I love Thanksgiving.

I love it so much that starting in the fall I would buy microwave chicken and gravy, mashed potatoes, and corn, and I pretend it's my favorite foodie holiday bi-weekly.

Well, I did that until my winter bod soon followed, and I realized there is a reason we have Thanksgiving once a year.

605 got to watch Dagger & Arrow owner Beau Vondra work his (hot sauce) magic at Plum's Cooking Company (you have to try his Avocado Toast recipe).

Our team also participated in the honey process at Sunrise Hives in Spearfish. 605's John Snyder even had a bee fly into his ear as he shot a (very quick) video.

Oksana and Vitaly Silchuk made us coffee in their kitchen after we finished the tour of their beautiful (blog-worthy) home.

Last, but not least, Kristen and Nate Hicks of The Neighborherds gave 605 a tour of their farmland, and then invited us in to compare store-bought vs. local beef.

The best part? Realizing how food and drinks bring us together and give a reason to get to know each other on a personal (and fun) level.

So get ready (with an empty belly), because this issue is about to make your stomach growl.

Queen City Bakery is one of my favorite places to stop before work, after work, and on the weekend. I love their Strawberry Jammers, along with a Dirty Chai. Plus, they have a great space to work or unwind in.

One of my favorite places to grab a quick sugar fix is Half Baked [1]. In my professional experience, their Dark Chocolate Raspberry Cupcake is 10/10.

Plus, they have South Dakota State University ice cream. Need I say more?

I’m a huge crafter/maker, so if I have a weekend with no plans, you can probably find me at Jam Art & Supplies [2] sifting through their supplies and planning my next project. My fiancé, Ethan, “loves” my never-ending collection of drawing pads, paints, and odds and ends that I “might need some day.”

We are currently in the process of moving out of our 100-year-old home and into a downtown loft, so I’ve been having a lot of fun picking wall colors and new décor for our new place. I really love unique and vintage items, so one of my favorite places to peruse is Urban Archeology [3]. They have a great collection from furniture to wall art, and it’s nice to have something special in your home.

I'm addicted to Mexican food, so if I’m in the mood for a quick bite, my favorite place to hit up is Tortilleria Hernandez on Fairfax Avenue. It’s a small little shop, but their Carne Asada Tacos are amazing!

One of my favorite ways to spend a weekend or day out is by visiting the Visual Arts Center at the Washington Pavilion [4]. The exhibits are usually rotated every few months, and it’s great that their exhibits showcase a range of regional, national, and international artists.

As a designer, I try to keep educated by reading up on design and art books and sifting through books for layout, typographic, or visual inspiration.

Anytime I’m feeling a little uninspired or just need a break, I love stopping by Zandbroz Variety to check out their books.

Whenever my friends and I are up for a drink, we usually manage to make our way over to Remedy Brewing Company or Carpenter Bar for a drink or five. You can’t really go wrong with either. Both have great atmospheres and selections.

Being a part of the 605 team has been really fun. One of my favorite things thus far has been our haunted tour of the Orpheum Theater [5] (October 2018 issue). But, it’s also been really fun getting to learn more about South Dakota and the local people and businesses that make up our state. I’m excited to keep exploring!

I’m one of those girls that gets obsessed with everything fall: the cooler weather, leaves, pumpkins, etc. I try to make at least one annual trip to Country Apple Orchard [6] to pick some apples and pick up pumpkins. It’s just a fun way to spend a day outdoors.

EEnglish E is my second language, and I didn’t learn it until I was 7 years old.

OOKING TO GIVE YOUR TASTE BUDS A NEW KIND OF HEAT?

BEAU VONDRA AND HIS FAMILY TURN UP THE FLAVOR WITH DAGGER & ARROW HOT SAUCES. THE OWNER EXPLAINED HOW THE OPERATION REDEFINES SPICY IN THE MIDWEST.

Dagger & Arrow came to life unexpectedly. Vondra tried hot sauce crafting for a customer of another business he partners with, Look’s Market, in Sioux Falls. He aimed to prioritize flavor that other sauces lacked.

“A gentleman always wanted me to try hot sauces. Every time I tried one, it was just hot. There wasn’t much more to them than that,” he said. “Our goal was to make him a hot sauce that was more than hot. I go for flavor over heat with my sauces.”

Vondra’s former hobby turned into a business after giving extra bottles to his friend. That friend, Michael Haskett, operates M.B. Haskett. He introduced the sauces as condiment options at his popular eatery.

“I had a bunch of hot sauces I’d made just for fun,” said Vondra. “I said, ‘Hey, you’re serving breakfast, here you go.’ They kind of took off at his place, and people kept asking for the sauces when he was out of them.”

By November 2016, demand turned the hobby into a family business with his wife, Kali. The company’s naming also stemmed from family ties.

The owners’ children, Dagny and Archie, inspired Dagger & Arrow.

“They love it. Neither one of them are big hot sauce people, but they love to see that out there. They have t-shirts and wear them all the time,” said Vondra. “It just sounds like a hipster name, but it’s a family thing.”

Now, Dagger & Arrow distributes to 28 different locations for retail sale and restaurant use. These destinations span over several states, including Minnesota and Virginia.

“It’s a two-way street. I choose to partner with people and retailers that I know on a personal level. It’s a personal product to me,” he said. “As a retailer, I see how important it is for the store to have a relationship with the product.”

