CO -FO U NDER + DIRECTOR OF OPER ATION S I love when I get the chance to meet someone I’ve admired from afar. I’ve been following Yulla’s Desserts religiously, ogling the delicacies coming from the artist’s kitchen in Spearfish. For months I’ve tried to connect our schedules, and it finally aligned in January. Yulla Nickles welcomed me into her new space, a development which literally had happened that week, as what she described as “a whirlwind” with Nonna’s Kitchen. She brought out piece after piece, each more impressive than the last. As we said our goodbyes, she gave me an entire box of her treats, placing one of the prop roses on top, stating, “There, now you’re good to go.” It’s these moments that make me love my job more than ever.

SALES & ACCO U NT MANAG ER The Bar & Restaurant issue is one of my favorites because a.) I like to eat and b.) I like to travel around the state and try new restaurants. But mostly— let’s be real—I like to eat. When I heard that an Argentinian restaurant was opening up in town, I was stoked to try something new. Not only were we greeted with the biggest smiles, but we were also greeted with the biggest dessert selection. The spread that Gabriel Rivero and his team made for us filled the table (and also our bellies). If you’re in the mood for some of the best empanadas, then head over to Tarquin Argentinian Restaurant.

It all started with a vision.

“This happened a long time ago. I had a mental flash—it’s hard to explain,” said Carlos Gabriel Rivero (who goes by Gabriel). “I had a dream of a bull [Tarquin] and I started to research the history of the bull, Argentinian food, beef, and milk.” That bull inspired the branding and direction of Tarquin Argentinian Restaurant, which opened on Benson Road in north Sioux Falls in October of 2020. Rivero says he wanted to introduce the area to Argentinian cuisine. The space needed “a refresh,” and the team worked several months to bring vibes of Buenos Aires through the menu, ambiance, and background music.

“It’s an adventure for everybody,” he said of the crew. “I have a great team with great skills with me.”
While patrons are encouraged to wine and dine, there are also “Minuta” options.
Rivero says a classic item on the menu is the Churrasco. The dish includes grilled hand-cut steak, paired with homemade Chimichurri Sauce made with freshly chopped herbs.
“A Minuta means in a few minutes you have to have [the dish] ready,” he said as he snapped his fingers. “These plates are good for lunch, like the Milanesa Napolitana and Empanadas.”
“It’s basically a steak,” he described. “And we serve it with fries or mashed potatoes. In Argentina it’s beef and beef and more beef. And then sometimes milk and flour.”
There are a wide range of empanada options, like the La Boca. This is made with homemade empanada dough filled with spicy ground beef, onions, red peppers, and jalapeños.

The Milanesa Napolitana, as Rivero describes, is like a schnitzel with lightly fried breaded beef, topped with a slice of ham, tomato sauce, and melted mozzarella cheese, served with fries. “This is another German introduction to Argentinian food and is super popular,” he said. Argentinian cuisine is often influenced by a range of European fare.
“It’s a classic menu in Argentina, and they have a big influence from Italy,” he said. “We put together what we think is the best and what we grew up eating and enjoying.” Tarquin also has a bakery and wine shop in the space. Most of the desserts are homemade, and they have become known for their cakes. Some are imported from around the world, including a special cookie (the Mantecol) mixed with peanut butter and honey.

+ The Story of the Bull Tarquin the bull is what started it all. Rivero says he looked into the history of the beast, who allegedly was brought to Argentina in the 1800s.
John Williams, Rivero says, was the man who brought him when he fell in love and moved to Argentina to be with his future bride.
“He was the base of Argentinian beef and milk and dairy production,” he said. “They imported the bull from Scotland and his name was Tarquin.”
“It was an adventure,” he said. “John Williams realized if he mixed the blood of a pure-bred bull with cattle it would improve production of milk and beef, and forever changed Argentina.”

The wine selection is a wide range, with bottles in the high price range, but many on the more affordable level. This is because Rivero stressed the importance of wine while experiencing Argentinian foods.
“Everything is getting better and better. The quality of the food is better. The orders are getting better,” said Rivero. “The first two weeks were really bad, but we needed to do it. We just had to jump in and do it.”
“Wine is everything with Argentinian food. Mexican food has flavor for itself. The spices, everything there is on the plate,” he explained. “With Argentinian food you need the wine to—boom—explode in your mouth. It’s like the fire for a firecracker. Mix them together and all of the flavors come alive.”

