LETTER FROM THE PUBLISHER Alana Snyder PUBLISHER Alana Snyder DIRECTOR OF SALES AND MARKETING John Snyder MULTIMEDIA DESIGNERS Yany Avelar Tyson Schultz EDITORIAL ASSISTANT Kyle Determan ACCOUNT MANAGER Taylor Hanson PUBLISHING COPY EDITOR Kristal Seeden

CONTRIBUTORS Nick Hubbard Morgan Matzen Kaatje Weiland CIRCULATION

Design is all around us. It's everything from a carefully crafted cocktail (page 52) to a completely eco-conscious home (page 30) to something as simple as a green couch (page 46).

Annie Fuss Austin Kaus Chad Konrad Coralie Richards Cameron Stalheim

For Sioux Falls artist Les Cotton, it's about creating "rad art" that not only helps other businesses, but also helps raise funds for things like the Sioux Falls Skatepark Association. For Rapid City Black Veil Burlesque group, it's about self-expression during shows and workshops. For the 605 team, surrounding ourselves with design helps keep the creative juices flowing—whether that's a new notebook, a framed piece of local artwork, or a humorous quote we place on our felt letter board. Speaking of design, this issue is put together by two talented designers, Yany Avelar and Tyson Schultz. If you see them out and about, buy them a coffee (or beer). They deserve it!

KNOWN AS A STAPLE OF SOUTH DAKOTA HISTORY IS THE TOWN OF HOT SPRINGS. BETWEEN DISCOVERING MAMMOTH REMAINS AND EXPLORING NATURAL SPRINGS, THIS TOWN IS FULL OF THINGS TO DO AND PLACES TO SEE. 605 MADE A DAY TRIP TO EXPERIENCE THE AREA'S CHARACTER FIRSTHAND. 1 8 \\\\\\\\\ S E P T E M B E R

Fossil Fright Night OCTOBER 24 // 6 P.M. ADMISSION IS THREE CANS OF FOOD Our day started at The Mammoth Site. Spanning over 14 acres, this active paleontological dig site is home to the largest concentration of Columbian mammoths in the world. “The Mammoth Site is the only accredited museum in the Black Hills of South Dakota,” explained Bethany Cook, public relations coordinator. Aside from the bone bed, visitors can also check out the Ice Age Exhibit Hall, Andrea’s Kids Cave, and a guided Late Ice Age tour. “With over 80 species discovered in conjunction with the mammoths, this is such a unique experience, and you can’t really express the impact it makes on you until you see it in person,” said Cook. Cook went on to explain that the site offers educational programs, as well as merit badge programs for Scouts.

The quaint location had eclectic décor and what I assumed was local art. Owner Jennifer Wallage chatted about the fresh menu options.

Nestled in the heart of the Black Hills, this local cafe is open seven days a week and offers specials for holidays and events, all while giving back to the community.

5,000 THE GALLONS OF WATER PER MINUTE THAT FLOWS INTO EVANS PLUNGE FROM A THERMAL SPRING.

With a fresh-baked peach muffin in hand, it was time for the final stop of the day: Evans Plunge Mineral Springs. Cited as the oldest attraction in the Black Hills, it's the place to "swim, splash, and soak."

Facility director Kris Hanson explained that the grouping of natural springs was started as a cure-all facility in the 1890s. “At 130 years old, Evans plunge is constantly filtering water in and out so it's always fresh and clean,” said Hanson. “We don’t use chlorine because we don’t have to.” Not technically a waterpark, the attraction has features for the entire family surrounding the 87-degree water. “We have swing rings that let you swing across the pool like Tarzan,” explained Hanson. In addition to the "Tarzan ropes," Evans Plunge also features slides, a weight room, and various fitness classes. Wanting to stay and swim for the rest of the afternoon, it was time to leave. Until next time, Hot Springs.•

LESLIE E. COTTON | DESIGNER + ILLUSTRATOR

SIOUX FALLS’ LESLIE E. COTTON IS A SENIOR ART DIRECTOR AT LAWRENCE & SCHILLER (L&S), BUT YOU MIGHT KNOW HIM FOR HIS SKULL-INSPIRED WORKS UNDER THE NAME LES COTTON DESIGN CO. THE MAKER, DESIGNER, AND ILLUSTRATOR ALSO SERVES AS THE VICE PRESIDENT AND MARKETING DIRECTOR FOR THE SIOUX FALLS SKATEPARK ASSOCIATION (SFSA). 605 CAUGHT UP WITH COTTON ON HIS WORKS AND BUSY LIFE.

