sponsored by and booked the beautiful Arosmari Village Hotel in Western Crete, through Simpson Travel, who have several properties in Europe with a no-child policy. It was a good decision! Small cottages dotted around charming grounds, with a pool, hammam, spa and restaurant for breakfast, ensured privacy and quiet. Having always been busy chasing around after children, sun cream and hats on, water packed, snacks at the ready, it was a relief to pick up ourselves, a beach towel and head out with little effort. The village was small and sweet, with a few restaurants serving traditional food and pleasingly well priced drinks in the square. We chatted to other holidaying couples, who were, without dissent, rather revelling in this time together, child-free.

HOLIDAYS JUST FOR ADULTS By Jennie Carr from Silver Travel Advisor Over the last couple of years, we have enjoyed several holidays and short breaks on our own. Yes, we have travelled without our lovely children, all of whom have had the decency to leave home, or truth be told, head for establishments of learning around the country. So we have intermittent returnees, with bags of washing, boxes of books and objects of little discernible use to my eyes, that cannot be parted with! And we do still enjoy our holidays as a family however the trips a deux are rather a highlight, unexpectedly so in some ways!

Close to Home It all started with a break at Thoresby Hall in Nottinghamshire, one of Warner Leisure Hotels 13 splendid properties. Most determinedly for the over 21s, and hazarding a guess, most guests were over 50, there was not a Barbie or a tank engine in sight. Nor indeed

a grumpy teenager with earphones lurking in a corner. No, Thoresby Hall is proud of its adult only approach, recognising that, at times, grown ups like to be in the company of other grown ups, no children allowed. Which does not mean a boring, stuffy environment at all. There is much play on offer: fencing, archery, Zumba, yoga and snooker just for starters. And an exceptional spa, with treatments and a pretty indoor pool for a little pampering. Warner’s particular speciality is the evening entertainment and despite, being based within a magnificent Grade 1 listed building, the theatre, part of a sympathetic extension, hosts shows, musicians and comedians of repute. We took a Friday to Monday break, wandered in the extensive grounds, dined at the Blue Grill restaurant (2 AA Rosettes) and gently boogied to the tribute band, Abba Fever. All in all, a good beginning to our time away as a couple!

Simpson provide a car on this trip as exploring is definitely part of the holiday. I can certainly say that we made the best of this, visiting monasteries, beaches, the towns of Chania and Rethymno. And there wasn’t a single moan from the back seat – it was empty apart from my trusty Panama.

Another island triumph After a really busy 2 week summer family holiday, three girls and mother as well, which frankly felt like running a marathon in flip flops and failing dismally at my own version of Mary Berry, it was most certainly time for another break on our own. An island again, this time Cyprus to Ayii Anargyri Natural Healing Spa Resort, just for grown ups. We booked through Adults Only Hotels, great name and does what it says on the tin: holidays without children in over 30 destinations, across a range of hotels 3* to 5*+. They organised flights, transfers, car hire and the hotel. Our hotel was a decidedly relaxing spot, deep in the mountains behind the bustle Paphos, surrounded by forests and mountains. It is well known as a spa, with natural mineral springs and was replete with soft-shoed therapists who looked like models. However, do not be fooled, those girls can make grown men wince when they get cracking (quite literally) on a sports massage.

Ayii Anargyri Natural Healing Spa Resort, Cyprus We visited in the autumn, so it was quiet which was what we wanted. And most comfortably warm, still swimsuits-on-thebeach weather. The hotel is created from wood and stone, neutral colours throughout, so it’s very much in tune with the environment. Big panoramic windows are everywhere, bringing the utterly restful outside in and reinforcing the calm. In fact, it’s so tranquil that we fell asleep after a hydrotherapy treatment, in comfy loungers facing the woods. Not a child in sight (or sound) to disturb us.

Where next? We are certainly getting the hang of our adults only holidays, and the plan is Italy next, with Florence and Rome in mind. So, two city centres likely and a little touring as well. I am excited and looking forward to visiting the Uffizi again, indulging in Duomo gawping and divine Italian food. Staying, of course, in hotels just for grown-ups!

