her clothes: ‘need to live again and this auction provides the opportunity for them to walk out in the sunshine, to dance the night away and to give someone else the joy that they gave to me.’

DUAL PURPOSE Twin sisters Annette and Dani Felder work together at their fashion label Felder Felder. Pendle Harte meets them Portraits by Kimi Hammerstroem
W
ith their long limbs and long blonde hair, identical twins Anette and Daniela Felder certainly make an impression. Though they actually look quite different, on account apparently of Dani being older. By one minute. Or was that younger? Twins can be confusing – it’s the way they finish each other’s sentences and the fact that after meeting them I struggle to remember which one said what, which one had the crucial minute on the other. The Felder sisters arrive at their regular haunt, the Electric, separately. Despite the limbs and hair they look nothing like Barbie, because their faces are barely made up and their expressions are striking, intense, German. Baader Meinhof Barbie maybe. No surprise that their first fashion gigs were in modeling. But modeling’s in the past – now their label Felder Felder is established with an aesthetic they describe as ‘elegant rock’n’roll with a bit of sex appeal’ and the sisters’ designs have a loyal following in the fashion world. Despite coming from deepest countryside ‘near Cologne,’ the pair are firmly rooted in west London, living and working within a small radius consciously apart from the fashion hub of east London. ‘Coming out of Central
St Martin’s when we started, it would have been the organic thing to move to east London and become an east London fashion designer. It was quite a bold move for us to stay in Notting Hill and it made us a different breed of designers. We’re less cliquey, we created our own world,’ says Dani. ‘Yes, there are different aesthetics, west and east – the things you surround yourself with create a different vibe. Here west London has a village feel but with a big city mentality,’ says Annette. Dani cuts in, agreeing: ‘It’s bohemian, rock and roll, punk, glamorous. Not as quirky as east London, not as trend-led, more timeless. When you look at west London labels like Preen and Temperley , the generations are more mixed, it’s mother, daughter and cool grandmother. Our elegant rock’n’roll with a bit of sex appeal aesthetic fits right in.’ Felder Felder’s clients range in age from 19 to 69, they say. ‘From Jan de Villeneuve to the young actress Gala Gordon,’ says Dani. ‘It’s attitude not age: the Felder Felder girl is fun and a bit wild at heart.’ In their native Germany their style is seen as ‘very London, very edgy’ and here the recent collection was described by Vogue as ‘grungy… effortlessly luxe… carefree cool’. The German look, they say, is ‘more androgynous, more serious – nobody really wears

dresses there.’ Currently FELDER FELDER AW13 CATWALK IMAGES the pair are preparing to show their SS14 collection in Berlin, and it promises ‘bolder, funkier colours’ which they say suit these uncertain times because ‘you have to be a bit fearless don’t you?’ And the aesthetic is growing up with them – their girlie rock and roll look is morphing into something more sophisticated. ‘We like to work with contrasts, which probably stems from being twins, and we try to find balance, so our pieces are never too sweet, too girly or too masculine.’ Even though it might not be obvious to the casual observer, Annette and Dani have different styles – for them, pieces are plainly ‘a Dani dress’ or an ‘A nnette dress’. ‘Different things suit us, even if nobody else might notice.’ Though there’s a fluidity to it and their personalities can overlap and

As twins, it was always clear that they should work together. ‘We really miss each other when we’re apart and we’re on the phone all day,’ says Annette. The sisters came to London ten years ago to look for internships after an encounter with designer and teacher at Central St Martins Robert Cary Williams, who wanted them to model for him. Working for him and milliner Stephen Jones led them to discover that the fashion world which they had worshipped from afar spanned so many different jobs – ‘we came from a village and had no idea about stylists
and all the different roles, it really opened our eyes.’ Cleverly, they opted to enroll of different courses at Central St Martins so that when they launched their first collection, Dani was the one at home with the sewing machine while Annette was in charge of inviting everybody. And they pulled it off – their launch event was a party at the Metropolitan hotel with music from Annette’s husband Arthur Baker and New York DJ Princess Superstar, attended by ‘everybody – we had buyers from France, we had [international trend forecaster] WGSN, i-D magazine, stylist Patti Wilson.’ Now the sisters have just launched a stylish new website, where – unusually for a small independent label – people can order directly from the catwalk in the vein of Topshop and Burberry. They’re always keen on collaborations – recent partnerships included latex designers Vin + Omi as well as sunglasses company Finest Seven – and are open to all kinds of projects. But in the meantime they can be spotted all over Notting Hill – at the Electric, Granger & Co and Gusto, to name a few haunts.