YOU MIGHT KNOW MY WORK FROM... the marketing work I do or my freelance work for SFSA, Bread & Circus Sandwich Kitchen, Looks Market, The Breaks Coffee Roasting Co., Total Drag, Soulcrate, Later Babes, and others.

I’M CURRENTLY WORKING ON...

a poster series as a way to learn silk screening. I’m also helping out with the SFSA. We always have events going on to raise money for the park. That keeps me pretty busy when I’m not working at L&S.

I STARTED GETTING INTO ART... when I was young. I feel like I have always been doodling.

I WOULD DESCRIBE MY ARTISTIC STYLE AS... a mix between surrealist illustrations and tattoo flash. I have taken classes and learned to draw the world as it is, but I feel it’s better to create

something that comes from within. I try and create a visual metaphor almost. Lately I’ve tried to simplify those ideas as if they were tattoo flash, which I can see getting back into.

A R T + FA S H I O N

THE MEDIUM I MOST OFTEN USE TO CREATE IS... pen and paper. But as of late I’ve been using my iPad Pro and pencil. I’ve been using that more, but I still love pen and ink.

MY CREATIVE PROCESS CONSISTS OF... just thinking of things that are going on in my head and trying to visualize them in a different way. Normally I don’t have a plan. I just start doodling and what comes out comes out. It’s probably not until half of the piece is done that I’ll start penciling to finish it.

THE INSPIRATION FOR MY ILLUSTRATIONS COMES FROM... life’s struggles and my inner thoughts, social and political issues, and traditional tattooing.

SKULLS APPEAR OFTEN IN MY WORK BECAUSE... I see a skull as a good symbol to show humans in a general way, like a metaphor for mankind. We all have them, and we all look like that in the end. And they're really fun to draw.

SOMETHING PEOPLE MIGHT BE SURPRISED TO KNOW ABOUT ME IS... that for two years the only music my wife and I listened to was Bob Dylan . Like on repeat.

PROJECTS I WORK ON AT MY FULL-TIME JOB ARE... marketing and advertising related. I recently got to re-design the L&S logo and help with the new branding as well. I also work with Sanford Health and the South Dakota Office of Highway Safety on marketing efforts.

ONE MOVIE I WILL NEVER GET TIRED OF WATCHING IS... Star Wars: The Empire Strikes Back.

MY FAVORITE PLACE TO GRAB A BITE TO EAT IN SIOUX FALLS IS... man, that is tough. I love so much of the food in our city. I’ll give you my top three: Bread and Circus and their burger with fries, Fernson Downtown and their fried chicken, and Shahi Palace and their butter chicken.

CURB APPEAL From the street it’s easy to see that this home is different than the surrounding styles in Brookings. With black siding, raw wood, and a statement red front door, there is nothing that doesn’t appeal to the eye. “The students of the South Dakota State University Department of Architecture (DoArch) designed this, from the rock benches to the interior,” said Hendrickson. “There is something about having a porch with an uninterrupted sightline that makes it feel so much more open.” The sleek appearance of the home carries on to the garage, which is directly behind the house and is connected by a breezeway. “Usually on a passive house you don’t connect the garage to the house without making the whole garage passive as well,” said Hendrickson.

FEEL-GOOD FLOW The home opens to a large living space that is framed by windows and an open walkway on the second level. “This specific space is a really modern space. The exposed beams, raw wood, and white walls really give it a Scandinavian feel,” said Hendrickson. “The kitchen right off the main room is different than most modern kitchens, but the size and design make it fit with the house.”

3 4 \\\\\\\\\ S E P T E M B E R

Hendrickson continued to explain the importance of design and having a home that does more than contain your belongings. “When you have a lot of natural light and you have a lot of white everywhere, mixed with some raw wood, it actually does make you feel good,” said Hendrickson. “You feel happy to live in a space like this. There’s a reason why white on white is getting more popular.”

Up the stairs and to the left is a lofted area that leads to a bathroom and two bedrooms. Hidden in the modern design is the mechanical room, which acts at the control center for the home. “This massive air exchanger balances the whole house, hot and cold, so that each part of the house is evenly heated and cooled,” said Hendrickson.

