STEWART BY JASON

“Strength in Numbers” This is the theme for the NBA’s World Champion Golden State Warriors. If you are a fan of the NBA, you were not surprised by the talent on the 2014-15 team. However, you may have been surprised that a “rookie” head coach could help this highly talented team do something that the franchise hadn’t done in 35 years! Approximately 12 months ago, the Golden State Warriors were trying to select a head coach. They elected to offer San Diego local Steve Kerr the job of taking their team to the next level. Steve then called his coaching buddies to offer them a chance to help him lead. When Kerr made his decisions as to who to call to be on his staff, he relied on relationships and knowledge of the game. However, some of his choices had to be unexpected from most people in the league. Steve called some long-term veteran coaches like Alvin Gentry and Ron Adams, but he also approached several guys who never coached in the NBA. He called former University of Arizona basketball great Luke Walton and San Diego’s Torrey Pines High School varsity assis-

tant Kelly Peters. He rallied Jarron Collins, who played in the league for a long time but never coached. Former U of A teammate Bruce Fraser, who did have a short coaching stint in the NBA years ago, was also called. It was clear to see that Steve went with people he trusted. He wanted quality people who he had been knowing from years past. There is an old African proverb that says, “If you want to go fast, go alone. If you want to go far, go together.” Steve chose to take friends with him on his journey and it took him and his team very far. He seemingly applied this principle from the top to the bottom. With the Warriors roster being almost identical to the year before, they kept the team together and they went all the way to the championship! At the end, he pulled a classic humble Steve Kerr move and gave credit to his staff, players and former coaches including the University of Arizona Hall of Fame Coach Lute Olson. You don’t hear too many NBA coaches thanking their former college coach in a championship acceptance speech. Many people undervalue the relationships that go into championships. Steve didn’t.

Recently, one of my assistant coaches (Mike Quain) at San Dieguito Academy lead his son’s youth basketball team to a championship. I happen to know a lot of the kids on that team. All of them have a great relationship with each other and the coaching staff. This “Eight Kings” team had a championship game against a Phoenix team that had beaten them the day before by 20 points! There was no one in the gym that thought the Eight Kings team was going to be 20 points better the next day, except the Kings themselves. I saw them the day that they lost. They were fired up to have a rematch against the team from Arizona. One Kings’ player was quoted as saying on the night the they lost, “they drove all the way from Arizona just to lose.” Talk about confidence. The Kings competed like champions and won the next day. When I heard the story, I was instantly reminded of the African proverb I shared earlier. These boys learned the lesson of how to win together. Life Application: It is so surprising to me how many “winners” are extremely generous. They practice sharing resources and winning experience. I think this speaks to the fact that inclusion takes us all much farther than we could have ever gone alone.

MEDITATION AND MINDFULNESS: Why you have time to practice it daily and don’t even realize it! Let me start by admitting that I suck at meditating. In fact, so do most of my colleagues and peers. Ask a working father if he has time to meditate and most will simply laugh: “Yeah right, you mean sit around and do nothing for 30 minutes? Not a chance!” And even those of us who are willing to try often find that we are so busy, suffering from attention-deficit or obsessivecompulsion, that we find it nearly impossible to not let our “to-do” list creep into our mind that is supposed to be void of thoughts—or at least witness to our thoughts. Or, we are so chronically sleep-deprived, we simply fall asleep five minutes into it. Did I mention that even finding a quiet space to meditate in is often impossible? But ironically, those of us who seemingly can’t find a spare second to meditate in our hectic lives are usually the ones who could benefit from it most. Because it is proven that meditating even just 10 minutes a day can reduce anxiety, sharpen focus, help control impulses, plus a myriad of physical health improvements. This is even measurable through brain imaging and MRI scans and simple brain wave monitoring. Trust me, if there wasn’t tangible proof I wouldn’t be getting involved with it. I’m not into glib gurus. I’m into results.

FITNESS As you may know, I am a big advocate of holistic health. Yet, like most trainers and fitness enthusiasts, I spend 90 percent of my effort and learning on the physical component of fitness: improving lean-body mass; optimizing body composition; building muscle; burning fat; sculpting abdominals and core; and improving mobility and athletic performance. These are my go-to areas where I thrive, and honestly it is what most of my clients are concerned about. But holistic health inherently implies the whole-body, mind and spirit, so mental fitness is at least a third pillar comprising ideal health. Ask any warrior, professional athlete, yogi or Special Operations MAX WEINSTEIN soldier and they will all agree that mental fitness is more like 80 percent of the success forFITNESS PROFESSIONAL mula. They will tell you with complete certainty that training and preparing the physical body for “battle” is the easy part. Preparing the mind for challenge, risk and adversity is where the real effort is required. And as far as nature versus nurture is concerned, it is our minds that can be nurtured, or altered and strengthened the most through training, as there are less genetic limitations. The mind is where our greatest potential exists, virtually untapped by most of us. Many of us are born with an impressive level of motivation, resiliency, competitive-edge and focus capacity. But no matter where you think you’re at with your mental game, the act of meditation will take you to the next level—a level you didn’t even know existed. We athletes already have the precious, present-moment, state-of-mind wired, because every time we are immersed into our game or sport we are there, fully present in this proverbial place of true happiness, also known as “flow” in sports psychology. But while you may be fully present, mindful and even meditative while in the state of flow, meditating is also a distinct practice or training exercise for your brain that can be accomplished in many ways–so many that there is no excuse for you not to find time to incorporate it into your daily fitness regimen. Meditating doesn’t mean you need to be sitting in a stagnant yoga pose for two hours, chanting an eccentric Hindu mantra. You can practice it almost anywhere, I have learned, and there are even convenient and free smartphone apps to help get you started immediately upon download. There are even high-end video games you can play on your iPad while wearing a headset that monitors your brain waves, ensuring that you are, in fact, in a state of meditation. If your brain’s electro-magnetic waves aren’t ideal, you lose or crash. If your brain waves are optimal, you win. Using high-tech gadgets as tools to help you meditate may sound counter intuitive and against what they taught you in yoga class, but brain waves are brain waves, and real-time feedback that you are there in the proper mental state to alter your gray matter and shrink your amygdala (fear-center) is helpful, if not essential to some of us beginners, or to those athletes who are used to competing in everything they do, or to many of us who have lived our entire lives in the analytical realm of results-oriented assessment and tangible feedback. The purpose of this article is certainly not teach you how to meditate, as I am not qualified. It is simply to raise awareness that it is something you should look into further, and to tell you that there is real brain science backing the benefits of meditation. Also, I want you to know that while yoga is amazing, as well as traditional, transcendental meditation practice, you do not need a guru to teach you, and you do not need to drop thousands of dollars on a fancy retreat to learn the basics. The fact of the matter is you can begin meditating today–right now–by focusing on your breath in a quiet place for 10 minutes, or by using an app on your phone, or by going for long, quiet, walk or run where you enter the “zone”—or even playing a special video game that uses your brain-waves only, via a special headset. If you’re suffering from bouts of rage, anxiety, panic attacks, addiction, obsessive compulsion, attention deficit disorder or are very uncomfortable in social situations, than you can benefit from meditation. Most studies I read say it takes about eight weeks of practice or 11 hours of meditating before actual physical changes start taking place in your gray matter (brain). In a nutshell, the amygdala starts to shrink in the right hemisphere, as well as the fear-based, fight-or-flight connections between your amygdala and prefrontal cortex begin to weaken. The primal, fight-or-flight response to stress is down-regulated and replaced by higher order, more thoughtful response to stress. That’s the neuroscience. But the time-tested cliché the gurus tell us is that through meditation we learn to separate ourselves from our thoughts.

Mindfulness is another easy way to get you headed in the right direction. Mindfulness is more like a chosen method of life, where you simply try to become more aware, or mindful, of everything that is going on around you and with you–without judging! That last part is where the challenge lies. You accept and do not judge. Mindfulness is a useful tool when you happen to be trying to lose weight as well. You must be mindful of every food choice you make! Mindfulness helps us be more compassionate as we become more aware of the people around us and what they are experiencing.

“Optimum health is a method of life. Focus on your fitness and your ideal physique will follow.”

