here’s a positively subterranean invasion occurring. Local tunnel and basement enterprises are popping up everywhere – there we go again, we industrious city-dwellers finding ingenuous ways to make the most of disused space and circumvent escalating rent prices. The new London Fields Brewery makes its home within old railway arches (londonfieldsbrewery. co.uk) and I recently visited underground Dalston gig venue, Stamford Works. This is in addition to those mushrooming in other parts of London (Old Vic Tunnels, the archways of Malty Street Market). My food spotlight this month profiles Terence Conran’s Boundary restaurant in all its splendour – and provides a great example of a brilliant basement fine-dining experience. It’s definitely one of my restaurant hot spots. I love the fact that our fashion shoots can highlight the best of current trends to our readers in an eye-catching and striking way – and I especially love when we are able to do this at a beautiful local location, seeing familiar places with fresh eyes. This month our shoot goes modern heritage – tweeds mingle with well-crafted leathers as we mix classic British labels with the work of more contemporary designers. We bring the art of prim and proper dressing into the 21st century with the Draper’s Arms pub as our heritage setting – bring on those autumn sleeves! We’ve also included a Christmas gift and venue special, as we know how the time flies… before you know it, Advent will be demanding our attention – so here’s a little helping hand before it all kicks off. Enjoy the remainder of the Autumn and have a cracking bonfire night! NOVEMBER 2011

THEATRE THE FIREWATCHERS RUNNING THROUGHOUT NOVEMBER
East London, 1942. A relentless German bombing campaign continues on a scorched and devastated city. High upon a factory rooftop, two women keep watch over their little corner of London together. They are Firewatchers. Wealthy Catharine and munitions worker Jean are the most unlikely pairing, but over the course of one dramatic evening, their hopes, fears and differences play out amid the tension of an air raid. The Firewatchers tells the story of two very different - but equally lonely – women struggling to matter and keep their morale in a time when many thought Britain wouldn’t make it, but few dared say it.

THEATRE EASTEND CABARET: THE REVOLUTION WILL BE SEXUAL NOVEMBER 16 (PREVIEW), 17, 18, 19, 24, 25 & 26
Fast-rising stars of the neocabaret scene, the playfully perverse musical comedy duo EastEnd Cabaret are bringing their five-star Edinburgh Fringe debut, The Revolution Will Be Sexual, to the atmospheric pop-up performance space, the Tent at the Arcola Theatre. Exiled from a distant corner of the Eastern Bloc, salacious Soviet diva Bernadette Byrne (Jennifer Byrne) and her freakish musician accomplice Victor Victoria (Victoria Falconer-Pritchard) lure the audience into a strange world of pilfered propaganda, intimate tales, satirically subverted classics from Kurt Weill to the Kings of Leon, and their own darkly comical songs. eastendcabaret. com / arcolatheatre. com, Arcola Tent, 2 Ashwin Street, Dalston, E8 3DL

EXHIBITION ONE HUNDRED AND FORTY CHARACTERS 3 - 17 NOVEMBER
HOST Gallery will be announcing One Hundred & Forty Characters, an exhibition by British photographer Chris Floyd, as the inaugural exhibition in its newly refurbished and expanded space on Honduras Street. Inspired by Floyd’s interaction with the photographers, editors and other individuals he follows on Twitter, the project began in 2010 as a means to put faces to the online names he had become familiar with and culminates in this exhibition of 140 portraits of individuals at HOST. Floyd bridges the gap between how we maintain traditional relationships and how we increasingly form friendships through online communications. hostgallery.co.uk, 1 Honduras St , EC1Y 0TH

JOE ORTON BOOK COVERS GO ON SHOW AT ISLINGTON MUSEUM
The notorious collection of Islington library book covers defaced by Joe Orton and Kenneth Halliwell, are being displayed for the first time in a new exhibition at Islington Museum. In the late 1950s and early 1960s, Orton and Halliwell were both living in Islington and struggling to earn a living through writing. Unhappy with the local library bookshelves, which they claimed were weighed down with “rubbishy books”, they began stealing books and “doctoring” their covers, with scandalous results. Eventually the pair were unmasked and sentenced to six months in prison, but as the years passed and Orton’s reputation grew, the covers became famous and are today seen as “guerrilla art”. islington.gov.uk

School Run Mums Competition Winners
“The Chapel is an absolutely amazing salon and the team were completely brilliant. My hair has never looked this good and it was one of the best days ever – we felt utterly pampered from start to finish. It was a very luxurious treat for me and my friend Seraphina – thank you to all of The Chapel team who made our day so great.” – Amy Bateman
CA NOV 11 CITY SPY.indd 11
Over the summer, award-winning salon The Chapel ran a competition for one lucky ‘School Run Mum’ and her friend to win a hair makeover at their gorgeous Islington salon. The winner was chosen because her personal circumstances and hectic work schedule prevented her from taking any time out to look after herself. The team at The Chapel thought she deserved some key ‘me time’ and so booked her in last week to redeem her pampering prize. Amy Bateman, who’s son Caleb attends St Mary Magdeline’s Academy, brought her friend Seraphina Kusabbi along with her to the appointment to be treated too. Amy works as a fitness and Zumba instructor at Sequin Park gym and Seraphina runs her own beauty business from Church Street in Islington – both are very busy ladies and were delighted to be pampered for the day! The Chapel’s directors Billie and Georgia looked after Amy on the day; Billie treated Amy’s locks to a gorgeous, soft blonde colour to compliment her skin tone and eyes, then Georgia whisked her off and created a glamorous cut and finish that will be easy for Amy to recreate at home. To finish the look, Amy also received a full makeover. Her friend Seraphina was in the capable hands of Katy, who softened her dark locks and ensured she left the salon with a glamorous style that was sure to turn heads.

