Experience an array of events and gourmet menu items at DaDa Gastropub in downtown Sioux Falls. “Begin with a cocktail, stay for dinner, have some dessert, and then hang with us through the evening as we transition into a cocktail-heavy space with something fun up on that stage,” said director of marketing Becky Squyer. When the 605 team first visited DaDa Gastropub, we learned about the full-service restaurant based on the 20th-century idea of Dadaism, a break from the ordinary. They deliver this in events and through menu items that change seasonally. Squyer adds that DaDa is home to a full stage with lighting and sound accommodations and an in-house events team to “lend” to live performances and parties varying from 30 to 700 guests. The events began with Parker’s Bistro.

“Paul Squyer, our beverage director, would run special cocktails [at Parker’s] serving a theme, and the kitchen would prepare food to support the same theme,” said Squyer. But as the team expected, events quickly outgrew Parker’s and moved to DaDa, which is next door to ICON Events. “DaDa is backed by the same standards of excellence and service that you find at our beloved Parker’s Bistro just to the south,” said Squyer. “We have the capacity to feature many different food and entertainment scenarios.”
Guests can grab a starter like the Bulgogi Tacos made with corn tortillas, avocado, pickled veggies, queso fresco, and sour cream. And they can’t forget about a cocktail to wash it down. One refreshing option could be the Pineapple Mojito made with Plantation 3 Stars Rum, coconut water, mint, pineapple, and lime. Or they could try Wake the Neighbors, a Flor de Caña Extra Seco Rumbased drink with Aperol, rosemary, lychee, and acid-adjusted grapefruit.

The main course of the gourmet meal is from an array of options, including Shawarma, Pork Ramen, and Duck Pad Thai. Guests may get to try a new dessert as often as they come, as the dessert options are ever-changing. “We are actively booking in-house events in our DaDa space to continue to enhance the downtown culture. We will continue to showcase local performers, artists, and touring acts,” explained DaDa and ICON general manager Taylor Newcomb-Weiland. The event lineup varies immensely, from a band each Tuesday and a First Friday DJ to theme-based events. “We focus our attention on themed cocktail/beverage nights once every couple of months that we refer to as our DaDa After Dark,” said Squyer. “DaDa After Dark, specifically, occurs typically every two months or so with a heavy emphasis on summer months and our beloved, and heavily attended Harry Potter After Dark night in December.” Bulgogi Tacos

DaDa’s events are typically free, with the exception of a few ticketed concerts here and there, according to Squyer. “During the summer months, we also utilize our patio and even our parking lot,” added NewcombWeiland. “We have garage doors that open that make it a very cool experience.” The events aren’t limited to DaDa.

Monks has a rotating tap line with 50 local craft beers varying from sours, IPAs, lagers, and mead to milk stouts, ciders, and seltzers.
“It was primarily pizza when we started [offering food], and it didn’t take us very long to figure out we should make a breakfast pizza,” said Kelby Beste, general manager. “That led to Bottomless Mimosas.” We had to try the Mimosas and a few brunch plates for ourselves. So lead multimedia designer Jordan Cushman, account and sales manager Taylor Hanson, and I bundled up and took the short trek across the parking lot from our office over to Monks. Taylor was stoked for the Breakfast Pizza Supreme, which comes with garlic, gouda, scrambled eggs, red onion, bell peppers, tomatoes, hollandaise, and either bacon or sausage. She insisted that Jordan and I should grab a few more slices so we could keep up with her. Neither one of us had to be told twice as we each grabbed another slice. Other variations of the Breakfast Pizza include the classic version without the extra veggies and the Chorizo Breakfast Pizza, a spicy rendition.

“We’re using spring as an opportunity to try some other things out,” explained Beste. New to the menu are Granola & Yogurt, Breakfast Sandwich, and French Toast, which both Beste and I are partial to. “My favorite is French Toast,” said Beste. “It’s equally my favorite to eat, but it’s also easy to make look good on a plate. It’s very inviting.” The golden brown slices of Brioche bread from Look’s Marketplace come topped with strawberries, blackberries, and a healthy dusting of powdered sugar. A drizzle of syrup from the side makes the perfect bite. To wash down the dishes, my drink of choice was a Mimosa—which was a must. Jordan tried Lupulin Brewing’s Sticky Puddles, an imperial fruited triple berry sour, and Taylor opted for her ever-reliable Diet Coke. “We do Shandies and Beermosas, too. Specific styles of beer work better with those,” said Beste.