KEEP IT GREEN Being that Hendrickson’s company focuses on the marriage of modern design and green methods, it seemed like a no-brainer for Brookings Built Green to take on this project. “We try to use a little bit of passive solar gain in all of the homes we build. Passive means it doesn’t take anything to heat or cool it. And net-zero means that you put the same amount or more energy back into the grid than you take,” explained Hendrickson. Besides the solar panels placed on the roof of the garage, Hendrickson pointed out the less obvious ways of keeping the home energy efficient. “We chose the European washer and dryer because they don’t force air outside,” said Hendrickson. “It might take some time to get used to, but it really helps keep the house more efficient." Efficiency is key, and seemed to be a theme that carried throughout the entire house, right up to the last window pane. “These windows are inset. See the window in the middle? It protects from the wind so it doesn’t push as much air through,” said Hendrickson. “The windows are made of two glass panes and two sheets of really light plastic, which makes them super economical four-pane windows. It’s nice to have natural light that is actively eco-friendly.”

by Morgan Matzen Photos by Hubbard Visuals “Art is whatever you can get away with.” To the directors of Rapid City-based Black Veil Burlesque (BVB), burlesque is more than meets the eye—it’s an art form, and a means of expression. “Burlesque is actually whatever you want it to be,” said Erin McCormick, who is the co-director of BVB. “It’s a form of striptease entertainment that involves comedy, cultural topics, politics, but it’s also an action. It dates back to the early ages of theater and satire.” McCormick, who goes by Phoenix L’Amour onstage, has been performing burlesque for more than 11 years. Before moving to Rapid City in 2016, she owned a burlesque school in Iowa and traveled far and wide performing her act. When she came to

South Dakota, she longed for that same burlesque community she had grown to love. McCormick connected with Frankie Poussé (who preferred to go by her stage name for this article), the director and founder of BVB. Soon enough, they were directing together and had assembled a troupe of nine other performers, teaching classes like Burlesque 101 and running all operations of the business together. “I started doing burlesque in my early 20s because I had gone through a really bad breakup, and was really looking for a way to tap back into myself,” said McCormick. “I stuck with it all these years. I joined up with Frankie and helped build the troupe that we have today. It’s been a really cool process over the years.”

“My favorite thing about doing burlesque is that I get to be a different person on stage and tap into parts of my personality.” - Erin McCormick Frankie said she started the troupe five years ago because she’s always been interested in burlesque. “I loved all the costumes, and I loved the big production,” she said. “I love that it looks like you can do whatever you want. It celebrates anything you want it to celebrate. Everything is really personal. It’s like a selfexpression - whatever you feel in your heart.” The common notion about burlesque is that it’s all about stripping or sexual entertainment, but McCormick says while that is its historical root, there’s more to burlesque than that. “In the past, it was more of an industry for women to sell sexual entertainment, and it’s transformed into this community that allows for anybody from any walk of life to join in and have some sort of artistic expression,” she said. Several different design elements go into each show that they produce. First, Poussé and McCormick brainstorm themes with their troupe. “That helps focus the feeling of the show,” said Poussé. Many of their shows have a cabaret vibe with tables

and seats, creating a very intimate setting for guests. The group prides themselves on constructing their own costumes, building sets, and working with sound technicians and lighting designers to get the mood just right. “It’s a full theater production, and we coordinate all of the things,” said McCormick, noting that this is a hobby aside from their day jobs. “It’s a lot of work.” One of their most recent shows was “wild west” themed, complete with buckles, boots, spurs, and all the gunslinging glory of the 1800s. This month, they’ll have a Bad Wolf Cabaret at Hay Camp Brewing Company (see side bar on page 40). “It’s a very intimate, fun experience, and it’s something you can’t experience anywhere else,” said McCormick. The group is open to all genders, not just women. Poussé and McCormick say anyone can join the troupe by reaching out to them via email.

The Black Hills by Kaatje Weiland | Photos by Tuesday Photography Since February 2017, photographer Mason Stevens has captured the Rapid City community through portraits on his green couch through what he calls the Black Hills Green Couch Project. In the beginning, Stevens had been offering portrait sessions around his house as a part of his photography business, Tuesday Photography. Everyone’s favorite spot for photos? His green couch. “Everyone loved it, and I just played along, basically,” said Stevens. Now, for $10 per person, anyone can book a time to sit down with Stevens for a photo session on the green couch in his living room. His Black Hills Green Couch Instagram account currently has nearly 1,000 followers, with 126 posted photos. Stevens uses a booking link for people to schedule portrait sessions for his project, but he also likes to invite people to the couch who he thinks have a unique story or a unique look.

