From Cinco de Mayo to Labor Day, summer is filled with celebrations. If you plan to raise a glass, plan a sober ride home. And make sure to reward your DD with a refreshing mocktail from our summer series. They’re fake drinks for real friends.
ingredients 1/4 cup sugar 1 teaspoon ground cinnamon 10 – 11 lime wedges 3 cups orange juice
2 – 3 cups ginger ale 1 1/2 cups lime juice 1 cup powdered sugar 2 cups pineapple juice
Step 1 – Mix cinnamon and sugar. Rub rims of eight glasses with lime and dip in cinnamon-sugar mixture. Step 2 – In a pitcher combine orange juice, ginger ale, lime juice, and powdered sugar. Stir until sugar is dissolved. Add pineapple juice and stir. Chill. Step 3 – Add ice to sugar-rimmed glasses. Fill and garnish. Enjoy.

The road trip issue is my favorite issue of the year. Not only do I get to bond with my team doing unforgettable things, but then I get to tell everyone about it and hope they’ll do the same. This year was different since we scheduled it around an event. I’ve always wanted to go to the Custer State Park Buffalo Roundup (page 26), but seeing it via the media tour and watching bison up close was something I’ll never forget. Also seeing the Black Hills from the sky didn’t hurt, either. Happy trails, everyone!

LE AD M U LTIMEDIA DES IG NER As a transplant from Minnesota, I established a bucket list when I moved to South Dakota. Near the top of that list, just below buying a penthouse on top of the Jones Seed Co. Building (still a work in progress), was visiting the Buffalo Roundup. I never could have imagined the vantage with which I would get to experience this event, such a short time after my list was conceived. If I learned one lesson during this trip, it’s that I desperately need to expand my fringe shirt and leather hat collection. P.S. Current president Ryan Austad has worked on and off with the family business that started in 1963 since he was 14, and he has watched the now-10 brick and mortar locations and brand change and grow over time.

“We’re all around the upper Midwest and Sioux Falls is the main hub,” he said. “Our goal is not to be the biggest in the country. At one point we were, but we just want to be the best, and specifically the best at fittings. We occupy 10 percent of the best fitting operations in the country, and we’re really proud of that. So we’re laser focused on that.” Each location has been named a Golf Digest Top 100 Fitting Location across the upper Midwest. The company has certified master club fitters who guide patrons through the process and utilize state-of-the-art technology to find the right shaft, loft, grip size, and more.
I arrived before Austad’s opened to meet master fitter Dan Rotert. Why before open? They’re booking out fittings three weeks in advance and had a packed schedule. Dan told me they have a four-state radius where people will drive hours to get fitted for clubs in Sioux Falls. But that doesn’t mean they don’t take walk-ins.

“If we have an hour period where we don’t have someone, we can get them in,” he said. “We’ll typically do six to 10 walk-ins a day along with our schedule, so it gets busy.”

Austad’s Golf offers a club-fitting experience along with other essentials for the game. Fittings are for golfers of all skill levels, from the “weekend warrior to the scratch golfer.” Dan walked me through how there are fittings from individual clubs to the full bag (see side bar on page 20). A full bag typically takes two to two-and-a-half hours.
Ryan added, “We really believe our differentiating factor is our ability to create experiences and create better golf games through the bay.” It all begins with the booking and then filling out a profile before the fitting. “When everyone shows up for their fitting we basically have a baseball card of you and already have club suggestions ready,” said Ryan.

Then you discuss the equipment, how often you golf, what your goals are, and how committed you are. But don’t think you have to be an avid golfer. “It’s not intimidating,” said Ryan. “We’re just here to have fun and help you. Have a beer, take some swings. If you hit some bad ones, we hit bad ones all of the time.”

“A fitting is, we’ll basically have someone 6’7” come in, someone 5’2” come in, someone 6’ come in, and they all swing differently and all have different speeds, different flexes, and different strengths,” he said. “We want to fit clubs to that person.” Golf makes me anxious, and I had a blast with Dan. Also, at the same time, I saw the importance of getting the right set makeup. And I know I’m not the only one with a newer excitement for golf in general, especially during the pandemic.

“It was exactly a year ago at this time that we were thinking of shutting the lights off since we didn’t know where this was going,” said Ryan. “It was late May, early June golf blew up like crazy. We saw a spike in people who picked back up the game or wanted to give it a try to get out and do something. Now we’re seeing people who started it and are coming back to get more gear and had a blast. It appears people enjoyed it and are sticking with it.”

