This CREAM OF TURKEY & WILD RICE SOUP makes a delicious, filling meal, perfect for those post-Thanksgiving leftovers and is absolutely lovely on a cold winter day! • 1 medium onion, chopped • 1 can (4 ounces) sliced mushrooms, drained • 2 tablespoons butter • 3 cups water • 2 cups chicken broth

• 1 package (6 ounces) long grain and wild rice mix • 2 cups diced cooked turkey • 1 cup heavy whipping cream • Minced fresh parsley

In a large saucepan, saute onion and mushrooms in butter until onion is tender. Add water, broth and rice mix with seasoning; bring to a boil. Reduce heat; simmer for 20-25 minutes or until rice is tender. Stir in turkey and cream; heat through. Sprinkle with parsley.

The trails of Vedauwoo, just 30 miles west of Cheyenne, are an ideal winter playground for non-motorized snow sports. 4. THE SNOWY RANGE gets nearly 300 inches of snow each year, so it really lives up to the name! If you feel the need for speed, pick up a snowmobiling permit in Albany County and visit some 200 miles of groomed snowmobile trails – with an additional 120 miles of ungroomed trails. 5. GO ICE FISHING at Granite or Crystal Reservoirs. Granite and Crystal are often the first to ice up in winter. You’ll find plenty of trout or perch, or head to Upper North Crow where rainbow and brown trout, splake, and grayling can often be caught. 6. BOOK A STAY in the historic little town of Saratoga, known for their healing hot springs.