“You take care of people in the city for long enough and you start to get a feel for what they’re after,” said Sara Benson. “We thought Sioux Falls was ready for something fresh.”
Benson and Pat Nelson had been bartending in downtown Sioux Falls for years. It was time for a change. So when Brandon De Jong approached them about opening a new bar, they jumped at the chance, opening The Hello Hi in mid-November 2020.

“Having traveled quite a bit, both Brandon and I were really excited about tiki and the cocktail scene that that evokes,” said Benson, who is a managing partner. Served in an ornate peacock mug, the signature Beetle in a Haystack cocktail elicits plenty of excitement from customers during preparation. It’s made with Appleton Estate 8 Reserve rum, Hamilton Jamaican Pot Still Black Rum, Plantation O.F.T.D. Rum, a handful of tropical fruits, and li hing mui syrup, which is a dye made from red beetles.

“It’s one of those things where it’s like, once you make one and someone sees it, you’re making them all night,” explained Benson.

The other signature cocktail, Smoothed Edges, is a much calmer drink with many subtle, nuanced steps in making it. “It’s one you have to care about making,” she said. It’s made with Diplomatico Reserva Exclusiva Rum, Highland Park Magnus Scotch, Lillet, house bitters, and lime. Smoothed Edges is also available to-go. “We know a lot of people are staying at home,” said Benson. “We want to be able to provide them drinks.” The Hello Hi At Home Sip Kits can be picked up on site and come with five of the most popular cocktails, twisty straws, and some drink parasols.

The Hello Hi has something to offer everyone’s palate. “You can get a shot and a beer for $6 here, but you can get a $13 fire drink, too,” she added. You can even pick from a handful of non-alcoholic options, called “Virgin Islands,” like the High Thai’d, made with spicy Thai broth, lime, and sugar. In the main bar space, the mid-century modern style and psychedelic touches take the tiki bar influence and make it into just what they want it to be. “It’s just our own version of creating a space that’s unique,” said De Jong.
The décor is from many places, styles, and centuries, from the handmade fixtures to booth lights made of real pufferfish. Adding to the eclectic collection, there are pieces like an infinity mirror and lamps that harken back to the ‘70s in the back den. Back there, settle a case of munchies and grab pizza by the slice or by the pie from Pizza Cheeks (see more on page 98). There are plenty of comfy spots in the back and up front to sip your beverage of choice while taking in the experience, including a hanging wicker chair. “A lot of the stuff we got second hand, off Facebook Marketplace and options like that,” said De Jong.

Benson, De Jong, and Nelson say they are excited to be part of the downtown Sioux Falls scene.
But Benson says one of the most frequent shots they’re tagged in happens to be from the flamingo-themed women’s bathroom.
“The emphasis is just community,” said Benson. “We’d like to provide a space for people to come up with ideas and just be around for it.”
“We intentionally designed [The Hello Hi] in a way that different people like different areas of it,” said Benson. “Apparently, [that room] has a really good selfie mirror.”

cNally’s Irish Pub is a South Dakota staple for celebrating St. Patrick’s Day. While it will look a little different this year, there are plenty of options to experience St. Paddy’s at the bar or at home. The 605 team stopped by the family-run business to catch up with owner Nicki Ellerbroek and to try making Irish-themed beverages while noshing on the pub’s Guinness Meatloaf.

“We have a bunch of events leading up to St. Patrick’s Day,” said Ellerbroek. March 5 and 6 the Irish band Slygo from Minneapolis will perform. There will also be a Jameson Irish Whiskey Tasting on March 12. “It will be informal where a rep will come up to your table, so we don’t have crowds gathering,” she explained. Then there’s the big event on March 13, kicking off with an 8 a.m. breakfast that will include menu items for kids like Lucky Charms with green milk and silver dollar pancakes and sausage. “There will also be a mocktail for the wee ones,” said Ellerbroek with a laugh. Other highlights include a traditional St. Patrick’s Day menu with items like Corned Beef and Cabbage and Bangers and Mash, family-friendly face painting, bagpipes, an appearance by the El Riad Shrine Oriental Band, and a performance by local group Bad Neighbors Band.

