What Inspired You to Get into this Industry? My inspiration to get into this industry started over 30 years ago. The hospitality industry isn’t for everyone, but it has offered me & my family many tremendous opportunities over the years!
What’s your Favorite Part of Watertown? Watertown has something for everyone. We feature 2 lakes, 2 golf courses, a new airport terminal with direct access to Chicago and Denver Airports, 20+ miles of walking/bike paths, & ample hunting & fishing spots.
What’s your Favorite Type of Patron? Our favorite patrons are the ones who have become a part of our Mavericks family! We have many locals & business travelers that dine with us on a regular basis. They have their favorite server or table, & we wouldn’t be who we are without them!
What’s your Drink of Choice? I prefer a fullbodied red wine with most meals.
What’s your Favorite Downtime activity? My favorite thing to do in my down time is be aboard our pontoon on Lake Kampeska with family & friends.

ON THE MENU
The Park
“ The Park was inspired by a lot of the feel of Las Vegas,” said general manager John Hayward “Great detail was given to every aspect of the décor, including some of the most comfortable seating to sit back and relax. We offer a large restaurant, sports bar, and a casino.”
The 32,000 square-foot upscale bar, casino, grill, and nightlife center at Baken Park in Rapid City exemplifies the big city vibes right at the entrance with a tree installation.
“If you go to Vegas, you will see places like MGM Grand, and there is usually a tree around,” said Hayward. “The inspiration came from that, and then there is a little park bench where you can sit and wait to get seated to play off the ‘park’ theme.”
While it feels like Vegas, it doesn’t have the same price tags.
“The Park has something for everyone,” said Hayward. “You can have anything from a quality cocktail to chicken tenders.”

From 9 a.m. to 2 p.m., guests can pay $20 for adults and $10 for children 10 and under for stations of salads, soups, pizzas for kids, breakfast items like bacon, eggs, and sausage, and end it with prime rib and a chicken dish with a starch.
And don’t forget the plethora of desserts. Hayward says The Park is adding a seven-layer chocolate cake called the 707 Sinful Cake, and also will be adding his favorite—Tres Leches Cake. An “ultra light” sponge cake, the delicacy is soaked in three milks (“tres leches”) and is popular in locations in the south.
“We found a food supplier out of Texas that swears by it, and I tried it and it reminded me of being back down there,” said Hayward.
June 30 was the first time The Park had a Crab & Prime Rib Buffet with Canadian Snow Crab. Hayward hopes to keep it as a permanent feature.
“We’re thinking about doing [the Crab & Prime Rib buffet] the last Friday of every month,” said Hayward.
“When I eat breakfast, I like having everything. I'm a buffet person, so if I find a great breakfast buffet, I’m there.”

Guests can add items like tea, juice, sodas, or 21-plus breakfast drinks like a Mimosa or Bloody Mary

Hayward says lunch and dinner items are everchanging and focus on variety and quality with “an innovative spin” on entrées like Chicken Marsala or Walleye Fish & Chips, but also features classic favorites like Chislic
The Picnic Basket is frequently ordered and is a sharable starter of chicken tenders, cheese curds, and onion rings. Another favorite is the Prime Beef Dip with tender-smoked prime beef, peppers, and onion on a toasted hoagie, served with au jus.
One of the most popular dinner items is the Cajun Style Pasta with andouille sausage, blackened shrimp, roasted chicken, caramelized onions and peppers, and Cajun alfredo over penne.
“We sell so much of it that let’s just say the Cajun Style Pasta will not be going away any time soon,” laughed Hayward.
“A lot of us have been here since day one, and we really want to make this special for the community.”

As far as the drink menu, Hayward says it ranges from craft beer, to cocktails, to an extensive wine menu, to gluten-free drinks. Bar manager and events coordinator Brianne Thompson says martinis are a hot seller and The Park has a wide range of mules.
“One of the most popular mules is the Watermelon Mule. We also have a Rye Mule, and we’re coming up with some new ones as well,” said Thompson.
The frequently ordered Old Fashioned features The Park’s Oak & Eden made especially for the restaurant and event center.
“We had a whole barrel made and chose the specifics, and it’s even labeled for The Park on the label,” said Thompson.
Just beyond the dining area is the Sports Bar that features handcrafted cocktails with house-made recipes and ingredients. Patrons can watch sports in the state-ofthe-art, high definition screens.
The Park also has three casinos with 30 machines. Then there is the event center—707 Nightlife.
At 6,000 square feet, the space can seat up to 300 people with a stage, a professional dance floor, full bar, and layered seating areas for attendees’ visibility.
“This area—I call it the crown jewel of The Park— has had a lot of people through here,” recalled Hayward. “We’ve had comics, bands, weddings, business gatherings, and even a baby shower in here,” said Hayward.
Bands have included Minority Falls, Judd Hoos, and a 90’s Prom Featuring Flannel. The nightlife center also hosts Latin Night at least once a month.
Hayward says the success of The Park lies within the guests and the staff of 85.
“We had no idea how much the community wanted this place, and that is the drive in my manager meetings, and we've all on the same page,” said Hayward. “I’ve never had such a great team in the restaurant, event, and casino industry.”
“I was told that there are 15,000 beads up in our bead installation above the main bar, and it took three weeks for three professionals to put that together.”

