Alas, I took an oath to try Profile by Sanford in October, so instead of increasing my calories, I cut back—way back. I was thrilled to discover new eating habits, and I’m definitely taking steps to change my routine.

I'm one of those people who watches videos online of complete strangers eating and reviewing dishes, so hands down the Food + Drink Issue is a personal favorite of mine. Luckily for me, I get to style, photograph, sample, and hungrily stare at the glorious creations on the computer while editing the photos for publication! I can confirm that you're in for a real treat this month. I especially had fun “posing” the Kringles Gourmet Snacks and sampling their wide array of flavors.

Join Lake Area Technical College in the 22nd Annual Holiday Festival of Trees, a fundraiser for scholarships, programs, and campus upgrades. Start with the Silent Auction, and mingle over the hors d’oeuvres while you’re surrounded by twinkling Christmas trees and wreaths that were donated by various businesses. Christmas at the Capitol 2021 November 24-December 26 SOUTH DAKOTA STATE CAPITOL | PIERRE | 8 A.M. This year’s theme for the Christmas at the Capitol in Pierre is Winter Wishes. Tracy Rix and her children—Conrad, Roscoe, and Gideon—were helping season the pork for dinner at the kitchen island. “You should really go outside and see the pigs,” Tracy said. I headed out back, and three pigs were rolling around, caked with fresh mud after some rain that morning. Two of the boys followed me and were taking turns jumping off haystacks. “We have just completed soybeans and are about half done with our corn harvest,” said Grant, the farmer, husband, and father.

+FACT Grant serves as the president of the South Dakota Corn Utilization Council, is on the Groton Area School Board, is on the North East Special Education Co-op board of directors, and serves as the treasurer of the Brown County Mud Creek Watershed District.
The farm has six employees currently, including Grant, his father, Roger, and his brother, Jarrett. “Our family farming operation started with my great grandfather, Floyd, in 1920 by renting all the ground from a Minneapolis banker,” said Grant. “After 20 years of renting, he wanted to own land, so he bought the farm that our main operation is located on.” Floyd’s sons, Gerald and William, joined him in the operation. Gerald’s son, Roger, followed suit after receiving a degree in agronomy from South Dakota State University in 1975. Grant also received his degree in agronomy, and he and Jarrett are the fourth generation on the farm. “Our farm raises corn, soybeans, and seed soybeans,” Grant said. “My wife and kids and I also have a bit of a hobby farm where we raise three heritage breed pigs and a small flock of chickens.”

The Rix family started raising pigs after Grant’s sister-in-law had extra piglets. “My sister-in-law raises pigs as certified organic and grain-free animals and sells the meat to individuals and a local co-op food market under the name Bumpy Road Ranch,” he said. “My wife and I decided it would be fun to raise our own pork, and it would be a great teaching opportunity for our children to know where their food comes from.” While the children are still young, they “do what they can” to feed and water the pigs.

A myth Grant hopes to clear up is that farmers only care about getting the most out of their commodity. “Farmers and ranchers care about everything they do,” he said. “Whether it is the soil health, the health of their animals, or the health of their neighbors in their community.” With an average harvest after a dry summer, Grant says 2022 is looking promising thus far. “We have recently caught some good rains in late August and September that have built up our soil water profile, so spring is already looking to have a great start,” he said.

by Dawn Geertsema When Patrick Koster and his wife Melinda Sellers Koster began selling some of their homemade treats, they had no idea their world was about to shift. What once was a family love of creating new snacks in their kitchen was about to expand into so much more: Kringles Gourmet Snacks. “We basically took all of our snacks and everything we made at home and brought it to our store,” said Melinda.
They introduced their snacks, mainly a slew of handcrafted pretzels, at their Mitchell craft lemonade shop, LemonHeads, to accompany their 17 lemonade flavors. With the shop being right across the street from The World’s Only Corn Palace during peak traveling season, tourists and locals alike got a taste and were hooked. From there, the couple built Kringles Gourmet Snacks to share their caramel-coated and seasoning-brined pretzels with the world.

