I have compiled over 20 years of my experience with water kefir ​and helpful tips from the internet.​ Also, I have collected answers to many questions that my customers had. 1986. We visited grandma and she fermented this kefir. She drank this kefir every day; she also put the kefir on a towel and wiped her skin with it. Her skin looked very young and she didn't have any wrinkles or cellulite. I ask her what is in the jar? She answered that this is rice from the sea :) :) :) Of course, it's not rice :) this is ​Water Kefir GRAINS!!!

On the left, is kefir grains that grew in raw brown sugar. On the right, is the same grains that grew with dry fruits or in coconut water. If you add molasses, the grains will look darker but are the same tibicos water kefir grains. Also, coconut sugar makes the grains have a beige color. I hope you received my package with the whole grains. ​I promise I will send the grains as they appear in the picture. And I always put the fragile stamp on a package. However, sometimes the packages, during shipment process, squeeze and buyers get smashed grains. This is not scary. I apologize for the inconvenience associated with the post office and​ ​I will give advice on what to do if your grains get crushed. (see below for recipe) The grains are ready to use, but they need additional time to adapt after shipping. Do not worry if the kefir grains have a sour smell; this is normal after shipment. For grains to activate faster and feel better, please follow this recipe for the first one-three batches: Wash the grains with fresh-filtered water. Use a filter that has charcoal or carbon. I highly recommend using a filter like Brita or Pur. I have been using these filters for many many years and my teapots are still clean without any calcium spots. Just don’t forget to change the filter cartridges every 2 months. In my experience, I know that grains don't like to grow in boiled water, distilled water, osmosis, water from the water machine from supermarkets and/or tap water. Boiled water is dead. Boiling doesn't remove harsh chemicals from water. Please never mix boiled and fresh water together. You need: Glass jar measuring cups

plastic or wooden spoon plastic measuring spoons plastic strainer paper filter, rubber bands ​NEVER use metal utensils Use this recipe proportion: 4 cups of spring or filtered water, 1/4 cup of sugar 1-1/2 teaspoon of molasses. For white grains, use 1 teaspoon of dry fruits for every 4 cups of water. (please wash dry fruits before use) Mix everything well to dissolve the sugar crystals. Add one pinch of baking soda Add 1/4 cup of grains. Fermentation: Cover the jar with a paper filter or cloth and secure with a rubber band. DO NOT use a plastic or metal cover, this could cause the jar to explode from gases produced in the fermentation process. Place the container in a warm area, out of direct sunlight, for 24-48 hours. At 24 hours, the kefir water should be sweet. At 48 hours, it will be more acidic. After fermentation, using a plastic strainer, strain the water kefir into another jar. Rinse the kefir grains with filtered water and reserve 1/4 cup of grains for your next batch. Repeat the recipe above for your next bath.

After I strain the kefir grains, I usually add little pieces or frozen puree of ginger and lemon juice to the liquid and it is ready to drink.

The best way to store:​ ​Wash grains with clean filtered water, strain them, place in a glass jar, (without water and sugar) cover with a lid, and put the jar on the lowest shelf of your fridge for up to 7-14 days. You can keep grains in the fridge around 30 days . After 25-30 days in a refrigerator , some grains will begin to die, but whatever is left over is enough to produce another colony: following the basic recipe. 70 degrees is the lowest permissible temperature. Warmer temperatures will speed up fermentation and lower temperatures will slow it. To make a warm place for kefir is very easy. One of my friends takes a pot with hot water and puts jars around it in a circle, kefir, yogurt, and kombucha. The jars should be about an inch away from the pot with hot water, not touching. And put a thick blanket or towel around the jars. He changes the hot water twice daily. And this helps him.

To know if the kefir is ready, taste test it every 12 hours with a straw. If you get smashed grains,​ do not worry! The grains got smashed, but the bacteria themselves are alive, follow the instructions, and after two batches you will receive whole grains. First of all, make a solution of molasses, sugar, and water as stated above. Open the package and the eruption of grains from the package directly to the jar with a solution. Don't wash. Fear not, if the package smells like vinegar, it is normal after shipping. Cover the jar with a paper filter and leave for 2 days. Perhaps the appearance of foam will appear on the top jar. Checks every 12 hours and take away the foam, the excessive foam is the result of over fermentation. After 36- 48 hours you can drain and rinse kefir grains.

