A couple weeks ago my husband enjoyed a date night movie at home with some yummy Chinese take out. As we were eating, I was thinking to myself, this was something we could make at home ourselves…so let’s try it.

Spring roll sheets ** Sesame oil - 2 tsp. Garlic - 1 Tbsp. minced Happy Holidays Ginger - 1 Tbsp. (Finely Chopped) Spring onion - 4 (Finely Chopped with White, Green parts separated) Carrot - 1 large (Julienned) Red bell pepper - 1/2 (Julienned) Cabbage - 2 Cups (Julienned) Bean Sprouts Sugar - 1 tsp. Soy sauce - 2 tsp. Ground black pepper - 2 tsp. (adjust as per your taste preference) Salt - 3/4 tsp. Oil - For frying All purpose flour - 1 Tbsp.

1. Chop the veggies and put them aside. Heat a large pan or wok with sesame oil. Add the ginger, garlic and sauté for 30 seconds. Then add the white part of the spring onion and sauté for 30 seconds. 2. Now add all the veggies (carrot, cabbage, bell pepper, bean sprouts), sugar and sauté for a minute. Follow it by soy sauce, fresh ground black pepper and salt and sauté for 2 minutes or until the mixture becomes dry. Once done, add the green part of the spring onion, give a quick mix and turn off the flame. 3. Transfer the filling to a baking sheet or large tray and let the filling cool down completely. 4. When completely cooled you can start assembling your rolls. I just followed the directions on the packaging.

5. Heat a pan with oil and once the oil is hot, cook them on high heat until golden brown!

**My only aside on the spring rolls is that I made the mistake of using egg roll wraps, these are thicker – I should have taken the time to find the spring roll sheets.

When the big boys wanted out of Railroad Pass, Joe DeSimone took the bait and ran with it. By Mike Henle www.mikehenle.com You might say that veteran real estate executive Joe DeSimone has an eye for challenging deals. A transplant from Long Island, he learned four years ago that MGM Grand International wanted to unload the historic Railroad Pass Casino and quickly capitalized on the idea of owning an establishment that opened as Railroad Pass Club Aug. 31, 1931.

Now the state’s oldest continually-run hotel casino, Railroad Pass is situated at 2800 South Boulder Highway and it’s a rock’s throw from Boulder City and worlds away from the hubbub of Las Vegas. Better yet, many decades ago Boulder City outlawed gambling, and Railroad Pass will continue as a gambler’s watering hole for Not That Old And Loving It!


everything from nickel poker to a good meal that doesn’t require having to get a second on your home. A trucker’s haven for the long-hauler headed for either Phoenix or anywhere north, the 120-room Railroad Pass is in the hands of someone who not only appreciates its history but also wants to take the casino to another level. While the friendliness of the nearly 85-year-old (it was built during construction of Boulder Dam) casino won’t change, DeSimone didn’t waste any time getting started renovating the place.

Businessman Joe DeSimone purchased the historic 81-year-old Railroad Pass hotel and casino on south Boulder Highway, and it’s been fullsteam-ahead ever since. Employees and customers say he walks through the casino while mingling with everyone.

All of those loyal residents of Boulder City who had heard and read about old hotel casinos being blown up don’t have to worry because Railroad Pass isn’t going anywhere now that the 49-year-old DeSimone has taken the reigns.

In fact, if nothing else, Railroad Pass is more secure now than ever before. Its new owner is cordial with the help and the customers and in fact, someone said recently he’s the younger version of Jackie Gaughan, who was known to play poker with the guests at the El Cortez in downtown Las Vegas. Throw in the fact that an addition will include a $10 million truck stop and travel center on 25 acres, which is coming together nicely especially with the construction of U.S. Highway 11, which will bypass Boulder City and connect travel between Nevada and Arizona Not That Old And Loving It!

maintained its history. With 80 percent of his clientele hailing from Boulder City, it was utmost that the friendliness of Railroad Pass remained along with the allure both inside and outside.

The DeSimone Steakhouse is a very popular part of Railroad Pass hotel and casino. Open Thursdays through Sundays from 4-10 p.m., the steakhouse has seating for 95 people.

