But did this all last when lockdown was lifted? It would be easy to say “no” but I’m trying to be more optimistic than that. This newly boosted appreciation could last and, hopefully, it will galvanise us to do more about our environment and ALL the creatures that live there.
WHEN NATURE WAS ON VIEW AGAIN WATCHING the 1995 film The American President the other day reminded me what a hard sell caring about the environment was back then. The plot is all around the President (Michael Douglas) meeting an environmentalist (Annette Bening) and their trials before, of course, a happy ending. But the interesting aspect was how people regarded her and her work, even to some extent the President’s view. It just underlined how far we have come with understanding global warming and the very real threats that we humans pose to the planet. Many would obviously point out that we have a very long way to go yet before we can start congratulating ourselves on genuinely caring for the world around us, and they would be right. You only have to look at the amount of litter casually chucked around by uncaring individuals to realise the length of that particular journey. But lockdown provided a unique perspective on how the planet improves if you, even temporarily, largely remove humans from the equation. We had dramatic drops in city pollution around the world that could be seen from space. Venice’s canals were visibly cleaner and wildlife returned to this newly improved

habitat. Even general litter improved although fly-tipping increased as official tips were closed. Perhaps even more importantly, more people walked or cycled for exercise and just to get out and about. So we began a re-education of how we see Nature – often passed onto and shared with our children. There was also a boost in people growing their own fruit and vegetables in their gardens, enhanced by the good weather. We had more time and had slowed down our lives enough to appreciate the world around us. What David Attenborough had been showing us so brilliantly for years about the life on our planet suddenly seemed far more relevant. And, yes, it felt hopeful.
Seeing what happens when Nature is left to its own devices might just make us more aware and caring. Let’s try and find a way to live in harmony, permanently. HOW WE NEARLY MISSED OUT ON JASON’S DEL BOY WE’VE watched actor David Jason grow up on our TV screens from Granville in Open All Hours to an ageing Inspector Frost in A Touch of Frost. His acting skills are indisputable and must still be the envy of actors and actresses of all ages. He’s 80 now and easily qualifies as a national treasure. So it’s surprising to learn from his justpublished third autobiography, A Del Of A Life, that he was actually FIFTH choice for Del Boy Trotter in Only Fools and Horses. Robin Nedwell of the Doctor in the House
comedy series and Billy Murray (later in The Bill and EastEnders) were possibles along with comedian Enn Reitel and actor Jim Broadbent, the oily copper Roy Slater on the show. Jason acknowledges that some of them, much taller than the compact Jason, might have made a better match as “brother” to gangly Nicholas Lyndhurst’s Rodney. However, as became apparent, the disparity of height and looks actually helped the characterisation of what is arguably still one of our favourite TV programmes of all time. But it does make you think, though, of what we take for granted in our favourites. How would Porridge (or Open All Hours) have been without Ronnie Barker? With whom would either of The Two Ronnies have partnered to create the fabulous eponymous comedy series? Would Dad’s Army have been the same if Arthur Lowe hadn’t been cast as pompous Captain Mainwaring? More recent re-makes seem to indicate that no others could really take those roles. They also underline, though, how clever was the casting in the originals, and how lucky we’ve been to be able to enjoy seeing comedy genius at work in exactly the right telly environment.

SPEAKING UP FOR JOJOBA – CORRECTLY
WE often think that we are in charge of animals in zoos and wildlife centres but sometimes little things happen that make us wonder.
COMEDIAN Billy Connolly used to have a famous routine about how exotic the ingredients in haircare had become.
One of them occurred at Lincolnshire Wildlife Centre recently, concerning five grey parrots called Billy, Eric, Tyson, Jade and Elsie. They joined the Centre’s colony of 200 grey parrots last August and all seemed well at first. Centre staff are used to the lively parrots and also used to their tendency to swear – presumably having heard humans doing it first. Apparently, though, they usually clam up outside. The Famous Five, however, not only learned to swear but ended up egging each other on! In the end, they had to be split up for the sake of young visitors. It’s tempting to think that these feathered friends did it on purpose because they liked swearing. Not so different then from youngsters everywhere - but definitely hilarious and a lesson from Nature on the canniness of all creatures great and small.
He thought jojoba was something you chucked into a pan with other ingredients for your evening meal. Even though this oil - that has a variety of healing properties - probably wouldn’t have gone with his neeps and tatties, at least Billy always pronounced it properly as ho-ho-bah. Now, a new Scandinavian survey has revealed that two thirds of people interviewed think it’s jo-jo-bah. Don’t bother feeling smug, though. The survey also revealed that 58 per cent of Brits pronounce Turmeric wrongly. We tend to say tur-mer-rik when it should be tuh-muhruhk. But then, think of all the words wrongly pronounced anyway. The one that sets my teeth on edge is mischievous mispronounced as mischiev-i-ous with an extra i. Grrrr!

Agatha Christie on the English Riviera themed tour with Travel Editions By Cathy Bartrop from Silver Travel Advisor
Cathy Bartrop joined a Travel Editions UK literary themed tour I should perhaps confess I’ve never read an Agatha Christie novel. I know - shock, horror! That said, whether it is through TV, film or theatre, it’s impossible not to be aware of the impact of this inimitable author. Nevertheless, I was astonished to learn her book sales exceed 2 billion worldwide,

putting her second only in sales to the Bible and Shakespeare. Clearly, I have been missing out. Travel Editions have put together a fun weekend tour that delves into Agatha’s life story, based in her hometown of Torquay on the English Riviera. Having made our own way there, our group of 30 assembled on the first evening at our base for the weekend,
The Grand. It’s fair to say it’s a hotel that has seen better days - faded grandeur is perhaps the kindest way to put it - but the staff are absolutely lovely, the food is good and it does occupy a prime location on the seafront. And, most important, it has a direct connection with Agatha as this is where she spent the first night of her honeymoon with her first husband, Archie. The rather splendid Agatha Christie honeymoon suite, I am told, gets booked up months, if not years, in advance. It also makes the hotel the first stop on the socalled ‘Agatha Christie Mile’ - it’s actually more like 3 miles if you walk it but more of that later. On the first evening, we were in head first with an entertaining Murder Mystery to solve over dinner. The plot of ‘Murder on the Riviera’ was revealed by a talented trio from the local Moonstone Theatre Company and involved multiple costume changes and some very clever ad libbing when put under fairly intense scrutiny by the Travel Edition sleuths. Turned out one of our number was a retired detective and his line of questioning was, well... forensic... but also highly entertaining. As to ‘who dunnit?’ - my lips are sealed but let’s just say you need to keep your wits about you and it proved to be a great icebreaker.
Our second day began with a very informative illustrated talk from our very engaging Tour Manager, Jane Tapley, all about Agatha’s early years and connections with the Torbay area. This set us up nicely to then drive along that ‘Agatha Christie Mile’ and see many of the places that mark memorable moments in her early life - the pier where she roller-skated, Beacon Cove where she swam and the Pavilion where Archie proposed, sadly boarded up but a listed building that will, in time, hopefully be given a new lease of life. The end of the mile is marked by the Torquay Museum with its quirky collections of dinosaur bones and natural history exhibits but also, a floor dedicated to the town’s famous daughter. Next it was on to Greenway, which Agatha bought in 1938 as a summer residence for the incredible price of just £6000. Now a National Trust property, it’s a 20-minute drive from Torquay, set at the end of a long, narrow country lane. An absolute haven of tranquillity, it is surrounded by 30 acres of woodland that lead down to the River Dart. The grounds are a delight, especially the river views from the Boathouse (featured in Dead Man’s Folly 1956). The Georgian house is also impressive. The family were great collectors of china, silverware, archaeological finds and, of course, books and there is certainly plenty to look at. There’s also a very human and nostalgic side to the displays too - the unfinished game of dominoes on the living room floor, much loved toys propped up on sofas and

