Berwick Hill Road, Seaton Burn, NE13 6BU Raising money for the Borders Donkey Sanctuary, two Christmas Donkeys will be visiting Animal Corner bringing some extra festive cheer to the garden centre! The charity provides re-homing for donkeys and mules from The North-East of England and Scotland as a result of rescue from cruelty or neglect, or because the current owners could no longer care for them. This rich, German fruit bread is particularly popular in the city of Dresden, where a huge stollen is traditionally paraded through the streets at the annual Stollenfest

INGREDIENTS

✻ 75g raisins ✻ 75g sultanas ✻ 25g mixed peel ✻ 50g glacé cherries, chopped ✻ 50g blanched almonds, chopped ✻ Finely grated zest of 2 lemons ✻ 10 cardamom pods, crushed ✻ ground nutmeg ✻ 1 tbsp. vanilla extract ✻ 375g strong white bread flour ✻ 1 sachet dried yeast ✻ 50g caster sugar ✻ 1 medium egg, beaten ✻ 65g unsalted butter, melted ✻ 150 ml warm milk ✻ 200 g white marzipan ✻ Icing sugar, for dusting

METHOD

1 In a bowl, mix together the raisins, sultanas, mixed peel, cherries, almonds, lemon zest, cardamom, nutmeg and vanilla extract. Cover and leave to stand while making the dough. 2 Put the flour, yeast and sugar in a mixing bowl. Add the egg, 50 grams of the melted butter and 150 millilitres of milk. Using a round-bladed knife, mix the ingredients to form a dough. If the dough feels dry and crumbly, add a further one to two tablespoons of milk. Turn out on to a floured surface and knead for 10 minutes


Stollen also freezes well if you intend to make it more than a few days in advance. Simply wrap in foil before placing in the freezer. Thaw overnight at room temperature and dust with icing sugar before serving. until smooth and elastic. 3 Place in a lightly oiled bowl. Cover with clingfilm and leave to rise in a warm place for one to one and a quarter hours, until the dough has doubled in size. 4 Turn the dough out on to a lightly floured surface. Gradually knead in the fruit mixture until it is evenly distributed through the dough. 5 Don’t worry if the dough becomes soft, sticky and slightly messy to handle at this stage. Cover with a tea towel and leave to rest for 20 minutes. 5 Preheat the oven to 190°C/gas mark 5. Grease a large baking sheet. Shape the marzipan into a log, 30 centimetres long, and set aside. 6 Roll out the dough to a 30 by 16 centimetre rectangle. Place the marzipan log on top of the dough, slightly to one side of the centre. Dampen the wider side of the dough with water then fold it over the marzipan, pressing it down gently on the other side, to secure. Transfer to the baking sheet. Cover with lightly greased clingfilm and leave in a warm place for 30 minutes. 7 Bake for 20 to 25 minutes, or until risen and pale golden. Remove from the oven and brush with the remaining melted butter. Transfer to a wire cooling rack. Once cool, dust generously with icing sugar and serve. To save time in Christmas week, you can store the stollen, wrapped in foil, in a cool place for three to four days.

A delicious alternative for a festive pudding. Your guests will love it! INGREDIENTS

✻ 250g self-raising flour ✻ 125g buttery baking spread* ✻ 250g Carnation Light Condensed Milk ✻ 2 large eggs ✻ 100g cranberries ✻ Zest of 1 orange ✻ 50g cranberry sauce You will also need... 1 litre glass pudding bowl, lightly greased (heat resistant)

METHOD

1. Spread the cranberry sauce over the bottom of the pudding bowl. 2. Rub the flour and buttery baking spread together until they form crumbs. Whisk the eggs and 250g Carnation Light Condensed Milk together and

then pour into the buttery flour crumbs. Mix thoroughly and then stir through the cranberries and orange zest. 3. Pour the mixture into the bowl, covering the cranberry sauce. Seal the bowl with 3 layers of cling film. 4. Pour an inch of water into a deep saucepan, larger than the pudding bowl. Place the bowl into the centre of the saucepan and cover with a lid. Steam over a low heat for 1 ½ hours, ensuring that the saucepan does not cook dry. Turn out onto a serving dish and enjoy. (Alternatively prick holes into the Clingfilm and microwave for 10 minutes on high, then 20 minutes on Med (850 Watt)) For extra glazing: When the pudding is ready, spoon 2 tablespoons of cranberry sauce over the top. 29

SHOULD YOU STAY IN, OR GO OUT TO A RESTAURANT ON CHRISTMAS DAY? WE’LL HELP YOU DECIDE WITH THIS CHRISTMAS LUNCH GUIDE.