“It’s a group of professionals, like bankers and attorneys, and they all used to live in this neighborhood and started a band called Bad Neighbors Band since they’re loud. But really, they’re not that loud,” she chuckled. “They play ‘90s music, so they’ll play things like Nirvana. It should be great.” As we continued the conversation, the team had the chance to try the meatloaf with Angus beef blended with natural spices and vegetables, served with garlic mashed potatoes and sautéed vegetables, topped with Guinness mushroom gravy. A couple of us also got to get behind the bar with Ellerbroek and made an Irish Coffee and a Jameson Jewel. Let’s just say my whipped cream craftsmanship needs work.

“I’m hoping it will be nice so we can heat the patio and have people outside,” she said about St. Patricks’ Day Saturday. For those who want more space and intimacy, Ellerbroek says she’s allowing an hourly rental of the “Snugs,” which are the private rooms in the restaurant. And for those who want a curbside option, McNally’s will have St. Patrick’s Day To-Go Boxes. “[The box] will have things like green beer, Corned Beef and Cabbage or Bangers and Mash, and a quart of Potato Leek Soup,” she said. And then she reminded us that there is the official St. Patrick’s Day on March 17.

One of the changes that has been made since is making the formerly 21-plus location family friendly. Another has been pairing down the menu and offering to-go family meals. She left off, “People have missed some of our items when we narrowed down the menu, but we’re hoping to get more of a standard menu after St. Patrick’s Day.”

In November 2020, owner of Hannah V Fine Arts, Hannah Van Steenwyk, walked into La Luna Café with her husband in downtown Sioux Falls for the first time.

“We walked in and felt such a huge presence of peace at La Luna Café,” she said. As she ate her lunch, her eyes wandered up to the ceiling and met the glow of moon-shaped lights. Her gears began to turn as an idea popped into her head. “A mural that goes along with their jungle [and] space theme would be really cool,” said Van Steenwyk.

Before she left, she talked to the owners, and they loved the idea. So she drafted up the galaxy concept for a ceiling mural and got to work on the piece, which she is donating to the business. “The entire family owners of La Luna Café have been so wonderful to work with,” said Van Steenwyk. “We’ve worked to put together many options for anyone to come and see the mural being created.” Paint hit the ceiling in mid-January and should be done sometime in March. Van Steenwyk works on the nearly 1,000 square foot mural with a nine-foot paint brush between 2 p.m. and 4 p.m. every Friday, along with other unscheduled times. Van Steenwyk shared some background on herself as an artist and offered a glance into her personal life.

People might know me from… the
Washington Pavilion, from the several years I worked there in many of the departments and teaching. Or maybe [people would know me] from many of the events I’ve been part of and have held for years before I was married. Hannah Wendt Art was what I did before my last name changed.
I knew I wanted to be an artist when… I was in elementary school. I always wanted to be an artist or a teacher, and I’ve been able to be both.
I started painting because… I felt like it was
one medium that I needed to spend more time mastering. I actually have spent most of my art career mastering drawing with charcoal and graphite, only every once in a while dabbling in painting. In 2015 I painted using oils for the first time and fell in love with it. The rest is history.

My favorite way to spend my leisure time is… diving into the Bible in the crisp, morning light; hanging out, playing music, or making up new card games or designs with my husband, Caleb; helping my parents remodel their gorgeous farmhouse out west of town; and cooking up something nutritious.
The best part of my job is… being able to bring
something unique and peaceful into someone’s home. Right along with that, I love being able to get to know others and bring their custom art requests to life. I always look forward to the look on their face when they’re met with the exact perfect piece they’ve been envisioning and giving the story to it.
My favorite mediums are… powdered charcoal using a cloth (it’s fun but very, very messy) and acrylic or oil paints using a pallet knife. All that lovely texture looks so good.

Art isn’t my only creative outlet. I write… art books, poetry, and children’s books. I have been able to weave in my love of writing directly with my artwork. I write art books that dive into my process behind each artwork, how they turned out, and more. I like to think of these as a really fun extra gift someone can have that goes along with their new piece of original art.
As an artist, my goal is to… give joy, comfort, and peace
with grace to anyone who has a piece of art and anyone who I am around. Many of us could really use some more of each of those right now, and I’ve learned that I can help with that.
What people might know about my work is… that I love to experiment and

I believe that feeding people is a form of sharing love,” said Yulla Nickles, owner of Yulla’s Desserts in Spearfish. Yulla was born and raised in Brazil. She says her family used to spend hours together in the kitchen, bonding and cooking. “Cooking is a joy because it puts me closer to my culture, my country, and my family,” she said. Yulla’s love affair with food began when she was small. “In my childhood, we always went to my family’s farms, and I grew up watching and helping my grandmother, mother, and aunts cooking and doing delicious things,” she explained.

