Time really does fly when you are having fun. All of us here at Simply 55+ Magazine continue to reach for new heights as we hone the content of our publication making it the best we possibly can for the locals in our community. As promised, we have brought in some new editorial content. Charles Dudley Warner once said, “Politics make strange bedfellows.” We’re not sure about that, but we do believe our Southern Nevada residents would like to hear from both sides of the aisle. We welcome content from both Senator Dean Heller and Senator Harry Reid. The forum is theirs to address whatever topics they choose to inform their constituents. We trust they will do just that. Martha will continue to cook-up something to tickle your pallets. We strive to be health conscious and we appreciate you bringing us into your homes month after month. You are always welcome to send us your feedback and suggestions. We want to know what you think! Send your comments to: feedback@simply55.com

You can find ANYTHING on Pinterest. As I said, I’m addicted, but I think Calendar Of Events it’s a good addiction.

1 2/3 cup All Purpose Flour* ½ Teaspoon Baking Powder ¼ Teaspoon Baking Soda ½ Teaspoon Salt ½ Cup Unsalted Butter, Melted ¾ Cup Granulated Sugar ¼ Cup Brown Sugar 1 Large Egg ¼ Cup Plain Yogurt ¾ Cup Milk 1 Tablespoon Vanilla Extract 2/3 Cup Sprinkles**

smooth and creamy. Add the powdered sugar, cream and vanilla extract with the mixer running. Increase speed to high for 3 additional minutes. Add more powdered sugar if frosting is too thin or additional cream if mixture is too thick. Add in your salt if frosting is too sweet.

Begin by mixing the flour, baking powder, baking soda and salt together in a medium bowl. That done, set aside and in a large microwave-safe bowl melt the butter in the microwave. Whisk in the sugars, to the melted butter, vigorously getting out any lumps from the brown sugar – your end result mixture will be gritty. Then whisk in the egg, yogurt, milk and vanilla extract until combined. Next, slowly mix in dry ingredients until no lumps remain. Batter will be thick. Slowly stir in your sprinkles, but take care not to over mix, as the sprinkles will bleed their color. Using an 8” square cake pan and 9” round cake pan (all that I had on hand, I would suggest an 8” round pan if you have one), prepare by spraying both generously with non-stick spray. Divide batter evenly to both cake pans. The original recipe called to bake in pre-heated oven at 350F degrees for 33-37 minutes. Since I divided the batter into two pans, and have a convection oven, I reduced the cooking time to 23 minutes and it was PERFECT! Oven cooking times do vary.

Once your cake is done and has cooled, you will leave the square portion whole and cut the round cake in ½. Turn the square cake so it becomes diamond shape and place one ½ of the round cake on either side of the top portion of the diamond, making your cake HEART SHAPED.

Now frost your cake, no one will ever know you pieced it together from 2 separate cakes! Decorate, add a message, whatever your heart desires and most of all enjoy! Happy Valentine’s Day!

While the cake is baking, let’s make our frosting!!! Again, I line up my ingredients and away we go! Beat the softened butter on medium speed with your electric mixer for 3 minutes until Not That Old And Loving It!

Empty Nesters? Fill Your Time with Affordable, Fun Activities Financial

Once the kids are grown and out of the house, many couples have more time and freedom to devote to themselves. But finding fun things to do for two without draining the pocketbook can be a challenge. Luckily, there are many Auto Travel adventures to be had for empty nesters that are both fulfilling and affordable. Here are eight ideas that will make this new life phase mutually satisfying. • Attend an animal event. Ever been to a canine agility or flyball Home Improvement & Lifestyle competition? How about a horse show? There are many exciting events in the world of animal Ofthem Events sports, andCalendar attending is easy and low-cost. Check local animal clubs or training centers for information on events in your Remembering Nevada locale. Some training clubs also host demo events at fairs and festivals throughout the year. • Take a lesson or class. If you and Happy Holidays your partner have always wanted to learn how to cooking vegan food or dance the tango, now’s the time to do it. Take a class together, and get educated. You’ve spent the past decade or more watching and helping your kids learn; it’s finally your turn. Check your local community education bulletin for a listing of affordable classes. • Go on a nature adventure. No matter what the season, you can always get outdoors and appreciate nature. Try a fall biking tour, and take in the changing leaves; do