Four different sauces are available from Dagger & Arrow. Two selections, LO-FI and HI-FI, alternate on a seasonal basis. Nature has a say in each batch’s flavor and heat level. Different temperatures, harvesting times, and other environmental factors give each its own flavor.

“Food is all networking. With producers, farmers, wholesalers, consumers,” said Vondra.

“You’re relying on relationship building to sustain your business. I just want to thank everybody in Sioux Falls and surrounding areas for the support they’ve given it.”

“There’s a whole bunch of variables that I don’t regulate. It’s just whatever the peppers bring, they bring. They’re always going to be slightly different.”

Networking opportunities are only the beginning of Vondra’s rewards in the business.

His main motivation remains the same, no matter how many distribution points cover the map.

“I like making people happy. When someone comes up and tells me they enjoy my hot sauces, it makes me feel really good,” he said. “You know, there’s so many good things that happen when you can make somebody happy with something that you make, it’s worth doing.”

Vondra hopes future batches will spice up lives at further distances than ever. Dagger & Arrow plans on adding several new retailers in new states to its distribution list before 2019.

Shop for a good cause. This unassuming thrift and consignment store has visitors drive in from all over to scrounge through jewelry, antiques, furniture, crafts, vintage pieces, and more.

“When we first started [The Treasure Chest], we had no idea what we would be, and here we are,” said owner Connie Johnson.

Johnson says the company is passionate about giving back to the community and is driven by volunteers. The warehouse started originally with vendors, but the majority of their inventory now is donated. They also have a mix of new items, as well.

“We do still have new and used inventory, which makes us very unique,” she said. “There’s something for absolutely everybody here.”

The Treasure Chest has helped the community by supporting projects like the backpack program, the food pantry, and the community furniture mission.

“We are a mission store here to kind of help anybody that walks through the door,” said Johnson. “You know, God sends so many different people.”

Looking to donate items? Drop off times are during hours of operation or by appointment.

Named after owners Dave and Sue Greenlee’s beloved Afghan Hound, Tucker’s Walk Vineyard & Winery started in 2007 with the help of friends and family planting their first full acre of plants.

“There’s a little picture of Tucker and I on the bottle,” said Sue. “Tucker taught us to enjoy sitting and looking [around us]. That was our inspiration.”

The tasting room sits on a hill overlooking the vineyard, and patrons can see where they grow their own grapes, including Marquette.

Tucker’s Walk has won many awards, and is known for being semisweet to dry.

“We have several fruit wines, too, like Cranberry, Raspberry, Rhubarb, and Strawberry-Rhubarb,” said Sue. “Seasonally, we’ll have others.”

Executive chef and co-owner Omar Thornton created two halves when he started O So Good. One side acts as a meeting space with a cozy coffee shop and baked goods "made with love" by the eatery’s co-owner, Renae, who is also Thornton’s wife.

“She brings a little bit of home with her baked goods. For tonight, for example, we’re doing hot apple pie with vanilla ice cream,” said Omar.

He was referring to the “American Spice” theme happening on the other side of the business: the restaurant and entertainment space.

The main concept of O So Good is “seafood and comfort food with a Southern flair.”

The restaurant not only brings innovative (spicy) dishes to Garretson, but Omar also brings in entertainment that has a special menu that coincides with the event’s theme.

“In a small town we bring the uniqueness of our menu plus uniqueness of just talent from all around,” said Omar. “We like to try to keep it as local as we can, but we definitely reach out and bring acts in as well.”

Southern flare includes Pan-Fried Blackened Walleye, Fried Catfish, and the popular Cajun Seafood Pasta.

This fall brings new menu items, like the Fried Bacon-Wrapped Pickles appetizer, the Bison Burger, and the Jerk Chicken Breast with Grilled Prosciutto Bacon.

O So Good likes to bring people in on the action with an open kitchen concept.

SPEARFISH’S SUNRISE HIVES Making High-Quality Honey Accessible

KIAH CROWLEY HAS BEEN IN THE BUSINESS OF BEES PRACTICALLY SINCE BIRTH. 3 4 \\\\\\\\\ N O V E M B E R

The daughter of beekeepers, the Spearfish native grew up working the hives with her parents and became interested in bees at a young age.

Now Crowley and her husband Carl own and operate Sunrise Hives out of Spearfish, Carl taking care of the bulk of the beekeeping, while Kiah

creates products from the honey and beeswax that the couple sell locally.

“I grew up in a house where my mom was self-employed making products,” said Kiah. “I always wanted that freedom to set my schedule and create something new every day.”

The couple started Sunrise Hives in 2010, the same year their son Rowan was born. From day one, Kiah says the duo have 100 percent run the bees themselves—including breeding and raising them in hives in St. Onge, and traveling to California for two to three months every winter for pollination.

“WE’RE THE PERFECT TEAM BECAUSE WE EACH HAVE OUR OWN AREA TO BE IN CHARGE OF. WE CAN EACH MAKE OUR OWN DECISIONS THAT BENEFIT THE BUSINESS.” - KIAH It’s in that committed, hands-on care that Kiah says Sunrise Hives has found its secret to success.

“We’re continuing to do what makes our business work well for us and our customers,” she said. “It’s that much more important to care about your business when it’s your livelihood, and because of that we really haven’t had any problems with our bees.”

While Carl focuses on keeping the bees healthy and happy, the honey they produce is Kiah’s area of expertise.

Just scrolling through Sunrise Hives’ Facebook page, it’s easy to see that the Crowley’s honey has made it far from the hive. From food products like Honey Lavender Almond Pecan Butter, Ice Cream, and Lattes to Pure Beeswax Candles, Soaps, and Lip Balms, Sunrise Hives does a little of everything.