interview
A candid interview with Tim Minchin
M
y interview with Tim Minchin got off to a slightly odd start. I suppose I should have expected it – should have braced myself for the Australian musical comedy cyclone that I’d been reading about and watching on YouTube. Instead, I wrote some questions and then had to abort mission no less than thirty seconds in. And how glad I am of it, for his own spin on things made for a much more involving half hour. To start, he greets me like an old friend, telling me that he likes the sound of my name. He then launches into a lengthy explanation of how we (as people) exist inside our grandmother’s ovaries before we are born. And when I clarify that my surname used to be Baronowski and was changed by a relative during the Second World War, his opening gambit comes full circle, and he concludes by contemplating the advantages of hiding from the Nazis in my grandmother’s DNA. I feel compelled to agree: it’s not like anyone found me there. We chat about how he navigates the stormy waters of ‘celebrity’ – after all, 2011 has seen Tim Minchin’s name everywhere. Whether he’s doing the rounds of the TV chat shows, performing for thousands on one of his arena tours or trending on Twitter, it seems that Minchin’s time has finally come, and his singular style – all wild hair, bare feet, mascara and catchy-as-hell songs that make you laugh as well as tap your feet – is here to stay. He’s fast becoming a household name – so what does he do if someone hasn’t yet caught the Minchin bug? And how does he explain when someone asks him what he does for a living? He tells me he avoids the issue by telling them he’s a musician – though the difficulty there is that people then assume he’s out of work. “It’s nice when people don’t know who I am, so that we can crack on and have a normal
conversation,” he says, in a moment of almost-seriousness. Then: “It’s really hard being mildly well-known.” But for all his lightness of heart, Tim Minchin does recognise that, although the last few years have been good for him, he’s not quite the overnight success some articles have made out – in fact, he prefers to think of his ‘breakout year’ as a five-year breakout, which doesn’t have quite the same ring to it but probably reflects a talent that has earned a place in the nation’s hearts – and is thus here to stay. Though for all that, I offer, five years from unknown to top of the comedy tree
House to writing the music and lyrics for the Royal Shakespeare Company’s acclaimed adaptation of Roald Dahl’s Matilda. “What has happened this year,” he says, “is that people have come to recognise me for what I do, rather than trying to work out what I am. In terms of breaking out, the most important thing to me is that I’m my own thing.” This crops up again when we talk about how he is selling out bigger venues than most bands and musicians. “This is all beyond my most lofty aspirations,” he replies. “Which isn’t to say I’m all weird about it – it has grown quickly, but quite manageably, and I’ve had time to adjust. It’s incredibly exciting to have an audience of any sort, and a big one is particularly cool.” I ask him how he came to be a man of such diverse ability. “I’m incredibly bad at doing more than one thing at once,” he says. “I have to allot time periods for specific tasks. If I go on tour, that’s my focus. I often feel that I can’t concentrate on a project unless I keep my week free for it. Matilda was daunting in the sense that if I really thought about what I was doing, it would be easy to get in a tizz. There’s a part of me that thinks I should still be playing keyboards in a pub in Western Australia and nothing fundamentally has changed to make me think I should be allowed to do what I do. But a larger part of me thinks ‘Right on, I should definitely be doing what I’m doing.’” Creatively speaking, Minchin is not really interested in musicals, and “certainly not the jukebox variety, or the back catalogue of a band wedged into a crap story.” Of Matilda he says, “It was totally invigorating working with the team and Dennis Kelly, my co-writer. Our workshop sessions were amazing; you would think we were planning the invasion of a country – grown men intensely discussing the intention of a child
“Where I live is selfcontained and away from the tube and there are nice parks and nice cafes and good schools and loads of people with kids… And Simon Pegg lives there, as well as a whole lot of other artists. Although [David] Tennant just left – annoying!” remains a pretty rapid ascent. Most comics wouldn’t say no to Minchin’s trajectory. “The rise to success has been quick in the arts world, I guess,” he says, “but it’s not been X Factor quick, which leads me to think that actually really it’s been exponential.” He adds that he’s incredibly grateful to have such an adoring audience and remains surprised that he has earned enough money to buy a house – five years ago, when he emigrated to the UK from his native Australia, he didn’t know if that was something he would ever achieve. He refers to his particular skill-set as ‘slightly weird’, but is thankful of the opportunities this has spawned – from performing at the BBC Proms and the Sydney Opera

interview Matilda, THE MUSICAL
“It’s incredibly exciting to have an audience of any sort, and a big one is particularly cool”
in this moment! I was incredibly excited about the musical. I’d been to the Dahl estate before I was involved, and I’d discussed the rights to Matilda, so it’s an interesting coincidence that I ended up writing the score.” He concludes “I do believe in fate. I can’t be holier-than-thou about this, though; Matilda was a very wellestablished story and exceedingly popular in its own right… for my next project I’d like to work on something from the ground up, based on nothing but my own stupid brain.” He then lets me in on the fact that he’s slipped into his local pharmacy to buy some concealer for a filming appointment later, before explaining that he’s compulsively honest. A true North Londoner now, having worked in Highgate for some time on the original cast recording for Matilda and now residing in Crouch End, Minchin has only good things to say about his local area. “Where I live is self-contained and away from the tube and there are nice parks and nice cafes and good schools and loads of people with kids… And Simon Pegg lives there, as well as a
whole lot of other artists. Although [David] Tennant just left – annoying!” He continues, “My wife and I had always assumed we’d move back to Australia – we’re both from Perth and our families are mostly still there – but it’s getting harder and harder to see how or when that will happen. I want my kids to have an upbringing like mine, full of beaches and sport and going to farms. But I’ve had to come to terms with the fact that even if I replicate the geography of my childhood, my children won’t have the same sort of experience as I did. My dad wasn’t an opinionated comedian!” This surprises me a little – my picture of Tim Minchin being less about vociferous opinions and more about mischievous wit. But one glance at Google explains a lot – this is a man unafraid to speak his mind on big topics that interest him (organised religion in particular: check out his satirical song ‘The Pope’ – but only if you’re over 18 and have a high tolerance for the F-bomb).
We end by discussing Minchin’s own taste in music, because it seems to me that he’s been feted for his musical ability as much as for his sense of humour – but his response is a tad surprising – if understandable. “I basically never listen to music,” he says. “I listen to podcasts while I run, and will sometimes put something classical on in the car. I’m trying to listen to more, but I’m just not in the habit. It’s something to do with thinking about and playing music all day. By the time I stop working, I quite like peace. When people come over to dinner, I put tunes on. Usually Kinks, Beatles, Stones, or acid jazz, or oldschool jazz like Etta or Satchmo.” And there you have it: one of the nation’s funniest and friendliest stars of the moment is about as unpredictable (and disarmingly honest) as they come. Australia’s loss is North London’s gain. And Crouch Enders: look out for him lurking in the cosmetics aisles of your local pharmacy. Matilda runs at The Cambridge Theatre from 25 October matildathemusical.com, timminchin.com/