During the peak of the pandemic, Kirsten Gjesdal and Rachel Meyer were on their daily stroll with their children when the two began dreaming of the things they missed during quarantine.

“We missed the conviviality of gathering with people and exciting food offerings,” admitted Meyer.
As the two continued chatting, they were committed to starting a dinner party group, perfect for curious food lovers.
In the fall of 2021, Gjesdal and Meyer hosted their first event under the pair’s new venture, Golden Hour Supper Society.
“Our goal in founding Golden Hour Supper Society was to provide a unique dining experience for folks living in Brookings and the surrounding area,” said Meyer.

Golden Hour creates unique dining experiences that are open to the public as ticketed events that feature guest chefs and various styles of food.
The pair's goal is to continue to bring a community of people together who enjoy trying new things including adventurous or upscale cuisine, while connecting with others who appreciate whimsical events.
Since its inception, Golden Hour has hosted six events. Each dinner is produced in different locations that fit the theme and vibe of the dinner.
“We’ve been in a refurbished barn, between rows of grapes at a winery, inside an old church, and other interesting places similar to those,” said Gjesdal.
Their most recent themed dinner paid homage to a trip to the county fair. Blue Ribbon Fare was aimed at a celebration of making an event out of everyday life.

The rustic bar and event venue transported its guests to a night at the fair with checkered tablecloths, balloons, peanuts, saltwater taffy, and various carnival games.

The summer night began with a cocktail hour served with a Sweet Corn Fritter, topped with Hot Pepper Jelly, and paired with alcoholic or non-alcoholic Strawberry Lemonade
After the introduction of Meyer, Gjesdal, new members, and Taylor, guests were read a poem and celebrated the Golden Hour Toast Following, guests made their way to their seats at a large community table, where we indulged in five courses.

Our first course was a smokey Mini Nacho topped with Texas Red Chili, a pickled jalapeño, and crema. A classic Bratwurst Corn Dog followed, paired with Chow Chow and pickled mustard seeds.
Our third course consisted of Tomato and Basil Shaved Ice with herbs and croutons. Next, we were served a Mini Walleye Roll, complemented with lemon, tarragon, and Salt and Vinegar Potato Chips.
After taking time to chat with friends, old and new, it was time for the main course, the Smoked Turkey Leg. The fair-favorite was served on top of a Bacon and Potato Pancake with Bratwurst Gravy.
Our meal concluded with a take-home box for leftover turkey legs and sweet homemade, fair-inspired ice cream. Each guest had a taste of Sweet Corn, Caramel Apple, and Oreo ice cream and could add Funnel Cake Crumble, Oreo, or sprinkle toppings.

Throughout the night, attendees played fair games including a balloon-dart wall and a tin can throw. Cailyn, Alana, and I each walked away with prizes of small whale figurines, which mine sits proudly on my desk.
“It was truly a memorable night,” reminisced Meyer.
The Golden Hour Supper Society hosts two to three ticketed dinners a year. Meyer shares that tickets are available for purchase on their website up to a month and a half in advance of the event date.
Guests with allergies or dietary restrictions should not shy away from Golden Hour dinners, as Meyer and Gjesdal work to accommodate everyone's needs.
“We accommodate food restrictions as best as we can and always have non-alcoholic options for beverages,” said Meyer.
Golden Hour Supper Society continues to encourage its guests to step outside their comfort zone and enjoy great company and meals.
“My hope is that we continue to tap into the heart of what society is really about in unique ways and always bring something new to our members,” expressed Meyer. “The heart really is incredible food and connections right here in the Brookings area."
In an effort to hold a physical memory of each event, Gjesdal scours thrift and antique shops for on-theme metal animals totems.