4 6 \\\\\\\\\ S E P T E M B E R

Some of his favorite moments have come from spontaneously inviting people over. Those are the most exciting for him, he says, because they have no expectations. For example, one day Mormon evangelists were going door to door and stopped at Stevens’ house. They chatted for a bit, and it wasn’t until they started talking jobs that he had an idea. “I wasn’t even thinking about the couch until they asked what I did." Stevens realized he should invite them to sit and have a portrait taken. “My favorite portraits happen a little more organically and naturally,” he said. Most of the sessions are a bit more planned out, though.

Meet the Tiny Couch

The tiny green couch that sits on Stevens’ bookshelf was a lucky find at a local antique furniture store. Stevens says it was too perfect a coincidence to not buy it, and when a lizard visited, the tiny green couch offered a good opportunity for it to sit on something a little closer to its size. That lizard has been the only tiny green couch guest so far.

The popular green couch stands in the middle of Stevens’ living room, surrounded by books, both on the floor and on an adjacent bookshelf, green plants to match the green seating, and a few lava lamps. When the subjects of the portraits arrive, Stevens leads them to the couch right away. When he starts taking pictures, the subjects often ask Stevens how they should pose, but he says he refuses for this project. “I try to get them to be as much of themselves as I can. In this case, it’s as candid as possible,” explained Stevens. When it comes to helping people feel comfortable in front of the camera, Stevens says that it's usually best to sit back and let them figure it out. Instead of helping them decide how to pose, he waits for them to be their natural selves. “I think there’s people who understand and just want to participate in the project,” said Stevens. “And then there’s some people who just want nice pictures with their friend or their dog. I kind of just try to feel that out beforehand of what they are actually trying to get out of it and just go with that. I always let the people who are participating kind of control what they get out of it.” As far as goals for the Black Hills Green Couch Project, Stevens says that he is content for it to stay on Instagram for now. “A long-term goal would be to do a gallery and/or book with the entire collection of portraits, but that's not the focus yet,” he said. “Right now, I am happy just growing with the project and seeing how far it can go.”

The

Treasury

—A Brand-New Treasure in Downtown Sioux Falls— by Kaatje Weiland

FOOD + DRINK

The team behind Carpenter Bar brings a unique boutiquestyle option for cocktails and food in the heart of downtown Sioux Falls—The Treasury. Built in a space that previously functioned as a bank since 1918, its history heavily influenced the design of the newest bar.

From the Hotel on Phillips lobby, visitors can enter The Treasury through a giant bank vault, walking through a circular tunnel into the low-lit art-deco ambiance. On the opposite side of the room is the bar itself, adorned with golden elephant heads and positioned below a wall of antique mirrors and windows that overlook the Downtown River Greenway. To the left are mounted sheep heads, and to the right, a large, circular bookshelf. The lived-in, antique atmosphere was achieved by layering different textures, patterns, fabrics, and materials, says co-owner Anne Haber. Haber and team used many different materials for the design, including dark walnut, medium walnut, black marble, white marble, and birdseye maple. She also emphasized the importance of varying the kinds of seating—from plush chairs to high-top chairs to banquet chairs to dining chairs.

History of 100 N. Phillips Ave. THE SIOUX FALLS NATIONAL BANK WAS BUILT IN 1918, AND AT THAT POINT, IT WAS THE TALLEST BUILDING IN SOUTH DAKOTA. THE LOWER FLOORS WOULD OPERATE AS VARIOUS BANKS FOR THE NEXT 100 YEARS, WHILE THE UPPER FLOORS HOUSED OFFICE SPACES. TODAY, THE BUILDING HAS BEEN RESTORED INTO A BOUTIQUE HOTEL, AND THE FIRST FLOOR IS HOME TO THE TREASURY.

“I like that if someone were to walk in here, you wouldn’t feel like it’s brand new,” said co-owner Brian White. “I think we’ll get hotel guests who will assume that this place has been open for 50 years just because it’s kind of timeless.” Haber says one of her favorite parts of the space is the use of the color green on the walls. Different shades of green of Farrow & Ball paint were employed to harken back to the idea that the room was once a bank. After all, green is the color of money, says Haber. Other design elements in The Treasury also reflect the space’s “rich” past. The huge circular bookshelf in one corner mimics the shape of a vault, and in the opposite corner, vintage deposit boxes decorate the wall near the entrance. The team at The Treasury also wanted to make sure that South Dakota was aptly represented in the décor. Nods to the state’s wildlife can be found all over the room—from the stuffed ducks to the pheasant feathers that hang on the walls. “Obviously this will be frequented by hotel guests, probably from out of town. It’s fun that they are able to come to a place where we do have some local touches,” said Haber.

