For me, the charm of a Southern California summer is irresistible and always brings with it a sense of freedom, fun, and adventure. It’s a time to head to the beach, to take that much needed vacation and most importantly, to spend time with friends and family. As many of our readers know, our Summer issue is dedicated as the men’s issue and this year we decided to try something different, featuring our first-ever male cover and fashion shoot on location in the woods. We are very excited to see what our readers have to say about the cover once the Summer issue hits the stands. Choosing a cover and fashion shoot model is never an easy task, but when we decided to put a male on the cover, I knew the perfect man for the job. I’ve known model and photographer John Watkins for almost ten years and have worked with him in the past, so naturally I was thrilled when he agreed to model for our men’s shoot. His look was the perfect fit for what I had in mind for the cover—rugged, yet sophisticated with an all-around Southern California athletic image. Not only did John bring over 30 years of modeling experience to the shoot but he was also great to work with and quickly became a part of the bask family. At bask, we all work together to bring both the fashion shoots and editorial together in perfect harmony. Last tome Picked uP on HoLiday I’m constantly reading, but the last time I got a chance to really sit down with a book, I devoured “The Guernsey Literary and Potato Peel Pie Society.” It’s a fantastic novel set in the 1940s during the German occupation that shows how powerfully adverse conditions can bring unlikely groups together, and speaks to how important camaraderie—and books—are to giving hope during dark times.
Go-to PLace in san dieGo Balboa Park is one of my favorite places in San Diego. The Spanish architecture, sprawling gardens, museums, and restaurants make it the perfect place to unwind, explore or bring visitors. I love riding my bike through the park then settling into one of the grassy nooks for an afternoon picnic. The Prado Restaurant also has a fabulous patio that overlooks a garden—perfect for a leisurely lunch on a sunny day.
a cHaracter to wHicH you identify As cliché as it is, the character I most identify with would have to be Elizabeth Bennet. I’m not sure how much resemblance I can truthfully claim to her, but she’s one of my all-time favorites, and I’d love to be friends with her in an alternate literary universe.
wHy you must see san dieGo You must visit San Diego in the summer for its great weather (of course), but also for the Del Mar Races. Whether you’re interested in the betting or just the excitement of the horse races, going to the track can be an all-day experience. Start with a cocktail at the Del Mar Plaza and let the games begin! Races on 4 o’clock Fridays have a later post time and a free concert after the races. The Concert tends to be crowded, but worth it if you like who’s playing. The train station in Solana Beach runs shuttles to the track, so it couldn’t be easier to hop on the train and come down for the day.

Paul Getty Museum, but their latest exhibition, overdrive: l.a. constructs the Future 1940-1990, provides yet another reason to go. Overdrive is a groundbreaking exhibition that provides a view into the region’s evolution of freeways, skyscrapers, shopping malls, and unique cultural institutions. The exhibition tells the story of how our contemporary society was built through illustrations, animations, and other media.

Now-January 2014 The norton simon Museum offers up a new exhibition, Beyond Brancusi: The space of sculpture that reviews how Brancusi influenced other great 20th century artists with his innovative techniques. The museum’s collection includes 19 works from sculptors Isamu Noguchi, Donald Judd, and Henry Moore, among others. After visiting the exhibition highlighting Brancusi, a Paris-based sculptor, and perhaps the most influential one of the 20th century, try taking a stroll through the gardens that were first planted in the 1870s.

July 3 Multi-Grammy-winning British-American artists Fleetwood Mac are playing staples center as a part of their 2013 tour. The band’s 1977 album Rumors broke nearly every sales record around by creating four top 10 singles, staying on the charts for 31 weeks, and selling over 40 million copies. Inducted into the Rock and Roll Hall of Fame in 1998, the band has not toured since 2009. However, it still includes founding members Mick Fleetwood and JohnMcVie as well as Lindsey Buckingham and Stevie Nicks, both of whom joined the group in 1975.

July 27-28 In one of the biggest sold-out tours of the summer, Peter Gene Hernandez, better known as Bruno Mars, brings his James Brown meets Prince-like performance to the staples center for his Moonshine Jungle World tour, which features hits from his sophomore album, Unorthodox Jukebox, such as When I was Your Man and Locked Out of Heaven, both of which were on the Hot 100 charts. His debut album Doo-Wops & Hooligans also received both critical acclaim and popular success, including two multiplatinum number one hits and a Grammy Award for Best Male Pop Vocal Performance.