Advises Jill: “Travel from Lima to Buenos Aires, Tokyo to Beijing or experience the natural wonders of the Galapagos Islands – there are cruises for all seasons and interests.” If you’re wanting to escape the often dreary UK Winter, where better to head than “Down Under” and experience the vibrant cities, beautiful beaches and awesome mountain vistas of Australia and New Zealand? “January and February are a great time to head to the Southern Hemisphere,” says Jill. “Flights between cities are short and inexpensive or rent a camper van or car and take a leisurely drive through the stunning countryside.” Accommodation ranges from goodvalue motels and campgrounds to luxurious five-star hotels or lodges. “Adding a stopover is a popular choice,” insists Jill, “and flying east or west there are some great options.” Experience the Orient in Singapore, Hong Kong or Kuala Lumpur, kick back on a South Pacific island or visit San Francisco or LA. All these are possible these days and great destinations, with a great range of first-class airlines available. Looking for somewhere quite different? Jill advises that Costa Rica is becoming a popular holiday choice. “Generally, it’s best to avoid travel in September and October when the heavy rains arrive,” she states. “But many people favour the Green Season (May/June and November) when the seasons are changing. The land is verdant and the National Parks are quieter, giving you the opportunity to experience the forests, beaches and volcanoes without the crowds. “The variety of wildlife in Costa Rica is amazing and on the Pacific Coast whales can be observed between January and March and August to October. There are also some fabulous beaches, especially around the Icoya Peninsula and Guanacaste.” The Far East has also become a greater attraction to Western travellers with amazing tours available. Vietnam, Laos and Cambodia are popular for temples, beaches and the inspiring stories of human resilienc

Travel from Beijing and visit the Forbidden City, Tiananmen Square and the Great Wall before heading to Datong, Taiyan to marvel at the sandstone statues in the Yungang Caves. Spring and Autumn are generally the favourites times for tours of China, avoiding the harsh Winter and searing Summer heat experienced in some of its regions.

Pension Flexibility – The dawn of a new era

“Affluent people approaching retirement should be free to blow their pension pot on a Lamborghini even if they end up relying on the state for support” quote from a minister on the new pension freedoms.

I don’t think sensible people approaching retirement will take this course of action but the quote does highlight the complete flexibility now available for pension withdrawal. There are going to be new options for annuity purchase, but for drawdown there will be three contracts. These are known as capped drawdown, flexi access, and uncrystallised funds pension lump sum (UFPLS). We love jargon in this industry.

Capped drawdown has been available since 1995, and stays in its current format with a maximum being placed on the income which can be withdrawn in any one year. The advantage for those in capped drawdown is continuing pension contributions can be made at the maximum annual allowance of £40,000. This is not the case for the other two options. Flexi- access will have no limitations to the income that can be taken, but all income will be added to your income in the tax year to determine the level of tax you will pay on the withdrawal. The introduction of UFPLS is an interesting addition and this will replace triviality and small pension pot regulations.

WE’VE all seen beautiful homes on TV and in magazines and thought “if only I could have that” and plan happily for the items that you definitely would buy funds permitting. Like most major buys in life, though, we can often work towards buying one specific item or addition to our home. So, it’s definitely worth having a “wish list” of improvements that you would like if you could raise the money for them. Itemising these improvements by priority is a helpful way forward, and creating that plan can brighten up even the

gloomiest day. Working around the house to see how you would improve it in the best possible way is definitely something worth doing – even if the cash to do it seems very far away! Start on the outside. Would you like an EXTENSION building onto your home to create an extra lounge or maybe one or two more bedrooms? If you like the location of your current home and you have the room on your present property, this is always a good choice because it means you don’t have the stresses of moving to another area and life can go on as always, only better. Check first whether you will need planning permission or building control approval by visiting the Government website www.planningportal.gov. uk If you need an architect either go to national bodies like the Architects Registration Board on www.arb.org.uk or ask among friends and neighbours for a recommendation, and try to see something they have designed previously.