“Imagine having a home or even just a space that allows you to feel inspired every time you walk through the door—a place where you can truly feel like yourself,” said Weerts.
After leaving her corporate job in the Twin Cities, Weerts settled into becoming a stay-at-home farm wife in Bancroft, SD to prepare for beginning a family. As she sat at home, more often than not, Weerts decided to keep herself busy with home renovations.
“I wanted to make the house feel more like 'us,' so I redrew our entire first floor plan and even removed our roof to create the look we wanted,” reminisced Weerts.
As her home renovations were crossing the finish line, Weerts felt in her heart that she needed to create a business where she could help women who share similar experiences.

When his coach at Action MMA decided to leave the gym in 2008, Hoyer took it upon himself as one of the more advanced students in the area to start his own gym under the name Next Edge Academy.
“It’s been crazy since then,” reflected Hoyer. “We’ve had a ton of people go off to the UFC and be on television.”
At Next Edge, Hoyer and several instructors teach Brazilian Jiu-Jitsu, Boxing, Mixed Martial Arts (MMA), and Muay Thai, which is similar to Kickboxing
“By far we’re the biggest Sioux Falls gym that does this,” he said, “and we’re the first to continue Brazilian Jiu-Jitsu, MMA, and Muay Thai after Action MMA left.”
On the mat, Hoyer says it’s really more about engineering than anything else. He describes anticipating your opponents moves and choosing your own to combat them as “tinkering.”
“It’s fun,” he said.

While the classes can seem intimidating, Hoyer encourages anyone to watch or attend class.
“The group here is absolutely amazing. They’re always kind to the folks that are coming in to try a class,” he said.
The 605 team–editor Gabby Sugenga , designer and photographer Cailyn Patterson, office manger Kelsey Sutton, and I–were abuzz with excitement as we entered the gym. None of us had any experience, but we were ready to gain some.
After being welcomed in, we were led to the mat, where we all lined up and bowed in as a sign of respect, and to begin class.
Cheyanne Bowers, professional MMA fighter, introduced herself as our instructor. She led the four of us through the beginner-level basics of Brazilian Jiu-Jitsu.

Using another fighter, Bowers demonstrated each move and position to us very intentionally, taking the time to explain the point of each move, what not to do, and how to be most successful in it.
The team clumsily replicated Bowers' flawless moves under her watchful eye. After teaching us a handful of scenerios, she let the pairs go live and attempted to put the moves into practice.
After unsuccessfully trying to defend myself against Cailyn and dissolving into a fit of giggles at the end of each match, I decided a career in Brazilian Jiu-Jitsu was not for me.
Bowers then took us over to the boxing ring and led us through different punches: jab, cross, lead and rear hook, and lead and rear uppercut. Though we struggled to wrap our heads around the proper form, she was patient with her instruction.
After learning the moves, Bowers let us get out some frustration on each other, with one partner holding mitts and the other strapped into boxing gloves.
The team was surprised to find out how much effort goes into practicing these new skills. The next day, soreness let us know that we had used muscles we didn’t even know existed. Though we didn’t feel like we could quite catch on. Hoyer could relate as a self-proclaimed slow learner, and was able to give some advice:
“I feel like I came out with a much better understanding than someone else that caught on quicker, because I had to figure out those small details,” he said. “Being patient with yourself is the biggest thing.”
In addition to being patient, Hoyer and his staff operate Next Edge under a flipped classroom type of curriculum.
In a flipped classroom, the student advances through the curriculum at their own pace.
“I think it's best for the learner,” said Hoyer. “A lot of this stuff is concept and technique. I don’t want to have you move on and without fully understanding it.”

Another initiative for Next Edge is to make certain that the skills taught in the classroom remain consistent when put to practice in the real world.
“It’s a real trial and error style of learning that actually works in a real life situation,” said Hoyer.
The gym helps to train law enforcement officers, and giving them the confidence to know they can use a minimal and safe level of force is vital to Hoyer.
Though a relatively unassuming storefront on 8th Street, Next Edge Academy has trained some big names that Hoyer is proud to consider friends.
“When you watch an event on UFC, chances are that many of the fighters or coaches you see have been in this gym in Sioux Falls, South Dakota,” he said.