Considering that DeSimone has done well building commercial properties throughout Southern Nevada, heading into the alwayschallenging hotel-casino business was nothing short of an adventure, for sure. Before the ink had dried on the deal, the hotel immediately headed into a noticeable improvement mode. “I am always looking at other business interests,” DeSimone said. “I was considering a few businesses in Henderson and heard that the MGM was trying to sell Railroad Pass. “The next day I wrote an offer and they accepted it. The deal closed in April of 2015. It’s been different, but a lot of fun, too. The learning curve has been step, but there have been a lot of people giving me good advice.” One thing long-time customers do not appreciate is immediate change, and DeSimone carefully made sure that Railroad Pass

“He’s very smart,” said long-time friend and former Nevada State Senator Mike Schneider. “We have been business partners for six years and one thing I really like about him is he is very cautious. He gets in and gets the job done, but he doesn’t go in like a bull in a china closet.” Indeed, purchasing Railroad Pass was a massive undertaking monetarily and personally. But DeSimone is not someone who shies from a challenge as evidence by how his company recovered from a brutal economy during the Great Recession. Slot manager Londa Kerner -- herself a resident of Boulder City – has been with Railroad Pass for 19 years. Over the years, she has become friends with families who patronize the establishment and says the changes under DeSimone’s leadership have all been positive. “He came in and made some changes that needed to be done like the roof needed to be replaced,” she said. “Then, he has also painted the outside and added some upgrades. “Over the years, we have seen people celebrate their 60th wedding anniversary at Railroad Pass. You may be asking, “won’t Medicare pay for nursing home care?” Medicare may pay for a maximum of 100 days of skilled nursing care. Even if Medicare does cover the 100 day period, what then? At that point, you must pay the bills with your own assets, use long-term care insurance if you have it, or qualify for Medicaid. To qualify for Medicaid, some people need to engage in what is called a “Medicaid spend down.” What is a spend down? This is

the amount by which a Medicaid applicant’s allowable resources must be reduced before eligibility can be obtained. A single applicant must spend down to $2,000 plus exempt resources. The spouse of a married applicant can keep more. Many spouses are incorrectly informed that they must spend down all the resources on nursing home care. In Nevada, a married person can ask the court to increase the amount of income and assets they are permitted to keep. If the couple still has assets above that amount, then a spend down may be needed. There are appropriate strategies that allow the spouse to take steps that preserve financial security. This may include: • Purchasing a new residence (which is an exempt asset) • Paying down debt on the primary residence • Making necessary repairs and improvements to the home

The destination welcomed 42.9 million visitors in 2016, setting a new all-time record for visitation and 2017 is already on pace to exceed visitation once again. There is never a dull moment in Las Vegas and in January, the Las Vegas Convention and Visitors Authority hit the ground running. On January 16, the organization proudly participated in the 35th annual Martin Luther King, Jr. Day parade. This event provided the opportunity for the Las Vegas News Bureau to share historic images of past African-American entertainers like Sammy Davis Jr., Ella Fitzgerald and Nat King Cole that broke the segregation barriers, and set the stage for current African-American entertainers to perform daily or headline in Las Vegas today. The Las Vegas Host Committee called upon community volunteers to walk alongside a digital-mobile billboard which displayed a number of iconic images representing Las Vegas’ extensive African-American entertainment history. Beautiful showgirls lead digital display with our themed banner that read, “Living the Dream – Empowered by Entertainment.” It was a unique and attention-grabbing way to show

If you realise that you are overspending resulting in a depletion of your savings account, it’s time to keep your spending in check. It takes a lot of discipline to stick to your financial plan. However, keeping to a financial goal is not that difficult if you start with the basics. Fortunately, there are effective strategies you can adopt to make sure you follow through on your good financial intentions.

1. Be Specific

Be specific about what you want to achieve out of your financial plan. Decide how much you should save each month or how you should pay off your credit card debt. For example, specifying $200 as the sum you should save each month will help you to visualise and reach that target instead of simply saying ‘I’d like to save some money per month”. Likewise the motto ‘Cut down on grooming expenses’ sounds vague and less concrete. How about turning it to ‘Spend no more than $100 each month on grooming’? This puts your goal into perspective.

2. Avoid Shopping As An Extreme Emotional Outlet

Many of us are guilty of spending when we are stressed, bored or depressed. Yes, no one can deny that shopping gives us momentary satisfaction and happiness. This perk-me-up feeling will wane as the novelty wears off. One way to avoid shopping during times when there is an extreme emotional surge is to enjoy the simple pleasures in life such as catching

up with a friend over a cup of coffee, cooking a new dish for the family or having a picnic in the park.

3. Buy Time

Buying time is essential and effective strategy to avoid impulsive shopping. I shamefully admit that I tend to surf the net from time to time for luxury items like accessories. From experience, I’ve learnt that impulsive shopping will lead to regret. Once the novelty of the item wears off, I realise that I don’t really need the item as it is never or rarely used. Buying time helps to put my spending in check as it gives me time to rationalise and weigh out the pros and cons of the item I have been eyeing.