A rather delicious Devon cream tea in the lovely Barn Cafe rounded off a perfectly lovely afternoon. Overnight the tail end of Storm Gabrielle swept in to the South West and we feared our highly anticipated Sunday outing might be a washout. Luck was on our side though, after a late-ish breakfast and then a 90-minute coach drive further
south, by the time we arrived at Bigbury on Sea the rain had finally stopped, and the tide was out. The winds were still whipping around us, but we were able to appreciate the magnificent setting of our destination, the famous Burgh Island. When it is cut off at high tide, they operate an elevated tractor to ferry visitors back and forth, but it cannot operate in high winds so, heads down against the wind, we made our way across the sands on foot. First stop, a quick drink by the welcoming fire at the famous Pilchard Inn, established in 1336 and one of the oldest pubs in Britain. Its two tiny rooms were soon packed out by our group but would once have been full of fishermen and smugglers. No wonder this atmospheric watering hole and the island in general proved inspirational to our Agatha. The highlight though, without doubt, is a visit to the Burgh Island Hotel, sitting proudly on the hilltop commanding the most stunning views of the bay. Lovingly restored as a luxury Art Deco hotel, it takes very little imagination to picture Agatha and her High Society friends enjoying cocktails at the bar and dancing in the ballroom. No dancing for us, but we did enjoy a delicious 3-course Sunday lunch in that very room. A fitting end to a highly entertaining and enlightening weekend that left me suitably intrigued... and inspired to solve the mystery of how her books have evaded me ‘til now!

Walking in Madeira with HF Holidays By Gillian Thornton from Silver Travel Advisor
Madeira has a reputation for appealing to Silver Travellers like us, especially in the winter months when temperatures can happily hover in the low 20s. With a mild climate, spectacular scenery, and gleaming white villas, it has an upbeat air that’s guaranteed to put a spring in anyone’s step. Many holidaymakers don’t stray far from the cultural sites and shopping of Funchal, or even the hotel poolside - and why not - but Madeira also attracts a more active kind of Silver Traveller, as I found on a wintersun walking break with Silver Travel Advisor partner HF Holidays. Their seven-night holiday at the 4-star Hotel Galosol in Caniço de Baixo runs from late December to the end of March and again through September and early October. Just 15 minutes’ drive from the airport and 20-minutes from Funchal by fast local bus, the Galosol ticked all my boxes for location, facilities and meals. All rooms have balconies and for a supplement, you can look directly across the water to an island nature reserve, particularly beautiful at sunrise. There’s a large gym and tranquil indoor pool, an 12
outdoor pool, and a wellbeing spa nestled in a cliff. HF guests eat in the main hotel dining room from a copious buffet spread at breakfast and dinner. With a choice of two graded walks each day, the routes largely follow Madeira’s famous lavadas, at which point, let’s separate fact from fiction. These man-made water channels – named after the word to ‘carry’ – bring rainwater from the high peaks and moorland to the drier lower slopes, mostly in the summer months. Tourist photos often depict narrow paths with vertiginous drops, and these do exist, but there are levada trails to suit all abilities. Lined with concrete, the gulleys generally follow the contours of the slopes with only a gradual incline, so any steep sections of the routes are usually between one levada and another, or detours to viewpoints. And whilst the paths themselves can be narrow, they are often fringed with trees, or simply a gentle slope. Any steep drops are guarded with a rail and are generally only for short sections. And of course HF – and other tour operators – do not subject clients to any unnecessary risks.
As with other HF itineraries, we were offered a choice of walks, the Easier and Harder options being outlined each night at a pre-dinner briefing. Often the difference was more on gradient than length and several of us chose to mix and match. Our youngest walker probably just made Silver status, a business consultant taking his annual winter hill walk break away from the family. Our oldest was everything I hope I will be at 85 - vibrant, sprightly and up for anything. But walking on the levada trails is not age dependent. Levada trails are not for walkers with any kind of mobility or vertigo issues. Our routes covered roughly 12-18 km per day and were all linear, covering different areas of the island and contrasting terrain. An ability issue with one of our group during our first walk was dealt with sensitively and sympathetically by our leaders, who worked hard to find a solution without disrupting the rest of the group, but the situation should not have arisen. So be honest with yourself about your fitness before you book. And be aware that some levadas pass through unlit tunnels, so a torch - even on a smart phone - is essential.
But if you are fine with all this, you will love this holiday. Our varied levada routes took us through small whitewashed villages and across moorland ablaze with gorse; through lush forests of laurel and eucalyptus to a tumbling woodland waterfall. And not all walks involved the water channels. We followed some broad panoramic tracks and on the last day, took the undulating footpath along the Praia de Sao Lourenco peninsula with views to each side of volcanic formations and crashing waves. There’s a sightseeing element too, including the view from Europe’s highest sea cliff and, inland, over a hidden valley. A guided tour of Funchal introduced us to the whitewashed cathedral, Blandy’s Madeira distillery, and the colourful produce market. Don’t miss the downstairs fish market to see the gruesome but scrumptious scabbardfish with their vicious teeth. HF build in a free day midweek when some walkers chose to chill out around the hotel, easing tired muscles in the spa, gym or swimming pools. Others, like me, headed into Funchal or to hilltop Monte for the spectacular gardens, for which a few tips:
The bus to Funchal (from the Galosol to the bus station) takes 20-35 minutes. Here you can get the bus to the Botanic Gardens for that famous Funchal panorama across the green and red Choreographed Garden, or the cable car to Monte to visit Monte Palace Gardens. I saved time by sharing a taxi to the Botanic Gardens and was there in under 10 minutes. A combined ticket for the Botanic Gardens, the cable car to Monte, and the return cable car to Funchal (the best views are on the descent) can be bought, but it’s cash only at the Garden kiosk, no credit cards. Monte Palace Gardens tumble down a steep ravine and only a small part is accessible by electric vehicle. Many paths are roughly cobbled and fairly non-slip but wear shoes with good soles or you’ll get more of a foot massage than you bargained for. I
particularly loved the Oriental Gardens with their koi ponds and red bridges, and the adjacent orchid garden, but expect native flora, a collection of African sculpture, and the history of Portugal told in traditional tiled panels in a stunning woodland setting. This is the perfect walking holiday for anyone who loves spectacular and varied scenery, plus an element of sightseeing. Just remember to pack your balance with your boots!

The Kia XCeed PHEV can operate as an electric vehicle (EV), which shuts off the petrol engine and operates on battery alone. The Kia XCeed PHEV can operate in ‘Automatic Mode’, which chooses the power mode that best suits the current driving conditions. ‘Hybrid Mode’ then takes over when battery is low and collects power when the car is braking or slowing down, which is called regenerative braking. The Kia XCeed PHEV can also operate in ‘Sport Mode’, which boosts throttle response with the petrol engine running at all times, with power being drawn from both battery and engine.