“They’re really restoring this building. They’re not just gutting it and making it easy. They’re taking a really thoughtful, really quality approach to the project, which we think is amazing.” - ANNE HABER

As for the bar itself, the team at The Treasury wanted to emphasize cocktail culture, says general manager Michael Mohr. Mohr was excited to have unrestricted creative freedom in terms of the menu. The restaurant side will focus on shareables, like fondue, sausage plates, hot and spicy nuts, deviled eggs, and classic charcuterie. Known for the attention to detail at Carpenter Bar, the team says they’re excited to carry that same mantra over into the newest venture. “I think that’s a really important piece of all this,” said Haber,"the service and just the desire to constantly strive for excellence in product and in creativity. And that push is constantly there, so hopefully what you see is also what you get.” FOR MORE INFORMATION, VISIT THETREASURYDTSF.COM.•

Dom Clucas respects “the heritage of classic barbering.” From clean tapers and fades to blending, designs, and straight-razor shaves, the entrepreneur offers it all at Black Hills Barbershop on Main Street in downtown Rapid City. 605 chatted with the licensed barber about his love for hot towels and what he’s doing when he doesn’t have someone in his chair.

At this time in my life, I’m very focused on building Black Hills Barbershop and am constantly educating myself in the barbering industry. This journey has been very surreal. Just a year ago I was unsure how this was going to all come together and today I'm staying late and opening early to meet clients' barbering needs. I’ve gotten to a point that I’m booked out for several weeks. It’s been hard to make everyone happy, and believe me, I’ve tried. Growing up in the Black Hills, fishing became a hobby that’s at the top of my list. Typically when I go fishing, it’s for trout or bass, and most often it’s with my girlfriend, brother, or uncle. We always have a great time, and of course I always catch “the biggest fish ever”… well, that’s the story I tell. In the past couple of years I’ve started fly fishing as well. I enjoy visiting with the guys at

It’s truly become a blessing in my life. It fills my cup for the week and gives me a lot to think and pray about. I’ve always felt welcomed and have never been disappointed and love being a part of a church that loves God and their community. I play recreational-league softball at the Star of the West Complex. Currently, I play on the Flying Aces, and this year Black Hills Barbershop was happy to be the main sponsor for the team. I grew up in Rapid City, and my mom, step-dad, and siblings all live here. My girlfriend, Katy, is also in the hair industry and a licensed cosmetologist with a large clientele at Mystic Edge. She and I are able to relate on many levels, and she inspires me every day. I love shopping and supporting downtown local businesses. This menu will feature both new foods and old favorites from their past decade in downtown Sioux Falls. “We will be intermingling new and old dishes into our menu through the fall,” said owner Stacy Newcomb. Server and host Taylor NewcombWeiland says that one of her favorite dishes on this season’s menu is the

Center-Cut Pork Chop with maque choux, sweet potato, onion, fresh sweet corn, pecans, maple syrup, and balsamic reduction. It was one of the first dishes they had when they opened the bistro, she says. Other dishes that will be on the fall menu include Pan Seared Duck with cherry molé, braised fennel, ancho-brined duck breast, and duck confit tamales, as well as Pan-Seared Scallops with pea-basil purée, fennel aioli, hazelnut soil, bee pollen, and seasonal vegetables.

As more young customers start frequenting the restaurant, different dishes have become more popular. Newcomb cites their fish tacos as being a particularly popular dish lately. The Street Taco features honey lime slaw, chipotle crema, avocado, cilantro, and fish of the day— lately, halibut—on a house-made tortilla. “People come in for the fish. The scallops and the fish. That’s what we’re really known for,” said Newcomb-Weiland.

“I love to eat fish, and we fly our fish in fresh several times a week,” said Newcomb. She explains that they only harvest the halibut for their fish tacos while it's in season, never from a farm. Newcomb says that when they opened 10 years ago, the restaurant’s goal was to be a “local, organic, chef-driven, all from scratch, high-quality place.” To do so, she says that they have to order from “good places that have good practices.” Besides being conscious of always ordering fresh ingredients, Newcomb also says that it's

been important to Parker’s to make sure that they're sensitive to all of their customers’ dietary restrictions. Parker’s Bistro has recently widened their vegan and vegetarian options, she says, and they make everything to order. That means that any dish can be made glutenfree. “It’s really being sensitive to that changing demographic that I think is important going forward,” said Newcomb. “We try to really take care of people, and that’s one of the ways that we do it.” FOR MORE INFORMATION, VISIT PARKERSBISTRO.NET.•

When 605’s director of sales and marketing John Snyder first started shooting with a film camera, he knew it was something he would quickly become passionate about. What he didn’t know was that one year later he would have an exhibit in downtown Sioux Falls. “The name of the exhibit is Developing Story: A Yearlong Film Record of Traveling with 605 Magazine,” explained Snyder. “The photos will range from landscape and portraiture to more journalistic images.” Taking place at the Sioux Falls Art Council, this gallery will explore the beauty of black and white film photography, focusing on the intricacies of traditional darkroom techniques. “The final pieces were created using dodging and burning, colored filters to adjust contrasts and chemical adjustments,” said Snyder. “Using silver gelatin paper also allowed me to highlight the smooth analog tonal curves and moody grains of black and white 120 film.”