The same applies to builders. You can either visit websites like the National Federation of Builders on www.builders. org.uk or the Federation of Master Builders on www.fmb.org.uk Again, it’s always best to try to see something they have already built and find someone who can recommend them. You may want to improve your GARDEN by having it landscaped by professionals, creating wonderful areas to sit and enjoy beautiful plants and flowers in peace and tranquillity. You might want to install a HOT-TUB for both relaxing and socialising – just imagine lying in that bubbling warm water without a care in the world! GARDEN using old sinks, chimney pots or even big, old saucepans can offer a quirky, personalised look to your garden. A visit to any sales of garden furniture will also help you plan ahead for your own Great Outdoors next year. There are all types of garden furniture available, from wrought iron tables and chairs to hardy raffia couches and loungers, wooden benches and more modern shapes to suit your own style. Fortunately, browsing through garden catalogues is pleasing at any time of the year but particularly in the Winter when thoughts of getting out in the garden once more cheer us up! Place a bench at the end of your garden to help “draw” you into your outdoor space, and consider having decking in your garden. A well-planned decking area offers that lovely spot to sit and eat, entertain guests or just regularly enjoy the fresh air with family and friends.

WE all try to enjoy our gardens until the very last days of Summer but planning ahead is as important as planting ahead when it comes to making the most of gardens every year. And, as the Summer winds to a close, it’s not only a good time to continue getting the most from your little piece of rural England but also to consider how you can improve your garden to enjoy all over again in 2017.

You might want to call in an expert to help with a garden design or pop into your local garden centre for advice. Much, of course, depends on the type of garden you have in the first place. City gardens have to tick all the boxes – providing an outdoor space for planting, relaxation, play and entertaining. But you may have only a small area for this so most urban gardens have to be functional spaces or plant-filled havens to help escape city life. The Royal Horticultural Society recommends minimal designs and repeated patterns for maximum effect. Wildlife-friendly gardens feature plants and structures that attract native wildlife like birds, beneficial insects and small mammals. Log piles, hedgehog boxes and bee hotels are among the ideas to help accomplish this.

Mediterranean gardens take their inspiration from the shrubby vegetation of the hot, dry climates of the south of France, Italy and Spain. Here, gravel is often used between areas of droughttolerant plants like lavender, olive trees, rosemary and vines. Contemporary gardens feature clean lines and clever use of space without fussy detail or clutter. Stone, slate and wood are ideal here, along with clipped hedges, specimen trees and simple blocks of planting. Think minimalist. Formal gardens offer a balanced design symmetry and a clear floor plan, and cottage gardens need abundant planting that spills over onto narrow pathways to provide masses of colour and scented flowers. Containers can add seasonal colour to any type of garden. Use them for shrubs, bulbs or annuals or topiary. Many pots are also ideal for growing fruit and vegetables, especially for beginners in this practical field. A cluster of colourful pots can brighten up a patio. Garden centres are great places to look for good-value pots and other types of containers – along with giving you useful gardening advice generally – but

Tiered decking with railings around it, for example, provides a fascinating central feature for any reasonable-sized garden. And consider painting your decking in vibrant colours if you feel your garden needs a quick brightener. An area of grassed lawn is still a very pleasing sight for many of us and even mowing – thanks to the latest light and effective lawnmowers – isn’t a major chore or too difficult a price to pay. However, sometimes as we get older, trying to regularly mow a large or difficult to access area becomes just too much so it could be worth thinking about alternatives. Artificial grass has come a very long way from the rather unattractive carpet-like product it once was. Today’s artificial lawns are not only beautiful and very natural-looking but also feel great to the touch and are very hardwearing. They can be both children-proof and pet-friendly so it’s definitely worth an enquiry. Check out someone else’s garden where they have had artificial grass if you can and you could be pleasantly surprised. If you have the space – and the budget – how about your own swimming pool? They come in all shapes and sizes to allow you to exercise in the heated waters anytime you want to, or just to chill and swim casually. They’re always popular with children and on the hottest days of our British Summers they’re an ideal place to cool off and really enhance that time in your garden.

Wills & Probate: Your Questions Answered Bromleys' very own Kate Fletcher answers some common questions when it comes to Wills & Probate.

A Grant can still be required where a person dies intestate and they own property or have assets over a minimum amount (each bank has its own limits for this).

1. Do I need a will?

The executor is the person named in the will who is appointed to administer your estate in accordance with the terms of the will. It is a responsibility, and you should choose your executor carefully as someone you trust to carry out your wishes. It can be an onerous task and you do not have to act, but once you have started making steps to administer the estate you have intermeddled and you may not then be allowed to step down.

