A Note From Owen To Our Valued Friends & Customers... First of all, let me wish all of you a happy holiday season from everyone here at 21st Century Equipment. And here’s a toast to a prosperous 2021 and good riddance to almost all facets of 2020. What a year this has been — the year that will most certainly go down in history as “the year of the *asterisk”. It isn’t all doom and gloom though. Prices for corn, wheat and cattle are all working up as we head into the new year. I was starting to wonder if we would ever see a “4” in front of corn prices again! And, most of you are telling me your yields were good, not great, but pretty good. For those of you that raise sugar beets, what a fantastic crop... and the factories are performing well too. If end of the year tax planning is on your mind, and you have been putting off an equipment purchase, wait no longer. There are substantial tax benefits available to you this year on the purchase of either new or used equipment. With the change in the Administration coming in January, who knows if these tax savings will be available next year. Now is the time to evaluate your operation’s needs and take advantage of the large firstyear tax savings (full disclosure — I’m not a tax accountant so see yours!). Do you know another good thing about 2021? As a Company, we will be celebrating the 25th anniversary of our founding throughout the year, so watch for some special contests and drawings over the course of the year to celebrate this event. We also intend to hold some special events too... depending of course on the COVID situation. It’s hard for me to believe it has been 25 years, but we couldn’t have done it without you and our hundreds of other loyal customers. So, thank you for 25 great years. This COVID situation is lasting much longer than expected and clearly getting worse right now in our part of the world. As such, it is going to impact our customer appreciation group events here in December, as well as our planter and combine clinics for the foreseeable future. It is unfortunate that we will have to postpone these group events, but for your safety and the safety of our employees, I believe it is the appropriate decision to make. We will be replacing these events with parts discounts delivered to you on-line or via the mail. And did you know that most of our clinic content is available via the YouTube video training library on our website? I agree YouTube videos are no substitute for face-to-face training, but these are pretty good option. As a Company, we have had and continue to have a focus on improving our precision ag knowledge across our entire employee group. Our goal is to have every employee conversational when it comes to basic precision ag concepts so that when you come in, and want to talk about an MTG upgrade,

everyone knows what you are talking about. Speaking of MTG upgrades, we are approaching the final deadline for you to update your Terms and Conditions in your John Deere Ops Center account. If that update is not completed by March 2021, your account will go dark and you will not be able to access your data. Updating is as simple as logging into your Ops Center account and following the prompt. There is also a mandatory Receiver update Owen Palm that applies to all SF3000 and SF6000 receivers that must be completed by February 1, 2021 for them to continue functioning. In closing, I personally wish you a great Christmas season and a prosperous New Year. Mandatory Starfire™ Update As John Deere continues to develop new technology, StarFire™ Network changes were necessary to support the addition of new satellite constellations and additional enhancements. This required the introduction of a new signal. StarFire™ 3000 and StarFire™ 6000 receivers must be updated to the 20-2 software update to continue operating on the new signal. Update all receivers prior to February 1, 2021 to avoid any interruption in function. StarFire™ iTC receivers will NOT function on the new signal beginning February 1, 2021 but will continue to operate in WAAS, EGNOS, or Non-Diff (depending on location) until approximately 2026. FAQs: How is the 20-2 software update acquired? The 20-2 update is able to be downloaded online from https://www. deere.com/en/stellarsupport/softwareupdates/ and can be applied to a StarFire™ 3000 or StarFire™ 6000 GPS receiver as done with any prior software update for these devices. What is the StarFire™ differential correction signal? Any of the GPS receiver correction methods commonly referred to as John Deere SF1, SF2, SF3, or RTK are versions of the StarFire™ differential correction signal. Will a StarFire™ iTC GPS receiver function after February 1, 2021? StarFire™ iTC receivers will not function on John Deere SF1, SF2, SF3, or RTK correction signals after February 1, 2021. StarFire™ iTC receivers will continue to operate in WAAS mode after February 1, 2021 but will not allow automated AutoTrac™ guidance applications. Will a customer have to pay to have the 20-2 software update applied to a GPS receiver? The 20-2 update is able to be applied by a customer to their StarFire™ 3000 or StarFire™ 6000 GPS receiver(s) at no charge. However, if the customer desires a 21st Century Equipment employee to assist with or complete the update – associated labor fees apply. Installation of software updates is included for those with a current NextCentury Precision Ag Agreement. Can a customer upgrade a StarFire™ iTC GPS receiver to a newer version StarFire™ 3000 or StarFire™ 6000 GPS receiver to leverage some of the value of the John Deere SF2 or RTK activation(s) which have been previously purchased on the StarFire™ iTC? Caramel Apple Sangria

1 (750 ml) bottle pinot grigio or your favorite mild white wine

Stir the wine, vodka and apple cider together in a large pitcher.