T

o eat out or stay home? That is the question for many of us on Christmas Day. And, according to recent figures, it seems a good portion of us are heading to restuarants on December 25th, opting to ditch slaving over a hot stove in favour of forking out for chef-prepared dishes. So, is turkey and all the trimmings best served at home or is it time to let someone else take over this year? Lets look at the pros and cons.

EATING AT HOME 1. You get to do it your way - The beauty of staying at home is that you get to do Christmas your way. If you like a babycham and prawn cocktail before tucking in to your turkey then you can. If you want to eat at 12pm, 3pm or 6.30pm, it’s up to you. If you want to play a game of charades between the main course and dessert, then play away. There are no limits at home. 2. No crowds, just you and your loved ones - If the thought of sharing Christmas lunch surrounded by a room full of strangers makes you uncomfortable, then staying at home has to be the option. On Christmas Day many


restaurants are packed out. This could make the day seem less special, especially if you want your whole focus to be on you and your guests. Eating at home is much more intimate. 3. Easier to cater for all tastes - There’s always one guest who doesn’t like turkey, not to mention varied diets such as vegan, vegetarian and gluten free. If you need a varied menu with sugar free pudding or vegetarian gravy, it’s easier dome at home without too much fuss. Also, if you head to a restaurant for the first time on Christmas Day, there’s the possibility it wont quite live up to your expectations. Perhaps the veggies won’t be cooked just the way you like them or the vegetarian options will go down like a lead balloon? If you like things done a certain way then you’re probably best staying at home.

No stress - There’s no doubt that Christmas is one of the most stressful times of the year, as well as the most wonderful. If you’re the one cooking then the furious planning in the weeks leading up to it will have your head in a spin. What with ordering the turkey on

4. You can drink what you like - If you want to eat, drink and be merry on Christmas Day then staying home means you can crack open the prosecco without any concerns. Drink driving is a major issue and police are extra vigilant at Christmas time. Going out means avoiding the booze if you’re the driver. Staying at home on the other hand, means you can indulge in that second glass of red wine if you so wish. 5. Expensive - There’s no doubt that eating out as a family on December 25th can be expensive, as restaurants are having to pay their staff extra to work. If you’re on a tight budget it might just be a step too far with all the other seasonal expenses, unless you put money away each month to cover costs. Cooking lunch at home is certainly the more inexpensive option. It might not be cheap to buy a turkey and a Christmas pudding but it will still probably cost less than eating out.

EATING OUT 1. No Cooking - Let’s face it the biggest argument for eating out on Christmas Day has to be the fact that someone else will do all of the work. The person tasked with cooking often spends much of the day stuck in the kitchen rather than enjoying the festive fun and games with the family. Spending the entire day cooking,

time, making sure there are enough mince pies, planning the table decorations and the endless to-do lists you could end up feeling a bit jaded. If the thought of tackling the turkey and all the trimmings fills you with dread then perhaps its time to book a table elsewhere. The opportunity to relax and avoid all the worry will be worth the investment - and you get to go home afterwards and watch the Queen with a Baileys and a mince pie, safe in the knowledge that your kitchen is still as sparkling as it was in the morning. 3. Atmosphere - There’s something about eating out on Christmas Day that is extra festive. Restaurants are usually buzzing and not only because they’re busy. Everyone is usually in a good mood and there’s a jolly holiday happy feeling about it all. There’s music, hub-bub, smiling faces, goodwill and at the heart of it all delicious food and drink, which is what it is all about. 4. No fuss - You know what its like. You spend days and weeks planning the perfect menu, trying to get organised, buying the turkey at just the right time, battling the crowds at the supermarket - and then at the last minute you realise you’ve forgotten something (usually stuffing mix). So you have to head back out to the shops on Christmas Eve and join the chaos of the crowds who are also rushing to but their last minute panic buys. Eating out eliminates that completely because Christmas lunch is one less thing to have to think about in the run-up. Therefore you can pour yourself another sherry while you wrap a few presents and enjoy the calm. How very festive!