Kia XCeed Plug-In Hybrid It seems only a few short years ago that the very first electric and hybrid vehicles appeared on our roads and, having tried some of the early versions, I can tell you they did not get off to a promising start. Their short electric-only range and prohibitive up-front costs were two of the main stumbling blocks as well as overall MPG figures for hybrids, which did not seem to justify the investment for many. However, how things have come on… suddenly, we have more electric cars which have the ability to drive hundreds of miles on a single charge and an increased number electric charging points all over the country. The Kia XCeed Plug-In Hybrid (PHEV) combines the best of petrol and electric power. Both motors work together to give a performance of 0 to 60mph, in a respectable 10.4 seconds, when driving in ‘Sport Mode’. With the 1.6-litre fourcylinder petrol engine producing 104bhp, topped up to 139bhp by the electric motor meaning a top speed of 107mph is also possible. The Kia XCeed PHEV is capable of performing up to 201.8mpg,

with electric-only range of up to 36 miles when fully charged. We were able to test drive the Kia XCeed PHEV ‘3’, which has a long spec sheet in line with Kia’s push to move upmarket. This included 16” alloy wheels, LED lights all round, auto lights and wipers, heated front seats and steering wheel, smart cruise control, keyless start/stop, 10.25” touchscreen sat-nav and infotainment system, reversing camera and a raft of safety systems with features such as lane keep assist, driver attention warning, collision avoidance and pedestrian warning. Designed in Europe, and aimed at a European market, the Kia XCeed range is compact, good looking and well put together with the kind of quality materials and finishes we’ve come to expect from Kia and is all backed up by their industry-leading seven-year, 100,000-mile warranty.
Ride and handling cope well with different driving surfaces, giving a quiet and smooth journey. Steering is effortless and the brakes sharp without much evidence of that regenerative system harvesting energy during braking. Toyota CH-R Hybrid DESIGN-wise there is no doubt the latest CH-R model from Toyota is cutting edge… if you want a car that will stand out from the crowd then this could be the one for you. And in addition to the striking looks there’s performance and economy too as the electric motor and 1987cc petrol engine combine to deliver an 8.2 second 0 to 60 time with a 112mph top end while being able to return a shade over 54mpg. But back to that striking design which has been with us now long enough for the CH-R to become a regular sight on our roads. Combining coupé, hatchback and crossover influences it provides reasonable inside space with sporty external looks. Underneath the skin the CH-R shares the same global architecture and petrol-electric hybrid powertrain that made its sister car the Prius so successful. For 2020 Toyota have refreshed the C-HR with a new 2-litre petrol engine joining the existing 1.8 while the 1.2 turbo version has been discontinued meaning all C-HRs are now hybrids. Our test car was the near range topping Dynamic 2-litre version. Available on all but the entry-level trim, this new 2.0-litre engine adds over £1,500 to the final price but brings better performance and on-road refinement.
With more than 400,000 worldwide sales in the three years since its launch the C-HR has been a hit for Toyota with 50,000 of those cars finding homes in Britain. Toyota has not changed too much from that winning design formula - there are new front and rear bumpers, two new alloy wheel designs, new lights and the front fog lamps have moved further out along the bumper. Toyota says eight out of 10 UK buyers opted for a hybrid C-HR on the pre-facelift car, hence the demise of the smaller turbo petrol engine. The cars also now use a new smaller yet more powerful battery pack than the old C-HR. There are in fact two electric motors – one to recover energy during braking and another to power the car in full-EV mode. Total output is 182bhp which is 62 more than the 1.8 giving better acceleration and a more responsive driving experience. During normal driving the C-HR seamlessly switches between petrol and electric power meaning that at cruising speeds or when you select EV mode the car can waft along on electric power only. Refinement has been improved in the new version which is quieter than the old car while the ride and handling are a little
better as well thanks to new dampers giving a sporty feel to match those radical looks. The interior gets an upgrade too with a better infotainment system replacing Toyota’s previously fiddly and somewhat dated set up. Quality materials mean you feel like this is an upmarket motor, although space in the back seats and rear visibility is still a bit limited due to that sloping roofline. Our Dynamic trim car comes with a long list of equipment including sat-nav, heated front seats, an ‘intelligent’ park assistant, ‘sonar’ front and rear parking sensors, auto lights, wipers and rear view mirror, adaptive cruise control and smart 18” alloy wheels. Then there are the safety features which are comprehensive as we have come to expect from Toyota and include a pre-collision system with pedestrian protection and auto braking, lane departure alert and rear cross traffic warning. The CH-R range starts from £26,245 for an Icon-spec 1.8-litre model up to £33.215 for the top of the range 2-litre Orange Edition.

CARRYING OUT GRANT OF PROBATE YOURSELF CARRIES SERIOUS CONSEQUENCES
Y
ou could be forgiven for thinking that once a will has been written there are no other formalities to administer a person’s estate after they’ve passed away. After all, a will expresses who the deceased wanted to benefit from their estate and how much, or what, each beneficiary inherits. It’s a legal document that’s drawn up by a solicitor with an appointed executor – the person (or persons; you can have more than one) who administers the estate of someone who has passed away) – so you might wonder what probate has to do with it? Well, a will in itself doesn’t grant authority to distribute an estate. It merely tells the executor(s) who gets what. To actually administer the estate – allocate the assets of the deceased person – the executor needs to obtain a grant of probate. This is a legal document which confirms that the executor

has the authority to deal with the deceased person's assets i.e. their money, property, jewellery, cars or any other possessions. In an effort to save on costs, some executors attempt to carry out probate themselves. While there is a whole host of information

about how to do this on the internet, the process isn’t for the faint hearted and there are definite risks involved which could end up costing far more than instructing a solicitor in the first place. If this is something an executor insists on doing, here’s a list of the things they need to be sure of before proceeding: What exactly is in the will? A silly question you may think, but to ensure the wishes of the will are carried out, the executor needs to clearly understand who is getting what. While this may be obvious, the will may stipulate that a beneficiary receives their inheritance at a specific point in time rather than as soon as probate has been granted. Also, is there a trust in the will? If so, this will have its own set of legal instructions which will need attending to.
Is the will actually valid? You’d be surprised how many people forget to sign it. Not only that, would you be able to tell the difference between a valid and an invalid will? Responsibility Being an executor is a responsible job and not one to be taken lightly. It’s vital that the processes and protocols are followed so that the estate is administered correctly, otherwise the executor can become personally accountable for any mistakes. More worryingly, beneficiaries can hold executors liable for things they haven’t done if they cause a loss to the estate through poor administration. Legal speak The law is no stranger to mind boggling jargon and for those who are unfamiliar with legal terminology, it can be difficult waters to navigate. Misunderstanding the terms of a will could also lead to being sued by disappointed beneficiaries. Taxes As with death, the only other certainty in life is tax. Executors are responsible for paying any tax due to HMRC on behalf of the deceased. Inheritance tax is the obvious one that springs to mind, but there could be other taxes waiting to be paid before the remainder of the estate can be distributed. The executor may even need to check the deceased person’s historic records of transactions to ensure that they don’t need reporting to HMRC. A final word of caution on this: failing to settle any outstanding debts could render the executor personally liable. Paperwork Put simply, there could be a lot. While some organisations will release money below certain limits without a grant of probate, most do need authority. Getting hold of all the necessary paperwork from the banks, insurance policies, HMRC etc. can be a daunting task. In terms of properties to be transferred to beneficiaries, it’s the executor’s job to make sure the legal title is transferred correctly or, again, they can be sued for loss to a beneficiary. Seek Advice Probate is complicated and ignorance of the process is no defence in the eyes of the law. It may appear cheaper to ‘DIY’ but if there’s even the slightest doubt about the capability of obtaining and carrying out the duties associated with a grant of probate, it’s always far wiser to seek legal advice. She also appeared in touring productions, all the time adding to her reputation both for acting and as an independent-minded woman. In 1970, a documentary film Doing Her Own Thing about Helen and her time at the RSC was made and shown on TV. Throughout the ‘70s, she was often offered roles that showcased her feisty, passionate nature and she became a favourite in West End theatres. In 1972, she was famously dubbed “the sex queen of the Royal Shakespeare Company” by the BBC’s Michael Parkinson. In 1977 at the RSC in Stratford and the following year at the Aldwych Theatre, she played a steely Queen Margaret in the three parts of Henry VI. In 1979, she was winning praise as Isabella in Measure for Measure.

