Remembering Nevada I’m a writer. It’s what I do for a living. I write creating an outline, instead of sitting and my Happy Holidays mainly nonfiction, but I also dabble a bit in desk in front of a blank computer screen until fiction. Before I sit down to the keyboard on inspiration finally hits, I often climb on my bike any of my books, I have to create an outline, and hit the trails. But what is most interesting, riding a bike increases our creative thinking—perfect for those of us who write books. In fact, a study in the Journal of Experimental Psychology showed that walking— either indoors or out—triggered a boost in creative thinking an average of 60 percent! No wonder I’m able to create that outline before the trail is over.

2 pounds beef stew meat, cut into 1-inch cubes 1/4 cup all-purpose flour Season to taste with Salt & Pepper 2 clove garlic, minced 1 bay leaf 1 teaspoon Worcestershire sauce 1 onion, chopped 1 1/2 cups beef broth 4 potatoes, diced 5 carrots, sliced 1 stalk celery, chopped optional if you like-4 tablespoons tomato paste Not That Old And Loving It!


Directions 1. Place meat in slow cooker.

4. Cover, and cook on Low setting for 6 to 8 hours, or on High setting for 4 to 6 hours.

2. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture.

3. Stir in the garlic, bay leaf, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.

Sifting is very important; it mixes the ingredients while making the flour light and fluffy. Hand-mix the flour into the batter until it is well-blended. Next you will add 1 sifted cup of flour at a time until the batter turns to dough. As it becomes too stiff to stir you can begin to knead in the flour with your hands. Do not use more flour than necessary. Too much flour will dry out your cookies. If you are not sure, only add ¼ to ½ cup flour at a time until the dough feels firm but moist. It should be firm enough to roll out without sticking but moist enough so your dough doesn’t crack when rolling. Once the dough is ready it is best to use it right away. Don’t store it for a few hours or put it in the refrigerator. This will dry out the dough and the cookies will not turn out as nice. Spread a thin layer of flour out onto the surface you will be rolling your dough on. Take a handful of dough and roll it into a ball with your hands then flatten it onto the floured surface. Spread a thin layer of flour on the top of the dough and then flip it and begin to roll out the dough in short, smooth movements. You want to slowly roll the dough in all directions until it is a little less than ¼ inch thick. Don’t roll the dough too thin or you Not That Old And Loving It!

Try dipping the cookie cutters in a bowl of sugar instead of flour when you are cutting the cookies out. Sugar will keep the cutters from sticking while adding a little flavor. Butter or shortening is too heavy and can cause the cookies to burn. If you plan to decorate the cookies then you don’t need to sprinkle them with sugar. If you are leaving them plain then you can add a light sprinkle of sugar on top. Bake cookies for approximately 10-12 minutes. This will differ depending upon the size of the cut. The finished cookie should look puffy and dry without having brown edges. Cool cookies on a wire rack and then they are ready to decorate or enjoy. It may take you a try or two to get the feel for the perfect dough but once you do you will always have the best sugar cookies to share with friends and family at Christmas or anytime. +

The 30,000 square-foot downtown hotel casino continues to prosper on Fremont Street, once known for its dusty streets and cowboy atmosphere.

The Fremont Hotel and Casino celebrated its 60th birthday this year and is going strong in an era of change in the industry that has seen the end of many iconic properties.

Sixty years of life in the hotel industry is rare in Southern Nevada. In a city where change is the norm, the Fremont continues to be a favorite destination for visitors who enjoy its downtown hospitality.

“The Fremont has been a part of the Downtown Las Vegas experience since 1956, so it’s only fitting that we would create some excitement of our own with the celebration of this milestone anniversary,” said Jim Sullivan, vice president and general manager of the Fremont Hotel and Casino. The Fremont opened May 18, 1956 under the ownership of Ed Levinson and Lou Lurie and was one of the first high-rise hotels in Las Vegas. The hotel originally opened with 155 rooms. The hotel’s Carnival Lounge lured promising entertainers such as singer Wayne Newton who appeared in 1959 and became a Las Vegas legend. Boyd Gaming took control of the property in 1985 when the company purchased the Fremont and its sister property the Stardust.

In 1963, the Fremont was expanded to include the 14-story Ogden tower and one of the city’s first vertical parking garages.

The Fremont was purchased in 1974 by Allen Glick’s Argent Corp. The hotel underwent a $4 million expansion two years later.

There has been great success at the Fremont, and Sullivan commented, “One thing The Fremont has always focused on is our customer service. That’s what really put this property on the map after Boyd Gaming bought it in 1985.” Former Nevada state senator Mike Schneider worked at The Fremont in the early 1970s. He was a food and beverage controller and food and beverage director. “The Fremont is at a good location and it has almost a block-long casino,” Schneider said. “The hotel has always had good restaurants and it’s been locally run for so many years. People have been treated right there. Back in the day, we all had a lot of fun working at the Fremont.” +

But, in our digital age, that does not always happen. Many people have complex passwords and multiple email accounts. This can create a messy situation if you do not get it organized. Finally, think about ways you can spark joy in your loved ones. For example, make a gift of a cherished item with a handwritten note. When my Mom knew I was having a baby, she gave me a gift with a handwritten note that said: “Dear Kim, This is the first Christmas dress you wore. I saved it all these years and now I want you to have it. I love you. Mom.” I had no idea about the dress and it touches my heart. As I had a little boy, I keep the dress neatly folded in pink tissue inside a cute box on a shelf. Whenever I look at that box, I know what treasure is inside and it brings me joy. +

