BTV: The Burlington International Airport Quarterly is a bilingual magazine — translated into French for our Québécois visitors — that highlights Vermont’s recreational, cultural and dining scenes according to the season. Summer in Vermont is a nonstop party. Locals wait all year for the sun to shine and the temps to rise, and when they do, it’s officially festival season. Burlington’s outdoor celebrations revolve around food, brews, music and more, but in this issue, we turn our attention to the deep roots of the state’s quintessential summer fairs — the earliest of which dates back to 1834. Over time, their agricultural focus has expanded to include rock concerts, rides and all manner of fried food — but you can still pet the 4-H animals. Or simply head to the fields for more where that came from. We’ve rounded up some farm-fresh summer fun close to Burlington — from growers’ markets to farm tours to barn-based ballet. Of course, no visit to Vermont’s largest city would be complete without diving into shimmering Lake Champlain. Or perhaps doing a downward dog on the Church Street Marketplace is more your style? Read on for our varied itinerary of what to do, see and sample. If you’re just passing through Vermont, we hope you’ll be convinced to return for a longer stay. Use this magazine, too, as a guide to the airport and onthe-ground transportation options. Ferris wheel towers over the Champlain Valley Exposition, its steel spokes illuminated by gyrating patterns of multicolored neon lights. Aromas of fried dough, cotton candy, beer and straw bales intermingle in the languid summer air. Sunburned teens in tank tops and jean cutoffs snap selfies along the midway while one of their friends in a baseball cap hurls sidearm pitches at a dunk tank, trying to douse a heckling clown. It’s late August at the Champlain Valley Fair in Essex Junction, just a few minutes’ drive from Burlington International Airport. Billed as “the 10 best days of summer,” the annual fair has been entertaining Vermonters since 1922. Today, with more than 120 exhibitors and 85 food vendors, the Champlain Valley Fair is the state’s largest special event, drawing more than 120,000 people every year. Like most county fairs and field days, this one is a people-watching slice of Americana that attracts visitors from all backgrounds. In the parking lot, shiny new BMWs and ultra-fuel-efficient hybrids park alongside Harley-Davidson choppers, tourists’ RVs and mudsplattered pickups. Inside the gates, crowds enjoy 21st-century entertainment, from pop concerts and Tilt-A-Whirl rides to monster truck and daredevil motocross competitions. Yet farm-oriented events such as the pig races, miniature horse parade, petting zoo and 4-H livestock exhibits hark back to the fair’s 19th-century agrarian roots. 8

In 1918, fairs throughout the state had to be canceled due to the Spanish influenza pandemic, which eventually claimed the lives of 2,146 Vermonters. The Great Depression spelled the demise of many county fairs, including those in Springfield, White River Junction and Brattleboro. Then, in 1938, a rare hurricane sent tents, produce and livestock hurtling across fields at the Tunbridge World’s Fair. A freak storm in July 1941 leveled the cattle barn at the Champlain Valley Fair, resulting in canceled festivities. And, in 1965, a devastating fire, caused either by faulty wiring or kids playing with matches, destroyed the grandstand at the Essex Junction fairgrounds. Despite such setbacks, as well as a continuing decline in the number of farms in Vermont, county fairs have thrived in recent years, becoming annual rites of summer for Vermonters of all ages. Bigname musical acts now serve as major draws to the Champlain Valley Fair, among them Bob Dylan (1991), Justin Bieber (2010), Neil Young (2015) and John Mellencamp (2017). This year’s concert lineup features country band Old Dominion (Friday, August 24), comedian Gabriel “Fluffy” Iglesias (Saturday, August 25), and singer-songwriter Billy Currington with special guest Locash (Sunday, September 2).

“We always try to find that balance between something new and something that’s always been at the fair that keeps people coming back,” says executive director Tim Shea. To that end, Shea reports that hypnotist/showman Steve Bayner, a perennial favorite, will return for the 2018 fair. New this year is a wild bird exhibit as well as a human cannonball show, which will set up on the midway. All three events are free to fairgoers. If you’re attending the fair with children, however, it pays to purchase a $30 unlimited ride bracelet and stay for the day. Whatever you do, grab a bite to eat. How many times a year do you get to eat deep-fried Oreos, maple creemees or chocolate-covered, locally cured bacon on a stick?