A NATIONAL TREASURE TO describe actress Helen Mirren as the Queen of British theatre and film would definitely not be far from the truth. After all, Helen, now 75, has played a queen on film a total of six times and Queen Elizabeth II twice. In fact, she is the only actress to play both Queen Elizabeth I and II and won a BAFTA for her role as the latter in the 2006 film The Queen about the aftermath of Princess Diana’s death. 20
Perhaps she was always meant to play such regal roles as, although born into a working class family, her paternal grandfather was a Russian diplomat and her great, great, great, great grandfather was Field Marshal Kamensky, one of the Russian heroes of the Napoleonic wars. Helen Lydia Mironoff – her father changed the family name to Mirren by deed poll – she was the second of three children. Her introduction to acting
Probably inevitably, she made a breakthrough on Broadway and was subsequently twice nominated for Tony Awards as Best Actress. Later, in 2015, she won a Tony as Best Actress playing Queen Elizabeth II in The Audience which also won her an Olivier Award in the US, joining luminaries like Ingrid Bergman, Dame Maggie Smith and Al Pacino. Alongside her enviable theatrical career, Helen has appeared in a large number of films. Early on, these included A Midsummer Night’s Dream, Age of Consent, O Lucky Man! and Caligula. Pivotally, in 1980, she starred with Bob Hoskins in The Long Good Friday which really made film audiences sit up and notice her. Excalibur, 2010, White Nights, The Mosquito Coast and When the Whales Came followed. Her film repertoire was wide: The Madness of King George, Some Mother’s Son, The Prince of Egypt, The Cook,

Her latest film releases include The Good Liar, a crime thriller with Ian McKellen, and a couple more projects held up by Covid look set to enhance her reputation in 2021 and beyond. She has won a whole cabinet-full of awards and in 2014 received the BAFTA Fellowship for lifetime achievement. She was made a Dame Commander of the Order of the British Empire in the 2003 Queen’s Birthday Honours List for her services to drama. In 2014 she received the BAFTA Fellowship for lifetime achievement The Thief, His Wife and Her Lover. But TV also beckoned and in 1991, she took on the iconic role of Detective Chief Inspector Jane Tennison in Prime Suspect. Tennison, one of the first females at her rank in the Greater London Metropolitan Police Service, had been created by writer Lynda La Plante. Tennison rises to the rank of Detective Superintendent, confronting institutionalised sexism in the police force while solving complex crimes. The no-nonsense role was made for Helen Mirren who put her special stamp of acting excellence on Tennison. The series ran until 2006 and, still today, re-runs reveal her consummate skills in both acting and holding an audience – even one in its millions and at home.
As her reputation grew, she was offered more and better roles, sometimes glamorous, sometimes dowdy. In 2001 she appeared in Gosford Park with Maggie Smith and took a starring role in the inspirational Calendar Girls in 2003 with Julie Walters and a cast of actresses that resembled a Who’s Who of the nation’s best. The Clearing, Raising Helen and Shadowboxer continued to enhance Helen’s glittering career. In 2006, she took on the role of Queen Elizabeth II in the film The Queen, providing a mesmerising performance of the monarch at a particularly tough time for the royal family and the nation. No-one was surprised when it swept the awards’ board.
Her private life has often mirrored the fascination of her on-screen roles. She lived with actor Liam Neeson for four years after meeting him on the set of Excalibur in 1981 and met her husbandto-be Taylor Hackford when he directed her in White Nights in 1985. They married later in the Scottish Highlands with Hackford dressed in a traditional Scottish tartan kilt. She is stepmother to Hackford’s two children but has never had children of her own, reportedly stating:
“I am so happy that I didn’t have children.Well, you know, because I’ve had freedom.” She is plainly her own woman, a brilliant role model for older females and regularly speaks her mind. When she became a Dame, she stated:
“In England, it’s a big deal. I do feel like it’s a great honour. “But I had to think about it quite seriously for a couple of weeks. It does sort of squash you into the establishment thing. In the end, my base feelings got the better of me. I succumbed to pride.” Helen Mirren is obviously making every decade of her life as memorable as possible, and still plans to – for which her many fans around the world are eternally grateful. EQUITY RELEASE? THESE days we have to look at a variety of ways to raise cash and ensure that our future will be secure and one popular way for anyone over 55 to do just that is via equity release, which offers the chance to access the cash – the equity – tied up in your home. It can be as a lump sum or in several small amounts, or a combination of both. There are two equity release options: lifetime mortgage and home reversion. The Money Advice Service explains that a LIFETIME MORTGAGE means that you take out a mortgage secured on your property, provided it is your main residence, while retaining ownership. You can choose to ring-fence some of the value of your property as an inheritance for your family or you can choose to make repayments or let the interest roll-up. The loan amount and any accrued interest is paid back when you die or when you move into long-term care. 22
Most people who take out equity release use a lifetime mortgage. Usually you don’t have to make any repayments while you’re alive and interest “rolls up” (unpaid interest is added to the loan), meaning the debt can increase quite quickly over a period of time. However, some lifetime mortgages do now offer the option to pay all or some of the interest. Some will let you pay off the interest and the capital. In the same way ordinary mortgages vary from lender to lender, so do lifetime mortgages, and if you’re looking at this option it’s worth knowing that the minimum age for this is usually 55. As we’re now all living longer, the earlier you start the more this is likely to cost in the long run. The average borrower in their late 60s can usually borrow around 35% of the value of their home, but how much can be released is dependent on your age and the value of your property. The percentage typically increases according to your age when you take out
the lifetime mortgage, while some providers might offer larger sums to those with certain past or present medical conditions. Many lenders offer interest rates which are fixed or, if they are variable, have a “cap” or upper limit which is fixed for the loan’s duration. Check whether the product has a “no negative equity guarantee” This means that, when your property is sold and agents’ and solicitors’ fees have been paid, even if the amount left is not enough to repay the outstanding loan to your provider neither you nor your estate will be liable to pay any more. Consider whether you can pay none, some or all of the interest. If you can make repayments, the mortgage will be less costly. However, with a lifetime mortgage where you can make monthly payments, the amount you can repay might be based on your income. Providers will have to check you can afford these regular payments.
Look at whether you can withdraw the equity you’re releasing in small amounts, as and when you need it, or whether you have to take it as one lump sum. The advantage of being able to take money out in smaller amounts is you only pay the interest on the amount you’ve withdrawn. If you can take smaller lump sums, check if there is a minimum amount. It’s also worth finding out if you have the right to move to another property, subject to the new property being acceptable to your product provider as continuing security for your equity release loan, as different lifetime mortgage providers might have slightly different thresholds. A HOME REVERSION involves you selling part or all of your home to a home reversion provider in return for a lump sum or regular payments.You have the right to continue living in the property until you die, rent-free, but you have to agree to maintain and insure it. You can ring-fence a percentage of your property for later use, possibly for
inheritance - the percentage you retain will always remain the same, regardless of the change in property values, unless you decide to take further cash releases. At the end of the plan, your property is sold and the sale proceeds are shared according to the remaining proportions of ownership. You will get a lump sum or regular payments – normally between 20 per cent and 60 per cent of the market value of your home, or the part you sell. With home reversions, it’s worth checking whether or not you can release equity in several payments or in one lump sum and the minimum age at which you can take out a home reversion plan. Some providers insist you’re at least 60 or 65 before you can apply. Keep in mind the percentage of the market value you will receive. This will increase the older you are when you take out the plan but might vary from provider to provider. Also check whether you have the right to remain in your property for life or until you need to move to long-term care, provided the property remains your main residence
and you abide by the terms and conditions of your contract. Again, check whether you have the right to move to another property, subject to the new property being acceptable to your product provider as continuing security for your equity release loan and whether the product has a “no negative equity guarantee”.You will also need to know what level of maintenance you’ll be expected to carry out and how often your property will be inspected – this could be every few years. Overall, equity release might seem like a good option if you want some extra money and don’t want to move house, but it’s worth bearing in mind that equity release can be more expensive in comparison to an ordinary mortgage. It’s also worth considering any additional changes taking out equity release could make to existing arrangements, with the potential to lose means-tested benefits being key among them. It’s also worth considering involving your family throughout the process, as any equity taken out of the home will impact their inheritance later down the line.