Snyder is excited about shining a light on the medium of film photography, but says a few pieces in particular will stand out. “Both of these photos were almost not taken in the first place. One is of a bench in Aberdeen and the other is an instructor consoling a young student during a swimming lesson,” said Snyder. “The bench was just starting to emerge from a snow mound, and the extreme contrast is breathtaking. As for the image of the child, capturing such a great split second was incredible.” Check out Snyder’s opening reception on Friday, September 6 at 6 p.m. FOR MORE INFORMATION, VISIT ARTSSIOUXFALLS.ORG.•

I

’ll be honest, I haven’t really explored Chamberlain as much as I should have at this point in my life.

One morning 605’s John Snyder and I refused to do our usual stop at Taco John’s off exit 263 on I-90 and traveled into town on Main Street for the Anchor Grille. The diner was legit, but that was years ago. So when someone told me there was a newer restaurant in Chamberlain called The Smoking Mule, I had to try it.

7 0 \\\\\\\\\ S E P T E M B E R

Known for “burgers, brew, and barbeque,” the eatery invites you to “park your ass” (the face of the business is a donkey), and dig in to house-smoked offerings. One of the owners, Cheryl Gaulke, warned me on the phone that there were sandbags near the building, which we found out was located in the American Creek Marina. Pulled pork and the Missouri River? I was already intrigued. John joined me, and we were very impressed right away when we walked inside and noticed there wasn’t a bad view in the place. There were large windows all over the dining room, which also had industrial metal accents throughout.

STARTERS MULE MUSSELS

He also gave us a brief history of The Smoking Mule, and told us owners Cheryl and Terry originally opened the company in Kimball, which is where a lot of the staff are still from. The eatery just moved to Chamberlain this past March.

“We’re like one big family,” said Evans about the team. Patrons were obviously all close as well, because one made the paper towel holders displayed on the tables, and another made the tin Smoking Mule sign in the bar. The bar is also very neat, and is a hodgepodge of local brewery signs, which Evans says they are very passionate about.

“One of our bar tables actually has a Lost Cabin Beer Co. design on it, and we try to carry as much local beer as possible,” he explained. Speaking of, he brought over a Sick-N-Twisted Brewing Co. Orange Tart as one of our drinks to give us a taste. Since I was driving, I had the Strawberry and Cream Italian Soda, which was a fruity delight.

Up first were appetizers, and we tried the Bayou Spicy Shrimp and the Gouda Bites. Evans says the shrimp is one of the most popular items. The dish is a half-pound of shrimp sautéed in garlic butter and Cajun spices, and is served with grilled crusty bread. So much buttery goodness. Just when you think there’s so much (yummy) butter in the shrimp, the bread was also buttered and was great to dip into the bowl. While they describe it as “crusty,” the crunchy bread was one of my favorite parts. John took a few bites and said, “The shrimp has a little kick, but not too much." The Gouda Bites were battered gouda and tender macaroni fried to a golden brown. It came with ranch and I requested BBQ sauce. If I didn’t have to eat more entrées, I would have finished it. Then the Mule Burger showed up. This is a third-pound handcrafted beef patty with barbecue pulled pork, candied bacon, and cheddar and pepper jack cheese. When I see food items like this, it scares me. It just looks so intense.

Sat., Sep t. Arts Cen 28 ter

I knew I had to at least take a nibble, so I did. And it was awesome. All of the flavors complemented one another, and the pulled pork wasn’t too much on top and didn’t smoosh out of the bun. Pipeston

“It’s so juicy,” said John. The burger came with a side of the Smoked Mac and Cheese, which I was looking forward to. It honestly was a bit bland, and I had hoped it would have been more rich or packed more of a punch. But taking a bit of pulled pork and combining it with the mac helped. Next was the Green Chili Pulled Pork Chimichanga. This has pork with house green chili sauce, refried beans, and cheddar cheese wrapped in a flour tortilla fried until crispy and served over a bed of lettuce with sour cream and salsa. This is a great item for Mexican food fans, especially if you love refried beans, because that’s what a lot of the chimichanga entails.