Et les vedettes de la musique qui y participent, comme Bob Dylan (1991), Justin Bieber (2010), Neil Young (2015) et John Mellencamp (2017), font courir les foules. More than 100 farms around the state will welcome visitors and hold special events designed to showcase the everyday work of raising good food. Within a 30-mile radius of Burlington, Maple Wind Farm in Richmond will host tours of the chick brooding facilities — plus a fried chicken dinner with all the fixings. At North Williston Cattle Company, see baby calves and a state-of-theart robotic milker in action while sampling chocolate milk and cheese. At Trillium Hill Farm in Hinesburg, farmers will offer tours of their vegetable and beef operation, as well as an evening of wood-fired pizza and music.

Its majestic barn resembles a fairy-tale castle, but Shelburne Farms (shelburnefarms.org) has a down-to-earth mission of sustainability education. What was once a Gilded Age estate owned by descendants of America’s Vanderbilt family is now a National Historic Register property and working farm intended to demonstrate and teach how to build a healthy future for the planet. Catch a wagon ride through striking grounds designed by Frederick Law Olmsted — best known for his work on New York City’s Central Park. Stop at the Farm Barn to see a new litter of piglets, milk a cow and watch cheesemakers craft their award-winning raw-milk cheddar. (Taste it in a grilled cheese from the courtyard Farm Cart.) Climb the gentle hills to get a view of Lake Champlain, but loop back in time for free Wednesday-night concerts in July and August.

Located in Charlotte, about 30 minutes south of Burlington, Clemmons Family Farm (clemmonsfamilyfarm.org) is one of the largest historic African American-owned farms in Vermont — and a stop on the state’s African American Heritage Trail. After earning an ArtPlace America National Creative Placemaking Grant, the landmark farm is offering its first full summer of public events. The family bought the farm in 1962 and is transitioning it into a public destination to celebrate African American heritage across history, culture, arts and sciences. The summer schedule includes interactive explorations of music, dance, food, photography, painting and poetry led by guest artists. Specific to food and farming, a new hoop house will nurture African American and African diaspora herbs, teas, vegetables and flowers, to be used in workshops on Afro-Caribbean ancestral foods and herbal nourishment.

Vermont native Chatch Pregger returned home from his well-established dance career to create this uniquely accessible ballet, performed by a diverse company of dancers on farms across the state. Visitors and even some locals may be surprised to find an oasis of small farms, community gardens and public trails located right in Burlington. Tucked alongside the Winooski River, the Intervale Center (intervale.org) is a nonprofit foundation that helped reclaim a fertile agricultural history where a city dump once stood. This year marks the center’s 30th anniversary. Celebrate at Summervale, a free farm party held every Thursday in July and August. Each week includes farmer-driven food tastings, local music, kids’ activities, and plenty of locally made eats and drinks for sale. (Or bring your own picnic.) Bike down for the easiest access — and valet bike parking — and leave alcohol and pets at home, please.

Vineyard Views

An increasing number of agricultural entrepreneurs is splashing into Vermont’s wine scene — growing grapes and welcoming visitors to tasting rooms in view of gracefully climbing vines. Closest to Burlington is Shelburne Vineyard (shelburnevineyard.com), just south of Shelburne Museum on Route 7. The elegant tasting room is open daily for vineyard tours and samples of its award-winning wines, made from cold-hardy grape varieties. The vineyard also hosts free monthly concerts with local musicians and a mobile food vendor, as well as a monthly Bluegrass & BBQ series from late May through mid-September. For something different, try the “Moth”-style Wine & Story hour on the third Tuesday of each month.