Yes. Family situations are becoming more and more complicated, and making a will is your chance to choose who you want to deal with your estate and who you want to benefit. We don’t know when our time will be up, so it is best to be prepared and make the process easier for our loved ones who will be left behind.

2. Do I need to change my will if I get divorced? Divorce does not revoke a will but, once the decree absolute has been issued, an existing will would be interpreted and administered as if your former spouse had pre-deceased you. However, we recommend that you review or make a will while going through a divorce so it is clear you don’t want that person to benefit from your estate in case something were to happen to you before the divorce is finalised.

3. What happens if I don’t leave a will? If you pass away without leaving a will, your estate will pass under the rules of intestacy. This is a prescribed, legally binding list of who will benefit from your estate, and depends on your marital status and surviving relatives. Without a will, you can’t presume that your estate will pass to the people you wish to benefit. For example, if you are single without children, your estate under intestacy would pass to your parents, if they have predeceased you, it would pass to any siblings.

4. What is probate? The Grant of Probate is a court-sealed document issued by the Probate Registry confirming the validity of the will and giving the executors the legal authority to deal with the estate, for example to collect in the assets and sell or transfer any property.

5. What is an executor?

6. What if I don’t get anything from a relative that I was expecting to inherit from? An individual is free to leave their estate to whoever they wish. However, in certain circumstances, a will can be challenged, or you can make a claim against an estate if you were financially dependent on the person who has passed away. An adult child of independent means would struggle to make a claim. However, a spouse or a co-habiting partner who has not been sufficiently provided for would have a stronger claim.

7. Can I transfer my house to my children? This is a question we are frequently asked, and my reply would be: Why? Your motivation is a key factor and if it is because you think it will save long-term care fees it is unlikely to work. Local authorities have extended powers to pursue assets in such circumstances. Giving your home to your children while you continue to live in it also makes you vulnerable. Were your children to go through a divorce or bankruptcy and the property was in their name, it would be taken into account as part of their assets. You can leave your house through your will instead.

8. Do I need a Lasting Power of Attorney? A will deals with your affairs once you have passed away. A Lasting Power of Attorney is where you appoint one or more people as your attorney to deal with your property and finances and/or health and welfare decisions during your lifetime. Lasting Powers of Attorney must be registered with the Office of the Public Guardian before they can be used. A Lasting Power of Attorney can still be used if the donor later loses mental capacity. If you don’t have a Power of Attorney in place and you do suffer a loss of mental capacity, someone would need to apply to the Court of Protection to be appointed as your Deputy in order to deal with your affairs. This is a more expensive and lengthy process.

9. Should I be worried about inheritance tax? Inheritance tax is payable if a person’s estate (their assets and property on death) is worth more than £325,000 (current value). Tax is charged at 40% on the value over this limit. Married couples benefit from this allowance being transferable on the second death if it has not been used.

Elaine Paige Stripped Back WHEN it comes to singer Elaine Paige we think we know her so well – but the reality is that this multi-talented performer constantly surprises her fans. While this year alone she is preparing for a lengthy series of weekend concerts around the country, she also hosts her regular – and very popular – Radio 2 programme on musical theatre and film music each Sunday and earlier this year she starred in a new TV version of Shakespeare’s A Midsummer Night’s Dream as part of the Bard’s 400th anniversary celebrations. All of which should really be no surprise as Elaine, now 68, has had one of the most varied and glittering careers of any musical theatre entertainer. Especially for one who has always considered herself an actress rather than a singer. It is music, though, which has always figured largely in Elaine’s existence. As she explains now:

“I don’t know what I’d do without music in my life.” Growing up in Barnet, North London, young Elaine was actually used to the world of showbiz from quite early on. Her dad was an amateur drummer and his daughter was born possessing quite a voice. To encourage her to be an all-rounder and to gain confidence, her parents sent Elaine to a theatre school although show music had already entered her young life to stay there forever. She set her sights on a musical career and, after touring in shows, made her West End debut in the then controversial musical Hair as a member of the “tribe” - and thus, at one point, naked.