“When you get something that’s made from scratch, it’s like Grandma used to make,” said Patrick. “Your taste buds don’t know what to do with it because it's picking up all of these tastes that you crave.” During the pandemic, the snack sales soared despite shipping only from calls and other inquiries. “We’re growing tremendously fast,” said Patrick. “We have prided ourselves on the fact that wherever we go, the product sells really quickly. Once people find it, they keep coming back and buying more.” The interest in their preservative-free products is attributed to their detailed creation process and their dedication to quality and bold flavors. “We’re the only company in the United States that does the process that we do,” said Patrick. “The pretzels sit in a brine for 24 hours, and we hand container everything. Everything we make is handcrafted.” Patrick has curated a scratch-made caramel to pair with various sweet-flavored options, including Birthday Cake and Toasted Samoa.

Melinda says Kringles boasts one of the hottest pretzel flavors in the U.S., Lucifer’s Straight Jacket. Scorchin’ Insanity, Scorpion Buffalo, and Hellfire Hot Reaper also bring the heat. “All of the seasonings that we make and create will all go into dips or cream cheese spreads, so we’ll have a whole seasoning line soon, as well,” said Patrick, who is hopeful to launch them in the holiday season. “We have our seasoned sesame sticks and seasoned nuts, so everything that we have is multi-use.”
Instructions Add parsley, garlic, oregano, salt, pepper, marjoram, and chicken bouillon cubes to water and bring to a boil. In a separate pot, boil potatoes until soft. Then drain and set aside. Brown ground sausage and link sausage in a pan. Remove link sausage, slice into quarter-inch slices, and set aside. In the same pan used to cook the sausage, melt four sticks of butter. Then slowly stir in the flour. It should be the consistency of a thick paste. Do not let the roux burn. After the roux is ready, scrape it into the pot with the seasonings, and whisk until it starts to thicken. Combine the half and half with the cooked diced potatoes, sausage, and kale/spinach, and stir. Finish by stirring in the small bag of shredded parmesan cheese.

“Our numbers have tripled from what they were last year, if not quadrupled, and we haven’t even hit the holiday season yet.” -Patrick Koster Across five states, Kringles distributes to about 108 locations and may expand into select Hy-Vee locations, as the company reached out asking to stock Kringles pretzels. “We don’t want to be on every street corner,” said Patrick. “That’s not our model. We select where we go, and we don’t target every business.” But as business booms, they have some ideas for how to cultivate that growth. “We’ve talked about doing other markets—of putting a retail store in where we’d combine the LemonHeads brand and the Kringles brand," said Patrick. "We’ve looked at the Sioux Falls market and the Omaha market.” Patrick added, “We’re looking at potentially doing something in 2022 where we actually have a physical Kringles location.”

Flash forward to August 2021, and I had put on 15 pounds (or more depending on the week) from stress, work, and the like. During our first meeting, we went through a detailed (but quick) program onboarding setup, including recording my goal weight and going over grocery lists for dinners and daily routines. When Jake Collins got a call from Lamont Companies about working in their newest restaurant, Three22 Kitchen & Cocktails in Aberdeen, as chef and general manager, he knew the opportunity was too good to pass up.
“I was leaving my former job and was working on another project that ended up falling through,” said Collins. “I reached out to the bank that owned the property to inquire and found out there were two people already working on the project.”
When those people ended up being from Lamont Companies, of whom Collins was already familiar with, he says it made sense that they were “crazy enough to want to open up a restaurant in the middle of COVID.”