A Shandy, which is beer and lemonade, is best made with a light lager or wheat beer. A Beermosa, a beer with orange juice, is best with citrusy IPAs and other light beers. “It gets people looking at craft beer in other ways,” said Beste. He also brought us Granola & Yogurt and the Breakfast Sandwich. The yogurt bowl came with fresh strawberries and blackberries, as well as Jacob’s Granola that Beste says came from the Cottonwood Bistro in Brookings. The sandwich is made with egg, cheese, and a choice of bacon, sausage, or Canadian bacon all on a biscuit.
“You don’t have to dress like you’re going to the Kentucky Derby, but you can if you want. -Kelby Beste “We’ve tried different menu items,” said Beste. “One that has worked really well is the Biscuits & Gravy.” This menu item features gravy made in house and sausage from Look’s Marketplace. Though we didn’t get the chance to try the Biscuits & Gravy this time, I’ll be back soon to do just that. And since dogs are allowed both outside and in, my dog, Padme, may just tag along to sneak a few scraps.

Tucked into the calm streets of Salem is The Homestead Coffee Co., set up in a historic building that has served as many different businesses over the years, including a post office. When director of operations Alana Snyder and I swung the door open, a mechanism pulled a string to ring a farmhouse-style bell, and Michelle Barnhouse greeted us from behind the counter. “The Homestead is small town goodness where everyone knows your name,” said Barnhouse. “When people walk in, I’ll greet them and get their stuff ready before they even order sometimes.” Supporting that statement were two regulars who sat in their normal spot near a window, sipping their coffee and chatting with the staff. Barnhouse, who has only owned the shop for a few months, didn’t think she wanted to stay in the food industry. But one day, it hit her how much she loved working at The Homestead.

“It was an epiphany,” explained Dobkin. “After being a chef for so long, some things just come naturally.” Another unique meal is the Pheasant Pot Pie, a savory option made up of creamy sauce, roasted pheasant, and an aromatic mixture of sweet onion, carrots, and celery. Every night, there’s a chef special menu item. “We have an American Bison Meatloaf,” said Dobkin. “It’s fresh buffalo with a demi-glace peppercorn sauce on it.” In the past, Jake’s has also featured different chef specials like a pan-seared bone-in pork chop with honey mustard sauce, black cod, and panseared stuffed rainbow trout. For a bartender, one part liquor and two parts mixer combine for a classic highball cocktail. For a railroad conductor, a highball mechanism once signaled whether they would have to stop at a platform. But in Sioux Falls, Highball is a modern, organic cocktail bar located on the east edge of the downtown footprint. It features a whole menu section paying homage to the traditional drink combo and an ornate replica of the railroad signal displayed on the patio.

“We’re on the edge and looking to the future. We’re trying to do something a little different and outside of the box than what most bars in Sioux Falls are doing,” said Brian White, managing partner.
The lounge-style bar opened in late August 2021 as part of Pendar Properties’ new Railyard Flats complex, just across the street from 8th & Railroad Center.
LED lights emit rays behind the bar through recycled glass blocks from the Carpenter building, casting the high ceilings and large furniture pieces in various rainbow hues.
“The mass timber led the design choices in here—that modern, organic feel,” said Anne Haber, partner with Pendar, explaining how low-carbon wood serves as an alternative to traditional building materials like steel.
“It’s more vibey with the big lights, the brightness, the ever-changing colors on the back wall, and the neat wallpaper,” said Michael Mohr, general manager.
Sustainability has been important to Haber and her team down to the details. The biodegradable straws used at the bar are made of agave fibers, a byproduct of tequila production.