Anna Richardson TV presenter INTERVIEW LINDSAY BAKER PORTRAIT EMMA HARPIN
‘I
n the name of ‘immersive’ television, presenter Anna Richardson has done many things on camera – the Hollywood wax springs to mind, as does the naked dash on a Welsh beach. Now for a new C4 series, How Not To Get Old, the 43-year-old presenter has immersed herself in the world of beauty procedures. She even has a battle scar to prove it – the result of a ‘re-cell’ treatment where a skin biopsy is taken and then used to treat stretch marks. ‘An absolute waste of time, and it cost £2,500,’ she says when I meet her on location after a morning’s filming. ‘And I’ve been left with this,’ she adds crossly, pulling down the waistband of her jeans to reveal said scar at the top of her bikini line. She was not happy. ‘But then I voluntarily had it done,’ she says with a shrug, and she is clearly passionate about her new series. ‘Ageing is a national obsession, and we are reflecting that,’ she says. From The Sex Education Show and Supersize V Superskinny to, most recently, Secret Eaters, Richardson has carved a niche for herself as the presenter who will really get stuck into a subject. In the new series, she road-tests a number of therapies, which although ostensibly ‘non-invasive’ actually sound fairly full-on, many ‘involving needles and small scalpels’, as she puts it matter-of-factly. Some of the treatments sound positively medieval. There’s the ‘Vampire’ therapy or PRP (Platelet Rich Plasma) treatment, in which your blood is extracted, spun, and re-injected along the tear troughs of your eyes in order to treat dark circles. ‘It does work, though I was quite badly bruised for ten days and people were stopping me in the street and saying, “If it happens again go to the police.”’ Then there’s Ultherapy, which is ultrasound treatment to the jaw line. She saw the difference afterwards, though ‘it hurt like hell,’ she says. The results of a stem-cell facial were ‘excellent but temporary’, and ‘cool sculpting’ of the inner thigh was ‘uncomfortable, with no result at all’. Arguably, it is Richardson’s willingness to muck in that has been the secret of her success. ‘I’m like anyone else, I struggle with my weight, I struggle
with my looks,’ she says. ‘I don’t believe in that idea that you’re the presenter and so you’re separate – we’re all the same.’ In the strangely compelling series Secret Eaters she somehow manages to keep the balance away from voyeurism and towards info-tainment. ’You’d be amazed how much we underestimate what we eat – it applies to many of us, it’s not “let’s laugh at fat people.”’ She says that the knack of empathy and making people trust her came from her Staffordshire upbringing. ‘My dad’s a vicar and my mum’s an RE teacher, so I was brought up in an open household where you could get the bishop turning up on your doorstep or you could get a drunk, and you had to open to all those people and listen to their stories.’ Also, she doesn’t really do embarrassment. ‘I couldn’t care less,’ she says. Didn’t her religious upbringing make her more embarrassed to, for example, get naked on camera or talk about sex in a graphic way? ‘No, I think vicar’s daughters go the other way,’ she laughs. ‘No, I’ve not much truck with being embarrassed about sex. We’ve got a massive problem in this country with teenage pregnancies. I have a wealth of life experience that I’m happy to be honest about. Kids are crying out to know the facts.’ Although raised in the Midlands, she has lived in London for 20 years, and in Queen’s Park, and now Kensal Rise, for the past ten. She loves Notting Hill – particularly the market and the Electric, and always shops for clothes on Westbourne Grove. What does she like about west London? ‘East London is very young and self-consciously cool and west London is a bit more mature. Rather than trying to make a point, we’ve already made it and we’ve moved on.’ Her frankness and honesty are refreshing – she says her mother was a big inspiration, and you get the sense there is a Staffordshire sensibility at work. ‘I learnt from her to stand up for yourself and live the life you want to lead. I can’t bear secrets and cover ups. I’d rather everyone just said it like it is really.’

Everyone in London needs more space. Pendle Harte meets architect Sophie Nguyen, master of conjuring up square footage against the odds PICTURES: REBECCA NOONAN
P
angbourne Avenue W10. This stretch of 1920s houses is quieter than neighbouring St Quintin Avenue and Highlever Road, though there’s a large development under way on the site of the former Princess Louise hospital. These aren’t the prettiest houses in North Kensington, and nor are they the largest. But here French-born architect Sophie Nguyen has transformed a nondescript pebble-dashed end of terrace house into an impressive four-storey family home spanning nearly 200 square metres with a large basement and a separate self-contained flat. Everybody in the Royal Borough has an opinion on basements. The constant digging and building causes lots of controversy. Just a few weeks before I visit Nguyen, a banker in Elgin Crescent came under fire from high-profile neighbours Rachel Johnson and Ruby Wax, both of them furious at plans to dig a two-storey basement underneath his house, citing lorry traffic and ground instability as objections. Neighbours are almost universally against basements, while architects generally think underground development is the way forward. This Pangbourne Avenue basement, however, fantastic additional space though it may be, also solves another problem in that without it, the rest of the house would no longer be viable. ‘We bought the house in 2007, just when prices were going crazy, and we could only afford it because it had serious subsidence issues,’ explains Nguyen, showing us around. Digging underneath the house allowed them to underpin it completely, so the basement now holds the house up. What about destabilising the rest of the street? ‘It’s probably holding the whole street up!’ laughs Nguyen. As far as she’s concerned, we all need to be building downwards and she sees no evidence of resulting problems for neighbouring houses. ‘We need more space and basements have excellent thermal sustainability – the only problem is the lack of light.’ 45