PLANTS MAKE PERFECT PRESENTS GARDENING WRITER JULIA HEATON HAS SOME TIMELY FESTIVE ADVICE ON LIVING GIFTS One thing’s for sure – we need Christmas colour and cheer more than ever this year. Houseplants are a wonderful way to show your love and, given the right care and attention, they will continue to brighten the dark days of winter well into the new year. The trouble is that we can be spoilt for choice when faced with the fabulous displays designed to tempt us at garden centres and supermarkets. So where to start? Well, to help you choose the right plant consider the person you are giving it to. Do they have the ideal place to display it? How green-fingered are they and how much time are they likely to devote to caring for the plant? Once you’ve done this, you’ll know exactly which one to go for. To make the decision easier here’s a few of the festive plants you’re likely to come across and some top care tips that will come in handy whether you’re the gift-giver or lucky recipient. Poinsettia (Euphorbia pulcherrima) The bright scarlet bracts (modified leaves) of this beautiful bushy plant make it as much a part of the festivities as mince pies and mulled-wine. Go for one with
dark green foliage all the way down the stems and check that it has unopened bead-like flowers at the base of the bracts. Then keep it well wrapped on the way home (try to buy one with a protective sleeve that hasn’t been in a supermarket doorway) as poinsettias hate cold draughts and could suffer leaf drop otherwise. This also means it can be a bit fussy about where it’s positioned. So, a cool, bright room, out of direct light, where a stable temperature of between 13-16°C (5560°F) can be maintained is ideal. A southfacing windowsill where the window is kept shut is a good option, moving the plant into the room at night. It will need watering thoroughly and not again until the soil feels dry, then misting every few days to keep the colourful bracts from dropping. Feeding should be every couple of weeks or a specialist drip feeder low in nitrogen and high in potassium is an alternative. Long term care: With the right treatment a poinsettia will reward with anything from two to four months of colour. Gardeners may enjoy pruning,

Air circulation needs to be good so it should be sat somewhere cool and light like an unheated conservatory, out of direct sun. To keep it thriving give a fortnightly low-nitrogen feed, deadheading flowers and yellowing leaves as you go. Water when the soil becomes just about dry to the touch, draining away surplus to keep stem bases and the crown dry. Alternatively stand the plant in a bowl of rainwater or sink of soft water, where it can take up what it needs, then allow to drain thoroughly. Reduce watering as soon as flowering stops in April. Long term care: Kept dry when dormant cyclamen can be brought back to life in late August/ September by either repotting or a top dressing of fresh compost and resuming watering. Give to: A friend who wants to add a welcoming touch to a cooler hallway. Indian azalea (Rhododendron simsii) With their frilly blooms and small leaves these plants are definitely a Christmas favourite and offer an array of colours. White, pink, purple, red and orange are the ones you’re most likely to come across but bi-coloured white ones are worth hunting down too. Cool rooms are a must. Ensure the temperature is below 16°C (61°F) – kept too warm and the flowers will fall. Soft, 27

filtered light is best, so no sitting in direct sunlight, and watering is crucial. Do it at least three times a week to allow the lower roots to gain the benefit. Compost should be wet, not moist, and never allowed to dry out. Use rainwater if possible as it offers the acidity this plant likes. Then give it a liquid feed every week during flowering and every two weeks after that.
it will be happy in daytime temperatures of between 19-30°C (66-86°F) and 1619°C (61-66°F) at night. Keep compost moist, if possible with tepid rain-water or boiled and cooled tap water, tipping out any excess collecting in the saucer and avoiding leaves as this can cause rot. It will also benefit when sat over a tray of damp gravel for humidity. Then give specialist orchid feed once or twice a month in the cold season and weekly during the growing season. Long term care: Once flowers have faded simply cut back to a lower stalk node (bud) for more blooms. If this doesn’t happen then drop the temperature by 5°C (8°F) for a few weeks to nudge the plant into flowering. Re-pot when the roots have filled the pot, using bark compost and a clear plastic container.

Christmas cactus (schlumbergera) This great value tropical cacti, so called because it flowers from late November through January, offers flowers ranging from pale pink through to orange and red. Pop it in a bright place where it can benefit from temperatures of 18-21°C (65-70°F) and occasional direct winter sunlight, but keep away from the drying air of radiators. Allow the top half of the compost to dry out between watering and create humidity around the plant, either by misting its leaves daily during flowering or standing it on a tray of moistened pebbles. Use a specialist drip feeder, deadhead to encourage more blooms and try not to move the plant during flowering as flowers may drop.

CREATING A COSY HOME THIS WINTER MORE time to become acquainted with our homes this year is likely to have a knock-on effect this Winter when we look at fuel bills vs keeping cosy.
According to energy and solutions provider E.ON, 49 per cent of Brits have become more concerned with having sustainable solutions since lockdown and subsequent coronavirus restrictions made us spend more time at home. Finding ways to make your home warmer when the nights draw in will be reflected in your regular bills this Winter so it’s well worth taking a good look at every aspect of your home’s energy. Architectural designer and TV presenter Charlie Luxton’s clever ideas for a more
sustainable long-term include switching to an ENERGY provider with electricity backed by 100 per cent renewable sources, like E.ON3. For good consumption, install a smart meter. They come with an in-home display that shows you how much energy you are using. “This is a great way to track your energy so you can adapt and become more efficient,” says Charlie. “Be warned – watching the little screen can become addictive!”
Technology has also given us LED bulbs so look at your LIGHTING and go for any of the wide range of light fittings that no longer give a cold harsh light. “Every one of your bulbs should be replaced with an LED bulb (unless your lighting fixture says you shouldn’t) as they are most energy efficient and hep you save on your energy bills,” states Charlie, adding: “But be sure to turn off the lights when not in use.” On WATER usage, he suggests considering changing your showerhead to a low-flow aerating one. “These add air into the water flow and can significantly reduce the amount of water used in a shower without impacting on your enjoyment,” explains Charlie. “To also help reduce water waste at home, change your loo cistern to a low-flush version or if you have an older loo you can retrofit a dual flush.”

For longer term results, it’s important to have the right INSULATION to ensure you are effectively heating your home all year round. “In a typical home, the biggest area of heat loss is through the walls,” states Charlie.
WINDOWS are an obvious area for heat loss. So, if you’re replacing windows, go for high-performance triple glazing where possible. Says Charlie: “These will help to insulate your home, be draught-free and will feature noise reduction qualities.”
“By insulating externally or internally – either of which may have a slight impact on the size of some rooms – you will transform the warmth and comfort of your home.”
Generate your own low-carbon energy for your home by considering installing PV (photovoltaics) panels on your roof. SOLAR PANELS use the sun’s energy to power your home, “helping you to be more sustainable while also helping the planet,” states Charlie. “They are especially useful if you’re planning on investing in an electric vehicle or home battery storage.”
He also advises 300mm of loft insulation as “a great starting point – this is a cheap and easy solution to efficiently retaining warmth.” Modern houses may have 50mm of insulation but at least 100mm of wall insulation is optimum.
Take a good look at your BOILER. If it’s more than 12 years old, Charlie reckons “it’s likely time to consider a replacement.

New boilers are much more energy efficient, meaning there is less waste coming from your home which benefits the planet and your wallet.” Heat can often be lost from CRACKS and SEALS around your home so seal up all the unwanted cracks and holes around your home as this is a major culprit of heat loss. “Look around windows, doors, floors, walls and roofs,” he says. “These are key areas that ned to be sealed and to maintain proper levels of ventilation. To create an even healthier home, you could consider installing a Mechanical Ventilation Heat Recovery (MVHR) to clean pre-warmed air to your living spaces and extract any stale or damp air.”

As well as major changes, there are plenty of minor ones you can make to your home to be warm and cosy. Using RUGS on wooden and tiled floors not only adds the illusion of warmth but actually makes a room warmer – just stand on it in your bare feet to test that theory! Invest in thick CURTAINS, preferably lined, to help keep the heat in and the cold out. They also look cosier, especially curtains that run to the floor – unless they
sizes and if there is only one addition to your home this Winter, a new central fire can make a fantastic difference. Ensure DOORS fit properly. Sometimes, simply re-hanging them helps but check you don’t need draught excluders to keep the heat in and the cold air out. Investing in a new front and/or back door may well be enough to dramatically alter your home heating anyway and stop the wind whistling through your home!

