BREAD PUDDING
• 2 tbsp unsalted butter, melted (plus more for greasing)
• 2 cups whole milk
• 1 tsp vanilla bean paste
• 1/3 cup granulated sugar
• Pinch of kosher salt
• 4 large eggs, beaten
• 1 loaf brioche, cut into ½-inch cubes (5–6 cups) CARAMEL SAUCE
• 1 cup granulated sugar
• 1/4 tsp fresh lemon juice
• 4 tbsp unsalted butter, cubed
• 1 cup heavy cream
• 2 tbsp Irish Whiskey*
• 1/2 tsp vanilla bean paste
BRIOCHE BREAD PUDDING
1. Preheat oven to 350°F. Butter a 2-quart baking dish.
2. In a medium bowl, whisk together milk, melted butter, vanilla bean paste, sugar, and salt. Whisk in eggs until well blended.
3. Add cubed brioche to the baking dish and pour the mixture over it, stirring to coat. Let sit for at least 30 minutes.
4. Bake for 30–45 minutes, until the custard is set and edges are browned.
IRISH WHISKEY CARAMEL SAUCE
1. In a medium saucepan, combine sugar, lemon juice, and ¼ cup water. Bring to a boil over medium-high heat, stirring until thick and dark amber (10–12 minutes). Remove from heat.
2. Stir in butter, then carefully add cream, whiskey, and vanilla (it will bubble). Stir until blended.
3. Return to heat and cook until thick enough to coat a spoon (about 10 minutes). Remove from heat and let cool.
4. Drizzle over bread pudding and serve.
*Wanna skip the alcohol? Substitute apple cider!