Instead of judging them, we become “witness to them.” They say we can detach from our thoughts and emotions so that we don’t become so consumed by them. I’m not there yet either folks, but again, the gurus say once you learn this, it is very liberating— the most liberating experience you will ever have. It is my understanding we will be less judgmental, experience less anxiety and be able to focus longer and let go of things we cannot control more easily. So I’m giving it a go. I am in week eight. In all my research for myself and this article, I did realize something encouraging: I was already experiencing meditative-like mental states in various physical activities I had been doing for quite some time. I knew I was very good at focusing under stress. Twenty-plus years of being a military and commercial pilot have sufficiently trained my brain for this familiar situation. Repeated exposure to your stressors is another path to conquer them, but a lot more challenging. Pilot simulator training is a lot like the new Versus performance brain-training video game I recently purchased. Also I slackline about once a week and noticed the same type of clarity of mind that comes with the present-moment focus required during balancing on the line; this is also what one

14 4L MAGAZINE | JULY 2015

I share this background because it brings me to my next point, which is that some of us are so busy, almost frantically obsessive, or in a constant state of attention deficit, (i.e., most working parents of young kids!), that asking us to sit down to quietly meditate for 20 or even 10 minutes just is not going to happen.

Well, I hope you will now go on to explore more about meditation, whether it is the traditional, transcendental based form, or even trying it out with an app on your phone. I do know the time has to be right for you to be ready to try. I will share with you that I basically ignored meditating as a daily beneficial practice in the traditional sense for the first 40 years of my life, even though I was surrounded by people who used it to help them. It wasn’t until I started doing sports psychology research for my daughter, who competes at a very high level, that I discovered how many professional athletes were using meditation of some form or another every day to take their mental game to the next level. The same was true of Navy SEALs and other warriors; they all meditate to some capacity. Their results back it and the science does as well, via MRI scans revealing changes in the brain.

Think of most of the grounded gurus you know of, espousing the virtues of meditation and how it has enlightened them. Do they have young children running around with a spouse who also works full time? No, they don’t. Their life is typically a borderline selfish one, with the luxury of pursuing self-mastery that allows them to focus on themselves. I am here to tell you that there are other non-conventional ways to practice meditation that still provide the same benefits. Many times you can incorporate meditational moments into your solo workouts, especially the longer endurance-type ones among nature. Start simply by becoming aware of your breathing. If you practice yoga, then almost always at the end of class the instructor will allow for time to meditate. But if all else fails, you can begin by downloading an app on your smartphone to be your catalyst. To save you

Lastly, I will leave you with a few other leads to explore here in San Diego. Right here in North County’s Encinitas is where former Navy SEAL Commander Mark Divine, who runs SealFit and US CrossFit, is based. He is also the author of Unbeatable Mind. His book taught me a lot about mental resiliency, and his facility offers daily warrior yoga sessions, meditation, CrossFit workouts and lifechanging camps. You should check it out if you are ready for a change and want to tap into your mind’s unlimited potential. Looking for something a little more traditional and a little less testosterone? North County has you covered there, too: Deepak Chopra’s center is located right at the La Costa Resort & Spa, which offers a weekend crash course in meditation. Encinitas also is home to the SelfRealization Fellowship Temple, located near our famous Swami’s namesake surf break! What are you waiting for, grasshopper?

n light of the easing of travel restrictions to Cuba, the question comes to mind, “What’s Cuba going to be like once America gets its hands on it?”

As the diplomatic tide slowly shifts toward repairing U.S.-Cuban relations, a growing number of American tourists are clamoring to visit this anachronistic island nation before another opportunistic wave of American investors washes ashore. In the 1950s, under the authoritarian rule of General Fulgencio Batista, the U.S. government, corporations and organized crime established an influential presence in Cuba.

Fidel Castro, with political aspirations of his own, believed an armed revolution was the only option to reclaim Cuba for the people. In December 1958, Fidel and his fellow revolutionaries led the pivotal attack, which ousted Batista and sent a bold statement to Cuba’s powerful neighbor just 90 miles to the north that they planned to do it their way–a lo cubano.

Step off the plane in Havana and you are transported back to the ‘50s. Driving along the Malecón (the sea wall stretching along the coast in Havana) or wandering aimlessly through Habana Vieja (the old quarter), you can’t help but be captivated by the beautifully dilapidated buildings and the fleet of resourcefully restored American automotive treasures.

Fidel’s Communist system, based upon Marxist and Leninist ideals and aligned with the Soviet Union, created some positive social programs; however, they certainly came at a price in terms of limiting freedoms and opportunities. These political and economic setbacks for a developing island nation in many ways locked Cuba in a time warp, which continues to this day.

But it’s the Cuban people and culture–their welcoming smiles and joy of living–that lure you in and make you want to keep coming back. Most Cubans live without many of the modern amenities and luxuries we take for granted, yet they exude a richness of pride and passion for their culture and community. On a recent visit, I looked out

the window of a second-story bar in Old Havana, down onto the street below. The fact that it was around midnight was inconsequential to the locals of all ages who gathered around doorsteps and pedi-cabs to partake in “social networking” Cuban style. I couldn’t help but wonder how Cuban culture and community might change when every Cuban has full access to cell phones, the Internet and cable television. Perhaps my last night in Havana answered my question and quelled my fears. When I and a few other Americans jumped in a taxi to continue the late night party along the Malecón, we, in our slightly imposing American way, kindly asked the driver to change the Disneyesque music to something a bit more upbeat and lively, like Cuban reggaeton. The driver self-assuredly said, “No” and proceeded to turn up the princess ballad. At the time, we were taken aback by this willful snub, especially since it was so contrary to Cuban hospitality; however, the mellow song lulled me into quiet reflection and offered me a glimpse of the nottoo-distant future. The Cuban people are excited to welcome American tourists and business with smiles and open arms, but if the revolutionaries and our stubborn taxi driver are any indication, they will do it on their terms–a lo cubano.

n my lifetime, if you wanted to go to Cuba, you had to travel discreetly through Canada or Mexico, go loaded down with cash and politely ask immigration officials not to stamp your passport. Now, Obama has loosened restrictions, making it easier for Americans to visit the Caribbean island nation. Agencies offering people-to-people tours have sprouted up everywhere, and Havana is flooded with tour buses and an influx of foreign dollars that have made the Cubans perk up.

What was once forbidden and taboo is now as easy as booking a tour online and flying down on an American Airlines charter flight. Insight Cuba is a division of Cross-Cultural Solutions, an organization known for coordinating global volunteer trips. I had traveled to Ghana with them years ago, so when planning a recent visit, I was confident in their ability to plan a trip that was culturally immersive and coordinated down to every last detail. After 15 years of running tours to Cuba, they have perfected the experience and offer seven signature tours from which to choose. Package prices are all-inclusive. You also will need to get yourself to Miami and then pay roughly $700 for a charter flight from Miami. After all is said and done, it isn’t a cheap trip, but it is a once-in-a lifetime experience. Once the gates are wide open, the mystique of Cuba and its inhabitants will emerge from the 1950s “time warp” and adapt to accommodate American tourism.

STAYCATION BY CORY WATERHOUSE

Trying to vacation in a town famously known as a tourist destination can lull you into a sense of lazyassness. Yes, it’s a word … and no, don’t look it up. We’ve just met and already you’re being obstinate. Jeez, relax. Look in the mirror, my friend. You definitely need a staycation. Oddly enough, I was hesitant to even use the term “staycation” because it sounded like something my younger, much cooler friends would say—if I had younger, much cooler friends. The first time I heard it, I actually thought my friend was inebriated at 11 a.m. on a Tuesday and was slurring the word “vacation.” Which he may very well have been because he’s a bit of a boozy oaf.

times you have to make due and adapt to your situation as best you can. Even plunking down a thousand dollars for flights isn’t always an option, seeing as most people want to continue to pay their mortgage and eat. Most parents I know, or even people who have demanding occupations, always tend to find an excuse or a flimsy reason to stay home and not embrace the beautiful city we live in. I say NO MORE! It’s time to branch out, explore and live a little. It’s not called America’s Homeliest City ... So here’s a geographic spread of San Diego with a few places that will keep you in town, exploring and celebrating parts you might have never enjoyed otherwise.