Now, five months after opening, business is booming as this trendy restaurant offers dishes inspired by both Collins’s and the owners’ travels. “We talked about the idea of what could we do in Aberdeen that you don’t see in every place in Aberdeen?” said Collins.
“We have a really modern vibe and a lot of cool artwork on the walls. Then you sit down and start looking at the menu and think, ‘Oh, this is differnet.’” –Jake Collins The most popular item on the menu is the Bruschetta Board: slices of grilled Asiago cheese baguettes and several choices for toppings, including steak pieces, smashed avocado, and smoked salmon. Collins says the chef ’s choice is the most popular option. Another favorite is the Smash House Burger, which includes two smashed burger patties on a toasted brioche bun with a choice of cheese and extra toppings. Collins’s favorite item on the menu is the Shrimp Burger, which is a handmade shrimp patty with lemon caper slaw, tomato, and avocado on a brioche bun. “Initially I thought, ‘Hey, this will be a great summertime thing.’ But even as we move into the fall, we still sell a ton of them,” said Collins.

But Collins’s true passion is wine and cocktails, and the extensive cocktail menu reflects that. “I love cocktails, but I, myself, have never been a bartender,” he said. “Not a bar guy.” Luckily Three22’s bar manager Kris Klipfel created several drinks to make sure the restaurant’s drink menu offers something for everyone. Some of these cocktails include The Main and Smoked Manhattan. The Main is made with Bombay Sapphire Gin, fresh strawberries, and Odell IPA. And the Smoked Manhattan is a twist on the classic cocktail using Jack Daniels rye whiskey and is smoked with real wood.

“What’s fun is that there really wasn’t anybody in Aberdeen doing any smoke,” said Collins. One of Collins’s picks for the drink menu is the New York Sour, which features an Oak & Eden Rye Spire whiskey floated with pinot noir. There are also classic cocktails, like the Cosmopolitan, French 75, and Old Fashioned, along with beer and wine options.
“Every time I talk to a table that hasn’t been into the restaurant, they are like, ‘Oh my gosh, who would have thought that we could get this in Aberdeen?’” he said. “They’d expect to see it in Sioux Falls, or they expect to see it in Fargo.”

But she didn’t look into creating her own news platform until the fall of 2020 brought her to Google News Initiative Startups Boot Camp. “My goal is to make it easy for people to feel smart about where they live,” said Raposa. “Local news can feel like the community you’re living in, and local news can be easy to understand and even enjoyable to read.”

ADVENTURE IS OUT THERE
Anytime someone asks me where I want to meet for lunch downtown, I’m picking M.B. Haskett. I love their Brie on Baguette sandwich, but most often I’m choosing whatever they’ve got for a daily special.
If you’ve seen a lean, curly brown dog that’s faster than all the other dogs at Spencer Park, chances are it’s my half poodle, half German wirehaired pointer, Harper. She’s also often not far from my actual human child, who spends her time at the dog park pointing at every pup we see and saying, “Dog!”.
Augustana [University]’s campus is one of my favorite places. I’m biased, as an alumna myself, but I also live not far from campus and get to walk around it almost daily.
I’m also a big fan of all of the walking and hiking trails around the city. During the pandemic, my family hit the trails almost daily, alternating mainly between Good Earth State Park, Palisades State Park, and Great Bear Ski Valley.

Speaking of Palisades State Park, it’s the most beautiful natural phenomenon in the area. [Falls Park is] great, but there’s something about the giant rock formations that just hit differently for me. It’s also where my husband and I had our wedding ceremony, so, again, maybe I’m just biased.

There’s never a bad time of day to have a meal at Giliberto’s [Mexican Taco Shop]. It’s one of those places where I could probably eat there every single day and never get sick of it. My go-to is the enchiladas with beans and rice on the side with lots of their green and red hot sauces.
HOME IS WHERE THE STORY BEGINS Though I work from home now, downtown Sioux Falls will always feel like my home away from home. My first (and only other) job was as a reporter and then editor at the Argus Leader, and I have such a special place in my heart for that building and its proximity to all of the arts, entertainment, food, and coffee in downtown Sioux Falls.