August 24-24 Jazz-rock legends Walter Becker and Donald Fagen, better known as steely dan, are touring again and will take the stage at nokia Theatre for two consecutive nights. Perfectionists in the studio, they somehow manage to bring the same level of play to their live performances as well. “Everyone who gathered Friday evening was a believer, and they were treated to something close to rapture” quips the Los Angeles Times of their last performances. The Chicago Sun said of their shows: “This was different. This was live. This was vibrant….” Eight musicians, currently appearing as The Bipolar Allstars and the Borderline Brats and three backup singers, back up the duo.

Daryl hall anD John oates August 8 Signed, and later dropped, by Atlantic Records in the 1970s, pop-soul masters Daryl hall and John oates went on to sell more albums than any other duo in history. Their 1973 debut album, Abandoned Luncheonette, featured their first Top 10 single, She’s Gone, and for the next two decades they would score six more, including Rich Girl, Kiss on My List, Private Eyes, I Can’t Go For That, Out of Touch, and Maneater from six consecutive multiplatinum albums. August 9 train rolls into the Verizon amphitheatre this summer for their Mermaids of Alcatraz tour with The Script and Gavin DeGraw. Led by front man Pat Monahan (who formed Train after the collapse of his Led Zeppelin cover band), this San Francisco-based group has a great stage presence with their unique mix of talent, charm, and humor. The band hit mainstream success early on with their 1998 self-titled and $25,000 self-produced album, Train, that included the quirky pop hit Meet Virginia, which they followed up in 2012 with Drops of Jupiter, earning them two Grammy Awards—with the help of Paul Buckmaster, Elton John’s long-time string arranger. The band’s next album was a commercial failure, and they essentially called it quits for three years, until 2009 when their album Save Me San Francisco won them great success with the 6-time platinum hit Hey, Soul Sister and follow-up hit Marry Me.

With weather and landscapes similar to Southern California’s coast, Cape Town is an easy place to acclimate to Africa. We arrived in early January, summer in South Africa, to find a cosmopolitan city with a decidedly European feel. However, since its colonization by the Dutch and English in the mid-1600s, South Africa’s history has been complex and tumultuous. My son and I were both swept away by the grandeur of colonialism in Cape Town and at the same time outraged by the squalid outlying townships, which show the remnants of apartheid inflicted on all the non-whites in South Africa from the 1940s to the 1990s.

bask beyond What to Do The District Six Museum shows just one example of the cruelty of the apartheid system. This small museum is dedicated to preserving the memory of a mixed-race community that was bulldozed during the forced resettlement of non-whites to townships outside of Cape Town. A memory cloth created by the former residents of District Six and a floor map showing in detail the homes, shops, churches, and mosques that existed prior to 1966, recreate a sense of the vibrant community that was destroyed in the “slum-clearance” operation. This heightened our shock when we later saw the entire district still covered in rubble. After we visited District Six, the colorful Bo-Kaap district was a bright spot in our Cape Town tour. In Bo-Kaap, the mostly Muslim residents rebelled against the law requiring them to paint their houses white by painting them in vivid pinks, purples, reds, blues, and greens. We knew it was the diversity of culture and race that Desmond Tutu referred to when he called South Africa the Rainbow Nation, but we couldn’t help wondering if BoKaap inspired him. Designated one of the New Seven Wonders of Nature and the most recognizable landmark on the Cape, Table Mountain is known for its spectacular views and state-of- the-art revolving cable car. However, by late afternoon the dreaded tablecloth, the cloud that sits on top of Table Mountain, had moved in and we sat huddled in the mist hoping it would blow over before sunset. My son chose not to join us on the cable car and instead ran up the steep slope of the mountain. Other ways to reach the top include hiking, biking, or driving up the gently sloping backside of Table Mountain and stopping off at the wineries of Constantia and the Kirstenbosch National Botanical Gardens. The Cape Peninsula is full of sights unique to South Africa. While driving through the quaint coastal towns, we spotted marauding baboons looking for unsuspecting picnic-ers and official shark spotters on the lookout for great whites. Magnificent beaches—where, according to our guide, the waves in winter rival Maverick’s—gave way to huge parklands covered in flora as we neared the Cape of Good Hope. We were jolted awake by the sight of ostriches cruising the beach after being lulled by the miles of coastline and salt air. Later, we climbed to the top of the point and looked down on the windswept ocean where Bartolomeu Dias rounded the southern-most tip of Africa, opening the sea route to the East for Portugal in 1488, before heading to Boulders Beach. One of only three breeding colonies of penguins on the African mainland, Boulders is a gorgeous white-sand beach and the protected domain of scores of nesting, waddling penguins. Where to Stay The historic heart of the city is the place to stay. The Taj Cape Town, housed in the former Reserve Bank building, is adjacent to the Company Gardens, created by the Dutch East India Company to provide fresh fruits and vegetables for its ships as they rounded the Cape; to Parliament; the old Slave Lodge and St. George’s Cathedral, where protesters took refuge during anti-apartheid demonstrations. With its open public spaces, wellaccommodated rooms, many with views of Table Mountain, The Taj was a welcome refuge after a long day of sightseeing.
Lion SandS Game ReSeRve, South afRica Our safari began even before the prop-engine plane touched down at the private Lion Sands Game Reserve for our twice-daily game drives. From the air we saw elephants roaming the woodland below and passed several more as we drove from the airstrip to the River Lodge. Drives on 38