Foundation for an Independent Tomorrow started nearly 20 years ago Happy Holidays Remembering Nevada

By Mike Henle www.mikehenle.com Janet Frasier Blumen remembers well the day she was volunteering on a Southern Nevada food bank with an Episcopal church more than two decades ago. The sight of many sad-looking people needing help was something she will never forget. Thus, the creation of the agency Foundation for an Independent Tomorrow, otherwise known as FIT. In no time, Blumen was scheduling meetings with anyone who would listen. “The goal of FIT has always been to help people find jobs that would generate enough money for them to support their families,” explained Blumen, who will celebrate her 40th year in Las Vegas in 2017. “I started to do research and that’s where I learned that without job training or work skills, people simply couldn’t get wellpaying jobs. I interviewed about 110 people including then-Nevada Senator Richard Bryan, Governor Bob Miller, then Mayor Jan Jones and Elaine Wynn, who really helped approach the problem.” Blumen and the influential souls of Las Vegas determined that the work force was dedicated, but lacked guidance. “I felt we could make a very positive impact on the community if we could turn this population that was forced to rely on public assistance into self-sufficient families that could support themselves” Blumen continued.

About six years later, Goodman’s wife, Carolyn, jumped in to help secure land for an 8,700 square foot expansion Not That Old And Loving It!

Prior to that, FIT had been operating in space donated by Dr. Tony Marlon. “Jan and I had talked at the very beginning of our dream of creating FIT,” Blumen said. We were in a rented and donated office space for 10 years.” Other benefactors that have helped create FIT have included Bank of America, Wells Fargo, the MGM, and Southwest Gas, among others. “I think it was the power of our mission that enabled me to find supporters for FIT,” Blumen explained. “I was fortunate enough that I knew some influential people who also cared about the community. Goodman, Las Vegas Host Committee Chairman Las Vegas is the greatest city on earth and year after year, our destination continues to evolve to maintain its No. 1 position as the best place to visit and an even greater place to live. 2016 has proved itself to be a monumental year for Las Vegas and as we look to the future, it’s only going to get better. In 2015, Las Vegas welcomed a recordbreaking 42.3 million visitors and we are on pace to beat that record in 2016. The Las Vegas Convention and Visitors Authority’s (LVCVA) Las Vegas Host Committee is designed to celebrate the successes of tourism in Southern Nevada and drive momentum that will encourage visitors to continue traveling to the destination. A high point for the Host Committee each year is National Travel and Tourism Week (NTTW), which takes place each year in the beginning of May. This year, Las Vegas took the spotlight as we hosted our annual tourism rally at Toshiba Plaza just steps away from the newly-opened T-Mobile Arena, which has since hosted major events like the Billboard Music Awards and will serve as the home to Las Vegas’ NHL franchise, the Vegas Golden Nights. Las Vegas wouldn’t be the world-class travel destination it is without the hard-working people who work in the industry every day, ensuring our visitors have an experience they won’t soon forget. To continue the spirit and excitement of NTTW, the Host Committee works in tandem with our incredible resort partners to honor the champions of Southern Nevada’s tourism industry throughout the month of May. We call them our Hospitality Heroes, and in 2016, the Host Committee honored dozens of front-line employees who truly make a difference in how our city is perceived. Among our 2016 Hospitality Heroes, was a very special group of hospitality employees. The project includes the expansion and renovation of the existing Las Vegas Convention Center, which is expected to expand the convention center by 1.2 million square feet, including 600,000 square feet of additional exhibit space. Construction of the state-of-the-art facility is expected to generate thousands of high-paying construction jobs and full-time permanent jobs.

City of Henderson Partnering with HappyCollege Holidays Nevada State and Nevada Institute for Autonomous Systems on State’s First Urban Drone Testing Site Henderson will soon be home to the state’s first Unmanned Aerial Systems (UAS) urban test site through a new partnership with the Nevada Institute for Autonomous Systems, the Governor’s Office of Economic Development and Nevada State College. The Henderson Unmanned Vehicle Range (HUVR) at Nevada State College will provide commercial UAS designers and operators a unique location where they can test their products in a safe and accessible environment. In addition, experts from the Nevada Institute for Autonomous Systems (NIAS) will provide Federal Aviation Administration (FAA) regulatory guidance as well as UAS flight support and coordination for UAS companies conducting testing, development and training. “We are proud to be in a partnership that will lead the way on research and development in this new age of unmanned aerial systems technology,” Henderson Mayor Andy Hafen said. “Henderson encourages and supports new cutting-edge technologies and we look forward to seeing increased testing and the advancement of drone development right here in our community.”

The HUVR will be developed on the property of Nevada State College in Henderson with the support of the city. “It is an honor for Nevada State College to support our governor, state and City of Henderson on this core strategic sector initiative by being the host venue for Nevada’s first urban drone test site,” Nevada State College president Bart Patterson said. “This partnership is reflective of our values including STEM advancement, economic development, and collaboration with the community in which we serve.” In 2013, the FAA selected Nevada as one of six designated UAS test site operators. The FAA created the test sites to encourage the integration of drones into air traffic systems. NIAS is responsible for the management of the FAA designated Nevada UAS Test Site. Jingle Bell 5K Run

Run a 5k and have a jolly good time on the Pittman Wash Trail. It’s a great way to get into the holiday spirit while promoting a healthy lifestyle. This event is open to all ages, abilities, and speeds. Participants can walk, jog, or run the 5k course and make sure to bring your jingle bells so we can make the trail ring out with holiday cheer!