Since being spontaneous has gone away and quickly morphed into a rigidly honed scheduling machine— for instance, my daughter has dance, gymnastics and swim and my son has football and wrestling—some-

CORONADO ISLAND Coronado is absolutely one of my favorite places to go in San Diego. It’s always seemed like a world away and only about 20 minutes down the 5 South. Just driving over the aptly titled Coronado Bridge is like taking a deep breath because you know that once you hit the other side, a small town greets you with beaches, bars and amazing restaurants. CHEF’S TABLE

TRB

TEMPLE RESTAURANT BEIJING BY MICHELLE LYN

Some of the best restaurants can be found in the most unexpected of places, and Temple Restaurant Beijing is no exception. Housed in a 600-year-old temple at the end of a not so-easy-tofind street, TRB as it is known is one of the best restaurants in the city. Number two out of 8,804, according to TripAdvisor, to be exact. In a sea of bustling hutongs (alleys formed by lines of traditional courtyard residences) selling local produce and meats, taxis eventually make their way to a doorman-guarded temple. A complete juxtaposition of ancient Chinese history and modern gastronomic elegance, TRB envelopes you and whisks you away to another world that is insulated from the chaos that surrounded you just moments before. The warm staff at TRB welcomes you into the backlit bar enthusiastically, genuinely apologizing for the difficulty in finding the restaurant. No matter though, as they spend the next few hours making it worth your while. In the minimalist dining room, clean lines and modern design reminiscent of a hip New York boîte contrast with the temple’s exterior. A glass of Champagne and several amuse-bouches later, you realize you’re getting full and you haven’t even ordered anything yet.

Homemade bread service, table-side gravlax, palate cleansing granita and a petit fours and truffle cart complement your meal with a touch of whimsy and indulgence. The vision of Ignace Lecleir, a Belgian restaurateur who has managed restaurants like Maison Boulud and Daniel, TRB is a shining example of his commitment to world-class standards and complete hospitality. A hug from your server, a personalized photo printed out before your departure and a gift from the pastry chef reinforce the reason why TRB is consistently ranked a Beijing favorite. Lecleir’s goal was to “craft an experience that will last from the moment you step in the door until long after you return home,” and that he has. Add this one to your bucket list and start looking for flights to Beijing.

[ INTERVIEW WITH ]

JENNA COTTON [ FROM THE VERIGOLDS ]

at WONDERLAND OB 34 4L MAGAZINE | JULY 2015

On this episode of Beats & Eats, I interview the mystic and mysterious Jenna Cotton from The Verigolds while enjoying delicious food and drinks while in the presence of a gorgeous view at Wonderland in Ocean Beach. 4Lmagazine.com

WONDERLAND OB 5083 Santa Monica Ave., San Diego » Neighborhood: Ocean Beach » (619) 255-3358 » WonderlandOB.com

Mikey Beats: Jenna, where did you grow up? Jenna Cotton: I grew up in South Florida, in Fort Lauderdale. M: How long did it take you to get to San Diego? J: I moved out here for acupuncture school. M: You’re a practicing acupuncturist, that’s your day job?

M: Mmmm ... very pulpy, very fresh, very ruby red. This will cure a hangover. Maybe even cause one after many.

(Since Jenna isn’t diving into the mixed drinks, I take it upon myself to try and finish both drinks. The second drink is the Catalina Boulevard made with Bacardi Rum, guava juice, fresh lime juice, coconut water, simple syrup and mint. I smell it, tongue punch it and then dive into it throat first.) J: Easy there.

J: Yessss! M: You can prick or poke me anytime.

M: Wow! Very tropical! Damn good! Gonna cause me a hangover with all that sugar but I don’t care, it’s delicious! Very refreshing.

(Jenna rolls her eyes insinuating that isn’t her first time hearing that tired line.)

M: You do vocals and keys for The Verigolds?

M: Your nighttime passion is the music.

J: Yes, and I also play some guitar.

J: Yessss!

M: You have a variety of stuff. Most people do one thing in a band. You do three different things. Where did the music come from? Parents or family members?

M: I’m sure you play during the day too, right? J: Ya.

(A few drinks are laid before us, one being one of Wonderland’s most poured drinks, the Classic Greyhound made with hand-pressed vodka and fresh grapefruit. I take a swill and offer some to Jenna, who politely declines and orders a glass of red wine.)

J: I grew up playing guitar with my dad. I’m an only child and my dad always liked to have me sing with him and turn the pages of his guitar books. I think when I was in the fourth grade, he got another guitar and I was like, “Oh, I’m going to learn how to play guitar so I don’t have to turn the pages of his music books anymore.” That’s how I started playing.

M: When did you pick up the piano? J: Not until probably a year into the band that someone introduced the MIDI keyboard to me and I was like, “Oh, wow! I have a thousand more options of playing keyboard than I do playing guitar.” That got really fun for me and I kinda got addicted to playing the MIDI and that’s where I’m at right now. I still play acoustic guitar. Eliot Ross, who plays guitar mostly in our band, he also plays viola. We do have a mixture of songs where we incorporate me playing the acoustic guitar and him playing the viola. That is kind of another element of our sound, which is funny because when people talk about our sound they don’t really know how to pin us down, what our genre is, who we sound like and stuff like that because we hit lots of different elements. It’s like a kinda folk-witchy vibe that happens with that. M: A folk-witchy vibe: I like that. Who else do you have in the band? J: We have Craig Schreiber, who plays drums, and then Ben Smedley on keys and acoustic guitar as well. Everyone plays almost every instrument.

(A feast of various types of fish, shrimp, chicken, pork and beef is laid out before us and my eyes light up but I notice Jenna doesn’t seem too enthused so I speak up.) M: You’re a vegetarian, aren’t you?

FOOD/DRINK

BEATS & EATS M: Back in the day, meaning three years ago? J: Yes, three years ago. That’s a long time. I don’t know. I feel like time is just warping … M: So, you’re 22 years old? J: Something like that. M: Back in the day … right … J: Anyways, they used to live in “The Box.” We called it “The Box” because it was this epic bright blue little piece of shit shack right behind Noodle House and they lived there, on the floor, for two years. I went over there one night and I wanted to play a song on the guitar, but I was really scared. They were like, “Well, just do it! We don’t care!” So I played a song and they were like, “You can play the guitar and sing? That’s rad! How did we not know this?!”

The next week, Celeste Byers hit up Eliot about how she was throwing an art show in OB and wanted them to play music for it. Eliot agreed and he called me because it was just him and Ben. He asked me to do some backup vocals and play that song I played for them at The Box. I was like, “Yeah, sure.” So that’s how we all started with our first Verigolds show. M: And that was 2012? J: It was December 21st 2012, I think. M: You didn’t practice before that, so it was kind of an impromptu performance? J: Yup. M: Well then, you get to dig into the OB Farmers Market Salad, which I think is quite appropriate since the OB Farmers Market is happening right around the corner and it’s the only plate with all veggies. Have you had it before? J: No, but I really like what I see.

(The OB Farmers Market Salad comes with fresh beets, baby kale, roasted almonds, goat cheese, faro, oranges, red onions and balsamic reduction. First up for me is the Mac Daddy Ahi Poke, which is a spicy ahi poke with macadamia nuts and a seaweed salad.) M: Wow! I feel like Poseidon just busted a nut in my mouth, in a good way! (Jenna laughs, nervously but honestly.) That was amazing, I can eat poke for hours.

36 4L MAGAZINE | JULY 2015

(I devour the poke and move on to the Baja Fish Ceviche, which is mahi mahi, lime juice, fresh pico de gallo and avocado, served with tortilla chips and house salsa roja.) M: This is exactly how it’s stated, Baja Ceviche. Very tangy, very limey, the avocado is perfectly ripe.

(I take a break from the Eats and move back to the Beats.) M: When did The Verigolds form? J: It’s hard to say because it all just kinda happened, but our first show was based around the art premiere of Celeste Byers, who is a big, integral part of our vibe. I guess how it all started is that Ben and Eliot used to work at the Original Noodle House. I used to go in there back in the day all the time.

J: It was very impromptu. Ben and Eliot had some songs that I did some backups on and I played a song, that’s how it all happened. M: That sparked it. J: Craig ended up coming to that show and met Eliot and they really liked each other, so Eliot bought a drum set, Craig came over and we all just meshed perfectly. That’s the official version of how The Verigolds came to be.

(More food is laid out before us and this time it’s tacos! I first spot the Scallop Taco with fried scallops, mango habanero salsa, cabbage, cheese, cilantro and white sauce on a flour tortilla. I stuff as much of it into my mouth as I can, which isn’t very much because it is huge!)

4Lmagazine.com

M: This is out-fucking-standing. Not too spicy at all with the habanero, definitely sweet with the mango. The red onion with the veggies and cabbage give it a good crunch to balance out the soft textures. That’s excellent. The Shrimp Taco is the same vegetable medley as the Scallop Taco except no mango habanero salsa. I am way into these.