a private reserve differ from those on a national reserve because it allows passengers to use open vehicles, drive off road and walk in the reserve. With our knowledgeable guide from A&K, and our ranger and tracker from the reserve, we learned how to track and photograph the animals on the reserve. We even found the Big Five—elephants, lions, leopards, buffalo, and rhino—within three days and couldn’t believe our luck when we came within feet of three elusive leopards. We loved watching the awkward grace of the giraffes as they ran, the posturing juvenile elephants, and the playful lion with his cub. Even though it was a little scary to leave the safety of the vehicle for walking safaris, we found dung beetles, monitor lizards, and tortoises that we would have missed from the road. After the first morning, my son didn’t even flinch at the 5am wake up calls. Where to Stay The River Lodge, one of three lodges on the reserve, is a sanctuary for humans in the middle of the bush. With its rustic chic décor, open-air architecture, large viewing decks overlooking the river, and two infinity pools, the distinction between indoor and outdoor space becomes blurred. From our room we could see the river and the curious vervet monkeys and bushbuck that roamed the property. However, we were still cautioned to keep our doors locked at all times and to call a porter to escort us around at night. Three delicious meals a day, plus morning and afternoon snacks, house wines, and beer are all inclusive at the lodge. We started each day with coffee and a rusk, a South African breakfast staple akin to biscotti, before our morning drive. Halfway through the drive, our ranger and scout stopped to lie out a spread of crepes, granola, muffins, and coffee, and a full breakfast awaited us on our return. During the evening drives, we stopped at a blind overlooking a watering hole or at a deck built up in the trees, just in time to watch the sun set over the reserve. What (Else) to Do We had little free time between looking for animals, photographing them, or, occasionally, dining on them. (The kudu, springbok and ostrich are local and sustainable in Africa. They’re also delicious.) My son got his fix in the lodge’s small gym running on the treadmill while watching the monkeys out the window. I had a massage in the spa that made me forget all about the less-than-smooth ride on the Land Rover. But even as we ate, the talk always returned to the animals.
victoRia faLLS, Zimbabwe Africa is one big photo op. But a camera can’t capture the emotion of some experiences, like when your son bungee jumps off a bridge. The shot of the perfect swan dive he executed into the 400-foot gorge created by the thundering Victoria Falls didn’t reveal the fact that he was about to faint from fear. What to Do If jumping off a bridge isn’t an option, the misty trail along the rim is a tamer way to get close to Victoria Falls. Our guide provided rain ponchos, but we were still soaked by the spray from “the greatest known falling curtain of water” and one of the Seven Natural Wonders of the World. We spent our last evening in Zimbabwe enjoying sundowners and the cool breeze coming off of the water as we cruised down the Zambezi River. We also saw hippos, crocodiles, storks and a giant kingfisher, but the highlight was when we spotted a pair of elephants swimming across the river using their trunks as snorkels. bask beyond the falls, The Victoria Falls Hotel portrays colonial elegance. The lounges and hallways are lined with vintage travel posters and trophy heads that recall the birth of tourism in Africa. However, the view is the main attraction. Sitting on the veranda overlooking the lawn, we gazed out at the bridge and the plume of spray rising over the falls and tried to imagine what Livingstone must have thought when he first saw them. The somewhat tattered room we were originally given had a view of the falls, but the air conditioner conked out in the middle of the night and we were moved to a nicer courtyard room.
MALAWI Malawi is lush and green in January. Villagers herd goats and cattle, and sell fresh produce by the side of the road, making it hard to believe that severe malnutrition is a pervasive problem in this country. But, as we learned from my niece, the villagers sell most of what they farm and subsist on a mixture of boiled water, corn meal, and cassava root, both of which are filling but have little nutritional value. My 25-year-old niece, who grew up in Laguna Niguel, is spending two years as the development director for PB+J, a non-profit program partnering with Y-Malawi, the Nkhoma Hospital, and World Vision to produce and distribute fortified peanut butter paste to children in the Nkhoma region. She lives, like most Malawians, with sporadic electricity and water that must be boiled. After the steady flow of food, filtered water, and non-stop sightseeing on our luxury A&K tour, Malawi felt like a different world. But it’s called the “Warm Heart of Africa” for a good reason, and for the few days we were there we felt safe and relaxed. The first night we were there we went to the only “restaurant” in the village, Mr. Banda’s, where we were first told that there was “No Mr. Banda now” and then that there was no food. The lack of electricity in the town was obvious as we used the light from our cell phones to make our way back to my niece’s apartment. She and her roommate from Germany put together a dinner of lentils, sautéed pumpkin leaves, and pumpkin bread. We spent the rest of the night playing cards and drinking hot tea under a single light bulb and hoping the temperature would drop so we could go to sleep. After touring the PB+J facility and the school in Nkhoma, the four of us hired a car and driver to take us to Lake Malawi, the third largest lake in Africa, for the weekend. At Cape Maclear, we shared the shoreline with the smiling villagers as we watched them fish, bathe and do their laundry in the lake. That evening, we played cards and watched lightning flash on the horizon. On Saturday, the village children joined us at the lake, splashing in the water and engaging us in an endless round of the pleasantries they learn in the English school. At Fat Monkeys, the backpacker lodge where we stayed, the food issues would have been comical if they weren’t so indicative of the difficulty in obtaining healthful food in Malawi. If we ordered banana fritters, we were told there were no bananas. We ate hamburgers without buns and avocado sandwiches without avocado. At one point my son walked a few yards down the beach and bought two avocados from one of the villagers. At that point we began to wonder how Fat Monkeys got its name. photo: Edie Barvin
There are places to avoid and very real dangers in Africa. But there are also amazing animals found nowhere else on earth, warm-hearted people, fascinating history, and unreal scenery. For a first foray into the unknown, it helps to follow the paths already cut by intrepid explorers and experienced guides.