Random Facts
1. I met my husband, Royal, because we both sold Cutco knives when we were in high school and early college. We were standing next to each other at a sales conference and struck up a conversation, and the rest is history.
2. I’ve always loved storytelling. As a kid, I would write little stories—real and madeup—about my friends or kids from school. When I was really little, too small to write, I would dictate stories to my mom to write down for me.
3. I started thinking about starting my own news outlet while I was on maternity leave with my daughter, Margot. She’s only about seven months older than Sioux Falls Simplified, so it’s basically like her sibling.
4. I’ve inherited my mom’s love of art, and one of my favorite things to do on vacation is to find an art museum. My absolute favorite was seeing the Van Gogh Museum in Amsterdam while Royal and I were on our honeymoon.
5. My dream job is to write the descriptions on wine bottles. They’re always so cheesy and over the top, and it would be so fun to just make up ridiculous turns of phrase to describe wine, which, let’s be real, just tastes like wine.

Recipe Wassail
A cold-weather drink from the Sonsalla-Raposa household
Ingredients • ½ gallon of apple cider • 1 quart of cranberry juice • 2 cups of orange juice • 1 quart of hot tea (they use three tea bags of earl grey tea in four cups of water) • ½ cup sugar • 3 cinnamon sticks • 12 whole cloves
Instructions Add all the ingredients into a slow cooker, and let it make the entire house smell amazing. Then after about three to four hours, slice up an orange and float the slices in the wassail. Serve and enjoy!

Here’s where my geeky journalist side comes out, but I really enjoy sitting in on local government meetings. It’s fascinating to see how decisions are made, and I spend a good amount of time either in person or virtually attending school board, city council, and other public meetings.
Another place that feels like home to me is barre3. I’ve been going to their workout classes for about three years now, and everyone is so friendly. My favorite date nights involve going to see a local play, especially a smaller-scale production from a local theater company, like Monstrous Little Theatre Company or Bare Bodkins [Theatre Company]. There’s so much talent here—it’s great.

by Dawn Geertsema As the fall foliage begins to shed its fiery leaves, and the summer gives into colder seasons, Miner Brewing Co. in Hill City, along with its taproom in Sioux Falls, is preparing to transition from a busy tourist season to focus on local supporters.

This fruited cider finds a balance between fresh peach sweetness and mild green apple tartness. Juicy with a mild ginger note on the finish, it is made with apples from Krause Family Orchard.
“We may not have the time to chat with locals as much during the busy summer season, but they are our best advocates by not only having a beer in the taproom on a regular basis, but by recommending us to so many out of state travelers that are looking to try some local brews in an authentic Black Hills environment,” said Casey Nordine, taproom hospitality manager. “When we opened in November of 2013, our brewmaster Sandi Vojta had accumulated a small quantity of several different ingredients, and she used this eclectic mix to brew one of our first test batches with our new production equipment.”
After some persuasion from her staff, Vojta allowed the public to give it a taste. As the brewery celebrates its eighth anniversary this November, the staff is excited to welcome back this brew, now lovingly called Miner MUTT, as no one can seem to describe it or categorize it. Dropping temperatures will bring back the heated igloos at the Hill City location, a new addition from last winter. They’ll be available from November 15 to March 15. “Guests are invited to enjoy wine, beer, and a variety of food options, while taking in the views of the Black Hills during the day time or the magical ambiance of the illuminated igloo village at night,” said Nordine.
Looking ahead, Miner and its sister company, Prairie Berry Winery, are bringing back the Black Hills Winter Festival in 2022. “In February 2020, we hosted this inaugural event and saw over 1,000 people attend to enjoy s'mores, fat bike barrel racing, live music and more,” said Nordine. Despite the constant state of uncertainty in the world, Nordine says Miner’s goal will not change. He explained, “While our tactics and seasonal offerings change and adapt with the world around us, ultimately we are here to brighten the day of our guests, making the world a better place, one beer at a time.”+

Eliza Blue by Dawn Geertsema
Eliza Blue is somewhat of a jack of all trades, as she never felt that a standard study-to-salary path was right for her.
“I am a musician, an author, a shepherd, and I produce and host a traveling concert TV show called Wish You Were Here with Eliza Blue,” she said. “My most creative endeavor, however, is probably parenting.” But before she found her path, she saw many changes in scenery. After many years of writing and performing her music in Minneapolis and on tour, she wound up heading to Bison, SD, to work on her music. When Blue first came to South Dakota, she didn’t expect to fall head over heels for it and what it had to offer. What she found, she says was pure joy she didn’t think she would ever be able to find.