Also with the bonus, you will receive two sample Japanese Fermenting empty tea filter bags.​ ​You can put in there dry fruits and drop it in the jar with kefir. That will help you easily take out the dry fruits out of the kefir and keep your grains clean.

White kefir grains usually grow more slowly than brown.​ ​To find out whether your kefir is healthy, pay attention to the release of bubbles, smell and taste of kefir. If you urgently need to build a larger quantity of grains, use the same recipe that I would recommend for a quick adaptation of kefir after shipment. When you have a extra of grains, then store it in the refrigerator in a closed plastic container without water and sugar for about a week, then rinse the grains and follow the basic recipe.

There are some rules that you must do when working with water kefir. ​NEVER let sugar touch the grains, always make sure that the sugar has dissolved completely. If sugar touches the grains, then they burn and become sick and die. Water does not need to be warmer than room temperature. Don't use chlorine water. Some Things that show for you to know that kefir is ready, when the little pieces of fruit go to the top, and kefir needs to be a pleasant sour taste. You can't use a metal strainer or spoon when working with

grains. During the summer, kefir is ready in 24 hours, if it's cool then 2-3 days. Don't forget to wash the kefir grains when making a new batch. Always wash the little pieces of dry fruit, raisins, apricots, cranberries, etc., before putting them in kefir because they have chemicals in them that the companies put so that they won't have mold. These chemicals kill kefir grains.

Like all fermented drinks or eats, water kefir has a vast array of benefits. It is full of beneficial bacteria, yeasts, enzymes, easily digested sugars, acids, vitamins and minerals. One study showed that Water Kefir contained over 450 kinds of beneficial bacteria! Water kefir bestows billions of health-bestowing bacteria and yeast into your gut, helping your body with digestion, absorption of vitamins and minerals, and helping your immune system fight off unwanted and bacteria, yeasts and viruses.

My recommendation​ ​: Try to use demerara raw brown sugar. Do not confuse it with brown sugar that is made from white sugar with molasses added. Raw brown sugar look like dry crystals that are a pleasant taste. Brown sugar looks wet.

Water kefir is a very good probiotic.​ ​I hope that it will adapt to your stomach and your immune system. About 18 years ago, I had Helicobacter pylori infection and it cured me. Kefir helped return me back to health.

How to serve water kefir When water kefir is done, simply strain the grains out using a plastic strainer. Water kefir grains are sensitive and can be damaged by stainless steel and other metals.

These bottles from juice, I love to use for second fermentation and for keeping kefir. Also, they are great to keep the beverage in the refrigerator door. It is very convenient and comfortable. For me, they are better than swing top glass bottles. I​ t is safer​ and they have a w ​ ide mouth.​ I can put large pieces of fruits and whole berries in them. Plus they are very easy to clean and wash.

Sometimes kefir stops producing gas and being fizzy. ​This means that it lacks something or that there is something extra that it doesn’t need. I recommend, in this situation, to add fresh lemon slices. If you are unsure if the lemon is organic, then wash it thoroughly and take off the layer of skin. Also, it stops being fizzy because it needs a change of sugar. If you use sugar cane sugar, then change to brown. If you are using brown, then change to white. Also, don’t forget to check your water filter and to change the cartridges in it. Also, don’t forget to make your grains hungry. They need a break 2 times a month. Or divide your kefir into two portions. Keep one in the fridge and rotate them every week. Ideas for flavoring water kefir. Sliced lemon, lemon juice, ginger root, juices like cranberry or pomegranate, grape or apple, vanilla extract (makes a cream soda flavor), dried fruit like figs, apricots, mango, fresh fruit like mango, pears, apples, and berries. Really, there are so many different ways to flavor water kefir that it never gets boring to drink it. Have fun experimenting! Apricot Lemon Water Kefir​. 11 cups of filtered water 1 1/2 cups sugar 1 lemon, organic and freshly squeezed 6 dried apricots, 3 tbsp water kefir grains

One more basic water kefir recipe is: 3 cups water 1/4 cup sugar 1/4-1/2 cup kefir grains 1 dried fig or 6-8 raisins or 1/4 cup apple juice 1 tsp fresh grated ginger. Cover and let it sit in a cupboard for 1-3 days. Don’t seal it too tight as pressure will build up as the solution ferments.Each day you may taste it. If it is too sweet, you may ferment longer. If you like it, spoon off the fruit/ginger. Strain out the kefir grains using a fine mesh strainer (preferably nylon). Bottle and store the liquid water kefir in the refrigerator. Grolsch style bottles work great. Repeat the process with the kefir grains in fresh sugar water solution each day or two. ​Use this recipe only if you have extra grains! Any juices can kill your grains.

