* 1 cup gluten-free soy sauce

* 1 cup brown sugar

* 2 inches of fresh ginger root cut into slices * 1/4 cup green onions, freshly chopped

* 1 teaspoon of mirin * 1 tablespoon sake

* 5 lb boneless skinless chicken thighs or 3 lb of beef (tri-tip portion is best, but if

you can’t find that a nicely marbled ribeye steak works) ns

* Make the marinade by combining soy sauce, brown sugar, ginger, onion, mirin,

and sake.

* For beef: chop the beef into thin slices against the grain and marinade for 30-40 minutes (not any longer or else it will be salty)

* For chicken: marinade the thighs for at least 5 hours * Grill meat over charcoal for the best results until the beef reaches 145 F and the

chicken reaches 165 F


* 5 lbs chicken thighs with bone and skin * 3/4 cup of gluten free soy sauce (see above for recommended brands) * 3/4 cup sugar * 2 star anise Directions * Place all ingredients in a pot and bring to a boil. * Once boiling, cover with a lid and turn the heat to medium low. Leave the chicken like this for an hour or until brownish-gold.


* Gluten Free Yellow Cake Mix (I used this one)

* 15 oz Sprite

* 2 teaspoons lemon extract or lemon zest

* 1 oz box of lemon pudding

* 2 cup dairy free milk

* 6 tablespoons vegan butter, softened

* 8 oz vegan cream cheese

* 1.5 cups powdered sugar

* Preheat oven to 350F

* Combine all cake ingredients. Make sure to not over-stir. Pour into cupcake liners and

bake for 25-30 minutes

* Let the cupcakes cool completely before making the filling.

* While you make the filling, place cupcakes in the freezer.

* Make the filling according to instructions on the pudding box. Pour the pudding into a

ziplock and cut a hole in the corner, or pour into an icing decorator

* Scoop out a small hole in the center of the cupcake. Squirt pudding into the hole until it’s

slightly above the cupcake (it will sink down as it absorbs into the cake)

* Place cupcakes in the fridge while you make the icing.

* Beat the cream cheese, butter, and sugar until a nice, whipped icing forms.

* Scoop the icing into an icing decorator and swirl it over the top of the cupcakes.

* Sprinkle sprinkles over the top and enjoy!


* 1 box gluten free vanilla sandwich cookies * 6 tablespoons melted butter * 1 pint dairy free chocolate ice cream * 1 pint dairy free caramel ice cream * 1/3 cup enjoy life chocolate chips * chocolate sauce * caramel sauce * 1/2 container cool whip (you can use dairy free) Directions * Grease a 9×9 pan * Smash the cookies until they are crumbs. Combine with melted butter * Line the cookies/butter at the bottom of the pan. Freeze for 20 minutes. * Spread chocolate sauce over the crust. Let freeze for 20 minutes. * Spread the pint of caramel ice cream over the crust. Freeze for 20 minutes * Sprinkle chocolate chips over ice cream and press into the ice cream using plastic wrap. Spread caramel sauce over the top. Let freeze for 20 minutes. * Spread the pint of chocolate ice cream over the sauce. Freeze for 20 minutes. * Spread the cool whip over the ice cream. Squirt chocolate and caramel sauce over the top. Freeze overnight.


* 8 oz vegan cream cheese, softened

* 11 tablespoons coconut oil

* 1 tablespoon sugar

* 1/2 teaspoon salt

* 1 cup rice flour

* 1 cup cornstarch

* 1 teaspoon xanthan gum

* 16 oz blueberries (fresh or frozen)

* 1/2 cup sugar

* 2 tablespoons tapioca starch

* 1 teaspoon cinnamon

* juice of half a lemon

* a few slices of butter

* Combine cream cheese, coconut oil, sugar, and salt with an electric mixer. Beat until

smooth and there are no chunks of butter left.

* Add in rice flour, corn starch and xanthan gum. Combine at low speed and continue mixing

until a nice dough forms

* Split dough into two almost equal balls. Flatten and wrap in plastic wrap.

* Place the dough in the fridge for at least an hour.

* Begin making the filling. Combine all the ingredients for the filling. Use your hands to make

sure everything is equally distributed.

* Roll out the dough using a big rolling pin. Flatten until the dough is about 1/8″ thick. Place

in a pie pan.

* Put the filling in the pie. Place some coconut oil on top of the blueberries. Cover with crust.