“Our products are all natural, with no colors and no additives,” said Kiah. “I stay with local ingredients as much as I can.”

Crowley’s commitment to staying local is two-fold, beginning with ingredients (for some of Sunrise Hives’ floral salves she picks dandelions and other flowers herself at the couple’s cabin), and extending to the businesses she chooses to partner with throughout the area.

One of Sunrise Hives’ main sources of outreach is through farmers' markets, which the couple frequent each May through October. Health food stores, greenhouses, co-ops, restaurants, and other small businesses also play a key role in the retail side of Sunrise Hives.

Kiah says she builds strong partnerships with other businesses by keeping things old school.

“I’m not afraid to speak to people face-to-face,” she said. “I’ll go up to someone and introduce myself and just say ‘I think we would work well together.’ That seems kind of old school today, but that’s how we’ve always run our business.”

And eight years in, there’s not much Kiah says she would change about how she and Carl operate Sunrise Hives. But there are still areas she would love to explore when it comes to the retail side of things, namely expanding into the area of women’s beauty products.

“The more that I read and explore, the more I come up with to create. Mostly we’re looking

into doing more salves, creams, lotions, facials, that kind of thing, but I also want to get into infused honey.”

The constant at Sunrise Hives? The Crowleys themselves.

“There’s so many different products you can come up with, it really never ends,” said Kiah.

“We’re the perfect team to do what we do every day.”

WHEN OKSANA AND VITALY SILCHUK MOVED INTO THEIR 2,207-SQUAREFOOT RANCH-STYLE HOME IN SIOUX FALLS, IT WAS 2008 AND THEY WERE NEWLYWEDS.

“[The house] was getting foreclosed on, so we snatched it and just saw potential in it,” said Oksana.

“That’s how my passion started. It took us a decade to give new life to each corner of our home.”

Her “mission to create a cozy home, one corner at a time” is the theme to Oksana’s blog, Silchuk Nest. The photos from Oksana’s blog and social media give a glimpse into the couple’s “moments” they’ve

created in their clean and modern aesthetic through remodeling and décor.

“It was definitely not an overnight thing,” she said. “That’s why my whole blog is about focusing on one corner at a time,

because you’re going to get overwhelmed and you’re going to get burnt out and super disappointed if you don’t because house stuff sucks.”

Oksana and Vitaly also share their family life with son

Zion, 4, and daughter Chloe, 2. The family is expecting a new addition to the family this fall.

“Another [baby] is coming soon, so we’re in the process of shifting everyone around,” she said.

HOME + LIVING

O LIVING ROOM Walking into the living room, it’s noticeable right away that the Silchuks love neutrals.

“If I described my style, it’s really simple, like minimalistic simple. But I always like a pop,” said Oksana. “I like sticking to neutrals because I’ve learned it the hard way. When we first bought our house, every room was a different color, and it only took me about a week before I got sick of it. I’m not ever making that mistake again.”

Her favorite thing in the entire home is in this space.

“My favorite by far is this fireplace my husband built me,” she said. “I saw something similar online, and clearly with our house it’s not possible for us to have a real one, so he built me the frame, and we put in some birch logs.”

She stood back still smiling at it.

“This is a piece that if the house is burning, I will want to carry it out,” she laughed. “The rest can burn.”

The antlers above the mantle were recently placed and were another project for Vitaly.

“Yeah, I had to beg him to put those up. They’re not light,” she said.

In the corner is a hanging rattan chair from Serena & Lily that isn’t just for looks.

“It’s the cutest, comfiest little spot for us when we have newborns,” said Oksana. “We don’t really own any rockers. We try to not to buy a lot of baby things because they grow out of it so quick. This actually is our ‘sick chair.’ Anybody that’s sick, I put a bunch of blankets in there, and we rock them.”

Last, but not least, by the entrance is one of the most statement-worthy corners, with wall hooks and a dried palm tree leaf.

“I’ve wanted one of these forever, and I wanted to have someone from California ship me a driedup palm,” said Oksana. “Then we went to Okoboji, and they have a restaurant that happened to have real palm trees. I was like the crazy lady that walked up to the guy, and I was like, ‘Hey, can I have this dead branch?' And they’re like, 'Yeah, sure.'”

She also mentioned some items are from brand partners from her blog, like a print from The Poster Club.

“They allow me to pick pieces that I love from their site or whatever that they offer, and then they usually send it to me,” she said. “Then I photograph them and bring awareness, and then they do the same for me.”

It’s in this room that you find the first of many baskets. This one is used to store blankets.

“If there’s one thing I collect, it’s baskets,” she said. “I’m a hoarder when it comes to them, and my husband just laughs at me because he’s like, ‘Don’t tell me you got another basket.’”

O KITCHEN “This is ever-changing. I swear, this place changes out the most depending on the occasion,” said Oksana of the dining area. “I can’t say we use our dining set too much, which is why I think that I’m able to keep it a little bit more tidy, but, I mean, we eat here.”

“This is the one area that is a dream of mine to redo one day,” she said. “We haven’t touched it at all since we’ve moved in, so this is the original kitchen.

The only thing that we had here was there was a cabinet hanging, and we removed it and it opened up so much.”

Oksana chose the dining table from Crate & Barrel since it wasn’t “too bulky” and because of the color.