You can now buy all kinds of fires that mimic the genuine fuel fire (although they are still fabulous) in various shapes and

Since going on his Great British Adventure in 2019, James Martin has taken to the road again (and the sea and skies, too!) to bring us more of his favourite stunning recipes.
STEAK WITH WHISKY-BRAISED ONIONS AND MUSTARD SAUCE Every chef becomes obsessed with certain ingredients at some point in the year and right now, my obsession is onions.These, combined with steak and a simple mustard sauce, were a favourite dish of Johnny on Camera Two when we were filming the show. SERVES 2 4 onions, peeled 50ml whisky 600ml beef stock 100g salted butter 1 garlic clove, crushed a few pine sprigs, washed and patted dry 1–2 tablespoons olive oil sea salt and freshly ground black pepper 400g rump steak, 5cm thick 150g long-stem broccoli FOR THE SAUCE 2 tablespoons Scottish grainy mustard ½ teaspoon English mustard 2 tablespoons salted butter 25ml whisky 75ml double cream
If using, light your BBQ. When the coals are silvery in colour, it’s ready to cook on. Place the whole onions in a pan with the whisky and beef stock. Cover and bring to the boil then reduce the heat slightly and simmer for 40 minutes. Use a slotted spoon to lift the onions out of their cooking liquor and set aside to cool a little. Reserve the liquor. Meanwhile, place the butter, garlic and pine sprigs into a separate pan and place over a low heat to melt the butter. If not cooking on the BBQ, preheat a griddle pan over a high heat. Cut the onions in half horizontally, then drizzle over the oil and season well. Cook on the griddle pan or on the BBQ, flat-side down, for a couple of minutes until charred. Lift onto a plate and set aside. Season the steak all over, then brush with some of the melted pine butter. Cook on the hot griddle pan or on the BBQ for 2 minutes, then brush with more butter, flip over and cook for another 2 minutes. Add the long-stem broccoli to the pan or BBQ for the last 2 minutes of cooking, again brushing with pine butter. Lift the steak onto a boar and rest for 4 minutes. To make the sauce, put both types of mustard in a pan with 1 tablespoon of the butter and 200ml of the reserved onion cooking liquor. Pour in the whisky, then flambé to burn off the alcohol, tipping the pan gently and carefully to ignite. Place over a medium heat and simmer until the liquid has reduced by half, then stir in the cream and season well. Whisk in the remaining 1 tablespoon of butter to finish. Slice the steak into 3-cm thick slices and place on a platter with the broccoli, then spoon over the sauce. Pull the onions into petals and dot around before serving. ISLES OF SCILLY POLLOCK WITH A BEAN AND TOMATO STEW Pollock is deemed the poor man’s haddock or cod, which is sad in a way, as there is plenty of it and it’s a great-tasting fish. Slightly salting it for ten minutes before cooking will firm it up and makes it easier to cook with. I used some of the great sea salt that is produced all around Cornwall for this and created a simple bean and tomato stew to go with it. SERVES 4 4 x 150-g pollock fillets, skin on sea salt and freshly ground black pepper 50g salted butter FOR THE STEW 1 tablespoon olive oil 2 garlic cloves, sliced 1 shallot, diced 1 small fennel bulb, half diced and half thinly sliced 12 cherry tomatoes, halved 2 large heritage tomatoes, diced 50g Sunblush sundried tomatoes in oil, chopped 50ml dry white wine 400g can haricot beans, drained small handful of rock samphire small handful of sea beets or baby spinach 15g salted butter
Put the fish onto a tray and sprinkle over 2 tablespoons of sea salt. Leave for 10 minutes, then wash off and pat dry. To make the stew, heat a non-stick saucepan over a medium heat. Pour in the oil, then stir in the garlic, shallot and all of the fennel and cook for 2–3 minutes until starting to soften. Add all the tomatoes, along with a spoonful of oil from the sundried tomatoes, and stir everything together. Pour in the wine, bring to the boil, then stir in the beans and cook gently for 10 minutes. To cook the fish, heat a non-stick frying pan over a medium heat until hot, then add the 50g butter. Once the butter is melted and foaming, slide the fish into the pan, flesh-side down. Cook for 2 minutes, then flip over and cook for a further 2 minutes. Season on each side. Finish the stew by stirring through the samphire, sea beets or baby spinach and butter. Taste to check the seasoning, adding more salt and pepper if needed. To serve, spoon the stew onto a large warm platter and top with the fish.

WELSH LAMB RAGOUT WITH PENNE I genuinely meant it when I said during our filming in the Brecon Beacons that it’s tempting not to bother going abroad on holiday when we have places like this on our doorstep.The scenery around Wales is spectacular, it was one of my favourite locations on the whole trip, and I loved it so much that I have been back there four times since filming. SERVES 6–8 25g salted butter 3 garlic cloves, chopped 1 onion, diced 2 carrots, diced 1 leek, diced 1 celery stick, diced 300g lamb mince 200g lamb leg, diced into 1-cm cubes 1 tablespoon tomato purée sea salt and freshly ground black pepper 500ml lamb or beef stock 100ml red wine 200g canned chopped tomatoes 2 bay leaves 400g fresh penne pasta large bunch of basil leaves, roughly torn 50g parmesan
Heat the butter in a large non-stick saucepan over a medium heat. Once the butter is foaming, stir in the garlic, onion, carrots, leek and celery and cook gently for around 5 minutes until starting to soften. Increase the heat to high, then add all the lamb and cook for 2–3 minutes, stirring everything together and using a wooden spoonto break down the mince. Stir in the tomato purée, season well, then pour in the stock, wine and chopped tomatoes. Give everything a good stir, then tuck the bay leaves into the mixture. Leave to bubble over a high heat for 20–25 minutes, stirring occasionally, until it reduces by around half. Bring a large saucepan of water to the boil, add a good pinch of salt, then add the pasta and cook for 2 minutes. Use a slotted spoon to lift the pasta out of the pan and transfer it to the pan with the sauce. Cook for a further 2 minutes, then stir in the basil and season. Divide between pasta bowls, then grate over the parmesan and serve.