a cross-country trek through the winter woods; or set out in a canoe on a local river during summer. Viewing nature is an inspiring activity that’s even more fulfilling when shared with another person. • Join a meet-up group. Interested in finding other couples who like to hike, fish, or gather at coffee shops around town? Many cities have meet-up groups that you can join to get acquainted with people who have similar interests. Search online for meet-up groups in your area. If you can’t find what you’re looking for, consider starting your own group, with current or new friends. • Redecorate your home. Who says you have to leave home to have fun? Redecorating a room or the whole house is an enjoyable way for empty nesters to pass time and refresh their home. And it can be done on a budget. A new coat of paint and some rearranging may be all that’s needed. For an even fresher look, replace cabinetry hardware, change out toss pillows, and replace old pictures. • Organize a garage sale. Get rid of clutter, and make some cash while doing it. Garage sales are profitable and satisfying, plus they’re a lot easier to do with a partner. Consider asking friends or family members to participate in your sale. Or, organize a larger, group garage sale that includes multiple families or neighbors. Afterwards, Not That Old And Loving It!

celebrate your success with a pizza party. • Find a cheap getaway. Taking a trip can be affordable for couples who have the flexibility to be spontaneous. Look for last-minute deals on flights, hotels, or cruise packages, and enjoy that long-awaited vacation for two. Don’t want to travel far? Check local bed-and-breakfasts for off-season rates and discounts. For some really cheap fun, hit the road for a weekend of camping. • Participate in a charitable activity. The sky’s the limit when it comes to doing charity work, and together you can accomplish plenty. Set up a fundraiser, package food for the needy, foster a homeless animal, work at a church bizarre, or volunteer at a local shelter. Nonprofit organizations are always looking for helpers; find one that suits both your interests, and give a helping hand. Empty nesters don’t have to spend a lot of money to have fun. Try any of the above affordable activities, and make this new life phase as fulfilling and productive as ever. + Not That Old And Loving It!

Remembering Nevada These benefits are not lavish—the average retiree receives less than $1300 a month. This amount, however, prevents nearly half Happy Holidays of America’s seniors from living below poverty line. Still, many in Washington think these benefits are too much and that deep cuts to the program must be made. Republicans even suggest that Social Security should be privatized, not bearing in mind that doing so would jeopardize the well-being of many Americans who rely on it to get by. I have devoted much of my career to ensure Social Security’s success and I simply cannot allow that to happen. With a new Republican-led Congress, it has never been more imperative that we stand united against cuts to Social Security.

On the very first day of the new Congress, House Republicans voted to block a routine technical correction that ensures adequate funding of the program’s promised benefits, threatening the future of those who are working toward their retirement. This act violates the promise of a dignified retirement we have made to its people. Protecting Social Security does not only perpetuate Americans’ access to promised benefits, but also allows hard-working men and women the right to live and retire with dignity. Many of Nevada’s seniors have devoted their lifetimes to hard work and I am prepared to work harder to protect what we have promised them. I will continue to work with my Democratic colleagues to preserve the strength of Social Security and to keep the program running for decades more to come. + Not That Old And Loving It!

