If you are looking to learn some new dance moves, you don't want to miss FREE Country Dance Lessons with Dave Urquidez at the Outlaw Saloon. Lessons take place every Wednesday at 7:00pm to 8:00pm.

Want to take your dance steps beyond the basics? Dance Spirit Dance Studio, owned by Dave Urquidez and located in Frontier Mall, will be offering Group Country Western Dance Lessons on Monday nights from 6:00pm to 7:00pm in July. $15 per class/ per person.

Don't miss this fun show that takes place at the beautiful Historic Atlas Theatre, which was turned into a theatre in 1908.

1 tsp. baking soda

1/2 tsp. ground cinnamon

1 1/2 c. old-fashioned rolled oats

1 c. chopped pecans

1 c. coconut flakes

2 c. chocolate chips

Flaky salt, for sprinkling

DIRECTIONS:

1) Brown 1 stick of butter by melting it in a medium saucepan over medium heat, then let it cook and bubble for an additional 3 to 5 minutes or until the foam and butter underneath is golden brown. Immediately transfer it to a large, heatproof mixing bowl and swirl a few times to help it stop browning. Let cool to room temperature, about 30 minutes. Meanwhile, allow the remaining stick of butter to soften.

2) Preheat the oven to 350 degrees.

3) Add the softened stick of butter, brown sugar, and granulated sugar to the mixing bowl with the browned butter. Beat with a stand or hand mixer on medium-high speed until lightened in color and texture, 2 to 3 minutes.

4) Reduce the mixer speed to low. Add the eggs and vanilla, then beat until smooth, scraping the sides and bottom of the bowl, as needed.

5) Whisk to combine the flour, baking soda, and cinnamon in another medium bowl. Add it to the butter mixture in three increments, mixing on low speed in between, until fully incorporated. Scrape the sides and bottom of the bowl as needed. Add the oats, pecans, coconut flakes and chocolate chips and mix on low speed or stir with a spatula to combine.

6) Line two large baking sheets with parchment paper. Using a 2-tablespoon sized cookie scoop, place cookie dough onto the baking sheet, leaving about 2-inches of space in between each. Bake for 12 to 14 minutes, or until golden brown and dry looking on top. Let the cookies cool for 2 minutes on the baking sheet, then transfer to a cooling rack to cool completely. Sprinkle with flaky salt to finish, if you like.

Westby Edge Brewing Co. located at 714 W. 20th St., is family-owned, operated, built, brewed and open for business! It's an unique indoor/ outdoor venue for people to come and enjoy a great atmosphere. It will also serve as an anchor business for the Reed Ave. Rail Corridor project.

Westby Edge is structured to be a one-stop shop for anyone looking to dine, drink, have fun and relax. The signature feature of the business is its microbrewery, adding a new option for craft beer lovers in the city that’ll be spearheaded by brewer Brennan Westby. The bar has 21 beer taps, with four additional taps dedicated to supplying seltzer, red wine, white wine and champagne. They also have a specialty cocktail menu and a small food menu featuring in-house pizza, grinders and salads, as well as a daily brunch menu.

In fact, Westby Edge is so cool it has a 47 foot long main bar, plus two additional U-shaped auxiliary bars looped around half-glass garage doors that will let in fresh air in warm weather. The brewery has a seating capacity for 250 people in the main area, plus an additional 125 seats available for overflow in a separate event space. Patrons can also enjoy the outdoor area, which will have outdoor seating and backyard games, like cornhole. Extra amenities include a space for live music, and a childfriendly area that has games.

This is truly a family affair from the owners, Darin and Misha Westby, to the Westby’s youngest daughter, Brennan, as the certified Brewer. The eldest daughter, Amanda Escobedo, is the brewery’s Event Planner. And their daughter-in-law, Jaime Westby, will manage the brewery’s social media platforms.
