Well my friends, the December madness is upon us: crowded malls, parking spot wars and traffic galore… … you all know the drill. However, on the other side of all that crazy preparation there’s a bounty of beauty to partake in. Over the years, I’ve learned to perfect my “Wow, isn’t that awesome smile” while unwrapping sweaters with appliqués and fringe that aren’t me at all. I’ve probably dragged a half-ton of dinner rolls (that’s what they always assign to single people) across a million county lines by this point in my life. But my parents and grandparents have always managed to make us all feel like we were blessed, especially at Christmas. My point being, that while I’ve had my share of “It’s a Wonderful Life” holiday moments, there may be a year or two that I have had to white knuckle my way through the Christmas turkey and festivities, making my way to the other side of New Year’s in hopes of exciting opportunity. All in all, Christmas has always been my most favorite holiday of the year. I’m starting this 2015 holiday season on a high note. I’m especially excited to share with you this issue and our highly anticipated unveiling of the Winter Fashion Shoot. This season, we were honored to be able to shoot at the Mission San Juan Capistrano with our fashion partners, Lugano Diamonds, Novecento Boutique, Cottage Colour and The Passionate Collector. It was the perfect platform for a holiday shoot, and if you have the chance to visit the

In an absolutely sweet read, found in bask’s “In the Glow,” Beth Fhaner details her delicious experience at ChocXO’s factory in Irvine, where she learned the art of chocolatemaking from bean to bar. “As a tour participant, I had the chance to sample raw cacao pulp, cocoa nibs, liquid chocolate, and of course, the finished chocolate products,” she says. “Talk about a sweet assignment!” Beth’s favorite chocolate confections: sea salt caramels, pure drinking chocolate and organic dark chocolate bars.

JOHN VARVATOS EMBOLDENED BY HIS LIFELONG PASSION FOR MUSIC, MENSWEAR DESIGNER JOHN VARVATOS’ SOPHISTICATED-COOL CLOTHING HAS MADE HIM THE ROCK-STAR OF THE FASHION WORLD.
A
t first glance, you might not think John Varvatos’ brand of rocker-chic menswear to be particularly well placed in Orange County. With a lifestyle skewed toward board shorts and tans, it’s hard to envision the designer’s sleek silhouettes and sumptuous leathers strolling down the Newport Peninsula. However, as his eponymous South Coast Plaza shop celebrates its 10-year anniversary, Varvatos proves that there is, indeed, a place for men whose sense of style falls outside the assumed realm of surf and sand. With Orange County’s retail landscape having undergone many changes over the past few years, one has to wonder if there is anything in particular that accounts for the longevity of his namesake shops. “Location,” Varvatos confirms. “Orange County has this great mix of international travelers, sport personalities and some really quality customers that have just been great for us. That, and South Coast Plaza is one of the top shopping destinations in America!” An infrequent visitor to the Southland (“I don’t tend to have a lot of downtime,” he jokes), Varvatos is quick to point out the ease with which his clothing translates from East Coast to west. The former, he says, “…does a lot of layering on account of the weather. The west doesn’t have [that requirement], so it’s all a bit more relaxed and simple. It’s also more sexed up out here! Personally? I like relaxed and simple layering.” The story behind the John Varvatos brand is known well enough: Detroit, Mich. local moves to the Big Apple, works for Ralph Lauren and Calvin Klein (where he plays a hand in introducing the label’s now ubiquitous men’s boxer brief to the world), goes back to Lauren for a stint, then launches his own line in 1999. The rest, as they say, is history. At the core of this history sits the Varvatos man. A man, “who loves great detail in his clothing, but isn’t driven by logos,” says Varvatos. And, “Who is less interested in fashion, and more interested in personal style.” This concept of modern individual style is a reoccurring theme for Varvatos. passion for music and the arts. Such a passion, in fact, that his response to the query “What four people would you have at dinner—living or dead?” puts Jimi Hendricks, John Lennon, Steve McQueen and Kurt Cobain at the Varvatos table. The commonality, he states, is that “their lives were totally unfiltered and based on passion. This is something that seems lost in [our] current age, where everything seems focused on big business.” In listening to him speak, it’s easy to pick up on Varvatos’ sense that our way of life has shifted dramatically since he began his journey through the worlds of fashion and retail. “When we started our line, men were not as interested in their appearance as they are these days,” he explains. “Guys today are so much more into style and fashion. I think the Internet and its instantaneous communication has made the world very small, very quickly, which had this effect of making men very aware of how they look. In one sense, it’s been great for us, as it makes it easier to get guys excited and interested in what we have to say.” Being so heavily influenced by the rock and punk movements of his youth has served Varvatos well, even beyond designing his clothing. In 2008, he set up shop in Manhattan’s East Village, in a space formerly occupied 38