It was on the 605 team’s bucket list to one day experience the Custer State Park Buffalo Roundup. We were thrilled to get a media invite to the 55th annual event where visitors can watch riders as they literally round up and drive the herd of approximately 1,300 bison to the corrals. Packing up our office, we planned an itinerary to explore the town of Custer while we were at it to make it our official road trip in late September 2020.

Camp Arrival Open from May 25 to October 2, the Buffalo Ridge Camp Resort (more on page 50) has 86 acres of traditional (yet luxurious) campground amenities with a wide range of unique camping experiences. The amenities include a newly-built general store, a 24-hour laundry facility, a shower house, an outdoor solar-heated family pool, and an adult-only pool. Lodging can be anything from luxury cabins, glamping teepees, camping cabins, tent camping, or RV hookups. 605 chose two glamping tents, and myself, Taylor Hanson, Jordan Cushman, and John Snyder pulled into the campground late on a Wednesday night with nothing but stars in the sky.

As we started lugging our bags and gear to the tents, we could hear animals howling from afar, and it officially felt like we were camping. But, you know, luxuriously. Each tent had its own deck, and there were two large beds in both. The modern décor and small details (like a letterboard you could customize for messages) were well thought out. There was a fireplace, heaters, and plush bed comforters to keep us warm. If this is camping, I need to do it more.

Early to Rise Our alarms went off around 5:30 a.m. to get ready and drive into Custer for a hot air balloon ride with Black Hills Balloons. Flights take place at sunrise, weather permitting, and we all arrived and packed into a van to take us to the flight location. It was almost just as jaw-dropping watching the crew prep the balloon for takeoff as two balloons were being spread out. Fire started torching out to stand them up. As we loaded, we knew we were in good hands with pilot Damien Mahony, who has been in the commercial balloon business since 1999 and runs the business with his wife, Keely. Both Jordan and I are timid of heights, but Damien cracked jokes and put us at ease. Slowly going up, it was silent except for the sound of the fire. Until we watched someone from the other balloon drop their cell phone from the sky, that is. Showing the teams’ chivalry, we watched the other balloon go back down to retrieve it so they could still capture their flight. It was a morning I’ll never forget. We saw deer running through the forest and also saw cows. Damien surprised us by clipping over the top of pine trees. Thankfully I had stopped Instagramming, or I would have lost my phone as well. The whole point of the experience is to be present, and it was definitely the way to see the Black Hills at its best. We landed and the team got us settled with light snacks and a champagne toast with a Black Hills Balloons souvenir cup. A flight certificate was also given to each of us, which made us feel legit.

Safari Time In true 605 itinerary fashion, we were running back to back against the Bison Safari planned for media outlets. We tried to (quickly) drive to the Custer State Park office to catch the teams who were taking us out to the corrals. As we parked to rush in, we saw them taking off. Of course. Again we rushed as safely as possible to the corrals where we met up with Custer State Park’s Kobee Stalder and crew. They did a walk through of what would happen the following morning for the roundup and discussed the bison herd.

Media crews split up the back of different safari trucks with protective bars to keep us to stand in the truck beds safely. It was one of the top five coolest things the 605 crew has done as we cruised through the park and saw things like burros walking down the street. We turned off the road and the trucks splashed in the water as we drove directly up to the bison. It was incredible. Some were bathing. Some were walking with their calves. Some were straight chillin, whipping flies off with their tails. Stopping at a safe distance with bison surrounding us on the hills, we had the opportunity to get out of the trucks to take more photos and video. All in all it was a once in a lifetime morning. And it was just the start to the trip.

A Beacon of Music and Food “Eat, sip, gather, and groove” is the tagline for the Custer Beacon, and it fits (more on page 60). Owner and event manager Louis Umbarger has renovated the large building into a modern hangout with games, a stage and professional sound system, and dining setup inside and outside. A wrap-around porch had more tables, along with the open garage door with outdoor games and seating.

The talented cook came out to say hello and brought us the soup of the day. It was Buffalo Soup, and it was the best cup of soup I’ve ever had. As we devoured the menu and drank a Crow Peak Company beer (more on page 88), we found out there was music happening that night, so we planned to come back.

