Directions:

INGREDIENTS: • Leek 150gr • Sunflower oil 10ml • Onion 80gr • Celery 100gr • Carrot 100gr • Garlic 50gr • Tomato 200gr • White wine 100ml • Red snapper fish 200gr • Bay leave, parsley, oregano For taste • Salt 20gr • Vegeta Seasoning for Fish one teaspoon

Wash all the vegetables and chop accordingly.

Heat 3 tablespoons of oil in a medium size pot over moderate heat and then cook all the vegetables, stirring until beginning to soften for about 5 minutes.

Add garlic and cook, stirring for 3 minutes.

Add bay leaves and red pepper flakes, cook and stir for 2 minutes.

Add fresh tomatoes, cook and stir for 4 minutes.

Add wine and simmer, uncovered until liquid is reduced by about half, about 30 minutes.

Stir in stock and bring to boil. Reduce heat and simmer, uncovered for 30 minutes.

Carefully pour through a fine sieve into a bowl, and then discard solids.

Add fish, season with Vegeta Seasoning for Fish into the liquid and cook until the fish is cooked.

Add a pinch of roughly chopped parsley and serve.