While they were at it, in replacing the ground floor with a deep pit, they added a few extras. Lowering the floor by 20 centimetres gave the new ground floor an extra feeling of height, and at one end there’s a frosted glass area that lets light through into the basement below. But it’s the actual basement where the real surprise lies. Here, the street-facing wall is entirely made of glass and looks out onto a private terrace, 15 square metres of what estate agents call ‘wasted space’ but which for Nguyen and her family is a valuable sunny spot, albeit underground. This is what gives the house its moniker ‘hover house’, because it creates the illusion, from the street, that the house isn’t quite touching the ground. Plus, looking out onto a courtyard makes the space not feel like a basement at all. Downstairs functions as Nguyen’s office as well as the cinema room and makes the house significantly bigger – the entire project (including a small self-contained flat) added about 70 square metres of living space to the house, at a cost of about £1,800 per square metre, making a total of nearly 200 square metres of living space.
Everybody in the Royal Borough has an opinion on basements The result is minimalist – no fussy details, all simple fittings. The staircase rail is MDF with a thin oak veneer and Nguyen’s details are all careful, mathematical, angular. Her favourite part of the project is a point on the staircase, where you stand at the height of the glass floor and get the impressive double height view of basement and ground floor (pictured, far left). Glamorous Nguyen spent several years working for Richard Rogers on projects including the impressive Bordeaux Law Courts before setting up on her own and concentrating on domestic spaces. ‘I’m mostly interested in optimizing small spaces – the more constraints the better,’ she says. sophienguyenarchitects.com 46

Robin Farquhar and Hannah Dipper – aka People Will Always Need Plates – are the husband-andwife team behind the iconic Trellick image. Absolutely gets the lowdown on their mix of architecture and ceramics
Which came first – architecture or ceramics? How did People Will Always Need Plates start and why the name? The name comes from an old BT advert starring Maureen Lipman – her grandson calls to explain that he’s failed almost all his ‘O’ levels apart from Sociology, “...
you get an ‘ology, you’re a scientist.” and Pottery, “... very useful, Anthony, people will always need plates.” It was quoted back to Hannah on the news of her acceptance into the RCA and it stuck. We like the matter-of-factness about it. The ceramics came first, at least for Hannah, but the love of architecture, particularly Brutalist concrete, was a shared one that has clearly had an impact on our business over the last decade. You’re a husband and wife team. Had you both worked together before? What are your backgrounds? We are indeed – we met, became a couple, realised that we could work well together (and so set up the company) then got married. We’d worked for agencies for a good while before setting up People Will... and both felt the need to be more in control of the quality and direction of our design output and ultimately our