“There are a lot of beans in this, but I’m not mad about it,” I said. The side salad made us feel semi-healthy in between bites of refried beans and pork, but we didn’t really focus on the salad as we consumed all things involving salsa and sour cream. Our finale was the Chicken and Ribs Combo, which was a quarter smoked chicken and a quarter rack of ribs with a choice of white or dark chicken. This came with Kick Ass Loaded Beans, which are house-made in their smoker. They were, in fact, loaded with three different kinds of beans, smoked ribs, pulled pork, seasoned burger, corn, peppers, and more. These are the star of The Smoking Mule. You know how sometimes you get a feeble attempt at beans that you get in a tiny cup when you go to a pork and ribs restaurant? These were standalone fantastic. And then we ate the ribs and chicken. The chicken was nice and moist, and the ribs were smoked to perfection. “The ribs have a nice sweet sauce,” said John. This meal works solo or for sharing.•

BOTTOM LINE

Unless you’re in a hurry, why would you ever turn down quality food and a view of the river to break up your road trip? Between the Mule Burger and the side of beans that I could eat as a meal, I’m never making the mistake of a gas station or fast food as an option again.

I don’t think I’ve ever been more excited about a side of beans in my life. The mix of ingredients plus the smoky taste were so different and make my mouth water just thinking about it. Also, it’s not every day you come across a place in South Dakota with a solid shrimp dish. I’m excited to come back and try things like the mussels.

The dining area is really nice, and I dig that they kept the mural but added an industrial look to the space. I loved the bar, and hope to make a day trip soon where I can hang in there, grab some popcorn, and drink local brews. Then there’s the patio with a bonfire and tremendous views. I’d like to drink out there as well.

Most items are in the $10-$15 range, but there are some items like the New York Strip and a larger order of the Bayou Spicy Shrimp that are over $20. All in all it’s very affordable, especially for location, location, location.

WHERE THE CHILD THINGS ARE

PAGING DR. MOM by Kyle Determan

W

hen you have a baby people love to tell you about the dangers of food allergies, adult laundry detergent, and stranger germs. On top of that, there is the actual medical advice you receive from doctors, nurses, and the everso-trusty internet. Whether it be essential oils or the newest research on infant Tylenol, you store the information for a later date, and keep on keeping on.

As you get further from the newborn stage, you worry less about the occasional cough or sniffle, attributing it to allergies or the latest daycare bug floating around.

Once I grabbed her things, got the full story from the teachers, and loaded her into the car, the next task was getting home without having to pull over. Mission impossible.

Until the day it is more than a cold, which is what happened to Sloan just days before her first birthday. It was a Friday afternoon and I was on my way to pick Sloan up from daycare when I got a call from her teacher saying she had been sick a couple of times in the last hour, and that she needed to go home.

We ended up pulling over twice in the four blocks it took us to get home. I knew something was not right, so instead of pulling into our garage, I called Reid and met him at urgent care. The doctor on call decided it was a stomach virus, suggested we grab some Pedialyte, and sent us home with instructions to bring her back if her symptoms worsened.

Only a few blocks away, I left my cart at Hy-Vee and raced to daycare, knowing she had never been this sick before.

What I’ve Learned EE

Children will always look to you when they're confused or don’t know how to react. Keeping as calm as possible in a hospital setting will help tremendously with your little one’s emotions.

EE

Google is fine, until it scares you into thinking your baby is in critical condition. Do your research and find the local Ask-A-Nurse number. It’s what they’re there for.

EE

Don’t let people alter your sense of intuition. As a parent, you know your child better than anyone. If you think something is wrong, listen to your gut and trust yourself.

The weekend offered zero relief from the so-called virus, leaving us intently watching our very pale and tired baby sleep away the day, only waking up to cry and cuddle.

Fast forward to Sunday afternoon and something clicked in my mom brain. I packed her diaper bag, threw on some comfy clothes, and drove my almost 1-year-old to the emergency room.

Sunday morning rolled around and I was ready to take her to the emergency room. Everything in me was screaming something was wrong, but trying to balance the multiple pieces of advice I had been given left me at a standstill.

Being the 42nd person in line, I was apprehensive about sitting in the waiting room with a baby at 9 p.m. by myself, but I knew she needed this.

