HOW TO M A K E:

1.

Preheat the oven to 180 degrees.

2.

To make the sweet pastry, rub the flour, butter, sugar and the 2 egg yolks together in a large mixing bowl, initially add one tablespoon of cold milk and bring the mixture together so it is dough. Add a little more milk if the mixture is still too dry to come together. Divide the pastry in half and wrap both pieces in clingfilm and put them in the fridge to chill for about 10 minutes.

3. 4. 5.

Pie tins I used for this recipe have 12 wells, each 6cm in diameter Grease your mince pie tins with butter.

Lightly dust your work surface and rolling pin with flour and roll out one of the wrapped chilled pastry pieces to a 3mm/1/8 in thickness. With a round fluted pastry cutter, cut out 24 x 8cm/3¼in discs of pastry.

This recipe is from the upcoming book "Forget Me Not Cottage by the Sea. At Christmas," part of a series by local artist and home cook Georgina Jones from Lavender House. The book, a nostalgic recollection of Gina’s life in a small Welsh cottage, features stories, recipes, craft projects, and illustrations from her childhood on Pen Llyn. It's not just a kitchen companion with comforting

Gently press 12 of the pastry rounds into the greased tin wells. Fill each one with a good tablespoon of the mincemeat mixture weighing about 30 grams. Try not to overfill and get the mixture on the edges of the pastry.

7.

Whisk the remaining egg yolks and with a silicone brush paint around the rim of the cases about 3mm in this works as a glue to join the base and lid. The remaining 12 x circles are for the lids. Place a lid on top of each base and gently press around the edges of the lid so the top and bottom seal together. Brush the tops with whisked egg yolk and sprinkle with granulated sugar. Make a small hole in the centre of each lid to let the steam out when cooking.

8. 9.

Now repeat with the second chilling piece of pastry.

When ready, bake both trays of 12 for approx 20 minutes, or until the mince pies are light gold in colour, let them cool in the tin for 5 minutes before transferring them to a wire rack to cool.

PRO TIP: Best served warm with fresh cream.

Gina shares the makedo-and-mend spirit of her family, cooking and crafting around the farmhouse table in this heartwarming tale of a country childhood in Wales. ADDING TOUCHES OF SEASONAL COSINESS, FESTIVIT Y AND HYGGE TO THE HOME WITH HOLLY L AMONT.

T

HE WINTER MONTHS AND FESTIVITIES BRING WITH THEM A MAGICAL OPPORTUNITY TO TRULY INDULGE IN THE ART OF HYGGE. IT'S A TIME TO REVEL IN THE SIMPLICITY OF LIFE, FINDING CONTENTMENT IN THE WARMTH OF HOME AND THE JOY OF BEING PRESENT. AS THE HOLIDAY SEASON APPROACHES, AS THE WINTER CHILL SETTLES IN AND THE HOLIDAY SEASON APPROACHES, THERE'S NO BETTER TIME TO INFUSE YOUR HOME, AND ASPECTS OF YOUR LIFE, WITH THE DANISH CONCEPT OF "HYGGE." The winter months and festivities bring with them a magical opportunity to truly indulge in the art of hygge. It's a time to revel in the simplicity of life, finding contentment in the warmth of home and the joy of being present. As the holiday season approaches, As the winter chill settles in and the holiday season approaches, there's no better time to infuse your home, and aspects of your life, with the Danish concept of "hygge." Pronounced "hoo-gah," it is a lifestyle approach adopted from Denmark that focuses on creating a cosy atmosphere and finding joy in simple pleasures. Holly Lamont, founder of Holla Design, shares her insights on how to cultivate a warm and cosy atmosphere, making your space a haven for relaxation and festive cheer. She shares her take on the concept, “to me 'hygge' means finding contentment in what you have, whether it be your home or your surroundings and the ability to just 'be'.” Recent studies have found Danes to be some of the happiest people on the planet, so adopting the hygge culture is a lifestyle worth trying. The idea is all based on simplicity and quality of cosiness (feeling warm, comfortable and safe). Author of “The Little Book of Hygge: The Danish Way to Live Well”, Meik Wiking, shares ten principles of the Hygge Manifesto: Atmosphere, Present, Equality, Gratitude, Harmony, Comfort, Truce, Togetherness and Shelter. There are plenty of easy ways to incorporate these principles into your daily life, especially throughout winter.