1 cup caramel flavored vodka

Add the chopped apples to the pitcher or to individual glass.

6 cups apple cider 2 medium apple - cored and chopped

Serve the sangria cold or over ice.

Mix together: (1 ounce) package of dry ranch dressing mix (16 ounce) bottle Orville Redenbacher popcorn oil

Meatballs • 3 lbs. ground beef • 2 cups Oatmeal • 2 eggs • 1 med onion chopped finely • 3 tsp chili powder • 2 tsp salt and pepper Mix together and shape into balls. Place meatballs in to baking pan.

1 teaspoon garlic powder 1 tablespoon of Dill Weed

Mix package of ranch dressing mix, popcorn oil, garlic powder and dill weed in a small mixing bowl. Put 30 ounces of buttery pretzels in 2-gallon Ziploc bag. Add wet mixture and close the bag. Shake, shake, shake in all directions every few hours (or when you remember) for about 24 hours or until most prezels are well coated with seasonings and the oil mostly absorbed. This makes a lot of pretzels so make sure you have a container that is big with a good seal. Submitted by Kim December via her Mom, Jean Chapman

Goose Won-Tons Submitted by Chad Propp 2 Pkg. won ton skins 1 Lb. pork sausage (Jimmy Dean Sage) 4 Cups goose breasts, diced small 1-4 Oz. can water chestnuts, chopped fine 1 can small shrimp,

chopped fine 8 Green onions, chopped 5-6 Stalks celery, chopped

Marinate diced goose breasts in rosemary, thyme, soy sauce and garlic oil over night. Brown the goose meat in a little bit of garlic oil. I also add a little bit of White Zinfandel Wine after the meat cooks a bit. Drain excess juice when done. While browning the goose also brown the pork sausage. Add the two meats together and add the remaining ingredients and cook slightly - vegetables should still be crisp, not soft. Drain the mixture in a strainer. Place about a teaspoon of mixture in the center of each won ton skin and fold over, making a triangle. Seal the edges with a beaten egg or water. Pinch the edges together to seal tightly. Deep fry in hot canola oil until brown. Serve with soy sauce or sweet and sour sauce. Won tons can be filled in advanced and placed on a sheet of wax paper, leaving plenty of space between each one or they will stick together.

Sauce • 1 ½ cups brown sugar • 3 cups Ketchup • 3 tbs liquid smoke • ¾ cup of chopped onion • ¾ tsp garlic salt • ¾ cup water

Mix together well and then pour sauce over the meatballs. Bake @ 350 degrees for 1 hour Serve on a bed of mashed potatoes or white rice.

Cheezy Corn & Potato Chowder 2 TB. Butter 3 Small carrots, diced 1 Large stalk celery, diced 1 Large onion, chopped 2 Cups chicken broth 6 Potatoes (approx. 1 ½ Lbs) peeled & chopped 2 ¼ Cups milk 2 Cups fresh frozen or store bought corn ½ tsp salt

1 Pinch cayenne pepper (optional) 1 tsp. black pepper (or to taste) 1 tsp. garlic powder (or to taste) 2 TB. Cornstarch 2 Cups shredded cheese (I prefer Colby/Jack) 1 Lb. crispy cooked bacon, crumbled Seasoned Croutons

In large pot melt butter. Add carrots, celery & onion, saute until tender. Add broth & potatoes, cook until tender but not mushy (do not drain). Mash aprox. 1/3 of potatoes to thicken. Reduce heat, stir in 2 cups of the milk, corn, salt, cayenne, garlic powder & black pepper. In a small bowl whisk remaining milk with corn starch until well blended. Slowly pour and stir mixture into the soup. Heat slowly until thickened, may have to add more to consistency you prefer. Remove from heat, slowly add 1 cup of the cheese. Stir until melted. Taste and season more if needed. Garnish: I like to garnish each bowl with bacon crumbles, more shredded cheese and seasoned croutons

The single most important ingredient in preparing a Brisket is the Brisket selection itself. When I look for a brisket I am looking for a “Prime Brisket” or as close to Prime as I can find. Prime has a better marbling then what you in a Choice brisket and “Fat is Flavor” so it is important what you buy. I have used both Prime and Choice and both work great I just prefer to spend the extra money and get the Prime. To me its worth it.

The Brisket is comprised of two muscles, the flat and the point. The best time to trim the brisket is when I have pulled it from the Frig and it still very cold.

“The Meat Side” I want to make sure I remove and all “Hard Fat” during the trimming process because it will not render during the cooking process. I want to make sure I shave as much of the “Hard Fat” from the brisket as possible but not completely getting in the actual meat itself. Leaving the “Softer Fat” alone, or slightly trimming, is fine because it will render down during the cooking process. I like to trim and the edge to of the brisket to keep it clean and also remove any “Hard Fat” and “Rough Meat” away from the brisket.