“Honestly people always steer away from this glossy material, but it actually wears so nice,” she said. “You can see a little bit of scratches, but this wears better than a traditional hardwood table. It really does.”

Looking down at the area rug from World Market, Oksana explains she used the texture to contrast with the simplicity of the room’s color palette.

The dining room opens up to the kitchen, which is still original to the 2004 home.

They also added an area of open shelves where she has a variety of knickknacks that include gifts and items from brand partner Mint + Basil.

“There are a lot of things that I get from thrifting. I always go in somewhere with an open mind,” said Oksana.

HOME + LIVING

O NURSERY At the time of 605’s tour, Zion and Chloe shared a nursery. This will soon change, as one bed will swap out with a crib for the new baby.

Chloe’s toddler bed has a hanging net that can wrap around her when she goes to sleep. This, Oksana says, has helped her with transitioning out of a crib. It also helps for other things.

“I love this because they’re super naughty when they’re going to bed, so you just put the curtain up and they don’t talk to each other. At least you hope they don’t,” she laughed.

There are also more baskets strewn across the room and in the (very organized) closet.

“I’m telling you, if I put my baskets all together it’s probably going to be a room full,” she said.

Many of the toys are thrifted from places like Goodwill, and Oksana says they’re fans of wooden toys, in particular. A pair of dolls are from an Etsy store.

O MASTER BEDROOM Oksana and Vitaly’s room is across the hall and is the only room painted gray.

“Yeah, it’s because my husband threw a fit. He demanded we do something other than white, but believe it or not actually this room was bright purple before,” said Oksana.

“That’s by a gal who did wall hangings way before wall hangings were cool. She inspired me so much,” said Oksana.

“She’s also a mom of two kids and this is her business. People like that inspire me because maybe I hope to one day create something. I just haven’t thought of what.”

The wall lights next to the bed are from West Elm. “I’m so thankful for [the lights].

While they look awesome, they are also so practical,” she said.

“We’ve had them probably eight years, and they were so nice when we had newborns. They were just the perfect amount of light.”

Above the bed is a wall hanging from Sunwoven.

2. LESS IS MORE Having too many things overwhelms me. There have been a lot of moments where I had to redecorate my home only to put back pieces that bring joy or things I truly love.

3. STICK WITH NEUTRALS At one point we went color crazy and regretted it almost instantly.

4. DISPLAY THINGS THAT MAKE YOU "YOU" I'm a lover of nature. I love displaying dried flowers from our adventures with the kids.

5. MIX TEXTURES One of my favorite things to do is to mix and match. Pair something super rustic with something extremely simple. Mesh warm and cool tones. AYLEN’S HOMEGROWN POPCORN ENTERED THE POPPING BUSINESS OVER 20 YEARS AGO, TAKING THE SOUTH DAKOTA POPCORN MARKET BY STORM. ORIGINALLY FROM CHESTER, OWNER GAYLEN BACKUS AND HIS WIFE, SHIRLEY, TOOK THEIR FARMING EXPERIENCE TO THE NEXT LEVEL IN HOPES OF CREATING ONE OF SOUTH DAKOTA’S MOST SUCCESSFUL POPCORN BUSINESSES IN WENTWORTH, SD. 4 6 \\\\\\\\\ N O V E M B E R

“I had been looking at some ads in a farm magazine about raising popcorn for a company in Wisconsin. I did that for a couple of years and then thought why not raise it for ourselves? So, in 1997, we started growing and selling our popcorn as Gaylen’s Homegrown Popcorn,” said Backus.

Having both been raised on farms, the couple had previous experience with livestock and crops,

though neither of them had ever grown popcorn. Backus knew it would be a learning process when it came to planting and harvesting.

“The plant itself has a weaker stalk than field corn and many times after the crop has started to dry down and get close to harvest a wind will come through and break off the stalks, making it very hard to pick up with the combine head,” he explained.

Once the farming process was nailed down, Backus began developing multiple ways to sell their popcorn. Instead of simply offering bags of popcorn, Gaylen’s produces various popcorn balls and popcorn cakes, which make great gifts during the holiday season. If small treats aren’t your thing, they also sell their popcorn in 16-ounce bags called “pounders.”

“We believe that our popcorn treats are a step above other popcorn companies because we

do not skimp on our flavoring,” said Backus.

Speaking of flavor, Gaylen’s knows how to keep things interesting and unique. Cheddar Pretzel Ale, English Toffee,

and Dill Pickle are just a few of the flavors that Gaylen’s proudly presents. Backus and his family take pride in making quality flavors that will keep customers coming back.

“Shirley and our youngest son, Tyler, run the popcorn treats end of the popcorn business.

Between the two of them, they develop new flavors. We make a real caramel with real butter and real vanilla, even though artificial would be a lot cheaper,” said Backus.

Tyler is also in charge of the online presence of the business and knows first hand how much of an impact their business is making.

Bulk, gift baskets, and individual orders have been sent to almost every state, as well as to Canada and Mexico. Knowing their popcorn has such a large perimeter is something Backus takes pride in.

“There are not many popcorn treat manufactures in the state, especially in our local area, which I believe helped our start. It has been fun trying to learn about a new business venture and to develop new markets,” he explained.

Being a family-owned business in a small rural town has its ups and downs, but Backus sees nothing but growth and success in the years to come. With the novelty popcorn business gaining popularity, Gaylen’s has outgrown the converted twocar garage and is on its way to having a larger production facility.

“We not only wanted to see if we could sell our popcorn treats, but we wanted to make sure those same people that bought the popcorn treats would come back,” said Backus.