n the showroom attached to Jim Geier’s Starksboro woodshop is one of the first rocking chairs he ever made. It was built with construction materials salvaged from his job renovating houses, and its dark wood, earthy rope and solid silhouette betray its 1970s origins. But from these humble beginnings, Geier has refined his craft to build a formidable fine furniture business: Vermont Folk Rocker. Today, Geier’s patented design can be found in homes all over the country — and giving a cozy Vermont touch to Burlington International Airport and Green Mountain State welcome centers. Sturdy and inviting, the Shaker-influenced rockers particularly stand out for their seat, made from 76 small wooden blocks woven to the frame. And, as Geier notes on his website, the scaled-back Adirondack-style arms are “designed with knitting and holding babies in mind.” Geier, 74, didn’t set out to make the unofficial Vermont state chair. “I just wanted to make things,” he said. “I didn’t care what it was.” Growing up near Albany, N.Y., Geier spent his high school summers working with his grandfather, a stonemason. “I think my grandfather got me going on making things,” he said, recalling in particular a giant concrete dinosaur they built for a children’s park. Geier came to Vermont as a student at Saint Michael’s College in Colchester, graduating in 1965 with a degree in biology. After teaching high school for a year, he volunteered for the army. Following three years of service, he returned to Burlington to work as a building renovator. In 1971, Geier rented a small shop in Burlington’s South End to make cabinets for the houses he was working on. Once he had a shop of his own, he threw himself headlong into furniture making, continually “churning out new things,” he said. “I was more fascinated with the idea of making something new than I was with the money,” Geier recalled. During that time, he also drew great inspiration from the University of Vermont’s Fleming Museum of Art, which hosted a woodworking exhibition. “I was just blown away,” he said. “I never forgot it.” Given Geier’s experimental spirit, it should come as no surprise that Vermont Folk Rocker didn’t begin with a chair at all but with a hammock, made from his nowsignature blocks of wood. When he took the hammock to a show in Massachusetts, his sister suggested reimagining it as a rocking chair. “It just went from there,” he said. Geier tweaked and tested his design until 1990. That same year, he moved his shop to the small Addison County town of Starksboro and committed to focusing nearly all of his attention on rockers. Today, Vermont Folk Rocker chairs start at $1,775 and are made with four different woods: cherry, bird’s-eye maple, red oak and black walnut. Geier works closely with his small staff of about 10 employees to make each chair by hand. Together, they cut the initial components, bevel block edges and saturate the wood with a linseed-oil finish — multiple times. “It’s the elbow grease that makes it really smooth,” Geier said. One of Vermont Folk Rocker’s many fans is Gene Richards, director of aviation at Burlington International Airport. “They’re stunning. They’re beautiful,” he said. “They’re not only a seat. They’re art.” Though BTV has provided travelers with rocking chairs since 2002, it wasn’t until 2016 that Vermont Folk Rockers were added to the mix. For Richards, who began his position at the airport in 2013, Geier’s chairs fit perfectly with its mission of “Vermont reinforcing Vermont.” Aside from being attractive and locally made, the rockers make sense for weary travelers. “They’re good for people pre-travel,” Richards said. “They’re therapeutic — it’s like a mini back massage as you sit.” “They’re more calming than a regular chair,” Geier noted. And despite Vermont Folk Rockers’ strong connection to the Green Mountain State, he also recognizes the universal within the local: “Everybody wants to sit in a chair that’s comfortable.”

Stand Up for the Lake Qu’est-ce que la planche à rame? C’est une planche flottante sur laquelle on se tient debout et on se propulse à l’aide d’une pagaie. On dit que c’est le sport nautique qui s’est répandu le plus vite dans le monde. Accessible aux personnes de tous âges, peu importe leur forme physique, la planche à rame est facile à apprendre et procure rapidement beaucoup de plaisir. Dans les dernières années, ce sport est devenu très populaire à Burlington, où le lac Champlain attire les adeptes tout l’été. Yoga on Church Street Strolling down Burlington’s Church Street Marketplace in the summer almost always comes with a side of street entertainment, from romantic accordion music to sidewalk standup comedy. But one Sunday in August, the pedestrian plaza becomes a spectacle of sun salutations. Hundreds of participants stretch and sweat at the annual Yoga on Church Street. The free community yoga class benefits HOPE Works, a nonprofit dedicated to ending sexual violence — so roll out a mat and bring a donation to the cause.