When the idea of creating an affordable and accessible facial salon popped into Henry's head, she hit the ground running.
The first FACE FOUNDRIÉ opened in 2019 in Edina, MN, with the mission to commit to empowering individuals through healthy, radiant skin.
“The facial bar combines innovation, expertise, and a luxurious spalike ambiance to provide an unforgettable skincare experience,” said Sherri Kanzenbach, co-owner of the Sioux Falls location.
To achieve their goal, FACE FOUNDRIÉ provides efficient and effective services for all things face: facials, brows, lashes, and skincare.
To get away from the daily hubbub, the 605 team headed to the Facial Bar. Joining the endeavor with me
were multimedia designer and photographer Cailyn Patterson and sales and account manager Greta Smith
During our visit, we experienced two Focused Facials and one Brow Henna service.
While Greta and I were situating ourselves at our respective stations for the facials, our estheticians, Madison Schatzer and Skylar Mullen, asked us about our skincare concerns and goals.
“We have facials for everyone and every skin concern,” said Kanzenbach. “Whether you’re struggling with acne, wrinkles, or dry or dull skin, we can help. Our skin experts have the education to guide you through the process.”
Kanzenbach says FACE FOUNDRIÉ offers a focused and approachable menu.
The menu offers six focused facials to choose from: Clean + Natural , Sculpt, Cryo Queen, Dermababe, Hydrafacial + LED, and fan favorite, Foundrié Glow with new menu items to come in the following months.
Customers can tailor their service with various enhancements to achieve their skin goals, such as dermaplaning, cryotherapy, collagen masks, chemical peels, and more.
After expressing our goals, Schatzer suggested the Sculpt facial with an enhancement for myself, while Mullen suggested the Clean + Natural for Greta.
Our estheticians took a moment to explain the purpose of each facial. The Clean + Natural facial helps boost skin cell turnover and eliminate puffiness or inflammation with the use of a Gua Sha Stone massage.
The Sculpt facial is described to be a workout for your face with the use of Hungarian Massage techniques and facial cupping to lift, tone, and sculpt the face. This service overall helps reduce puffiness, promote lymphatic drainage, and boost circulation.
As for enhancements, I experienced Dermaplaning —the use of a medical-grade scalpel to remove the top layer of dead skin and peach fuzz.
“The Sculpt with Dermaplaning leaves you lifted and toned with the best glow of your life,” said Kanzenbach.
It did, in fact, give me the best glow of my life.

Schatzer and Mullen remained through during the 40-minute facial, leaving Greta and I feeling refreshed, revived, and relaxed.
With our services drawing to a close, Cailyn was eager to get her brows hennaed.
“Brow Henna is the tinting of the skin and brow hair. This adds a little more color to the brows and has a long-lasting effect,” explained Kanzenbach. “The tint on the skin is going to last seven to 10 days and then the tint on the hair will last upwards of six weeks.”
Cailyn kicked off her sandals and settled comfortably in esthetician Chloe Jamason's station.
“She began by washing my brows in order to remove any excess oil, dirt, or makeup, proceeded to comb through them, and then coated my brows with the henna dye,” said Cailyn.
After the dye was carefully applied, Cailyn peacefully waited 10 minutes for the dye to absorb and dry, while I snapped a couple of photos to capture the intense state of her brows.
Jamason gently removed and cleaned up the dye, revealing Cailyn’s new bold and beautiful eyebrows.
“With our brow services, we can work with what your actual brows will do. Our goal is to keep them natural,” said Kanzenbach.
FACE FOUNDRIÉ also offers lash services, such as lash lifts and tints.
“Our lash services are perfect for those 'on the go' type of people that want to look like they have mascara on, even if they’re just rolling out of bed,” laughed Kanzenbach.
She also shared that memberships are available for clients looking to receive facials consistently.

A DEVELOPING DUO MCGREGOR & MAIN LUXURY LOFTS
Ever since Isaac and Carmen Almanza met flipping homes in 2012, they have started a family and have been part of major developments and business endeavors in the Black Hills area.
“Both of us combined have been working in real estate, design, and development for over 40 years,” said Carmen.
The developments include several historical remodels, complete neighborhood redevelopments, land developments, owning their own real estate company, and running several luxury vacation rentals.
One of the newest projects that just opened last month is McGregor & MainLuxury Lofts on Main Street in Hill City. The vacation home rental experience features seven unique loft-style condos that can sleep from two to 12 guests.
Hill City has been special to the Almanzas since they moved to town about 10 years ago.
“We absolutely love Hill City and the community,” said Carmen. “We decided to start selling some of our other investments so that we could put the time and effort into this community where our kids will grow up and where we reside.”

McGregor & Main itself is a new build after the Almanzas discovered it would be too much work to restore the previous buildings.
“There were two buildings prior to McGregor & Main that we had purchased on this very site,” described Carmen. “The buildings were in such bad condition it actually had a stream flowing through the basement at one point. We couldn't imagine putting the money into fixing what was there.”
The location itself is also a highlight for guests. Along with being in close vicinity to Mount Rushmore National Memorial , Crazy Horse Memorial, and Custer State Park , half of the rooms overlook Main Street in Hill City.

