EDITOR'S LETTER Can you believe it’s the end of the first quarter of 2017 already!? Wow, has it been an incredible start to the year! The construction in uMhlanaga is moving at a steady pace and I just can’t wait to see the monumental projects completed! In addition to the Pearls and Oceans uMhlanga being well on their way - We recently saw the launch of yet another sparkling development in uMhlanga - Umhlanga Arch, a mixed use development scheduled to break ground toward the end of this year. One of my favourite shows of the year - Decorex is opening it’s doors (18-21 March 2017). Echoing the province’s serene lifestyle, the four-day expo encourages a tranquil, calm living space which provides a comforting retreat away from the fast-paced world. Themed “Make your space your living dream”, visitors will have access to a variety of globally influenced designs and trends which have been localized to suit the South African home. adjustments and strong support from South African Tourism - hopefully making this year’s event one of the best yet. Indaba has seen a few tweaks to the online appointment and meetings manager - which should make for smooth sailing on that front. I just love that Durban has the opportunity to show our very best to such a captive audience, and I’m looking forward to the happenings around Indaba. The Lilizela Tourism Awards are also on the calendar - and entries for this year’s installment of the awards were officially opened on 1 March 2017. The awards recognize service excellence in South Africa’s tourism sector. KZN MEC for Economic Development, Tourism and Environmental Affairs, Mr. Sihle Zikalala has called on the KZN sector to enter in order for the province’s service excellence to be recognized. Tourism Indaba is a staple on the annual calendar for Durban - and with so much to see in Africa, it’s easy to see why the show attracts so many… Regarded as one of the must-visit travel events of its kind, the global event will once again showcase a wide variety of Africa’s top tourism products, services & talent on 16-18 May 2017. his year sees a slightly different approach to Tourism Indaba. South African Tourism has said that, as part of their refreshed commitment to the tourism industry, and an even greater emphasis on collaborations with media, exhibitors and buyers alike, the trade show will see some exciting enhancements in 2017. Last year’s Tourism Indaba saw a rise in overall exhibitor attendance with 1049 exhibitors vs 1029 in 2015. Though Buyers and Media attendance figures were down comparatively.

AN ADDED DAY FULL OF INFORMATION As part of SA Tourism’s promise to create value for exhibitors, the organization has scheduled an information-packed day before the start of the trade show on Monday May 15, 2017 where leading tourism experts will share insights on various key markets with exhibitors. In a bid to attract South Africa’s exclusive and premier product offerings and to showcase a broad variety of all the tourism experiences and services that South Africa has to offer, the Tourism Grading Council of South Africa (TGCSA) will build a Luxury Pavilion specifically for five star accommodation establishments. Having made over 3000 buyer/exhibitor meetings possible last year, the Online Diary System will be simplified - allowing buyers to contact exhibitors directly. ala Collection Private Game Reserve is a pleasant 45 minutes’ drive from Durban and, being my first time, I was honestly very surprised at how well situated Tala Collection is - it’s an easy drive along mostly main routes. This 3,000 hectare reserve may not boast “The Big 5” - but they certainly do offer an exceptional experience. I have never been so close to game in my life, wild game that is. Tala offers something completely different their animals are relaxed, comfortable even, with the regular passing of cars and gamedrive vehicles. It’s also clear that the animals are happy in their environment - there are so many baby animals in the reserve it’s quite charming really… The reserve is very well stocked with a diversity of game, ranging from the tiny mongoose up to the biggest of all southern African antelope – the Eland. The reserve boasts about 20 species of antelope, which includes some “specials’ such as Oribi, Bushbuck and Reedbuck with general game in abundance. Tala also boasts an impressive herd of Rhino, 5 in all - with the big and strong Tyson being the only male. The decision was taken in 2016 to de-horn the Rhino’s in an effort to dissuade poachers. RAVE, a Rhino conservancy & anti-poaching unit is active within Tala 24 hours a day - they are funded solely on donations (Learn more at www.raverhino.co.za). We went on a short drive on the way to our room, spotting a wealth of animals along the way, and our 4pm game drive with ranger Milton did not disappoint either! We were pleased as punch to get up-close to a baby Zebra and family as well as some Wildebeest. We also had the opportunity to see the incredibly tall giraffe right next to our vehicle.