We work on a lot of different projects at the same time as we provide consultancy services to other brands. In the last five years we’ve been developing a lot of the kitchenware for Orla Kiely and other bigger brands (but much of this is under wraps for commercial reasons). What we can tell you is that the future of People Will... is very bright. We’re working on a new, much larger range of licensed products in ceramic, textiles, melamine, tin and stationery that should open us up to a whole new global set of customers. The new collections are being developed with the care and attention of the kind of company we’ve long been searching for, and we’re tremendously excited that after ten years of careful growth and development, we’ll finally have the backing and support of others to develop our brand in the right direction.
Trellick Tower polarises opinion and is loved and hated in equal measure with very little in between
own careers. Hannah studied Ceramics and Glass in Bath and worked in Stoke-on-Trent before completing an MA in ceramics and glass at the RCA, while I studied Industrial Design at Brunel then went to work in the events and exhibitions industry, working on motorshows, Disney rides and famous waxworks! As a result we have different, but (thankfully) complementary skills that enable us to work together really well. There’s no competition or clashing egos just a really strong collaborative approach. Your Trellick Tower image is everywhere. How did that take off? I guess we just tapped into something at the right time. We’ve always aim to create products that we would want to have around us, and in this case Trellick was a firm favourite of ours (Hannah wrote her dissertation on its Golden Section perfection while at college). It was one of 12 original drawings, but it was definitely the one that caught people’s imagination, perhaps because it polarises opinion and is loved and hated in equal measure, with very little in between. The trade press featured it a lot in the early days and for a while we were selling more Trellick products than all the others combined.
Most of your architectural drawings
depict modernist landmarks. Except Kensal Green, which is a standard Victorian terrace. Why? Our first set of drawings featured London homes from C18th right through to contemporary new-builds as we’re really drawn to the unseen, the stuff that’s all around us that isn’t landmark Late-Victorian terraces built by the church like those in Kensal Green cover vast swathes of the capital, almost everyone there has lived in one at some point so they’re incredibly familiar - this one just happened to be the one that Hannah was living in at the time. Subsequent ranges focused more on specific genres of architecture - Modernism, Brutalism - but our commissioned wares have continued to cover the history of British (and some European) architecture from C13th Bishops Palace in Wells to the brandspanking-new Mary Rose Museum in Portsmouth.
It’s not just plates. Your collaborations span everything from cushions to place mats, even clothes. What’s next?
Some of your plates have become part of the V&A’s permanent collection. What does that mean to you? We are utterly delighted! It’s great to have created a popular brand that continues to grow and to have it sustain us financially. However, for our work to be seen as important in the context of ceramic design history by such an illustrious establishment makes us very proud indeed. Can you describe the aesthetic at Baker & Gray? Carefully designed products that are visually beautiful, with great colour and texture. Products that are aspirational and inspirational, whose owners never want to throw away. To be able in 100 years to still see an item of B & G still treasured by the next generation.
bark of a tree that you think is lifeless. My life in design started in the fashion world, and I never dreamed in a million years that I would visit or live in Africa. This change of circumstance enabled me eventually to develop the Baker & Gray collection that I have today.
What’s your inspiration? Country houses, antique textiles, 18th century Europe – especially France and Italy. The furniture and colours, all those fabulous greys and golds. The idea of travelling to unknown and distant lands bringing home textiles, spices, flora and fauna. So a visit to the Natural History museum is a must for me, or a trip to Africa, or more recently, India. Africa has been my greatest inspiration: colour, texture, heart-stopping sights and sounds of the African bush. Smiley people and beetles! What appeals to you about Africa? Everything. It’s where it all began, really, Africa. I had no idea of what to expect on my first visit over 20 years ago, it was an amazing assault on the senses. The fabulous colours, cultural richness, space and light is an overwhelming memory that lives with me still. The rich colours of the earth, the scent of the soil after the first rains, the vast skies with amazing cloud formations and colours especially before a rainstorm, the plant and animal life. In spring, the freshest of every hue of green that you can imagine, suddenly bursting forth out of the driest
Can you tell us about a recent project? My most recent project was adding the finishing touches to a beautiful house in Wiltshire. Taking time, when it’s available, allows clients to really understand and appreciate how their home is going to work for them in the best possible way. Until one starts living in a space it is very difficult to understand how the natural light and changing seasons affect our living spaces. With furniture, it takes time to decide which existing family treasures to keep and what to get rid of. What’s your best seller? My embroidered cushions, always, either from our limited edition range of embroidered antique linens, cashmere and wool, or the Baker & Gray range that complements our fabric collection. Getting new cushions is a quick and affordable way of adding a splash of colour, sometimes with a hint of pattern, and decoration to a room. ver gazed admiringly at those abundant window boxes outside pubs and houses in Notting Hill? Perhaps you’re into ecology, concerned about bees... not to mention hover-fl ies, pollinating wasps, and other helpful insects. Lots of us in horticulture are talking about this topic right now. Gardening can happen even in a small space. But how to achieve good results without huge effort ? If you want maximum impact, the key is go simple – one or two plant varieties. Think typical Mediterranean window boxes. They’re full of geraniums (Latin: Pelargoniums) – one of the easiest, best-value plants for your dosh on a warm, sunny window ledge.
ABSOLUTELY ACHIEVABLE GARDENING IDEAS FOR JULY
In magnificent magentas and startling scarlets, Geraniums create summery zing that can last into autumn given some TLC. More subtle? There are gorgeous pastel pinks and whites. Plant colour preferences can change like fashion trends. My fi rst plantings were in-your-face bright primaries: red geraniums, blue lobelias and yellow wallflowers. Apparently they were rather macho choices. Oops! These days I favour a more mellow approach. Take your pick, and cram them in tight, choosing just one colour for full visual blast. Place a strawberry plant, at the corners for cascading greenery. Clifton Nurseries has inspiring displays, plants and gardening accessories.
Shady window ledge? Grow basil, chives and mint. These herbs prefer some shade. Plant your box as before, but give herbs space : one of each or three chive plants for a simpler effect. Keep this herb box moist, though not drenched. Chive flowers are edible; fab scattered over salad: a real summery taste. Ecologically minded? Our planet needs healthy bees and other pollinating insects for the survival of fruit trees, and many flowering crops. If you have a garden, add bee-friendly plants – try bgastache ‘Blackadder’; lavender; globe thistle; blue comfrey; verbena bonariensis. Now watch the bees enjoy your plants. uy five or six mature geraniums per medium window box, and a large bag of multipurpose compost (approx. 25 litres). ❋ Drill extra drainage holes at base of box, using largest drill bit. ❋ Add 5cm layer of polystyrene pieces

with terracotta boxes – re-water your box until water seeps out the drainage holes. ❋ TLC: feed geraniums monthly with diluted tomato food packaged in a red plastic bottle, powdered seaweed or liquid comfrey if you’re 100% organic. This pampering pays off.