by legendary music club CBGB. “It’s an incredible space,” he says. “I don’t think it’s haunted in the traditional sense, but there is such energy in the walls. We’ve had some great musicians perform there who all say there is something in that space that creates a connection.” Connection, too, is important to Varvatos. “Awards and all that are good and fine,” he adds, “but over time I’ve come to appreciate the connection and relationships I have with people more.” Never one to sit long, Varvatos has morphed into a man of many creative outlets. In addition to his clothing empire, the John Varvatos brand also oversees an active performance venue in his Bowery location. There is also an art venture in the mix, as well as a music label launched in 2014, John Varvatos Records, through which he hopes to nurture artists in a way that doesn’t focus completely on revenue. But, in the end, it’s all comes back to the clothes. In true Varvatos fashion, his Fall/Winter show sent models down the runway swathed in lush browns and generous yet tailored coats over slim dandy pants. “It’s the season of the coat,” he exclaims. Like so many aesthetes, Angela Tesselaar sidelined early creative inclination for seemingly more stable pursuits. It wasn’t until the proprietor and principal designer of Atelier A.Tesselaar enrolled in the environmental design program at UCLA that design became her passion—and passion, her priority. “When I was introduced to the work of Rose Tarlow, Christian Liaigre and Axel Vervoordt… it was game on!” she says. “I knew that lifestyle was where my path was leading.” Now an influencer herself, Tesselaar fashions sophisticated-chic interiors through her fullservice design firm. “The vibe is typically quiet,” Tesselaar says of her style. “It’s all about texture and a subdued palette, blending old and new materials for a perfectly imperfect environment. No flash, no ‘wow factor,’ the lines are clean and the story is always timeless with an effortless sense of style.” The firm operates from Atelier A.Tesselaar, the designer’s dream of a luxury home-décor boutique in downtown Laguna Beach. Beckoning top architects and designers with beautifully curated
pieces of art, artifacts, rare specimen plantings and elegant accessories, the atelier reflects Tesselaar’s cultured and well-chosen aesthetic. Uniquely, there is an approachability and naturalness to it all. Born and raised in Southern California, Angela’s Dutch descent is clearly evident in her work. It begins with proportion, symmetry and layering in pieces with authenticity and soul. “Not so much eclectic, I am always weaving in natural elements in a tailored fashion.” In this respect, she says, a sense of place is “critical” to her work, which she describes as “timeless European with a contemporary bent” that’s urbane with ease. Given Tesselaar’s SoCal location, courtyards are her calling card. “Indoor/outdoor living is what makes the California Riviera so incredibly special,” says the designer, whose Emerald Bay beach house is the essence of l’esprit du sud (the spirit of the south). “I am wild about reclaimed limestones, artifacts, water features, fireplaces, greenery, etc.” Wild, yet ever so refined.

At just four years old, Melinda Serra fell for her first design—a toy box built by her father, who then rearranged her bed to another part of the room and polished the rich hardwood floors to a memorable shine. Smitten, she says, “I couldn’t believe how much I loved what he had done.” Ultimately, the gesture proved the precursor to Serra’s lifelong passion for design. Today, through Orange County-based Melinda Serra Design, the designer applies her trademark touch—“well-edited rooms that have warmth and say ‘home,’” as she puts it—to a range of projects with one signifying caveat: “They say love makes your house a home, but furniture doesn’t hurt either!” Spoken like a true tastemaker, one who has made her name creating elegantly livable spaces that reflect their inhabitants through collaboration with builders and trade professionals on everything from home conception and the building process to selecting finishes, furnishings and final touches. “A
beautifully tailored room that is well edited yet feels inviting are spaces I’m drawn to, irrelevant of type of style,” Serra says. “Anything done well looks good, whether it’s modern, classical, or a clever blend of different styles.” Serra’s early influences mirror the breadth of her professional involvements, namely living in Connecticut, upstate New York and Virginia, where, she says, “the beautiful natural countryside and rich architectural characteristics left an indelible need for a classic yet unique perspective.” Now, the shape of a handmade ceramic plate, a floral arrangement, the lines of a chair—all set Serra in an artistic direction. “I see interest in so many things, and love when a space I’ve done for a client doesn’t feel too planned or expected,” she shares. This organic approach allows Serra to remain open to whatever lies ahead—which, she says, entails “everything design, anything beautiful and curiously creative. There are so many great things to experience.”