GIVE SOMEONE POWER OF ATTORNEY… BEFORE IT'S TOO LATE Lasting Powers of Attorney are invaluable documents as part of the overall planning of your estate as managing your financial affairs can become more difficult as you get older. There are two types of Lasting Power of Attorney that can be made, one dealing with your property and financial affairs and the other dealing with your personal welfare.

Personal Welfare

This power gives your attorney the authority to make decisions regarding your healthcare and medical treatment.

Property and Affairs

This power enables your attorney to deal with your bank accounts and your property. This includes decisions in relation to selling or renting your property, paying your bills, applying for benefits you are entitled to and all aspects of dealing with your bank accounts, savings and investments.

HEALTHY TURKEY SOUP

Make the most of your leftovers this year with this hearty, warming recipe. It will help you get back on track if you’ve had a bit too much to eat and drink on Christmas Day!

INGREDIENTS • • • • • • • • • •

1 tbsp olive oil 1 large onion, halved and sliced into thin strips 1 red pepper, seeded and sliced into thin strips 2 tsp ground coriander ¼ - ½ tsp chilli flakes 3 tbsp basmati rice or long grain rice 1½ l hot turkey or chicken stock 250g 9oz turkeys meat, cut into thin strips (leg meat will have the most flavour) 410g can chickpeas, drained and rinsed a handful of fresh coriander or flatleaf parsley, roughly chopped (optional)

Heat the oil in a large pan, add the onion and fry for 5 minutes or so, stirring every now and then until it starts to soften. Then add the red pepper, ground coriander, chilli and rice and stir round the pan for about a minute. Pour in the hot stock, stir in the turkey and chickpeas and season well. Bring to the boil, cover and simmer for 8-10 minutes, until the vegetables and rice are tender. Stir in the coriander or parsley and it’s ready.

ith Christmas just around the corner, the thought of getting your home ready for the festivities and overnight guests can be overwhelming.

One of the many things that my housekeeping team hears from our clients is how wonderful they feel coming home to their clean, tidy and beautiful smelling homes. So, to help you to stay relaxed and to create a warm and welcoming environment for all your family and friends this festive season, I’ve created a cleaning countdown to Christmas for you to follow.

MID DECEMBER

Walk through your home with a visitor’s eye to identify all the things that need cleaning, smartening up or fixing: make a list of any of these jobs. Declutter. This is especially important if you have children as a tide of new toys and presents will be coming your way on Christmas morning. It’s probably a good time to go through their current toys and donate some to charity. The same can also be said for other rooms throughout the house.

A WEEK BEFORE CHRISTMAS

Tackle the bigger jobs first, especially those that are unlikely to need to be done again before Christmas Day such as cleaning the windows, washing the skirting boards, washing and ironing bed linen for guest rooms,

vacuuming the sofa, washing out the fridge to make way for party food etc. Deep clean the bathroom; including the tops of cabinets and inside of cabinets, you’ll be surprised how many guests will take a nosey! Deep clean the kitchen, doing the jobs you don’t tend to do on a daily basis such as washing cupboard fronts, fronts of appliances, inside the microwave and the bin. Sort out the coat cupboard and store away items that are not worn very often in order to make way for guests coats.

CHRISTMAS EVE

Time to do the jobs in the areas that you hope won’t get too messy before the big day such as vacuuming and mopping floors, plumping up sofa cushions, giving the bathroom a quick once over and polishing mirrors. Hang fresh hand towels and put out new hand soap in the toilets.

CHRISTMAS DAY

Empty the bins and put in fresh bin bags. Spot check bathrooms, kitchen and floors for marks. Carry a laundry basket around your home and pick up clutter and either put the things back where they should be or just hide the basket! Finally, as guests arrive, pour yourself a glass of bucks fizz, enjoy the day with family and friends and make sure someone else takes care of the washing up!

Christmas cards that don’t have glitter or glue on them can be recycled in your grey bin. Turn those that can’t be recycled into gift tags for next year!