Scotty’s Castle The Cowboy and the Con

Death Valley Scotty was a nationwide celebrity through the first half of the 20th century. As a young man, Scotty—or Walter Scott as he was then known—was an entertainer: performing with other cowboys in Buffalo Bill’s “Wild West,” racing on a train from Los Angeles to Chicago in record-breaking time, and telling exaggerated stories about how he made his fortune. Scotty’s biggest tall tale was about gold. Scotty told everyone that he had fallen on riches thanks to a gold mine he had found in Death Valley. All he needed were investors. Scotty traveled to New York, trying to drum up support for his mine. Those investors who gave Scotty money were promised a rich return on their investment. One of Scotty’s investors was a Chicago businessman Not That Old And Loving It!

named Albert Johnson. Wanting to inspect Scotty’s mining operation in person, Johnson contacted Scotty to arrange a tour. Scotty invited Johnson to Death Valley and hatched a scheme involving a staged gunfight to scare the city-slicker away while keeping the investment money coming. Scotty’s plan backfired, and Johnson quickly realized there was never a gold mine. Surprisingly, instead of being angry, the wealthy Albert Johnson became friends with Scotty, and remained Scotty’s source of gold for the rest of his life.

The Chicago Millionaires

Although Albert Johnson had first been lured to Death Valley by promises of gold, he found other things of value. Death Valley’s dry, warm climate improved Albert Johnson’s chronic health problems, and he experienced cowboystyle adventures as he traveled the desert with Scotty. Albert Johnson built his Castle Remembering Nevada in one of the harshest deserts in the world. Death Valley averages 2 inches (5 cm) of rain per year. Yet in Grapevine Canyon, a natural Happy Holidays spring pours out more than 200 gallons (750 L) of water per minute—a true oasis! Generations of people have relied on this vital water for their survival. Besides providing essential drinking water to the Castle, Albert Johnson piped the water into man-made streams and planted trees and shrubs to create beautiful landscaping. Ingenious use of hydropower allowed the Castle to have electricity and refrigeration, making a comfortable home for everyone.

The Treasure of Scotty’s Castle

Scotty’s Castle is a showpiece of the treasure that Scotty, Albert, and Bessie found in the desert. While Scotty’s gold mine was eventually exposed as a fraud, Albert and Bessie Johnson discovered other riches during their many years visiting Death Valley. They found luxury and comfort in their home, beauty and tranquility in the desert, and lifelong friendships with the charismatic con-man, Death Valley Scotty.

At The Age Of 76, Legendary PR Guy Happy Holidays K.J. Howe Is A Long Way From Wanting To Settle Down By Mike Henle Legendary Las Vegas PR guy KJ Howe turns 76 in February. He still plays ice hockey and he flies annually to Europe to go snow skiing each January. And when he’s not involved in any of previously mentioned activities, Howe is Professor of Yeastology at Grape Expectations in Henderson teaching classes about the wine making process to people who want to make a barrel of wine. Sitting on a porch watching cars pass by isn’t something he wants any part of; and imagining the grey-haired hustler on a river bank somewhere waiting for the next fish to bite is also out of the picture. A former three tour veteran of Vietnam when he was in the U.S. Army in the late 1960s, adventure has been a part of Howe’s life for decades. A devout Republican, he is opinionated, well-schooled and not the least-bit afraid to tell his feelings about most anything (or anyone) ranging from Jane Fonda to pompous politicians and bureaucrats.

44 Simply55+

February 2015

If it is opinions you want, the energetic Howe gladly lets you know that he detests Fonda’s criticizing of the U.S. in Vietnam; Harry Reid is a Democrat; and the BLM is on the verge of ruining many forms of outdoor recreation including offroad racing, which Howe served as race director of the Mint 400 from 197085. An influential member of the motorsports fraternity, the man has been interviewed extensively on radio, television and in print about a myriad of topics; and especially auto racing. The list of accomplishments is long, and among his favorite participations have been the Caesars Palace Grand Prix from 1981-84, the Vegas Grand Prix in 2007; and the rejuvenated Mint 400 that was brought back to Las Vegas by the Southern Nevada Off Road Enthusiasts (SNORE) before being resurrected by brothers Matt and Josh Martelli a few years ago. During his days with the original Mint 400, Howe Continued on pg. 52 Not That Old And Loving It!

talked then-mayor Oran Gragson into providing permission to shut down Fremont Street for the Mint tech inspection. “There were many naysayers who said I couldn’t get Fremont Street closed for tech inspection,” recalled Howe. “Mint Hotel Vice President and General Manager Jess Hinkle told me to explore the idea and see if I could get it done.” By no surprise, Howe got Fremont Street shut down in what became a popular part of the Mint 400. “The Clark County School District called every year because it knew that kids would skip school for the Mint 400 tech inspection,” Howe recalled. “It became a part of downtown Las Vegas.” Not That Old And Loving It!