Along with recycled glass blocks to implement the industrial atmosphere, the team used old railroad ties to create the pergolas framing the patio. “It’s a piece of that railroad history without being too cheesy,” said Haber. “We try to weave those touches into all of our bars— whether it be the Carpenter Bar and the use of the marble from the building itself or The Treasury being in an old vault.” The Highball patio offers a more relaxing atmosphere than most in the area, as it’s away from the main hustle and bustle of downtown life. “For a downtown patio, it’s a totally different experience than what you’d get from Phillips Avenue. It’s a little more cozy and quiet with the firepit,” said White. But that’s not the only thing that makes the bar stand out. “What sets Highball apart from other bars is our commitment to products, starting with quality ingredients, hand squeezed every day,” explained Mohr. Along with the group’s two other bars, Highball staffers are encouraged to experiment with cocktail recipe ideas to create something new. “You bring your idea to the table, and the rest of the team workshops it together to create a fun new cocktail that’s balanced and palatable to everybody,” said Mohr.
“We take steps to recycle and try to make our impact a little less. The straws are made from recycled agave fiber that’s a byproduct of when you make tequila.” - Brian White

The cocktail is made with Japanese or American whiskey and bitters. “The fun thing about our menu is it actually gets used,” said Mohr. “People look at it and order cocktails off the menu. They get out of their comfort zones a little bit to try and enjoy something a little different.”

With a tasting room in Sioux Falls and production in Watertown, Glacial Lakes Distillery & Brewhouse has a variety of premium, hand-crafted spirits. “As part of our lineup, we have vodka, gin, white rum, dark rum, brandy, and bourbon,” said Quentin Robertson, owner of the artisan distillery. All Glacial Lakes spirits are crafted in small batches and with as many locally sourced products as possible to ensure quality.

On the Rocks Try each spirit in specially-curated cocktails or on their own in downtown Sioux Falls. “We have to make our own mixers, cordials, and all that good stuff from hand,” said Robertson. “That pretty much separates us from your average bar.” Begeman explained, “We make our own Irish cream, limoncello, vanilla bean vodka, and coffee liqueur. We make whatever we can, and that’s all we carry.” Each cocktail made in the tasting room is made from mainly Glacial Lakes products. “We actually just came out with our first cocktail that is completely head-to-toe ours, even down to the bitters, which typically takes two to six months to create,” said Begeman about their Saffron Amore.

With the change of the seasons, notice the menu changing. Robertson says the next menu will likely take effect in April.
The savory martini is made with notes of jalapeño, star anise, fresh cucumber, and house-prepared aquavit.
“I’m always getting excited for a particular cocktail that I know is only going to be around for a short amount of time. Right now, it’s the Snowbird 2.0,” said Begeman.
“Since we are so locally focused, all of the dollars spent here will go back into the community from which it started,” explained Robertson. “We source as much as we can locally—from our wheat to our corn to our barley.”
The Snowbird is a piña colada with a winter twist, including Toasted Coconut Rum, Wooden Boat Rum, pineapple juice, coconut, and heavy cream all topped with blood orange vanilla bean syrup and cinnamon. “For downtown, what we’re most excited about is the Haken, Not Stirred. It’s a cocktail that we partnered with the mayor to bring out,” explained Begeman.

“We’re constantly teaming up just around the corner,” added Begeman. For example, the honey they use is from Brandon, while the coffee liqueur is made from The Breaks Coffee Roasting Co. product.

As the months turn warmer, check out the outdoor seating at the tasting room. “Our square footage for that patio is huge, and it’s got a beautiful sunset,” said Begeman. Watch the sun sink behind the buildings on the west-facing seating area.
They are looking to move their operation within the next year to Hartford, where they could elevate their production space from 1,500 square feet to upwards of 6,000, according to Robertson. “We want to be able to grow into it and not worry about having to expand when it’s more expensive down the road,” said Robertson.

Looking forward, things will be changing for the distillery. “Genuinely we’re producing as much as we can with our space in the Watertown location. We’ve tripled since opening in August what we were producing in the prior years,” said Begeman.

At the beginning of 2022, the Deadwood Social Club, above Saloon #10, hired their first executive chef with extensive training in the kitchen: Branden Ervin. “Her family reached out to me after seeing my resumé and expertise and believed me to be the perfect fit for what the business needed to perpetuate their true mark in the Deadwood community,” said Ervin. Lalonde and her team are excited to have him on board, even outside the kitchen.