Culinary concept connoisseur and managing partner at JFAT, David Wilhelm has a knack for knowing exactly what local epicureans are looking for, then satisfying their appetites by serving exactly the right fare in an inviting space that he envisions. His newest concept, the ever-popular JFAT, is a definite crowd-pleaser that pays homage to America’s rich culinary history with modern takes on classic comfort foods. Here, Wilhem dishes to bask about his creative process when curating culinary hotspots, expansion plans for JFAT and some of his favorite menu items at the restaurant. Tell us about Jimmy’s Famous American Tavern ( JFAT). How and when did the concept begin? I was introduced to a developer in San Diego who was looking for a restaurant for his newest marina. I’d already been working on an American gastropub concept for a while and it seemed like a perfect fit for his casual, waterfront location, so we began work right away and opened in May of 2010.

From where do you draw ideas for the restaurant’s culture? Every concept I develop starts with a core idea for what the place is going to be like. This includes the look, feel, vibe, food, size, location, building… all these elements have to be slowly woven into a theme that works together. I often create visual storyboards about the concept that are a photo collage of food, drinks, décor, uniforms… any image helps pull the concept together. You have two new locations on the horizon. What can you tell us about them? We opened our third location, in the new Village at Westfield [Topanga] in Woodland Hills, this past October. Next February, we open in a new Whole Foods-anchored center in Brea. JFAT will be the key full-service restaurant there, overlooking a beautiful green park with a large kinetic sculpture commissioned by the City for the center. In June, we will open in Santa Monica on Ocean Boulevard, two blocks south of the pier.
It’s in a vibrant new area near the new Tongva Park, surrounded by five major hotels and a recently completed development of luxury condos and apartments. We will have the largest open-air patio of any restaurant on the street. What’s your ultimate goal with every restaurant? Two things, really: first, it has to resonate with people; the broader the appeal, the more they’ll enjoy the total experience, and the more frequently they will visit, which leads to the second obvious goal, to be profitable.

Certainly the development of a concept is very enjoyable to me, but opening each new location is also great because you’re really introducing it to a whole new group of people for the first time. I really wanted to recreate what the original taverns represented to people… a social gathering place with great food and drinks.

Given the rich and diverse culinary heritage this country has to offer, I want to create a celebration of regional American ‘comfort food’; this has struck a familiar and popular chord among locals and tourists alike. How do you stay on top of such a rapidly evolving industry? I subscribe to over 20 magazines and am constantly reading about who’s doing what in different parts of the country. Also, in looking for new sites, conversations with landlords are helpful in identifying the type of concepts that are popular and in-demand. Gut instinct and intuition also play a key role. Of all the menu items at JFAT, what seems to be the most popular, and why? For lunch, it’s our All Natural, Certified Angus ‘Famous’ Cheeseburger. It’s a half-pound patty on a soft ‘Parker House’ bun and the fact that it’s our best seller at lunch is a testament to the iconic nature of burgers. For dinner, it’s our HoneyButtermilk Fried Chicken. It’s served with garlic mashed potatoes and a thyme cream gravy. I introduced this dish 20 years ago at Sorrento Grille and it’s always been a great seller, but I think it’s they gravy that puts it over the top. Any favorites of your own? I really love the fried chicken, but I think my one favorite is the Steak Diane. It’s a classic, old ‘continental cuisine’ dish that you used to find on menus everywhere, and that was often prepared tableside. I recently added it to the menu because every time I made it at home I kept thinking, ‘I should see if it would sell at JFAT.’ In the first month it’s already become very popular for dinner. What has your clientele taught you? They’ve taught me that whatever their age, sex or socioeconomic status, they all love American comfort food. In Southern California everybody talks so much about eating light and healthy, but when your most popular menu items are cheeseburgers and fried chicken, that tells a different story.