GREEN The small suburb of Newington Green in North London doesn’t just have a fascinating history - due to some heavy local investment, it has a very exciting future too...
N
estled between Stoke Newington and Islington, the small neighbourhood of Newington Green is easily missed. However, as home to some of London’s oldest buildings and most famous historical figures from Samuel Pepys to King Henry VIII - the recently redeveloped area is certainly not one to be overlooked. In the 16th century, Newington Green was surrounded by woodland
WORDS: GEMMA BILLINGTON PHOTOGRAPHY: MAKOTO YAMASHITA (MAYBEMAQ.EU)
and dotted with a small number of houses; before this it was an agricultural suburb. Historically the area is closely associated with the Tudors: King Henry VIII used a lodge on the south side of the Green as a hunting base. Street names in the area such as King Henry’s Walk, Boleyn Road and Wolsey Road reflect this Tudor influence. Though sparsely populated and despite its humble, rural origins,
during the 18th century Newington Green went on to develop a reputation as a place for free thinkers and revolutionaries, largely thanks to the alternative schools and universities in the area. These included Morton’s Newington Green Academy, which was attended by Robsinson Crusoe author Daniel Defoe. The philosopher, radical and moral leader Dr Richard Price resided at 54 Newington Green, and his house

became a meeting place for some of the most prominent figures of the time, Joseph Priestly, Benjamin Franklin and Thomas Jefferson among them. Another famous visitor to the house - and a figure with whom Newington Green is still widely associated - was the feminist writer Mary Wollstonecraft (mother of Frankenstein author Mary Shelley) who wrote the hugely influential manifesto, A Vindication of the Rights of Women. Despite its interesting history and eventual transformation into the trendy community we know today, for most of the last few centuries the area was rundown and neglected. Prior to the recent gentrification, many lives and properties were destroyed during the Second World War. The Grade I-listed homes at 52-55 Newington Green Terrace, however, survived - and are considered the oldest
running terrace in England today. The Newington Green Action Group (NGAG) was set up in 1979 to steer the regeneration process, which was completed in 2005. The group is involved with all aspects of the community, from hosting events to devising neighbourhood safety initiatives. Currently, NGAG is campaigning for the erection of a statue of Mary Wolllstonecraft. Kirsty Valentine, manager of local pub the Alma, was approached by Islington Council last year about setting up a local Traders Association. LOCAL FOCUS Favourite Local Vintage Supplier? Any of the many vintage shops on Holloway Road, including, of course, Vivienne of Holloway, we just love her 50s style dresses. Brick Lane is another gem for vintage treasures. Favourite VintageStyle Bar: Drink, Shop & Do on Caledonian Road is a favourite, but we’re biased! They do great food and cocktails in a relaxed atmosphere which is perfect for a catch-up with friends.
Close Up
Favourite Shops in the area: Camden Passage in Angel is full of great stalls and shops to have a potter around. Keep an eye and an ear out for the French femme - she knows her vintage!
Can you sum up your day in one short paragraph? When we have a shoot on we try (and mostly fail) to get an early night. Once we’re fed and watered, we take another look at the brief, and do a fi nal check of our kits. When we arrive at the location, we make sure to get acquainted with everyone, and have a chat about what direction the shoot will take. As we’re one of the fi rst to arrive to prep the models for styling, it gives INSPIRATIONS Favourite film: The Classics - Gone with the Wind, The Edge of Love, Some like it Hot. All of these films embody timeless style and act as great reference for vintage looks. Favourite song: Lana Del Rey Video Games Favourite holiday destination: Railay beach in Thailand or Ireland (home).
What does it take to be a good vintage stylist? A basic knowledge of era you’re trying to emulate is always a plus; it’s great to have something to reference when creating a look. The ability to be flexible is so important as well as being able to listen and create what people want.
With Dolly & Rhonda vintage hair and make-up specialists us the opportunity to have a chat with them before they get to work. Once we’ve completed the looks, it’s a matter of touching up throughout the shoot and making sure that it comes across on camera.Although a professional approach is necessary, we feel that it’s important to have a fun atmosphere. You can’t beat fi nishing work with a smile. Most treasured possession: Our Passports Favourite beauty brands? Aveda for guilt-free styling, Schwarzkopf to prep, then VO5 hairspray to finish. Armani makeup is an all time favourite for its build-able coverage and rich colours. Mac and Illamasqua for their extensive colour range and innovative products.
What did you do before this? Everything - between us we’ve covered a range of careers from Lifesaving to Food PR!
What’s your favourite ‘era’? 60s baby! - This decade is symbolized by women like Brigitte Bardot, whose style continues to influence today. We especially love the couples of the 60s - Mick Jagger and Marianne Faithful, Patti Boyd and George Harrison; they just don’t make them like they used to. Do you think people need to make more of an effort to dress up? Yes! We are massive fans of getting all dressed up, but we definitely don’t do it often enough. We love the glamour of time gone by, and the effort that went into daily dressing. Despite the lack of modern conveniences, these ladies still managed to look stunning. Who’s style do you most admire and why? Diane Kruger, because have you ever seen her look bad?! Helena Bonham Carter, her last Marc Jacobs ad campaign cemented our love for her. Dolly & Rhonda run a Pin-up Vintage Hair& Make-up night at Drink Shop & Do every second Thursday: drinkshopdo.com, twitter.com/ DollyandRhonda, dollyandrhonda@gmail.com 27