S A SELF-DUBBED CITY GIRL FROM IDAHO, KRISTEN HICKS DIDN’T EXPECT HER CAREER TO ONE DAY REVOLVE AROUND FARM-RAISED BEEF. But that changed after she met her husband, Nate, and the couple moved back to Yankton to live on his family's farm.

Kristen’s first visit to meet Nate’s parents was also her first experience with farmfresh beef.

“I was just blown away by the flavor,” said Kristen. “It tasted so different from anything I’d ever had before.”

Nate grew up on the Hicks Farm and Ranch, just outside of Yankton. A fourthgeneration farmer, he now raises Black Angus cattle with his father.

The animals are pasture-raised, grainfinished, and most importantly, treated like family. It’s an ethical approach to raising cattle.

And beginning in 2017, the Hickses took a passion for what they call the “meat culture mission” and have been building an innovative business.

That’s where The Neighborherds comes in.

While it might sound like the name of a hipster-country-folk band, The Neighborherds is actually a delivery service for ethically-raised, farm-fresh beef.

Kristen spent the early days of her career working in marketing, where her passions led her to startups and sociallyconscious brands.

“We’re part of a growing generation of people who are just passionate about knowing where their food comes from,” said Kristen.

Conversation with friends over a home grown steak dinner led the Hickses to the realization that even in the Midwest, people struggle to access fresh, local beef.

“It’s a pretty complicated process,” said Kristen.

In most cases, you have to locate a farmer, figure out when the beef will be available, purchase a chest freezer (you’ll need space), communicate with the butcher, and pick it up.

Going to the grocery store sounds simpler, doesn’t it?

The problem is, conventional buying options allow for limited knowledge about where and how the cattle were raised.

According to Kristen, meat labeled “Product of U.S.A.” doesn’t actually have to come from animals within U.S. borders.

“The way the FSIS (Food Safety Inspection Services) policy is currently written allows foreign meat to be imported into the states, and as long as it's processed here, the end product can be labeled, ‘Product of U.S.A.’” says Kristen.

The most common meat supply chain can consist of up to five steps between the animal’s origin and the dinner table. With so many steps it can be difficult for consumers to know the age, breed, and feed of the cattle, along with where and how it was raised.

"These are all things we believe affect the quality and flavor of every cut of beef,” said Kristen.

The Neighborherds’ simple supply chain aims to do away with these issues by providing transparency through an online shopping hub for farm-fresh, quality beef, raised in customers’ regions.

without unnecessary antibiotics or added hormones. Once they’ve reached peak age—Kristen says 1 to 2 years for a steer—the animals are sent to USDA-approved butchers, packaged and delivered to customers.

“Rancher, to USDA-inspected butcher, and then direct to your door, that’s it for The Neighborherds,” said Kristen.

And besides, the only thing easier than going to the grocery store is shopping online.

The beef is shipped out to customers in reusable, max-insulation coolers (similar to a Yeti). The coolers come with pre-paid shipping labels, so all you have to do after you’ve received your shipment, is place the cooler back on your doorstep for The Neighborherds’ delivery team to pick up.

First, create a high-quality, ethicallyraised product. Next, make it simple and sustainable to distribute. It’s all the modern consumer could ask for.

“My passion has always been connecting people to authentic brands and services and products that they need the most,” she said.

Customers can choose to purchase individual packages, but bundling an array of items will, of course, reduce costs.

The more traditional option of purchasing a quarter, half or whole animal is also available.

For the time being, Kristen and her husband are keeping the business regional. Shipping outside the Midwest in the reusable coolers isn’t realistic financially, and the Hicks are dedicated to providing quality and sustainability at a fair price.

Offering the Midwest local, flavorful beef from independent farms at reasonable rates is The Neighborherds’ primary goal. As they expand, they also hope to offer beef raised in different ways, such as 100 percent grass-fed.

“Some want leaner beef that’s 100 percent grass-fed and grassfinished,” explained Kristen. “Others really love the more tender, juicy cut that you typically get with classic Midwest, grain-finished beef."

Cattle can be raised in numerous different ways, and each provides a slightly different result as far as taste and texture. For the Hickses and their “herd” of customers, taste, quality, and the ability to make an informed decision about where

their food is coming from is key to a positive experience.

“We just want to provide an option for people who want to know more about how their food is raised, specifically beef,” said Kristen. “Our customers often tell us they love knowing that the beef they buy from us comes from people in their region and that they can learn how it was raised, healthy and happy.”

Eventually, the Hicks do hope to expand The Neighborherds to

create hubs across the country, where groups of local farmers in different regions could partner with one another to employ the system.

Rather than shipping Midwestern beef nationally, these hubs would reduce costs and keep the meat local.

At the root of it all, The Neighborherds seeks to help people understand where their food is coming from and how it’s raised.

“We’re all about transparency,” reiterated Kristen. “Our focus is

telling the story of the farms and ranches that provide our beef. We practically give you their address.”

From the pasture to your front porch, The Neighborherds are out to change the way the Midwest gets its beef.

DIRECTIONS

Heat vegetable oil in a cast iron skillet to medium heat. Pour in enough to liberally coat the bottom.

Tip: Have a lid or splatter guard ready to cut down on grease splatters.

If you’re not using The Neighborherds pre-cut stew beef, cube your steak or roast into one inch squares.

Test oil heat with one cube. If it starts to fry, add more without filling up the skillet (can fry in batches, if easier).