But food isn’t the only thing that she loves. Yulla met Patrick years ago while he was in Brazil, and her life changed.
“I realized that Spearfish is a charming touristic city and although very small, welcoming,” said Yulla. “Opening a bakery is honestly the best way to meet people and [make] friends.”
She fell in love with him, and they were married. Together, the pair returned to Patrick’s home state of South Dakota. Together, they had three kids, Caio, Analis, and Eduarda.
One of her favorite places to grab a meal is Nonna’s Kitchen, an Italian restaurant in Spearfish. She met Darren and Nancy Manzari and brought them some things from her own kitchen.

“One day I brought some samples of the Italian desserts I make, and then it all started at the end of last year,” said Yulla. Yulla is partnering with Nonna’s Kitchen to create Nonna’s Treats by Yulla’s Desserts. She opened the shop and started selling desserts, pastries, and more connected to Nonna’s Kitchen in mid-February. Despite its location, the dessert stop is open during hours independent of Nonna’s. “When people start reading the menu, automatically they start talking about themselves or [an] event, party, wedding,” she explained. “We start to interact, to materialize what is being desired, so a relationship begins.” A select few of Yulla’s desserts can be found on the Nonna’s Kitchen menu as well as directly from the shop itself and online. “The best part of my job is meeting people and fulfilling the wishes of trying new tasty and unforgettable moments.” But she still wanted to stay connected with her Brazilian roots. “I decided to focus on Brazilian cuisine because it is my essence,” she said. While she says she appreciates the convenience of American cuisine, cooking and baking mean more than that for her. “Cooking for me is an art, a party, a joy, fun,” expanded Yulla. “It is more than feeding the body. It is feeding the soul.” Her most popular dessert options are her Brigadeiros, also called Brazilian truffles, which are traditional bite-sized chocolates. The snacks come in flavors like white chocolate, pistachio, cappuccino, and Nutella. She continued, “We talk about the important and fundamental things in life, about loving, serving, and giving flavor and joy to every dessert prepared in the belief that meals are a special moment.”

Along with the dessert options, Yulla offers Pão de Queijo (Cheese Bread), Coxinha de Frango (Fried Chicken Drumstick), and a few other savory choices. “One of my favorite projects has been teaching women to undertake what they love. I believe that [doing] what you love is fulfilling,” she said. Yulla says that it is so important to do whatever it is that you love to do. “I learned a lot throughout my life and nothing better than practicing what is known,” she said. “At almost 50 years old, I still feel too young to stop working.”

What she knows well and loves to do is cooking, so she’s pursuing what makes her happy. “Many women think their dreams are not feasible for different reasons, but look at me, opening a bakery in Spearfish.”

In 2020, Danielle Voyles was a manager at Green Bean Coffeehouse in Belle Fourche. “I worked there for seven and a half years, and I was just hitting a wall on what to do with my life,” said Voyles. The owner, Aaron Neiman, had just finished a remodel on the building, changing up the décor and the color scheme. Things were about to change for the Green Bean, but the remodel wasn’t the only transition. At the end of 2020, he offered to sell the business to Voyles and her boyfriend, Troy Jensen. Neiman still owns the original Green Bean in Spearfish, along with Blackbird Espresso also in Spearfish, Harriet & Oak in Rapid City, and 8th Avenue Bakery in Belle Fourche.

“We knew it’d be silly if we didn’t do it because it’s a wellestablished business,” recalled Voyles. Neiman announced the ownership change in October 2020, and just like that, Voyles and Jensen became the owners of a coffeehouse, renaming it Wild Magnolia Coffee Bar & Eatery. “We can make it how we want, change things, take feedback, and turn it into something good,” she said. So far, Voyles has made minimal adjustments to the environment of the coffee bar. “We’ve added more plants and tables, and it has more of a flow to it,” she explained. Inside, Voyles says the space leans into a cozy, white farmhouse vibe, giving the space an open and welcoming feel. Under the new ownership, the menu hasn’t changed much. “We didn’t want to take too much away because everyone has their favorites,” explained Voyles. “People love it the way it is.”