All aboard State-funded boarding schools are back in fashion with Eton’s headmaster leading the way, reports Amanda Constance
T
he English boarding school. For many, it’s a term that conjures up Dickensian institutions where the upper classes send their offspring to be trussed up in top hats and tails, deprived of love and decent food, before they are released, years later, to run the country. Tony Little wouldn’t agree. The headmaster of Eton College is a vociferous advocate of a form of schooling that many regard as archaic. He believes that boarding encourages the development of both selfconfidence and a sense of purpose. Though few would dispute that an Eton education is the best money can buy, the money in question is an awful lot, with basic annual fees coming in at more than £32,000. But Little believes statefunded boarding schools can deliver much of what Eton can – and for far less money. To that end, he is currently in talks with ministers about the creation of a national network of state boarding schools. ‘In Britain, we have an internationally recognized approach to education through boarding. In the state sector, it has only been in the last year or so that there has been a growing realisation of how well this can work for young people. I think we would benefit nationally from having a good quality boarding network across the country, close to where young people live. With such a network, there’s a good chance exam results would go up.’ At present, there are 34 state boarding schools in Britain. The buzz about opening more can be seen in the marked rise in applications for boarding status from academies, educational charities and free schools. In the first four months of 2013, the State Boarding Schools’ Association (SBSA) said it had received more than 20 applications from those interested in opening new institutions. This compares with just one application a year in the past
five years. These new schools differ from traditional fee-paying boarding schools by charging only the cost of boarding, reducing the demands on parents’ bank accounts from an average of £30k a year to a more manageable £10k. According to Janette Wallis, senior editor of the Good Schools Guide, the

Hillary Moriarty, director of the Boarding Schools’ Association, suggests that changes to parents working lives have increased the appeal of boarding. ‘It is an attractive proposition for many families, particularly if mum and dad both work. It creates the idea of “On Monday we all go to work, see you on Friday.” If you’re on a train at 7am, get home at 7.30 or 8pm, there’s very little time for the kind of ideal vision of family life that we had 30 years ago.’ Three academies opened boarding facilities last year, with five more announcing plans to do the same. The Wellington Academy in Tidworth, Wiltshire, sponsored by the £30,000-a-year Wellington College, also offered boarding places to 100 pupils in 2012. And Durand Academy in Stockwell, south-London, has plans to open a £17m ‘Eton of the state sector’ for 600 inner-city pupils in the village of Stedham, West Sussex. And next September, Eton will open Holyport College, the first free school sponsored by and modelled on Eton, in the village of Holyport, near Maidenhead, Berkshire. Eight miles away from Eton itself, it will eventually take 225 boarders and 275 day pupils, who will use many of Eton’s facilities, including its magnificent sports grounds. Not surprisingly, more than 700 families have registered their children – even though some are only two years old. ‘If I could bottle it, what I want to come out of Holyport is exactly what I see here [at Eton],’ says Tony Little. ‘Young people coming out with this sense of self worth who are going to be engaged citizens, who believe in the realm of the possible, who roll up their sleeves and get things done.’
There is a recognition that boarding has changed dramatically from the days of ‘fagging’ and flogging recession is forcing cash-strapped parents to shop around and many of them ‘feel there are better state opportunities available than in the past’. Ten thousand a year is still a substantial outlay, but it often cancels out childcare costs. There is also a recognition that boarding has changed dramatically from the days of ‘fagging’ and flogging. The new, modern institutions take pastoral care as seriously as academic achievement and most offer weekly boarding.

Our Chamberlayne Road site is small and intimate, and everyone talks to each other. We have become really busy through word of mouth. What’s it like running a business with your sister? If I’d known how it would turn out I’d have called it Sisterhood. The salon opened in 2011, when I [Donia] was working in the City – I was just planning to invest in my sister’s business. But I started coming in on Saturdays and basically I fell in love with women! I’d been working in a very male environment and had probably become a bit manly. I found that I loved listening to people’s problems – it made me realise I’m not a freak. Working here helps me get to know myself better and better. So then I went to a beauty academy and learnt the skills.
Tell us about the new store. We opened in Portobello Road because we both grew up around here and needed a bigger shop – Chamberlayne Road is small and gets very busy. It’s more luxurious and spacious, maybe a bit less intense. Prices are the same but there’s more room to spread out, and a bit less chat! What’s your speciality? People come for the famous triple scrub pedicure, which leaves feet super smooth. And at the moment we’re doing lots of brights, fluoros and pastels, which look amazing whether you’re really pale or really dark. Nails are different to hair – you can experiment with anything. ROLL PLAY Japanese food expert Ian Bell of Portobello Road’s Ukai reveals the secrets of good sushi to Simon Moore PICTURES: REBECCA NOONAN
What’s the most important thing to consider when making sushi? The rice. I studied sushi 20 years ago under a very old-fashioned chef who tortured me for four years. I trained for hours and hours, days and days just cooking rice for the chef, and I kept on getting it wrong. Sushi rice is a very special kind of rice. It’s only for sushi. The terrain in Japan, the hot, humid valleys, the whole shebang is for this growth of Grade A sticky rice. If you buy it in a supermarket, it’s cheap basmati rice. When you get it home, they’re all broken. They’re not long like the ones you get in restaurants. They’re shorter, they’re all broken. It’s in the taste, in the texture and the air between the rice when you make it, there must be that ‘kush’, that feeling so it buzzes up to your palate. When you finish the rice [the chef] puts it on a bale, and you sheaf it with this big plastic thing. He sheaves diagonally right
through the rice when it’s steaming from the cooker. Put in rice vinaigrette, so you’ve got a nice sweet taste. That’s the sushi secret. You don’t put balsamic in sushi rice. Some non-Japanese don’t understand. They just bung anything in because they’ve run out of rice vinaigrette – they’ve lost the plot. I’ve gone to so many places in Piccadilly and Chinatown. The rice had no taste, they had hard bits in it and they use dark soya sauce, which is too salty. It’s for cooking. It’s only for cooking. These very fi ne points make sushi. It’s amazing that they get away with it – sushi is such a gourmet approach to food... Anyone can get away with chucking in anything, spices or mayo. Europeans love to ‘infuse’ anything they want. It’s easy to do that, if it’s cooking. In sushi, you cook it as it is: raw. Hence, a