M: I’m going to navigate this one slowly by picking small pieces off; I am really full. The bun is top-notch, a really nice sweet roll but the stars of this dish are the poblano peppers on the ground chicken patty. The flavors are outstanding. Since I cannot eat it all, I will be taking this home. I am stuffed and done with the Eats. Roll me out of here. Jenna, who writes the music?

(Next up is the Fresh Fish Taco, which is the catch of the day they might have caught on the OB Pier, who knows? I take a small bite, really slowing down as I have finally hit the bottom of my stomach.)

J: We all do, it’s collective. It all just comes from someone being on a hot one, like on a good vibe or Eliot comes down with a good riff, I hear it and start singing, then Craig and Ben will jump in and hopefully someone has their phone recording. That’s how most of our songs get written.

M: This is your standard grilled fish taco, but it is perfectly seasoned and perfectly grilled. A-plus!

(Last but not least and definitely what I should have eaten first: the Firebird sandwich off the grill, which is a ground chicken burger, roasted poblanos, pepper jack cheese, avocado, crispy onions, Serrano peppers, green leaf lettuce, onion, tomato and smoky chipotle sauce.)

M: Before The Verigolds had you played in other bands before?

played viola. Everybody else is very musically talented and I’ve learned a lot from them, that’s how I learned to play the piano, synth and MIDI. M: For vocalists, who are your inspirations? J: Donna Summers and early Madonna are what I listen to before every show to get pumped. M: Are you serious?! (Jenna laughs hard and loud.) Donna Summers and early Madonna? There’s no shame in that, that’s great music. J: (Jenna starts singing.) “You can be my lucky star”… That’s good shit, that’s what gets me pumped up. Even if I’m really tired before a show, that’s what gets me into the groove.

J: No. I’m not musically trained either. M: So you went with playing with dad to you meeting these dudes …

M: You put on “Lucky Star” and it’s on? Or Donna Summer “Last Dance?” J: No! Donna Summer “Hot Stuff!”

J: … And they just took me in. Eliot, he’s musically trained. He went to San Luis Obispo and

you come to our show, and you see everybody who comes out, it’s a whole different story.

M: I’m going to book you for a show; I’m going to be the opening DJ and I’m going to play that music to pump you up!

M: What’s up with the face paint and the Bindies?

J: YES! Oh my God! YES! YES! M: Trust me, I can make that happen; that is going to be fun and probably be at Pacific Beachfest on Oct. 3. Locally, are there any bands that you play with or that you like? J: Yeah, we’re playing a show with Grizzly Business and Sparrow in August at Soda Bar. We’ve played with Creature and the Woods and we love Shelbi Bennett and Rodger from that band. Also there’s Inspired By Sleep; we really like them.

J: The Bindies, we’re all about the light and not the darkness, that’s what we like to emphasize. The third eye is all about universal consciousness. When you go to a show, everyone who has a Bindi knows who we are and they are a part of our tribe. The face paint is the work of Celeste. In a lot of our photos Celeste did our face paint. Everybody just likes to have fun. M: Well, paint my face and consider me part of the tribe! Thanks for the interview Jenna, you all will do well.

M: Do you guys have a new album coming out? J: What we’ve been doing is releasing singles. M: I listened to “The Grunge” quite a few times. I know 94/9 is playing it and I’m pretty sure Loud Speaker is playing it also on their local show. J: We’ve got “The Grunge” out and Eliot is in the studio right now laying down his guitar for a couple tracks. We’ll have more singles coming out. Maybe once we’re all done we’ll compile those all into an album. We’re very mysterious right now because we have only one song online. But when

Cuvée Saint “M” Rosé

Alpha Estate

Bodega Garzón Albariño

Côté Mas Blanc

A cru classé rosé from Château Saint-Maur of Provence. Slightly salmon pink in color, this has an unrestrained bouquet, there are citrus (lemon, clementine) and floral (wild tulip, poppy) aromas present.

From the Amyndeon region of Greece (Macedonia), this Sauvignon Blanc fits the typical profile with gooseberry, passion fruits, melon and litchi with a note of honeysuckle. It accompanies a huge range of “fruit de mer” dishes, grilled fishes, eastern gastronomy and pastas.

Bright and zesty varietal produced by an emergent family estate in the rising wine region of Garzón, Uruguay. With only limited-production, estate-grown wines, this is the only winery in the region to bottle Albariño.

An interesting white blend from Domaines Paul Mas in France’s Languedoc region, Côté Mas is a lively blend of Grenache Blanc, Vermentino, Chardonnay and Sauvignon Blanc. Citrus, grapefruit and tropical fruits on the nose lead to well-balanced acidity on the palate.

42 4L MAGAZINE | JULY 2015

Being the indecisive girl I can tend to be, it’s nearly impossible to make up my mind on where and what to eat. Especially in downtown San Diego. A hip place offering a little bit of everything at every time of day or night? Yes, please! This modern style diner offers a great selection of cocktails, wine and beer to go right along with their delectable food menu. Walking in to be seated by the lovely and upbeat owner Andrea had me feeling as if I was right at home. 4Lmagazine.com

WHAT WE ATE & DRANK: ABC BURGER

(Half-pound patty topped with avocado, bacon, jack cheese and their own chipotle ranch sauce)

Hello, burger heaven! We’re talking a local sweet artisan bun from La Jolla Baking Co., and a FRESH not frozen patty that is made from a local San Diego butcher, ground specifically for Brian’s 24. Did I mention the insane portion of avocado and crispy, thick-cut bacon topped with oozy jack cheese? An allaround yum and perfect for sharing.

CHICKEN & WAFFLES

(Delicious Belgian waffle and half a fried chicken)

The honey badger’s got nothing on the sweet and savory honey friend chicken and waffles. With one bite I can see why this is their best-selling entrée; they serve more than 1,000 plates a month! An entire half of chicken is served crispy and sweet on the outside with a juicy and tender center and paired to perfection with the light and fluffy

Belgian waffle. Partner/Sister Andrea’s recommendation: Combine butter, syrup, waffle, chicken and some of their Louisiana hot sauce all together in one bite! Paired with: House Mai-Tai on this sunny San Diego afternoon. Brian’s 24 offers a full bar featuring talented bartenders who are happy to whip you up any drink your heart desires.

KRAB CAKE BENEDICT

(Golden brown krab cakes and two poached eggs on a split English muffin, topped with creamy hollandaise sauce)

The hollandaise and runny eggs melt perfectly with the crispy texture of the krab cake. We all know that Benedicts can tend to be a bit overpowering with richness, but the chef here has hit the perfect mark. Paired with crispy brown potatoes on the side, this dish is something that’ll get you moving in morning.

Paired with: Modern Times Black House Stout. Who can say no to a good ol’ beer and burger? MEDITERRANEAN CHICKEN

(Eight-ounce chicken breast topped with sautéed artichoke hearts, red onion, roasted peppers and roasted yellow tomatoes in a tangy white balsamic, finished with toasted parmesan and panko bread crumbs and paired with a wild rice blend)

This is a classic dish with a bold new kick. The chicken is prepared nicely, keeping the cluck nice and tender, while the sautéed artichoke hearts are really what set it off! Served with their homemade blend of wild rice and unforgettable Texas toast, seasoned to perfection with garlic powder and a sprinkle of cheese. Paired with: Hess Select Sauvignon Blanc 2014. The citrus and aromas and clean finish is the perfect accent to the fresh, light chicken dish.

Paired with: House Bloody Mary. This bad boy is served in a larger-than-life goblet stacked with all the fixins. It’s sultry and spicy.

THE JOINT

Between the fresh and updated look of the sleek bar, classic diner booths and crystal chandelier, the atmosphere of the restaurant is warm and welcoming. Brian’s 24 is a shared family business represented by San Diego locals themselves. It’s no wonder they knew exactly what the locals were looking for.

CRAFTY

SAVORY, SALTY, SMOKY, SPICY COCKTAILS AT THE SWINE BAR A.K.A. SAUSAGE AND MEAT! BY MILES ROBERSON

The spotlight at San Diego’s Sausage and Meat is, well, sausage and meat but to be more specific game meats, sausages and house-made bacon. From Scott Slater, who brought us Slater’s 50/50, S&M may consider themselves an eclectic meatery with a great cocktail list but I consider them a great cocktail bar with eclectic meats! Either way this place rocks. I met with bartender Caleb and Director of Operations Justin. Normally I choose three cocktails to sip and review but at The Swine Bar I couldn’t pick only three so I had, ahem … more than that but I only get so much page space so I decided on a gin, bourbon, tequila, mescal, another gin and a whiskey-based offering … whew!