As a coffee bar, Wild Magnolia has a plethora of caffeinated drink options. Try the essentials like Cappuccino, Latte, Cold Brew, or Mocha. There are also non-coffee options like Italian Cream Soda, Shaken Iced Tea, and a range of Smoothie f lavors (wild berry, peach, strawberry, or mango). But not everything is the same. Voyles also mentioned they have added some welcome additions.
Among the new options are the specialty teas: the Cleopatra (an Egyptian chamomile tea with honey and organic strawberry syrup) and the Lotus (a tropical green tea with raspberry, organic peach, and coconut milk). “Those are just concoctions we’ve come up with, and they’ve been very, very popular,” she said. “It’s a good alternative for coffee because not everyone’s a coffee drinker.”

And the staples are still there. “The Smokehouse [panini] is the No. 1 selling sandwich,” said Voyles. “Everybody loves that one.” Made with chicken, bacon, tomato, onion, provolone, and chipotle mayo, the Smokehouse is a panini served on sourdough. Other paninis include the Italico, which comes with a chicken fajita, and the house Reuben. If breakfast is more your style, Voyles has a fruity recommendation. “The Açai Bowl is super refreshing,” she said.

So far, Voyles has had a blast owning Wild Magnolia. “Outside of work, I don’t have any hobbies or passions,” she said. “This is something that can be fun for us.” With the first few months behind them, Voyles says she feels like she’s where she needs to be and doing what she needs to do. And that is servicing the coffee lovers and community as a co-owner of Wild Magnolia.

“We’ve got some races that are going to be starting out here in the morning,” said Matt Hastad, co-founder and CEO of Remedy in Sioux Falls.
Kicking off 2021, the year that will mark its fourth anniversary, Remedy announced a new menu selection.
The Lucky 7s Run will begin and end at at the taproom, offering three different types of races along with a couple of virtual options.
“We had our two chefs come up with a completely new menu,” said Hastad.
After the race, or during if running isn’t the move, warm up in the taproom and sip a beer. “Then we’re going to be doing some live music, food specials, beer specials, things like that,” Hastad explained. Hastad wants people to know that Remedy’s festivals are not going anywhere. “First Fridays out in the parking lot are going to be a big thing that we want people to come back out for,” he said. They also want to make more use of their outdoor space this year. “We’ve got such a cool little parking lot out there, not just a place to sit, but a place to come and just spend a whole afternoon,” he explained. Keep an eye open for new events, and swing by to get a taste of what they have to offer.
While the previous menu was thick with bar food that went well with beer, Remedy now offers menu items that are more fit for a meal and even a handful of vegetarian-safe and gluten-free options. “We’ve got a couple things on there that are favorites that we brought back: Chislic and the Dimock Cheese Bite Basket,” said Hastad. “Then the rest, we gave [the chefs] free reign and said have some fun.” The selection ranges from Pretzel Bites, Buffalo Chicken Bacon Ranch Flatbread, and Wings to Mac ‘n’ Cheese, BBQ Pork Wrap, and Cinnamon Pretzel Bites. Through this new menu and through their beers, Hastad says that Remedy “cures what ales you.” “Whether you’re having a good day, bad day, you’re celebrating or you’re mourning, we’ve got beer that can be a remedy,” said Hastad.+

SPEARFISH Bed & BReakfast by Dawn Geertsema One evening, Rhonda and Bill Swenson were spending quality time together, having only been dating for six months. Bill turned to Rhonda and asked, “What do you think about a bed and breakfast?” Rhonda imagined going on a trip and spending time with him at one. “That sounds like fun,” she said.
Bill thought about the house he had just inherited, conceptualizing the Spearfish Bed & Breakfast. “Yeah, I think it’d be a good location.”
Today it has five bedrooms and six bathrooms.
Rhonda paused, her dreams of being pampered dashed. “Oh, you mean for the house? Yeah, it would be. It’d be a lot of work.”
“No, you do,” he said.
Outside of Spearfish, the 1920 house saw Bill and his brothers grow up. At the time, it was only a three-bedroom, one-bathroom house.

“You cook?” Rhonda asked. He had never cooked for her.
“In three minutes’ time, I went from getting to go to a bed and breakfast to running one,” said Rhonda, laughing at the memory.