“I spent the first half of my adulthood as a touring musician. Then I fell in love with two bottle lambs and a cowboy, and I knew my days on the road were over—at least as a full time job.” Blue then invested more time into writing, and she now has a weekly column titled “Little Pasture on the Prairie” carried by 12 publications, contributes to South Dakota Public Broadcasting and Prairie Public Radio, has a regular column with Daily Yonder, and has released her book called Accidental Rancher. “My latest project is a virtual gathering place for rural storytelling called The Home Farm Journal,” she said. “I love sharing my songs and stories with audiences, and I also love being there to tuck my kids in at night. Virtual offerings allow me to do both, and for that I am very thankful.” Blue shares more depth on her multifaceted life on the prairie.

Something that is influencing me right now is... The Great British Baking Show. I just watched the new season, and with winter coming I’m excited to be baking again.
I love to grab a bite or drink… anywhere that I’m not the one cooking! We grow a lot of our food, and I cook almost all of our meals from scratch. I love cooking– feeding people is one of my favorite things to do–but three meals a day, every day, is a lot. So it’s always nice to get a break and let someone else cook now and again.
My favorite place to go for inspiration is... the narrow canyon in our north
pasture. There are two grandmother cottonwoods who offer shade and deep roots to remind me to stay grounded. And a red-tailed hawk reminds me when I am sweating the small stuff to climb a little higher and look for the long view.
Someone local who I admire is... Christian Begeman, the videographer and editor of Wish You Were Here. He is a brilliant cinematographer and a great person to work with as a creator. We have so much fun brainstorming segments–we decided early on to focus our collaborative process on finding joy, and it has made every decision a pleasure.
An ambitious goal of mine is... to start going to bed earlier. I’ve always been a night owl, but one of these days I’m going to get on a better schedule, I swear.

Shaun Johnson by Dawn Geertsema “Tonic Sol-fa includes four guys from the Midwest who started an acapella group that celebrates what the human voice might be able to do,” said Shaun Johnson, owner and lead singer of the Shaun Johnson Big Band Experience and Tonic Sol-fa. “The Big Band Experience focuses on the style and passion of big band and swing—a music genre that existed before most of us were alive.” During the pandemic, the bands hit some road blocks along with the rest of the world. Johnson’s rehearsals had been in his home office during this time. But after a near 18-month hiatus, he hit the stage again with the Big Band Experience in Minnesota to a welcoming crowd. “People stood up after nearly every song, and I truly didn’t want to leave. But I’d forgotten how a crowd elevates the entire experience exponentially.”

Decorating our trees (inside and out). Typically I am in rehearsal or on tour from early November until New Year’s, so my family makes it a tradition to get a jump start on holiday decorations immediately following Halloween.
I’d like to win a Grammy. I’d like to still be singing. I’d love to perform at the Ryman Auditorium in Nashville, and mostly I’d love to tour anywhere they’ll have me. One of the main reasons I sing is for the experiences I’d likely get nowhere else. I’ve been fortunate enough to make thousands of memories that I treasure, and I just hope to make more.
I’m also excited to rehearse for two holiday shows. It’s a bit unnerving to see how production, hard work, arrangements, [and everything behind the scenes] come together, but it’s always a thrill to jump back into our self-produced Christmas tours.
WHAT ARTISTS DO YOU LISTEN TO IN YOUR FREE TIME? I love Ben Rector; his Magic album may be my favorite of all time. I like Dave Barnes, Josie Dunne, Cody Fry, and Audrey Assad.
HOW LONG HAVE YOU BEEN INVOLVED WITH THESE BANDS? I’ve been involved with the Big Band Experience for seven years, but for the first four, we only met at the holidays to raise money for charity. We truly began touring nationally in 2018. As for Tonic Sol-fa, we are now celebrating our 25th year together.