HEALTHY FESTIVE FLAVOURS Doctor and nutritionist, Dr Michelle Braude shares a healthy meal packed full of festive flavours… The festive period isn’t normally associated with healthy eating, but Dr Michelle Braude says it doesn’t have to be this way and that many of the foods we often associate with Christmas and NewYear are actually very healthy if used in the right way. ‘You just have to be creative’ she explains.‘Below I’ve used some popular festive flare to create a flavoursome feast which uses some of my favourite festive ingredients. Dairy-Free Creamy Cauliflower Soup You’ll have a hard time believing this soup is so low in calories and fat, and totally dairy free. Ingredients
THE ULTIMATE SNACK
Chocolate Hazelnut Clusters Ingredients
Makes approximately 20 • 340g 90% cacao dark chocolate • 226g hazelnuts (or other nuts) • Pinch of salt (if using unsalted nuts) • Xylitol to sweeten
Method Line a large baking tray with baking paper or foil and set aside. Melt the chocolate in a heavy-based pan over a low heat. Keep stirring, making sure you don’t burn the chocolate. As soon as the chocolate has melted, turn off the heat. Add the nuts to the melted chocolate, and xylitol to sweeten to your taste, and stir well until they are fully mixed in and coated. Spoon heaping tablespoons of the mixture onto the prepared baking tray. Allow to cool. Place in the fridge and allow to set for several hours. Remove from the baking paper or foil.
Serves 8 • 1 tbsp. olive oil • 900g frozen cauliflower • 1 large onion, peeled and chopped • 2 garlic cloves, peeled and crushed • 1½ litres of vegetable stock (made from MSG-free vegan stock powder) • 1 cup unsweetened almond/ cashew milk • 1 tsp. sea salt • Freshly ground black pepper, to taste • Truffle oil, to drizzle • Pumpkin seeds or za’atar to garnish, optional Variation: stir through a tsp. of ground turmeric and a sprinkling of curry powder for a delicious twist on this recipe!
Method Heat the oil in a large saucepan and cook the onions and garlic until translucent. Add the cauliflower and saute for several minutes until cauliflower softens. Pour stock over and simmer until the cauliflower is soft (around 30-40 minutes). Blend with a hand-held blender. Season with black pepper to taste and stir the almond/cashew milk through. An incredibly versatile recipe, this salad can be served alongside the salmon, but is also substantial enough to make a delicious light lunch or dinner on Boxing Day or in early January. Quinoa is packed with protein, so with the heart-healthy fibre-filled pistachio nuts, avocado and pomegranate seeds, this salads ticks all nutrition boxes.
Grilled Salmon & Baby Potatoes on a Bed of Greens & Barley Ingredients
Serves 4-6 • 1 whole side of salmon fillet (around 1kg), with skin removed • 1kg baby potatoes, washed and cut in halves • 8 cups mixed greens • 250g cooked barley (or brown rice) • 1 head of garlic • 6 tablespoons olive oil divided • ½ teaspoon dried rosemary • ½ teaspoon salt • ¼ teaspoon black pepper • 3 tablespoons low sodium soy sauce • ½ teaspoon dried mixed herbs • A third of a cup of balsamic vinegar • Salt & pepper, to taste • Balsamic glaze – for drizzling
Method For the salmon: Heat oven to 200°C. Toss baby potatoes with 2 tablespoons olive oil, rosemary, salt and black pepper. Cut a 1/4 off the head of garlic horizontally, and wrap it in foil. Place potatoes and garlic on a parchment lined baking tray and roast in the oven for 40 minutes. Coat the salmon with 2 tablespoons olive oil, soy sauce, dried mixed herbs and pepper. Place on another parchment lined baking sheet and place in the oven 20 minutes before the potatoes are ready. Roast salmon for 18-20 minutes. For the dressing: Blend together the balsamic vinegar, remaining 2 tablespoons olive oil, salt and pepper, and squeezed out roasted garlic. If too thick add a bit of water. Complete the dish: Combine a few tablespoons of dressing with the cooked barley, and the rest with the mixed greens. Arrange greens on a platter. Sprinkle the barley over the greens. With a large spatula place the salmon on the greens and barley and place the baby potatoes all the way around the salmon. Drizzle balsamic vinegar over the salmon to decorate. Variation: You can also decorate with pomegranate seeds, flaked almonds or chopped spring onion 50
Quinoa Salad with Avocado, Mango and Pomegranate
Ingredients
Serves 2 as a main course, 4 as a side dish • 170g uncooked red quinoa (or regular white quinoa) • 1 ripe avocado, diced • 1 small ripe mango, peeled and diced • 80g pomegranate seeds • 20g pistachio nuts, shelled • 4 spring onions, thinly sliced • A few handfuls of spinach or salad leaves
Method Cook the quinoa according to the packet instructions. Allow to cool slightly. Put all the salad ingredients in a large bowl. Whisk together the dressing ingredients. Add to the salad, and toss well to coat.

Guilt-free Chocolate Protein Pudding
Using fat free yoghurt and xylitol (a natural sugar alternative), instead of sugar, you won’t believe these delicious puddings are actually healthy when you taste them. Ingredients
Serves 1 • 170g 0% Greek yoghurt • 1 tbsp unsweetened cocoa powder • 1 tbsp. xylitol (available as Total Sweet in stores) • ¼ tsp vanilla essence • Toppings (optional): blueberries, dark chocolate chips, sliced almonds, shredded coconut, chopped walnuts • Agave or maple syrup – to drizzle
Method Mix all the ingredients together well in a mixing bowl, until the cocoa powder is fully mixed in, with no lumps left, and a smooth, puddinglike consistency is reached. Spoon into a serving bowl. Top with toppings of your choice. Drizzle agave or maple syrup. To make the pudding more ice-cream like, you can pop it in the freezer for 30 minutes before tucking in.

TRADITIONAL CHRISTMAS RECIPES REIMAGINED Butternut and Mushroom Wellington Ingredients • • • • • • • • • • • • •
Neck end of a large butternut squash, about 12.5cm long 3 tbsp. olive oil For the mushroom layer: 2 banana shallots finely chopped 750 g mixed mushrooms, finely chopped 4 garlic cloves, crushed small handful thyme sprigs, leaves picked and roughly chopped 2 tbsp. red miso paste 150 g cashew nuts 150 ml vegetable stock Plain flour, to dust 600 g block puff pastry 2 tbsp. milk. to glaze
Method Preheat oven to 200C (180C fan) gas mark 6 and line a baking sheet with baking parchment. Peel the squash neck and slice evenly in half lengthways. Lay cut-side down on prepared sheet and brush with 1tbsp oil. Season and roast for 1 ¼ - 1 ½ hr, until tender. Set aside to cool. Make mushroom layer. Heat remaining 2tbsp oil in a large frying pan over medium heat and cook shallots for 5min, until softened. Turn up heat to high and add mushrooms. Cook, stirring occasionally, for 12-15min. until any liquid released by mushrooms has evaporated and they are golden brown. Add garlic, thyme and miso and cook for a further 2min. Remove from the heat. In a food processor or using a stick blender, blend cashews and stock until smooth. Stir this into mushroom mixture. Check seasoning and set aside to cool. To assemble, line baking sheet with fresh baking parchment. Lightly flour a work surface and roll out 1/3 of the pastry to a 30.5 x 15cm (12 x 6in) rectangle. Spread over mushroom mixture leaving a 1cm (1/2in) border around the edges. Lay on roasted butternut halves making sure they join up.

500g carrots 2 tbsp olive oil 3 tbsp clear honey 1 tbsp fresh lemon juice 3–4 sprigs fresh thyme Maldon salt and freshly ground black pepper
Method Preheat the oven to 200C/ 180C Fan/Gas 6. Trim the carrots and peel, if you prefer. Cut any particularly large carrots in half lengthways. Place on a large baking tray and pour over the olive oil. Season with salt and pepper, toss well and roast for 15–25 minutes, or until almost tender and lightly browned. (The time will depend on how thick the carrots are.) Whisk the honey and lemon juice together. Take the tin out of the oven and drizzle over the honey and lemon mixture. Pick the thyme leaves off the sprigs and scatter over. Toss lightly and return to the oven for a further 8–10 minutes, or until the carrots are tender and glossy.
Roll out remaining pastry as before until large enough to cover the assembled filling. Lay over the filling, trim edges and crimp to seal. Chill for 30min. Reheat oven to 200C (180C fan) mark 6. Brush Wellington with soya milk and cook for 50min-1 hr, until golden brown and crisp. Leave to rest for 1Omin before transferring to a board or plate. Serve in slices.

Vegetarian Sausage Rolls Ingredients
• 1 pack of vegetarian sausages • 1 pack of buttery puff pastry, ready rolled • grated Parmesan • Maldon Salt • 1 egg yolk mixed with a little milk
Method Fry the sausages until nicely brown, but don’t overcook them. Set aside to cool. Roll out your pastry and cut into six squares. Wrap each square around one vegetarian sausage and lay on a baking tray with the fold down. Brush with your egg mixture and sprinkle over the parmesan and Maldon Salt. Bake in the oven at 180C fan for around 25 minutes or golden.