Smooth Operator Gemma Billington visits Smooth You for the ultimate body toning and firming package
T
he first thing that strikes you about Smooth You Hair & Beauty salon - even from afar is how sleek and shiny it is. The place really lives up to it’s ‘smooth’ name; every surface is polished and pristine and decorated in cream with mirrored surfaces. Even my humble glass of water and biscotti are served on a sleek mirror tray. Having opened only four months ago, Smooth You has done an impressive job of establishing itself amongst Islington’s numerous salons and is already a celebrity favourite. Known as hair extension experts, they also have an extensive menu of beauty, body and hair treatments. Today I’ve opted for a total body blitz, combining the popular Soprano Laser Skin Tightening System and Murad Body Firm treatment. Though the (unfairly brief) bikini season is now a distant memory, the desire to tone-up without vigorous exercise is always appealing; not to mention the fast approaching Christmas parties and all the little black dresses in my wardrobe that will need squeezing into. The therapies I’ve signed up for today promise to leave me toned and lithe with reduced stretchmarks and cellulite. Great! Agi introduces herself as my therapist and gives me a tour. The ground floor is a sophisticated space dedicated to hairdressing; there are three spacious therapy rooms downstairs and even a VIP area for special treatments and famous clientele who desire a bit of privacy.
The Soprano machine has been prominent in the media recently and is the same piece of equipment used for pain-free laser hair removal - something that I should perhaps have invested in as I strip down for my treatment, unveiling a pair of pale, hairy legs. As Agi warms up the machine, she asks which body bits I’m specifically looking to tone-up (the laser can be used on a multitude of problem areas including stomach, thighs and arms). Though no Gisele Bündchen, I’m generally happy with my body. However, as a self-confessed gym-phobe and dessert enthusiast, I’ve recently succumbed to the dreaded love-handles; not to mention a few sneaky stretchmarks, so Agi agrees to focus her efforts on these areas. After a relaxing exfoliation prep to my legs, thighs and abdomen, my sides are prepared for the laser infra-red treatment with a dollop of ultrasound gel. Throughout my appointment, Agi is everything and more that you could want from a therapist. Friendly, helpful and enthusiastic, she talks me through every aspect of the treatment and apologises profusely for the freezing cold gel. A new and increasingly popular treatment, the
laser works by heating layers of the skin to promote collagen production. This results in tighter, more toned skin and is a noninvasive alternative to cosmetic surgery. The infra-red light is rubbed over the gel in quick, vigorous strokes and gradually gets hotter and hotter. Agi constantly asks how I’m doing, but the experience isn’t painful at all and takes mere minutes. I’m left with two pink sides - as if I’ve been in the sun too long. A respected dermatologist, pharmacist and Professor of medicine, Dr Murad is a renowned skin health expert. The first product from his range is a mask loaded with vitamin C which is applied with invigorating yet relaxing massage technique, followed by a firming serum and cream. The slimming results will show in three weeks when the laser treatment kicks in; but my skin is noticeably brighter with a buzzing sensation as if I’ve had a serious gym session. It’s a shame to put my thick black tights back on, but I leave relaxed (with a lovely complimentary goody bag) and look forward to seeing the results; just in time for those party dresses. n Prices start from £75 Smooth You 70 Essex Road, N1 8LT smoothyou.co.uk 0207 704 1955

East Bound and Down Helen Baron heads to The Boundary for a cosmopolitan feast...
I
’m no stranger to the merits of the Boundary. Since Terence Conran first unveiled his exciting east London outpost almost three years ago, I’ve regularly been in attendance. As the affluence of the 1980s opened our eyes to the joys of fine dining (and indeed since Conran himself began to fly the flag for the form in the UK), high class establishments began to mushroom across London – most notably in Chelsea and Soho – helping to make the capital a real contender on the global culinary scene, along with traditional centres of excellence like Paris and New York. But despite its revival as a centre of arts, fashion and commerce in the first decade of the new millennium, Shoreditch didn’t have a finger in this particular pie. And Conran seems to have known this. Recognising that the area was becoming a foodie Mecca – the growing legion of independent coffee houses, high quality delis and hipster diners was a pretty telling clue – the grand arbiter of British design and restaurateur par excellence decided it was high time he lent the locale a little of his own inimitable vision. The result is the Boundary Project, comprised of the Boundary itself
and its sister canteen-cum-food shop-cumbakery, the Albion Café, as well as a small (but perfectly formed) luxury hotel. The building has thus become a hub of activity at the heart of Shoreditch, rivalled only by private member’s club Shoreditch House, which sits almost directly opposite. But naturally, the appeal of a private member’s club is limited by definition; so does Sir Terence’s effort have the edge? The first thing to say about Conran is, he does nothing by halves – after all, style is his specialty. Every detail of aesthetic, ambience and – of course – the grub itself is thoughtout and finessed to the nth degree. And with this in mind, the Boundary might just be his greatest success yet. Kitted out with divinely decadent (and yet chicly contemporary) Art Deco flourishes, the Boundary stretches out below ground in an elegant haze of golden lamplight and pristine glassware. In the warmer months, the main restaurant is supplemented with an impressive roof garden grill restaurant (which unfortunately doesn’t – or can’t, thanks to our miserably unpredictable weather – take bookings), but my latest visit came just as the brief September heat-wave was giving way to October’s bluster
and chill, and down below the gloomy streets was the perfect place to be. Still, there was mild trepidation. As I’ve mentioned, I’m no stranger to the Boundary; in fact, it’s one of my favourite restaurants. But as the menu is always changing and the standards are set so high, I couldn’t help but wonder what would result when I set out to review it for professional purposes. To start your evening in the Boundary’s bar is a pleasure indeed. My companion and I find ourselves seated in boldly cinematic Art Deco chairs and are soon sipping cool cocktails offered up by an evidently expert bartender; my Petite Julie is a heady concoction combining Smirnoff Black vodka with fine-strained Peche de Vigne, lemon, apple and basil. The tipples serve as the perfect precursors to the meal… and before too long, our table awaits. The thing I love most about the Boundary is the simple fact that everything on the menu is of such incredibly fine quality; it makes it nigh-impossible to make a wrong choice. The freshness and inspired mixing of ingredients never ceases to amaze me. To start, my companion and I enjoy a beetroot salad and cuisse grenouilles (that’s frog’s legs to you and

