Last year I talked my publisher into letting me write a book about Boulder City, a town I have always found fascinating. As I was writing, Calendar Of Events I discovered a cache of oral histories from the people who lived in BoulderCalendar Of Events City while the dam was being built. Men and women who, in the middle of the Great Depression, packed up Remembering Nevada their worldly belongings in search of a chance, a hope of a better life. Preheat oven to 375°F and lightly line cookie sheet with parchment paper. 2. In a shallow dish melt butter. In another shallow dish add breadcrumbs, Parmesan cheese, and garlic powder. Add Garlic salt and pepper to the chicken. Dip into the butter and then coat in the Parmesan garlic crumbs. Lay chicken on your lined cookie sheet.

3. In a medium sized bowl add zucchini, yellow squash, and potatoes. Toss in the olive oil. Add Garlic salt/salt, pepper, Paprika and remaining Parmesan garlic bread coating. Add vegetables around chicken on your lined cookie sheet 4. Bake for 30-40 minutes until chicken is cooked throughout and vegetables are tender. Veggies may take longer to cook, so in that case just remove chicken and continue baking the vegetables.
On to dessert! We love fresh fruit in our household, so the following cake recipe sounded so yummy to us that we just had to try it! This recipe is also easy and quick to make when you are short on time!

Peach and Blueberry Greek Yogurt Cake
Ingredients: Financial 1 and 1/2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda Auto Travel 1/2 stick butter, softened 1 cup sugar 2 eggs 1/2 teaspoon vanilla 1/2 cup Greek yogurt Home Improvement & Lifestyle 2 peaches, sliced into wedges Simply Savers 6 oz blueberries 4. Keeping the mixer speed low, mix in the 1 teaspoon granulated sugar Feedback flour mix until combined. Do not over mix. Directions: 5. Transfer the cake batter to your 9-inch cake 1. In his day, heavyweight boxer Earnie Dee Shavers carried a club of a punch. His opponents included heavyweight champion Muhammad Ali, who had to rally to beat Shavers when the two battled in New York’s Madison Square Garden in 1977. Now 72 and living in northwest Las Vegas with his wife, Rita, the native of Garland, Ala., who grew up in Ohio, is enjoying the good life while savoring the years that saw him become the most powerful puncher in the history of the sport of boxing. With a career that spanned from 1969-85, Shavers was fearless and challenged twice for the world heavyweight title, losing a unanimous decision to Ali; and an 11th round technical knockout to Larry Holmes in 1979 at Caesars Palace.

Spring is just a few short days away and sports are on my mind. With events ranging from rugby to racing, it seems there is an activity for every kind of sports enthusiast this month. Basketball is big news for our destination. Every year, thousands of out-of-town fans flock to Las Vegas to catch all the college hoops action, especially the first round of March Mayhem, which is consistently one of the busiest weekends in Las Vegas. This year, Las Vegas will once again host four National Collegiate Athletic Association (NCAA) basketball conference tournaments including the West Coast Conference (WCC), Western Athletic Conference (WAC), Mountain West Conference (MWC) and Pacific Athletic Conference (PAC 12). If you can’t make it to the games, no need to sit at home, a number of resort partners are offering special deals and hosting viewing parties. Another fan favorite returning to Las Vegas this month is Big League Weekend at Cashman Field March 25-26. World Series champs, the Chicago Cubs, will return to Las Vegas for their 13th consecutive appearance during the event to take on the Cincinnati Reds. Over the years, Big League Weekend has become one of Las Vegas’ favorite springtime traditions.

The annual USA Sevens International Rugby Tournament will return to Las Vegas March 3-5, bringing 19 international rugby sevens teams to compete in 79 matches throughout the thrilling three-day tournament at Sam Boyd Stadium.