* Make sure none of the crust is sticking out over the edge. Press down gently on the edge


* Preheat oven to 350. * Once the oven is ready, take pie out of the freezer and bake for thirty minutes. Be sure to place a pan underneath to catch any juice. * After thirty minutes, wrap the edge of the pie with foil. Bake for another thirty. * After thirty minutes is up, let the pie cool for about ten minutes before cooling. Enjoy!


* 4 oz vegan cream cheese

* 4 eggs

* 3/4 cup almond flour

* 2 tablespoons swerve granulated sugar

* 1/4 cup almond milk

* pinch of salt

* Blend all of the ingredients together. Let rest for 5 minutes

* Heat up a skillet to medium heat. Grease with cooking spray

* In a circular motion, pour about 2-3 T of batter onto the pan

* Once the edges are cooked, flip the crepe over and continue cooking until it’s a light brown

* Let the crepe cool on a parchment paper.

* 4 oz vegan cream cheese

* 1/4 cup swerve confectioners sugar

* 4 tablespoon vegan butter

* 1 Roasted chicken * 1 packet of Daiya shredded cheddar cheese * Vegetable Oil * 1 packet of Siete Almond Flour Tortillas * Jalapenos Instructions: * Shred roasted chicken by pulling chicken apart into smaller pieces with two forks. * Place a thin line of shredded roasted chicken pieces on an almond flour tortilla. * Fold the tortilla into a narrow roll with the chicken in the middle. Close the roll by brushing some water and pressing gently along the edge of the tortilla fold, * Heat enough oil for deep frying in a pan. Place a tortilla roll in the hot oil and let the roll come to the top. * Move the roll to ensure that it fries evenly on all sides. * Once the roll is golden brown all over, take it out with a spatula and place it on a paper towel to absorb the extra oil. * Let the crispy and golden-brown taquito cool for 5-10 minutes and enjoy.

* 4-5 lbs Chicken Wings, separated into drummettes and flats

* 2 tablespoons baking powder

* 1 teaspoon salt

* 1-2 tablespoons vegetable oil

sauce:

* 1 cup gluten-free soy sauce

* 1 cup brown sugar

* ginger (about 2 in cut into slices and slightly smashed)

* 1/3 cup chopped green onions

* 1-2 teaspoons sesame oil

* 4 garlic cloves, minced

* Preheat the oven to 250F

* Line a rimmed baking sheet with foil. Brush the vegetable oil onto the foil.

* Pat the wings dry with a paper towel.

* Sprinkle the baking powder and salt over the wings and toss gently in a large mixing bowl.

* Spread the wings onto the baking sheet and bake for 30 minutes

* After 30 minutes, leave the wings in the oven and increase the temperature to 425F and bake

for another 45 minutes.

* Combine all the ingredients for the sauce in a small bowl.

* Let the chicken rest for a few minutes.

* Toss with the sauce.


* 317 grams gluten free flour * 1 3/4 cups sugar * 2 teaspoons baking powder * 1 teaspoon baking soda * 2 cup chopped apples * 1 cup oil * 2 eggs * 1 teaspoon vanilla * 1 teaspoon cinnamon Directions * Grease a 9×13 pan and preheat the oven to 300F * Combine the sugar, baking powder, baking soda, and vanilla. * Then beat in the eggs one at a time * Add the oil and then the flour. You should have a thick batter. * Add in the apples and cinnamon. * Pour into the pan and bake for 45 minutes * Once done baking, let cool and sprinkle powdered sugar over the cake.

1. Add the vegetable broth to the pot and turn the heat up to medium-high.

2. Once the broth starts boiling, add the ramen noodles to the same pot. Cook the

ramen noodles in the boiling broth for about 3-5 minutes until it has reached your

desired tenderness.

3. Turn the heat off. Add in your spinach and stir for 30 seconds to a minute.

4. Pour the coconut milk, garlic paste, and sriracha into the pot with your ramen and

stir to combine.

5. Garnish the ramen with sliced green onions and enjoy!

I used to struggle immensely with finding filling and tasty breakfast foods that satisfied my dietary restrictions. Breakfasts are typically filled with pastries, toasts, milk, and everything filled with gluten and dairy. Finding this pancake and waffle mix was a life saver for my Sunday morning breakfasts - it truly makes you forget the loads of breakfast foods you have to give up when avoiding gluten and dairy.