“At only 29, his people skills are way beyond his age,” said Lalonde. “He’s like this wise old soul in a young man’s body.” With their new addition to the team, they collaborated to change up the menu and enhance classic menu staples. “This new menu will undoubtedly surpass any we’ve ever had,” said Lalonde. The Truffle Fries, an appetizer, are house cut and tossed in truffle oil, salt, pepper, and parmesan cheese. Another option to start is the Fried Ravioli made with buffalo sausage and coated in breadcrumbs. Ervin added, “The menu is farm to table with deep southern ties culminated with my French classic culinary background, accented by my travels across the country. Perpetuates a very unique, bold and exciting experience bolstering huge flavors and beautiful plating of our dishes.” Along with a few different Fettuccine Alfredo options, the new menu features items like the Lamb Chops, Cobb Brussels, and Wild Boar Bolognese— made with wild boar meat sauce, tagliatelle pasta, and parmigiano-reggiano. Peter Cobb opened Sioux Valley Grille with his brother, Ken O’Brien, in an effort to expand the culinary options outside of the Sioux Falls dining scene back in January of 2018. “As a family-owned and operated restaurant, our goal is to bring fresh, quality food at a fair price to rural Canton,” said Cobb. “We serve American-style comfort food, mixed with a few continental favorites.” The restaurant has plenty of skill to back the curated menu items and roughly 20 staffers to keep the restaurant going. “I helped develop the menus. They are all my recipes, all my creations, but we all work together as a team. We’re very community centered,” he explained. When he was growing up, Cobb says he loved to watch his grandmother cook in her French home. “The quality and vastness of ingredients, coupled with my grandmother’s expertise in cooking, was my primary motivation for entering the culinary arts field,” explained Cobb. Cobb was classically trained at Le Cordon Bleu in California before he took up catering film sets in Hollywood. He also owned and operated a catering company in Los Angeles. Now he shares his expertise with his kitchen staff as they serve gourmet meals to guests. Cobb opens up more about his culinary background and his job.

My brother and I started Sioux Valley Grille… after a long
family vacation in 2015 at Grandma and Grandpa’s home in France. Our cousins, who lived in Canton, enjoyed the food we prepared so much during our vacation. They pitched the idea that we ought to purchase the vacant restaurant in town. Of course, the wine had been flowing, and I didn’t think much of this suggestion. My brother Ken O’Brien, who is my partner and a successful real-estate developer, purchased the restaurant three weeks later, and the rest is history.
My favorite way to spend my leisure time is… enjoying time with my growing family. We love to travel, eat, and enjoy learning about other cultures and places.
The best part of my job is… working in tandem with a motivated, professional staff.
My favorite thing on our menu is… our burgers. It’s a tough choice because
truly everything is fresh and delicious. However, with halfpound choice hand-pattied Angus beef, brioche buns, and quality toppings, it’s tough to find a better burger in the area. Our wildcaught Walleye Piccata, and our daily cut steaks come very near the top as well.

What I loved about putting together Sioux Valley Grille was… having a blank canvas to recreate a restaurant in a space that’s historically always been a restaurant. We gutted the building completely and then rebuilt and restored to match the identity of Canton, the previous establishments housed in the past, and the surrounding architecture. It’s very rewarding to hear from locals how happy they are to have us in Canton and to hear how we have rejuvenated the old building.

My favorite place to go for inspiration is… my
grandparents’ place in France. The small village where the house resides is home to about 150 villagers. The setting is serene, vibrant, and peaceful. The ingredients are fresh, unique, and abundant. It’s a culinarian’s fantasy, and a perfect place to get motivated.

Someone local who I admire is… our recently deceased cousin, Chuck Molstad. I first visited
Canton in 2009. This was also the first time I met Chuck. I was immensely impressed with his dedication to his family, friends, and community. That man also loved South Dakota with all his heart. Chuck was a huge factor in us relocating to South Dakota, and his enthusiasm for our food and restaurant was beyond motivating. He passed away from cancer in 2021 and is dearly missed.

WHAT’S YOUR PREFERENCE FOR YOUR CELLULAR DEVICE? Well, I’ve had my fair share. My current device is an iPhone 12 Pro, which I’ve been happy with. I have had androids in the past as well. I always say there is no one phone that is better than the other. All the operating systems have great features to offer—it just depends on the person.
WHAT’S YOUR FAVORITE LOCATION TO FREQUENT WHEN YOU AREN’T WORKING? Besides home? Sioux Falls has a lot to offer. Right now would probably be the Gateway Lounge. My husband and I like to meet up with friends. It’s a great place to grab a bite, have a beer, and watch football.
WHAT ARE SOME OF YOUR FAVORITE PLACES IN SIOUX FALLS? Downtown also always has a lot to offer. My husband and I like taking the dogs on walks through the parks and Outdoor Campus at Sertoma Park.