aspen is a small mountain town located in the remote rocky mountain sawatch range. it is just a few hours drive from denver and also accessible by a few daily, direct flights from los angeles. unique to mountain resorts, aspen offers a wide range of activities normally found only in cities—gourmet restaurants (over 170), wine, music (including the 1889 wheeler opera house), shopping, art, and mountain sports.

Wheeler during Colorado’s silver boom, the Hotel Jerome was also in need of renovations. the hotel suffered from “benign neglect,” said auberge resorts CeO mark harmon, when his company took over the property in 2011. the hotel is one of the latest landmarks to have recently undergone extensive remodeling, and earned a top 10 ranking for “top luxury hotel renovations” in Forbes Magazine. the renovations were done under the guidance of tal Studios founder, toddavery lenahan, and the hotel reopened in December 2012. the redesign pays homage to the historical richness of the building by blending in modern touches with the historical aspect of the hotel and bringing the 94-room property back to its original prominence. Custom lighting, dark woods, native prints, hand-stitched leather chairs, artifacts, and eclectic art all create a unique ambiance in the hotel. the guest rooms feature heavy millwork, cashmere curtains, leather bed frames, leather writing tables, and leather chest framed mini-bars. the public spaces have been described by management as “a modern vernacular draped over a historic Victorian frame.”

