BTV looks back on the life and artwork of Wilson “Snowflake” Bentley, known for pioneering snowflake photography. Even today — more than 80 years after his death — Bentley’s snapshots of snow crystals are thrilling to behold. You can view them for yourself in his hometown of Jericho. fter a day spent skiing Vermont’s windwhipped mountains or strolling the snowy streets of Burlington, there’s only one thing left to do: Head inside and thaw the frost from your cheeks, preferably over a bite to eat. The Green Mountain State is widely considered a foodie’s playground, and one Burlington market in particular adds to the fun. Pine Street’s Dedalus Wine Shop, Market & Wine Bar invites visitors to sip rare bottles by the glass and snack on handcrafted small plates — or you can pick their own gourmet provisions perfect for après-anything. Dedalus opened as a wine merchant in a tiny back-room space in downtown Burlington in 2007; founder Jason Zuliani moved the shop twice before settling into the city’s hip South End in early 2017. Near the entry stands an elegant, richly appointed wine bar. Here it’s easy to assemble a fine evening meal from a menu including marinated olives, Ortiz mussels, Andalusian gazpacho and more. The winetinged chicken pâté is not to be missed. Or head to the provisions counter for excellent made-to-order sandwiches and some of the world’s finest curds, many of which just happen to hail from in-state. When it comes to artisan cheeses, Vermont has an embarrassment of riches. “I have the best job in the world,” says artisan foods manager John O’Brien, adding that what excites him most is chatting with a cheesemaker who is amped about a particular cheese. “You can tell when someone’s really enthusiastic about something,” he says. “And that just makes my job that much easier.” O’Brien crafts lush boards of cheeses, cured meats, nuts, crackers, breads and preserves. A Dedalus platter is a veritable artwork of various flavors, forms and textures. Often, O’Brien curates these to match wines from the shop’s painstakingly selected bottle collection.

But the real fun lies in choosing your own edible adventure, informed by the staff’s vast wisdom and the foods available for sampling throughout the shop. In winter, O’Brien favors French triple-cream cheeses — best served with a spoon — such as Brillat-Savarin and Délice de Bourgogne. “These are caloric butter-bombs loaded with enough oomph to get you back out into the snow and wind,” he says. Cheddar connoisseurs can turn to Shelburne Farms’ clothbound two-year variety, while those with the winter blues might consider a fine English Stilton or an annatto-hued Shropshire blue. And to drink? When the snow is falling, Zuliani reaches for concentrated and intense wines that are layered enough to linger over. “I want them to be rich and satisfying,” he says, “to work well with ooey, gooey cheese and richer charcuterie, like chicken-liver mousse or duck confit.” Finally, he adds, “I want to be able to meditate a bit [on the wines] — to tuck into them like a good book.” That prescription might call for an elegant, perfumed Italian red, such as a 2016 bottle of Benevelli Piero’s Langhe Nebbiolo, or perhaps a powerful Napa Valley cabernet, such as Snowden Vineyards’ 2014 Ranch. For those open to spending $100 or more, a spicy, food-friendly French syrah will deliver a sipping experience worth savoring. Pair big, round reds with heady, bloomy cheeses — or, if you’re a drinker of winter whites, balance the complexity of a weighty Riesling with a sharper, more astringent cheese. Whatever your choice, O’Brien suggests Dedalus loading up on fruits and cheesemonger nuts. “I love speckling John O’Brien [cheese boards with] smaller preserved fruits, such as West Coast golden raisins” or chocolatecovered Spanish figs, he says. Souvent, John adapte ses plateaux pour les marier aux vins issus de la collection de bouteilles de l’établissement, assemblée avec beaucoup de soin. Mais le vrai plaisir, c’est de choisir sa propre aventure gustative, en s’inspirant des sages conseils du personnel et des dégustations qu’on peut faire un peu partout dans la boutique. L’hiver, John recommande les fromages français triple-crème, qu’on mange à la cuiller, comme le Brillat-Savarin et le Délice de Bourgogne. « Ces bombes crémeuses décadentes donnent le courage nécessaire pour ressortir et affronter la neige et le vent », dit-il. Quand la neige tombe, Jason jette son dévolu sur des vins concentrés et intenses, suffisamment complexes pour faire durer le plaisir. « Je les veux riches et satisfaisants, explique-t-il, pour qu’ils s’accordent bien aux fromages onctueux et aux charcuteries plus grasses, comme la mousse de foie de volaille ou le confit de canard. Je veux que mon vin m’emmène ailleurs, que je puisse plonger dedans comme on plonge dans un bon livre. » Une commande qu’on pourrait remplir avec un rouge italien élégant et parfumé, comme le Langhe Nebbiolo 2016 de Benevelli Piero, ou encore un cabernet puissant de la Napa Valley, tel que le Ranch 2014 de Snowden Vineyards. Si vous êtes prêt à débourser 100 $ ou plus, optez sans hésiter pour un syrah français épicé et polyvalent à table : vous ne le regretterez pas. images. To look at these photos is to begin to understand his obsession, which sits firmly at the intersection of art and science. Each crystal is a marvel, a feat of symmetry and beauty that shares much in common with mandalas, fractals and investigations of sacred geometry. That a poor, self-educated young farmer could devise a way to capture their precarious existence in the late 19th century is, by any standard, impressive. Bentley and his efforts did not remain in obscurity. In his lifetime, he sold photographs by mail (one such correspondence is included in the exhibit), and his work was lauded nationally and internationally. His studies were published in magazines including National Geographic, Popular Science and Scientific American. Today, closer to his hometown, Bentley is something of a folk hero. Most, if not all, Vermont schoolchildren are taught about his achievements. A plaque on the town green recognizes “Jericho’s world famous snowflake authority.” The children’s book Snowflake Bentley, written by Jacqueline Briggs Martin and illustrated with woodcuts by Vermont artist Mary Azarian, won the Caldecott Medal in 1999. As Martin gently suggests in Snowflake Bentley, it was likely the artist’s love for snow that ultimately led to his death in 1931. Shortly after the publication of his book, Snow Crystals, Bentley walked six miles back to his house during a blizzard. He died of pneumonia just two weeks later at the age of 66. Today, Bentley lives on every time snow falls. One has the sense that if he had lived to be 100, he would’ve kept doing what he loved: photographing snow crystals and sharing his images with the world. Or, as he once put it: “Oh for a thousand hands, a thousand cameras, to preserve more of this exquisite beauty so lavishly scattered over the earth.”