What led you to the restaurant business? Has it always been a passion of yours? Growing up in California, we had a beautiful family vegetable garden and it was my job to pull the weeds. I watched the fruits and vegetables grow and wanted to see what to do next with them, so I followed my mom into the kitchen. This is where my passion for food began, with the way my mom showed her love for the family through delicious cooking. And now, I continue this expression every night for my guests at Studio. What aspects do you enjoy most about this work? I love sports, so working with a group to achieve a common goal is exhilarating. There is the rush of a busy service, focused minds, hand-eye coordination, beautiful presentations, timing and execution. This is the feeling of teamwork that transcends the individual. It can be a lot of fun. How do you stay on top of such a rapidly evolving industry? I read and look at new presentations constantly. I try to visit new and top restaurants to keep up to date with what others may be doing well. Research, right? From where do you draw ideas for the restaurant’s culture? Many new ideas come from the culinary team at Studio. I have a group of very talented chefs who are also reading and doing their own research. They will often bring ideas to me that will eventually be developed and put on the menu. We have a culture of collaboration.

What makes Studio a culinary hotspot? The unique location and panoramic views of the Pacific Ocean; exceptionally choreographed service; an award-winning wine list and specialty ingredients carefully prepared and presented—all make Studio a one-of-a-kind restaurant. Of all its menu items, what seems to be Studio’s most popular selection, and why? The menu changes often, but there is one dish that proves favorite: Dungeness Crab and Ricotta Cavatelli. This dish uses west coast products and speaks to our coastal location. It is spiked with preserved lemon and has a touch of butter. It is comfortable and elegant, both rich and light simultaneously. Any favorites of your own? I like to change and see new things. Ask me tomorrow and you will get a different answer. What motivates the menu? The seasons. Spring, summer, fall and winter all have their individual charms; I look forward to seeing the produce that comes from each one. What do you personally like to cook? And eat? I try to eat meat, fish and vegetarian to keep myself balanced and healthy. Where do you buy your own food? We shop at Whole Foods and farmers’ markets. What’s in your refrigerator? Tortillas, always, and my own hot sauce. Growing up in San Diego, I fell in love with Mexican food. What’s your favorite ingredient to cook with? Vegetables and fruits; they are the most exciting part of the dish. The protein is the base drum, but the high notes are played by the vegetables, fruits and sauce. You’ve worked all across the world. What culture or experience had the greatest impact on your career? Living in Barcelona, Spain for two years. I learned a new way of cooking and thinking of cuisine, but even more importantly is how it impacted me personally.

This certainly holds true for the fare found at resort’s two premier restaurants: A&O Kitchen+Bar, which features creative iterations of classic gastropub dishes, and Waterline, providing an exquisite sea-to-table experience with its always fresh selection of fish. Here, the talented toque talks to bask about her culinary inspirations, passion for creative cooking and her kitchen must-haves.
Anything special planned for the holidays? Yes, we have the boat parade, which is a very exciting time at the resort. We also have special holiday menus at Waterline for Thanksgiving, Christmas and New Year’s.
What led you to the restaurant business? Has it always been a passion of yours? The passion for cooking started young; as a child I would bake with my grandmother and mom, and I still have my first cookbook from the school book fair. Growing up on a citrus grove, we always had an abundance of fruits and vegetables, so inevitably there was a need and a curiosity to create something. I spent a lot of time in the garden and kitchen from an early age.
What do you personally like to cook? And eat? I like to cook things outside my husband’s and daughters’ routine so that I know they are eating well when I am working… I also like to cook braised dishes for them.
What aspects do you enjoy most about this work? Every day there is something new; either a new ingredient or tool from a purveyor, or a new challenge of a restaurant, event, menu or dish. Not one day is ever the same, so the sense of wonder, challenges and curiosity never dies.

How do you stay on top of such a rapidly evolving industry? Traditionally, I have opted for books, magazines, markets and eating out; even purveyors and classes. Although, I have been introduced, or forced, into Instagram and realize the wealth of ideas found via social media. So the information itself is not the only thing changing, it is the way in which to find information I am learning to adapt to as well. Did a childhood spent around farming impact the Resort’s restaurant culture? Yes, in quality ingredients and how we use them. I like to highlight the ingredient for its true beauty, rather than manipulate it into something unrecognizable. We try to look for the best, so in terms of vegetables and fruits, those often come from California growers.