Sprinkle lightly with thyme, seasoning salt, and rosemary (pepper flakes optional).

Cook on one side for one to two minutes or until browned, then flip and repeat, adding a light amount of seasoning again.

When both sides are brown, take the beef out and drain on a few paper towels.

SERVING

Use toothpicks to serve. Have the hot sauce handy for those who like a little kick.

Rough chop crab meat.

5 Slices sourdough bread

½ C Mayo

Run bread through a food processor until it is crumb consistency.

LREADY BLESSED WITH SWAMP DADDY’S CAJUN KITCHEN, THE JONES 421 BUILDING IN DOWNTOWN SIOUX FALLS HAS CONTINUED TO GROW WITH MORE FOOD OPTIONS THAT ALSO STARTED AS A FOOD TRUCK. THIS ONE BRINGS EUROPE TO THE MIDWEST. Walking into the open marketplace, Boki Gelato & European Street Food is split up into two storefronts. The first is the former Boki Gelato Italian Artisan Ice Cream from the Empire Mall.

Let’s cut to the chase… I’m a huge fan of themes and theme music. My perfect world is a fake town or village in theme parks with music blaring from the tall and/or hidden speakers (speakers hidden as rocks are my absolute favorite).

As soon as we entered, we heard European music that took us directly to a different place far from South Dakota. Mission accomplished.

“This is like frickin’ Disney World,” I said with (too much) joy to 605 multimedia designer Yany Avelar.

Not much further down is the Boki European Street Food storefront, which is where our journey truly began. We met owner

Borjan Jaksic, who walked us through the “fastcasual” format.

Known for gyros, Jaksic had us choose the base, and we took his recommendation of pitas. Next was the protein, and we chose beef for our first meal. For toppings, we had romaine lettuce, olives, tomatoes, and feta.

“You must have Taziki for your sauce,” said Jaksic.

Well, if we must.

I’m embarrassed to admit that I had to Google quite a few things, including taziki sauce. The Google machine told me that it’s “found in southeast Europe and the Middle East, is made of salted, strained yogurt, and is mixed with cucumbers, garlic, salt, olive oil, and herbs.

The sauces are made from scratch, and we were happy with our choice to go with the professional advice.

We both had the same reaction when we took a few bites. There was so much meat. Because of that, the toppings were falling out (not recommended for a first date, unless you want them to watch as you eat graphically). Toppings or not, though, it was fresh and savory.

Yany mentioned it wasn’t too salty, which can sometimes happen at fast food-type establishments.

Jaksic went a little HAM on the feta, and it was amazing. The more feta… the betta.

Fries came on the side, and they were wide and thin, almost like steak

fries. They were salted to perfection, and it was hard to keep my eye on the prize as I kept eating the side more than the main dish.

Two lemonades were brought over.

One was Traditional and one was Strawberry. Yany’s favorite was the strawberry.

I took a sip and asked, “Does it taste like a shot to you?”

“Is that why I like it?”

I like her style.

Next was the vegetarian option - the Falafel. I acted like I knew what it

was, and apparently so did Yany, because when I started to write this I also had to Google it.

“Yeah I didn’t know either,” she admitted.

The dish, which was served on rice (Spanish rice?), is a deep-fried ball made from ground chickpeas. I took a fork full of rice and grabbed a piece of falafel. It had a little spice to it, and I dug in for more rice. Soon I realized I was still eating rice and was zoning out.

“It’s kind of dry on its own,” said Yany.

It was kind of dry, but good. It’s better with rice, in my opinion.

All of the food was rich and was very filling. By the time we got to the chicken gyro, we were groaning about eating more (I know, poor us).

Mind you, we had taken photos of each dish, tried the others, and then we got to the chicken, which had a lot of red peppers on it.

It was pretty soggy at this point, so we just ditched the pita and used utensils.

Also, I’m not a huge red pepper fan, so I just went in for the chicken. It was grilled to

perfection, and I wish I had more room in my belly for it.

We then waddled over to the gelato area where the charming music was still in full force.

Because of our state, and so we could be super selfish, we sampled all of the gelato.

Some of our favorites were Vanilla Bean, Nutella, and Tiramisu. The fruit flavors are made with real fruit, and you can order a fancy Gelato Fruit Cup (picture), which they’re known for. Get a little naughty with it with a house-made waffle or cone.

For the finale, our minds were blown when he

made us an Affogato. This beautiful dessert is an Italian coffee-based treat. It’s typically served with a scoop of vanilla gelato or ice cream and “drowned” with a shot of hot espresso.

We chose Chocolate Chip for our gelato, and it legit gave me goosebumps and was a nice warmup on a cold Friday.

It’s definitely more casual, but the open mall concept is nice, especially when you can watch Bella Rosa Flower Market build arrangements as you eat across the way. We even saw someone buying fresh flowers for his mother’s birthday. It was adorable. The gelato storefront was my favorite, as they were the ones blaring the themed music (not to mention the sweet smells were to die for).

To build a plate, it’s $9.99. That’s $9.99 to get super full. By the time we got to our third dish, we were dying. And $4.99 for Affogato is so cheap for gelato plus espresso.

While a large gelato is $5.69, it is so worth the price tag.

I will be back, like, tomorrow to get more gelato. Plus I’ve already told a bunch of my espresso-loving friends to get there ASAP for the Affogato. It’s hard to find desserts like this close by. Also, I’ll try the gyros again, especially for that feta. So much betta with feta. (Okay, I couldn’t help myself.)