Bare Bones They began renovating the house, dedicating hours of work every day for four and a half years. They did everything themselves, save for new heating and air conditioning. “We tore everything out,” Rhonda said. “We did all the plumbing, all the electrical. We took it down to the bare bones.” During the day, they did contract work for others before coming home to put in more time on their own project.
After plenty of trial and error, Rhonda says they arrived at the final layout through a concept made from two-by-fours on the floor. “The house isn’t that big from the outside, and people are always shocked when they come in as to how we were able to fit everything,” she said. In the end, each of the five bedrooms had their own bathroom plus one extra. Spearfish Bed & Breakfast opened up in 2014.

“We try to give everybody a dose of history of the area while they’re here,” said Rhonda.
“We named that one lookout landing because you’re looking out at Lookout Mountain from the window,” said Rhonda, explaining that the lookouts kept settlers safe back in the day.
Every room has a queen-size bed, a tv, a mini-fridge, a private bathroom, and soundproofing.
Upstairs are three more rooms: Wheels Up, Lucky Boy, and a suite, Robbers Roost.

Rhonda says Wheels Up is a favorite amongst pilots for the aerial décor and the view: the runway at a nearby airport. Lucky Boy is the smallest room, named for a mining company that had a gold claim on the property. This is also the most popular amongst travelers that simply need a place to sleep. “It’s for people who are looking for a place to shower, sleep, and relax while they’re here,” she said. The largest of the bunch, Robbers Roost, features a private deck and a view of Robbers Roost, a spot along the ridge where thieves would historically hide out.

Breakfast, Country Style “I do a big country breakfast,” said Rhonda. Every morning, the breakfast varies. Some of the main features are french toast, biscuits and gravy, pancakes, and omelets in a bowl. The meal is always served with either sausage or bacon, fresh fruit, yogurt, juice, and coffee. “I do everything from scratch,” she said. “I was taught from my mom and my grandma.”

Cowbells to Wedding Bells When the house was such a hit, the Swensons decided to tackle something new. “The barn was built in 1906,” explained Rhonda. “We’re remodeling it. We wanted to keep the barn around because that’s historic as well.” The barn will be an event space for things like small weddings. And if that goes well, Rhonda says, they may add five summer cabins on the property, transitioning from a bed and breakfast to a specialty resort.
“People that come to stay with us come for the quiet,” said Rhonda. And they want it to stay that way. Rhonda left off with, “We want you to feel like you’re at home.”

Michael Charpentier by Dawn Geertsema In June 2020, Michael Charpentier came from Portland, OR, to visit his friend Jordan Taylor in Sioux Falls. Owners of Bread & Circus Sandwich Kitchen, Taylor and Barry Putzke were playing with the idea of opening a pizza shop. After some talks, Charpentier offered himself as a chef for their brainchild. “I have been obsessed with pizza for years but had never made it professionally, so I was extremely excited for the challenge,” he said. In November, Pizza Cheeks opened inside The Hello Hi in downtown Sioux Falls. “It took me a couple days of living here to realize this was exactly where I needed to be, so I started looking into buying a house and putting down roots,” said Charpentier.
WHAT’S THE MOST IMPORTANT INGREDIENT IN PIZZA?
DO YOU HAVE ANY HIDDEN TALENTS?
It seems obvious, but I’m going with it anyway: the dough. It’s the foundation of everything and easily the part we stressed about the most during recipe testing and development. Somewhat miraculously we hit on our current version with attempt number six or seven out of the dozen or so variations we tried. We slow ferment our dough for three days to get the ideal flavor, texture, and consistency. We also use it to make focaccia, and we are currently testing Sicilian-style pies that we’re really excited about.
I think I’m a pretty good dancer. Ask anyone who knows me: I dance anytime, anywhere.
WHAT SHOULD PEOPLE KNOW ABOUT YOU? My mission in life is to help people eat better, whether that means cooking for them or teaching them how to be better cooks.
WHERE DO YOU HANG OUT IN SIOUX FALLS? Having Pizza Cheeks inside The Hello Hi makes for a great place to hang out after work and have a cocktail. I love grabbing a pint or three at Fernson [Brewing Company] downtown, especially on the patio in the summer. Carpenter Bar is another favorite, and Bread & Circus, of course, for beers and [sandwiches].
HAVE YOU ALWAYS WANTED TO BE A CHEF? I had a ton of other aspirations prior to becoming a professional cook: journalist, writer, globe-trotting DJ, English teacher. I came into cooking later in life; I started culinary school when I was 25. Two days in, and I knew I was doing exactly what I should be. There’s always new flavors to try, new techniques to learn, and new challenges to overcome.
