INGREDIENTS
2 medium eggplants
200gm Greek yogurt
2/3 cloves garlic
1 tablespoon lemon juice/white vinegar
2/3 tablespoons virgin olive iil Salt and pepper to taste
DIRECTIONS
Pierce the eggplants all over. For a smoky flavor, grill on charcoal until soft. Alternatively, roast in the oven or over the open fire of your gas cooker, rotating them regularly.
Once tender, discard the stalks and blend the eggplants with the remaining ingredients until smooth.
This dish can be served as a side or with pita bread, or as an accompaniment to roasted meat dishes.