CHUBBY CHIPMUNK: A Chocolate Craze

NE DEADWOOD STORE IS HELPING KEEP ITS COMMUNITY SWEET BY GETTING BACK TO THE BASICS WHEN CHURNING OUT ITS CHOCOLATE CREATIONS.

A team of chipmunks, nestled in the heart of the Black Hills, have made top-notch truffles their specialty.

Chubby Chipmunk is going on its 15th year in Deadwood, and owner Mary “Chip” Tautkus has made her chocolate obsession a reality for thousands of yearly visitors.

“I want people to come in and, for a moment, they are in total bliss. They are in chocolate heaven,” said Tautkus.

The fact that Mary goes by “Chip” only proves she’s had a passion for the sweet delicacies since she was a child. She and her sister even took the ironic nicknames

Chip and Dale while at a camp when they were growing up.

“My mom said when I was 4 years old I would wake up at four in the morning, go out in the kitchen, and start creating things,” said Tautkus.

Chip’s creations involved whipping up breakfast for her parents before the sun was even up. Plus, she was always experimenting with treats and desserts as long as they included chocolate.

“I’ve always had passion in me, and chocolate has always been number one,” said Tautkus.

The Chubby Chipmunk’s signature treats are truffles, which come in Dark, Milk, and White Chocolate varieties. They’ve also incorporated Nutty, Caramel, and Fruit options.

“When we started we just had a few truffles, maybe 12 or so,” said Tautkus. “We’re always growing, and now we’re right around 40 and then have our seasonal ones, too.”

Chubby Chipmunk also carries Bars, Patties, and Turtles all with the goal of providing customers with the most authentic chocolate experience. Tautkus says getting down to the basic ingredients is an important part of the process.

“The number one thing is to educate people on what really good chocolate is without all the extra ingredients,” said Tautkus.

Chip uses a cream that can’t be found in a store, and it’s special ordered. She also cooks with a list of secret ingredients (she divulged to 605 that those special recipes include “butter and love"). The cocoa Tautkus uses is exclusively from Peru. She says the Chubby Chipmunk is the only place you can find it in South Dakota, as a testament to her commitment to quality ingredients.

Chip is originally from California, where she started the first Chubby Chipmunk.

After moving to Deadwood with her husband for retirement, a friend convinced her to open up the chocolate store again.

“There are days when the line is outside and wrapped around the building,” said Tautkus.

“We expanded a bit and built a lobby out front.”

Deadwood isn’t the only place you can taste the famous chocolates. Chubby Chipmunk does weddings, parties, and has corporate gifts.

There is also a second shop located in the Hotel Alex Johnson in Rapid City.

With the holiday season in full force, she says "the chipmunks" are so busy working away that it’s easy to lose track of the time.

“We're basically filling boxes as we’re dipping, and we’re dipping thousands a day,” said Tautkus. “It’s just mind boggling to look at our trays, and each tray can hold several hundred, and each tray is a full flavor and back up trays are ready to go. It’s been a wonderful, wild ride.”

he state’s vast, diverse outdoor spaces are worth toasting. This is a message that South Dakota Game, Fish and Parks hopes we carry with us always, but especially during 2018 and 2019, when we commemorate “100 Years of Outdoor Tradition” in our state.

Firehouse’s story echoes the nostalgic tenets of s’more perfection, adding a healthy dose of personal narrative: “What I remember most fondly, however, was the time around the campfire after dinner. My parents, no longer distracted by work or phone calls, would just sit by the fire and chat. My siblings and I would be worn out, but still excited from the day's activities. Then the real fun would begin when we started roasting marshmallows to make s'mores.”

The landscape itself served as muse for other brewers, like Fernson Brewing Company with its Prairie Coat Red Ale – a play on “Coteau des Prairies,” a flatiron-shaped plateau located partially in southeast South Dakota’s Newton Hills State Park.

“WoodGrain [Brewing Co.] in Sioux Falls held a special launch party in September to introduce their new brew,” she said. “And Lost Cabin [Brewing Co.]... the name of their beer is ‘The Jackalope Hunter,’ and they were selling jackalope hunting licenses on their website.”

The GF&P team has delighted in the enthusiasm shown by participants.

Mortenson says a couple of the breweries have really gone above and beyond to promote the contest, and hopefully, gain much-coveted votes.

Mortenson adds that her team is excited by the participation of the breweries and response from the public, but she hopes that this is just the beginning.

It wasn’t very long ago that my days consisted of strong coffee and last-minute lunch dates. I had just married my best friend, and the changing leaves were welcoming a sense of serene bliss that I had never experienced before. We were bright-eyed and bushytailed and ready to take on life as a unit.

I decided very early on that I wanted to be as unemployable as possible, so

I got my degree in English.

As a recent graduate from the University of South Dakota, I was super stoked to be starting at 605 Magazine, and felt like all I was missing was a dog. I was settling in and finding my role in our office while my husband was acclimating to a change in careers. We were a force to be reckoned with. A force that consisted of just the two of us, at least for now.

That was our initial plan, until a routine checkup turned into something much more. I remember looking out the window and listening to the nurse in the hallway type an email; her acrylic nails punching each word of someone’s recent diagnosis into the keyboard. We had been advised to start our family sooner than later to avoid possible complications. This moment of reality

took our ignorance and flushed it down the drain, along with throwing a wrench into our “five-year plan.” So, we did what any couple in our situation would do and drank a bottle of wine while we bingewatched Bob’s Burgers.