Sleigh Day Snowfall brings sleigh rides at Shelburne Farms

hen snow first flies in Vermont, many locals head for the hills — to ski or snowboard, that is. Pat Palmer is interested in a different kind of riding. Every December, the Vermont farmer harnesses his draft horses to a sleigh. For more than 20 years, he’s spent his winters showing visitors the beauty and splendor of Shelburne Farms, a scenic 1,400-acre sustainable farm along the shores of Lake Champlain. It’s located just seven miles south of Burlington. Despite stiff winds that sweep off the lake and temperatures that can drop into the single digits, 71-year-old Palmer counts himself as lucky: He doesn’t describe his job as “work.” For him, dashing through the snow-covered woods and fields of the picturesque estate is about as good as it gets. “People often say, ‘Poor you. You’re out here all day,’” Palmer observes. “But if you’re dressed for it, you’re fine.” Palmer first got into draft horses several decades ago when he considered using them for logging, a project that eventually proved unsuccessful. For a time he and his wife, Cathy, offered trail rides on their 55-acre Thornapple Farm in New Haven. But they eventually decided it was too risky putting strangers on horseback with little to no riding experience. “No matter how good the horse is, sometimes the personalities just don’t click,” he explains. “Giving sleigh rides, I have control of the horses, and people just go along for the ride.” Today, Palmer works exclusively with Percherons, which are among the largest of the draft-horse breeds. His biggest measures 18 hands at the shoulders, or six feet tall, and tips the scale at more than 2,000 pounds. But Palmer’s horses are as docile as they are powerful. Cathy, a farrier’s daughter, grew up around horses and learned early on how to read their temperaments. So when Palmer travels to a horse auction, he always brings his wife along to ensure he brings home the right personality. Even after years of running the same routes at Shelburne Farms, Palmer says the sleigh rides haven’t lost their charm for

Skiing to Slayton Pasture Cabin

As four-time Olympian Larry Damon famously said, Stowe’s annual Race to the Cabin is “a pretty easy race; there’s only one hill.” Yes, but that hill entails a 1,000-foot elevation gain in just five kilometers. Racers tackle the uphill course, climbing deep into the woods to the finish line at Trapp Family Lodge’s Slayton Pasture Cabin, where hot soup, sandwiches and a toasty fire await. The record race time? Seventeen minutes. For visitors who’d like to take things slower, the cabin is open daily in winter, and the lodge’s 2,500 acres include 37 miles of groomed trails and 62 miles of backcountry trails for cross-country skiers of all levels.