At Waterline, we try and push culinary boundaries and use fine technique and ingredients to showcase fresh California cuisine. We have some playful elements at Waterline, as well, particularly desserts. The food and atmosphere are really special, and prices very reasonable. It’s a hidden gem.
What’s the coolest gadget in the kitchen? I don’t know about the coolest, but I do know that no matter what kitchen you work in, a handy spoon is always necessary.
Ingredient you can’t live without? Fleur de sel (sea salt) You’ve worked all along the California coast. What experience has had the greatest impact on your career? I cook for them, not for me.

After 19 years with Sushi Roku, chef Shinya Toyoda continues to satisfy customers with his savvy and flavorful fare. Here, he shares with bask why training, traditions and passion have been his essential ingredients in the kitchen. What led you to the restaurant business? Has it always been a passion of yours? I have been drawn to cooking ever since I can remember. From watching my parents and my elders prepare food in a way that has been passed down through generations and traditions. My passion is drawn by the emotional connection one encounters. When presented with a beautiful dish, the smell, that first bite, the textures… I appreciate those emotions and doing something that allows me to share and showcase them with customers, friends and family; it is truly a wonderful feeling. Tell us about Sushi Roku. How and when did the concept begin? I have been with Sushi Roku for over 19 years. The original concept began on November 23, 1997. I have opened many of the locations and tenured at them as well. It is a great company that has given me the opportunity to travel and experience many great cultures and cuisines. How did your training in Japan prepare you for the work you do today? Training in Japan gave me discipline and respect. I practice every day and I am always prepared for any challenge. From where do you draw ideas for the restaurant’s culture? The culture of the restaurant is one of welcoming service, a warm atmosphere and varying coastal cuisine. I experience or at least attempt to dine at great restaurants. Be it Michelin-star rated or a hole in the wall, my appetite and palate are always on the lookout for that ‘satisfied dinner’ feeling. By experiencing and truly learning other cultures’ cuisine, I am able to provide and create dishes that I have put my heart into. The industry is always evolving, but if you have passion and a deep appreciation for the customer, being on top will become second nature. Of all the menu items at Sushi Roku, what seems to be the most popular, and why? Top of the list, I would say, would be our Hanabi: sushi rice prepared oshizushi-style [pressed rice], with our spicy tuna and secret Hanabi sauce. It has great flavor profiles, wonderful textures, and you don’t feel guilty about something that has ‘deep fried’ under its description! Any favorites of your own? I have many favorites, but I would say I love to cook items from my childhood for the staff to enjoy: hot pot stews, Tonkatsu, curry! Ingredient you can’t live without? Sake! Miso and soy sauce. What has your clientele taught you? They taught me to be open to one’s preferences, but also to push the limits. Done in a way that is appealing to a person’s senses allows new experiences and an ability to try something you normally wouldn’t. When I share a story or a vigorous kanpai with a customer, the whole dining experience becomes personal and always memorable.

Executive chef of Waterman’s Harbor, John Cuevas believes that fresh is best, less is more, and quality is a commitment—one that he solidifies every day with superior seafood cuisine that continues to lure in patrons. What led you to the restaurant business? Has it always been a passion of yours? My mother owned restaurants, so growing up, I found myself in and around restaurants. My grandfather was an amazing cook and I learned a lot from him, but it wasn’t until my early 20s, when I went to culinary school, that I really fell into my role as a chef. I guess you can say it’s been a part of me for as long as I can remember. Views aside, what makes Waterman’s Harbor such a culinary hotspot? Waterman’s Harbor is focused on delivering the freshest seafood to Dana Point and surrounding areas. I’m committed to quality and giving folks something that has been missing in the dining landscape for some time. With access to incredible seafood, we want to have that take center stage. Tell us about the resto’s name. Waterman is a general term used to describe anyone who makes their living from or in the water. Some of the first people described this way in the U.S. were the boat ferry and fishermen of Maryland’s eastern shore in the early 1800s. We have tremendous respect for the watermen who bring us our fresh fish and work in the waters surrounding us. What inspires its culture? Our culture is inspired by our environment. Anytime you work at a place where you have views of the water from your kitchen, you have to take [the] lead from it. If you can’t be inspired by that view, then there’s a problem! What is Waterman’s Harbor’s most popular menu selection, and why? Right now, giving our guests the ability to select their own fish and sauce, with sides of their choice, is most popular. Allowing our guests to create their own fresh experience has become key. If you want a simply grilled piece of fish, we’ve got it, but if you want to try one of our composed dishes, we’ve got that too. Any favorites of your own? I love fresh fish. I put my name [on] and stand behind everything on my menu. I think that allowing people to understand why they should support our local fisherman and that the freshest fish just tastes better is an important component of the experience for me. Anything special planned for the holidays? The annual Boat Parade gets the community excited, and we’re excited to provide the setting for them to enjoy the festivities. We’re also excited about the many holiday parties and private events planned by others—our restaurant has the ability to accommodate groups, from small to large. What has your clientele taught you? Our guests have taught us a lot, but probably most important, to think simply. Sometimes less is more and folks are craving a great, quality experience without pretension and bells.