urlington City Arts curates exhibits in three areas of the airport: the Skyway, the area above the escalator and the walls facing security for Gates 1 through 8. Whether you’ve arrived early for a flight or are waiting to pick up passengers, do take the time to look around! In June, the Skyway features works on the theme of “simplicity” by central Vermont’s f/7 photography group. As the artists’ statement notes, the theme still “leaves ample room for beauty, introspection and ambiguity.” In the Gates, Tatiana Yakusheva’s oil paintings show street life and landscapes in Burlington and beyond, shaped by the artist’s belief that “all the beauty is in imperfection.” And Phil Laughlin’s vibrantly colored oil paintings depicting natural scenes of the Champlain Valley are mounted by the escalator. If you’re going up, be sure to turn around and look at the wall behind you. But watch your step! In July and August, photographer Elliot Burg presents “Athletes for the Ages” in the Skyway, with images celebrating the senior athletes who competed in 2015’s National Senior Games. In the Gates, Joy Huckins-Noss exhibits contemporary pointillism focusing on the natural world. Says the artist, “I want to bring the feelings and sensations of being outdoors into the painting.” All of these artists live or have spent time in Vermont. What sets the Skinny Pancake apart from other airport restaurants? All of our food is fresh and local and organic — as much as we’re able. [Typically,] if you go to an airport, you know that you’re going to have

nna Walsh majored in Japanese at the University of Vermont and has a master’s degree in TESOL (teaching English to speakers of other languages) from Saint Michael’s College. Although knowing a foreign language is not a requirement of her job as general manager of the Skinny Pancake restaurants at Burlington International Airport, her background in education comes in handy. “Being trained in teaching has definitely helped me with coaching employees,” said Walsh, 30. “And in finding ways to explain things to people.” Sometimes that means telling customers that although it’s legal to sell booze at 8 in the morning, the Skinny Pancake bar doesn’t officially open until 10:30 a.m. Still, Walsh might accommodate a traveler ANNA WALSH in need of a drink — even though she knows that “as soon as one person gets Skinny Pancake a Bloody Mary, 10 more people want to general manager order it,” she said. The locavore crêperie has several other Vermont locations, including a cart on Burlington’s Church Street and a flagship restaurant by Waterfront Park. At the airport, Walsh oversees 50 or so employees and orders food based on how many passengers are flying through. “We’re the only restaurant in Burlington that knows exactly how many people are going to be walking by our storefront on any given day,” she said. BTV met up with Walsh to find out what else is cookin’ at the airport.

La connaissance d’une langue étrangère n’est pas une condition préalable pour son poste de directrice générale des restaurants Skinny Pancake à l’Aéroport international de Burlington, mais sa formation en éducation lui est très utile. « Le fait d’avoir étudié en enseignement m’a beaucoup aidée à encadrer les employés, affirme Anna, âgée de 30 ans, mais aussi à trouver des façons d’expliquer les choses aux gens. » Parfois, il s’agit de faire comprendre aux clients que même si c’est légal de vendre de l’alcool à 8 h le matin, le bar du Skinny Pancake n’ouvre pas avant 10 h 30. Officiellement… car Anna accepte à l’occasion de satisfaire un voyageur assoiffé, même si elle sait qu’en servant un Bloody Mary à un client, dix autres voudront la même chose. Satisfaire les clients et leur servir de bons repas, c’est son travail, et Anna gère non pas un, mais trois restaurants Skinny Pancake à l’aéroport : un petit dans le terminal principal, et deux autres une fois la sécurité passée. Cette crêperie locavore est présente à plusieurs autres endroits au Vermont : elle a notamment un kiosque sur Church Street, à Burlington, et son adresse principale près du parc Waterfront. À l’aéroport, Anna supervise une cinquantaine d’employés et commande ses produits en fonction du nombre passagers en transit. « Nous sommes le seul restaurant à Burlington, dit-elle, à savoir exactement combien de personnes vont passer devant notre comptoir ». BTV s’est entretenu avec Anna pour savoir ce qui mijote à l’aéroport.