Which is exactly where I went wrong. I knew that she shouldn’t be sleeping as much as she was, or that her intake should have been better. What I didn’t know was how torn I would feel when trying to justify my decisions.

After what felt like hours (it was actually three), we got back to a room and I knew immediately I had made the right choice, especially when one nurse turned into three, all with something different in their hands. Vitals were taken, questions were asked, and after I got settled on the bed with her on my lap, IVs were started.

My little patient was severely dehydrated and before I could even text Reid, they were getting us a room to spend the night. Let me tell you, having to restrain your baby while they get poked and prodded is one of the hardest things you'll ever have to do. What’s even worse? Knowing that I could have potentially prevented an overnight stay. Between beating myself up for not bringing her in sooner and trying to keep her calm by watching CocoMelon on my quickly dying phone, I realized that the best thing I could do was cuddle her and wait for the doctor. Three bags of fluid and countless games of peek-aboo later, we were home the next night, snuggling on the couch and finishing off some Pedialyte when I burst into tears. My sweet, innocent, nonverbal child was doing her best to tell me that something was wrong and I let the doubt and fear of being “that mom” win. Being “that mom” means listening to your intuition, but it also means listening to your child. If you think that something is wrong, it is so much easier on both you and your baby to be reassured than admitted. I’m not saying you need to run to the hospital for every scrape or bump, but never let outside opinions dictate what you think is best for your baby’s health. Drawn to a more holistic solution? That’s great, as long as you trust your choices and listen to your little one, whatever you do will be the right choice.•

ASK THE JOHNS

Know Your SD

+

YES, ALL THREE OF THESE GUYS ARE NAMED JOHN. YES, IT WAS A POPULAR NAME IN THE ‘80S. THE IDENTITIES OF THESE THREE AMIGOS HAVE BEEN ALTERED TO PROTECT THE INNOCENT. HAVE A QUESTION FOR THE JOHNS? SHOOT AN E-MAIL THEIR WAY: THEJOHNS@605MAGAZINE.COM.

I KILLED MY GIRLFRIEND’S GOLDFISH, BUT I DON’T WANT HER TO KNOW. SHOULD I BUY HER A NEW FISH OR SHOULD I JUST TELL HER THE TRUTH? JR: Always, never,

sometimes is the rule on that. Or is that for buttoning your jacket? JW: Can I offer an

alternative? Dump her. Who has a pet goldfish? I’ll tell you who, serial killers and kids that won them at a fair. Either way, you shouldn’t be dating her! JT: The good in me wants

to say tell her. But the fact that it’s a goldfish makes me want to say just replace it. Maybe “rock, paper, scissors” with someone to figure out this issue.

I NEVER KNOW WHAT TO GET MY BOYFRIEND FOR HIS BIRTHDAY, OUR ANNIVERSARY, ETC. DO YOU HAVE ANY IDEAS FOR WHAT I SHOULD GET HIM? JR: Definitely a BJ. I could always use new blue jeans! JW: A steak, a glass of fine scotch, and some peace and quiet. Seriously, Ron Swanson him. JT: It’s always nice to get someone an experience. Maybe take him to a new place he’s wanted to eat at, or maybe even an overnight trip somewhere. Or if you normally hate something like golfing, surprise him with nine holes. He’ll really appreciate it.

WHENEVER I GO TO THE GROCERY STORE I BUY WAY MORE FOOD THAN I NEED. HOW CAN I KEEP MYSELF FROM WASTING FOOD AND SPENDING TOO MUCH?

Wall Drug Contains between $3 million and $4 million dollars of artwork (Rapid City Journal).

+ 7,000 The South Dakota Art Museum is home to more than 7,000 artifacts relating to South Dakota’s history (Culture Trip).

JR: Do you think I grocery shop for myself? Pass. JW: The ancient Greeks had a pretty sweet plan where they just binged and purged so they could eat more. They even had buildings called vomitoriums. Now I’m no doctor, though.

+

JT: Definitely eat before you go so you don’t grab things that look good. Also, create a list, and don’t stray from it unless you absolutely have to.

Which of the following have won awards for their building design? A.) THE FROILAND SCIENCE COMPLEX AT AUGUSTANA B.) THE BEACON INSTITUTE OF TECHNOLOGY AT DAKOTA STATE UNIVERSITY C.) THE SOUTH DAKOTA STATE CAPITOL LAW LIBRARY IN PIERRE D.) ALL OF THE ABOVE D. ALL OF THE ABOVE (ARGUS LEADER)

+

INSTAGRAM The most Instagrammed spot in South Dakota is Mount Rushmore National Memorial (People.com).