Filet de bœuf au poivre I) with wines as recommended by our lovely sommelier – a Bourgogne Chardonnay and a Viognier. To follow, there’s a wild mushroom risotto and rack of lamb (accompanied by a glass of Touriga Nacional). The risotto was a deliberate choice. Normally included on a menu as a vegetarian-appeasing afterthought, it’s hardly a dish to get excited about. But at the Boundary, they do things differently: this risotto was better than good; it was supreme. Ditto the heritage tomato side salad, which was literally bursting with flavour. The girolles were fantastically foresty, the dish creamy and thick with flavour. The rack of lamb, meanwhile, was served tender in a herby crust with buttery, garlicky flageolet beans, and was a wonderfully astute example of cuisine de terroir. It’s this kind of balancing act that the Boundary manages to perform so well, serving the most rare and refined French gastronomic delights without ever sacrificing flavour for fuss. It’s a truth that seemed more present than ever as we finished our evening with a classically mouthwatering crème brûlée (with accompanying Madeira) and the St Emilion au Chocolat with a deliciously dark Maury – a consummate match for the dish. The service throughout the evening was as sharp and charming as could be wished, and the convivial, cosmopolitan buzz of the restaurant never once abated. My companion and I had a delightful evening and we promised we’d be eastbound and down for another trip to Sir Terence’s latest triumph in the very near future. Serves two 2x 200g fillet 20ml brandy 1tbs unsalted butter black pepper 1 tbs white pepper 1tbs 100ml veal or beef stock reduction 1. C rush the black and white pepper separately in a mortar and pestle until coarse, then sieve until there is no dust left. 2. Press the one flat face of the steak into the coarse peppers (mixed together) making sure they stick. 3. Season with salt then place in a cold pan, pepper side down with a tbs of vegetable oil, moving onto a medium heat. 4. When the steak forms a crust at the bottom, turn it over and seal the other side too.
“This classic dish has earned its place back on our menu by popular demand and its simplicity leaves no room for error. The cracking of the pepper and searing must be just-so, the draining of excess oil and foaming of the butter and flambé not underestimated, to get the finished dish right.” 5. S train any excess oil off and add the butter; when it starts foaming add the brandy and flambé, then add the veal stock and bring to the boil. 6. T ake the steak out and put it onto a tray in the oven at a low temperature. 7. S train the sauce and finish with a teaspoon of double cream. Serve the sauce around the fillet on a warmed plate with sides of creamed spinach and classic pommes frites.

RESTAURANT REVIEW
ICE, ICE, BABY! Harry Plume discovers what’s cool about the Icebar...
A
fter the very pleasant but unseasonably hot start to October with temperatures soaring through the record books, my date with the IceBar coincides with the dramatic cold snap and predictions of snow! Quite timely to rug up, however still living the Indian summer dream, I arrive unwittingly wearing open toed shoes. Nestled at the top end of Heddon Street, a popular street for alfresco dining and cocktails and just off Regents Street, the IceBar can provide a fun night ‘with a difference’. We start our evening in the Wolf Bar on Ground level, and enjoy the spacious and relaxed surroundings. The dark wooden furnishings and draped transparent curtains giving it almost a Balinese feel. There is a vibrant atmosphere, a very well stocked bar and drinks menu to match. It offers a nice option for those wanting to switch off and escape from the real world. As it nears 7.15pm, there is a real buzz as people mill around the entrance for their 40 minutes of frozen fun. With a strict limit of 60 per session, it is best to book in advance to avoid disappointment. The Below Zero bar and the entire interior is made purely from ice harvested from the frozen Torne River in Sweden, known for its exceptional and crystal clear purity. As we step inside the UK’s only permanent bar made of ice, the sub zero temperatures tingle my exposed toes, but my body is kept cosy and warm in the stylish blue thermal cape with faux fur trimmings. My favourite moment once inside the invigorating igloo is sipping from the precision cut iced cube that contains my pleasant vodka cocktail, which surprisingly
does not stick to your mouth or tongue on contact, so no iced injuries! Once my toes begin to lose feeling, we exit and de-cape and are led downstairs to the Moose Dining room, where we are transported from the bright white land of ice to the dark warm depths of comfort. It is the perfect complement. The lower ground restaurant seats up to 75, however with the option for private hire, the larger section of the restaurant had been taken over by a function. The smaller area includes the bar with a chic edge and continues the theme of the Wolf Bar with warm dark furnishings. The collection of booths and tables create a relaxed personal atmosphere and provides a sumptuous answer for both intimate and social affairs. Continuing the cocktail theme, we opt for bubbles and a dirty martini, 3 olives please! The beverage options cater for all preferences, so it is difficult to be disappointed. Turning to the menu, IceBar offers ‘social’ sharing plates, light bites or more substantial meals and there are plenty of enticing options. We select a number of sharing plates, a mixture of seafood, meat and vegetarian, and our dishes arrive sporadically throughout the evening as we catch up on the week and intermittently chat with the attentive waiter passionately relaying stories of his IceBar experiences.
We love the Cauliflower risotto, mascarpone, shallots, pine nuts and truffle oil. The creamy richness of the mascarpone complemented by the texture of the cauliflower and pine nuts creates a very decadent comforting dish. The rocket parmesan salad with a classic vinaigrette is such a simple dish and succeeds on the quality of ingredients. This one thrives and is a perfect complement to our other selections. Other appetising dishes we sample include fresh seared scallops, salt ‘n‘ pepper prawns with a definite zing of chilli and garlic, smoked wood pigeon and Merguez sausage ravioli, which together make for an enjoyable savoury feast of flavours. We manage to find a little space for desserts, the menu just too tempting to ignore. We share an indulgent Chocolate tart with hazelnuts and a Baileys mousse and a selection of sorbets to cleanse the palette. These are a lovely combination of refreshing treats to end our evening. The IceBar is not only a fun night with a difference but also offers a great setting for some culinary delights. It presents a complete evening of wining and dining, with a refreshing twist.