A Break and then We Feast Our team took a break back at Buffalo Ridge Camp Resort and rested in our tents. And by that we maybe really danced to Migos while drinking a White Claw in our western outfits. After taking said break, we drove back into downtown for one of my South Dakota favorites, Skogen Kitchen (more on page 70). If you know me, I can’t stop talking about this place. Things changed, though, with the pandemic, and the intimate eatery had recently reopened to the public with exceptional precautions with seating, including adding a tent out back with heaters.

Owner Eliza Raney sat us and did her usual hosting and greeting to each table, always checking on everyone to genuinely catch up and see how their meals were. The chef-driven menu offers innovative menu options by executive chef (and Eliza’s husband) Joseph Raney, and it was definitely the right choice to have a reservation as the restaurant is always busy. We had wine, local beer, and toasted to a great first day. Oh, and we had dessert because you have to at Skogen Kitchen. I don’t care how full you are.

Back to the Beacon After Taylor made me stop at a custom t-shirt shop with her to get matching Mount Rushmore sweatshirts (because when acting like a tourist, do as the tourists do) we made the short walk back to Custer Beacon. It was there that we saw Lucas Olson on the stage singing an acoustic set. His voice was magical. We grabbed a beverage and sat down on a couch by the stage. It was probably all of the food I ate, but my shirt button popped open when he started playing Slow Dancing in a Burning Room by John Mayer. Coincidence? I think not. We ran into our friends from South Dakota Magazine and watched a few more songs before heading back to the campground for a fire and to sit around our picnic table. It was going to be another early morning.

605, Roundup Our alarms went off again at 5:30 a.m. to get our fringe and Aztec shirts on to get in the spirit of the Buffalo Roundup. The event technically began at 9:30 a.m., but the parking lots opened at 6:15 a.m. Why? Because it was going to be packed. We had a solid start to our day and it took around two and a half hours to get to the North Parking and Viewing, which had pancakes being served under a tent. Our friends at South Dakota Public Broadcasting let us share their space behind yellow tape for our video and photography. People watching was almost just as good as gazing at Custer State Park. One woman had a plastic fork behind her ear, you know, just in case she got hungry. Our team watched a member of a bison fan club do a Facebook Live. I can’t make this up.
As 10 a.m. hit, we suddenly could hear hooting and hollering in the distance. Way up on the hill we slowly saw brown dots come around the corner, coming down the hill in a huge herd. They were followed by people on horses with ropes, and the visual of the bison reminded me of the stampede scene in The Lion King. It was epic. The animals got bigger and bigger with dust filling the air. And as they got closer, it was mesmerizing watching them being herded by dozens of riders on horseback, some also holding flags, including Governor Kristi Noem. And as soon as it started, it seemed to end. It took 10 to 15 minutes to get them fenced in the corral area for branding. We realized everyone would be scrambling to exit, so we grabbed our gear and sprinted to our car. We were out and headed to ironically eat a bison burger (yeah, it hurts me to write that).

More than Just Burgers
And We Ended It With More Bison Seeing that we had only shared breakfast bars that morning, we were starving and ready to try a Custer staple—Black Hills Burger & Bun (more on page 90). They were very kind to save us a spot, especially with it being Buffalo Roundup week. Visitors are placed on a waiting list and have to wait their turn to try the company’s plethora of burgers. We started with Cheese Curds made with Dimock Dairy Cheddar Cheese. It hit the spot. Each burger can be made with either beef or bison. We tried a mix of both, including The Hawaiian with Pepper Jack cheese, grilled pineapple, jalapeños, bacon, and teriyaki. Filled the brim, the 605 team left rubbing our stomachs and ready to hit the road.

Buffalo Ridge Camp Resort is a new lodging experience in the Black Hills, brought to life by Custer Hospitality, a company that manages several area hotels. When the land that once housed the iconic Flintstone Village went up for sale, Custer Hospitality says it was the perfect spot to launch a fresh concept. “Our company saw the opportunity to develop a luxury brand that would provide campers with different opportunities for glamping, cabins, and as of this year, treehouses,” said Jessica Noteboom, Custer Hospitality’s marketing director.