Various other roles in stage musicals followed but it was when she was chosen for the much-coveted part of Eva Peron in the first stage production of Tim Rice and Andrew Lloyd Webber’s musical Evita that Elaine came to national prominence. “It was an amazing thing, really,” she recalls. “They had searched all over the world for the right person and I was pretty much an unknown then so to take that role was just wonderful. It was a perfect piece for me. For once, even my height (5’ 1”) was right for the role!” This part won her a clutch of awards, including the Laurence Olivier Award for Best Performance in a Musical and, at the age of 30, made Elaine a star. It also kickstarted a remarkable collaboration with Tim Rice and Andrew Lloyd Webber during which she played some of their most notable characters, including Grizabella in the original production of Cats. This not only


CELEBRITY INTERVIEW cemented her professional reputation but gave her a Top Ten hit with the iconic song Memory. She had another top-seller with Barbara Dickson in I Know Him So Well from the musical Chess, and enjoyed many wonderful stage appearances in some of the best-known musicals – from Anything Goes and Sunset Boulevard to The King and I and Sweeney Todd. Ask her what her favourite role is and she admits that it’s a difficult choice. “I’ve loved so many of them,” she states. “Evita has to be a favourite because it was so important in my career and because I loved it, but I also loved being in Piaf and in Sunset Boulevard.” She has recorded 18 solo albums – four multi-platinum and nine consecutive gold awards - and been in seven cast albums, picking up a number of music awards along the way. Her theatre work has brought her a whole cabinet full of awards, including Best Actress in a Musical and a Variety Club Award for Show Business Personality of the Year. She was awarded an OBE in 1995 and given an Honorary Degree of Doctor of Letters by the University of East Anglia in 2012. Her acting has also been highlighted on several notable occasions. She worked twice with Sir Peter Hall’s Theatre Company in The Misanthrope and Feydeau’s Where There’s A Will and is quick to say how grateful she was for the chance. “Peter saw something in me that others hadn’t and cast me in these productions,” she says. “I so enjoyed them!” While Elaine has long had a high-profile theatre career, she has also become a TV favourite. She’s been a guest on dozens of shows, had her own Sky Arts TV show and also acted in programmes including drama series Lady Killers,Tales of the Unexpected, Agatha Christie’s Marple and Where the Heart Is. She was Mistress Quince in Russell T Davies’ version of A Midsummer’s Night Dream – “which I really enjoyed. It was brilliant seeing Matt Lucas at work and to reacquaint myself with my old friend Bernard Cribbins from Anything Goes.”

She was busy preparing for these concerts when we chatted – “singing every day like I always do to keep my voice strong and trying to fit in playing tennis a couple of times a week.”

Last year, Elaine celebrated 50 years in showbusiness with a lengthy tour and, although she prefers not to put herself through such a tough touring schedule anymore, she is looking forward to the series of weekend concerts entitled Stripped Back which start at the beginning of October.

Elaine particularly enjoys her weekly radio programme, Elaine Paige on Sunday, in which she highlights famous and not so famous musical theatre tracks. The formula is obviously a successful one with more than 2.3 million listeners each week. “I get to play some of my favourite music each week – what better way is there to spend a Sunday?” she laughs.

These involve her performing her favourite tracks with a small group of musicians in venues from Manchester’s Bridgewater Hall to Cheltenham Town Hall and finishing on December 18 at the Theatre Royal Drury Lane. “It will have a real cross-section of music,” she explained. “I spent my teenage years listening to Cilla, Lulu, Helen Shapiro and Patti LaBelle. There were some wonderful songwriters around then like Randy Newman, Harry Nilsson, the Beatles and Carly Simon so I’ll be singing lots of those along with plenty of what I call my ‘potboilers’ to keep everyone happy!”

And, as someone who has already had such a long and varied career, are there other areas of entertainment she would still like to do? “Oh, yes,” she asserts. “I’d definitely like to do more drama. But I guess we will just have to wait and see what comes up.” And for the country’s First Lady of Musical Theatre it was then back to rehearsals – and dreams of having a tennis back-hand like Roger Federer’s!