4. Reward Yourself For Achieving Your Goals

Once your saving goal for the month is reached, reward yourself with something small such as a trip to the movie or simply buying scones for afternoon tea for the family. It is essential to acknowledge your achievement, no matter how small as this will motivate you to maintain the good savings habit. Cutting down on expenses is not an easy task. It takes a lot of discipline and will power to achieve results. As Helmut Schmidt quotes ‘Whoever wants to reach a distant goal must take small steps’. What is it about cats that make them so irresistible? Is it their regal demeanor? Their laid-back attitude? Their supernatural ability to appear in places they shouldn’t? Whatever it is, there’s a reason a whopping 95 million American homes house at least one cat. Sadly, as with much of pet ownership, many people become distracted by the novelty of their furry new companion and forget they’re now responsible for a living, thinking creature. Cats are relatively low-maintenance animals; unlike dogs, they tend to take care of their own exercise and don’t require as much social attention to be happy. But that doesn’t mean a cat isn’t a commitment. Fortunately, the basics of cat ownership are simple enough, even for inexperienced pet owners. Learn the fundamentals and you and your cat will get along just fine. First of all, it can take a while for your cat to trust you. Dogs are notoriously trusting from the get-go, always leaping on strangers, eager

to make new friends. Even if you acquired your cat at only a few weeks old, it can time for them to warm up to you. This leads to the first, most important aspect of socializing your cat: you must respect their boundaries. Don’t jump on them, don’t shout at them, and of course, never hit them. Dogs can handle a little roughhousing, but cats are very introverted. You might want to cuddle right away, but it’s imperative that you let your cat come to you first. Don’t chase them around the house. Cats are naturally curious; if left to their own devices, they will eventually want to examine this big, mysterious creature who keeps putting food in their bowl. Let them get used to you, and before long they’ll curl up on your lap without hesitation. If you’d like to expedite the process of making friends with your cat, here are a few pointers: 1. Minimize eye contact. This might seem weird, but it’s true. Cats communicate aggression via eye contact. A huge ape creature making bug-eyed expressions right into their Not That Old And Loving It!


face can be very overwhelming. Instead, try blinking slowly at them, or making brief eye contact and then turning away. Cats will find you much more soothing. 2. Let them smell you first. Like dogs, cats interact with the world through their noses. If you hold out a hand and let them get a sniff in, they’ll be more amenable to some petting. Think of it like a human handshake. It’s a sign of trust. 3. Above all else, be patient. If your cat wants to hide under the couch, let them. That’s their special place down there. Don’t violate their privacy without good reason. If you want an animal that’s always ready to play, get a dog. Now, on to basic health requirements. Your cat will require a food and water bowl. Refill the water whenever it runs out, and keep some distance between it and the food bowl (fun fact: cats will sometimes refuse to drink water if it’s too close to their food, as they instinctually avoid water that might be tainted by freshly killed prey). A veterinarian or animal shelter can provide you with your particular cat breed’s

dietary requirements, but expect to feed them around twice a day. Avoid overfeeding them, or feeding them scraps from the table. Cats are generally resilient eaters, but it’s better not to risk giving them something unfit for feline consumption. Also, cats don’t actually drink milk. They can, but it’s really not good for them. After all, how often do cats encounter pasteurized cow’s milk in the wild? Stick to giving them water, it’s a much safer bet. Litter boxes must be cleaned at least once a day, and sometimes more if you have multiple cats sharing a box. It’s a messy job, but be diligent. Otherwise your cats will start going wherever they please. A self-cleaning litter box is a good investment if you’re unwilling to get dirty, and outdoor cats will frequently go outside to do their business. House training a cat isn’t easy or fun; if your cat begins soiling the carpet regularly, you’ll have to lock them in a room with the litter box until they get it right a few times. The cat will mewl and scratch at the door and your heart will break into tiny pieces, but she has to learn. You’ll all be happier if she learns to go where she’s supposed to. Remember, scolding or punishing your cat does not work, especially after she’s already eliminated. Yelling at a cat for going to the bathroom is a bit like yelling at them for breathing. Some pet owners swear they own cats who love bath time, but these felines are few and far between. If you’d rather not deal with the hassle, local pet grooming stores can help you out for a fee. These people are professionals. No one would blame you. So that’s it. Obviously cat ownership is an ongoing process far too complicated to cover in one article. But if you take the time to master these basics, you’ll find plenty to love about your new, furry companion. +