Taking it up a notch are the glamping teepees which feature high thread-count bedding and beautiful custom furniture built by Buffalo Ridge’s own staff carpenter.
On the simpler, budget-friendly side, travelers can book one of over 100 RV hookups or tent sites. Camping cabins—which Noteboom describes as rustic—feature double bunk beds (bring your own bedding), heat, electricity, a covered porch and picnic table, and easy access to the shower houses.
Next come the luxury canvas tents—a modern take on camping with two queen beds, plush linens, a potbelly stove, and local artwork and decor. Some of the tents feature private bathrooms, one of which is ADA accessible with a shower.
Standard teepees are similar to the camping cabins, with beds and mattresses (again, bring your own bedding), a concrete pad with a picnic table, and a personal fire pit.

The modern wedge cabins are built on stilts and feature a kitchenette, full bathroom, personal patio, and a firepit. The cabins are decorated with designer blankets and throw pillows, and include amenities such as air conditioning, linens, and coffee.
A newly built general store offers everything from s’mores kits to movies and games, gifts, clothing, and basic camping amenities like food, firewood, and propane. The Stonewall—an outdoor bar and concession stand—is also a new addition to the resort.
Finally, the newest additions to the property are the four treehouses, each with their own theme—a wellness retreat, a pirate ship, birdwatching, and a modern castle. Accessible by stairs, they feature a private deck, a secluded location with forest views, and a bathroom.
Outdoor adventurers can rent mountain bikes, canoes, kayaks, and paddleboards from the general store, and Buffalo Ridge staff are always ready to give local recommendations for dining and activities.
“It’s definitely a whimsical take on glamping, taking it to a whole new level,” said Noteboom. “They’re designed to intrigue everybody with nostalgia and a childlike spirit.” Beyond the lodging, all Buffalo Ridge guests have access to a host of amenities including two solar-heated pools (one for adults and one for the kids), free Wi-Fi, 24-hour laundry, a playground, and easy access to hiking trails and other area attractions.

The Custer Beacon A S wa n k y S h e d i n t h e H i l l s
by Austin Lammers Not long ago, Minneapolis native Louis Umbarger found a photograph of himself and his father taken near downtown Custer during a family vacation in the ‘90s. Poking through the picture’s edge is the corner of a steel warehouse that belonged to his grandfather, who owned Pacer Minerals south of town. During the mid-20th century, the warehouse served as a loading dock for trains that shipped ore via the track that is now part of the George S. Mickelson Trail. Two decades later, that warehouse now supplies Custer with ample entrées, local brews and live music under its metal roof. It’s both a gathering space for Custer and an undertaking that beckoned Louis’ family back to the Hills. A beacon, if you will. “We had all these grand ideas for the community, but close to home, it was drawing our family back together after decades of living elsewhere,” said Louis.

The Custer Beacon began as a compromise. In 2015, Louis was living in Portland, OR, where he’d just graduated with a music degree from Lewis & Clark College. His older brother, Charley, taught at an art school in France, and their mother—who’d taken over Pacer’s ownership—was bounced between Minneapolis and Custer. That year, she decided to sell the company and all its assets except for the warehouse.

“We were scattered around the world,” said Louis. “Charley wanted to start a restaurant but was hesitant to move from France to South Dakota. I wanted to start a concert space but thought a restaurant was out of my wheelhouse. My mom wanted a community center but was insistent she didn’t want to own a bar.” So in 2018, they meshed parts from all three ideas and created, in Louis’ words, a “restaurant-bar-music-thing.”
In college, Louis studied how to make music. Post-graduation, he’s learned how to showcase it with user-friendly stagecraft and audio engineering. “The stage was built by artists, for artists,” said Louis about the Beacon’s stage. “If you ask anyone who’s played here, they’ll tell you it’s one of the best rooms in the Hills.” Since 2018, Louis has made the Beacon’s stage one for local artists. The Beacon hosted 40 shows during the summer of 2020 alone. Louis wants to revive the big-act party scene that Custer touted in the ‘90s.

One way we described it was this idea of ‘third space.’ People have home. They have work. And then there’s a ‘third space,’ a place on neutral ground to be with people and play and eat together and dance. As we grew up with Custer the past 20 years, we noticed there wasn’t a space like that here. That’s grown into the Beacon and all that it is.”
They equipped it with a sleek kitchen, 16 taps of Black Hills brews, and a professionally arranged stage. They fashioned pool and shuffleboard tables among a floor of living room furniture and dining setups, then outlined it all with a patio and picnic area. Look up—exposed trusses. Look down—polished concrete. Sounds like a buddy’s garage, right? That’s what Beacon-goers felt in the early days when Louis started hosting small concerts and selling Bud Light from coolers of ice. Since then, they’ve added a fresh floor, new fences, new doors, and a smoker rig, adding some shine to a homespun space. But Louis was adamant about retaining the rustic, cozy, familial environment.