SONIA MURRAY Sonia Murray is the owner of chic hair and beauty salon 171, named after its Upper Street location. She’s been in the business for the past fifteen years so we decided to chat to her about Islington -– and what makes 171 a cut above the rest How did you start your business, 171 Hair & Beauty? I started out in Harrods and was a beautician in Selfridges, then I had my own shop in the West End on both Duke Street and Chiltern Street. However, I live in Islington and when we started 171 fifteen years ago there were no beauty salons. There were plenty of hair salons but there was a gap in the market for beauty specialists. How did you go about deciding the interior decor for the salon? I’m lucky enough to be friends with interior designer Graham Wynne who has worked for the BBC on the programme Changing Rooms. He designed the salon and his style is very clean and sophisticated.
Obviously you have combined both hair and beauty services at 171 from the start. What kind of treatments do you offer clients? What are the most popular? We offer a full range of treatments, from waxing to manis and pedis and specialist facials and electrolysis. We’re open to anything new in the market and what we think may be popular with clients, but we always research, discuss and try out everything before we offer it. As far as hair is concerned, I’d say the most popular service is colouring and beauty-wise, it’s got to be waxing and nails. How popular are your extensions and bridal hair services? Extensions are quite popular but they are very specialist and can be expensive - we have around five or six regulars who we do them for. Our Bridal services are very popular as we don’t charge a fortune unlike salons in the West End. With bridal hair and make-up, the first thing we do is check stylist and bride availability. We insist that brides come in and have a trial with us; some don’t want one for cost reasons but we actually offer a very good deal and spend a lot of time with the client.
A trail run is imperative; a bride may not wear much make up in general but the likelihood is, she will on the big day and we’ll need to work out what she’s comfortable with. We like to really get to know the bride. What sets you apart from other salons in the area? I have to say that we have a very good team of colourists and we try to give as best a service as we can. We like to talk to clients beforehand about what they want to achieve and what fits with their lifestyle. It can be difficult to do this on a Saturday when it’s manic - I would advise clients to come in during the week when it’s less busy - but we always endeavour to talk things through with clients. What do you like about your Islington location? I have to say it’s the people. Islington has a young, vibrant crowd and I learn something new every day - not necessarily about hair or beauty - just something interesting. It’s always nice to meet new people. You also offer packages for men including waxing, massage and facials. Have you always offered treatments for men and do you find that they are now
more popular than ever? We’ve always offered the services and I used to treat men in Selfridges too. Truthfully, health and beauty treatments for men have always been popular, but it’s just more accepted these days. The boys will have everything the girls have! Quite often men are given gift vouchers from their partners who’ve visited the salon themselves and want their boyfriends to have a treatment too. Sometimes they can be a little apprehensive beforehand but once they’re in they love it! 171 have an emphasis on contemporary hair-styles and the latest trends. What styles are in vogue this season? I’d say quite severe and exaggerated hairstyles with a feminine twist. Colour wise, soft Autumnal tones are key and warm reds are very popular this season. Our clients tend to be their own women, independent with sophisticated taste, so they know exactly what they want. Again, we like to discuss everything we can offer with all our clients to work out what suits their lifestyle. 171 Upper Street, Islington N1 1RG 020 7354 2266 171hairandbeauty.com

Find the right mix of fabrics, wallpaper and furniture and you can create a warm, homely feel this winter with blue and white, says interior designer Gail Abbott
B
lue and white is a classic combination, used in the English country house for generations. But for warm, relaxed winter rooms, forget brilliant white and vivid blues -best kept for hot Mediterranean sunlight - and choose instead a gentle juxtaposition of soft white paint colours, crumpled vintage linens, bare wooden floorboards and traditionally patterned wallpaper. You

will have created a home with effortless style that will welcome you back on long, dark winter nights. Surfaces that have aged with grace are so much more comforting than spanking new layers. So why not ‘undecorate’ a fire surround by stripping it back to its original paint layer and leaving it at that. Look for junk shop furniture that you can bring back to life in flea markets or on ebay. Clean polished wood areas and rub

Don’t be precious about matching colours, or worry about coordinating patterns, the beauty of the system is that any combination of stripes, florals, check or plains will look beautiful together if they are united by the timelessness of blue and white. 53

2. CLASSIC DINING Hand-loomed linen tablecloths and monogrammed napkins combine for a style that is truly ageless, so collect old table linens, bone-handled knives and silver plated cutlery, and mix and match with modern glassware and china.
• Turn a hand woven sheet into a loose cover or tablecloth, from £115 for 1.40 x 2.30 metres; linen napkins from a selection, beyondfrance.co.uk • Blue toile de Jouy fabric from £10 a metre, surreylinencompany.com • Find Vintage floral fabrics from around £42.50 a metre, as well as a wonderful, ever-changing selection of household goodies at vintage-home.co.uk

3. SIMPLE TIE Use a length of jute string for artless napkin ties and lay a blue and white Irish glass cloth down the centre of the table for a stripe of colour.
• Ian Mankin stocks a huge range of traditional stripes in blue and white, like Ticking, £22.50 a metre, or Angus Stripe linen, at £39.50 a metre, ianmankin.co.uk • Farrow & Ball have resurrected a stunning range of traditional wallpapers, like their St Antoine, originally produced in 1793, £82 per roll, farrow-ball.com
4. VINTAGE BLUES Blue is an obvious choice for a traditional bathroom, but choose a grey-toned white for the walls and soft, blue grey for the underside of a rolltop bath or wooden bath panel.
• Fired Earth’s paint colours are second to none, so look for Kevin McCloud Lime White, Flake White and Alabaster, £29.50 for 2.5 litres; or the National Trust range of blues like Crom Fog, Painter’s Grey, or Larder Blue, £32.50 for 2.5 litres, firedearth.com.
5. PATCHWORK CHAIR Look for a mix of two or three vintage fabrics and use them to re-upholster a classic armchair for a corner of the kitchen. A simple seaside stripe works well with a pair of 1930s cotton florals.
6. DAMASK BEDROOM Wallpaper can bring a classic look to a bedroom, but give it a contemporary angle and use it sparingly on one wall as a feature wall behind the bed, or hang up a flat panel of fabric instead. Team it with crisp white, lace-edged pillow cases. gailabbott.co.uk