icily. In America, the word often evokes thoughts of Francis Ford Coppola-directed flicks about the Corleone family and the mafia. But Sicily also is where many Americans trace their lineage, from the likes of Joe DiMaggio, Frank Sinatra and Lady Gaga to countless other Italians of specifically Sicilian descent. Whatever one’s perception is of Sicily, once you visit the lovely island of many influences and civilizations, you’ll never think of it in quite the same way. Yes, Sicily is part of Italy (since 1861), but from the time the first humans stepped onto the island around 10,000 BC, Sicily has been a cultural melting pot. Siculi, Phonecians, Greeks, Carthaginians, Romans, Moors, Normans, Spaniards and Bourbons have all been here, each for an extended period of time, which may be why islanders are so welcoming to visitors. They’re probably somehow related, after all. And welcoming they are, from big cities to rural countryside, with nary a glimpse of La Cosa Nostra (or mafia, in more familiar terms)—at least not on my recent visit. Instead, I see beautiful beaches, visit gorgeous wineries, eat in wonderful restaurants and drink in fascinating ancient historical sites while roaming the island and beyond, to little-known gem Pantelleria. After the quick flight from Rome to Palermo, it’s grab a rental car and go. Be forewarned, however, that once you are off the highway, street signs in Sicily are not the best. And because of the hilly nature of the island, you see bucolic landscapes with sheep grazing in vineyards, and your GPS may not work. So arm yourself with a good map and be willing to ask for directions as you go. It’s a big island, so if possible, plan to spend at least a week (or more) here. Check out the mysterious mummies in Capuchin Catacombs in Palermo, hit famed Mondello Beach to dip your toes in the Mediterranean, then head to the countryside and spend the night in one of Sicily’s lovely

“agriturismo” lodgings, rural estates and farms that offer a homelike experience to tourists and are often located at or near the island’s numerous wineries. At Baglio Di Pianetto Agrirelais and Winery, for example, stay in the heart of the vineyards owned by Count Marzotto in a classic, upper-class Italian country house, and enjoy a typical Sicilian meal of fried seafood, arancini and cannoli, all paired with the nearby winery’s distinctive offerings, like Ficilingno, Agnus and Cembali wines, made with indigenous Sicilian grapes—Insolia, Catarratto, Frappato, Nero d’Avola. Continue on for more tastings at some of the other beautiful wineries dotting the nearby landscape. Visit Principe de Corleone— yes, Corleone is the name of the town where the Pollara family has been making fine wine since 1892—and sample Quercus reserve wines while gazing across rolling hills covered in vines. Climb even higher to Dei Principi di Spadafora, in Camporeale, for gorgeous vistas and the crispy white Grillo, which is another indigenous Sicilian grape. Then stop into Tenuta Rapitala to watch the sun set over the hills while experiencing the winery’s wonderous Nuhar red blend.