In addition, he helped with the Vegas Grand Prix in 2007; and Howe also was a member of the Founders Club that orchestrated the Las Vegas Invitational Golf Tournament. He was named Volunteer of the Year in 2000. Long-time automobile dealer Jim Marsh arrived in Southern Nevada in 1971 and he has known Howe since then. “He’s a dandy,” Marsh said of Howe, who was one of the founders of Cooper, Burch and Howe Advertising and Public Relations, a Southern Nevada powerhouse back in the 1970s and 1980s. “I will never forget when he used to run the Mint 400. He’d work two or three days without sleep setting up the race and then get into his buggy and race in it.” Marsh says it all when he added “You gotta love him. Bunny that I have ever known.”

One thing is for sure, and that’s the fact that nobody has trouble finding people who admire Howe for his efforts as a true PR person. “I really wish more of the younger people in our industry would take the time to get to know KJ and learn from him,” said George McCabe, PR director at B&P Advertising, Media and Public Relations. “I will never forget how KJ met Hunter S. Thompson when KJ was race director of the Mint 400. I have heard a few stories about those days and that always impressed me.” Milo Kostelecky, the director of the Las Vegas Film Festival, has been friends with Howe for his entire life. Now 38, he speaks highly of his longtime friend. “KJ is just energetic, charismatic and he’s very original,” said Kostelecky. “He is full of wit; he’s very honest and genuine. The combination of his attributes makes him an amazing pleasure to be around. “Those around him appreciate life because KJ lives his life to the fullest. They benefit greatly from his charm.” Kostelecky added that Howe continues to live his youth. “He’s living youth in a perpetual stage; and you could never imagine him doing anything else. KJ is simply a very addictive personality.” Long-time Las Vegan Judi Moreo echoed others who praise Howe. “I had the honor of presenting the fashion shows for KJ’s event at the Mint 400,” said Moreo. “He is a true professional to work with, a super nice human being and a wonderful friend. 46 Simply55+ February 2015

because he is a really good person who is kind, trustworthy and fun!” Curt Thompson, who like Howe is a former Del Webb executive, also had praise for his old friend. “KJ is a legend in motorsports,” said Thompson, now the general manager of Railroad Pass in Henderson and the Gold Strike in Jean. “He is one of the few that dedicated his marketing skills towards making off road racing a world wide phenomenon.” Howe arrived in Las Vegas to play golf in 1970 and he hasn’t left since. ‘I thought I had died and gone to heaven,” he says now. To Howe, what he does is a very natural part of his persona. He seems to be on stage no matter what he’s doing at the time. “I just like to have fun,’ said Howe. “There is fun in everything and sometimes you just have to work to find it. “My motto has always been ‘I would rather live than just exist.’ Fun has always been a part of my life. In fact, I have never forgotten how to be a kid again.” +

Valentine’s Day is fast approaching and many people are still scrambling to find the perfect present for their special someone. It seems like it just rushes up all of a sudden, doesn’t it? One second it’s New Year’s Day, you blink and then it’s a week until Valentines. Don’t fret – there is still time. In fact there is still time to buy a gift that is original and thoughtful, instead of one that is cliché and boring. Don’t buy her a silver or gold heart necklace from a major jeweler. Seriously, she’s seen the commercials, and seen tons of other girls wearing them. Get a handmade, unique pair of earrings from a local craftsperson instead. Or better yet, make her a pair of earrings yourself. It’s a lot easier than it looks and it will show her that you spent time and effort on her. It might not be as flashy as a brand-new necklace, but it will show her that you care (and it lets you save up for an extra-special and extra-expensive necklace for her birthday). Make her a meal – breakfast, lunch, or dinner. It seems like a