18 | ABERSOCH LIFE MAGAZINE | CHRISTMAS 2023

As Holly eloquently puts it, "I love the winter months as the perfect excuse for cosy evenings at home - candles lit, curled up in blankets, herbal teas and hot chocs on the sofa following a refreshing country walk or ramble - making the most of daylight and then relaxing in the darker evenings." The colder seasons encourage us to soak up the small moments of joy whilst creating an environment of calm and enjoying life’s quieter pleasures – time spent being present with loved ones, your cup of coffee in the morning, lighting candles and baking in the comfort of your kitchen.

NAVIGATING THE FESTIVE SEASON WITH LAURA THORNICROFT As the holiday season approaches, the picturesque image of Christmas often collides with the stress and chaos that can accompany it. Disruptions to our regular routines can leave us feeling unsettled and overwhelmed. Adding moments of mindfulness, whether it be a quiet moment with a cup of tea, a techfree walk in nature or engaging in creative activities can all alleviate feelings of stress and overwhelm that can take away from the magic of the season.

Laura Thornicroft, a holistic wellness expert from the Abersoch-based Dear Soul Holistic Therapies, suggests that incorporating mindfulness into our Christmas festivities can be the key to a more relaxed and enjoyable season. Although the idea of Christmas is always idyllic, Christmas can become a stressful time for many people, and it’s easy to get caught up in the chaos of it all….

MINDFUL MOMENTS

Incorporating a mindfulness practice before, over, and after Christmas could help us feel more relaxed and calm, helping to take the unnecessary pressure off the festive season.” Mindfulness, as Laura explains, is about becoming aware— aware of our thoughts, behaviours, and the choices we make. “It can start with simple practices such as being mindful of how much we eat and drink and what we eat and drink over the season, Being mindful and aware of how much exercise we are getting, are we spending enough time outdoors in nature and natural light?”, says Laura. These simple practices can make a significant difference in managing stress levels during the holiday season. One practical way to approach mindfulness during the festive season is through effective time

stay focused on the things you'd really like to do that day, and helps you make the most of the time you have.” She continues by adding that “you could also write 3 things at the end of that day and make note of what you enjoyed about it, this is a great way to be mindful and present in that day.”

Writing daily lists can help you stay focused on what truly matters and help with prioritising and using your time effectively: “In a morning write three things for the day you want or need to get done, this helps you

Getting creative and crafty with your holiday preparations is another suggestion from Laura. Crafting personalised gifts not only saves you from the stress of shopping and helps you to stick to a budget, but also provides a grounding and mindful experience. Participating in grounding activities is a great way to remain present and centred during the festive rush, “It’s a technique that can help you focus and be present in that moment, and you'll feel extra joy and excitement when you hand over your homemade gift on Christmas day. M INDFUL WALKS:

QUIET TIME:

Frequent social events can become tiring especially if you’re an introvert. Find moments for quiet reflection, meditation, or simply being still. This helps to rebalance and recharge your energy.

A CHRISTMAS STORY BY KEVIN BELL

PHOTO: DEEP BENEATH ABERSOCH CRAFT CENTRE LIES A SECRET CHRISTMAS ELF HUB BY: TURTLE PHOTOGRAPHY

D

eep beneath Abersoch Craft Centre lies a secret Christmas Elf Hub. In that labyrinth of long-forgotten caves and tunnels that used to connect the village to St Tudwal’s islands, the Christmas elves were busy in their underground workshop. Their Elf Hub was a riot of Christmas colours. Making toys and costumes in every colour of the rainbow for the village children. November was their favourite month, as a rush of Christmas lists and letters to Santa came pouring in from excited children across the Llyn peninsula. The flying fingers of the elves, and the whir of machinery in their workshop, told a tale repeated across the land. Secret Elf Hubs like these existed all around the world, making presents for local children for Santa to pick up and deliver on Christmas Eve. The Christmas elves wished the tunnels beneath the sea to the islands were still open. Some of