“We’ve tried to keep the Beacon as authentically Custer as we could,” he said. “People in this community have all laid hands on it as we’ve built it, so there’s a sense of communal ownership that draws people in.” Custer, however, did not influence the Beacon’s food. Last year they brought on an esteemed kitchen lead, Vince Marsh, who has a background in Texan barbecue and is well-versed in a variety of worldly foods. To meet Custer in the middle, the Beacon offers cultured dishes like Curry Poutine and the Cubano alongside elevated Midwestern staples like the Dakota Dip and Pink Bison Skewers. Shrimpatoullie and Chicken Tendies share the same section of the menu.

SEVEN HOURS FROM EVERYWHERE In 2019, the Beacon hosted a regional competition for the U.S. Air Guitar Championships, which put Custer alongside other host cities like New York City, San Francisco, Houston, Denver, Chicago, and Boston. As ridiculous as it may seem, Louis said it turned out to be one of the craziest nights at the venue. “That’s been fun for us—inviting artists to Custer who wouldn’t have stopped here otherwise. I feel like we’re getting closer to that threshold of inviting bigger names,” said Louis. “Custer is seven hours from everywhere. It’s the perfect layover destination for a touring band that’s between Minneapolis or Bozeman or Denver or Lincoln. I want the Beacon to be that spot.”
“It was a weird year to come of age as a restaurant, with limited ways to gather, so we pivoted to focus on food,” said Louis. “The silver lining of the COVID-19 situation was us establishing ourselves as a restaurant.” He continued, “A lot more people are coming out for lunch and dinner even when there’s not entertainment.” It’s common practice for Black Hills businesses to hibernate: flourish during the summer tourist rush, then close doors as leaves turn yellow. But Louis and his family didn’t build the Beacon with tourists in mind. It’s open year-round for a reason. “We’re a place for Custer,” said Louis. “To be able to move here from our various exploits in the world and have the community accept us wholeheartedly — I couldn’t ask for a better place to grow up in and be part of. We love this little town.”

SKOGEN KITCHEN by Kaylyn Mehlhaff The 605 team had its first meet-cute with the now-cult classic Custer restaurant, Skogen Kitchen, back in December of 2017. A lot has changed since then—both in the restaurant industry and in life— but one thing that hasn’t changed is owners Eliza and Joseph Raney’s commitment to offering a unique, chef-driven menu to every customer who steps into their intimate restaurant. Skogen closed last year due to the pandemic from March to August, reopening to their biggest September on record.

Owner and general manager Eliza said she and Joseph, the restaurant’s executive chef and her husband, chose to shut down because of Custer’s older population. “We were closed for six months, and it was kind of terrible,” said Eliza. “Thankfully we’re a small business, and we were smart about our business decisions last year, so we just coasted it out.”

In a part of the state where summer tourism is huge for restaurants, Eliza says she was surprised and happy to see the outpouring of community support Skogen received after being closed for most of the summer months. And what an outpouring it was; September alone proved to be the biggest month in sales for Skogen in almost four years.

After some meaningful adjustments to accommodate CDC health guidelines for their space, the restaurant was officially back in business. “We’ve just been crazy,” said Eliza. “We’re so lucky to have so much support, even support like people buying gift cards when we were closed. We were definitely pleasantly surprised.” Skogen Kitchen is probably best known for its ever-changing menu developed by Joseph, and even a global pandemic couldn’t stop the chef from experimenting in the kitchen and adding to the growing list of customer-favorite dishes. Some of those favorites include their Compressed Suckling Pig—which Eliza says is one of Skogen’s most popular entrées, soups that rotate every evening, and Duck Breast from New York City. “We’re unique in that we usually only have 20 to 30 items on our menu at any given time,” said Eliza. “We choose to focus on the menu items we have at the moment and making those flavors really stand out.” Something that is changing for the couple this year is a new addition to their family. Eliza is due with the couple’s first child in June. Although Eliza says they couldn’t be more excited to grow their family, the baby did change the couple’s annual international trip. The restaurant is always closed for the month of January, giving the Raneys the chance to leave the country in search of culinary inspiration all over the globe.