We saw countless antelope and many, many birds. The best part though, was as the drive was nearing its end - Milton took us to where the Rhino were - and we stopped, remaining silent as they moseyed around the vehicle seemingly unfazed by our presence. We were told though that regardless of how they may seem, these Rhino are indeed dangerous, and not to be taken lightly… Milton told us that many a private vehicle has been damaged by getting too close! Accommodation options vary vastly at Tala collection - we stayed at Paperbark, their deluxe rooms, with a communal lounge area and breakfast facility. Our room "It really isn’t every day that overlooked the area where one has the opportunity the Hippo’s reportedly roam at night, and I was not to view game so close - so disappointed when I looked unbelievably close that you can out at 2am only to see the giant creatures roaming on almost touch the animals." the horizon… What a sight! Tala offers self catering, rustic, regular, deluxe and luxury accommodation options - as well as an onsite restaurant with a relaxed ambience. A great venue for an afternoon game-drive and dinner, even if you aren't staying the night. Tala is a great location for a day-trip too; gate entry fees are R80 per car & an additional R70 per person. Children 3-12 are charged R50 and kids under 3 enter for free. You can also opt for a guided game drive in the Tala Vehicle, Drives are offered at 8am, 10am, 2pm & 4pm. Remember though that the restaurant kitchen closes at 8pm, so don’t dilly dally too long on your drive!

KING OF THE HILL THE R1.3 BILLION UMHLANGA ARCH IS ANOTHER STUNNING FEATHER IN UMHLANGA'S INCREASINGLY IMPRESSIVE CAP

TAKING TOMATOES BACK TO THEIR ROOTS MEET LOCAL FOOD HERO STEVE HASKINS, A MAN WHO IS ALMOST SINGLE-HANDEDLY REVIVING THE JOYS OF EATING AUTHENTICALLY FLAVOURED TOMATOES. BY INGRID SHEVLIN, SHREWD FOOD.
I
've never met Steve Haskins face to face. Yet. But we’ve chatted over e-mail and I’ve tasted his heirloom tomatoes, which is what this story is all about. These are tomatoes that taste like no others. These are tomatoes so packed with flavor, so juicy that, once tasted, you will never again enjoy the flavor-challenged imposters sold in supermarkets. Steve Haskins is an American born businessman who arrived in Durban in the 70s in search of endless sunshine. He found it. And stayed. Lucky us. By day he makes secret socks, but come weekends you will find him toiling away at his allotment in Assagay growing an assortment of heirloom tomatoes. It’s a labour of love. Not for profit. But five years after he planted his first seeds, which were sourced from abroad, his crop now includes San Marzano’s, Black Crim, Peach Plum, Green Zebra, Yellow Brandywine, Snowwhite Cherries, Red Brandywine Cherry and Dark Cherry. All different varieties of heirloom tomatoes. So what is a heirloom plant? “Heirloom refers basically to a traditional variety of fruit or veg that has not been “tweaked” scientifically. The seeds are passed down from generation to generation in the different areas where they originated” explains Steve. Today, this “tweaking” has reached the point where insecticides and herbicides are genetically infused into the plant and, subsequently, the fruit and veg they produce, to protect against insects and boost harvest. Steve started harvesting this year’s crop in January. In January and February he managed to supply some restaurants, namely Thirteen: East Coast Eatery, Antique Café and Parc in Glenwood to name some. Now his limited crop is winding down. “Only another month (March) of season left. I have some late planted ones, but it’s amazing how the plants sense the days are getting shorter and they grow smaller than usual, and they fruit very quickly. I have a new variety that has finally ripened. It is called Yellow Brandywine. It’s a large slicer and is very tasty. Very unique. “From what I have learnt this year I can try and do better next year. It’s all about planning and preparing. The weather plays a big part in the grand scheme of things. This year the summer started later than the last three years. It’s all very labour intensive.”