Half an hour of physical activity 6 days a week linked to 40% lower risk of death in the older generation Recently (May 2015), the British Journal of Sports Medicine stated that half an hour of physical activity irrespective of its intensity, six days a week is linked to a 40 per cent lower risk of death in the older generation. This report went on to say that the impact of physical activity on health is as good as giving up smoking. Professor John Morrill is 69 and, in theory, retired from his work lecturing on British history at Cambridge University. Although he hasn’t found giving up work easy (he still attends

business meetings in London and avidly writes non fiction) he easily gave up any exercise, until a heart condition forced him to get active earlier this year. Health issues beginning in John’s 60s included Deep Vein Thrombosis (DVT), high blood pressure and problems with his heart. His doctor told him exercise would help, so he tried swimming, going to the gym and finally, fell head over heels for walking. John says: “I found that to walk was an absolute delight. I mainly go for walks near to where I live, and it has really heightened my senses, I thoroughly enjoy the sounds and sights I see and hear. Starting to walk was first and foremost about

my health but has become about discovery and feeding my curiosity.”

John began walking to help his health. And help his health it has. His blood pressure has gone down, the swelling in his legs has alleviated and fluid that had been in his lungs has reduced. In fact, his hospital has recently reduced the amount of times they see John each year, because he is no longer a serious case. “Walking everyday has massively improved my legs,” says John. “I had aches and pains in them for years and whenever I slept without pressure stockings the swelling of my legs would return. That is until I started walking. Now the swelling and my blood pressure have gone down significantly. Tests earlier this year showed that my heart condition wasimproving too.


“My doctor was amazed with the changes, which must be down to walking.” John, a widower, makes sure that he includes a walk somewhere in his daily routine. He says that the ease of it is convenient in his life, which is still very busy. He says: “I get up and think about how to best fit my walk in today. That could be going out after breakfast to a local meadow, or along ancient bridle paths, or it could be walking to my meetings in London, rather than taking the tube or a cab, like I used to. “I like pleasurable walks; even walking from my college to the station I can deviate through parks or along the river and even if I have to increase my journey time, I enjoy discovering new things. It has proved to be a great way to kill an hour between meetings. “I once even found a village deserted since the Black Death on one of my walks, which was along an ancient footpath with endlessly self-renewing hedgerows. It was an amazing discovery! I enjoy hearing no traffic and feel much, much better for the walking I’ve been doing. I feel more vital.” Since January, John has walked every day for at least 45 minutes and does a minimum of 5,000 steps. In the past he has struggled with his weight and also found that walking helps him to lose the pounds. “I am now 16½ stone and am losing weight. I’ve tried lots of diets but gradually the weight goes back on. I like walking steadily and the fact that it doesn’t feel like an obligation or stop me from being sociable. From day one I knew walking would help; it clicked. “I burn about 400 calories on my walks and it really is taking me back to my senses. I’ve even moved the sofa around in the living room so that I can see the contrast of a copper birch and sycamore tree out of the window! It now works better with the colours it sits with. I put that down to spending more time looking and listening to nature.” John Morrill is a friend of Living Streets, the national charity that stands up for pedestrians. Living Streets aims to make streets safer and more attractive places so that they are more enjoyable places to walk. He says: “I think the work that Living Streets is doing in encouraging people to walk more and improving urban areas so that they can do so, is very important. I found the joys of walking through a health scare but by walking more, it can prevent health issues like mine. I hope that the government continues to provide funding and working with charities such as Living Streets, to improve the walking experience in the UK.”

HOME COMFORTS C h icken co r d on b leu It’s ham, cheese and chicken: that’s all. It’s a simple dish, but like many things in life, the simplest are the best. Cook the escalope in plenty of butter, not oil. By the time the butter is nut- brown, the chicken should be ready to turn over and cook on the other side. You need to allow the middle to become hot, to melt the cheese inside.