48 Simply55+

February 2015

cliché, but men that can cook, and actually are willing to, are a rare commodity. Doing this will help her see that you’re mature and independent, but can still take care of her. Dinner is the choice meal, because it allows you to spend time together alone, rather than in a crowded restaurant. Light some candles, cook up some pasta and fish, and pour a glass of wine. If you already had dinner plans, then breakfast in bed is appreciated by everyone. Rather than the same old perfume/ chocolates/flowers trio, invest in something that you remember her saying she wanted. You’ve still got a few weeks left before the big day, so keep your ears open – she might still be giving you hints. Little knickknacks mean less than good listening skills. So, get your act together buddy (or lady) and get going on thinking up something special. Whether you love it or hate it, Valentine’s Day is here to stay. So do something thoughtful and creative this year that doesn’t break the bank, but still makes your loved one light up.+ Not That Old And Loving It!

Home Improvement & Lifestyle Calendar OfBest Events Put Your Heart Forward Valentine’s Day is a day for sweethearts. Traditionally, Valentine’s Day is celebrated with the giving and receiving of hearts.

Remembering Nevada

Ever since our early days of childhood, we have been trained to Happy Holidays give out cute, little cards covered with a smattering of pink and red hearts. We write endearing little notes inside that ask the receiver to “Be My Valentine.” We anxiously wait for one of these simple little notes as a token of interest from the little boy or girl that we have a yen to know better. What do we really know about love as a small child? We know that our parents love us, and our grandparents and maybe even our siblings on a good day. But do we really know what love is all about? Judging from the divorce rate, apparently, we do not. Well, here are a few tips to put the meaning of love back into your life for the month of February at the very least. The stores market the holiday, but we should actually be marketing the holiday for ourselves. Why wait until the 14th to deliver a heartfelt and decorated message. A more productive and yes, even, seductive way to deal with this holiday is a little bit of setting the stage. Use these simple yet meaningful tips and tricks to engage the interest of the one you love, the

54 Simply55+

February 2015

one you would like to receive a little token of interest from, or someone who needs a little caring and sharing in his or her world. Start on February 1, continue throughout the following two weeks, and by the time Valentine’s Day arrives, the one you love will be enamored of you and your caring ways. Then, continue using these tips throughout the year to guarantee putting a little love in your heart. Hearts, the traditional symbol of love, pack a lot of meaning into their small shape. Take the time to invest in some sentimental children’s valentine cards, or purchase some red, pink, and white paper to create your own. Small white paper doilies can add a truly engaging effect. Nothing says caring like sharing your artistic talents, even if you don’t have any. It truly is the thought that counts. The way to snag the attention of the one you are in love with, totally and seductively, is to shower the person with constant attention. Read this list and incorporate some of these simple ideas into your life. • Include a little valentine note in the briefcase, brown bag lunch, or coat pocket of your intended true love. work and slip a Valentine card underneath his or her windshield Calendar Of Events wiper. • Be creative with your messages of love. Write, “You make me smile,” or “ I love the way your Remembering Nevada eyes sparkle,” instead of “I love you.” • Purchase heart shaped cookie Happy Holidays cutters and bake sugar cookies. Use an icing tube to write messages of love on the cookies. • Spray a bit of your favorite perfume on his pillow to tantalize him while he sleeps. • Wear something new and attractive each day to encourage a lingering gaze pf appreciation. • Purchase heart shaped muffin tins and cake pans. Alternate between the two and prepare a few new recipes like cranberry almond muffins or pineapple upside down cake. • Send your sweetheart an e-mail that says, “I love you.” • Purchase one of your honey’s favorite candy bars, wrap it with a colorful ribbon, and leave it in a conspicuous spot. • Prepare at least one of your sweetheart’s favorite meals on a weekly basis. • Invite your loved one out for coffee and dessert. • Purchase movie tickets, a box of candy, and gift certificates for a restaurant. Wrap them in a box. Leave it on your honey’s pillow on a night before you both have off. • If you live together, complete one of the chores usually