It’s hard to gauge exactly what drives man like Steve to put all his spare energy into growing heirloom tomatoes and preserving ancient seeds when he could, I suppose, be drinking craft beer and watching sport on TV. Steve explains he was living in Italy in the 70s when he first began to understand the concept of exploring a food’s origins and discovering authentic flavours. Tomatoes are a good example, he says of how modern production and demand have become the enemy of flavour. Its downside, ironally. Tomatoes, as he says, is one of most basic ingredient in almost every form of cooking. “Because of the great demand for tomatoes, farmers, using all the modern chemistry available, have developed a method of growing certain varieties of hybrid tomatoes that meet all the needs for growing and marketing except one … taste. “Tomatoes are a fruit. For a fruit to have flavour it has to stay on the tree, bush or vine long enough to develop the sugars that give the fruit its flavour, but to let this happen means it has to be picked when it is nearly ripe and, by the time it gets to the market place, it will ripen and spoil faster than profit-oriented stores require.” Tomato farmers, he adds, like varieties they can pick early and refrigerate before shipping. They sometimes use special gases that make them ripen and turn red even though they aren’t ripe. The result is a tomato that is red, but totally flavourless. Because most of us have never tasted a true tomato flavour, we don’t know what we are missing. Steve says he first experienced the pleasures of heirloom tomatoes at a farmers’ market in California in one of his annual visits to family. “I was amazed at the different varieties, colours, sizes and flavours.” Today today farmers markets are probably the only place to source heirloom vegetables, even here in Durban. But they will cost more. “Since I started there has been a small introduction of some heirloom varieties and some specialised shops like Woolies. Because they are priced at more than three times normal tomato prices they have not proved to be appealing. They also still lack the flavours of true vine ripened heirloom tomatoes. "So, until South Africans have the opportunity to taste and experience a true tomato experience, the heirloom tomato market will flounder apart from in the farmer’s market realm,” Steve explains. What he’s saying is that once tasted, there is no going back. “Heirloom tomatoes are a visual treat and a flavour experience, from cooking tomatoes like San Marzanos and Orange plums, slicing tomatoes like Black Crims, Peach, Yellow and Red Brandywines, to multi-coloured cherry tomatoes. It’s only a matter of time. The only thing lacking is the supply to create the demand” says Steve. • • •

THE BEST OF THE BEST: LILIZELA TOURISM AWARDS 2017 MEC ZIKALALA CALLS ON KWAZULU-NATAL'S TOURISM SECTOR TO ENTER FOR THE 2017 LILIZELA TOURISM AWARDS
T
he MEC for Economic Development, Tourism and Environmental Affairs, Mr Sihle Zikalala has made a clarion call to all tourism players in KwaZulu-Natal to take part in this year’s prestigious Lilizela Tourism Awards. Entries for this year’s installment of the awards were officially opened on 1 March 2017. The Lilizela Tourism Awards, which recognize service excellence in South Africa’s tourism sector, are an initiative of the National Department of Tourism and the MEC for Economic Development, Tourism and Environmental Affairs has called on the KZN sector to enter in order for the province’s service excellence to be recognised. “I would like to make a special call to all the tourism players in the province to take part in the programme, which honours those that have raised the bar in terms of entrepreneurial and service excellence standards.”
Eager to see more tourism players from KZN participating in the programme, the MEC added, “As government, we want to usher in an era of radical economic transformation and we see tourism as the sector that will assist us in achieving this. Therefore, we encourage our tourism players, most importantly those that are still emerging to take full advantage of such platforms. Entering programs like these puts businesses at a competitive advantage within the sector.” Participants within this programme will be given support to ensure that they are equipped with the tools to enable them to continue to grow within the sector and also become major players in the international space. “Particularly for emerging businesses, through Tourism KwaZulu-Natal (TKZN), they will be given access to new market platforms where they can attend international tourism exhibitions, allowing them the opportunity to broker international deals with major players. Furthermore, during platforms like the Tourism Indaba, Lilizela participants are provided with a special SMME pavilion where they can meet and network with an estimated 200 hosted international tourism, buyers that attend Indaba.” KZN has set its sights on increasing the number of participants in the programme in 2017 from the 124 eligible entries in 2015, and 149 in 2016. The province also aimed for even greater performance at the 2017 awards, Zikalala added. “In order to grow our numbers this year, TKZN will be engaging district municipalities across the province to ensure that tourism businesses across the spectrum participate. Furthermore, we will be talking to major hotel groups and tourism associations to encourage their members to be part of these prestigious awards. It is important for the sector to embrace such programs, as they go a long way towards positioning KZN as a top tourism destination. If