With 92 unique rooms and suites, a spa, a meeting space, and multiple restaurants, the hotel has a cosmopolitan, yet intimate ambiance and is comfortable in all aspects. in 2009, however, the hotel shut its doors for three months for a complete remodel. the hotel entrusted designer holly hunt with the $18 million renovation to give it a more contemporary, international look as opposed to its traditional “mountain chic” décor. the hotel had seen a 12% drop in guests that year and its owners, the Crown family of Chicago, took a chance by remodeling the hotel and restoring the luster to its $1200 pernight average room rate during the high season. the result was the rebirth of an Aspen classic. the little nell’s living room and legendary restaurant were renovated in 2011. the restaurant, montagna, received a $2.5 million makeover and reopened as element 47 after the 47th item on the periodic Chart of elements, silver, the mineral that brought Aspen to life. the look and feel of new york comes to Aspen in this restaurant through the vision of restaurant design firm Bentel & Bentel who won the James Beard Award for restaurant design in 2012. large-scale artwork and a glass wine wall surround the beautifully lit room. the new menu is more flexible and now features “soulful American cuisine,” and offers a host of à la carte options as well as a tasting menu. fortunately, the restaurant’s 15,000-bottle cellar remain unchanged.

Principal at Greenlaw Partners, Wilbur Smith talks to bask about how the real estate company has brought in unique businesses to Orange County, overcome inherited design issues, and incorporated community requests to revitalize the old Triangle Square into a one-stop entertainment mecca.
What about Triangle Square originally attracted Greenlaw Partners to the property? It’s the number one busiest intersection in Orange County, so that’s pretty good. The drive-by traffic is great. I think it’s probably one of the only real retail projects like this that dead-ends at the end of a freeway. Think about it. In California, you always have the cloverleaf; you always have to pull off the freeway and go down the off-ramp. With The Triangle, the 55 just dead ends into the intersection of 19th Street and the 55, so you get off the freeway and you’re at the project.
What new businesses have already been added to the center? We’ve put in a new two-story, 60,000-squarefoot 24 Hour Fitness. Rockstar Tan is located next to them. So you have a lot of people going to the gym and then swinging by Rockstar. It’s a great synergy. Triangle Square Cinemas has a new cinema; they added a ninth screen with stadium seating. They also remodeled the other eight screens, put in all new seating and digital sound. The Black Knight and Olive Branch Pizza have opened along with Saddle Ranch Chop House and El Corazon de Costa Mesa. H2O Sushi will be joining them soon. Tavern + Bowl is now under construction; it’s a new concept from San Diego. It’s a tavern that has bowling lanes, which is really neat. It’ll be open around October. So, the center now has a lot of new tenants. It was 20% occupied when we bought it. We’re now at about 85% occupied, which is a big difference.
How do you decide what type of businesses will make the right mix? You really want to make sure that the business is complementary to what’s there and adds a very unique character to the theme and to the brand of the asset. You want to know that the tenant has the strength and the wherewithal to be there for a long time. We don’t want to 64

make any mistakes. So we’re being very cautious about the types of businesses that join the center. The types of businesses that fit well are certainly those that are more entertainment-oriented, including restaurant and food concepts that are synergistic to what is already there and that are more of a destination. You want to have a collection of retailers that are the type of spots people are drawn to. We’re not looking for impulse locations.
What did you find that the local community wanted to see when researching what to do with the center? I couldn’t tell you how many times people, from local residents to city officials, said they wanted a bowling alley! The bowling deal was a request because there isn’t any bowling in Costa Mesa and I don’t think there is a bowling alley in Newport Beach either. So we went out of our way to find a bowling operator that would be interesting and blend in well with the concepts and what we were doing at the center. We listened to what the community was asking for and, in turn, we gave them a great new place to hang out, Tavern + Bowl.
What has been the community response to the changes that have been made so far? I think it’s been really good—most of the feedback is similar: ‘Wow, this place is really different, I can’t believe how much you’ve changed it and how neat it is.’ I think there’s been a lot of, maybe the right words would be shock and awe, about how it’s not what it used to be. We even punched into the parking garage to create additional access so that you can walk out of the parking garage right into the plaza area by the movie theaters and restaurants. There were design challenges that we inherited, so from the beginning we focused on some of the big ones that needed to get fixed and went out of our way to try and fix some of the most pressing issues. We redid the lighting in the parking garage and repainted
the whole parking garage white to brighten it up. We spent a lot of time on traffic analysis trying to figure out the flow and movement of cars in order to make the ingress and egress the most efficient possible given what we inherited. We also put parking counters in to let everyone know where the stalls are. This way when you pull into the property, you’ll see how many stalls are available and what floor you need to park on. We even added a valet service for people who don’t want to deal with parking. So now we have an option for every type of customer that visits.
What ties all of the tenants together to help accomplish Greenlaw’s vision? We’re hoping that these places are all considered destinations. I think it’s kind of cool that we were able to attract places from Los Angeles and San Diego to come to Orange County. Plus we have the Olive Branch Pizza. It’s operated by a local entrepreneur. He lives by the center and has been in business in Costa Mesa for a long time. So we’ve got some stuff from LA, some stuff from San Diego, and then we’ve got a local entrepreneur as well that all works really well together. We’ve been mindful about having a little bit of everything. And I think it’s great that you get all of that to fit in one spot. The other thing that’s important is that we really encourage tenant creativity. We want the tenants to be different. Frankly, the more over the top they’re willing to be and to provide something that gives a unique experience to the client, the better. So, being an openminded landlord helps the tenant and helps to develop our brand at The Triangle. We want to hold out for the right tenants and create the right brand and image. We’re trying to attract tenants that are one-of-a-kind and can run a long-term successful property for Orange County, Costa Mesa, and Newport Beach—for everyone in the area.