“We couldn’t go out of the country this year like we usually do,” she said, “but we found some inspiration a little closer to home. The trip is important because we usually get to go anywhere in the world and learn different things and bring those things back to Custer in an American way.” Even though COVID-19, coupled with their expected little one, may have changed the Raneys’ travel plans this year, the talented pair says there are changes they had to make during the pandemic that might be sticking around Skogen even after masks and socialdistancing are over. Given the small square footage of their space, Eliza says reservations are now required for many customers who dine at Skogen, though walk-ins are allowed when they have space. The intensified cleaning practices and attention to detail are other elements that Eliza says she doesn’t see going away anytime soon. “The most important thing to us throughout the pandemic and beyond is consumer confidence,” she said. “Just the other day we had an older couple drive here for dinner who I know live an hour and 15 minutes away from Custer, and they said it was their first time eating out since COVID. The last thing I would want is for people like them to not feel good about eating out.” Eliza continued, “The support we’ve received is amazing. We just want to give back that same sense of confidence to the customers who put their trust in us.”

Lucas Olson by Dawn Geertsema
“My music is the kind of music you play when it’s late at night and you’re nostalgic for last summer,” said musician Lucas Olson. Olson says he is most strongly influenced by Mk.gee, Sam Cooke, Khruangbin, Nick Hakim, and Frank Ocean. His interest in music started back when he was only 7 years old, when he found an old acoustic guitar in his uncle’s house. With only three strings, the guitar was not in any condition to be played, but his uncle let him have it. He saw Olson’s interest in the instrument.

Olson and his parents took the guitar to be fixed, and within weeks he was taking lessons. Today, Olson plays gigs frequently in downtown Spearfish, Sturgis, and other Black Hills towns, strumming “psychedelic, reverb-filled jazz.” Some venues he’s performed include the Matthews Opera House & Arts Center, Creekside Bean & Vine, The Custer Beacon, and Iron Phnx. Catch him in Sioux Falls and more when he pays visits to his family in Brookings. Olson talks about his first performance, his struggles, and what he’s up to.

Musical Mentor When Olson moved out to Spearfish in 2017, Chris Huisenga was one of the first musicians Olson says he met. Olson says Huisenga has taken him under his wing, granting him opportunities that he wouldn’t have otherwise.

previous cancellations due to COVID-19 in 2020, Kyler Flock of Matthews and a few friends from the Sigma Tau Gamma fraternity made the performance a reality for me. I’ve made my living primarily by playing in bars and restaurants. This was the first time an audience had come to a venue specifically to hear me perform. And for the first time in a while, I was nervous leading up to the show. That nervousness was refreshing. It gave me a new perspective on what my performances could be.

To do so, the brewery holds fundraisers for people in need.
The brewery works to be involved mainly through sponsoring events like the Dakota Five-O, an annual mountain bike race.
“He’s fine, but his medical bills were sky high,” said Drumm. “We just did a fundraiser to help him get funds to defray the cost of his medical costs.”
“We’ve been involved in that even before the brewery was open,” said Drumm. “That’s been ongoing for 15-plus years.” But mountain biking isn’t the only event emphasis for Crow Peak. “We also support the arts like Matthews Opera House, and we sponsor the Canyon Acoustic Series,” added Drumm. “We’re all about giving back to the community and just appreciating the people that have supported us through the years.”
When one of Crow Peak’s regular patrons suffered an unfortunate accident snowboarding at Terry Peak, things were looking tough for the customer.
This month, Crow Peak will start hosting live summer musical artists again after canceling performances for 2020. “We’re just getting back in the groove of having social events and people can actually come out and enjoy music.” May 21 marks the first performance of the summer lineup with Lucas Olson (more on page 80)+

BURGER & BUN CO. by Andrea Van Essen Black Hills Burger & Bun Co. has been a staple of the Custer dining scene for nearly a decade, and it’s their unwavering commitment to fresh ingredients married with a family-driven standard of excellence that keeps the crowds coming back.
The craft burger joint first opened its doors in a smaller location back in 2012, and three years later, thanks to an overwhelming response in business, it relocated to its
current, larger space on Mt. Rushmore Road. That extra space came in especially handy when COVID-19 hit in 2020, giving them room to rearrange tables and allow for social distancing. Jessica Hartmann is the general manager of Burger & Bun, and she’s also the daughter of owners, Claude and Christie Smith.