Revered for his two-dimensional art applied to three-dimensional form, Italian painter, sculptor, interior decorator and printer of books, Piero Fornasetti was a visionary whose work transformed the decorative arts scene of the 20th century. LONDON UNDERGROUND Take a tour of the London streets, one of, if not the, finest metropolis in the world and what do you think you are going to see? Can’t see anything? Then look... beneath you!
INTERVIEW BY JANE TARRANT
Basements that’s what you’ll find; hundreds of them, all over London. There are so many basements being built around London that you would be forgiven for thinking we are becoming a subterranean species. Some high profile celebrities are so against them, when even more of the glitterati are having them built. So, we thought we would ask our old sparring partner, Steven McDicken from Metropolitan Basements, to justify the upheaval, the digging , the dirt and the bad press! Why do people hate basements? The only people who hate basements are the ones that don’t need them. Everybody else I know loves them. So… why do people love basements? Simple… more space! and at a fraction of the cost of moving home.
At a fraction of the cost… please explain? Well if you wanted to move home it would cost you say £800 to £1500 per square foot for that extra floor space and if you build a basement it only costs you, £400 per square foot including the VAT. In fact, what you would save on the stamp duty you have to pay when moving house, goes a long way to buying a large part of your basement! So are you saying it’s purely for money? No… more space! But, by doing so you just happen to create rather a lot of equity in your home. It ‘coincidently’ makes good financial sense. Unless you just sell it on, of course.
What about the bad press? People will always be people; they will make a mountain out of a basement, then they will turn around and build one themselves. No one wants to live next door to a basement being dug… the noise for a start, do you think they will ban them eventually? They can’t, they’re largely permitted development and you can’t see them. As for the noise, they are no less noisy than digging your garden and they are a million times quieter than someone digging up the road. Traffic noise in London is more than the sound of a basement being dug. Anyway, we work 8am to 5pm Monday to Friday, when everybody is at work.
60
Metropolitan Basements_v2.indd 60
23/09/2011 23:14
Planning is not an issue then? There is no reason why it should be. Except listed buildings and even then it can be done. How long to build one? Depends on the size but let’s say 1220 weeks for the majority of houses in London. Who designs them? We have an architect who is rather experienced with them. He wrote a book: Architect Your Home by Hugo Tugman. There is a section in there all about basements too. You can buy it from www.anovabooks. com Don’t be put off by his picture, he is actually one of the nicest architects I’ve ever met. So what’s your parting shot to the basement critics and lovers alike? Well, not a parting shot - just a statement that the majority of people will eventually get a basement dug to gain that extra space, especially in the more affluent areas of London. Even if you are against it now, you will succumb in the months or years to come or the people that move into your house after you are gone will get one done. It’s just going to happen, like it or not, and it’s going to be widespread, just in the same way double glazing stated in the 70’s, but much less intrusive or visible because it’s underground!

Buy a biOrb and you’ll get everything you need to start your aquarium. You won’t have to go shopping for any additional parts and you’ll get full instructions to help you on your way. Just add water and fish. Then sit back and enjoy the magic of keeping fish without lots of work.
Slim built-in lighting
It’s so slim you’d be forgiven for not noticing it was there. The LED light is neatly built-in to the lid. The LEDs themselves are bright, low voltage and long lasting.
The truth about filters
Many traditional aquariums have a filter on the side or at the top, but guess what - fish waste sinks. biOrbs have a filter hidden at the bottom of the aquarium. Put simply, the filter works where there is most to filter. We’ve even made it easy to change. It takes seconds and you only need to do it every four to six weeks.
Inside the patented biOrb filter
Made from acrylic, not glass
Acrylic is ten times stronger than glass. Why’s that important? Just ask anyone who’s broken a glass aquarium and flooded their home. Did you know it’s also noticeably clearer? Acrylic has a transparency rate of 93% but glass only allows 70% of light to pass through. With a biOrb it’s been said that “it’s like watching fish in high-definition”.

The story behind the successful jewellers began some time before their studio-cum-showroom first opened on Islington’s Upper Street sixteen years ago. “I had a model-making company working mainly for advertising and film,” Stephen says. “I did that for about ten years and it was driving me nuts. So much so that one night I smashed up the thing that I was working on with an axe!” It’s clear
from the start of this interview – and from the look of the store and website – that Stephen Einhorn (by which I mean both the man and the company that takes his name) is truly unique. After selling the model-making business, Stephen, who has no formal training but who has always (in his own words) ‘made stuff’, continued to work in three dimensions, well away from the creatively restrictive world of advertising. “The shop we’re in now is where I had my model-making workshop. There was a transition period of about a year, switching from commissioned work in the advertising
industry to designing and making my own things.” These ‘things’ included a skull and crossbones tap, spiral corkscrews and four men’s signet rings. “I was selling products but not enough. It was a massive change from advertising agencies dictating a brief, but it was hard to make money.” In 1995, however, Stephen got the break he needed. Fashion designer Paul Smith took a liking to the signet rings and commissioned a men’s jewellery collection, catapulting Stephen into the jewellery business full-time.

ARTS & CULTURE INTERIORS
After this successful collection, Stephen began designing for women – today the shop incorporates a mix of jewellery for both sexes. Noting that the market was not providing a variety of high quality jewellery for men, Stephen Einhorn also creates rings for civil partnerships – and has done since the company’s inception. It’s something that has set the business apart from its contemporaries, and both Stephen and fellow company director Jane2Best are passionate about the service they offer. “The first website had a gay and 4 lesbian section and people said we were committing commercial suicide,” Jane admits, “but we didn’t care. And more importantly, we thought they were wrong.” The company’s slogan is Designed for Individuals and their edgy designs are a favourite of celebrities such as Noel Fielding, Fearne Cotton and Johnny Depp. The company’s distinctive rock ’n’ roll style and unique and headstrong principles have been in place from the start. Jane continues, “Another thing that business advisors said was that the language on the website was too frank, that people wouldn’t take us seriously. Actually, we take ourselves so seriously that we can laugh at ourselves. Now I’ve noticed everyone taking that approach.” But Stephen, Jane and their team don’t just take their work seriously – they are ethically aware too. Their 5 early packaging was constructed entirely out of
6
recycled card and the pair invested two years searching for a manufacturer who wouldn’t use plastic. Stephen adds, “We’re obsessed with recycling and sourcing materials from sustainable countries. We’ve never bought diamonds from Burma and we are one of only twenty companies in the world to be able to offer Fair Trade gold.” The current economical climate and popularity of cheap, ‘throwaway’ fashion items might have made this a difficult era in which to run a high-end jewellery business – especially an eco-conscious one – but Stephen believes that attitudes are changing, and that staple, good quality pieces will always have a place in the market. “Jewellery is quite an emotional thing. You’re buying an heirloom, something that you will hopefully pass on and that will really last.” He goes on to talk about the importance of customer service, “We don’t operate on a commission scheme or up-sell. The women
in the shop can spend two hours with a customer; if they leave without buying anything, that’s fine. Usually it’s such a big purchase with an emotional attachment, so the customer has to be comfortable with it.” The company’s bespoke services are a similarly important part of what they do and Stephen gets animated when discussing past commissions and current projects, from the woman who buys her six granddaughters a charm every Christmas to a squashed pomegranate design he is currently working on, comprised of diamonds and rubies. It seems that at Stephen Einhorn a massive emphasis is placed on working with customers to give them exactly what they want. In fact, Stephen takes much of his inspiration from client collaborations. As well as the standard mix of metals and precious stones, he also includes (rather unusually) granite and concrete in men’s rings. The Thames Wood collection – a fascinating range made with 2,000 year old timber bought from an archaeologist at a trade show – embodies the idea of heritage and the personal aspect of jewellery-buying. It’s reassuring – and somewhat refreshing too – that Stephen Einhorn’s customer service doesn’t end once a payment has been made. Any adjustments or problems can made on-site in the workshop. Jane is keen to emphasise the fact that everything is manufactured on the premises, unlike with the3majority of contemporary jewellers. “Other businesses tend to operate on a much larger scale and they’re prepared to sell stuff at sale price when they can’t shift it. They don’t manufacture in Britain. They have this whole model that they follow and it’s unbreakable,” Stephen says, before adding simply, “and it’s not for us.” That, really, is the ethos at Stephen Einhorn; to be a company that isn’t afraid to break the mould. 210 Upper Street, Islington, N1 1RL stepheneinhorn.co.uk 69