44 4L MAGAZINE | JULY 2015

4Lmagazine.com

BEHOLD MY FAVORITES:

01 PACIFIC JEWEL The winning cocktail at this year’s Chefs and Shakers competition, where 12 bartender and chef teams came together to put forth one cohesive pairing utilizing “salt” as their inspiration, the amazing Pacific Jewel will be newly added to the menu by the time you read this article. This one begins by muddling cilantro, cucumber, fresh lime juice and simple syrup then adding Chareau, an aloe liqueur, and a San Diego gin from Old Harbor. Combine all the above into a shaker and give it a good shake. Strain into a lowball glass, top with Himalayan sea salt and cracked pepper with a cucumber wheel garnish and lo and behold you have yourself the Pacific Jewel! Everything is well balanced with the ever so gentle aroma of cilantro as you hoist this prize winner up to you pie hole. Immediately you will get a balance of savory salt and pepper in conjunction with sweet cucumber and aloe with a subtle hint of gin. A wonderfully refreshing beverage, it will surely change your mind about gin. 02 SWINE BAR OLD FASHIONED One of its more popular drinks is the Swine Bar Old Fashioned, a deceptively simple drink made from Buffalo Trace Bourbon infused with bacon, a bit of maple syrup, barrel aged whiskey bitters and nothing else. The success of the cocktail is not just about combining the two great ingredients of good bourbon and fine bacon. Rather, the cocktail is all about the balance in choosing the right bourbon, offsetting the smoky flavors of the bacon with a hint of bitters, and keeping an eye on the sweetness of the drink. The result is a combination of unique American flavors of bourbon, bacon and maple syrup evoking memories of a breakfast where maple syrup mingles with bacon … oh yeah, and garnished with a big ol’ fat piece of bacon! 03 SO FUEGO RIGHT NOW I am a huge tequila fan. When I saw this drink called for horseradish, I was intrigued. Other than in a Bloody Mary, I’m pretty sure I’ve never had horseradish in a drink. I’m always up for something new, the weirder the better. ... The Fuego muddles cilantro, fresh lime juice and horseradish then combines the aforementioned muddledness with a house made strawberry puree and Corralejo Tequila Blanco. Kind of like a strawberry margarita kicked up a few notches. The horseradish is very subtle; you almost don’t notice it’s there. Served in a challis, the fuego is en fuego! Look for it under the Savory and Salty section of the cocktail menu. 04

UP IN SMOKE

When it comes to Mexican booze, tequila’s gotten all the glory. Until recently, if you asked for a drink made with mescal at your local watering hole, chances are your request was met with a blank stare. But all that’s changing. The smoky spirit has caught a new wave of popularity and is popping up on more and more cocktail menus. Ready to try it? The Up in Smoke is a simple cocktail with a complex taste. With only four ingredients (chocolate bitters, agave, fresh lime juice and Xicaru Mezcal), the cocktail is a smoky, sweet, tart and bitter combo that is well balanced in a challis topped with a shaving of Mexican chocolate. Mescal madness is here to stay! (CONTINUED)

05 GRANDMA ARLYCE’S PICKER UPPER I had to try a cocktail under the breakfast offerings so when I asked Justin for his recommendation he immediately went with this one. The Picker Upper is a base of Martin Miller’s Gin, Aperol and Yellow Chartreuse combined with fresh squeezed grapefruit juice and orange juice topped off with Fee Brothers Grapefruit Bitters. The bitterness of the Aperol and grapefruit bitters comes across aggressively with the sweetness of the O.J. and Chartreuse to follow. Get your vitamin C with this one and while you’re at it ask Justin the story behind the name of this cocktail. 06

WHISKEY SOUR

** S&M’s No. 1 Seller ** Trends swing back and forth. In the beginning everything is simple. Bartenders use what they can find, adding new ingredients as they become available. More bartenders have begun to work with the new trend of adding their own twist. Some catch on and some don’t. The original product begins to get more and more complex as competitors try to outdo one another with the most extreme versions they can find. The product gets so complex that people begin to yearn for something simpler. They get tired of all the bells and whistles and the 12 ingredient drink and just want something simple. The Whiskey Sour at S&M is the kind of drink you don’t tinker with. It’s a basic bourbon, sugar, lemon, egg white and Angostura Bitters mix but smooth as velvet. There’s not much to say about this one other than after trying it, I can see why it’s their No. 1 seller. Simply delicious.

APPETIZER SPOTLIGHT

Lamb Tostada Bites. The Lamb Tostada Bites are like getting the best loaded up nacho on the plate every time! Runner up at The Chefs and Shakers competition for Appetizers, The Bites are mini tostadas loaded with juicy smoked lamb, spicy avocado smash, cucumber salsa and smoked lavender salt topped with a jalapeno ring. Four come on a plate but you’re going to wish you had a mound of them.

Other than great cocktails, the beer and wine menu is quite impressive with 12 rotating drafts (many local), plus nine bottles/cans and 13 wines. If ordering meat to go, you can grab a beer from their retail section or take a cold one from the bar. There are so many interesting and complex cocktails to experience but my poor liver could only handle so much so I’ll need to come back for the rest ... won’t you MEAT me there? Happy Hour is Monday-Friday from 3-6 p.m. featuring $2 off of ANY drink and a free strip of savory house made bacon (current flavors are Honey Sriracha, Hickory, Garlic Rosemary Parm, Smoked Chipotle, Brown Sugar, Dark Chocolate, White Chocolate Cashew and Cinnamon Sugar).

46 4L MAGAZINE | JULY 2015

MIXOLOGY MINUTE DRY SHAKE In the spirit of the Whiskey Sour, to dry shake a cocktail means to shake the liquid ingredients in a cocktail shaker with no ice. All recipes that involve egg whites (which is used to make drinks foamy) start with a vigorous dry shake, one that lasts at least 15 seconds. Dry shaking ensures that the egg white incorporates with the other ingredients and that it gets a nice frothy texture. 4Lmagazine.com

WHAT WE ATE & DRANK 01 Irish Nachos with Pulled Pork

(Potato chips, smoked gouda, white cheddar, jalapenos, bacon, green onion and sour cream)

They use potato chips instead of baked slices so it gives it a great light crunch. It allows for the toppings to be the star, and this pulled pork is heavenly. Throw in jalepeno slices and two different types of cheese and you’ve got yourself an Irish bomb. It’s an average nacho dish made better. Paired with: Golden Road Heal the Bay IPA

(American India pale ale, 6.8% ABV, 65 IBU)

The Los Angeles brewery supports a local organization committed to protecting the Southern California watersheds. It’s a strong IPA without the pallet wrecking IBUs. It’s a smooth operator and so will you be if you buy it because a portion of your payment goes to charity. 02 Grilled Artichoke

(With house herb aioli and balsamic dipping sauces)

It’s smoky, soft and tender right off the grill. Add in the special dipping sauces and you have yourself a not so average appetizer. As we were taking pictures of this dish, a Southerner walked by and said, “That’s fyancy!” Paired with: Artesa Chardonnay Carneros white wine It’s crisp and dry and brings a tear to my eye because it artichokes me up how delicious this paring is. Salmon Skewers

(Grilled salmon with bell pepper, onion, sweet & spicy lime vinaigrette)

Paired with: White Sangria

The sweetness of the peppers combine with the savory salmon and create a vortex of flavor in your mouth—and it’s on a stick! This pink beauty flakes off with every bite and you can feel the omega-3 heal everything in your body. … OK, OK, you need more than a bite for the healthy health benefits but look it up, it’s a wonder food.