It slithers down your tongue and your tastebuds fly all over the place
person who knows sushi, who eats sushi... they don’t have to be Japanese, they can be you. After a while you get this je ne sais quoi. You know that is not quite sushi. You know it should be just like that. No more, no less. No different. Your taste knows that something’s wrong. What first attracted you to Japanese food? I used to teach Japanese, I had a Japanese girlfriend and I was so curious. Why do you eat sushi? That was 20-odd years ago when nobody ate sushi. It wasn’t fashionable. My girlfriend brought me to a Japanese place and I loved it. It tastes as if it’s cooked. Especially salmon. Salmon twist rolls with avocado. It’s an even finer taste than smoked salmon. You think it is smoked, but it’s much better, because it just melts in your mouth and slithers down your tongue with your tastebuds flying all over the place. Once I knew how it tasted, I loved it. I said, “Wow! I want to learn!” I went and looked for a job. I had a good job – I was a financier – so why should I want to do sushi? It’s because I could earn enough money. They pay well, Japanese. Where does the name ‘Ukai’ come from? It’s derived from a thousand year-old fishing practice, whereby the cormorant catches the fish for the fisherman and he nooses it on the neck, so he can’t swallow the fish. He ties the bird to his catamaran. That’s where his little nets are. He nooses the bird, gets the big sweetfish out of his mouth, then he gives the little fish to the cormorant. So there’s that notion of how the fish was caught by the fisherman using the cormorant.
What are Ukai’s specialities? There are a few dishes that mark Ukai. A lot of people come here and ask for Ukai salad, for example. There’s an Ukai California – cream cheese, rocket and wild salmon. Little things identify us. The way we present our rolls is a little bit different. We make our own sauce. We always use the same things: sustainable fish, fresh produce from our locals. Everyone who comes here can always identify that it’s not from a bottle. It’s handmade. Everything is handmade. The rice is still warm when you eat it. Everyone buys our huge £7 Lovebox for lunch. It’s huge! It’s sixteen pieces and the locals lap it up. We’re not international, but we do make a mark. People who eat here never forget us. What do you like best about Portobello Road? There’s a lot happening in Portobello. It’s on the back track, it’s not on the main road. It’s also very clique-ified, it’s really nice and warm. People come here when the market’s going like the clappers, full of millions of humanoids going up and down looking at nothing. Then you sit here and it’s so calm. Everywhere you look now in Portobello, there’s this fusion of different nationalities. There’s excitement at night and at the weekends when it’s very crazy, and yet, Monday to Friday, we get our locals. Eighty per cent of my patrons are locals. A lot of places that have been going 40 years can’t even get five per cent; it’s like squeezing blood out of a stone. We’re trying to give back again – the same thing as Ukai – we thank you, locals.

he Windsor Castle is a place you can rely on to never change. The cosy bar with its tiny, mind-your-head doors between rooms, the wood paneling, the large beer garden. Even now that it’s had a refurb it still hasn’t changed. Sure, it’s a bit spruced up and there’s a new dining area, but the features we all know and love remain, thankfully, the same. On our Sunday lunch visit we were rained out of the garden but found shelter in a clever new nook near the garden door, a private cubby hole with a comfortable curved banquette and old
sepia photographs of the pub in the days when barrels were delivered by horse and cart. There’s a new menu that focuses cleverly on beer and food matching – and their beer festival was showcasing beers called things like Curious Brew, Snake Dog and Honkers Ale. Staff are well aware of the fierce loyalty this place inspires and our waitress spoke with reverence of long-term locals who remembered when there used to be tortoises in the garden. Tortoises! For Sunday lunch, there’s a slap-up menu of roasts and more. We were tempted by the whole chicken to share (and the Leffe Blonde recommended
with it) but opted in the end for more of a variety. To start, there was Devon crab with avocado, celeriac and apple coleslaw which was pretty, fresh and crunchy, while a goats cheese salad was warm and sweet. A main course of smoked salmon and hake fishcakes with samphire, spinach and hollandaise was high class, as was 28-day dry-aged ribeye of beef with Yorkshire pudding. There’s a Little Menu too, featuring all the usual children’s favourites and for pudding there was an amazing chewy brownie and a bakewell tart. This is a place that’s set to gain even more fans in its new, unchanged, incarnation. 75