Trimming the Brisket

“The Fat Side” Between the Flat and Point there is a “Connective Fat” I want to remove. I want to shave this off and leave the brisket flat and smooth. I will lose some meat during the process but it if very minimal. This also helps with cooking the brisket more evenly in my smoker. On the “Fat side” I want to trim the fat so its is somewhere between ¼” – ½” thick. This is a preference more than anything but, this is what I have found has worked the best for me. What I don’t want to happen is cut so much of the fat off I expose the meat. I want to make sure there is a thin layer of fat over the meat as much as possible.

Seasoning

Cooking

I am a big fan of seasoning from Meat Church, www. MeatChurch.com. For Brisket, I used two of their seasoning , Holy Cow and Holy Gospel. I do a High Season to make sure there is a good uniform placement across the brisket. I like to go two-to-one Holy Cow to Holy Gospel. I start with the meat side first. After I have seasoned the meat side I let it set for 30 minutes to allow the seasoning to adhere to the meat. On the meat side I am looking for almost a “Bark Like” crust to form before I flip it over to the fat side. When I flip it over to the fat side I am going to do the same steps as I did on the meat side. Let sit for 30 minutes and I am ready to grill!

I want to bring my grill up to 190 degrees and cook the brisket “Fat Side” Up. I want the internal temp of the brisket to get 190 degrees. This isn’t anything I want to rush. This stretch of cooking typically take somewhere between 18-20 hours. There are a million factors that come in to play but it has never taken me more or less than 18-20 hours to get to 190 degrees. Once the I have a temp of 190 degrees I pull the brisket off of the grill and wrap in butcher paper. Once It

all wrapped up, very tightly, I put back on the grill and bring the internal temp up to between 200 - 205 degrees. I will set the temp of the grill to 250 – 275 degrees and it will typically take 4 hours to get to 200 – 205 degrees. Once I have the temp between 200 – 205 degrees I pull the brisket and let is rest in a cooler for about an hour. Once the brisket has rested for an hour I pull it from the cooler and slice it ,against the grain, and serve. Total Prep: 1 - 1 ½ Hours Total Cook Time: 23-25 Hours

He is a recent graduate of Chadron Senior High School and a recipient of a scholarship from the Western Equipment Dealership Association (WEDA). Originally from Des Moines, IA, Jake’s work history includes (student) Columbia County Bus Shop, Walmart, and ranch hand for Nitsch’s Fencing and Fabrication. In his free time, he likes to hunt, fish, work on vehicles, and spend time with friends. Jake started the Deere program at Milford this fall.

Robert Stratton is a new Student Technician at our Holyoke, CO location attending NJC in Sterling. Originally from Sterling, CO, he recently graduated from Sterling High. His previous work experience includes work in a diesel shop, groundskeeper for a golf course, and also hay farming. In his free time, Robert likes working on cars, trap shooting, and golfing.

Blaine Schmidt has joined our Ogallala, NE team as their new ISG Consultant. Blaine graduated from high school in his home town of Fleming, CO. HE also attended Northeastern Junior College and CSU. His prior work history includes Advanced Energy Ind. Inc., CHS, and Farmer’s Edge. In his free time, Blaine enjoys camping, kayaking, golfing, and motorcycling.

Finance Specialist Scottsbluff, Nebraska Location

Kim December has joined the Support Center Staff as a Finance Specialist. Kim is originally from Sheboygan, Wisconsin and is a graduate of Cardinal Stritch University in Milwaukee, Wisconsin. Kim has previously worked for John Deere Financial in Madison, WI; Corus Metals in Seattle, WA; CBS Personnel, Inc. in Cincinnati, OH; Ryerson Steel in Chicago, IL and Hydrite Chemical Co in Brookfield, WI. Kim comes to her position with significant experience in credit, collections and financial analysis. In her free time, Kim likes to spend time tent camping her dog Beauregard and her husband Dave. Dave December is the VP of Marketing at 21st Century Equipment. Owen Palm, CEO, says, “after a year with Dave aboard, we’re happy we got Kim.” Kim is also a Food Network junkie (favorite show is Chopped) and avid reader, reading up to five newspapers a day. She is currently reviewing Ina Garten’s book “Modern Comfort Food” and reading, “The Paris Architect” by Charles Belfoure.

Sara Sauer is our new Parts Specialist at the Scottsbluff, NE location. She is originally from Colorado and previously attended Culinary School. Her prior work experience includes farming, stay-home mom, preschool teacher, and AP for a construction company. She also graduated from OPSU with a BS in Agribusiness with Animal Science minor. He has spent the past 2 years working at Larson Angus Ranch as the Assistant Herdsman, setting up protocols for other producers. In her free time, Reagan likes to spend time on a boat at the lake with her friends and family.