BEER ME

TWISTED MANZANITA BY JEREMY PRITCHARD

Go east, young man! That was the call I heard when I decided to buy a house in East County. While I can afford a place in Lakeside, I am leaving the comforts of my well rooted urban lifestyle behind. No longer will I be a stone’s throw away from Acoustic Ales, Modern Times, Ballast Point and everything 30th Street has to offer. Whatever will I do!? Easy, explore the burgeoning East County craft beer scene, and there’s no better place to start my quest than with one of the O.G. East County breweries (with respects to Alpine), Twisted Manzanita. Twisted Manzanita Ales and Spirits started as Manzanita Brewing Co. in December of 2009 with two software testers at the end of their ropes. Owner and co-founder Jeff Trevaskis along with co-founder Garry Pitman had spent the five previous years home brewing; between barbecues and

parties they often found their beer was the first to go. Together they put together a business plan, phased out of their software jobs and plunged fully into Manzanita Brewing Co. Launching with their core line of beers, the Manzanita brand grew fast, even getting distribution in Albertsons grocery stores at a time when big beer ruled shelf space. Being an engineer, Jeff has a unique perspective on beer. He likes to eliminate what he calls “water spots” in beer. For him, a water spot is any point while tasting a beer that there is zero palate experience. Have you ever had a beer that was so overbearingly hoppy the mouthfeel and finish were completely lost? Jeff would call that a water spot. He engineers Manzanita beers to deliver wave after wave of flavor so you can savor beer from front to finish with no lulls in the flavor or experience.

It wasn’t long before demand outpaced their supply and Manzanita needed a new space. They built a production facility just down the street from their original space and much the same way Stone sold their old brewery to Port/Lost Abbey, Manzanita sold theirs to Butcher’s Brewing in 2012. Along with the move, Jeff decided that the company brand still needed a little something extra to reflect who they are as a brewery; after some employee brainstorming, Twisted Manzanita Ale and Spirits was born. I’m sure at this point you’re curious on how the spirits side came to be. It was a case of kismet and rotten luck all rolled into one. When a batch of beer went south and was deemed not to standard, instead of dumping all 2,000 gallons Jeff had the idea to make lemonade out of lemons and distill the alcohol out. Garry’s brother Jake Pittman had been the company handyman since day one

and was always more of a whiskey drinker than a beer guy. When the idea came up he leaped at the chance to take the helm on the new project. Jake and Jeff worked together to create their distillation process from ground up, even custom building their still to create a spirit that was truly unique to what they wanted to craft. Last year, Twisted Manzanita expanded to a Pacific Beach tasting room and Jeff tells me coming in November you can expect to find a collaboration in North Park called Twisted Taps. What’s next? Exploration into sour beers and, after trying their Fifth Anniversary American Wild Ale, they will be a force to be reckoned with. Also, Jeff hints that they are playing around and innovating some new ideas on the spirits side. Want to experience some Twisted Manzanita innovation for yourself? TENDER

TRUE NORTH TAVERN BARTENDER

KASEY RICHARDSON BY STEVE KANG

ORIGIN: I’m originally from Seattle, but I spent most of my life in Denver. I came to San Diego on vacation then moved here six months later after I graduated college. CREDENTIALS: I started as a hostess when I was 16, moved up to serving, then started bartending and have been doing it for more than four years. SHIFTS: Tuesday, Wednesday, Friday, Saturday WORDS OF WISDOM: Live life to the fullest. SIGNATURE DRINK: Michelada, because it’s the perfect hangover cure!

DRINKS MADE TODAY: El Guapo

(Herradura Reposado Tequila, muddled pineapple and jalapeno, agave nectar syrup, fresh lime juice, served with a Tajin chili rim) The muddled

pineapple puts just the right amount of sweet and tart in the otherwise skinny drink. The Tajin chili rim makes me smile because it tastes great and sounds naughty. RDGLDGRN Mojito

(Barcardi Rum infused with dried cranberries and dried apricots, simple syrup, fresh mint, fresh lime juice, soda water) Looks like a Caribbean

Queen but this pinky drink is mean. The dried fruit gives it a great accent as well as a sweet treat in between sips, but the rum makes this drink really fun. You get nice wafts of mint with every sip. Spiced Pear

(American Harvest Vodka infused with pears, cinnamon and cloves, simple syrup, St. Germain, dry vermouth) It’s dry, it’s fly, and it will make you high. It’s sophisticated and packs a big range of flavors. Smoking Bullet

(Bulleit Rye, apple pie moonshine, apple cider, served with apple wood chip smoke) This thing ain’t no joke! It is actually smoked with a mini smoker. As soon as you bring it to your lips, it makes them quiver because this manly drink makes you “Kooler” than “Smoking Joe.”

THE JOINT This is another offering by the Verant Group that has several happening bars around San Diego including barleymash in the Gaslamp. As soon as you walk in, you know this joint is right in line with the Verant Group’s high standards. They invented upper-scale casual and this place is no exception. Whether you’re a hipster, a club kid, a sports fan or just an old fart like me, there is something here for everyone. The drinks are creative and the food is comforting.

GRILLED STEAK WITH CHIMICHURRI SAUCE BY LARA MILLER

As I type this, I am preparing for a camping trip with my family. Camping is just what we should be doing in the beautiful month of July, right? Southern California summer, the great outdoors, the hiking, the beaches… Just me and my four guys and lots of family and friends. I am a lucky girl…

56 4L MAGAZINE | JULY 2015

Except, well, aren’t we sleeping on the ground? And don’t we have to pay to bathe ourselves and walk pretty lengthy distances to drain the main vein after a couple of beers?

And, let’s be real. I have basically packed up my entire kitchen and cooked for two days because I’m thinking just because we’re camping doesn’t mean we have to eat like sh!t. My crew is going to eat proper despite a few days in the wilderness.

Well, OK, I guess it’s not exactly “the wilderness” considering we got a pretty sweet spot at the Malibu camp grounds. But even if it is Malibu, camping is such a novel thing for me. My kids love it and my husband loves it, and I guess I love it, to a certain extent. But growing up, my parents never took us camping. I think I was in the 7th grade the first time I ever even went camping with my girlfriend and her family.

4Lmagazine.com

She was one of my best friends and she was from Argentina. All I remember is that there was a lot of The Doors playing, a lot of walking around the campgrounds talking to the other boy campers (ahem) and a lot of beach time. That was a fun camping trip where I made a lot of great memories. But today, my camp trips are a little different. I am a mom with three little boys that aren’t remotely bothered by being dirty, rolling around in the dirt, and if I’m being honest, my youngest seems to actually like eating dirt. He also likes picking up people’s already chewed gum and snacking on that for a hot minute, but that’s neither here nor there. But what I am loving and really appreciating the

most about camping these days is making some fabulous camp fare for us to enjoy.

sauce that is very popular in Argentina to top on any grilled meat.

Shocking, I know.

My chimichurri sauce is perfectly paired with grilled steak, grilled chicken, and I even like to put it on grilled fish or shrimp when I’m feeling extra crazy.

So this recipe I am sharing with you is one I am planning on grilling up with my peeps when we head to Camp Malibu this weekend. And of course, it’s a little throwback to my Argentine friend who took me on my very first camp trip when I was just a wee lil’ babe. It’s Argentinian style marinated and grilled steak with a bright and slightly spicy chimichurri sauce. Chimichurri is a herb and vinegar based

It’s bright, both in color and taste, fresh, and tangy from the red wine vinegar and the orange juice. Well, I’m off to finish camp packing, which by the way, is one of the most treacherous things one can do, am I right? Anyway, I hope you all try this amazing grilled steak and chimichurri sauce. It’s bright, it’s fresh and it’s tangy, just like you!

FOR THE

STEAK 1 - 3-4 pound flank, flap or skirt steak, whatever you fancy

1 tablespoon dried oregano

1 large onion

1/2 teaspoon red pepper flakes

4 garlic cloves

1 jalapeño, seeded

1/2 bunch flat leaf parsley

1/4 cup red wine vinegar

1/2 bunch cilantro

1/4 cup olive oil

1 lime, zested and juiced

1 1/2 - 2 tablespoons kosher salt

1/2 of an orange, zested and juiced

Fresh cracked pepper

JULY 2015 | Fully cultured, yet unshaven | 4L MAGAZINE 57

FOOD/DRINK

DISH

01

Put the flank steak in a large pan with high sides or a Ziplock bag.

02

Puree the onion, garlic, parsley, cilantro, jalapeño, oregano, lime zest and juice, orange zest and juice and red wine vinegar.

03

Season with salt and pepper and drizzle in olive oil. Puree until smooth.

Pour over the flank steak, massage it lightly with your hands and put in the refrigerator to marinate for at least two hours, but preferably overnight.

04 04

Get your grill nice and hot and sear your steak for 7-10 minutes on each side, until you see a nice crust form.