Serves 4 4 boneless skinless chicken breasts 175g Emmental cheese, cut into 8 chunks 4 good-quality thick ham slices 75g plain flour 3 eggs, lightly beaten 150g panko breadcrumbs sea salt and freshly ground black pepper 150g unsalted butter 300g French beans, trimmed 25g flaked almonds Cut the chicken breasts in half widthways nearly all the way through then open out to a heart shape. Lay a large piece of clingfilm on a work surface, and place the chicken on top. Cover with another sheet of clingfilm and gently bat out with a rolling pin until about double the size and 1cm thick. Remove the clingfilm and lay two pieces of cheese over one half of each chicken breast, then fold the ham on top. Fold the other half of the chicken over to enclose the cheese and ham, and press down lightly. Place the flour, eggs and breadcrumbs in separate bowls, each big enough to take a chicken breast. Season the flour and eggs with salt and pepper, then pass the chicken first through the flour, then the eggs, then the breadcrumbs, coating fully. Put 125g of the butter into a large frying pan and set over a medium heat. When the butter is just melted, add the chicken and cook for 4–5 minutes on one side until the butter is golden brown, then turn and cook for another 4–5 minutes. Baste the chicken with the melted butter as it cooks, keeping it over a medium heat. You don’t want the butter or breadcrumbs to

burn, and you want the chicken to be cooked all the way through and the cheese melted. Bring a pan of salted water to the boil. Add the beans and cook for 3–4 minutes until just tender, then drain. Put the pan back on the heat and add the last of the butter and the flaked almonds. Heat until the butter is melted, then toss the beans into the butter and warm through. Season well. Serve the chicken with the beans alongside.

O y ste r an d seafoo d pie wit h samp h i r e I don’t know that ‘posh’ is the right word for this really, as although it uses oysters and lobster, you can get hold of both of these easily nowadays. It does use a fair bit of champagne, but you can always use prosecco instead. The grated potatoes make a great topping – just give them a thorough squeeze to remove any excess water. Serves 4–6 140g unsalted butter 2 heaped tablespoons plain flour 600ml double cream 350ml champagne sea salt and freshly ground black pepper 500g salmon, boneless and skinless, cut into chunks 400g smoked haddock, boneless and skinless, cut into chunks 1kg cooked lobster, shelled and cut into chunks 8 oysters, shucked 350g raw king prawns, shelled and deveined 100g samphire 1kg white potatoes, peeled and coarsely grated 3 egg yolks 200g frozen peas

Preheat the oven to 220°C/425°F/gas mark 7. Put 75g of the butter into a saucepan and heat until melted, then add the flour and cook for 2 minutes until thickened and light golden-brown. Add the cream gradually, whisking all the time, and cook until thickened and smooth. Pour the champagne in a steady stream into the sauce, still whisking all the time, until thick enough to coat the back of a spoon, then season to taste with salt and pepper. Place the salmon, smoked haddock, lobster, oysters, prawns and samphire in a large ovenproof dish. Pour the sauce over the top to coat everything.

Put the grated potato into a clean tea towel and squeeze all the liquid from it. Place in a bowl. Melt 50g of the remaining butter in a saucepan, then mix with the potato and egg yolks and plenty of salt and black pepper. Sprinkle over the top of the fish, then place on a baking sheet in the oven and bake for 30 minutes until golden and hot through. Bring a pan of salted water to the boil, add the peas and cook for 2–3 minutes until tender. Drain and return to the pan, add the remaining butter and season to taste. Serve with the fish pie.

It’s best not to keep the bake in the fridge, as the butter will harden up – if you have to, warm it through in a low oven before serving. Makes 15 pieces 375g shop-bought sweet pastry 200g unsalted butter, softened 200g caster sugar 3 large eggs 200g plain flour 125g ground almonds 1⁄2 teaspoon baking powder 150g apricot jam 8 fresh apricots, stoned and quartered Preheat the oven to 170°C/325°F/gas mark 3. Grease and line a 30 x 23cm traybake tin. Roll out the pastry to 5mm thick and about 2cm larger than your tin. Roll it onto the rolling pin, then roll it over the tin. Press gently into the corners, then trim the excess from the edges. Place in the fridge while you make the filling.

Place the butter and sugar in a food mixer or a large bowl, and beat for 5 minutes until light and fluffy, then beat in the eggs one at a time. Remove from the mixer and fold in the flour, ground almonds and baking powder. Cover the pastry with the apricot jam, then spoon over the filling and smooth out to the edges. Lay the apricot halves gently on top, in rows, and bake for 35–40 minutes until golden-brown and risen. A skewer inserted into the centre of the cake should come out clean; if it doesn’t, return it to the oven for a further 5 minutes and repeat. Leave the cake to cool in the tin, then cut into rectangles to serve.