ormerly Westbourne House and enjoying a major relaunch this month, Westbourne Grove’s premier cocktail establishment has upped the decor and rebooted the menu, both to fantastic effect. Rechristened No.65 & King, the comfortable, stylish refurbishment including curtained private rooms and sparse, fashionable neon makes for enjoyably cosmopolitan surroundings, topped up with a friendly welcome and enthusiastic descriptions of specials and ideas for appetizer cocktails. Ready to romance you through variety if not ampleness, the cocktail menu itself is seriously one to be reckoned with. Think you’ve seen them all? You haven’t. Kicking things off with an order of the Flight of three (an ingenious idea of serving mini-versions of each of the three appetizer cocktails in one go), the Nakedly Versatile
Martini, Barrel-aged Sweet Manhattan and Picon Biere proved to be a rich, colourful introduction to what’s available. Starters included zucchini fries with tarragon mayo, spicy crab cakes and salt & pepper baby squid with sweet chilli sauce. As with most things edible, a crisp breading or light batter usually intensifies taste pleasure by about a million – and place it next to a creamy, herb-infused condiment and the world just feels right. Also, with the knowledge that everything is put together from freshly sourced ingredients and expertly prepared, well, just expect to be making ‘yummy’ noises.
What? More cocktails? But it’s a Tuesday... saying that, the Apricot Mai Tai (a signature drink made with apricot rum and fresh lime) was delicious. I’ve never been able to refuse a Bloody Mary packed with Horeradish-infused vodka, and look! Here one is! Mains call for meat, a lot of meat. I opted for the grilled steak sandwich (perfectly rare, as requested), while my furtherly-carnivorous friend dove into the 10oz rib-eye steak (we may or may not have also proceeded to maim a rack of Bourbon-infused BBQ ribs). Hearty, flavoursome and perfectly-sized portions – I can’t deny that I’m a sucker for good cow, and No.65 & King delivers. With everything cooked to such an exacting standard, dessert hadn’t even occured to us, until the glimmering chocolate fondant and sizeable sundae hit the table and once again, we were lost. Dense, airy and far from the traditional dessert-pitfall of becoming cloying, flavours were subtle, sweet and pretty much the perfect full stop to the meal. While some relaunches may seem pointless with regard to service and menus, No.65 & King is an announcement in itself. While busier nights may not allow for a full appreciation of the newlyfurnished surroundings, it’s a social place with the versatility to be enjoyed for a quiet, cheeky midweek feast, or after work on a Friday with the rest of the office. Go for cocktails, stay for dinner. Trust me. RC