their biggest and best workshops were there, deep beneath the lighthouse. But a long, long time ago a naughty elf with magic powers had found his way to St Tudwal’s and worked his wicked spells on the island elves, telling them they should be charging Santa for their work, that they could all be rich if only Father Christmas wasn’t so mean. It wasn’t true, Santa and his elves had always done their Christmas work for free. Making the children happy was all the reward they ever needed. But Elfred the naughty elf kept on causing trouble, nearly ruining one Christmas by refusing to hand over any of the presents made on the island if he wasn’t paid in gold. Finally, Santa had to tell his loyal elves to block the tunnels and leave the island elves to themselves. It was a sad, sad time. Lots of the elves had been firm friends and would have stayed that way if only Elfred hadn’t come along. Now they were the enemies they never wanted to be, Elfred forever using his magic powers with the island elves to cause trouble and try to spoil the spirit of Christmas in

Abersoch. This Christmas everything was going well. Angharad, the Head Elf, had all the Christmas lists and letters spread amongst her worker elves, who were happily beavering away. Everything was on target to be ready for Christmas Eve. Even the big storm forecast for the 1st of December didn’t worry Angharad. Her team could cope with some power cuts or floods – they were well on top of their work. December dawned surprisingly brightly, the sun shining on Abersoch Harbour, everyone in the village looking forward to the Christmas Festival that evening. But as the day went on, the skies darkened and darkened until they were nearly black – like a giant bruise hanging over the village. The winds roared ever stronger, sending huge waves crashing over the harbour wall. Then the rains came down, until the high street

became a river, the water sloshing down the road to meet the waves hitting the harbour. Abersoch had never known a storm like it. Even deep below the village, the Christmas elves could feel the power of the storm, the walls of their workshops shaking with the power of the wind and waves above, their underground caves dripping with floodwater. With every blast of wind stronger than the last, the lights flickered and flashed until, with one huge boom from the storm above, they went out altogether. Angharad was ready. “Please stop your work elves, take shelter in the dry caves, have a good night’s sleep and we will be back to work tomorrow.” The storm peaked that evening. In the flooded village above, the festival had to be postponed until the next day when the sunshine returned. The big clear-up was soon underway and everything was back to looking perfect for an Abersoch Christmas. Another clear-up was going on in the Elf Hub, made all the more difficult because the elves were working in darkness thanks to the power cut. Until, with a great flash and a crash, the lights came back, leaving the poor little elves blinking in the sudden brightness. “Well done elves,” said Angharad. “Let’s all have some tea then we can get back to work. No power cut can stop the Christmas elves!” A sad little voice came from the back of the workshop. “A power cut might not stop us, but where have all the colours gone?” Angharad and the elves looked around them. How had she not noticed? Everything had turned black, white, and grey. Their bright green and red elf outfits were

now a muddy grey. There was no colour at all. Dylan, her assistant, ran to the toy store. Disaster! The beautiful, brightly coloured toys and costumes for the children had all turned grey too. “It must have been the storm,” said another of the elves, tears in her eyes at all their ruined work. Angharad sent Dylan on a mission to the village. Off he clambered, up the ladders and out through the secret Elf Hub entrance behind the Craft Centre. He soon came back to say the village was very wet, but it still had all it’s colours. “So, it can’t have been the storm,” said a worried Angharad. “Oh no. No, no, no! It wasn’t the storm,” said a cackling voice from the depths of the Hub. “I’m much more powerful than any old storm.” The Christmas elves turned, astonished to see the evil Elfred standing at the entrance to the old island tunnel. “But it did give me and my island elves the perfect cover whilst we reopened the tunnels. So here I am! And thanks to my magical powers I have all your colours. See, I have some in my hand.” Elfred opened his palm to show the Christmas elves a dazzling kaleidoscope of colours, filling the Elf Hub with the brightest of lights.