“Essex Moon Reflection”

urlington City Arts curates exhibits in three areas of the airport: the Skyway, the area above the escalator and the walls facing security for Gates 1 through 8. Whether you’ve arrived early for a flight or are waiting to pick up passengers, do take the time to look around! From January through March, the Gates feature artworks by Mike Sipe, who has called Vermont his second home since 2002 and his permanent one since 2012. A “serious amateur photographer” for more than 30 years, Sipe currently lives in Richmond, about 25 minutes from the Burlington waterfront that’s prominently featured in many of his shots. “The Lake Champlain region is my unparalleled muse,” he writes in an artist’s statement — “the beauty of the lake, skies, mountains, valleys and the people enjoying its splendor. I don’t have to travel the world to find world-class beauty; it is here in my own backyard.” With a keen eye for composition and color, he captures nature’s many moods through the seasons. “Essex Moon Reflection” shows a butter-yellow harvest moon casting soft light over serene water, with quiet mountains standing sentry nearby. In “Extraordinary Light,” Sipe trained his lens on the electric-orange clouds of a summer sunset, their reflection caught in the pink ripples of the lake below. Mike Sipe Sipe is currently at work with writer and environmentalist Trevien Stanger on Lake Champlain: Our Basin of Relations, a forthcoming coffee-table book emphasizing the importance of water stewardship. The founder of Conant Metal & Light doesn’t just craft original lighting and decorative metalwork out of his Pine Street studio and showroom — he’s one of the city’s brightest lights himself in terms of creativity, community and character. Conant came to Burlington to attend the University of Vermont in the 1970s — and never left. “My interest in expressing myself creatively was embraced back in the day, and it still is,” he said of his adopted hometown. These days, in addition to running his metalwork biz, he’s the proprietor of one of the Queen City’s most interesting buildings, at 266 Pine. Known as the Soda Plant — a reference to its century-old history as a ginger-ale manufacturing plant — the space is home to artists, entrepreneurs and artisanal beverage businesses. Visitors can easily find it — just look for the 25-foot-tall metal rocket ship that Conant designed out front. BTV recently chatted with Conant and asked for his insider tips on what visitors should do while they’re in town. Start by staying at a bed-and-breakfast, he advised: “We’ve got some nice hotels, but nothing compares to staying with the locals.” How to spend an afternoon in the South End: We’ve become famous now for our breweries. So, if anyone has an affection for beer, then, yep: The breweries are open; they’re friendly; they’re varied in what they produce, from cider to fermented beer; and they’re proud and all relatively new players. I think that’s probably a good place to spend an afternoon in the South End. Burlington artists to check out: One that everybody recognizes, and certainly she’s worthy, is Katharine Montstream and Katharine’s studio and gallery on St. Paul Street. And, boy, I’d say just check out the Howard Space block on the corner of Howard and Pine, and just randomly wander through the halls of the building and poke your head into spaces that seem like the door’s cracked open. Fondateur de Conant Metal & Light, il ne se contente pas de fabriquer des luminaires originaux et des œuvres décoratives en métal dans son studio et sa salle d’exposition de Pine Street – il est lui-même l’un des êtres les plus lumineux de la ville par sa créativité, son caractère et son esprit de communauté. Steve est venu à Burlington dans les années 1970 pour étudier à l’Université du Vermont – et il n’est plus jamais reparti. « Mon intérêt pour l’expression artistique est né à cette époque et continue de m’animer aujourd’hui », dit celui qui a fait de Burlington sa ville d’adoption. Dernièrement, en plus d’exploiter son entreprise de métallerie, il a investi l’un des immeubles les plus intéressants de Burlington, le 266 Pine Street. Mieux connu sous le nom de Soda Plant – en référence à sa vocation centenaire d’usine de soda au gingembre, cet espace accueille artistes, entrepreneurs et entreprises de boissons artisanales. Les visiteurs le reconnaîtront facilement à la fusée en métal de près de 8 mètres, conçue par Steve, qui orne sa devanture. L’équipe de BTV s’est récemment entretenue avec Steve pour lui demander ce qu’il conseille aux visiteurs pendant leur séjour dans la ville. Sans hésiter, il recommande d’opter pour l’hébergement en gîte touristique : « Nous avons de très beaux hôtels, mais il n’y a rien de mieux que de loger chez l’habitant. » Un après-midi dans le South End : Nous sommes maintenant bien connus pour nos brasseries. Donc, si vous êtes un amateur de bière, n’attendez plus : nos brasseries sont ouvertes, chaleureuses et fières, proposent des produits variés allant du cidre à la bière fermentée et sont toutes relativement nouvelles sur le marché. Je pense que c’est un bon endroit où passer l’après-midi dans le South End. Quelques artistes de Burlington à surveiller : La réputation de Katharine Montstream n’est plus à faire, et son studiogalerie sur la rue St. Paul vaut vraiment le détour. Oh, et vous devez absolument passer aussi par Howard Space au coin de Howard et Pine. Déambulez dans les couloirs de l’immeuble et jetez un coup d’œil par la