At Skinny Pancake, people can get a Skinny Salad with fresh organic mixed greens, fresh local cherry tomatoes, fresh local apple slices and a homemade maple-pesto vinaigrette. It’s delicious, and you know that you’re not going to feel bad about it the rest of the day.

La seule chose que nous pouvons faire, c’est garder notre sourire et accueillir les gens chaleureusement.

How often do fliers fuel up on coffee after dumping their brew due to Transportation Security Administration (TSA) rules? All the time. Especially at 5 in the morning, they’re not too happy they had to dump their coffee. Our morning crew is so stellar. They are the most unstoppably nice people. If somebody shows up grumpy, it doesn’t get them down. We provide the best service we can. We understand that everybody’s coming from a different situation. The only thing we can do is keep smiling and keep being welcoming and friendly.

En quoi est-ce différent de travailler à l’aéroport par rapport aux autres établissements de Skinny Pancake? À part quelques variantes dans le menu, les clients sont différents et ont des besoins différents. Aux établissements du bord du lac et de la rue Church, on a beaucoup de personnes en congé. Ces clients-là sont de bonne humeur et ont hâte de manger des crêpes. À l’aéroport, on a des gens qui ne savent même pas ce qu’est une crêpe et qui ne veulent pas nécessairement en manger une — c’est donc notre travail de les convaincre. Ce n’est pas du tout la même chose de servir une clientèle « captive ». À l’aéroport, j’aime échanger avec les clients. Certains sont d’humeur maussade parce que leur vol est en retard. C’est donc une bonne occasion de leur apporter un peu de réconfort.

What’s different about working at the airport locations of the Skinny Pancake, versus its other outposts? Aside from small menu differences, the guests are different and have different needs. At the waterfront location and on Church Street, you’re getting people who are on their day off. They’re in good spirits; they are really excited to eat crêpes. At the airport, there are people who don’t know what a crêpe is, and they don’t necessarily want to eat a crêpe — so it’s our job to turn it around. Certainly, serving a “captive” audience is different here. At the airport, I like having the opportunity to get to know the guests, too. Maybe they were delayed and are not very happy about it. It’s a good opportunity to make them feel welcome.

Notre équipe doit se soumettre au détecteur de métal tous les jours. Tous nos effets personnels passent dans le scanneur. Les agents de la TSA sont bien sympathiques, mais ils ne font pas d’exception pour nous. Si je déclenche le détecteur de métal, je vais me faire fouiller comme tout le monde. Ils ne perdent jamais de vue leur travail et je trouve ça admirable.

What security precautions do you and your team go through every day? Multiple times a day, we have to inventory our knives, which are tethered to the wall. They each are etched with a number, and we have to make sure we have the correct numbers and we have all the knives. Our staff has to go through the metal detector every day. Any belongings have to go through the scanner. The TSA agents, they are completely friendly, [but] they don’t make exceptions for us. If I set off a metal detector, I’m getting patted down just like everybody else. They never lose sight of their job, which I really find admirable.

What crêpe is best for calming the nerves of a stressedout traveler? Definitely something involving chocolate and whipped cream. It’s comfort food and sweetness. It makes people feel like they are having a special treat, which they deserve.

Comment faites-vous passer vos livraisons par la sécurité de l’aéroport? Avec mon badge d’accès à la zone stérile, je suis autorisée à inspecter les livraisons. Si c’est une caisse de pommes, je dois chercher tout corps étranger à l’intérieur. Si c’est un liquide, je dois vérifier que le contenant n’a pas été altéré et que le bouchon n’est pas perforé. Une fois les aliments inspectés, je peux les acheminer derrière le point de contrôle de la sécurité jusqu’à notre restaurant.

How do you get food deliveries through airport security? With my sterile-badge clearance, I’m authorized to inspect the delivery. If it’s a case of apples, I’m looking for any foreign objects in it. If it’s any kind of liquid, I’m looking for a puncture of the cap or any sign it was tampered with. Once I’ve inspected the food, I’m authorized to take it the back way around the security checkpoint and into our restaurant.