32 | ABERSOCH LIFE MAGAZINE | CHRISTMAS 2023

“They’re our colours!” shouted the elves. “Give them back! We need them and the children need them.” “Oh, you can have them back,” said Elfred with another evil cackle. “That’s not a problem, not a problem at all. All you have to do is sack this tinsel-brained fool.” Elfred pointed at Angharad with a wicked smile on his villainous face. “Put me in charge of your Elf Hub and your boring black and white lives will be back in glorious technicolour again. The children will still get their presents, in any colours they wish. For a small charge of course. I do like my luxuries, and they do need paying for. I’m going to buy a wonderfully wicked Pirate Superyacht, making my fortune raiding all the boats in Abersoch bay.” “Never,” chorused the Christmas elves. “Never!” “As you wish,” said Elfred. “You have 24 hours. Say yes and the colours of Christmas are yours again. Say no and…………. well, I’ll leave you to explain grey Christmas to the tearful children of Abersoch.” With that, Elfred gave a wicked laugh, swished his bright red cape, and disappeared back down the tunnel to his island lair.

THE COLOURS OF CHRISTMAS

PHOTO: ABERSOCH'S CHRISTMAS COLOURS STARTED TO COME BACK! BY: TOTALLY ABERSOCH

Angharad gathered all the senior elves together. “I don’t think we have any choice but to say yes,” she said. “I will find a job in another Elf Hub and the children will have their Christmas in colour, just as they should.” “But you love Abersoch,” said Talar the Toymaker. “You’re a brilliant Head Elf, and anyway we can’t charge Santa for the presents we make. It goes completely against the Elf Code!” “And once he gets his Pirate Superyacht, nobody in Abersoch bay will be safe,” added Dylan sadly. “He must be hiding the colours somewhere. There were only a few in his hand. We need to find where he has hidden them all.” Angharad sent the elves out across Abersoch on secret missions to find the colours. One by one they returned, as grey as they left, their Christmas colours nowhere to be found. As the elves gathered forlornly in the Hub, Elfred re-appeared from the tunnel, his face a picture of pure evil. “Evening losers! This is your twelve-hour warning. Thanks to you I don’t think your precious Christmas Festival is going to be

quite as advertised either! It’s make your mind up time.” Dylan scurried back to the village. The festival was in full swing, the schoolchildren carolling at the top of their voices. No problems here, he thought, Elfred isn’t as powerful as he thinks. At which point, with an almighty boom from the islands, Abersoch turned as grey as the elves. Santa rounded the bend into the village on his sleigh. The crowd gasped and the children sobbed as his bright red outfit turned a gloomy grey too. Disaster after disaster! Abersoch was going to have a black and white Christmas. Far out in the bay Elfred stood atop the island lighthouse, arms outstretched, cackling maniacally in the moonlight. He finally had the power he knew he’d always deserved. The elves had just a few hours to save Abersoch’s Christmas. “I know we’re not supposed to be, but I’m still friendly with some of the island elves,” Talar admitted to Angharad. “They aren’t all bad, it’s just that Elfred has them under his evil spell. Now the tunnel is open I could head out to the island and see if they will tell me anything?”

34 | ABERSOCH LIFE MAGAZINE | CHRISTMAS 2023

“It’s too dangerous,” said Dylan. “Two is safer than one,” piped up Carwyn the Carpenter elf. “I’ve got a friend out there too. We share woodworking tips,” he added guiltily. “We can talk about your woodworking tips later,” said Angharad sternly. “Yes, you two can go. See what you can find. But if you’re captured, you realise you may be stuck on the islands forever?” Talar and Carwyn looked at each other, nodded bravely and shot off up the tunnel. The hours ticked by with no word from the brave elves. Dylan headed up the tunnel and reported back that it was full of Elfred’s guards. “They will have been captured,” he said sadly. “It’s all over Angharad. We’ve lost our Christmas colours, and we’ll never see Talar and Carwyn again. We must admit defeat.” But, as the words fell from his lips, two dripping wet Christmas elves appeared back in the Hub.