By Arabella Preston itting high above the shores of Lake Geneva in the French spa town of Evian, the serene Hotel Ermitage seems to float upon a cloud of well-being and tranquillity. From the moment I stepped into my room and opened the French doors to the clear lake air, I understood why the resort has been a Mecca for rest and recuperation for over 100 years. Taking the lift from my floor directly down to the hotel’s Spa Quatre Terres, I was transported to Bali via India and China through the dark wood decor and the healing hands of expert therapists. There’s a holistic focus – my massage therapist incorporated the use of healing crystals while giving me one of the best deep-tissue massages of my life. After recuperating on a soft bed with a glass of Evian – naturellement – I then spent the afternoon lazing in the spa’s Jacuzzi and steam room. The next morning the hotel’s dashing chauffeur took me down the hill to the lake and into the heart of the resort. I came, as others have been for centuries, to Les Thermes D’Evian to ‘take the waters’. This involved being pummelled by hydro jets (seriously enlivening) and being ‘rained on’ by heated Evian water while a therapist gave me an all-over body massage. Evian cannot be rivalled for its blend of tranquillity, excellent food and winning service. Next time I’ll be returning with my family in tow to take advantage of the superlative Kids’ Resort with its own pool, tennis lessons, cooking workshops and much more.... A
typical day at Ti Sana starts with power walking at 8.30am along the Adda River, juice for breakfast – think courgette, apple, carrot and ginger – and an hour-long fitness session. Lunch is served at the ‘Food Lab’ from 12.30 and consists of a large bowl of salad and dehydrated flax seed crackers, followed by (yes, thanks be to the detox gods, there’s a second course) a faux carb dish like courgette ‘spaghetti’ in a cashew nut sauce (no added spaghetti, of course, just cleverly cut vegetables). Five meals a day doesn’t sound too bad – breakfast, snack, lunch, snack, dinner – but when three of these ‘meals’ are juices, and one day a week is liquid only, things become a little more Spartan. Minimal food and gentle exercise are combined with a medical assessment, blood tests, a doctor’s appointment and a colonic – this is the only spa in Italy with the ‘Angel of Water’ machine which you operate yourself, keeping your dignity intact. The spa is well equipped, stocked with
organic products (like the Anika range) and kitted out with an infrared sauna, normal sauna, steam room and several jets and rain showers. Spa treatments, however, are limited to one or two per visit depending on your regime – Raw Food, Juicing or Energising. The focus is very much on what you are (or are not) eating, and the aim is to regulate cortisol levels by exercising in the morning, eating in the middle of the day and practicing Chinese Qi Gong meditation in the evening. This takes place in a large, light studio in one of the restored 18th century terracotta-roofed buildings – the hotel is made up of a cluster of these stone houses and the 22 bedrooms are scattered between buildings. You’ll leave enlightened – the emphasis at Ti Sana is on educating guests, with daily lectures on well-being so that you can continue the good work after. Ti Sana has three Active Life Programmes: Juicing Detox fasting; Fresh Lifestyle raw food and Energy Lifestyle with raw and healthy cooked foods.
et amidst the vineyards of the Chateau Smith Haut Lafitte estate in Bordeaux, Les Sources de Caudalie is a rural retreat with a twist. Inspired by the concept of the ‘French Paradox’, whereby the diet and lifestyle of Southwest France is seen as conducive to good health, the hotel has taken the concept to heart, playing host the original and now world-famous Vinothérapie spa. Here, treatments are winecentric, incorporating the benefits of the grapes from the Graves Grand Cru Classé vines which the spa overlooks. During my visit, I sampled the 100% Grape Cure, which involves three oenophilic treatments a day, including the signature Crushed Cabernet Scrub, the merlot wrap, the Fleur de Vigne wrap and the red vine bath. I loved the Wine Maker’s Massage, which involved a smooth, wooden stick usually used for crushing grapes being rolled over my back to relieve the tension. However, Les Sources de Caudalie is not for dieters – the food is too good. Choose from Michelin-starred fine dining at La Grand’Vigne, Chef Nicolas Masse’s restaurant overlooking the lake, or bistro-style food in La Table du Lavoir, in a 19thcentury wash house formerly used by winegrower’s wives – both too delicious for words. hen Kinleigh Folkard & Hayward asked me to open the sales division of their new Holland Park branch, I absolutely leapt at the opportunity. It was a decision of the heart and mind in equal parts and as my family has lived in the area for many, many years, the romantic attachment was there. In fact my grandfather, an officer in the British Army, bought his fi rst house on Holland Park itself in the 1930s while my great aunt, shortly after marrying a flamboyant Sicilian shipping magnate, purchased a grand property on Norland Square. Wind the clock forward 60 or 70 years from then and this has been a wonderful place to raise my children, Alexander and Katie, with excellent schools within striking distance and 54 acres of parkland almost on the doorstep. Our sales office may be new to the area, but I most certainly am not! I started selling property here 17 years ago and haven’t stopped since. My previous career in the world of fashion saw me spend much of my time in Italy, France and America which was of course incredibly interesting but as they say – there’s no place like home! I am always asked the questions, “Why did you leave such a glamorous career to work in property?” and “Wasn’t it a massive change for you?” But the logic is very simple really. To be truly successful in either field, I have learned it is essential to offer top class customer service, have a consummate understanding of the customer’s requirements and lots of energy. On a practical and commercial level I made sure that my fi rst buyers were those very same wealthy Italian, French and American owners of fashion companies
with whom I had worked closely and forged a business relationship of trust over many years. My fi rst ever sale was a beautiful maisonette on Elgin Crescent to an Italian. It took quite some persuading on my part as he was complaining that the price of this flat was exactly the same as the price he had just paid for a whole house in Como which was only 200m from the lake! Some things never change… Since that inspiring start and with Holland Park’s appeal among an international audience, I have made it my focus to build up a substantial network of very active global and local buyers. In particular, there is a real focus from Europe, the Middle East and Asia. My father, a retired senior diplomat and specialist in South East Asian affairs, has introduced me to some extremely affluent contacts over the years and I’ve been able to grow that base of contacts considerably. Since opening our sales office we have quickly built up a beautiful portfolio of properties attracting new buyers in their droves. Particularly motivated right now are buyers from France (Merci beaucoup Monsieur Hollande pour ce nouveau regime d’imposition), trust fund buyers from the UK and USA, Italians switching their search from Chelsea to Notting Hill, and Chinese buyers who accounted for 20% of the many sales we agreed this month. We maximize the potential offered by these buyers because members of my team are fluent in French, Italian and Arabic. To give each interested party a chance to present their best offer, their buying situation and to fully disclose the conditions of their offer, estate agents often ask them to place a Sealed Bid. This needs to be done by a set time and date. If you find yourself going to Sealed Bids I advise you to put forward a bold bid, imagining how you will react if you find out you have been unsuccessful; clearly set out your ability to proceed and whether you can fit in with
the seller’s timeline; provide a letter from your bank manager confirming you have sufficient cash funds (if you are a cash buyer); outline whether your offer is subject to survey or planning. Don’t be late with your bid. If you do not win the sealed bid all is not lost as estate agents are legally obliged to present all offers to their clients.