1 or 2 lime wedges Maldon Salt 3 parts of grapefruit juice 3 parts of blood orange juice 1 part of vodka Frozen red currants, springs of Rosemary for garnish
Honey Roasted Parsnips Ingredients • • • • • •
500g parsnips 1 tbsp flour 1 tbsp honey 2 tbsp sunflower oil 2 tbsp butter Maldon Salt
Method Top and tail 500g parsnips, cutting any larger ones in half lengthways, then put in a large saucepan, cover with salted water, bring to the boil and cook for 5 mins. Drain in a colander and let them steam-dry for a few mins. Heat oven to 190C/170C fan/ gas 5. Sprinkle 1 tbsp flour and 1 tbsp honey over the parsnips and toss to coat. Put the parsnips in a roasting tin with 2 tbsp sunflower oil, 2 tbsp butter and seasoning. Roast for 40 mins, turning halfway, until golden. Add a pinch of Maldon Salt to serve. Method Run the lime wedge around your cocktail glasses and dip into the Maldon Salt. Combine all the parts in a cocktail shaker with ice. Shake well and strain into your prepared glasses. Garnish with the frozen berries and a spring of Rosemary.
Brussel Sprouts Ingredients • • • • •
1kg Brussels sprouts, trimmed 6 rashers smoked streaky bacon, cut into bite-sized pieces 200g vacuum-packed chestnuts 50g butter Maldon Salt
Method Bring a large pan of salted water to the boil, then tip in 1kg trimmed Brussels sprouts. Once back to the boil, cook for 5 mins. Drain, run under the cold tap until cold, then drain again. Heat a large frying pan, add 6 rashers smoked streaky bacon, cut into bite-sized pieces, and gently fry for 10 mins until crisp and golden. Tip out of the pan, leaving the fat behind, then add 200g chestnuts and fry over a high heat for about 5 mins until tinged. Tip out of the pan. Add the Brussels sprouts to the pan with a splash of water, then cover and finish cooking over a medium heat for about 5 mins, stirring now and again, until just tender. Uncover, turn up the heat, then add most of the 50g butter and sauté the sprouts for 2 mins more. Tip in the bacon and chestnuts, season generously with Maldon salt and pepper, then serve with the last knob of butter on top.

INFORMATION ON LASTING POWERS OF ATTORNEY (LPA) Becoming physically or mentally incapable of looking after your own affairs is a realistic issue for people of all ages. A Lasting Power of Attorney is a document that you can put in place to be used during your lifetime which enables you to appoint one or more person you know and trust to act as your Attorney(s) to take control of, or assist you with, your financial or personal welfare decisions. This is useful where you are unable to manage your own affairs, whether temporarily or permanently, due to illness, physical impairment or mental incapacity. It allows your Attorneys to make decisions on your behalf, including if in the future you were to lack mental capacity to make decisions for yourself.

There are two types of Lasting Powers of Attorney, one for financial affairs and the other for health and welfare decisions. You cannot combine the two documents. You can choose to put in place one or both documents. A Lasting Power of Attorney for Health and Welfare gives your Attorney the authority to make decisions with regard to issues such as life sustaining treatment or the decision to accept or decline particular medical treatments. A Lasting Power of Attorney for Health and Welfare can only be used when you lack the mental capacity to make decisions for yourself. A Lasting Power of Attorney for Property and Affairs allows your Attorneys to decide
how your financial affairs are managed. The Lasting Power of Attorney will allow the people you choose to deal with your finances, pay your bills, make decisions about matters such as opening, closing and managing bank/building society accounts, claiming, receiving and using your benefits, pensions and allowances and even assist in selling your house if required. A Lasting Power of Attorney for Property and Affairs can be used both while you have mental capacity and if you were to lose mental capacity in the future. To make a Lasting Power of Attorney you need to decide who to appoint as your Attorneys to act on your behalf. You can choose members of your family, friends or a professional person such as a solicitor or accountant or indeed a combination of the two. However, professional Attorneys are likely to charge for their services. Your Attorneys should be people who have sufficient skills to manage your financial affairs. If you are appointing two or more Attorneys, you can authorise them to act either jointly (meaning they must both act together
and cannot act individually); jointly and severally (meaning they can act together or individually) or jointly in some matters and jointly and severally in other matters. Your Attorneys cannot use the Lasting Power of Attorney until it has been registered with the Office of the Public Guardian, who will make sure your Attorneys are aware of their duty to act in your best interests.The Office of the Public Guardian recommends that you name at least one person to be notified of the registration of your Lasting Power of Attorney. If the people you notify have concerns regarding the Lasting Power of Attorney they can raise them with the Office of the Public Guardian. This is a safeguard for you so the people you choose to be notified need to know you well enough to be able to raise concerns if appropriate.The people notified can be family or friends, neighbours or health or social care workers that know you well. Your attorneys cannot do whatever they like, they must follow certain guidelines. These include the following:

A Clinical Dental Technician (CDT) is a qualified dental technician that has under gone further Education and Training in areas such as Medical Emergencies Cross Infection Control and Oral Pathology (cancers and anomalies) to name just a few sections that make up the Diploma in Clinical Dental Technology as Awarded by the Royal Collage of Surgeons (RCS). It is this qualification that allows the clinicians at Bolton Denture Centre to be able to be registered and regulated with the General Dental Council (the official body for protecting the public with regards to 56
dentistry) and carry indemnity insurance. It is this qualification, which means that only Dentists and Clinical Dental Technicians are the only Dental Professionals permitted to supply dentures direct to the public. A dental technician is not qualified to supply a denture directly to the public. However, despite this being an act of Mal practice many technicians will still practice illegally without informing the patient that they are not qualified. If you are unsure if your denture provider is qualified; ask them for their GDC registration number, then contact the GDC to see if they are registered not just as a dental technician but as a CDT. DENTURES NEED REGULAR SERVICING Dentures are in constant use almost 24 hours a day, 365 days a year. They are also in a pretty hostile environment in the mouth, being attacked by strong acid, bacteria, hot, cold and spicy food. Denture material absorbs liquids and food odour. Daily cleaning is essential as well as professional ultrasonic cleaning in a dental laboratory at least once a year. Due to constant bone resorbtion dentures will become loose sooner or later. Loose dentures will increase damage to the gums and bone structure, and increase the risk of breakage. Have them re-lined as soon as possible to get a good fit. It only takes a day or two. Have your dentures inspected by a Clinical Dental Technician at least every two years, or more frequently if necessary. YOUR DENTURES NEED ATTENTION 1. When they become loose. 2. The National Breast Screening Programme invites all women aged between 50-71 every three years for breast screening. Each GP Practice is screened in turn and all eligible women registered with a GP receive a letter asking them to book their appointment. Please don’t ignore this letter. Breast screening saves lives.
Women over 70 A national decision was taken due to the impact of COVID-19 and therefore breast screening self-referrals for women aged over 71 are currently suspended. Please continue to be breast aware however, and contact your GP if you have any concerns.
What is Breast Screening (a mammogram)
Common signs and symptoms to look out for are:
a lump or swelling in the breast, upper chest or armpit – you might feel the lump but not see it
a change to the skin, such as puckering or dimpling
A change in the colour of the breast – the breast may look red or inflamed
A change to the nipple, for example it has become pulled in (inverted)
A rash or crusting around the nipple
Any unusual liquid (discharge) from either nipple
Changes in size or shape of the breast
On its own, pain in your breasts is not usually a sign of breast cancer. But look out for pain that’s there all or most of the time.
A mammogram is a breast X-ray. During your appointment, a Mammographer (an expert in taking breast X-rays) will ask you to undress to the waist and stand in front of the mammogram machine. Your breasts will be placed one at a time on the X-ray machine. The breast will be pressed down firmly on the surface by a clear plate. At least two pictures of each breast will be taken, one from top to bottom and then a second from side to side to include the part of your breast that extends into your armpit. You will need to stay in this position while the X-ray is taken. You may find it uncomfortable but it only takes a few seconds and the compression doesn’t harm the breasts.

When to contact your GP The earlier breast cancer is diagnosed, the better the chance of successful treatment. So it’s important to check your breasts regularly and see your GP if you notice a change.

Noticing an unusual change doesn’t necessarily mean you have breast cancer, and most breast changes are not because of cancer, but it’s important to get checked by your GP. Men can get breast cancer too. Most men don’t realise that they need to be chest aware but it is important to check themselves regularly. Men should contact their GP if they notice or feel anything unusual.