With the Merlot still hanging on from the previous night, we sat on our mismatched living room furniture, and even though we knew the

answer to the lingering question, we held onto the last few moments of oblivion like the life raft we didn’t know we needed.

The funny thing about having a baby within the first year of marriage is that everyone’s reaction goes something like this: “Oh, wow, you didn’t wait long,” or, “Must’ve been a good honeymoon,” or (my personal favorite), “Are you Catholic?”

When did it become taboo to have a baby within months of “I do?” And since when did you have to defend your decision? These are things I asked myself as I looked in the mirror at my nonexistent belly, swearing to teach my child the importance of being understanding and having compassion.

After a planned induction, 20 hours of labor and a lack of vitamin D, we had a tiny human of our own.

I'm a mom (still so weird to say) and I love it. It is the most difficult thing I have

ever done, and each day seems like a year, but a year full of love and wonder and possibility. We are seven weeks into this new endeavor, and boy, is it a trip.

All along I thought she was the newb, but jokes on me, because she seems to have more figured out than I do.

So, with a pacifier in one hand and prayer in the other, here we go.•

rita Craven turned a sweet project with daughter Avery into a thriving business. Avery was homeschooled in high school and had dreams of becoming a business owner.

After starting college, lots of late nights brainstorming, and a shared passion for “beauty, enthusiastic creativity, and a love of elite exquisite cotton candy,” Sweet Fluff Artisanal Cotton Candy was born. The Rapid City duo created a custom cart and are hired for weddings and other events, personalizing each “fluff” for clients.

There comes a time in the growth of a community where the low-hanging fruit has been plucked and even the best Ideas, intentions, and efforts will be met with challenges—challenges that can only be overcome through strategy, cooperation, and intention. We at Think 3D believe that our beloved community has come to this point, and that it now requires a much higher level of engagement in order to manage its rate of growth; a rate that will challenge our values, strain our relationships, and test our resolve.

We believe that those within our community must rise to face these challenges, to take up the mantle of leadership and lead the way. And though it may be contrary to some of our natures, they must be bold and declarative in their intentions because leaders go first. We are a small company, a young company and—whether by success or mistakes—we are learning every day by going first. And throughout our careers, possibly the most important thing we have learned is this: that a culture will emerge—whether intended or not. But if it isn’t one that you invest in, it will certainly be one that you pay for. We plan to invest.

LEADERSHIP DEVELOPMENT

By the year 2025, many of us will wear more technology than our parents had in their homes. We will also be near the apex of the world’s greatest transfer of wealth, power, and responsibility, as millennials will be the dominant demographic and communities will be far more diverse. This is why we want to share the primary points of our 2025 plan. Our 2025 is a document we created within Think 3D to clearly state what we believe is necessary to ensure the continued success of our community and exactly where we plan to place our focus and resources. We are choosing to share this document for two reasons. First, to encourage others to do the same, so that those who are working on the same problems know they are not alone and so that those suffering as a result of these problems know that help is on the way. Second, we want to be held accountable to what we say we will do. The lack of transparency from some of our country’s greatest institutions has led to massive amounts of cynicism and disengagement from processes that must be powered by people. And as many institutions learn the lessons of being unresponsive to those they serve, we would rather trade blind trust for participation so that all of us are all in.

We believe leadership development is the single most important contribution that we can make to our community. There is no shortage of problems in our world today and no shortage of people that can see them. What we are short on however is leaders--the kind of strong and empathetic leaders that can solve complex issues and bring people together, all while being inclusive and transparent. These are the kind of leaders that rarely occur naturally, the kind that instead must be developed.

This is what Think 3D is all about, and that is why we will create the Community Leadership Development Academy with the goal of producing 500 leaders by 2025. This project will be funded through grants and contributions from the community. We will collaborate with our many community partners to find the right participants with a special focus on our sheltered populations, veterans, youth, and those transitioning from incarceration. At the same time, we will partner with our leaders in business, as well as non-profits to provide opportunities for Academy graduates to continually use their skills while also addressing some of our local issues with the availability of quality candidates within the workforce.

Our community is home to some of the best and brightest minds this country has to offer, but as is true of many communities our size we often look outward for innovative ideas and inspiration. We believe that it is important to our success that we are open-minded and willing to reach outside of ourselves for new and diverse ways of looking at the world, but it should not be at the expense of developing and lifting our own.

Think 3D will work to create platforms that will do just that, because it is our time to innovate and it is our time to inspire. We will develop a speaker series to provide a platform for our thought leaders, and we will ensure that the majority of speakers for Culturecon and other Think 3D events will always be from within the community.

We believe that the price of citizenship is participation. And to ensure our future is not determined by a few, it will require the efforts of many.

Whether it be politics, business, or nonprofit work we all benefit from an engaged community willing to participate.

Think 3D will lead by example: through our continued participation on boards and committees, as well as our community philanthropic efforts, and we will use our voice and platform to promote and encourage community and civic engagement.

We believe that the Midwest may be one of this country’s best chances to form a strong, cohesive and integrated community. Observing and learning from the challenges of other communities provides us with the ability to design one that is representative of all its residents--one that can draw from all the talent, culture, wisdom that comes with a diverse community.

Think 3D will design, and sponsor events which promote mixing, networking, and collaborating in ways that are relevant for today. We will lend our services whenever possible to facilitate meaningful community conversations that are catalysts for positive growth.

Our plan is not the plan. It is one of many efforts to make our city and state great. We wanted to share ours, and hope you will share yours.