jdrf dream gala JDRF’s Dream Girls ushered in the spring season with their much-anticipated annual “Dream Gala.” The Ritz-Carlton’s gorgeous grounds played host to the evening activities where guests turned out in stunning gowns and handsome tuxes to raise funds to cure type 1 diabetes. As the guests entered down the grand staircase, their hearts were touched when children of all age groups fighting type 1 diabetes greeted them. They thanked them and escorted them into the outdoor courtyard where local purveyors donated bespoke pieces for the silent auction, while guests sipped on champagne and enjoyed light bites. As the dinner chimes rang, the
crowd made their way to the grand ballroom where the Cindi Morales gave thanks on behalf of the Dream Guild and introduced Master of Ceremonies, Mr. Bill Peters, who kept the crowd laughing and on their toes all night. Special guest Nicole Johnson, Miss America 1999, sang a jaw dropping number, then shared the heartwarming story of her own struggle with the disease, giving the crowd a powerful insight into the daily struggles of life with diabetes. The group raised an impressive half million dollars that evening showing the love, dedication and compassion the Dream Guild has put into the effort to end the struggle of living with type 1 diabetes.

The key to Wilhelm’s historical success in creating and nurturing concepts has been a precise, unbending, perfectionist vision for each and every new concept—from the menu, the color palette and fabric, the mood and vibe, the lighting, the art, and even the music for each venue. Dana Point wasn’t really on our radar screen in looking for OC sites, but when this site became available everything about the location and the surrounding neighborhoods made perfect sense. how has the restaurant industry evolved in Orange County over the last 20 years? When I moved here 35 years ago, OC was pretty much a culinary wasteland. That began to change slowly in the late 80s and early 90s when a handful of us began opening small restaurants offering better quality and more creative food offerings. Included in this group were pioneers like Alan Greeley, Lou Manginelli, and Michael Kang; we’ve become elder statesmen now, but still kicking it. Why is Jimmy’s different from the hundreds of other dining choices in Orange County? There are a lot of Euro or gastropubs popping up in OC, but we felt that there needed to be one that proudly focused on the rich culinary heritage and traditions that exist in all the many regional areas of the US. I also worked all last year in getting our San Diego location to become a “Certified Green Restaurant” and am in the process of doing the same for Dana Point. We also will be featuring wines on tap which allows us to pour high quality wines at reasonable prices and with a smaller carbon footprint. What is it like to open a new restaurant? It’s easily the most exciting part of being in this business and also the most taxing. It’s rewarding to see how the efforts of everyone on the team fall, and sometimes stumble, into place. Every new opening is in some way like the birth of a child...filled with anticipation, anxiety, happiness, joy, and many sleepless nights.

CRAFTY GASTROPUBS A town that takes pride in knowing the idiosyncrasies that differentiate IPAs from ales, San Diego has a thriving craft beer community and some of the trendiest gastropubs around. Jaynes Gastropub, owned by a Liverpool native and her husband, serves fish and chips with Newcastle ale battered sea bass and sautéed snap peas.