THE COLOURS OF CHRISTMAS

“We had to swim back!” said Talar. “Because the tunnel is full of guards,” added Carwyn. “I know,” said Dylan. “But I didn’t know you could swim?” “Neither did I,” said Carwyn. “But when you’re being chased by hundreds of Elfred’s guards, you learn fast!” The sodden elves reported that their island friends were sad, scared and wanted to help beat the evil Elfred, but they had no idea where the colours were hidden. The only clue they had was that whenever Elfred mentioned red, he always said old red, as though it was a special colour. “Perhaps that’s just the colour of Santa’s outfit?” said Talar. “Old red?” “Maybe it is, but there’s only one old red I know of,” said a booming voice from deep in the caves. It was Ffodor the fisherman elf, normally the strong and silent type. This was a surprise! “But it’s not old red, its Old Red,” he added. “What’s the difference?” asked Angharad. “Old Red. Its not a colour. She was once the best fishing boat in Abersoch. I’ve fished from her myself. But she’s lying halfwrecked in the inner harbour these days. She would make a great hiding place.”

Sea. Ffodor led them out to the inner harbour. “There she is,” he said. “Old Red. She might be wrecked but she’s the only thing glowing in Abersoch right now.” It was true! When they got up close they could see a strange, red glow coming from the once-proud hull. “Won’t there be guards?” asked Dylan. “Not if I know Elfred,” said Angharad. “He doesn’t trust anyone, and he wants all the power for himself.” Ffodor climbed up onto the boat and with a mighty heave broke down the cabin door. It was as though a giant set of multicoloured floodlights had been beamed on Abersoch, colouring first the harbour, then the village and finally the underground Elf Hub. Where the Christmas elves were now dancing for joy, their outfits a beautiful, bright elf-green once more. Out on the island Elfred screamed as he saw the night sky light up with the tapestry of stunning colours. His prize had been taken from him! He screamed again at his guards and the island elves, commanding them to march down the tunnel and take back his colours. None of the elves moved.

He cast his most potent spell on them, shouting madly at them to follow his orders. But he’d used too much of his power stealing Abersoch’s Christmas colours. “Its over Elfred,” said the Head Guard. “We never wanted to stop being friends with the Christmas elves, it was only your evil magic that stopped us. Well not anymore. Get the boat,” he added to the guards. It wasn’t the Pirate Superyacht Elfred had always dreamt of for his wicked plans, just an ancient, leaky little rowing boat that had drifted onto the island in the storm. The guards pushed him out onto the sea. “It’s good enough to get you somewhere safe,” said the Head of the Guards. “Just don’t come back. Ever.” With that, the island elves ran down the tunnel, hugging and dancing with their old friends at the best Christmas party the elves had ever enjoyed. Meanwhile, a once-grey Abersoch was alive with its Christmas colours again! It turns out that losing your colours makes you love them even more when they return, brighter than ever. Lighting up the finest Christmas Festival the village had ever seen. Christmas 2023 might just be Abersoch’s best yet.

The senior elves made their way up their ladders, then down the hill past a sad, grey looking Crust Pizzeria and a black and white Land &

First up at Neuadd Dwyfor, Bolan’s Shoes (R15, 11-13 December) takes us on a tumultuous journey from the height of T. Rex mania in 1970s Liverpool to the present-day poignancy of what would have been Marc Bolan’s 75th birthday. It captures the heady exhilaration of glam rock mania through the experiences of a group of over-excited kids from a local children’s home before a devastating road accident changes their lives forever. Years later, and still clinging to the adoration of her childhood idol, survivor Penny takes best friend and fellow Marc Bolan fan to visit his shrine in London ‒ but a chance encounter there catapults her back to the horror she had tried so hard to forget. Light-hearted comedy and supernatural chills abound in this inspirational story that explores the enduring legacy of childhood trauma and the life-affirming power of music.