o try the most famous wine from Sicliy, Marsala is a muststop. This always-important western port city, settled in the 8th century BC, remains a key area known for its wines, impressive Baroque architecture and famed salt flats, with their striking windmills. Choose Hotel Carmine for a home base, an antiquefilled luxury offering located in a 16th century building. From here, walk the old city, looking into Mother Church (circa 1176) and eventually wandering into Carlo Pellegrino, one of the top producers of Marsala wine since 1880. Take a guided tour and tasting—there’s a cooking school, too. Choosing dinner at SLO (Osteria San Lorenzo) rather than my own cooking, I discover an exceptional restaurant dedicated to pairing sophisticated seasonal sea- or farm-to-table dishes with the area’s best wines. Donnafugata is one of Sicily’s finest wine producers, a family business since 1851. A visit to their massive winery in Marsala evokes the past, but don’t expect to taste Marsala wine here. Instead, join the welcoming Rallo family and try their full line of award-winning wines, from Grillo and Chardonnays to Nero d’Avola, Cabernet Sauvignon, Merlot and more. To experience Donnafugata’s most famous wine, the uniquely wonderful and sweet Ben Ryé Passito di Pantelleria, hop on a plane for an hour flight to Pantelleria. Ideal for a day trip, it’s a place like no other—literally, as it’s the only location on this tiny, special island that grows Zibibbo grapes found in Ben Ryé. Just 37 miles east of Africa and a popular summer vacation spot—Giorgio Armani has a home here and luminaries like Madonna, Sting and Isabella Rossellini visit often—it is a truly exotic place to behold. Where else will you see stunted grapevines actually growing in the sand, olive trees that look like bushes, or foggy, terraced hillsides that reflect a centuries-old way of living and cultivating? Back on Sicily, roam down the southern coast to Agrigento and drink in the spectacular Valley of the Temples, a UNESCO World Heritage site featuring the remains of seven ancient Greek temples, including massive Temple of Concordia. Then meander across the center of Sicily toward that other mustsee sight, Mt. Etna, located on the northeastern edge of the island. It’s likely to be smoking, for it’s an active volcano; and in winter, you may spot skiiers schussing down the snow-covered peak. In summer, visit some of the wineries that dot the eastern side, with vines that flourish in volcanic soil, like Wiegner, where you’ll feel as if you just stepped into a rustic time machine from the moment you enter its old-fashioned tasting room. Make Sicily’s most elegant city, Taormina, your jumping-off point for eastern side exploration. Stay at sea level at the elegant Grand Hotel Atlantis Bay for easy ranging, or live at the very top of this hillside city at luxe Belmond Hotel Grand Timeo; either way, see ancient Greek Teatro Antico, with its spellbinding coastal views, shop for Furla, Valentino and other Italian haute brands, or just wander the streets. Don’t miss the Clock Tower, built in 1679, or the lovely public gardens. Complete your Sicilian adventure by sliding down the coast to Syracuse, the UNESCO World Heritage metropolis that was originally one of Ancient Greece’s most beautiful cities. Be sure to see the Duomo, the vast Baroque cathedral there, which was born in the 5th century as the Temple of Athena, as well as the Roman ampitheater, the citadel known as Maniace Castle and the Greek Acropolis, still near the center of town. It’s the perfect way to complete your visit to this gorgeous island, whose vibrant history and culture are a true revelation.

A beautifully redesigned resort off Baja’s Sea of Cortez makes a singular impression

I
hadn’t been to Mexico in many years until recently. Not for any particular reason, other than life had become too busy and frequently short on time. However, a couple of months ago, I was invited to attend the inaugural celebration of “A Taste of Cabo,” with famed guest chefs, brothers Kent and Kevin Rathbun, at Esperanza—a fabulous Auberge Resort, and the very place that made me fall in love with Mexico nearly a decade ago. So I just couldn’t resist the opportunity to rekindle many a fond memory of past times spent at the resort. There’s a reason why so many people flock to Mexico, specifically Cabo San Lucas, all year long. Perhaps there are many—namely, warm weather, fresh seafood, miles of beautiful beaches, direct flights from John Wayne Airport, and let’s not forget, amazing margaritas. While I do enjoy Mexico’s free-spirited lifestyle, there is something particularly special about Esperanza, which made this particular invite all the more alluring. After a brief two-hour flight I land in Cabo San Lucas and, per usual, am feeling a little nervous until I locate my luggage, secure transportation and really get my bearings. Making my way through the terminal is far easier than I remember, however, with organized lines and airport staff efficiently checking passports. Soon, I’m through the double doors and quickly spot my driver waiting on my arrival, sign in-hand. Beautiful. It’s late August, and a little warm (probably high 90s), so I’m relieved to see my driver has the car engine on, air-conditioner blasting and the center console stocked with chilled bottled water. In no time we’re on our

