YONGSAN NEWS Craftworks: Revisited The new year has brought a new look to the Craftworks Taphouse menu.

Some might recognize the romantic restaurant for its unique craft beers, however, the place is also now well known for its servings of divine and eye-opening platters. Whilst the bistro’s enviable in-house offerings of beer remain unchanged, likewise their lively atmosphere, the menu has seen a total overhaul. Prices have dropped a good 20-30%, whilst serving sizes have held out. The rebooted menu has welcomed a swathe of new deals, and the return of some old favorites. Stand outs include the return of The Classic - a hefty burger packed with a beef patty, carnitas, bacon, cheddar & pepperjack, chipotle mayo and more. MEET THE OWNER Funnily enough, Cacao Boom’s head chocolatier Go Young-joo was never really into chocolate.

Her perception changed when she went to study in Belgium and became impressed in the country’s passion and dedication to chocolate culture.

Go understood that chocolate equated to happiness, a lesson that was further affirmed when she saw her friends delight in her home-made chocolates. After Cacao Boom’s returning to Korea and working as Busan Paradise Hotel’s “chocolatier,” Go Young-joo an unfamiliar title in Korea at the time, she invented her signature chocolates, which were sold wholesale to hotels. She also began imparting gooey wisdom on-site through classes, as well as on paper through her book, “Real Chocolate.” Go saw the opening of her second shop in trendy Gyeongnidan last year after launching her first shop under the same name in Hongdae in 2006. Go takes pride in her artisan sweets made on the basis of her own philosophy: constant creativity and inner conscience. Her ultimate goal is breaking Koreans’ bias against food and making them realize that chocolate by itself can provide comforting joy; “Just lay back and enjoy them, and all will be well,” she says. So does Go like chocolates now? You bet she does. 아이러니하게도 카카오 봄의 대표이자 쇼콜라티에의 장인 고영주 대표는 초콜릿을 별로 좋아하지 않았다고 합니다. 하지만 그녀의 벨기에 유학시절이 이러한 인식을 바꾸게 한 계기가 되는데요. 그 나라가 오롯이 초콜릿에만 헌신하는 문화를 보고 놀라워한 것이죠. 고영주 대표는 초콜릿은 곧 행복이라고 이해하게 되었고 이것은 그녀의 친구들이 그녀의 홈메이드 초콜릿을 먹고 크게 기뻐하는 모습을 보았을 때 진정한 그 의미를 깨달을 수 있었다고 합니다. 한국으로 돌아온 고영주 대표는 그 당시 한국에 존재하지 않은 직업이었던 ‘쇼콜라티에'로 부산 파라다이스 호텔에서 근무하였고 그 후 그녀만의 시그니처 초콜릿을 발명하며 호텔들에 도매로 판매, 또 초콜릿에 대한 지식과 정보들을 알리며 그것들을 그녀의 책 “Real Chocolate”에 담아 내기도 했습니다. 2006 년 홍대에 ‘카카오 봄'이라는 이름으로 초콜릿 샵을 오픈, 이어 작년에는 그녀의 두 번째 샵을 핫한 거리로 주목받고 있는 경리단길에 오픈했습니다. 고 대표가 만드는 초콜릿은 본인만의 철학, 끊임없는 창의력 그리고 초콜렛에 대한 정직함으로 빚어낸 자부심이자 모든 것입니다. 그녀의 궁극적인 목표는 음식에 관한 한국인의 선입견을 깨는 것과 동시에 초콜릿 자체가 사람들에게 가장 편안한 즐거움을 줄 수 있다는 것을 깨닫게 하는 것에 중점을 두고 있습니다. “마음을 편하게 하고 즐기세요. 그럼 모든 것이 괜찮아질거예요.” 라고 그녀는 얘기합니다. 이제 그녀가 초콜릿을 좋아하는 것에 대에서는 두말 할 필요가 없겠죠?

BOXER BLACK EYE (PA) Get ready to excite your taste buds with Maloney’s Brewing Company’s third beer, Boxer Black Eye (PA)! This most recent brew is the result of the first ever collaboration between Maloney Brewing and Pogona Brewing (Funky Taphouse).

The beer’s “Head Designer” is none other than Itaewon’s home-brewing veteran Bill Miller, well known for the local favorite, BILL’s Pale Ale. Bill also received massive collaborative support from Gangneung Budnamu Brewery’s star, Phillip Rankmore. The dark-colored Boxer Black Eye exposes a light tan head and its American citrus hop is expertly balanced with chocolate, roast, and caramel malts. With only 42 kegs, get in quick to sip this seasonal beer, which will also be available at Nairobi and Revolución, as well as Maloney’s Pub & Grill, until the end of February. 말로니즈 양조장 컴퍼니의 세번째 맥주 ‘복서 블랙 아이’를 소개합니다! 한 잔에 담긴 이 신선 한 맥주는 말로니 양조장과 포곤다 양조장 (펑키 탭하우스)의 첫 콜라보레이션의 획을 그은 상 품입니다. 맥주의 수석 디자이너는 바로 이태원의 자가 양조의 베테랑 빌 밀러씨 인데요, 이태원 이 가장 좋아하는 ‘빌스 페일 에일’로 사람들에게 잘 알려진 밀러씨는 강릉버드나무 양조장의 스 타인 필립 랭크모어에게서 엄청난 공동 서포트를 받기도 했습니다. 진한 색을 띄는 ‘복서 블랙 아 이’는 살짝 갈색을 띄는 거품이 있고 맥주에 사용된 미국산 감귤류 홉은 초콜렛, 로스트, 그리고 카라멜 맥아와 완벽한 균형을 이루고 있습니다. 이 맥주는 42 케그밖에 생산되지 않으니 이 계 절상품을 맛보고 싶은 분들은 서둘러주세요. ‘복서 블랙 아이’는 2월 말까지 나이로비와 레볼루 시옹에서만 만나보실 수 있습니다.

이달의맥주

Imperial Stout - Whasoo Brewing Co. 8.0% Aroma: Up front I get vanilla followed by milk chocolate and marshmallow with the malt lending some graham cracker notes. Yes, this beer smells like smores.

Appearance: Jet black and opaque with a lingering, chestnut head with good lacing.

Flavor: Sweet up front with a strong, a subtle vanilla taste on the mid palate, and a slightly acrid bitter finish. It has a strong roasted presence, which made me think of a Foreign Extra Stout.

Mouthfeel: Medium heavy body with a medium carbonation. Subtle warmth and some astringency on the follow through.

Overall Impression: The aroma is phenomenal. The flavor more closely resembles a Foreign Extra Stout with its slight burnt, somewhat acrid notes and at 8%, this beer doesn’t take much to give you that warming feeling that we all need to get through these cold winter days.

The great thing about beer is that each individual tastes something different.