“Our main street shops and art galleries are fun and unique, it’s steps away from 1880 Train, and the wineries and breweries are fun and family-oriented as well,” said Carmen. “We love to ride our bikes on the Mickelson Trail as well as visit all the nearby lakes and hiking trails in the area.”
Hosting a large group? Guests can rent out the entire building, which can sleep up to 36 guests, or they can rent the Presidential Luxury Loft that sleeps 12. The three-bedroom, luxury loft penthouse overlooks Main Street with a large, private balcony. At 2,600 square feet, it has a spacious living and entertaining area, a dining area, full kitchen, three-and-a-half bathrooms, and a built-in bunk bed section next to a gaming area with a foosball table.
“I love the double balcony that overlooks all of Main, plus another balcony in the upper loft,” said Carmen. “It also has double the living room area, a gas fireplace, and its own laundry.”

A downtown Rapid City location of The Pack Mule will also be opening soon on Saint Joseph Street.
“The Pack Mule will have fresh fish from Dakota Seafood , meat, a bakery, flowers, as well as beer, wine and liquor, and camping tricks of the trade,” said Klinkel.
The Almanzas have another luxury boutique hotel in downtown Deadwood on Main Street called The Bank Hotel | Deadwood. Right across from Outlaw Square, the property offers a similar vacation rental experience “with even more luxury,” according to Carmen.
“You can actually watch concerts, parades, and all the festivities from the condo windows,” she said.
As the entrepreneurial pair just opened the doors of McGregor & Main, they’re already working on the next project. They own the lot across the street from the hotel and hope to build to lease or sell.
“We are trying to be very selective on what will go there so that it will just enhance the experience of Hill City even more,” said Carmen. “I’d love to see a spa.”

Another project is Ranger Square, which is a similar concept as Main Street Square in Rapid City and Outlaw Square in Deadwood.
“Ranger Square will differentiate itself by adding elements of Hill city charm to the design, as well as being a useful and exciting tool for our school,” continued Carmen. “We will also add several more commercial spaces next to the square with living quarters above the commercial space.”
It’s these types of developments that the Almanzas are passionate about for not only tourism, but for locals.
“There is a lot to talk about on the future development in Hill City and exciting things to come,” said Carmen.

The name Britt Haus is derived from Skattum's maiden name and her desire to create a home that her patients could return to, no matter what.

“I realized that I was eating a lot of ‘dinosaur’ chicken nuggets," laughed Skattum. “I just felt awful, so I took a hold of my own health and wellbeing and discovered that I wanted to give that same kind of care and personal attention to my patients.”
In April of 2022, Skattum and her family moved from the sunshine state to Sioux Falls. She hit the ground running when it came to opening her new private practice, Britt Haus, opening a few short months later in November.
“I believe the best outcomes come from getting to know your patients and taking the time to understand their stories,” shared Skattum. “Britt Haus was born from that love.”
Britt Haus focuses on addressing the unique healthcare needs of women at every stage of life through Direct Patient Care. This model of healthcare prioritizes personal and trusting relationships between patient and provider.
Skattum understands the importance of creating a comfortable and welcoming environment for patients where they can openly discuss their concerns and receive individualized attention.
“Our mission is to empower women in their own health and wellbeing to have a generational impact on families and communities,” said Skattum.
She acknowledges that women have a tendency to focus on others, but when her patients are happy and thriving, this positivity radiates to everyone around them.
Skattum provides an extensive range of healthcare services, including primary care in gynecology, hormone therapy, annual exams, and lifestyle medicine.
“My patients consist of any female who is looking to optimize her health, wellbeing, and hormones in any range outside of pregnancy,” said Skattum.
Britt Haus is known for its patient-centered approach. Skattum takes the time to listen to her patients, understanding their unique needs, concerns, and goals.
“It’s easy for women to overlook their health when they’re busy with their families or careers,” shared Skattum.
Skattum says that she begins each hour-long visit with meaningful conversation.
“We talk about whatever it is that you would like to talk about and we take a deep dive into how you’re feeling, how you want to feel, and how we can help facilitate those changes for you,” she said.
The initial meeting is followed by a regular physical exam and vital check, after which Skattum will help form a carefully curated plan to help accomplish those goals.
At Britt Haus, Skattum’s patients can purchase a membership, as she operates independently of insurance.
The direct primary care subscription model allows patients to enjoy elongated appointments, more one-to-one time with Skattum, and access to same-day or next-day appointments all for a fixed and affordable monthly fee.