designated for your mate. • Tape an “I love you” note on the bathroom mirror, so that it is one of the first things your sweetheart sees in the morning. • Leave a single rose on the driver’s seat of his or her vehicle. • Design a “Get out of Trouble free,” card and place it in a spot that your darling is sure to discover it. • Use a drawing program on his or her computer to create an “I love you” drawing and set it as the background. • Purchase bath salts or oils, a small bottle of wine, two inexpensive glasses, and a romantic cd. Place them in a basket and set them in the center of the dinner table. • Offer to go somewhere with them that you normally avoid e.g. a sporting goods store or an auto store. • Shower little kisses on them throughout the week- on the forehead or cheek. While these ideas are only a few of the many that you can try, using them will help to create and maintain a spark in any relationship. Get creative and think of your own personal touches to these. Remember Valentine’s Day is about celebrating love, and love can be celebrated any day. +

Las Vegas Trivia

Did You Know?

Summerlin is named after Howard Hughes Grandmother, Jean Amelia Summerlin

The Golden Gate Hotel and Casino opened in 1906, making it the first hotel and casino in Las Vegas. Bugsy Siegel named his casino the Flamingo after the long legs of his showgirl girlfriend. The Sahara Hotel & Casino was the last place Abbott and Costello appeared together before the comedy duo parted ways for good. Liberace headlined at the Las Vegas Hilton during the 1970’s drawing sold-out crowds twice per night. When he signed his contract in 1972 he earned $300,000 per week, a record amount for individual entertainers in Las Vegas. The largest (so far) jackpot in Las Vegas history hit on March 21, 2003 for $39,710,826.36. The lucky winner, a 25-year-old software engineer from LA struck it rich after putting in $100 in the Megabucks slot machine at the Excalibur. He beat the odds at the time of one in 16.7 million. With it’s millions of lights; Las Vegas is one of the brightest cities on earth.

60 Simply55+

February 2015

More than 40+ million visitors flocked to Las Vegas in 2014. Boulder City was built due to the need for government and civilian employee housing after construction was completed on Hoover Dam. According to the US Census Bureau, the city has a total area of 208.6 square miles; of which 0.039 square miles is water. This ranks Boulder City as the largest city in Nevada by land area. Las Vegas native Betty Willis designed the world-famous “Welcome to Fabulous Las Vegas Nevada” sign when she worked at Western Neon designing neon signs, in 1959. Willis never trademarked the design, later saying, “It’s my gift to the city.” About 86 percent of the land in Nevada is owned by the federal government.’’ The Sands, favorite Rat Pack hangout, also ran cash skimming operations for the mob. Howard Hughes purchased the Desert Inn and several other casinos on the Las Vegas Strip in the mid-1960s, dropping about $300 million and changing the face of Nevada gaming forever.

Our procedures typically take only minutes to complete. We

understand that today’s baby boomers don’t want to wear reading glasses or bifocals and they don’t want their eyes to “act their age.” That’s why our surgeons offer a widerange of premium lens implants that allow our patients undergoing cataract surgery to do most things most of the time without glasses, such as driving a car or reading a dinner menu.

Lens Implant Options

Standard Lens Implant: Reading glasses still required.

Premium Lens Implant: See near, far and everything is between.

Do You Have a Cataract? Cataracts are the leading cause of poor vision in adults. If you’re over the age of 55, have had changes in your vision or difficulty driving at night, you could have a cataract. To schedule a cataract screening or to learn more about premium lens implants, call the Wellish Vision Institute at 702-843-5859 today!