05

Depending on how thick your meat is and how you like your steak cooked is how long you are going to cook that bad boy.

58 4L MAGAZINE | JULY 2015

My piece of meat was pretty thick so I cooked the first side for 8 minutes and then I turned down the heat to medium high and cooked the other side for another 13-15 minutes, until it was medium rare to medium.

06

07

Take the steak off the heat, tent it loosely in foil and let rest for at least 10 minutes.

The “letting it rest” stage is very important because if you cut into it too early, all those delicious juices will run out and you will end up with a dry piece of meat! And no one wants a dried up piece of meat!

08

After your steak has come back from its vacation under the foil and is well rested, slice it thin and top with copious amounts chimichurri sauce.

09

4Lmagazine.com

FOR THE

CHIMICHURRI SAUCE 1 bunch flat leaf parsley 1/2 bunch cilantro 1 jalapeno, seeded Pinch of crushed red pepper flakes 3-4 garlic cloves 1 lime, zested & juiced

01

In the same food processor that you made the marinade in, put all the ingredients in and puree until fairly smooth.

You still want the chimichurri sauce to be a little chunky with the herbs throughout, but pureed enough so the garlic breaks down.

02

TIP: A quick and easy side for this is some grilled potatoes. I used new

potatoes because they are small and can grill up quickly. I sliced them about 1/4 inch thick, tossed them in a little olive oil, salt and pepper, then threw them on the grill while the meat was cooking away. Flip them only once and check them periodically for doneness. When they are tender enough to stick a knife through the middle of them, they’re done and ready to enjoy! That should take about 10-15 minutes altogether. PLATING YOUR MASTERPIECE: Slice off a few pieces of your well rested steak. Take a generous tablespoon of the chimichurri sauce and dress up your sliced grilled steaks. I like to finish it with a little drizzle of olive oil for a little added richness and flavor. Yum, yum and yum. Happy July, everyone! My name is Lara Miller and I am a wife to a pretty cool San Diego dude and mama to three handsome little boys. Yes, I am a lone ranger in a pad full of testosterone. Here is my thing... I love to cook. I’m not a chef, but cooking is what makes the world turn for me. It’s like my therapy, and believe me… dealing with three boys on the daily requires some serious therapy! Instagram: ChickpeaKitchen / Lara@ChickpeaKitchen.com ChickpeaKitchen.com

GAMBLING TIPS

What is pai gow? When you walk through a casino, you run into all the standard games like blackjack, poker, roulette, craps and more. When you stop to watch pai gow, it will probably confuse you. It’s next to the blackjack tables but looks more like poker with more bells and whistles. Well, you’re right, pai gow is a poker derivative. It seems complicated like craps but it’s basically poker on steroids. If you know how to and enjoy playing poker, pai gow will be right up your alley. SYCUAN CASINO

When you arrive at Sycuan to play pai gow, find yourself a nice table that you’re comfortable with, especially the limits. If you ever wonder what you’re supposed to do, the dealer will always be nice enough to help or play your cards the “house way.” This means they will play your hand for you by the standard the house uses every time. Since there are no consequences for individual play for the dealer like in blackjack, other players will never be upset with your individual play. Be respectful of the dealer and the other players but never forget to always have fun! Remember, tipping the dealer might not increase your odds of winning but it will definitely increase your odds of being a good person.

Any day you attend the racetrack is a great excuse to bring out your bestfitted suit. Don’t be afraid of patterns or prints for this celebration! Stripes with polka dots or solids are always a “DO” in Del Mar. If you’re opting for something more casual, a polo or short sleeve button down in a nice clean, summer color palette will keep you cool under the sun and dressed for the festivities!

THE ACCESSORIES

Once you have your basics ready to go, don’t be afraid to decorate! Fedoras are, of course, a huge trend at the races, but don’t forget about the less obvious items; a pocket square with a nice suit is always popular. Add a colorful handkerchief and you’ve completed your look! Feathers can be intimidating but putting the right one in a fedora can make for a more festive and confident statement. Don’t forget a nice pair of shades, perhaps with colored rims, are also both practical and fashionable.

Feminine shades and blushed palettes always pair well with the racetrack and a spectrum of pink or gold tones will have you shining in a light party dress. If you’re looking to stray away from skirts this year, a strong option for a more powerful look is a flowy, wide-leg palazzo pant with separates or a pantsuit. Either will allow you to maintain a flirty silhouette underneath your party hat this season!

Traditionally, classic floppy hats flood the gates during the pony show, but this year ladies headwear accessories have been taken to another level. ZODIAC SIGN: Aries PROFESSION: I have my BFA in modern dance and currently perform with two local modern dance companies, Blythe Barton Dance and Pisces Dance Project. In addition, I work around SD as a personal trainer, yoga instructor and pole dance instructor. HOBBIES: Traveling, scuba diving, camping, hiking, trying new restaurants. OUTDOOR ACTIVITIES: I’m a water girl at heart. Anything in, on or around the water I love. FAVORITE FOOD: Ooooh, tough one, I love to eat! Living here in SD I have developed a great love for tacos. PASSION

I started dancing when I was 9 years old and it quickly became my life. I spent most evenings after school in dance class. When I wasn’t dancing I was on the four-wheeler bombing down the rows of grape vines on my parents’ vineyard or playing in the bay.

After graduating with a degree in dance and moving to the Big Apple, I was looking for ways to help pay my rent and got my first job as a personal trainer. It totally fit, I found my passion for teaching people how to live healthy and happy lives as well as learning how to be my own boss and run my business. It is lucrative enough to support me while I follow my original passion as a performer. Unfortunately, there is not a lot of money in the contemporary dance arts world.

I do what I love and love what I do, all day, every day. Eat, exercise, yoga, dance, sleep, repeat.

Not to be denied, several friends and I 02 Stand Up decided to jump the Paddleboards pond and scurry east where lawsuits, guardrails, fences and warning signs do not exist. Where could be better than Spain to quench our inherent desire to climb and dive? A country where individuals are encouraged to do crazy things like throw tomatoes at each other in the streets, dance under papier-mâché sculptures ablaze, and dodge the sharp horns of bulls running through narrow streets. Spain, specifically Mallorca, welcomes with open arms deep-water soloists (the term used to describe

those of us who like to solo rock climb above a body of water). Along with the pristine beaches, crystal blue waters, delicious cuisine and mega-nightclubs, deep-water soloing (DWS) has become one of the leading attractions for tourists visiting the island of Mallorca. With its plentiful limestone overhangs, slabs and crags towering over its transparent seas of 76 degrees, Mallorca is the holy grail of deepwater soloing.

skated, cycled, jogged and strolled past us along the Paseo Marítimo. From this colorful blur of people emerged our guide, Sebastian, from Rock & Water Mallorca. After introductions were made and another round of cañas ordered, we began telling Sebastian of our range of climbing experience and the activities we’d like to do on our four-day sail. As Sebastian began sharing with us his tentative itinerary of sailing, rock climbing, deep-water soloing, caving and stand-up paddling, our eyes widened, our hearts beat faster, and our smiles shined brighter in anticipation. The adrenaline rush had already begun and we had yet to set foot on the boat.

Upon arriving in Palma de Mallorca, my friends and I quickly initiated our vacation by enjoying a cold caña (small glass of beer) at one of the many outdoor bars along the harbor. Both locals and tourists

The following morning, Sebastian greeted us in the sunlit lobby of the hotel with as much excitement and enthusiasm as we were all feeling. The drive to the boat was

02 With the sun and wind caressing our faces, my friends and I could not help but smile as we sat on the bow of the boat. Leaning into the turn around the southeast corner of BahĂa de Palma, we were welcomed by miles of limestone cliffs crowned by pine trees and miniature palms and skirted by turquoise seas.

