This traditional Spanish dish is made by adding meat and seafood to stir-fried rice. The name derives from the Latin word “patella,” used for the frying pan the dish is cooked in. The spices rosemary and saffron, which are used to cook paella, produce its distinctive yet delectable fragrance.