tourists and international tour operators believe in our tourism products, they will be more comfortable to book their next holiday in KZN,” concluded Zikalala All tourism businesses that enter the Lilizela Awards need to be registered with the Department of Economic Development, Tourism and Environmental Affairs, and graded with the Tourism Grading Council of South Africa The best of the best in the tourism sector in KwaZulu-Natal (KZN) will be celebrated at a red carpet affair to be hosted by the MEC Zikalala during Tourism Month in September 2017.The provincial winners will go on to represent the province at the National Lilizela Tourism Awards ceremony to be hosted by the Minister of Tourism later in the year. NATURAL SCIENCE MUSEUM Tel: +27 (0)31 311 2256 The City Hall was built in the early 1900s due to the rapid growth of Durban, which had resulted in the original town hall taking on a new mantle as the Durban post office. The city fathers commissioned the new town hall in 1903, choosing what they termed a ‘bold and progressive’ design submitted by architect Stanley Hudson. Hudson set about creating a replica of the Belfast City Hall in Northern Ireland. In addition to the mayor’s parlour and municipal chambers, the building houses a public library, auditorium, and the Durban Art Gallery and Natural Science Museum, which displays a selection of fossils – including that of a dodo – animals, birds, reptiles and insects. MAHATMA GANDHI’S PHOENIX SETTLEMENT One of the major tourist attractions on the Inanda Route. See where Gandhi lived and the printing press which he founded. The house is named Sarvodaya - meaning “Well Being for All” and was originally built for Gandhi when the settlement was established in 1904. This is a reonstruction of the original, which was burnt down during the 1985 Inanda Riots. TANQUERAY I
n 2000, on the heels of releasing Tanqueray Malacca Gin, Tanqueray released Tanqueray No. Ten Gin. Both of these releases were aimed at a new movement in gin, loosely referred to as New Western Style Gin, that shifted the focus slightly away from juniper to spotlight what other botanicals in gin can bring to the mix. Part of this movement came as a reaction to a new generation of drinkers who had grown up with a distaste for the strong juniper in gin, and another was as a response to the incubatory phase of the now explosive craft cocktail revolution. Tanqueray No. Ten Gin gets its name from being made in Tanqueray’s number ten still, also affectionately referred to as “Tiny Ten”. This small still was used as an experimental/trial run still at the distillery before becoming the key still for Tanqueray 10. There is a misconception that Tanqueray 10 gets its name from the number of botanicals in the mix; in fact, the recipe for Tanqueray 10 has all four of the base botanicals from Tanqueray London Dry: juniper, coriander, angelica, and licorice. Tanqueray 10 adds an additional four elements to the mix, including fresh white grapefruit, fresh lime, fresh orange, and chamomile flowers for a total of 8 botanicals. One of the things which makes Tanqueray 10 unique is that it uses fresh whole citrus rather than dried citrus peels. Dried peels are used for the majority of gins on the market and very few actually use fresh fruit. The nose of Tanqueray 10 reflects the abundance of fresh fruit, and while juniper is still a lead note, it’s joined by lime and grapefruit which act like co-stars in the equation. Under the citrus are some of the same botanicals as with Tanqueray London Dry Gin including coriander, black pepper, and angelica root. Ultimately it’s the lime that seems to be most persistent in the glass. That lime is also the star of the entry which combines fresh lime and fresh grapefruit along with juniper and angelica root. The angelica root is as pronounced at the entry as the juniper, giving the entry a slightly nutty, rooty, spicy quality. This root spice combined with the piney juniper become the core of the midpalate, which has a much warmer spice quality to it than Tanqueray London Dry Gin. It’s here where the influence of the chamomile flowers is most apparent with a slightly bitter floral spice which combines with the coriander, licorice, and a black pepper note from the juniper. Tanqueray 10 Gin has the same subtle sweet note from the grain in the midpalate, which lends a sweet quality to the citrus as well as makes the angelica root come off more sweet and warm than earthy. The finish is long and spicy with juniper, black pepper, and lime lingering on the palate. With strong citrus aromatics and a core of warm spice, Tanqueray 10 is suited to a very different range of cocktails than the traditional Tanqueray London Dry Gin. While Tanqueray London Dry Gin is our go-to gin for a gin and tonic or Negroni, Tanqueray 10 works much better in cocktails like the Aviation, the Southside, and the Gin Rickey. With its fresh citrus core, Tanqueray Ten is often our gin of choice in citrus-focused cocktails, and it’s considered by many to be one of the best gins for the martini. Tanqueray London Dry Gin and Tanqueray No. Ten Gin share many key elements of style, but they are unique spirits. Tanqueray London Dry Gin is all about how just a few botanicals can come together around juniper to make a complex and flavorful gin, while Tanqueray No. Ten Gin is about presenting a wider palate of flavors to build on for cocktails. The difference between Tanqueray London Dry Gin and Tanqueray 10 is like the difference between a wrench and pliers – they both can perform similar tasks, but they are ultimately different tools.