If you haven’t embraced Twitter and the like, you will still find the website refreshingly easy to use, with all information clearly laid out and intuitive to use. For example, individual property pages include all the information you need within the page itself - a description, map and floor plan – without the need to click to new pages. PHELPS COTTAGE, UPPER STREET, N1, GUIDE PRICE £935,000, FREEHOLD This is a Grade II listed, early Victorian (1838) detached double-fronted period house that has been refurbished to the highest standards by the present owners. This is a terrific double-fronted house largely arranged over 2 floors. The accommodation is both light and airy and has been restored and refurbished to the highest standards yet retains many period features. The house is unusual for Islington in that it is double-fronted, on two floors and detached. At the rear of the house there is a small alley (accessed from Camden Passage) that has a shared
bin store, and is perfect for off-street bicycle storage. The house was restored at considerable expense approx 3/4 years ago and now represents a house that is ready for immediate occupation. Phelps Cottage is just off Camden Passage in the most central of locations. The house is literally moments from all the facilities that Islington offers, plus the excellent transport links at The Angel providing access to both the City and the West End.

FARON SUTARIA OPENS NEW OFFICE IN ISLINGTON
As Faron Sutaria opens its latest office in Islington, Branch Manager Jonny Miller talks about the importance of local knowledge and delivering a modern yet highly personal service
Dynamic central London estate agency, Faron Sutaria has just opened a new sales and lettings office on Upper Street in the heart of Islington, perfectly placed to cover the local area; from Highbury and Stoke Newington in the north, across the central areas of Canonbury, Barnsbury and De Beauvoir, through Angel to Finsbury, Clerkenwell and the City in the south. The opening of the new Islington office brings the number of Faron Sutaria offices to ten. To celebrate the launch, the branch is running a special 0% sales commission for the first three months (terms and conditions apply), as well as special offers for landlords. Faron Sutaria has been established for 35 years and has a highly experienced and energetic team which always strives to offer an exceptional level of service to clients, whether they are selling or renting. Communication is a particular strength and one that sets us apart from our competitors. Although a new name to Islington, Faron Sutaria was established in Notting Hill in 1975 and now has branches in key locations of central London including Chelsea, South Kensington and Camden. The new Islington office is the third to open so far this year as part of the company’s expansion and is an impressive testament to its success in today’s challenging times. Jonny Miller, Branch Manager, comments: “Experienced staff with indepth local knowledge is vital if clients are to receive the best advice and to get the best possible result in today’s market. I left
a position in house sales in Hampstead to work in Islington 19 years ago, attracted by the vibrancy and potential I could see. I loved the area so much that I moved here from Highgate, buying my first flat in Mildmay Road, then moving to Seckforde Street in Clerkenwell and most recently to Belitha Villas Barnsbury, so I am no stranger to the area. I manage a team which has over 30 years combined local experience and have been privileged to be involved in the regeneration of this fantastic area, advising in the sale and purchase of many of the areas beautiful period flats and houses as well as working with major residential developers in the transformation of the commercial areas of Clerkenwell and the City fringes. When I heard that Faron Sutaria was planning to open in Islington I immediately put myself forward to run the branch as I wanted to work for this modern and dynamic company which looks after its
clients - something which is very important to me. I was also attracted by the fact the company is large enough to provide the coverage of the market our clients need but not so big they will feel swallowed up by an impersonal marketing machine. Estate Agency is a people business and despite all of the advances in technology it is still the best advice and personal service that my clients want and ultimately what moves them”
TO LETOFFER
Jonny is joined by experienced Lettings Manager Robert Arnold who is offering a special introductory offer to landlords on lettings and management rates. For further information on Faron Sutaria’s opening offers please call 020 7354 9737 for Sales and 020 7704 1470 for Lettings. PROPERTY ADVICE
LEGAL HEMA ANAND FROM COLMAN COYLE, GIVES HER EXPERT ADVICE ON ALL YOUR LEGAL PROPERTY QUESTIONS It has come to our attention that the Freehold of our building has been sold to a property based company. I do recall reading somewhere that the freehold cannot be sold without first being offered to me and my neighbours. There are six flats in the building. Is this correct? You do not say how you have discovered the sale of the freehold interest. For example, has the new landlord sent notification to you to advise of the change in ownership? If so, this can have an impact on what recourse may be available to you and the timescales within which you would be required to operate. However and generally, subject to certain criteria being met, where a landlord is proposing to sell his interest in the building and the rights of first refusal applies, then the landlord must by law offer first refusal to the leaseholders before the landlord is in a position to sell the same to another party. The rights of first refusal are contained in the Landlord & Tenant Act 1987. To establish whether or not the rights to first refusal apply then certain criteria need to be met. For example, the building must contain at least two flats, no more than 50% of the building can be in nonresidential use and more than 50% of the flats must be held by what is referred to as a qualifying tenant. A qualifying tenant is generally a leaseholder of a flat subject to a long lease (or a lease originally granted for a long period regardless of how many years are now left). A qualifying tenant can also include a leaseholder that has a fixed or periodic tenancy, although please do bear in mind that a tenant of three or more flats in a building would not qualify as a tenant of any of the flats. There are certain landlords that are exempt and therefore the rights of first refusal do not apply. For example, many housing authorities or registered social landlords would be an exempt landlord. It is therefore important to establish whether the rights of first refusal actually apply. If so, then subject to certain timescales and meeting further requirements, you and your neighbours could have the right to request certain information in respect of the sale and force the new landlord to sell the interest acquired by them to you. (It is also a criminal offence for a landlord to fail to comply with statutory requirements in respect of rights of first refusal).