How to make flavored water kefir ( The second fermentation):

Place your kefir water in a glass jar or bottle, leaving several inches at the top.

Add real fruit juice or 1/4 -1/2 cup of organic fruit. You can experiment with different combinations to find a flavor for you. Make

sure there is at least an inch or so of space at the top of the container after you have added the fruit. Close the jar with a solid lid (not metal) and set in a warm place for an additional 24 hours or 24-48 hours in the fridge. Refrigeration slows the fermentation process. The tighter the seal, the more fizz the kefir water will have. Make sure not to ferment too long as the jar can explode. Be careful with Swing Top Bottles .​ Cover the bottle with a towel before opening : the towel helps you keep control of the lid.

Second Fermentation This involves adding juices or flavors to the kefir beverage after the grains have been removed. Bottle the kefir beverage. Add any flavors or juices to the Kefir beverage and let it ferment out of the refrigerator for about 12 hours with the lid on. Then place it in the refrigerator. ​Raspberry Kefir After the initial fermentation, strain out kefir grains. Add about a tsp to a tbsp of maple syrup per 500ml or so. Smush up some raspberries and pour the mush in with the liquid. Let sit for a couple days. ​Ginger Ale After the initial fermentation, strain out kefir grains. Add about a tsp to a tbsp of maple syrup per 500ml or so. Add in a few chunks of fresh Ginger. Grate a chunk (about the size of the end of a pinky finger) right into the liquid. Let sit for a couple days to allow the Ginger to mellow a bit.

Possible additions: ¼ cup of any frozen fruit juice concentrate ¼ cup lemon or lime juice for delicious lemonade or limeade 1 cup bottled fruit juice (cranberry, grape, orange, peach, mango, pomegranate, apple, raspberry, etc.) ginger Experiment with dried fruit (raisins, apricots, cranberries, figs, blueberries, etc) Many of these additions would hinder the kefir grain growth if used in the first fermentation but are great once the grains have been removed. Coconut Water Kefir 1​ -quart Coconut Water. ¼-1/2 cup of Water Kefir Grains Optional Flavoring: 1 cup Fresh Fruit (mixtures of berries) Place the Water Kefir Grains in the coconut water. Cover the jar with a paper towel and secure with a rubber band. Allow the Kefir Grains to culture the coconut water for 24-48 hours. Once the culturing process is complete, remove the Kefir Grains. To add fruit flavoring, puree together the Coconut Water Kefir and the fruit. With regards to coconut water, there is little nutrition for grains in coconut water. In a couple of batches, grains die. This is why when a person wants to make coconut kefir, he needs to have two parts. One part is used in sugar water for the basic recipe and the other is in coconut water. Lime Pineapple After 24 hours of fermentation: Strain the kefir, take the liquid and add a half cup pineapple chunks per 4 cups, squeeze in the lime juice. Keep for 24 hours on the counter, or 48 in the fridge. Raspberry Mango After 24 hours of fermentation, strain the kefir, take the liquid and add ¼ cup mango per 4 cups. Add in ½ cup raspberries. Keep 24 hours on the counter, or 48 in the fridge. Strawberry Lemon After 24 hours of fermentation, strain the kefir, and add 1/2 cup pureed strawberries and squeeze out the juice from the lemon into it. Keep 24 hours on the counter, or 48 in the fridge.

Cola Cherry After 24 hours of fermentation strain the kefir, add ¼ cup cherry juice per quart. Keep 24 hours on the counter, or 48 in the fridge. You can add sugar. Pina Colada Water Kefir 4 cups of water kefir 1 cup pineapple chunks 2 Tablespoons unsweetened, shredded coconut

Blend the pineapple and coconut together, then add it to kefir, keep 15 hours, then put it in the freezer for 2 hours, blend it.

How to make ginger juice: Rinse ginger root. Place in blender. Make puree. Add water to cover puree. Strain off liquid (this is your juice). Use pulp for ginger muffins or gingerbread. Freeze this ginger juice in ice cubes, filling the cubes only halfway. Use one of these cubes for 4 cups of Water Kefir.

Here are some recipes for flavored Water Kefir with ginger. For each recipe add ingredients in a quart jar, cover with the lid and keep on the counter for 3 days, or until it taste right to you. It will be fizzy. Like soda.