Where to eat on a cold winter evening: A place I’ve grown to love is the Great Northern. It’s relatively new. They’ve got a fireplace. The food is amazing. There’s a very cool vintage bar and barback, sort of an eclectic interior. [Owners] Frank [Pace] and Marnie [Long] really know how to make you feel at home. Frank’s an extraordinary chef. Where to find evening entertainment: For theater, I say go to a Vermont Stage show. For a little more contemporary fun night out: Radio Bean. It’s an experience that can be most memorable. And certainly ArtsRiot; they have not only music but spoken-word, Moth-type story hours [and] a variety of entertaining opportunities. How to spend a snow day: My snow adventures are in the woods, typically on cross-country skis or snowshoes. I would encourage someone to venture that way. You can do it right in town. You can go to Centennial Woods or the Intervale and experience the great outdoors, feel like you’re in the country. Hitting the woods is really easy, even though you’re in downtown Burlington. And then you feel like you deserve that evening out afterwards. What to do when it’s too cold to be outside: The Generator maker space on Sears Lane is a very interesting stop. With the wood and metal shops, electronics, drone racing [and] apparel design, there’s any number of activities and classes going on, and one can experience the enthusiasm of makers, artists and entrepreneurs. It’s pretty cool. Another possibility would be sort of an unsung hero of UVM: Fleming Museum. It’s a taste of art history. Fleming is really a gem. Where to find a Vermont souvenir: Thirty-odd. You should stop in. Moe O’Hara is an artist herself, and she has taken over that space and manages it solely for the purpose of offering artists exposure in the South End of town. So she’s curated a group of 30-plus artists and is showing their work, and much of it is not seen anywhere else in Chittenden County. A lot of it is affordable and [makes] great gifts to go home with.

Où se divertir en soirée : Si vous aimez le théâtre, je vous conseille d’aller voir un spectacle de la troupe Vermont Stage. Si vous avez envie d’une soirée qui bouge un peu plus, allez à Radio Bean. Vous allez vivre quelque chose de mémorable! Et ne manquez pas ArtsRiot, où il n’y a pas seulement de la musique, mais également des histoires et des numéros parlés dans le style du groupe The Moth, et une foule d’autres divertissements. Quoi faire lorsqu’il neige : C’est dans les bois que je préfère pratiquer mes activités hivernales, comme le ski de fond ou la raquette. Je vous le conseille fortement. Et même pas besoin de sortir de la ville. Vous pouvez aller à Centennial Woods ou à l’Intervale et profiter du plein air comme si vous étiez à la campagne. C’est super facile de se retrouver en milieu boisé, même au centre-ville de Burlington. Et après, on a vraiment l’impression de mériter sa soirée. Quoi faire quand il fait trop froid pour rester dehors : L’espace de création Generator sur Sears Lane est un endroit très intéressant. Ateliers de travail du bois et du métal, électronique, courses de drones, création de vêtements, voilà autant d’exemples d’activités et de cours auxquels on peut participer, et on peut vraiment sentir l’enthousiasme des fabricants, artistes et entrepreneurs. C’est très cool. Autre option : le Fleming Museum, une institution méconnue rattachée à l’Université du Vermont. C’est une fenêtre ouverte sur l’histoire. Un vrai bijou. Où dénicher un souvenir du Vermont : Thirty-odd mérite une visite. Moe O’Hara, elle-même artiste, a investi cet espace qu’elle gère dans l’unique but de donner de la visibilité aux artistes du South End. Elle a donc constitué un groupe d’une trentaine d’artistes dont elle expose les œuvres, dont beaucoup ne peuvent être vues nulle part ailleurs dans Chittenden County.