way to the resort (an easy 30-minute drive from the airport) and the view en route is far more mesmerizing than I recall… miles and miles of rolling desert hills with the occasional site of new construction on the horizon. By the time we arrive at the resort, the easy drive, combined with the warm sensation of heat, has me completely calm. At the entranceway to greet me is Paula, my concierge, who proceeds to lead me through the lushly (and immaculate) landscaped property to my casita, which I am particularly excited to see since this class of accommodations was redesigned this past summer. Once inside, I immediately feel like slipping off my shoes, feeling the cool floor beneath my feet, and enjoying the complimentary guacamole and margaritas awaiting me. The interior layout of the casita—and the service that brings me here—is exactly as I remember, but the aesthetics have been beautifully revitalized with a contemporary redesign that continues to reflect the resort’s reputation for luxury and sophistication. Casitas (rooms so expansive they feel more like suites) resemble private bungalows and are incredibly relaxing and intimate spaces perched on the bluffs of Punta Ballena (meaning “Whale Point”), boasting over 900 square feet of sumptuous space with unobstructed ocean panoramas of
the Sea of Cortez. Depending on which floor one books their casita, each includes a sizable terrace with either an infinity-edge hot tub in which to soak during a romantic candle-lit evening, or a hammock to nap in on a lazy afternoon. For the next three days, I indulge in morning yoga, afternoon cooking demonstrations conducted by the Rathbuns, lounging in infinity pools and attending evening poolside barbecue parties and a decadent five-course gala dinner with wine pairings. The food is remarkable—an unparalleled gastronomical experience with fireworks and all. (Fireworks just because it’s Thursday?) However, most vital to this visit—and all my visits—at Esperanza is the service, creative attention to detail and the ability to set the standard for what a luxury experience really means. From the mindful driver waiting at the airport, to the chilled margaritas waiting in my room, to innovative and indigenous menu items (including several gluten-free options), to chlorophyll water and complimentary, fresh-squeezed juices served by the pool—Esperanza continues to raise the bar. When visiting Esperanza, one can stay busy with activities or spend a lot of time doing absolutely nothing. Whatever the routine, the resort is sure to leave a lasting impression—one that will keep you coming back for years to come.

More than 270 finely-dressed ladies and gentlemen gathered at The Westin South Coast Plaza to celebrate Pacific Symphony’s 37th season opening, “Ode to Joy.” The memorable evening began with a lavish cocktail reception. Then, in The Westin’s Plaza Ballroom, guests were greeted by an autumn wonderland: décor in deep fall tones, rich velvets and bespoke table centerpieces displaying musical instrument replicas, together representing a full orchestra. The gourmet dinner also paid homage to fall with exquisitely prepared harvest-inspired dishes. hen Riviera Resort opened in 1959, it quickly resonated as a desert oasis with celebrities and cultural sophisticates, one fashioned after Las Vegas classics, The Sands and The Stardust. Architected by Irwin Schuman, its innovative wheel-shaped design cultivated an “immediate sense of intimacy for hotel guests with its progressive and seductive aura,” says Thomas Wright, food and wine ambassador and hotel historian for the Riviera. But for all its A-list cachet, the extensively renovated Riviera holds special reverence for Rat Packer Frank Sinatra. In his days as the “King of Palm Springs,” Sinatra was something of a shepherd, hosting lavish parties for boldfaced friends and putting down roots with Modernist masterpiece Twin Palms—his primary home for nearly a decade (and a theater for his full-throttle drama with Ava Gardner). The Riviera saw two sides of Sinatra: man of swagger and eager altruist. In addition to performing at the hotel, the singer once donned “an apron and cooked his famous spaghetti and marinara sauce in the Riviera’s own kitchen…” reveals Wright. Modern-day nods to Sinatra lend the Riviera a rare relevance. The Bikini Pool carries on its 4-5PM happy hour based on a ritual that started at Twin Palms, where, Wright explains, Sinatra purportedly “would hoist a Jack Daniels flag between two of the tallest palm trees on his property to alert his movie-star neighbors that his happy hour had started.” Elsewhere are remnants of Ol’ Blue Eyes’ playing days. Sinatra enjoyed the intimate stage of Riviera’s Mediterranean Room—today the Thai-inspired Spa Terre—that was also used as a rehearsal space by Elvis Presley. And he entertained guests in the swanky Starlite bar, which “vibrates an old glamorous Hollywood feeling,” says Wright, complete with a video art screen depicting scenes of earlier-era Palm Springs and various Hollywood idols. The room’s pervasive orange glow is a credit to the crooner’s favorite color. Still swingin’ after all these years, the Riviera paid tribute to the crooner’s centennial earlier this month with Weekend at Sinatra’s, a bonanza of happenings, from screenings, live music and cocktails to a barbecue, a fashion show and, of course, the Sinatra Jack Daniels bar crawl—all worthy of an encore.
