Anns latest spring drink is based on local ingrediens - namely from her very own garden. Here she guides you through the making of this delicious Lilac Spritzer: ”Ahh... It’s Friday at the office. The sun sends its first warm light down on us after a cold Winter and the girls at ZOEY deserve to be spoiled with this fresh and sour Spring drink. Once you have the lilac juice you can also enjoy it without alcohol but note that it is only recommended to consume this eatable flower in limited amounts. ”

Ingredients

Ingredients on lilac juice: • 40-50 heads of lilacs (Preferably the colored ones) • 1,6 kg sugar • 3 lemons • 60 g. citric acid • 2,5 L. water

Ingredients for the drink: • 1-part lilac juice • 1-part white wine • 2,5 parts sparkling water • icecubes •lilacs and lemon garnish

How to:

Cut or nip all the green off the lilacs. Don’t rinse the flowers otherwise you will wash away most of the flavor. Cut away the peel and all the white from the lemons and cut the rest into slices. Boil all ingredients in a large pot until the sugar has been dissolved. Leave the juice to soak in the fridge for 3-4 days. Remember to stir the juice every day. Once the juice is ready, sieve it through a cloth and fill in onto cleaned bottles. To make it last, the juice can be frozen down. Now you are ready to make your own lilac spritzer with even parts lilac juice and white wine, topped up with 2,5 parts sparkling water.

Enjoy with ice cubes in the sun!