Hartmann says the business didn’t see much of a slowdown in reaction to the pandemic, but it was the type of customers that changed. “We definitely had a busy summer, but the biggest difference was the amount of takeout people were doing,” she said. “We had always offered it, but this year it was about 40 percent of our business. People would take food to go and eat in a park or in their car, and it worked out great.” So, what is it about these burgers that kept hungry customers flocking in, even in the midst of a pandemic?

“Our biggest thing is that we make everything from scratch or fresh, as much as possible,” said Hartmann. “We grind the burger, my mom bakes the buns, and everything is just very fresh.” But it’s not just about the ingredients. Hartmann says there’s a strong element of passion and dedication that goes into the restaurant’s success. She remembers growing up in Iowa where her dad started out his career as a grocer, just like his father before him.

“I remember, I was probably 10 or 12, and my dad bought a huge outdoor grill,” explained Hartmann. “He had this little shack out in front of the grocery store, and he would sell burgers, brats, and steak sandwiches. That’s what really started the burger thing.” She continued, “And in the summertime, I was down there helping him take people’s money and bagging up burgers.”

Take that entrepreneurial spirit, add a healthy dose of discipline and quality control, and Hartmann says that’s the key to the Smiths’ success. “My parents are there for every single shift,” she said. “My dad is the only one in the restaurant who’s ever cooked a burger. They just don’t want to sacrifice that quality,” she said.

Recently, the family found a way to keep their grocery tradition alive, too. In June 2020, they opened up Wild Spruce Market right next door to Burger & Bun, with Hartmann as the manager. The shop features a mixture of specialty and organic foods, as well as gifts by local makers. “Custer really didn’t have anywhere to buy natural, organic, local foods,” said Hartmann. “We opened in June, which was insane trying to do it in the midst of COVID, but we did it and it worked out fine. It had been in the works for quite a while.” A bar inside the shop sells local beer and wine, plus kombucha on tap, which Hartmann says has been a huge hit with customers. There’s also an outdoor courtyard area where customers can bring food over from Burger & Bun and enjoy the drinks from Wild Spruce’s bar. Having the shop next door fits in perfectly with the Smiths’ commitment to simple, high-quality ingredients. Hartmann said, “We’ve always really felt that what you put into your body is a big part of your health, and it’s important to use minimally processed foods. We’ve just always eaten that way.”

Kobee Stalder by Dawn Geertsema With about 1,400 bison, miles and miles of hiking trails, and 71,000 acres of wildlife and scenic terrain, Custer State Park has many things to offer nature lovers. As the park’s visitor services program manager, a position he has held for the last three and a half years, Kobee Stalder oversees marketing and communications efforts to showcase all that the destination has to offer to its guests. Stalder shares a glimpse into his love of visitors, his wife’s favorite restaurant, and how to spend time at the park.

WHAT’S YOUR FAVORITE PART OF YOUR JOB?
It’s hard to narrow it down to just one thing. This job provides such a variety of work that I get to do something new and different almost every day. But if I had to pick, I would say the visitors you get to meet in the park. They really make you feel appreciated [with] the work you do.
HOW DID A DEGREE IN JOURNALISM LEAD YOU HERE? I actually worked in communications in college athletics for 10 years before I took this position. In a way, the experience I gained from that suited me perfectly for this job. We were always trying to reach new fans and always enhance our fans’ experiences. We try to do the same thing at Custer State Park: increase our visitation and constantly enhance our visitor experience.
WHERE DO YOU LIKE TO GO IN CUSTER? There are so many amazing businesses, a wide variety of restaurants, and Custer is surrounded by awesome parks. You can literally drive 10 minutes and see buffalo, explore a cave, or be surrounded by forest. My wife really enjoys Maria’s Mexican Restaurant in town, so I should probably mention that.

HOW DO YOU SPEND YOUR FREE TIME? Free time? Most of it is spent wrangling three young kids at home, but we do enjoy getting outside, hiking, and exploring the Black Hills.
WHAT AT THE PARK DO PEOPLE NOT OFTEN THINK ABOUT? We have something here for almost everyone. We hear it all the time: “I didn’t realize there was so much to do here,” or “I wish we had more time to explore the park.” You could spend a week here and still not get to do everything you wanted.