01

Due to a decent wind swell lapping up against our climbing canvas, Sebastian suggested we climb the interior of the island the first day. The van picked us up at the nearest port on the southeast side of the island and we headed inland. White, almond tree petals carpeted the road as we snaked through the valleys that were shadowed by the picturesque mountains. Not only were the Rock & Water Mallorca guides able to provide harnesses and climbing shoes for two in the group but also offered valuable insight as to how to approach various routes. Looking up at all the incredible routes ranging from 4+ to 7a+ and up, I could not wait to feel the grip of the limestone holds and reach for the white, billowing clouds overhead. With two

gorgeous as the morning sun shimmered off the Medi03 Getting there terranean waters and highlighted the majestic, seaside cathedral. Upon stepping out of the van at the dock, the tepid air immediately embraced my bare shoulders but was quickly whisked away by a wave of cool, ocean air. After our bags of swimsuits and sunscreen were loaded and the checklist had been checked, the ties were released and we began our four days of living on rock and water. 02 Making the jump

As if orchestrating a soundtrack for our trip, the pitter-patter of the deep-blue waves pushing past the bow of the boat harmonized perfectly with the wind plucking the ropes of the tall, white mast. The symphony was interrupted but only for a second by the hoisting and taut snap of the main sail.

ropes always going, the six of us had our fill of Mallorca climbing for the first day. Despite raw hands and exhausted muscles, all of us headed back to the boat with smiles and endless stories. After a great night’s sleep, the kind you can only get on a gently rocking boat, the sound of excitement on deck woke me and I scurried up the stairs as the morning light blinded me. When the colorful stars and orbs finally gave way to sight, I had to rub my eyes several times again to make sure they were not playing tricks on me. To our port side, there appeared to be a sailboat floating in mid-air; the shadow it cast below and the chain of its anchor were as clear as day despite sitting in 30-plus feet of water. The cove within which we had moored was spectacular with its white and tan limestone cliffs protecting us from the winds and waves. My friends and a guide were already lathering up with sunscreen and throwing their climbing shoes in the ridged inflatable boat (RIB). I quickly followed suit, grabbed a piece of fruit, and jumped in the RIB where they all were waiting impatiently for me. Our Rock & Water Mallorca guide, Adhara, pulled the RIB up alongside the cliff and explained to us the best technique to traverse the challenging wall. One by one and roughly 20 feet apart, we climbed out of the RIB and onto the rock face. With the stickiness of the limestone holds, it felt as though I was a spider. The sensation of finding that sure hold with both your hands and feet, using gravity to actually keep you up, is an indescribable feeling and a must with DWS. However, the overhangs often associated with Psicobloc (the other term used for DWS) do not allow you many opportunities to rest and you are forced to use a lot of upper body strength.

Splash! The moment that thought crossed my mind, my arms gave out and I plunged into the cooling water five feet below. Splash! Splash! Splash!

One after the other, we found ourselves looking up at the wall from the water and laughing. Our laughs were short lived as our competitiveness drove us to pull ourselves back up onto the wall and overtake the friend(s) ahead of us. With each consecutive attempt, I found myself traversing farther and farther as the water on my back evaporated into little salt beads. From chatting the night before, Adhara knew that I wanted to do some cliff

diving and so she pointed us toward several jumps. We clambered up the limestone wall and found ourselves in the middle of nowhere with only shrubs, pine trees and the Mediterranean below. She said it was a 12-meter jump–which I calculated in my head to be 40 feet –but it appeared at least 30 feet higher when I could clearly see a sea cucumber at the bottom of the ocean! Before my friends could hassle me, I hurled myself off the cliff and felt that long missed sensation of my stomach dropping and the BOOM of the water folding over me. With a little heckling the others jumped and so we spent the next hour pushing the stupidity factor with each successive “dive.” Later that evening, back at the boat, the joking continued while we shared ice-cold beers, refreshing salmorejo (similar to

gazpacho) and fun stories

from the first two days. As the setting sun cast a pink hue on the limestone wall where two of my friends challenged themselves on a new overhang, I decided to stand-up paddle around the aqua glass. With the blue sky giving way to red and pink and the soothing chatter of the Mediterranean against the nose of the board, I sat down and looked around me. There in front of me were my two friends encouraging each other on the rock while behind me the others bonded with laughter on the boat. It was at that moment I realized why we have this innate urge to climb and jump off things. Yes, without question, it offers us a personal challenge and adrenaline rush. But more importantly, it provides us an opportunity to connect with our friends. Mallorca exceeded all expectations and hype on both accounts.

Bartendro 15 Price: $4,000

According to presenters: “B15 employs 15 sophisticated peristaltic pumps that

work in unison to dispense accurate, repeatable cocktails. Use any web-enabled tablet or smartphone to select cocktails from a menu that only shows the drinks available to be made. In the administration back-end, new ingredients can be added to the list and those ingredients can be used to custom create new drinks, or modify existing ones. Save your favorites and discover new ones! Shot mode allows users to pour shots directly and a trending tab allows you to monitor the most popular cocktails, as well as how much alcohol has been used. ... This bot is perfect for anything from a small party to large events, from the office to a wedding, a small restaurant to an ultra-busy nightclub. Making several hundred drinks in an evening is no sweat. Save money by reducing messiness, wasted alcohol and time.” 4L Magazine’s take: The only bartender that won’t want to flying punt you in the skull for snapping, whistling, flinging coasters or pounding the bar to try and get a drink. Then again, robots will one day enslave all of mankind, so I wouldn’t upset this one either. PartyRobotics.com

Lexus Hoverboard

Price: TBA According to presenters: “The Lexus Hoverboard

uses magnetic levitation to achieve amazing frictionless movement. Liquid nitrogen cooled superconductors and permanent magnets combine to allow Lexus to create the impossible.” 4L Magazine’s take: Seems so odd that out of all the companies to invent a hoverboard (that was smoking for some reason in the video), it was Lexus. It just seems like the kind of a company for a retired accountant who likes scotch more that his family and not the kind of company to breathe life into a geek’s dream about a movie from 30 years ago involving a skateboard not tethered by gravity. The inspiration for the interior comes from the continuous line that runs around the cabin, driving through the console into two symmetrical wings before flowing into the door and looping back into the console armrest. But if by chance some gigantic schmuck does have my wallet, my cards are cancelled, I haven’t had cash in years, and I hope you enjoy the handwritten notes from my daughter. Brick By Brick

San Diego’s Cattle Decapitation have been making insanely fast, super dark, and completely freaky deathgrind metal for almost 20 years now, and they just keep getting better. Yes, they’ve had a ton of lineup changes over the years (former members have been in SD’s The Locust, too), but with Travis on vocals and Josh on guitar since around 2002, their foundation is still rock solid. This show is going to be extra rad because it’s their CD release show for their new album The Anthropocene Extinction, out Aug. 7 on the legendary Metal Blade Records, which has been their home for their last five (!!) albums. Dave McGraw is one of the fastest, most precise drummers in town, and how Travis hasn’t needed a vocal-chord transplant by now is beyond me. Your ears might bleed at this show, not to mention your soul. Bring your mom!

If the deathgrind of Cattle Decapitation isn’t your bit, this Charli XCX and Bleachers show might be right up your alley. Dancing! Sweating! Smiling! Probably even some hugging and sweaty high-fives! Charli XCX and Bleachers are both super fun to see live on their own, so when they kick off this co-headlining tour right here in San Diego, you know it’s going to be like a huge aural glitter bomb, and I want to be right in front. Charli and Bleachers’ Jack Antonoff have worked together in the past, and she says, “This tour is gonna be cool and weird and fabulous and I really can’t wait.” Cool AND weird AND fabulous? Count me in, you crazy kids!

Yes, Kai’s no longer in the band, but Micah holds it down like nobody’s business and the guys haven’t skipped a beat. Our sister station, the all-reggae BOB Radio (www. BOBSD.com), plays them quite a bit and I love it whenever they do. Iration’s music makes me happy, plain and simple, and openers Katchafire and Hirie are also super good and so much fun live! Smiles will be flying and super rad sunshiny vibes will be too. Catch their fire before they play SF’s Outside Lands in August. You’ll be happy you did.

The two bands that really helped define two different styles of music back in the late ‘90s and early ‘00s. Third Eye Blind blew up the charts in 1997 with the hit “Semi-Charmed Life” paving the way for more of a pop-grunge rock sound that became ever so popular. On the flip side, Dashboard Confessional (a.k.a. Chris Carrabba) is an icon for the emo music scene after leaving his original band, Further Seems Forever, taking off in his own direction.

07/21 7 P.M. IMAGINE DRAGONS, Viejas Arena SDSU Their double platinum and Grammy award winning album Night Visions is only the beginning for the New Age, alternative rock band. All proceeds from the event support Free to Breathe, a lung cancer research and advocacy organization dedicated to doubling lung cancer survival by 2022.” 4L Magazine’s take: Donate your weekly cigarette/vaping stash to lung cancer research and advocacy. If you don’t, we’ll chase you down because we know your cardio sucks from smoking anyway.
